ono Cafe in the Merchant City is catch of the day with its award winning ‘chippy’ offering. With many chip shops now offering Gluten Free options, this Glasgow café has won applaud from pundits by offering plant based fish and chips. Glasgow is dubbed the UK’s most friendly vegan city by noted animal welfare charity, PETA. So it’s no surprise that our offering of plant-based fish and chips has received a top award. The hearty portion of “to-fish” with hand cut fries, mushy peas and tartare sauce has been on the menu at the Merchant City eatery for a while and has gone down a storm. Dawn Carr, PETA’s vegan corporate projects manager said: “With the demand for plant-based food higher than ever, vegan fish and chips is a smart addition to any restaurant menu” “PETA is calling on caring people everywhere to let fish live in peace and to enjoy some delicious, hearty vegan options instead.” Apparently vegans are statistically less prone to suffering from cancer, obesity, and diabetes than meat-eaters are and have a lower carbon footprint.

Fifty Years Celebrat-Ed! With celebrities, such as singer Ed Sheeran and actor Tom Hiddleston walking through its signature cobalt blue doors, Aldeburgh Fish and Chip Shop is one of the best-known fish and chip shops in the UK.

T

his three-generation strong shop is still a big success after 50 years, seeing people come from all over the country and withstanding huge queues – sometimes up to 200 yards and two hours long – just to get their hands on a portion of chips. Since its opening on April 14, 1967, the Aldeburgh Fish and Chip shop has continued to go from strength to strength, employing over 30 people across two shops and restaurant. Grandson of the original owners Horace and Celia Cooney, Alan Cooney said: “We have always fried the same way. My grandparents originally took over the chip shop from a Yorkshireman who fried in beef dripping, which is very rare nowadays, but we have kept it the same and I think that’s what makes our fish and chips taste so good. “We’ve always done things the same way with same ingredients and similar menu. The only thing that has changed is the equipment as technology improves. “We are very lucky with the location. Being efficient at what we do and keeping it simple is the key to our success. “We get orders for weddings and schools. Last year we had a charity auction for a queue jump ticket to jump the queue at any time. It was sold for £700 and the

money went to the East Anglian Children’s Hospice, the RNLI and one other charity – it still hasn’t been used!” Owner Peter Cooney, Alan’s father, opened the sister shop, The Golden Galleon, on July 12, 1997, followed by The Upper Deck restaurant on July 11, 2000. Remembering his family, Alan Cooney, 29, said: “My mum was a big part of the business, she passed away in 2010 the day before Aldeburgh Carnival, and we still had to open up shop the next day. One thing about us is that we keep going. My grandad was still involved with the business right up until he died in 1998, he never really retired. “That’s something we are proud of, when you go through hard times and you lose someone and it’s a painful thing to go through, but we all worked together. “It means so much to me that it’s been in my family for so long. It’s my whole family history and my entire identity is connected to the fish and chip shop. “I’d like to think that grandad would be proud that it’s reached 50 years, and that’s what motivated me to continue being successful and to keep it going for my children.” Actor Tom Hiddleston is one of several celebrities who have been spotted in the queue at Aldeburgh Fish and Chip Shop. The chips shop’s longest serving employee, Brenda Wells, who started working there in 1980, said: “I remember when we used to use newspapers for the wrapped orders and magazines for the open orders. “The menu has changed over the years,

when we started it was mainly cod, chips, plaice and Celia’s, who we all used to call ‘mother’, popular homemade fish cakes. We used to smoke the salmon in the yard as well. This year, to mark its 50th anniversary, Aldeburgh Fish and Chip shop is sponsoring the Bandstand on the Beach, part of the Aldeburgh Festival, which is also this year marking a golden moment, with 50 years of Snape Maltings Concert hall. “Aldeburgh Fish and Chip Shop is a true gem of the picturesque East Coast. Serving up deliciously fresh fish since 1967, no visit to the hometown of Benjamin Britten would be complete without a visit. T

he owner of a Norwich chippy said it felt “amazing” to have been crowned VisitEngland’s Tourism Superstar. Duane Dibartolomeo, who runs the Grosvenor Fish Bar in Norwich’s Lower Goat Lane with Christian Motta, was one of 10 people across the country shortlisted in the category of the 2017 VisitEngland Awards for Excellence. The award was decided by public vote - meaning the people of Norwich and Norfolk got behind their local hero in their numbers and readers of Chippy Chat too. Originally from Miami, Mr Dibartolomeo lived in New York before moving to Norwich, and has co-owned Grosvenor Fish Bar since 2012. He is well known for his banter and larger than life personality, how he meets and greets every customer, and how he goes out of his way to welcome people and even offers tips on great places to visit in the city. Speaking about the award, Mr Dibartolomeo, 57, said: “It is amazing. I have always felt this sense of community

here in Norwich. “The people have been so accepting and loyal, and they really got behind us. It [the award] is reaffirmation of that.” Mr Dibartolomeo said there were plans to expand the business in the coming year through franchising. “This is as big as it can get [in the Norwich shop] and we really love it here,” he said. “So the only option would be for someone to open up another shop with us.” It is unclear what duties Duane will have to carry out in his year of office. He said someone had already expressed an interest in opening a franchise in Brighton. As news of the award spread, customers were queued outside the door of the fish bar at lunchtime today. One customer said Mr Dibartolomeo was a worthy winner.“I think it’s the best fish and chip shop in England,” he said. “It’s fresh and they do unusual options that are a little bit different. “It’s definitely a worthy winner, we have tried a few around the country, but this one is very good.” The awards sponsored by the Daily Mirror, coincide with English Tourism Week - a week of events to raise awareness of what the country has to offer.

The Crucial

There from the start, with an ethos of ‘we only sell quality products’, TCR are as dedicated to Crucials sauces as they have ever been By Stuart Catterson

A short re-cap...

T

he Crucials’ story entered a new chapter this month when I took a trip back to Birmingham, the crucial heart of the UK. This time to visit father and son, Brian and James Matthews, of TCR Food Services. In October last year, I visited Marfast in Manchester, another business savvy family firm, whose growth and on-going success showed uncanny parallels with Crucials. It was obvious from the start that the family motto appeared to be like that of founder/MD of Crucials, Gabe Gabriel, ‘be the best at what you do’. Going further back, it was in May of last year, I made my second visit to the HQ of Crucials Sauce to meet up with Gabe, who gave me an update on Crucials’ rapid growth and the exciting developments the future had in store. A year or so earlier, I’d covered the story of the early years, the birth of Crucials, how Gabe took his passion for creating sauces and applied it to growing the business, step

by step, from seemingly nothing, until it bloomed and quickly became one of the major players in the world of sauces. A fascinating, quirky story starting out with a very, very small production run of sauces sold to a few chip shops, on a market a stall and, even at car boot sales, - a real tale of belief and determination. Little did I know, when I returned to Birmingham this month I was to meet the very man who worked that market stall and pitched up with Gabe to sell the early Crucials Sauces at car boot sales. The legend is confirmed.

The Road to TCR The Matthews family have a proud history of food service that goes back generations. They were the second family to sign for a stall on the original Birmingham Bullring Market, selling

mainly chicken, and delicatessens. Brian, in turn, ran the family stall, so was no stranger to being in business for himself. But the road to TCR started for Brian when he worked for TCP (Tasty Chicken Products) around 1989. Working for Len Malla, Gabe’s uncle, also a key partner in the early days of Crucials. Brian worked in Len’s chicken factory and then on the road for ten years. Eventually, Brian talked with Len, saying he would like to go into business for himself again, but would not be happy going into competition with TCP, as Len had always been so good to him. Len suggested Brian should buy the distribution side of the business and TCR (Tasty Chicken Retail) was born. Nowadays, the TCR range of products far exceeds chicken products. Take a look online... tcrfoodservice.co.uk TCR still sell a lot of TCP products to this day. As Brian says, “they have excellent quality produce so why wouldn’t I sell them?” This is a theme that

keeps on spreading into the next unit. “So, were there any products that were best sellers that stoked the growth?” I asked... “Crucials sauces and Ace for Kebab.” came the reply. “Crucials sauces have always sold well and we have always worked very closely with Crucials. Apart from getting on very well, we were literally just two doors down from Crucials for a long time, even now they are not that far away.” In the early days, Brian would feedback customer requests that led to Gabe developing new flavours. Brian lays claim to the idea for the ‘Sweet Chilli’ which was apparently going to be called ‘Mild Chilli’ until Gabe looked at the name on a label and said, “No, it just looks wrong” James did his first work experience with Crucials and took part in the making of the first batch Piri Piri.

Connection both Brian and James come back to time and again, “It’s all about the quality. We only sell food we would feel happy to eat ourselves. We visit manufacturers and check on their working practices and taste the produce. If there are any problems, we say no. It takes a long time to build a reputation and no time at all to lose it.” The quest for high standards doesn’t stop there. TCR put as much effort into the service they give their customers, as they do choosing products. The delivery must be on time, the driver should be courteous and helpful and a clean vehicle is also important. TCR recognise that the image of a quality outlet could be damaged if it were seen being supplied by a shabby, dirty, old van. So, three new trucks are purchased every year and old ones are retired. Again, a firm that lives by the motto ‘be the best at what you do’.

Both men talk with a real fondness and respect for the Crucials product and the people involved in making of that increasingly famous squirt. This has got to be good coming from two people so obsessed with quality.

That Crucial Connection The growth of TCR over the last decade has been exponential. From a single van to a fleet of 14 trucks, with warehousing that just

A Penny for the Guys! They came in their droves, but all left satisfied and full.

P

apas massive 1p giveaway saw their restaurants smash their target of 10,000 portions of fish and chips served across their sites. Dino Papas who owns the fish and chip chain with his dad Sid and brother George said the family organised the event to celebrate their win as the BBC’s best fish and chip shop. He said: “It’s not about the money for us, we are here to give something back and to celebrate being number one.” The huge surge in popularity for the Papas restaurants even saw an alert triggered on Google, with the search engine picking up the hundreds heading for the bargain meal using its tracking software. Throughout the day, which mainly remained sunny, the fish and chip family even ran competitions for customers to jump the queue, which at some points reached a wait time of one hour and 15 minutes. Customers had the opportunity to make the best batter they could or eat a spoonful of Chilli American Chip Spice to jump the queue. Families, school pupils and pensioners were among those willing to wait in the queue to get their taste of Papas famous fish and chips. Charlie Littlefield, 19, and George Pollitt, 18, both of Beverley, said they came to Papa’s for their 50p offer last time. Charlie said: “We’ve been waiting half an hour and would have to wait that in a normal

chippy. We’ve come here for 1p fish and chips, why not, so we decided to get in the queue early. I’ve gone for salt and vinegar and George sent for chip spice. They’re really good.” The two Papa’s sites at Great Gutter Lane in Willerby and at the former Swiss Cottage pub in Bilton sold more than 10,000 fillets of fish and chips. At the beginning of the day, Dino said: “We’ve already got more people in the queue now from 10.30am than we did when we were at the peak when we sold portions for 50p. This is truly remarkable. We might need to get some more fish in. This is a true celebration.” Despite Hull FC players helping out with serving and a bouncy castle on hand to keep the kids entertained, the queue was too much for some people. Well done to the staff at Papas for creating a great atmosphere, quick service and lovely food. You have done Hull proud. W

hen Nigel Barden announced you as the 2017 winners what went through your minds? When Nigel started to mention about “lives going to be changed” and “a small housing estate in Plymouth” our hearts stopped and we just filled with emotion. We had achieved something truly amazing and we were so happy. As we walked up to the stage everyone in the room was truly magnificent, the clapping, the support, the hugs and kisses and handshakes. We will never ever forget those scenes and that moment in time. How has the award affected trade in your shop and how did you prepare for this uplift? On finding out we had reached the National Finals again, we knew what we had to do. So in preparation of the possibility we could win the big one, we needed to increase capacity. We needed to do this anyway as we purchased a 5 pan high efficiency frying range 3 years ago to future proof us. But the future was here now and the 5 pan range was already under capacity. We invested in another 3 pan high efficiency frying range giving us enough to deal with a growing trade. We also had to increase our storage capacity and increased our staffing levels to around 20 staff. Within a week of winning sales were up 100% but soon settled down to circa 40% increase. What have you been up to in the first few weeks of the award? We expected our shop to be very busy, this has been well documented. To a degree we

expected some media interest but we didn’t expect international media interest. We had congratulations from Germany, Spain, Italy and Miami. We had radio interviews with 2 Canadian radio stations and a German TV company filming in our shop for a day. What advice would you give to anyone entering? Work and run your shop great all year round not just for the awards or judging. Make sure your standards are up there all the time, it will make your business better. Be consistent in everything you do, your customers will appreciate it. Visit trade events and shows, get involved. The association with likeminded people is fantastic, you are not alone. We learn something at every event we attend; our industry is evolving and getting better all the time. Enter more than one award category, I am a huge believer that if you are entering the Independent takeaway award, you should have other strings to your bow. We look forward to seeing you at the Isle of Ely Produce open day - why do you think so many chip shops now attend this event? This event is a must attend on the chip shop calendar of events. How many times do you get the opportunity for a farmer to open up his farm and talk about the way he grows and manages his potatoes? Industry knowledge is becoming more important in this current climate. It is important we have a better depth of knowledge, so we can train our staff and pass information onto our customers. With five establishments across Devon, Rockfish was assessed across a wide range of judging criteria including outlet appearance and facilities, menu development and innovation, supplier relationships, marketing and promotion activity, and staff development and training practices. Awards auditors also undertook mystery dining visits to appraise customer service levels and the quality of fish and chips on offer. Pelican Flies MSC Flag Fish and chip fans in North Devon can enjoy their favourite seafood dishes knowing they are sourced sustainably, following the successful Marine Stewardship Council (MSC) certification of The Pelican Fish & Chip Restaurant in Barnstaple.

T

he news means the restaurant is now the first in North Devon to be MSC certified and can now use the MSC ‘blue tick’ label on its cod, haddock, plaice, Greenland prawns and Cornish hake assuring customers that the fish sold has been responsibly caught using sustainable methods. Recently named one of the top five Independent Fish & Chip Restaurants in the National Fish and Chip Awards 2017 and awarded the National Federation of Fish Friers (NFFF) Quality Award, The Pelican was opened 25 years ago and is run by Martin James and family. Martin and the team pride themselves on using local Devon produce and even sell their own label coffee beans, “Peliccino”, and own label beer brewed just five miles away. Known for their fun promotions, The Pelican runs regular giveaways including a weekly competition, “Quiz n Chips” with local radio station, The Voice. The Pelican’s menu offers a great range of homemade dishes which use the MSC certified cod, haddock, plaice, Cornish

Nothing beats eating prawns and drinking white wine on a glorious autumn day overlooking Darling Harbour. Occasionally I take advantage of the many online vouchers available and there is one particular deal that I have purchased a number of times. It’s a prawn and wine deal at Blue Fish at Darling Harbour. Two buckets of prawns and a bottle of wine for $33 (normally $85). We arrived and were seated outside under the umbrella overlooking the South Steyne (the ferry boat restaurant). We opted for a bottle of the De Bortoli Willowglen Semillion Sauvignon Blanc and a bowl of chips to go with our prawns. Our bottle of wine is served table side in a bucket of ice ready for us to fill our glasses when needed. The service is efficient today. We spent a good couple of hours lazing in the sun, sharing our bottle of wine and chattering away enjoying each others company and people watching. And if you are wondering about those award winning fish and chips one recent Trip Advisor wrote. “We had a most delicious meal here. It was the deep sea dory and the chef did it proud. Perfectly cooked, flavour was amazing and the chips that went alongside were scrumptious. Service was fast, friendly and top notch. Would definitely return.

Green on Red! Millers Great Comic Relief Fund Raiser

illers Fish & Chips, who were recently declared one of the UK’s top 3 Fish and Chip shops in the National Fish & Chip Awards 2017, created a very special plunge for Comic Relief raising almost £500! The award-winning, 4th generation familyrun restaurant had staff members spending the evening in a giant bath of mushy peas. For the whole evening, the proceeds of every pot of mushy peas purchased was donated entirely to comic relief. All of the Millers staff members abandoned their typical Millers’ shirts and frying gear in favour of official merchandise supporting Comic Relief – though their trademark bandannas stayed in plaice! Ramsey’s Gambles on Chips in Vegas Gordon Ramsay Fish & Chips opened recently across Las Vegas Boulevard from Caesars Palace.

T

he celebrity chef from England, said opening his own “chippie,” the colloquial British word, has been a dream of his for many years. Crispy fried fish and a fish sandwich, both with hand-cut French fries, are among the offerings at Gordon Ramsay’s newest Las Vegas eatery. “Fish suppers were a treat at home,” he said. “We finished Saturday and Sunday nights with a fish supper and we had to share, so I’d share with my brother. My sisters would share one. We were never allowed a full fish supper [because of the cost].” The fried, sustainable cod filets are “cracker,” to use a glowing British adjective. The batter is remarkably crispy, and the fish is flavourful and tender. “We lightly salt it for 20 to 25 minutes with lemon salt. It helps cure the fish, which stops it from being watery,” Ramsay said. “Water destroys the batter.” “We tested the batter. It stayed crispy for 32 minutes,” he added. A three-piece portion with fresh-cut fries, homemade tartar sauce and malt vinegar runs $11.99. The small menu also includes a fried fish sandwich ($14.99), fried shrimp ($15.99) that have been marinated in basil and lavender, and a battered sausage ($13.99). Meals come with fries and also with what Ramsay fondly remembers from childhood as “the bits.” (surely he means scraps – ed) “They’re all the little, crispy bits of batter that are scooped up at the end and salted,” he said. The restaurant has seating for 25 guests, but Ramsay said he expects 60% of customers to carry out their orders. The exterior is hard to miss, given its red doors that resemble old-fashioned British phone booths. On trip advisor he has received mixed reviews although many regard the fish and chips as excellent.

Mission KFE and friends deliver industry campaign with style

K

FE undertook their first ever industry wide fundraiser, KFE on a Mission between Monday 20th – Wednesday 22nd March. The initiative saw KFE School of Frying Excellence trainers Nigel Hodgson, Gordon Hillan and Mark Petrou along with KFE Customers Fred Capel, Stuart Fusco, Calum Richardson and this year’s National Fish & Chip Shop of the Year Winners Craig Maw and Nikki Mutton visiting shops to impart their expertise and knowledge. In return for their visits where they were sharing best practice and helping to up-skill the industry the shops made a donation in support of The Fisherman’s Mission. Shops as far apart as Harbourside in Plymouth, Cromars in St Andrews and Millers in Haxby benefited with an on-site training by one of these National Fish & Chip Winners, all who had generously given up their time to share knowledge and up skill the industry. Each shop that was visited had different reasons for joining the mission, from improving their frying skills to marketing their business, through to training staff best practise. One shop owner took the fundraiser to a new level, mychippy.com in Enfield, owner Andrew Huang offered free fish and chips for the day. He not only had Mark Petrou training but KFE MD Paul Williams in the Fisherman’s outfit and raised almost £500 for the charity. The food and entertainment was amazing, the evening hosted a charity raffle and auction boosting the fundraising further. he Irish Traditional Italian Chippers Association (ITICA) has announced that its 8th annual ITICA National Fish & Chips Day will take place on Wednesday, 31st May 2017. All ITICA members throughout Ireland will offer their customers half-price fish and chips to celebrate the 128-year-old tradition.
 “We look forward to ITICA National Fish & Chips Day every year,” said Peter Borza of ITICA. “It is a hectic but fun-filled day that gives us the opportunity to celebrate 128 years of the ‘one and one’ and most importantly to thank our local communities for their ongoing support.

 “We established ITICA back in January 2010 to highlight the heritage behind the Irish Italian chippers in Ireland, and emphasise what makes our family run chippers unique. The response each ITICA National Fish & Chips Day over the past three years has been amazing and we hope that everyone will join in again this year.” Currently with over 150 members around the country, ITICA was created to promote and build on the traditional values and ethos of the Irish Italian chipper community. All ITICA member chippers carry the official ITICA logo, which assures customers of the highest levels of quality and service. The day attracts over 200,000 people
