That’s For-Tuna-te! The Marine Stewardship Council (MSC) is proud to announce that Caterer’s Choice, a leading importer and supplier of canned goods to the UK, is the first to introduce MSC certified sustainable canned tuna to the UK’s Foodservice sector.
T
he product, 1.7kg can of MSC certified ‘Fairer Fish’ Skipjack Tuna in brine is available from Caterers Choice, and is celebrated as being unique to foodservice, being the very first in the UK to make this popular MSC certified fish available in a can to a number of large foodservice caterers, wholesalers, schools and LEA’s. The MSC certified ‘Fairer Fish’ canned tuna uses only MSC certified Skipjack tuna caught in the PNA region of the Western Central Pacific Ocean. The canned MSC tuna is currently available at a number of suppliers. The ‘Fairer Fish’ brand tuna is clearly marked with the recognisable blue ecolabel and is creating interest amongst other contract caterers who are already committed to support the
MSC and have chain of custody certification. Response from UK Foodservice so far suggest Caterers Choice expect high demand for the foodservice-first certified cans of ‘Fairer Fish’ tuna. This new MSC tuna product, offers caterers the benefit of this popular, nutritious and versatile fish which is reassuringly sustainable and can be traced back to certified fisheries. The restaurant and takeaway grew from strength to strength with a great reputation amongst the locals and tourists alike. s it was in 1966, Papa’s is still very much a family business, if you’re visiting our newest flag ship restaurant in Hull you’ll be able to catch two generations of the family on most nights. Sid can often be found behind the pans frying with over 25 years’ experience, alongside Dino and George (who are both fully trained Solicitors and Doctors respectively) who now work in the family business and are current finalists in the Drywite Young Fish Frier of the Year Awards. The Hull Restaurant is the world’s largest fish and chip restaurant. The restaurant

boasts 400 seats spread across multiple levels. The restaurant offers a large variety of sustainably caught fish. Testament to this commitment is the MSC Chain of Custody Accreditation which is held for a number of fish on offer. As well as the MSC Cod, Plaice and Haddock – which are undoubtedly the most popular choices – diners can also choose from the ‘Sustainable Catch’ Board and indulge in freshly landed sustainable fish from the nearby docks and fish markets. As well as the huge senior following that Papa’s has developed in a short period of time, we have also became a hot spot for young families. Offering a fresh twists on classic dishes has made our simple menu appealing to all age groups. Joining the Sustainable Restaurant Association has further reinforced our belief that running a sustainable business is of paramount importance. evaluate our everyday practices. As one would expect, a huge part of this involves the sourcing of your fish – however, much more is involved. Working with the association you’re encouraged to audit and re-audit your current practices to ensure they are in-line with current guidelines. We have seen huge benefits from this not only ensuring we operate responsibly but also efficiently. Spreading the MSC message has been a huge part our day-to-day dialogue with customers. We believe it is extremely important to engage customers in a conversation about sustainability and spread the message. Having the MSC accreditation equips us with the tools and confidence to discuss the provenance of our products. We are so proud to offer Gluten Free at our restaurant. This is available allday everyday in both the restaurant and takeaway. Providing this service has proved a huge undertaking. Between the acquisition of separate cooking utensils and a state of the art frying range there has been a huge amount of staff training involved. Being able to provide Gluten Free meals is a huge responsibility and we have worked hard perfecting our technique with the training and guidance provided from Coeliac UK – in fact, we 11

are currently in the process of gaining our Gluten Free Accreditation. Staff are often an un-utilised asset in Fish and Chip Restaurants and the hospitality industry as a whole. After such a huge investment in our Hull Restaurant it was only natural that we would want the quality of our product reflected in the quality of our service. Our team have greatly benefited from the enrolment onto the Seafood Academy by UKRS Training. With 28 apprentices and more being signed up each week, we have seen a huge benefit in knowledge, service and also morale. The training has equipped our team with knowledge to feel comfortable serving our signature dish – fish and chips. A great aspect of the Seafood Academy is the courses are designed specifically around the fish and chip industry (unlike most hospitality and catering apprenticeships), this has been invaluable and helped us change the perception that a job in fish and chips is just a thoroughfare for something else. A main feature of our Hull Restaurant is our Fish and Chip museum, featuring the UK’s oldest Frank Ford frying range. Hong Kong Chewy! Chippy Set Up at British Festival in Asia
Z
an Fish Wholesale journeyed to Hong Kong to train the staff of The Chippy at the Best of British Festival. The Best of British Festival is an event aimed at bringing the UK closer to the people of Asia. Brands such as Aston Martin, Ted Baker, Land Rover, Links of London, Sunseekers, Brompton and Guinness were also present at the event. A part of the Derby based fish and chip shop chain, Zan Fish Wholesale has decades of industry experience, and is a one stop shop for all fish and chip shop catering needs. They stock dry, fresh and frozen goods, and provide both catering equipment and hands-on support to their clients. During their time in Hong Kong, Zan Fish setup an entire kitchen, trained 14 staff, and offered continuous on site support. The pop up fish and chip shop was incredibly busy, and at one point Zan Fish had to arrange for an emergency supply of extra fish and chips to be delivered via air freight. Operations Director, David Parnell, said: “We’ve had to work hard in getting a new supply flown across to Hong Kong.

To say we had to pull a few arms is an understatement it simply comes down to our long term relationships with our suppliers.” Zan Fish Wholesale will continue to support The Chippy team in Hong Kong, as well as the other restaurants they plan to open throughout 2016 and 2017. Craig of The Chippy said, “Zan Fish are our inspiration, and we can’t wait to have the team back for more fish and chip adventures.” Nickos, Managing Director of Zan Fish Wholesale, said: “It was definitely a challenge, but now we have the experience of going overseas. Zan Fish Wholesale can now provide any fish and chip business with support, whether that be in the UK or elsewhere around the globe.”

Massive Success Continues
MSC certification more than doubled in the UK last year, and interest is expected to accelerate through 2016.
W
ith growing retail sales of MSC labelled seafood, a host of fish and chip shop and supplier certifications, and enthusiastic feedback from the sector, it’s clear that there’s a wave of positive support for offering MSC certified sustainable seafood, which is likely to continue throughout 2016. According to a recent MSC report, UK shoppers have shown an increased appetite for sustainable seafood, growing an estimated 16% on the year to March 2015, (and up 30% compared to 2 years ago). This is excellent news for the even greater number of fish and chip shops that have gained MSC certification over the past year, and are now serving their customers assured sustainable, traceable seafood. Looking ahead and following a successful year, the MSC is anticipating the following trends and predictions in the fish and chip shop sector for 2016: Over the past couple of years, we’ve seen a huge rise in interest from both suppliers and from fish and chip shop. That will only grow in 2016 as MSC certification becomes more widespread in the sector. The number of MSC certified fish and chip

restaurants in the UK has more than doubled in the past year, which has also resulted in an increase in sales of MSC certified fish. The number of MSC certified purchases from fish and chip shops with chain of custody certification has doubled. These are largely purchases of popular species such as MSC certified cod, haddock, plaice and hake, with some other more niche products such as scallops, crab and mussels also featuring on chip shop menus. By the end of 2016 we hope to have more than 100 fish and chip shops with MSC certification. That’s a significant acceleration, with the number of certified chippies having more than doubled this next year, we’re expecting the same trend next year. We will start to see Cornish hake appearing on fish and chip shop menus, particularly in the south west, in the first half of the year. The Cornish hake fishery, was the first in the UK to gain certification, in June this year and has generated a great deal of interest in the supply chain; both MSC suppliers and fish and chip shops alike. Originally a species that was mostly being exported to Spain, now the majority of Cornish hake landed in Newlyn is consumed here in the Chippy Chat & Fast Food Magazine • January 2016

UK. It’s a delicious alternative to other species and is great battered with chips. We expect more fish and chip shops will start to look at Kingfisher’s record-breaking menu for certified sustainable species and introduce some of the more unusual MSC certified seafood to their customers. Over the past year a number of chippies have moved towards offering more unusual certified seafood choices on their menu, offering customers a greater range of tasty, healthy sustainable seafood at an affordable price. Pioneering Kingfisher Fish and Chips in Plymouth, for example, launched a menu earlier this year with 12 sustainable species, the most of any restaurant worldwide. It included MSC certified seafood from UK waters, such as MSC Jersey lobster and certified Cornish sardines. It also included cod and haddock from the well-managed cold, deep waters of the North East Arctic (Barents & Norwegian Seas). We’re also looking for new opportunities and routes to MSC certification to help even more fish and chip shops to put the MSC label on their menu. Something we hope to tell you more about early next year. We also plan to get really involved with promoting all our certified shops through a summer campaign. nly in the true spirit of Christmas staff member Zara Hilton who entered the competition on behalf of the shop 15 times was given the car for herself. Zara was thrilled. Having only just passed her test at the tender age of 26, she had been a road user for a mere 4 weeks when the star prize was presented to her. Tony a Nortech Superior customer for over 25 years said “Zara has been with us for around three years now, she actually posted the entries and its only right she walks away with the prize – we have been using Superior for a long time now its what helps make our fish and chips taste so good.” Zara said “I am speechless to be driving this new car around, the only other thing I’ve ever won is £2 on a scratch card. I actually collected over 30 entries for the competition but only ended up sending 15 of them in.”

Grandma Pollard and her family started in the premises known today as Grandma Pollards Chippy on the 3rd of August 1957, over 50 years ago, when her family were then introduced to the world of fish and chips and she added her expertise, i.e. home made pies and famous vanilla slices to the existing business of fish and chips. Grandma Pollard and her husband Cyril had 4 children, Roy the eldest, Barbara the only daughter, Geoffrey and of course TONY the fish fryer today. Her young family showed great interest in this business, and she therefore passed her knowledge onto all of them, and to this day her youngest son Tony is still at home on the range frying his fresh haddock and chips with a tasty dab. Alan Hackett Sales & Commercial Manager of Nortech Foods said “This £10,000 car giveaway was our biggest yet! We were celebrating our 30 year anniversary with Superior in the trade. Pie-fection! Pie perfectionists from all over the UK are now invited to enter the 2016 British Pie Awards.
T
he world-famous Awards, which are to be held on 9th March 2016 in the Leicestershire town of Melton Mowbray, are in their eighth year. The hotly coveted contest continues to grow in popularity, with last year’s Awards seeing a staggering 830 pies entered from 131 professional bakers, butchers and chefs judged by 109 pie aficionados. The Awards celebrate our nation’s love of pies – be they hot or cold, sweet or savoury. A few simple pie rules must be adhered to though: all pies are to be totally encased in pastry with a closed top, and fit into one of the pre-assigned classes. All pies, except the specialist class, must also be commercially available in the UK. And new for this year, the Awards will now take place during British Pie Week (7th to 13th March). Matthew O’Callaghan, Chairman of the Melton Mowbray Pork Pie Association, said “We’re very much looking forward to another Awards celebrating the craftsmanship, creativity and innovation in pie making and what better time to do so but during British Pie Week its self.

For the 2016 Awards and in celebration of HM The Queen’s 90th birthday – bakers, butchers and chefs are invited to create a pie ‘fit for Her Majesty The Queen’. Although judged to the same standards as other classes this class is all about the ‘wow factor’, with more decoration and freedom to choose filling and pastry type. It also does not have to be commercially available. HOW TO GET INVOLVED Entry to the Awards is open now until 22nd February 2016. It’s open to anyone who sells pies commercially in the UK, with a special rate for companies with fewer than 10 pie makers. Since the awards were established by Seafish back in 1988 they have continuously grown and developed, making their way into the hearts of thousands of fish and chip businesses up and down the country, and are now widely established as the ‘Oscars’ of the fish frying industry. rowing from a single award category in the beginning to there now being 14, they showcase a diverse range of categories that cater for every aspect of running a successful fish and chip business, recognising everything from traditional takeaways to mobile operators to excellence in training and responsible sourcing. The annual awards year is a very busy one - from the judging of submitted entry forms and supporting portfolios to mystery shop visits and in-depth shop inspection audits, through to the judging of the final presentation, the quality of our nation’s friers shines through at every stage. The idea for the first Fish and Chip Shop of the Year Competition originated from the friers themselves in 1987. The first competition was respectively held in 1988 and Toffs of Muswell Hill, London, were crowned champions - becoming the first ‘best fish and chip shop in the UK’. Since then there have been 27 winners of the flagship Independent Takeaway Fish and Chip Shop of the Year, ranging from the Halfway Fish Bar in Dorset to The Bay in Aberdeenshire and Petrou Brothers in Cambridgeshire to Frankie’s Fish & Chips in Shetland – all points of the compass! The Great ‘Fish & Chip’ School Lunch Award Open to all schools/school caterers in the education sector serving fish and chips as part of school meal offering and rewarding such schools who excel in educating pupils about the story of fish and chips and where ingredients are sourced from.

Extending the Life of Your Oil During the Winter By Nigel Hodgson - Former winner of Fish & Chip Shop of the Year and a trainer at KFE School of Frying Excellence. One of the most common questions from fellow friers in January and February concerns the deterioration of their frying medium. I would normally advise that this is due to a combination of increased starch and sugar levels within potatoes and a lower level of business. STARCH / SUGAR LEVELS
A potato normally consists of 80% water, although this may vary depending on the variety of potato you are using. The rest is made up of starch and a small amount of sugars. Excess starch is a major cause of oil deterioration, particularly during the winter months. The higher the sugar the darker the chip becomes and the the faster the oil deteriorates. The more information that is known about the potato tuber and the best means of taking care of it, the better the likelihood of an extension of the life of the oil and an improved end product. CORRECT STORAGE
A potato naturally produces starch to keep itself warm. The starch will convert to sugars when stored below 10 ºC and particularly so when stored below 6 ºC. Consequently, it is best not to store potatoes in a cold room or against an outside wall. REMOVAL OF STARCH
Starch must be thoroughly washed off the chips in order to preserve the frying medium and maintain the quality of your cooked chips. Chipped potatoes should be washed twice before using Starch Doctor or All Seasons. Warm water can help to reduce the starch and sugar levels because it will draw the sugars out of the potatoes. LOWER LEVELS OF TRADE
It is much easier to be an outstanding fish frier when trade is brisk. The constant flow of business keeps ingredients fresh and the oil is being regularly topped up and refreshed. Hot oil standing idle deteriorates as the absence of a ‘steam blanket’ allows increased oxygen to enter the pans and degrade the oil.

When preparing potatoes during these quieter months it is better to use the ‘little and often’ technique. This will enable you to keep your potatoes fresh and not stored in water for unnecessary, lengthy periods of time. Golden fried chips

1 Use Diastix to learn the sugar content of the potato, which will then advise you of the chips frying colour. To produce consistent golden colour chips the potatoes should contain no more than 0.25% sugar. 2 Prepare your potatoes using the “little and often” technique, this will reduce the amount of water within the potato. 3 Wash the chips twice before treating with Drywite. 4 Use the correct dosage of Drywite, Starch Doctor or All Seasons as per the supplier's instructions. 5 When using Starch Doctor or All Seasons to reduce the starch levels , use warm water as this will help to draw excess sugars and starch levels from the chips. 6 Allow the chips to “Air - Dry” for at least an hour prior to frying. Cold room temperatures increase the drying time of the chip. 7 Don’t overload pans when frying chips; this will reduce the frying temperature, resulting in a sub -standard chip. 8 Regularly check your frying temperatures to ensure the probes in the pans are reading correctly. 9 Sieve your pans after each fry which will assist you in reducing the carbon content and prolong the life of your frying medium. 10 Use a reputable frying medium, one that is capable of producing deliciously tasty fish and chips consistently, whether trade is sporadic or frantic.
The annual Jan / Feb reduction in trade can come as a "shock to the system" and catches so many of us out. For some the quieter trade can result in hot oil standing idle which deteriorates and carrying excess raw materials into the next day. The best practice is to use the "little and often" technique to continue being an outstanding fish fryer constantly achieving a cooked product that is fresh and tasty regardless of the time of year… and extending the life of your oil.

Fish ‘IN’ Chips In late October, Southern Proper Hospitality Group opened a second location of its popular Buckhead restaurant, the Big Ketch Saltwater Grill, on busy Canton Street in downtown Roswell Georgia USA. By Bobby Nicole

Ask them for their signature chippy dish - a fish cooked in chip batter! The Roswell version of the Big Ketch emerged from the demolition and complete remodel of a 1950s brick house, which doubled the square footage and added parking in back. Inside, the airy, vaulted space is divided between adjoining dining rooms and a large bar room adorned with mounted fish and maritime curios. Executive chef Derek Dollar, who leads the kitchen at Milton’s Cuisine & Cocktails, put together the sizable “beach chic” menu, which not surprisingly focuses on seafood but also features a surprising number of seemingly healthy offerings.

There’s the Bowl of Brussels starter ($6.95) with herbs, veggies and crunchy rice noodles, and signature Mediterranean and Asian low-cal salad bowls ($6.95) with quinoa. Fresh fish plates ($15.95$24.95), including salmon and grouper, are available grilled, blackened or jerkstyle. Of course, there are other choices, too, including Fish IN Chips ($13.95), which means beer-battered cod, rolled in kettlecooked potato chips and deep-fried, and the Steak Burger Royale ($10.95), a hefty half-pound blend of ribeye, tenderloin, New York strip and chuck with grilled onions, American cheese and pickles. New menu items unique to the Roswell location will include spicy conch fritters, a grouper Reuben, a Charleston curry seafood bowl, and jerked pork chops with caramelized pineapple. Favorites from the Buckhead location, such as basil-Blue Moon mussels and the Big Ketch grouper sandwich, will be on the menu, too.

The Big Ketch Bowl of Brussels is hot brussels sprouts, fresh basil & cilantro, crunchy rice noodles, carrots julienne, savory teriyaki, crushed macadamia nuts. At the bar, snack on market-price oysters on the half shell, lump crab and lobster cocktail with citrus-basil sauce ($16.95), hush puppies with remoulade ($2.95/$4.95) and Beach Balls, “surf and turf” bacon, shrimp and green onion fritters with key lime mango sauce ($8.95). On the beverage menu, find a good selection of local beers on drafts, including Copperhead American Amber ($6.50) from Roswell’s Gate City. The price-tiered cocktail list ranges from House Drinks ($5), Boat Drinks ($7.50) and Yacht Drinks ($9$10). Peach Perfect is a mix of Angels Envy bourbon, peach puree, mint, citrus and honey liqueur. Lunch is served Fridays-Sundays with lower prices on entrees and sandwiches.
