ames T. Blakeman and Co Ltd, based in Newcastle-under-Lyme in Staffordshire, sponsor a Breakfast Club at Burnwood Primary School in Stoke-on-Trent. The project is part of an initiative launched by the Greggs Foundation in 1999 in response to growing concerns that

many youngsters were attending school without having anything to eat first thing in the morning. Blakemans began its relationship with Burnwood in September 2015 and the education site’s links with the famous sausage making company are still going strong. Support from the manufacturer allows more than 60 children from underprivileged backgrounds to be escorted to school via a mini bus/walking bus where they are supplied with as much breakfast as they want at no cost. The relationship established through the Greggs Foundation – which now has more than 450 Breakfast Clubs providing meals to around 27,000 children every school day - is blossoming and staff from Blakemans have just paid another visit armed with lots of presents. Staff collected colouring books, pens, pencils, games and toys for the children to enjoy while they tuck into their breakfasts. Philip Blakeman, Managing Director at Blakemans, said: “We fully endorse the Breakfast Club’s values for improving health, nutrition, social awareness and attendance, which can only lead to a positive improvement in classroom performance and results. “We have a great relationship with the school and as well as the official support via the Greggs Foundation and their Breakfast Club project, we support them with food for special events and other collections. “The most recent trip with the colouring books and other things was fantastic – our staff got so many hugs it was lovely to see.” How do you engage with schools? – austen@chippychat.co.uk

amed after Mrs. Middleton, who ran the shop up to the 70’s, Middies Fish and Chips, owned and run by Tony Wallace and his brother-in-law Luke, is a Fish and Chip shop in the traditional sense. With a queue winding out of the door during peak opening at lunch and teatime, the staff are committed to providing good service and value to a loyal and growing customer base. “We’re proud of continuing the tradition of a good batter and quality fish with seasonal chips, but we still have an eye on the way the market and consumers expectations are developing. We take orders by phone to help customers avoid queuing, and card payments offer an extra level of convenience most customers expect these days.” Said Tony. Tony runs regular promotions, whether seasonal, event based or simply to maintain interest, and social media is a proving to be a great tool to generate engagement with the local area, although it can also offer a wider reach. “We’ll often exchange good natured tweets with other Chippies in the area or nationally, it’s good to feel part of a larger community and helps spread the message about the Fish and Chip offer.” The Middies Team also appear in Social Media as cartoon

characters, which stand out in timelines and feeds; and are adaptable for any promotions which are running. Past promotions include battered Strawberries with local clotted cream ice cream during Wimbledon a couple of years ago. “That was great for our profile, we appeared on local radio and the DJ’s did a tasting live on air, the story also went viral and appeared in numerous local papers as far afield as Bath”. More recently Tony has been mixing up his pastime of snooker with the business, “We’ve organised local exhibition events with Steve Davis and John Parrott guesting, so they’ve both been photographed in the shop collecting their Fish and Chip supper before the events - it’s good for the Shop and the customers find it amusing when a much loved celebrity shows up and has a chat while they are served.” What really shows through is the enthusiasm for getting it right, and Tony still gets a real kick being behind the counter - even on his last Birthday he was frying up ready for the evening opening. “Getting the batter balanced, the Beeffat perfect and having a good delivery of quality fish - there’s still an on-going challenge in producing a perfectly fried, great tasting meal and I still look forward to seeing both new and regular customers and having that banter with them, our die-hard customers have been with us for decades”. Middies also offers catering for local businesses and will deliver larger orders which keeps things interesting “often we’ll have a regular customer who suggests us when they have a team-lunch or group order - we’re happy to prepare and deliver - its good for our profile and often we’ll gain new customers who’d have just ordered a Pizza or similar, there’s always an opportunity presenting itself to win someone over who may not have had a

really good Fish and Chip meal for a while, or they may patronise a different shop in the town - it’s all good for us to have the opportunity to show them what they are missing”. Future plans include a re-development at the back of the shop in readiness for an increase in tourism in the area - September 2020 sees the 400th anniversary of the Mayflower - many North Americans trace their ancestry back to Gainsborough and thousands will make the trip to the UK for the first time. o Salah Liverpool’s prolific striker enjoyed fish and chips as the Egyptian winger was filmed in heart of Liverpool during a recent break from football Mo Salah’s fantastic form during his debut season at Liverpool has led to him enjoying plenty of time under the limelight. And while unwinding during a short break from his football duties recently, the in-form Egyptian star was seen filming an advert in the heart of Liverpool. Salah had plenty of cameras and filming crew following him around during the week as he took on some unfamiliar acting duties. The Egyptian was all smiles and shared a joke as he waited for his order at his local chip shop Panny’s Place. Jurgen Klopp’s side currently sit third in the English top flight, and look set for European glory too. Klopp will be desperate for his Liverpool side to secure Champions League football come the end of the season and he will be

relying on Salah to keep up his great form. Salah has been Liverpool’s stand-out performer this campaign and played a starring role as they thrashed Roma 5-2 last week in the Champions League, scoring a fantastic two goals for his side. Like A Rolling Stone… This month we catch up with Hans Frode Kielland Asmyhr the UK Director of the Norwegian Seafood Council By Austen Dack
Why is the F&C sector so important to you and your team here in the UK? We are really proud to be able to deliver the main ingredient in the British national dish and this close relationship between the UK and Norway is going to continue in the future. You went to Millers of Haxby recently. What makes them so good? It´s really been a pleasure to get to know the Millers and the great people that work for them. I met Nick on the fishing trip to Norway in September last year and we connected well. David, Leslie and Nick have all been very kind and let me work for a day in their shop to really learn how the best Fish & Chips should be made. The Millers are very passionate of how they run a business and what kind of produce they want to work with. They have really pushed the industry to a higher quality and they are great ambassadors for UK Fish & Chips. You have arrived just as we countdown to Brexit finally happening, what are your hopes and fears? I´m sure our two countries will keep our close relationship also after Brexit. Norway will continue to provide quality Cod and Haddock to the Fish & Chips shops also after Brexit. What do you like best about fish and chips? I really enjoy when I get a good piece of fish. A thick fillet where you really can feel the taste of good fish. What has been the biggest changes to the way you catch fish in Norway in the last ten years? I believe the Frozen at Sea concept has

improved in the last ten years with very advanced factories on board that are able to preserve a very high fresh quality on the fillets. The ongoing work on quality must never stop and I´ am very proud that we are leading in quality. How have you managed to create the most sustainable fishing industry on the planet? The cooperation between fishermen and researchers has been important on this, but also that we are able to see fisheries in a generation perspective. Most of the fishermen grew up with a father and grandfather as fishermen and want to preserve this for their descendants so they can get a good income from fisheries in the future, too. What are fish stock levels like and prices at the moment? The fish stocks in Norwegian waters are the most sustainable in the world and they will never run out with the current regime. High demand give us good prices at the moment but this usually changes from time to time. What Norwegian fish apart from cod and haddock would you recommend to friers? I would really have a look on the Saithe (Coley) which is a nice fish with a lot of taste. What great rock and roll band are you about to see? We will see The Rolling Stones in London in May. Instead of the previous format of shops within a defined region competing against each other, names of shops will be drawn from the Top 20 listing in order to pair respective shops that will be judged against one another. For example, allocating a letter of the alphabet against each individual Top 20 shop, shop D could be drawn to compete against shop K, shop P could be drawn to compete against shop E, and so on. This judging stage will determine the overall Top 10 shops in the UK that will progress to the national final judging stage.

Celebrate Our National Dish! Friday 1st June 2018 will see people
across the country celebrating their love of fish and chips as they come together on National Fish and Chip Day.
L
ast year’s event was a phenomenal success, seeing more people than ever before enjoying fish and chips as daily sales hit an all time high for many fish and chip shops across the country. Social media was awash with recipe suggestions for the perfect batter and single, double or even triple-cooked chips from celebrity chefs and members of the public alike. Mouthwatering photos were the order of the day as the #nationalfishandchipday hashtag started trending at 9 in the morning even knocking Trump off the top spot! National radio, TV and newspaper coverage quickly followed and it seemed that the whole nation was talking about fish and chips. Millions of £££’s worth of publicity was drummed up on the day and this year we look to do even better. We want to help fish and chip shops across the UK benefit from this awareness day and can offer advice on decorating your shops, running special promotions and competitions and generally creating a huge buzz about fish and chips. New cooking oil benefits foodservice
users and consumers alike
G
reat taste perception, sustained frying colour and reduced heat deterioration are among the benefits of a new ‘alternative’ cooking oil, sourced from crops grown by British farmers. Produced from a new variety of oilseed rape – the familiar yellow-flowered crop that’s the third-largest source of the world’s vegetable oil needs – the new oil, known as ‘HOLL’, also promises healthier eating. While rapeseed oil already boasts the lowest levels of saturated fat of any edible oil, HOLL has been bred to contain even lower levels of saturated and trans-fatty acids, two compounds known to increase levels of cholesterol. “HOLL Oil is one of those rare win:win products,” says Lionel Lordez, HOLL’s business development leader, “benefitting the food business operator as much as the consumer and customer. “It’s produced from rapeseed, an oil with which foodservice users are completely familiar. There’s no procedural change. Yet it has significant advantages over ‘standard’ rapeseed oils, thanks to improved performance, lifecycle and consumer benefits. “This is Rapeseed Oil 2.0,” says Mr Lordez. Specially bred, HOLL delivers an oleic acid content of at least 75 per cent, explains Mr Lordez. “That’s about 25 per cent more than conventional rapeseed oils,” he notes. “Higher oleic acid content lends

stability and longevity to the oil, allowing repeated use for heating and frying without deterioration. HOLL also offers operators one of the highest smoking points from any oil available.” In tests, not only were consumer experts highly complementary about the taste of foods cooked in HOLL oil, but HOLL also delivered a very well appreciated colour. Fries cooked in HOLL produced the much-sought ‘golden’ colour valued by consumers, a colour that HOLL was able to maintain consistently throughout the frying cycle. “That’s because of HOLL’s inherent stability. Against conventional rapeseed oil, HOLL’s heat deterioration was at least 40 per cent slower, while oxidised compounds were 20 per cent lower than with high-oleic sunflower oil. “With new legislation on managing acrylamide levels due to take effect from April 2018, business operators will be interested to hear that, compared to rapeseed, corn, soy and olive oil, HOLL produces lower levels of acrylamide in fried food. “Added to HOLL’s favourable nutritional profile, including a highly respectable 4.3 ratio between omega-3 and omega-6 fatty acids and prominent Vitamin E levels, plus its sustainable sourcing from Britain and Europe, we think there are compelling reasons to consider a switch from conventional rapeseed or other oils such as soybean and palm oil.” HOLL is widely available nationwide. W
e love catering for parties and events away from our shop, servicing them well, transporting hot food in thermal containers etc. We’ve never had complaints about the food, however we felt it didn’t represent the standards we had set ourselves. Regularly being asked to cater for parties at distances we weren’t happy to deliver to, we put together a “pop up” frier and counter underneath gazebo’s, we soon ran into difficulties, the time to load the equipment into a van and trailer, get there earlier, take it out, set it up, hope it didn’t rain or was too windy. The capacity of the friers were fine but being outdoors the temperature range was not controllable, and when we finished we had to reload everything transport it back, unload it all and put it all safe and secure. After a few of these we decided the only way to give a reliable service and serve what we think is great food, freshly cooked was from a more secure unit, a mobile Fish & Chip van. Our first port of call was to Les at Catering Units in Gateshead, we had experienced the van he had supplied to the 2017 Independent Fish & Chip shop Kingfishers in Plymouth. My Dad had been impressed earlier in the year as he had carried out the NFFF Quality Award and MSC certification on their mobile unit. We had a few discussions and we

decided to go with Les at Catering Units to purchase the unit. Our principle area of business for the mobile is prebooked events for parties, weddings corporate events etc. we’ve given it a few run outs, on the first Saturday it was like Christmas day and we just took it out for fun, we set up outside the local rugby club to serve them their usual sausage and chips post-match. Weddings and parties feature heavily this year, even though we’ve hardly advertised, we’ve had to turn down some events as they were wanting food at the same time as another event we have booked in. We’ve been supported by our local council, they’ve asked us to attend several events as they’ve never had a Fish & Chip van attend before. Who knows what’s next, so far so good to the point we are considering several additions to our “fleet” a refrigerated unit and a larger mobile. Without pushing it this year we’ve already secured a high number of bookings and we’re having several enquiries weekly. We’ve also made some minor changes to our uniforms and packaging to put Penaluna’s Road Chip on the map. Harbour – Pride Chip Shop! Sarah Lock and her brother Chris, co-owners of Harbourside Fish and Chips in Plymouth have been winning awards at the National Fish and Chip completion every year since 2014.
I
n January this year, they took third place nationally and Shop Manager, Andy Hillier was runner up for the Drywite Young Fish Frier of the year. Sarah, who has been a KFE customer since 2012, explains how she and Chris got started and gives us an insight into her passion for the business.
Why do you buy from KFE? “Their customer service is second to none. They have plenty of engineers and in the fish and chip business, quick recovery is so important. If your range breaks down you need it up and running again as soon as possible. KFE’s nearest engineer to us is in Torquay, only 30 minutes away. You can’t beat that, it’s brilliant. Any problems I have they deal with quickly. When we first started talking to the MD Paul Williams at a trade show, he promised us good service and they’ve definitely delivered on that. When I first started, the fish and chips business was completely new to me. I’d been working as a computer programmer for the Land Registry but I really wanted to have my own business. My dad had owned a general store in Plymouth and he suggested a fish and chip business. I started to look around and the premises on the Barbican came up – it was a great location I knew it was the right place. My brother joined me in the business – he’d been training to be an accountant. Today I look after the commercial and marketing side and my brother runs our restaurants and shops. We’re busy and we love it! On a good day in the season we can serve 4,000 customers, opening the doors at 11am and going through to 11pm.” 34

What’s it like working with KFE? “They’re a great company to deal with. As we’ve expanded our business they’ve come up with new ideas that show how they think things through. We’re opening a new gluten-free fish and chips business a few doors down from our original Barbican shop and they’ve suggested powder-coating the range in white for us which is a good fit with the look and feel we want to achieve. We’re also opening a new takeaway and restaurant in Westward Ho and will be putting a Kiremko range from KFE in there also. KFE is about more than the ranges and after care service though. Through our working relationship with them we’ve met lots of people in the fish and chips business. We also send our staff on courses run by KFE’s School of Frying Excellence. They come back to work with lots of really useful knowledge and contacts too.”
How does your business benefit from entering industry awards? “There are roughly 10,500 fish and chip businesses in the UK but only 1,000 enter industry awards. It’s such a shame more people don’t give it a go – the preparation gives you such a good opportunity to stand back and look at how you’re running your business. Entering for an award kind of works as a health-check, you find yourself looking afresh at so many key things like service, hygiene standards and how to increase trade. If someone reading this article is new to fish and chips or the National awards process, then I’d suggest they try for a Staff training and development award – and that’s because I believe your business can only ever be as good as the people you employ. “

Sully’s Muskoka brings Baja-style street food to cottage country By: Lori Knowles
T
here’s something irresistable about a food truck in paradise. Hawaii. Baja. Tofino. The boho shores of Belize or Costa Rica. Fish tacos and juicy burgers served in a basket with fries, a warm breeze sifting through the leaves, the lap of waves sounding in the distance… it’s vacation perfection. Now it’s doable in Muskoka. Sully’s Muskoka, a gourmet food truck, opened its van doors in May 2017. On its “fast food” menu, a shifting mix of gourmand items such as Caprese Panini, Watermelon Feta Salad, Fish Tacos, and the famed Sully Burger — a boisterous, house-ground, savour-worthy selection that’s getting a lot of attention on social media. On MuskokaStyle’s premier visit we ordered up two gigantic servings of finger-licking food: Fish and Chips, and Fish Tacos. The latter is the perfect combo of tempura haddock topped with fresh chipotle cabbage salad, served on an ultra soft tortilla with rice and refried beans piled high on the side. As we said: perfection. Warning: This is not your hot-dogand-sausage-corner-of-Yonge&Bloor kind of food truck. Food is artful and unique, and it comes with a hefty price tag. Mains run about $14; salads about $8. But portions are large (very large—sharable, even) and the service is friendly. Chances are Chef Sully will poke his head out the van window to measure your reaction to his food; he takes great pride in offering a bellyful of delicious food to Muskoka motorists. Sully’s Muskoka is a black van situated on a quiet corner of Hwy 118 in Bracebridge, Muskoka, not far off Highway 11. Open and Shut Case... and Open Again! NFFF to Help Community Chippy! It began trading in a snowstorm and then left customers fry and dry after suddenly closing. But after being unexpectedly shut for a month Britain’s first community-run chip ship is set to reopen for what filmmakers would call: ‘Hake Two’.

attered, but not bruised, Chelmund’s Fish and Chips in Chelmsley Wood will start soon after hiring a new
frier. As well as Birmingham Live covering the opening on Facebook Live, online and in print with the Birmingham Mail, a BBC1 camera crew was also there for an item on The One Show which was broadcast the following week. When the original frier quit in the second week, the backers had no alternative but to lock the doors and take stock. Last week the president of the National Federation of Fish Friers said it would support the fledgling business once the shop was reopened. Today, one of the parties involved in getting the shop up and running, The Rev Neil Roberts from Chelmsley Wood Baptist Church, said: “It’s all one big learning process and we are getting ready to open again. “Our original frier took us by surprise when he said he just couldn’t work the hours and it has taken a while to replace him. “But it’s fantastic that the National Federation of Fish Friers is looking out for us!” The shop launched as a community business that would see all profits ploughed back into local amenities. Backed by social enterprise consultancy firm Development in Social Enterprise, the chippy

remains a joint venture between Chelmsley Wood Baptist Church, community centre Three Trees and Olive Branch Kitchen. Following the shutdown in mid-March, other staff have continued to be paid to avoid the expense of hiring replacements. Now a new frier has now been hired from Sutton Coldfield. And he will work to develop the skills of a trainee sourced from nearby Smiths Wood. NFFF president Andrew Crook promised: “We really want to help Chelmund’s Fish & Chips to become a success story. “We will send a trainer down to the shop for a day to help them out for free. “We also hope that David Miller, our current UK champion, will be able to go along at some point, too. “His family has cooked chips for 75 years and he’s been doing it for 30. “Now that his son, Nick, is involved with his business – Millers Fish & Chips in Haxby, near York – David has more time to get about. ast food chain restaurants have been gathering steam since the 1920s, when they became a staple of Americana, and since then, they have only gone on to dominate the high streets and shopping centres of the world. However, even the big players have been facing struggles in recent times. Since its reign in the ‘70s, Wimpy Burger’s portfolio of 500+ UK locations has withered down to just 80, while Burger King was said last year to be facing “cash flow issues”. Meanwhile, independent fast food restaurants have been on the rise, with data finding 4000 such locations had appeared between 2014 and 2017. But facing the challenges of ever-rising premises, operational and produce costs, independent restaurants are facing an uphill struggle. So what can be done to counter the ever-rising costs of running an independent takeaway? The first step independents should do is look at their existing model and considering where corners could be cut. Given that most takeaways do not have to accommodate diners eating on the premises, shops do not have to be quite so large as their eat-in counterparts, and so moving to smaller premises could be a good way to lower month-to-month expenses.

All ITICA members throughout Ireland will offer their customers half-price fish and chips to celebrate the near 130 yearold tradition.
