Fish and Chips help restore Scottish Power A Perth chip shop was tasked with providing over 100 meals for SSE staff battling to reconnect power across the country.

S

taff at The Fish and Chip Co, at St Leonard’s Bridge, were expecting a quiet Saturday night as adverse weather conditions restricted people venturing out into the wind and rain. But it was soon all hands on deck when energy group SSE placed an order for 102 SUPPERS — half of which were fish. The meals were swiftly cooked up and distributed to those working overtime to restore power supplies throughout Perthshire. A spokesperson for Scottish Hydro Electric Power Distribution said: “This is a massive operation and our first priority is to restore

power to our customers but to do this we need to make sure that we are looking after all of our people, whether they are working out in the appalling weather conditions or working long hours in offices. “We used a number of food outlets in Perth to help feed our teams and we are grateful to local businesses for their help with this.” Proprietor of the Craigie-based chippy, Michael Clark (43), described the experience as “awesome” after successfully shipping the meals out in less than one hour. “Our customers were wondering what was going on. My wife had to explain that there was a big order going out to SSE, so they were happy to wait. “The staff did amazing – they are a great team and were buzzing after doing the order. We would like to thank the staff at SSE for the order and to keep up the good work in reconnecting Scotland’s electricity during the recent bad weather.”

ur concept was born on the streets of Dublin and raised in the amazing city of Brussels. Our journey has taken us across the channel to London and who knows where next? We create new styles of Fish & Chips using fresh sustainable fish delivered daily. Our completely unique style of Fish & Chips aims to be lighter and non greasy. We achieve this by using fine dining methods and techniques applied with a comfort food outlook in an accessible, fun, family friendly quick turn around environment. pairing of our two favourite things in the world! In September 2014 we made the cross channel jump to London to open our UK re-brand called Hook in Camden Town. Both Simon & I still work full time in the kitchen and on the floor respectively in each new branch and we are learning as we progress. We hope to grow in Benelux & the UK simultaneously. With help from an incredible team around us we are heading the right direction. We want to take our time building the foundations for our concept to become a good, honest, fair brand that respects the planet. Chippy Chat & Fast Food Magazine • February 2015

Our review this month is from bloggers – Alison of Cheeseweb, Michelle of Very Hungry Explorer and Maxine of Why I am Not Skinny collectively under the http://brusselsfoodfriends. be/blog/ umbrella This is a review of each of their choices:

Maxine:

“I realise that Bia Mara’s focus is on sustainable fish – but I had a craving for a bit of fried chicken… something that I have ordered and enjoyed there before! Crispy coating over succulent chicken breast pieces. Plus, I adore their garlic truffle mayo & their hand cut chips. I also ordered a portion of their minty mushy peas. DELICIOUS… In fact, I have to confess to waddling home, because their portion sizes are more than generous and I just couldn’t stop eating every morsel! ”

breaded haddock, which is as soft and creamy as butter. I also added ‘red slaw’ to my order. This is a coleslaw made of crunchy red cabbage in a creamy but not heavy dressing. I adore this just as much as the fish. We sat their newish terrace area and the atmosphere is just as relaxed there as it is inside the restaurant. As always the service was very friendly and quick, which is very welcome in Brussels and the selection of local beers is impressive.” http://www.biamara.com/ https://www.facebook.com/ BiaMaraBrussels

Alison:

“As a die-hard Bia Mara fan, I’ve tried just about everything on the regular menu. Although I have my favourites, I can often be swayed by the weekly special. When I glanced at the specials board on this visit, they had me at ‘Indian.’ My love of all things Indian is no secret, so I dove into the Indian-style fish with curry mayo. Like Max, I loooove the sauces, so I ordered an extra cup of truffle mayo, for my fries of course. The fish was crunchy on the outside, moist and fresh on the inside. I would have loved a bit more kick to the curry mayo, but I know not to expect too much spice in Brussels. All in all, another winning dish.”

Michelle:

“Fish and Chips on a Friday night are kind of an institution back in the UK, which is why I’m a regular at Bia Mara. I’ve worked my way through the menu a few times, but I keep coming back to the ‘classic’

Frankie’s bag The Independent Takeaway Fish and Chip Shop of the Year Award

The Independent Takeaway Fish and Chip Shop of the Year Award is sponsored by

Frankies (L-R Nigel Barden, John Gold, Valerie Johnson, Carlyn Kearney)

Frankie’s Fish & Chips in Brae, Shetland, Scotland, is now officially the best fish and chip shop in the UK after frying out on top at the 2015 National Fish & Chip Awards (20 January), organised by Seafish.

T

he shop was crowned the Independent Takeaway Fish and Chip Shop of the Year by awards host and voice of food and drink reason on BBC Radio 2, Nigel Barden, during a prestigious ceremony at the Lancaster London Hotel in London. To earn their spot at the top, Frankie’s Fish and Chips went through a rigorous, multistage judging process during the last few months. All top ten finalists, representing respective parts of the UK, went up against each other in a Dragon’s Den style pitch as they fought to win the title. Valerie Johnson, owner of Frankie’s Fish & Chips, said: “We now get to go home to Shetland and say that our fish and chips

are the best in Scotland, England, Northern Ireland and Wales - without exception. How amazing is that. This is the highlight of my working life. I can’t thank Seafish and my brilliant team enough. You’re a credit to the seafood industry. 2015 is Frankie’s year.” The final 10 places were shortlisted during earlier judging rounds which included unannounced shop visits from industry judges. They were assessed on a wide variety of judging criteria including product quality, sustainable sourcing policies, marketing initiatives and customer service. Paul Williams, Chief Executive of Seafish, commented: “Every year we see new and established talent vie for the top title, and the competition gets fiercer each year. This year was no exception and the judges were faced with a particularly tricky job in determining a winner. “Frankie’s Fish & Chips stood out throughout the judging process. Their passion and determination has to be admired. I would like to offer my warmest congratulations and wish them the best success in the future.”

They’re an extremely passionate bunch and without their continual dedication we wouldn’t have been able to achieve this award.” Andrew Crook, NFFF Treasurer, commented: “We could have named each one of the finalist the winner of this year’s Champion Award. All of them showed the successful qualities and enthusiasm required to win. With creative initiatives and an eager, hardworking team, Kingfisher Fish & Chips shone throughout the entire judging process and is an honourable ambassador of the 2015 Quality Award.”

Norge Norge think think! The Norwegian Seafood Council (NSC) today announced its plan to unite 100 of the UK’s finest fish & chips shops in a pioneering new network called Union Norge. The network will celebrate these successful businesses, unified by a passion for high quality, sustainable frozen-at-sea cod and haddock, and will drive footfall for its members through an integrated marketing campaign.

T

he 2015 marketing campaign aims to promote the selected chippies through a high-profile, national programme of activity, involving retail activation and PR. It will also build supply chain transparency by connecting the diner to the fishermen and add value through shared expertise between its members. Following the launch of Union Norge, fish & chip lovers will have an instantly recognisable symbol to show quality and environmental commitment from shop members in the network. Consumers will also be rewarded for returning to shops within the Norge Network, with gifts available for repeat purchases. The activity follows on from the success of the NSC’s 99p promotion in May 2014, where 99 fish & chips shops around the country offered portions for 99p in the first campaign of its kind. Over seven million people in the UK were reached thanks to excellent media coverage. Cod is the UK’s favourite fish, and Norway’s cold, clear waters are home to the a large abundant supply of this much loved fish. Norwegian cod and haddock are frozenat-sea on board some of the finest fishing vessels, to lock in artic freshness until it reaches the fryer. NSC UK Director Jack-Robert Møller

comments: “It’s very exciting for us to be at the start of a campaign which we hope will strengthen the fish & chip category by connecting like-minded retailers within the industry, rewarding them for the freshness and quality of the seafood they serve. “We have been supplying the UK fish and chip industry with high quality cod and haddock from the cold clear waters of Norway for over 50 years, and we hope that Union Norge will give us the chance to reward some of our favourite chippies with a campaign that will grow their businesses too.” To find out whether you can sign up for Union Norge, contact your distributor directly. A panel of judges including MPs Nadhim Zahawi, Jonathan Reynolds, Andy Love and Keith Vaz, as well as Baroness Hussein-Ece, helped decide the winners of each category – although anyone could vote for their favourite kebab outlet from a shortlist for each category. The Awards have become a fixture in the annual food awards calendar, and celebrate the growing contribution of the kebab industry to the UK. The British kebab industry contributes

over £2.2 billion annually to the British economy, supporting around 200,000 jobs across restaurants, suppliers and the food industry in the UK. The first kebab shop opened in North London in 1966 and there are now over 20,000 kebab outlets in the UK selling estimated 1.3m kebabs every day. The awards are sponsored by the UK’s largest takeaway website JUST EAT, as well as Big K and Bulldog Energy Drinks, with the aim of showcasing the wide range of restaurants serving kebab styled food. Ibrahim Dogus, Director Founder of the British Kebab Awards, said: “Many congratulations to all the winners and nominees. These awards are a true celebration of kebabs as a Great British institution, and recognise the contribution of the industry throughout the country. There was a very high standard of nominees for every category, and I am delighted that we have been able to honour some of the leaders in the industry for the third year running.” Chippy Chat & Fast Food Magazine • February 2015

The Fast Show!

“Come to the Henry Colbeck What’s Cooking event in February” said a certain Duncan McLean “it will be very rewarding and we have lots of fun too” - so we did.

T

he weekend started with a rather pleasant journey by train along the rugged East coast passing through York Newcastle and Berwick on Tweed (with views of the bridge built in part by Mark Drummond’s great grandfather) on our way to the final destination Edinburgh After setting up Saturday we were then off to a fine evening organised by Colbeck with many friends from across the industry in attendance. I joined new fish and chip award champions Frankie’s on table one. Highlight of the night was the grand prize draw which raised over £2,000 (of which £1,090 was given £1,090 to THE FISHERMEN’S MISSION and £1,090 to RACHEL HOUSE CHILDREN’S HOSPICE in KINROSS, SCOTLAND). Show day came around very quickly after and it was time to meet and greet chip shop owners from across the Northeast of England and Scotland. We also found time to talk to many of the suppliers exhibiting for the day too! There was a myriad of products on show and a never ending stream of people coming through the door. Jackie Pearson Henry Colbeck’s head of marketing said this year’s event in Edinburgh has been very rewarding. “We were thrilled with the amount of stand holders and partners we had this year, we know just how much hard work they all put in to make it

41

Chippy Chat & Fast Food Magazine • February 2015

happen, and would like to thank them all for their dedication. I would also like to thank all the chip shop owners who came out in their masses too”. Jackie was right thousands of people came to see the latest products on display with many placing orders as they made their way around. One of the busiest stands on the day had to be KFE’s. Boss Paul Williams was the new Ron Dennis as he took charge of his very own formula one team for the day. Visitors took turns in the cockpit as they lapped Silverstone in a one lap shootout. (From the evidence I saw I think Lewis Hamilton’s seat at Mercedes is safe). Paul said “We continually look for new ways to entertain and attract visitors to our stand, & having a full size F1 car certainly managed that” In no time at all it was time to depart. Thank you Jackie and Duncan (and the whole Colbeck team) not only did we have great fun we also met some incredible people too. Next stop Bournemouth March 1st for Fry it with Friars Pride see you there!

A L Lee & Sons

A Growing Business This month’s featured farmer epitomise all that is good about growing and marketing great potato brands for chip shops. They are A L Lee & Sons an arable farming enterprise based around Ely in Cambridgeshire. Austen Dack spoke to Sarah Lee

42

E

stablished over 50 years by Tony Lee (pictured) it very much remains a family business managed by Stephen, Robert & Sarah Lee. Back then Tony started out by renting just 3 acres of land for growing potatoes. Now they farm over 11,000 acres including over 2,000 acres of potatoes grown mainly for fish and chips shops across the UK. The business has grown up with the same values it had from the start with the customer at the heart of their values.

Chippy Chat & Fast Food Magazine • February 2015

Add to this heavy investment in the very latest technology and machinery and you can see why they are still at the very top of their game and one of the top potato growers in the UK. As Stephen Lee has said, “It all starts from the start. The key thing is the land, its such an important asset, you have to have a feel for it.” Land is such an important asset an intrinsic part of what makes a great potato (and ultimately a great chip). As a chip shop looks for all the right ingredients for their consumers then we do too. The land must be well drained. We use traditional techniques alongside the state of the art machinery to achieve results. It’s a long term investment and the benefits sometimes take years. Having a greater land base also allows better crop rotation of course helping to minimise problems caused by over farming. Growing with a variety of soil types allows for a more diverse variety portfolio which you as a customer require today.

Chippy Chat & Fast Food Magazine • February 2015

42

The quality of seed is absolutely crucial, we have quality seed suppliers and aggregate from the same sources year on year wherever possible. Over recent years there has been increased interest in new varieties. This is always challenging as with every year being climatically different it can take several years to assess a varieties pros and cons. This season the main varieties are Maris Piper, Ramos and Markies. For next season there will also be Agria and Divva added to the mix.

In recent years we have also invested in sampling facilities on site to enable sampling before, during and after harvest. From here the potatoes can be tested for bruising using a hot box and a rumbler as well as dry matter and fry testing. In the last few years we have seen that chip shop owners have become far more discerning as they look to improve their offering to suit their customer base. This can only be a good thing as we too strive for excellence in fact we sample each and every field to ensure the end product they receive is consistently good. At AL Lee & Son the pressure is always on. There are so many external influences which are difficult to predict such as weather conditions, legislation and market forces growing potatoes at a profit is a challenge! What is certain is we will concentrate on what we can control and keep striving to the high standards we aim for in order to keep you happy for at least another 50 years.

Brands

You will recognise many of our brands pictured in this article. It has become increasingly important to build brand loyalty and this is achieved by constantly ensuring that we provide what the brand offers. This is achieved by close attention to the product making sure that product lives up to its name and by working closely with our agents and wholesalers we ensure it is placed and priced accordingly. This is achieved through a high level of trust and cooperation built over many years. Many top shops now display these brands to their customers so they can see exactly where there potatoes are grown.

Post Harvest

Crop Handling and Storage is managed by Robert Lee and the business as invested heavily in providing the best storage facilities post harvest. Around 70% of the crop is box stored giving much greater control of the storage environment. Box storage also gives us greater flexibility of movement to ensure consistency of supply.

Let’s Promote more say NFU Scotland To combat falling consumption, NFU Scotland has urged the potato industry’s statutory levy body to consider shifting its funding emphasis from research and development to more promotion.

statutory levy on growers and packers. The Union believes that fresh, promotional work highlighting the nutritional and health benefits of potatoes could be delivered through the Potato Council’s existing ‘One Voice’ campaign. The goal of One Voice is for potatoes to be seen as a good food by shoppers, politicians and the media alike, remaining a staple on British plates. Commenting on the NFUS submission, Fife potato producer Russell Brown, chairman of NFU Scotland’s Potatoes Working Group said: “Scottish growers value our close contacts with the Potato Council (PCL) via the Council’s permanent presence in Scotland and regular attendance at NFUS meetings. In particular, the PCL support of the seed potato sector is hugely important to Scotland. “However, the number one issue faced by the sector right now is the continuing fall in consumption of fresh potatoes, and the impact that has on farm gate prices. Diminishing demand for potatoes has, unfortunately, seen retailers pay less and less attention to the marketing of the product. Sales, as a result, are currently caught in a downwards spiral that we must turnaround. “We recognise that solutions are not simple but many Scottish growers have identified the need, at this time, for a shift of emphasis in the levy budget priorities from R&D to promotion. “Scottish growers are keen to build on our relationship with the Potato Council and early discussions are underway on a potential joint event in March where promotion, marketing and future demand could form part of the discussions.”
