Pretty in Pink The mayor joined staff at a Marlow fish and chip shop in wearing something pink to raise cash for charity recently.
M
arlow Bottom Fish Bar on Brucewood Parade took part in Breast Cancer Now’s Campaign ‘Wear it Pink’ to raise money towards Breast Cancer Research recently. And the mayor, Bob Johnson, made an appearance with his wife, Shirley, to show their support for the campaign and enjoy the free fish and chip samples and cakes baked by shop staff. Owner, Gav Singh said: “Breast cancer has
affected people in my family so it is close to home and it affects so many women.” “I have a wife and a daughter and a mother and they all mean the world to me so if we can do anything to get the message out there then I’m willing to do it. “It was great having the mayor there too. It’s good having such a down to earth guy in his position.” Mr Singh said the store had received lots of donations for the cause. The award winning fish and chip shop took part in last year’s fundraiser raising £480 for the charity.

Nice Krispies Tim and Kelly Barnes have been running Krispies Fish & Chip Shop in Exmouth, Devon since 2000. Their journey started when Tim graduated from catering collage and took a job in a Fish & Chip shop in nearby Exeter, Kelly joined him there and after only a short spell under their management they saw turnover grow and realized that they should do it for themselves.
B
usiness was good but it soon became clear that the equipment they inherited when they bought the shop was holding them back so they took the decision to invest in new equipment and installed a Kirmeko High Efficiency Range. “The change really kick started our business” say Kelly “It allowed us to produce really good quality food and we have never looked back”. Over the years they have continued to invest in upgrading other parts of the shop

including new prep areas and a dedicated potato prep room. One of their biggest challenges over the years has been staffing. As an area of the catering trade with a high turnover of staff Tim and Kelly found it difficult to find the right people and keep them. So they overcame this problem by spending time and money in training each and every member of the team be they full or part time and committed to investing in their future. “Our staff are our most important asset, without them we would not succeed so we really believe in training them, taking care of them and ultimately making them feel part of the Krispies story.” And succeed they have. Krispies has just enjoyed their best year ever, not only have sales exceeded all expectations but they were also proud to receive MSC Accreditation and the NFFF Quality Award. “It has been an incredible journey with some bumps along the way but ultimately our love of what we do has

carried us through and we now have a business that is not only an Exmouth institution but a destination too.” As a seaside town Exmouth enjoys a holiday trade as well year round custom from locals. “Our regulars are wonderful and we love them all but there is also a great buzz when we get holiday makers who come in year after year telling us that a visit to Krispies is one of the highlights of a holiday in Exmouth”. So from the one employee 15 years ago Tim and Kelly now have six full time and 14 part time staff on the team and a very loyal and growing customer base so the future is looking bright for Krispies. “The best thing about what we do is producing amazing food for amazing people and in 2016 we have some plans to celebrate this and to give something back to the community that has supported us so well over the years. I can’t say too much as we are still in discussion with various parties but watch this space for the biggest and best year yet from Krispies.” 11

Three of the UK’s leading mobile fish and chip businesses have been shortlisted recently as finalists in the Best Mobile Fish and Chip Operator Award category as part of the 2016 National Fish & Chip Awards, organised by Seafish.
D
odson’s Fresh Catch in Wakefield, West Yorkshire; Starchip Enterprise in Evesham, Worcestershire and Tom & Simon’s Kitchen in Bingham, Nottinghamshire, will now compete against each other in the race to ‘catch’ this top accolade. The Best Mobile Fish and Chip Operator Award category recognises fish and chip businesses that excel at operating on a mobile basis. To secure a place as a UK top three finalist, the contenders have been appraised across a wide variety of judging criteria including the policies they have in place regarding the responsible sourcing of raw ingredients, the preparation of products, how levels of customer satisfaction are recorded and responded to and marketing and promotional activity. Award sponsor Mick Bacon, Manager of the Responsible Fishing Scheme, said: “It is extremely encouraging to see how even the smallest of businesses, such as the shortlisted mobile operators, are going the extra mile to promote the responsible sourcing of seafood. Fish & Trips Ten of the UK’s best fish and chip shops journey to Norway to learn more about where their fish comes from

ach year, the UKs best fish and chip shops battle it out for the much sought after title of Independent Takeaway Fish and Chip Shop of the Year, organised by Seafish. Soon after unveiling the 2016 finalists, the UKs top ten fish and chip shops journeyed to Norway to visit the cold, clear waters of the Barents Sea, home to the largest and most sustainable cod stock in the world, to witness the whole supply process of Frozen At Sea cod and haddock, from fish to fork. As guests of the Norwegian Seafood Council, the ten regional winners enjoyed a three day, all-expenses paid trip to the port city of Ålesund on the west coast of Norway, which plays a major role in

cod and haddock processing in Norway. Here they learned about the vital supply chain of sustainable Frozen At Sea (FAS) fish from Norway to the UK and had the opportunity to study the science behind the country’s successful fishery management programme. As part of their study trip, the group ventured on board Frøyanes, one of the 24 vessels forming the Norwegian FAS fleet, with an impressive 600 metric tonne capacity. Despite some high seas, the group managed to find their sea legs and witnessed first-hand the entire process of cod and haddock hook & line fishing, processing, filleting and freezing, all on-board a working FAS vessel and surrounded by the beautiful fjord scenery. Cod is the UK’s favourite fish, and Norway’s cold, clear waters are home to the world’s largest and most abundant

supply of this much loved fish. Norway’s pristine waters give cod and haddock their distinctively chunky, succulent white flesh. But just as importantly, the vessels freeze their catch at sea to lock in the Arctic freshness. It was indisputable amongst the group that these fish were of the finest quality – Craig Maw, 2016 top ten finalist and Owner of Kingfisher Fish & Chips said: “It is the best quality you can get; the fish is frozen within four to five hours after being caught, while fish sold as fresh in the markets can be up to 10 days old, 11 when sold to final consumers in restaurants. It loses all its quality, and the difference between prices is not that big.”

History in the making
History has been made as the first British white fish trawler to launch this century headed out to sea on her maiden voyage.

he Kirkella – named after a village situated to the west of Hull - was launched by UK Fisheries Ltd and is the sixth vessel to bear this name in the Hull fleet. Measuring an impressive 86.1 metres in length and weighing 4290 tonnes, the majestic ship is set to overturn the misconception that large vessels are environmentally unsustainable and features advanced freezing techniques maximising quality and freshness of the fish. She will catch cod and small by-catches of haddock and uses special equipment to ensure the by-catch of smaller fish is kept to a minimum. In fact, the state of the art design operates some of the most productive and well managed fisheries in the world. This ensures the environmental impact is minimal – an ethos at the heart of The Kirkella. There is no denying the British love affair with whitefish, with 382 million portions of fish and chips consumed every year. A huge 95% of The Kirkella’s catch will be bought and consumed in Britain, mainly via fish and chip shops. The Kirkella is revolutionising the way our fish and chips make it from sea to table and ensures that it is an environmentally friendly process. Every single trip she makes will land a massive 1200 tonnes of fish fillets - the equivalent to 3.5 million fish suppers. She also operates with a zero discard policy, meaning everything caught is landed and accounted for. Fishing will predominantly take place in Norwegian waters - in the Barents Sea and the Norwegian Sea - with a team of 28 fishermen, of which the majority are British. Norway takes surveillance of the waters very seriously and manages them using an integrated ecosystem based management plan. This means the environment comes first and determines the management systems being used. The North East Artic cod fishery has been MSC accredited since 2009, which demonstrates the sustainable practices which are in place. The waters are strictly regulated and protect a significant amount of vulnerable marine ecosystems, juvenile fish and non-target species. The Kirkella looks set for a successful future providing world-class sustainable fishing and keeping Hull firmly on the fishing map.

ooks like Harry is aiming to be in the fish and chip awards young frier competition in the next few years. ’Arry’s Plaice, in Cabin Lane, is the third chip shop to be opened in the town by Kulvir Singh and his family. And the shop has been named after his son, 10-year-old Harry, who is a pupil at Woodside School. The opening on Monday was a family affair with Kulvir, his wife Jaswinder and young Harry joined by Kulvir’s father, Baldev Singh, the mayor of Dhandowal,

India, and head of the town’s college, who came over especially for the opening. The Dhandowal mayor met his Oswestry counterpart, Councillor Peter Cherrington, at the opening. Councillor Cherrington said: “It was good to meet Mr Singh and hear about his town and his role as mayor. “It was good that he could join his family for the opening of the family’s third chippy in Oswestry. “The family owns The Plaice in Salop Road and has worked hard to achieve the two additional shops, The Prince’s Plaice in Lloyd Street, and now ’Arry’s Plaice in Cabin Lane. “I’m very pleased to see this new shop and I’m sure it will be welcomed by all the local residents.” Good Luck to Harry and the team.

Then, with them all sitting comfortable he handed over to the host for the evening – our very own Chippy Chat Editor Austen Dack. The Golden Chip Awards were back once again – five just for fun awards (but keenly contested). The night’s charity was Spinal Injuries Association (who organise national fish and chip supper promotions). It is hope to have raised well over £1,000 for them. After tucking into the fine menu headline act (like) The Beatles came on stage and belted out over an hour of their greatest hits. Further entertainment included the Kerry Food sponsored photo booth and the multi tabled casino. Finally the Chippy Chat disco took us through to 1am where some left for home but many left for the hotel bar. See you next year on Sunday December 4th to do it all again!

Hewigo looking good in Scotland Hewigo has recently undertaken two major installations to the north and south of the Grampians.

a surface abrasion to a split through the tuber, depending on the stage of growth during which the initial cracking occurred. Growth cracks form due to fluctuating environmental conditions, such as uneven soil moisture, soil and air temperature, and rapid water uptake and tuber growth. Growth cracks increase when relatively poor growing conditions are rapidly followed by relatively good growing conditions, such as prolonged moisture stress or high temperatures followed by excessive irrigation or rainfall To reduce the incidence of growth cracks, maintain proper soil moisture during the season. This is especially important during the bulking stage when the plants are large and tubers are rapidly expanding. Large plants and expanding tubers require more water to maintain good growth. Other recommendations to reduce the incidence of growth cracking include spacing plants uniformly, applying irrigation evenly to keep soil moisture levels consistent, and ensuring accurate application amounts and fertilizer placement.. My advice to dealing with growth cracks is after the rumbler if you can still see the growth crack (un peeled area) try and manually peel it out or use your a knife. These potatoes will still fry with good quality as long as you manage to get all of the skin off the potato before chipping. Once chipped you will not notice the growth crack was ever there.

he three finalists – Kingfisher Fish & Chips in Plympton, Devon; Penaluna’s Famous Fish & Chips in Hirwaun, Rhondda Cynon Taf and The Fish Bar At Sunnybank Road in Crewe, Cheshire – will go head to head as they ‘batter it out’ to make the final ‘cut’ and scoop this top award. To secure a place as a coveted finalist, shortlisted businesses have been appraised across a wide variety of judging criteria with a specific focus on the policies and procedures for the responsible sourcing of potatoes. Shops were also assessed on their potato knowledge, including types and seasonality, and the storage and preparation of the raw ingredients. Finalists are also subjected to in-depth judging visits from an awards auditor assessing the shops’ front and back of house operational aspects, customer service levels and the quality of the fish and chips. Sing for your Supper! #ChipShoptheMusical is about UK grime, Yorkshire brass, small-town life – and free chips for all audience members.
T
he show will tour real chip shops and features original and remixed British music and two actors who will sing, spit, speak and dance a story about two unlikely friends. Teenager Ayla and middle-aged Gram meet when Ayla blags a job in the chip shop. Ayla and Gram are chalk and cheese, grime and brass. Ayla is a frustrated and shy young woman, She secretly dreams of a music career, but has no idea how to make it happen. Gram is a disillusioned chip shop owner, who’s falling out of step as the world is changing around him. Can they come together and sort their lives and the shop out, before business pressures force a closure? Freedom Studios and lead artist and writer, Emma Hill, are working together in a collaborative co-producing partnership to develop #ChipShoptheMusical. The show is aimed at a 14+ audience and will be accompanied by free music, lyric and theatre workshops. The project’s development is currently funded by Freedom Studios, Grants for the Arts and Seafish and is supported by The Octagon, Bolton and The In Plaice fish & chip shop, Bradford.

he restaurant itself is small & modest. Petrol blue walls matched tastefully with simple wooden tables and a cool chalk drawing of a giant fish on the wall. Ran by the Alam Brothers you might think with it being located by the sea and serving up an abundance of fish dishes, and the number of British expats living here, that the city would have a few of these places but this isn’t the case. This may not be a conventional chippie you´d find on the streets of Britain. There is a fine aesthetic line though, in setting up a fish and chip shop in Spain particularly. What food do they serve? Firstly Respect with a capital R to these two for serving line caught fish sustainable fishing, farming, deserve a huge pat on the back and secondly for restoring my faith in eating merluza (hake) because anybody living in Spain, will

know that Merluza dominates menus and after a while you kinda get sick of eating it. I´m a big fishie and what I´m saying is merluza sourced this way tastes nothing like the merluza you are most likely to eat from the factories! The fish and chips are simply gorgeous. The fish really are all the things I described in the intro. Fish goujons battered in bread crumbs has an incredibly morish woody smoked flavour & the chips still have their skin. You will get a pot of their very own creamy tartar sauce and for an extra spin a pot of mango chutney. Who would have thought that those two little ramakins were a match made in heaven? The complete dish is worth every bit of €6.95 All that & more coz it´s done with so much love. Some of their other dishes include: Houmus served with papadum, crispy fried boquerones with chips, fried endame beans in truffle oil. So novel. I did squeeze in a delightful little cake which I was told is a South African recipe. What surprised me was it tasted just like sticky toffee pudding. The little cakey came with a dollop of refreshing mango ice-cream.

Service & ambiance The restaurant is very small but what comes with that is a warm friendly service from the team. Multitask cooking and still managing to mingle. You can see that the two guys that run the place´s ultimate goal is that you really enjoy the experience of eating their version of fish and chips and the simple fact that people are happy to wait for a table is testament to the good food that they serve. I went twice in 2 days! PPs - They do take-away Points for improvement A bigger space although I think you would still have people camping outside. An aircraft hangar should do the job. Positive points The food and staff In Summary - The people are loving their food. It seems inevitable that they will open a bigger restaurant, I don’t know maybe I´m wrong in that they are happy with running it just the way it is, who knows, we will see and I love the fact that its just around the corner from my apartment. When the winter months roll in, this will be my “go to” when I fancy something nostalgic. Price: Under a tenner (10 euros)
