Chip-tly Come Dancing! There’s nothing more we love here at Chippy Chat than a high profile celeb going out for a fish and chip supper! Both the Mail and Mirror reported on the star heading out to do just that.
T
ess Daly showed she’s loves a treat when she headed out for a fish and chip supper after attending a charity bash recently in London. Obviously having worked up quite the appetite true to her Northern heritage – she indulged in one of the great British traditions, fish and chips. Sitting down with a pal in the Rock and Soul Plaice in Covent Garden, Tess - despite her
glam attire- looked more than at home in. Tucking in to a hearty helping of line-caught fish, she couldn’t keep the smile off of her face, as she and her pal enjoyed their tasty food. It wasn’t the first high profile visit to a fish and chip shop for Tess who recently did a photoshoot at Poppies famous fish and chip shop in Camden too. ‘Chips are my favourite food!’ she said ‘My first Instagram picture was my fish and chip lunch. I’m in a very happy place here. Except that Northern girls don’t do gherkins,’ she concludes reflectively. Well keep it up Tess – we’re more than happy to give you a perfect ten for your routine! T
he idyllic Stonehaven seafront has and always will be an ideal base for The Bay Fish & Chips. Over the past nine years I’ve watched The Bay transform into an inspirational business and with our tenth anniversary coming up next year I knew this was the perfect time to take the next step with the business and increase our accessibility even more. This is where the idea of a mobile kitchen stemmed from. Combining The Bay’s offering with a food truck has always fascinated me. I love the fact that it will help me to effectively spread the message about The Bay and it will allow me to take The Bay’s brand, products and experience all over the UK. So after lots of design and planning meetings, I’m so pleased to say that The Bay on the Road has now officially launched and it’s everything I’d hoped it would be. It’s our very first kitchen on wheels, which will allow us to take our sustainable in-season fish, famous crispy chips and deliciously creamy homemade tartar sauce all over Scotland and the rest of the UK. The Bay on the Road is a purpose built, fully equipped mobile kitchen. It not only offers street food but also caters for private events, parties and weddings,

festivals and food markets too. We’ve received a phenomenal response to The Bay on the Road so far and have already booked dates for the rest of 2015 and into 2016. B u s i n e s s ex p a n s i o n s a n d st a f f progression go hand in hand so I decided to promote Adam Milne from part time fryer to trainee manager to assist me as he has more than proven his ability in the business over the last three years so I know he’ll be a huge asset to have by my side. Through all of The Bay’s past and present work I, and my whole team, are helping to change the stereotypical, and often negative, image of the fish and chip industry, presenting the food and premises in a positive and sustainable light. The Bay on the Road has exactly the same ethos as this. We’ll be delivering a high standard of fresh, sustainably sourced produce, which is affordable, and delivered with The Bay’s trademark spark of personality. The Bay’s merchandise will also be available to purchase from the food truck, everything from branded aprons to The Bay’s bespoke batter mix. ee said he weighed around 23st at his heaviest – when a doctor told him he was unlikely to reach the age of 40 with his unhealthy diet. After the wake-up call Lee started eating more healthily and joined a slimming class – and has lost a whopping sevenand-a-half stone. He now weighs a much healthier 15-anda-half stone. But Lee, whose family-run business was voted Wales’ best chippy by Seafish last October, has not given up fish and chips and includes the meal as part of his balanced diet. The 32-year-old is passionate that, when cooked correctly, fish and chips does not represent an unhealthy meal and is in fact good for you. Lee said: “My weight has always been a demon for me. ‘I couldn’t face looking at weighing scales’ “The biggest wake-up call was from the consultant 18 months ago who said if I carried on I wouldn’t see 40. That was when I thought ‘Uh oh’. “By the time I got to my biggest I couldn’t face looking at the scales – I was 22 stone when I last looked but was probably more than 23 stone at my heaviest. “I remember going to the fish and chip shop awards and thinking ‘How can I

represent the industry in a good light when the first thing people say to me is, you like your fish and chips, don’t you?’ “I just stuffed my face with junk food – Indian food, McDonald’s, anything I could. ‘Fish and chips in balanced diet’ “I first spoke to Kieron Gough at the local slimming club in March and he said there was no worries at all in keeping eating fish and chips as long as it’s within your daily allowance. “And there’s been no looking back since – one week I had 15 portions of fish and chips when I was on training and still lost a pound, which even I was surprised at!” £5,000 charity mission He is also on a mission to raise £5,000 for charity Bobath, which works with children with cerebral palsy.On October 28 he completed a day-long cycle from Brecon to Cardiff for the cause. “I think it was about 60 miles and we’ve already raised £1,000 which is fantastic.” If you can help Lee raise even more please email austen@chippychat.co.uk and we will pass on your details.

4 Reasons to Advertise your Fast Food Business on Facebook More than two in every five people in the UK use Facebook and one in every five people use the internet through Facebook. With so many people using it, it’s the perfect breeding ground for business to develop customers.

irst off it’s essential for your Fast Food business to have a Facebook page. This gives your business its own identity on Facebook. This creates a platform for your business to engage with your customers. In this day and age, you can’t simply get a customer to buy something just by shoving a menu in front of their face. People are being marketed to more than ever meaning that you need to do more to get their business. They are bombarded with information so you must be able to provide meaningful content get them interested. You could do this by keeping in touch with the calendar. If it’s Halloween, produce Halloween related content. It was National Burger Day a couple of weeks ago, that would have been a perfect opportunity for your fast food business to share pictures of wacky burger creations which you were selling exclusively on that day. Facebook offers a paid feature where you can create an advertisement and they promote it on your target audience’s newsfeed. You may have seen advertisements on your own newsfeed identified with the word ‘Sponsored’ as a subtitle. Here are 4 reasons why you should be advertising your Fast Food business on Facebook.
1. The competition isn’t using it I suspect a few of you will read to this, take it on board and begin to advertise on Facebook (fingers crossed). Currently fast food businesses seriously underutilise this platform. There is huge potential for you on here. You may be sending out menus through people’s letterboxes along with most other fast food and restaurant businesses. That means your potential customer has many options to choose from. The more options they have, the narrower your chances are of

getting that customer to order. By advertising on Facebook, you’ll be one of few businesses doing this. The advantage you have here is that you’ve adopted this method of advertising early compared to your competition meaning you can reap the benefits of not having to compete against other advertisements.
2. Cheap I know takeaways that print 100,000 menus at a time and then go out and post them through letterboxes or pay someone to do this. As mentioned earlier, not only are you competition for doormat space, your also spending a fortune printing and posting the menus. Everyone that does leafleting tells me it works and they get business. That’s Brilliant. Carry on doing it if it works for you. If you could get the same about of business through Facebook but cheaper, how much better would that be for your business? You would be able to advertise more often because you haven’t used up your entire marketing budget. For the results that are possible through Facebook advertising, the relative cost of it very cheap.
3. Large Target Audience Facebook is the largest social media platform. With so many people on Facebook you have a huge market to advertise to. You can narrow in on specifications by choosing particular areas to target, choosing people with particular interests for example fans of a particular Football team. You can also now find your existing customers by uploading their email addresses. The new feature allows you to advertise to your email database the same as you would to anyone else. You may send out text messages with a weekend offer on, great. Now stick this advert on Facebook and target

those same customers. Also drop them an email. You do get people taking action by advertising to them once but most of the time you need to target them several times before they make a decision. The more ways you can reach them, the more likely you are to get the results you want. In this case, you’re more likely to get the customer to place an order over the weekend. With such a large audience available to businesses, it’s crazy not to have a presence on Facebook. The people that do not want to see your advertising will adjust their preferences so they do not see it. The benefit to that is you’re not getting on anyone’s nerves like you may do with posting menus because many people hate all the stuff that comes through the letterbox.
4. Faster conversion The beauty to use Facebook advertising for your takeaway is you can convert your customers faster. You can get them from the position of having decided they want to buy from you, to the point where they have ordered, quicker. When they see your advert on their newsfeed and decide, “Yeah, I’ll order a pizza because I’m hungry and this looks delicious”, they’ll click on the link which takes them to your website where they can place the order. Now take into consideration your traditional forms of marketing, the newspaper or leafleting. When the potential customer sees the advert they have to get to the telephone and dial the number. I’m not saying that this process is slow, it’s far from it. All I’m saying is an advert on Facebook has an almost instant ability to convert a lead when compared to other marketing methods. The faster the conversation can happen, the more orders you will get.

o get to this stage and secure a place in the coveted shortlist, shops have been appraised across a variety of judging criteria including how businesses research and segment their respective target audiences, how marketing budget is planned, actioned and managed, evidence of actual activity, what processes are in place to measure any success and importantly, evidence of the impacts that marketing activity has had on respective businesses over the past year. Burton Road Chippy grasped the opportunity to add a touch of fish and chips to the 800th year of the Magna Carta in Lincoln’s historical celebration. Designing their own unique Lincoln Baron sculpture as homage to the nation’s favourite dish married with strategic partnerships and discounted vouchers resulted in a 10% increase in sales in just two months.

Simpsons Fish & Chips developed a creative, fun marketing strategy to inform children on the origin of fish and chips. By inviting children into the shop to make fish cakes to creating an entertaining book for local libraries, dentist and doctors waiting rooms, Simpsons Fish & Chips passionately delivered a successful campaign to benefit their loyal family customers. Harbourside launched a campaign dedicated to combat myths that takeaways are unhealthy by having their meals nutritionally analysed to give customers an accurate calorific value. Creating a specific ‘healthier options’ menu that was promoted through social media, comparison posters and information flyers, offered customers a wider choice of meal options and contributed to increased sales. Representatives of two award-winning fish and chip shops from Scotland were thronged by eager customers at a luxury Japanese department store as part of an annual showcase of the best of British fare.

ong queues formed at the Hankyu shop in Osaka – considered to be Japan’s version of Harvey Nichols or Harrods – for a taste of Frankie’s fish and chips flown all the way from Shetland. Frankie’s manager Carlyn Kearney travelled more than 5,000 miles after being invited to attend following the chipper’s awards as the best independent takeaway fish and chip shop in Scotland for the past two years and overall winner in 2015. Ms Kearney was joined by Calum Richardson of The Bay in Stonehaven, which won the number one fish and chip shop title two years ago. Both manned the “pop up” shop that attracted queues of up to 100 people – including London mayor Boris Johnson who was in Japan on a three-day trade mission – and sold more than 1,200 portions of fish and chips. Mr Richardson has been involved with the Hankyu fairs for the last two years. Ms Kearney said: “It has been incredibly busy. I don’t think I really appreciated how popular fish and chips are here in Japan. “The people are very enthusiastic and our fish and chips have been very well received. “It’s hard to believe that people in the land of sushi and sashimi have embraced fish and chips so strongly.”

Representatives from the store, led by UK-based Keiji Hayashi, twice visited Frankie’s in the village of Brae to help prepare for the visit. Mr Hayashi said more than 120 UK brands were represented at the fair, which was expected to attract more than 500,000 people overall. He said: “There’s not a strong tradition of fish and chips in Japan, so three years ago we decided to invite Calum, as winner of the UK number one title that year, to come and cook at the fair. “Since then the fish and chips shop has grown in popularity. One of the reasons I think for its success is that people can taste a different kind of fish, namely haddock. “The nearest thing we have in Japan to batter is tempura, and people have had no problem making the jump.” All the fish and potatoes for the chips were transported to Japan from Scotland in a freezer container. Special boxes to serve the fish and chips in were made for the trip and Frankie’s plugged in to the Japanese love of business cards by taking out thousands of bilingual cards explaining all about the shop in Brae.

Mcwhinney’s Punch above their weight – That’s the way to do it!
A
s crazy as it sounds, at the time of writing we are only 50 days until Christmas, and 2015 is, unbelievably, drawing to a close. Northern Ireland is celebrating unprecedented success (along with Wales and England) , as it has just qualified for next year’s European Qualifiers in France, a massive achievement for a country with less than two million people. Speaking of Northern Irish success stories, it’s impossible not to consider the achievements of McWhinney’s Sausages – one of the brands now famous for punching well above its weight in the food industry sector. We spoke to Managing Director and owner, Kevin McWhinney, to get the lowdown on another bumper year for the company. “McWhinney’s has really created its own brand renaissance over the past two to three years. Chip Of The Old Block! A hip hop-themed fish and chip shop is gearing up to open in Brixton, serving “fresh fish, seafood and Old Skool hip hop”.
I
t will sit on the corner of Coldharbour Lane and Atlantic Road, and has already made quite an impression in the area by covering its shutters and outside walls with graffiti depicting famous rappers — including 2Pac and Big L — along with its tag-like logo. t is the latest project from Michael Lythgoe and his partner Cidalia Rodrigues, who also run Brixton Village Grill nearby and who have lived in the area for 18 years. Chip Shop will serve the usual fare of cod and haddock with chips, along with pies — as well as fish and seafood including grilled tuna steaks, red snapper and mussel and crab dishes. It will operate as a restaurant but there will also be a hatch serving takeaways. More unusually, it will also dish up a steady stream of hip hop. Michael explains: “I love hip hop especially Old Skool late 80s and 90s stuff and everyone loves fish and chips but the area was missing this from its array of restaurants. The blend of the two things just felt like a perfect fit for Brixton.” An industrial look with more graffiti inside and some ‘Old Skool’ prints will set the scene, while the hip hop will be continuous. Michael has devised the playlist: “At lunch there will be chilled hip hop including some old G-Funk from the likes of George Clinton and Zapp & Roger. Midweek evenings will be more up-tempo with the likes of J Dilla, Talib Kweli and A Tribe Called Quest. Then we will take it up a notch on Friday and Saturday nights with the likes of Nas, Guru, Eric B & Rakim and Pete Rock.”

“The list is so extensive, you could eat with us lunch and dinner for two weeks and never hear the same track twice,” he adds. Despite the off-beat pairing, the concept has received criticism for not being original. There is already a similarly-themed venue called The Hip Hop Chip Shop in Manchester (As featured in Chippy Chat).

Michael denies copying the concept: “I had actually never heard of this place until people mentioned it on Twitter.” He believes Chip Shop will cater for “both ‘old’ and ‘new’ Brixton” and reinforces that the offering will be inexpensive. Average spend will be £20-£25 a head including drinks — beers , wines, spirits and white sangria will feature — and significantly less for takeaway. Chip Shop is due to launch in the first week of November and will serve from 11.30am - 2.30pm and 6-11pm from Tuesdays to Thursdays and from 11am - 11pm from Fridays to Sundays. e took a trip there to enjoy the late October sunshine. We stayed at the magnificent four star Plaza Hotel Lucchesi. We were made to feel very welcome and the staff could not have been more helpful. The hotel is well situated for all of the sights and has a beautiful outlook (our room overlooked Piazzale Michelangelo). The rooftop pool and bar were very good with wonderful views over Florence. All of the staff from the reception, restaurant, concierges and the chambermaids were very friendly, polite and always helpful. I would recommend basing yourselves at Plaza Hotel Lucchesi. Immediately the taste of Italy hits you as soon as you venture out into the cobbled streets. Fine breads meats and cheeses, creamy ice creams, sweet cakes and of course some great wines and beers too. In the evening we set out to find some fish and chips (Italian style). It became clear quickly that the two dishes are seldom served together in Florence (a brave soul would open a fish and chip shop in the city) so we booked ourselves a table at Bistro del Mare. This fish tavern is located in a wonderful position, inside Palazzo Gianfigliazzi in Firenze, very close to Ponte Vecchio bridge. Bistro del Mare is unique in style: sober and contemporary designed furnishings blend beautifully. The context of art, cuisine and a philosophy based on a balance between price and quality, make this fish tavern a happy

expression of the good life in Florence. We went in as a table of six. Claudio the owner knew all about our national dish and was intrigued to learn that we have over 10,000 shops in the UK. He recommended to us the ‘Menù Bistrò del Mare’ - a great selection for all from across the menu (and at only 52 euro pp). For Appetizers we chose Marinated Salmon with Black Pepper Cous Cous of Seafood Shrimps with Garlic, Oil and Chilli Pepper Croquettes of Salt Cod The first course was Fresh “Garganelli” Pasta with Ragù of Sea Bass Aromatized of Lemon Everybody then elected for the ‘Fish of the Day’ - Shi drum with Rosti of Potatoes and Porcini mushrooms. he refurbished Training Academy was officially opened by NFFF President Gregg Howard with key sponsors of the state of the art training facilities and NFFF head office staff in attendance on Monday 5th October. Our newly refurbished Training Academy will now offer a first class course in a first class training environment, with first class tutors. H
ollow heart and brown centre negatively impact tuber quality. However, neither disorder is harmful & neither affects the tuber’s taste or nutrition. Brown centre and hollow heart are most likely to occur when growing conditions abruptly change during the growing season, such as when potato plants recover too quickly after a period of environmental or nutritional stress, such as a wet period then becoming dry quickly this is mostly seen of light soils where the infiltration rate of water is high. When the tubers begin to grow rapidly, the tuber pith can die and/or pull apart, leaving a void in the centre. Brown centre and hollow heart tends to happen either at the beginning of the growing season during tuber initiation, this is when the mother tuber (seed potato) sets its roots in the soil and the first signs of a tuber is seen. Hollow heart can occur late in the season when the crop is in the bulking period when plant energy is transferred to the potato crop under the ground.
If you are seeing any signs of hollow heart or brown centre in the potatoes you are using, they are perfectly fine to use and you will see them when you put them through the chipper, however I would suggest that you remove the chips that you see with the hollow area as these tend to fry darker. T
he 2015 potato harvest is coming to a close now, all farmers are due to be finished harvesting by the second week in November. Crops have had a steady long period of growth during this season which has left us with an average yielding crop at around 18t/acre. We have had good weather during the harvest which means that everything that has been put into store is of a good quality. The total planted area for GB is now estimated at 111,600 ha. This revises downward the end-June provisional estimate of 113,100 ha. The area update has been made following the incorporation of additional data, and is based on returns covering 89% of the registered area. The end-June estimate was based on 64% of registered area. The updated 2015 area estimate is down 7.8% on the final 2014 planting of 121,100 ha.

The Ely Potato Run Fifteen teams battled it out over the half-amile course laden with a 20kg bag of spuds, all of which had been grown by farmers in the Fens surrounding the city.
T
he aim of the event was to promote growers, potatoes, Isle of Ely Produce and to the 2,000 crowd fish and chips! The two-man Atrium gym team were crowned worthy champions, winning their heat before, in the final, powering away from runners-up Garret Farming in the dash to the line. The Littleport Lions Basketball Club came in third. The Atrium team was racing on behalf of Fred Hartley Estates (Jolly Roger potatoes) Twelve other teams entered the race in the most keenly contested race yet! New for 2015 was the Pretoria Energy Fillies and Mares 10 kg ladies race. Local farmer J Gilbert and Sons provided the potatoes with Dawn Lamb Fitness the winning ladies. Isle of Ely Produce came second. A fiercely contested children’s race between St Mary’s, St John’s and The Lantern primary schools saw the St John’s team lift the Corkers Crisps trophy. The three schools share the £500 prize for their endeavours.

Austen Dack, of organisers Isle of Ely Produce, said: “It was a fantastic set of races and we look forward to welcoming everyone back again next year.” The event is put on by Isle of Ely Produce to celebrate the region’s potato growers and the local harvest festival. Owned and managed by the Boutwood family, Isle of Ely Produce was established in 1994. Director Oliver Boutwood said: It was lovely to see so many people coming out to support the teams today, Isle of Ely Produce are happy to play such an important part in the community and will continue to invest in these types of events in the future. “The event underlines our pledge to support the journey of the potato from the field to the fryer.” Mr Boutwood said more than £1500 was raised for local charities “some of which will go to the Ely Hereward Rotarians who did a marvellous job stewarding the event along the high street”. The winning duo from this year received £100 cash prize and a trophy plus a special bottle of potato vodka donated by Anglia Wines of Ely.
