Surprise! Surprise! Twenty years after a chip shop owner appeared on Blind Date and was picked by a future TV presenter, he is happily married and still frying fish at the same Bearsted business.

D

onda Michaelas, now 40, has no regrets about turning his back on the celebrity lifestyle which his partner on the show, Jenni Falconer, chose. He is settled into village life, surrounded by his family. Speaking as celebrities continue to pay tribute to Cilla Black, who died of a stroke in her Spanish villa earlier last month, Mr Michaelas said: “Cilla was amazing. You don’t meet her until the show and I was nervous, but she relaxed you quite easily. “My parents used to watch Blind Date and Surprise Surprise so I grew up with her. Of course I was sad when I heard she’d died. My wife came and told me. “Cilla told us our episode would be big. She said the cheer when Jenni picked me was the

loudest she’d heard in 13 years of doing the show. But it was only after our first show was screened that we realised how big it was going to get.” National newspapers suddenly wanted to interview the pair and Mr Michaelas was offered work with 90s fitness instructor Mr Motivator, famed for his appearances on GMTV, & Channel 4 show The Word. But how was his date with Miss Falconer? “Jenni was a lovely girl. We spent four days in Brittany. Blind Date looked after us from beginning to end. The hotel was top-notch and we went horse riding, sailing, swimming and played tennis. On the second show, neither of us put each other down. Twenty years on we’re still in contact.” Marino’s Fish Bar in Ashford Road was opened 25 years ago by Mr Michaelas’s parents Peter and Androniki but now it’s him and wife Samantha selling the fish and chips. He added: “Twenty years on I look back and I know I made the right choice.”

Second time around at Towngate Fisheries Sometimes when you get a second chance you have got to just go for it! By Mark Drummond

I

first bought Towngate Fisheries in the village (now a suburb between Leeds and Bradford) of Idle in 1997. It is a small takeaway situated in a splendid 19th century building. It was a reasonably busy shop, but only open very short hours (18 hours a week frying time). I remember the people I was buying it from telling me I’d struggle to cope (they didn’t know I’d sold a shop with 5 times the turnover a few months before). I ran the shop until 2002 when other demands on my time made me sell it. But in 2005 I bought it back again (for less than half the price but with considerably less than half the trade remaining). It was in very poor condition and the frying range was past repairing, so I bit the bullet and bought a new Dutch high efficiency range and had the kitchen area refurbished. Trade grew rapidly and despite the building looking big from the outside we were always very short of space. In 2010 I had work done to refurbish the customer area to

help us speed up service, but with still growing trade the fact the shop consisted of 2 rooms connected by a very narrow passageway meant when busy it was very hard work. I had previously considered opening up the shop into one large room but we simply wouldn’t have had the storage and preparation space we needed. However in 2013 I switched from preparing my own chips to using ready chips from PG Chips in Bury. This meant my former potato prep room (an old coal shed at the back of the shop) was freed up for extra storage space including space for the large chest freezer. After 2 years of using ready chips and being very happy with the product and confident I would never change back I decided it was time to put my plan into action and make the shop open plan. My 3 pan range was still in good condition, but I really needed extra frying capacity at peak times. I considered refurbishing around the existing range,

but thought it best to change everything at once. Having visited the Florigo factory near Amsterdam last year (accompanying the Young Friers group – I’m an honorary member!) I had been very impressed with their build quality and advances in design in the last 10 years, so I ordered a new 4 pan range that with a lot of thought into the design fitted into our very limited space. I commissioned Elite shop-fitters from Leeds to design and undertake the refurbishment, removing the middle wall to make one large space. I wanted to keep our classic black and white design, but also wanted it to look different, so I chose white and black “brick” tiles. The work was all completed and we re-opened in under 3 weeks despite a few minor hiccups and me requesting extra work to be done such as replacing our windows and front door (we are in a conservation area so these all had to be made in wood) with just a few finishing touches (such as the black granite surfaces) to be completed in the days after we reopened. We opened on a Friday and were extremely busy. It was immediately clear that the shop would be so much easier to work in with everything easily to hard, despite the fact that the first few days we were getting used to the new controls for the range and everything being in a different place. Since we reopened trade has been busier than ever with many customers commenting how much bigger the shop 11

looks. It is certainly much easier to work in when busy and at our busiest times although we have still had a queue out of the door, we are serving faster and the limit on speed is how fast our servers can serve rather than how fast we can produce the food. We had many customers asking why we needed to refurbish when the shop was already smart, modern and in a good state of repair, but they can see for themselves the results and I’m sure it was an investment well worth making.

Thousands Raised from Frankie’s Annual Cycle Sportive Three charities will benefit from the efforts of 42 cyclists who took part in the fifth annual Frankie’s Charity Cycle Sportive on Sunday (30th August).

A

ll proceeds from the event this year will be split between the Fishermen’s Mission, Cancer Research UK and Alzheimer’s Research UK. Twenty-three cyclists completed the 40-mile ride – two times around a lap from Brae to Voe, up Dales Voe and back round in the face of a stiff southerly wind to Brae – with Pete Fenwick of Shetland Wheelers first home. Seventeen did the 20-mile ride – one lap of the same course – with Dugie Gunn from Muckle Roe leading the group over the line, while 12-year-old Flora Quinnell was the first of the two riders in the 10mile ride from Brae to Voe and back. Flora, from Aith, said: “I was delighted. It was a really enjoyable ride out to Voe and back to Frankie’s.” Local electrical retailer George Robertson Ltd has donated a set of Otone Bluwall Speakers which will be presented to each of the three winners. Prior to the race Peter Dade, former superintendent of the Mission in Shetland and now superintendent in North Shields, who was deputising for Audrey Jamieson,

wished the cyclists well and thanked them for taking part to support the work of the charity. After a welcome fish supper for all participants, a bumper raffle with a series of top prizes kindly donated by a wide range of sponsors was drawn. A final tally from entry fees, sponsorship and the raffle will be calculated shortly. Since it began in 2011, the Frankie’s Cycle Sportive has raised more than £20,000 for charities. Frankie’s manager Carlyn Kearney said: “It was a great day, with cyclists of all ages and abilities taking part and enjoying themselves thoroughly. “I’d just like to thank everybody who took part, the staff here at Frankie’s for their hard work in arranging the event, Red Cross staff for medical back-up and manning one of the feeding stations, Steve Henry from Shetland Motorcycling Training for making sure the routes were safe and the boys from Brae Garage for support out on the road.”

Praising Drywite Ryan

This month’s Chippy Chat guest editor is Ryan Hughes from The Crispy Cod Fish Bar, Tonyrefail, Wales.

I

t’s been almost a year since I reached the final of the Young Fish Frier of the Year competition organised by Drywite, and I am once again, in the running. I don’t think my passion for fish and chips will ever fade away, and one day, I hope to reach the prestigious top step and represent Drywite and live my dream of becoming the best young fish frier in the UK. I started working at The Crispy Cod fish bar at a young age. I jumped to the chance to help turn a derelict wine bar into a modern fish and chip shop & from then on, my passion for the industry grew. From washing dishes to peeling potatoes to learning food hygiene and customer service, I soon worked my way up the ladder to where I am today. I couldn’t have gone this far without the help and support from the business owner Mathew Williams. When His mum unexpectedly passed away, I took the big step up to help with the daily running of the business. This is where I really began to fall in love with the industry and entered our 1st competition, the

National Fish and Chip Awards. To my amazement we won Welsh Fish and Chip Shop of the Year, twice! I then entered The Young Fish Fryer of the Year competition 3 times, firstly reaching the Semi Finals, The final of 2015 and now the final again for 2016. Along my journey I have been fortunate to visit many places, which is not only beneficial to me, but my customers. Having the opportunity to attend study days/trips have been mind blowing. The opportunity to visit Norway and actually step foot on a trawler was a life time opportunity, and visiting so many places has been amazing including: Isle of Ely Produce Potato Farm Tour PeterHead Fish Market KFE Training school NFFF Workshops Days Florigo Factory In Holland The 2017 Young Fish Frier of the Year in association with Drywite. Sincerely sourced and superbly cooked ingredients that create delicious meals, done without pretension. Ireland needs more fast-casual restaurants like KC’s, places where you get real food, and great service and value. The country would be well-served by a KC’s fast-casual restaurant in every town. Instead, every town has fastfood restaurants, but we don’t go there. Instead we go to KC’s, and have Bresnan’s steak sandwich, a KC’s special burger on Hassett’s bap; a meat patty, a side or two of chips, a bottle of water. So, remember: KC & Son & Sons is not fast food. KC’s is fast-casual, and fast-smart, and fast-good. And fast-Cork, of course. 37

Suppliers to the industry also attended, making it one of the largest events of its kind in the UK. There was also a trip to growers J Gilbert and Son’, in Littleport too. The day was opened by Lucy Frazer MP for South East Cambrideshire. Guest of honour for the tour was National Federation of Fish Friers president Gregg Howard, who opened the day with a presentation about how

important knowledge of chip preparation, storage and frying is to serving great fish and chips. More than 80 people gathered at the farm and were welcomed by host Chippy Chat Editor Austen Dack who delivered them the packed agenda for the day. Mark Gilbert, was on hand to take the group on a tour of part of the farm and talk through the process of what makes a great potato — from seed through to delivery to the trade. With more than 10,000 chip shops in the UK, the potatoes from East Cambridgeshire and the Fens play a key

part in supplying an industry which has an annual retail spend which tips £1.2billion. John Boutwood, managing director of Isle of Ely Produce said: “Our purpose is very much to be at the heart of our business communities and to champion their aspirations and to support them. “This open day helped cement our position further and increased the bond we already have within the trade.” Isle of Ely Produce also organises the popular potato race on October 10 on the streets of Ely. Sponsors of the day included Union Norge, Middleton Foods, Kerry Foodservice and Drywite. As well as the farm visit guests also got to try some great new products from Kerry Foodservice including battered chips and Chicken Train piri-piri seasoning. We had two presentations from award winning chip shops Simpsons from Cheltenham and Frankies from Shetland. Kate Cox from the Potato Council was on hand to tell chip shop owners about their new plans for the industry (see pages 38-39). Austen took the room through plans for Chippy Chat in the next few months and also introduced the Spinal Injuries Association who presented their excellent Chip Supper promotion. In the evening many of the guests stayed on in Ely and went out for a meal and just a few drinks!

Eddie fries out of Stansted An episode of Lovejoy starring Ian MacShane was filmed there, The Daily Mail has listed it in the paper’s national guide to good chip shops, but now Mr Ho, 74, is retiring from Eddie Ho’s fish and chip shop in Stansted Mountfitchet.

A

fter 52 years of serving behind a take-away counter and in his 40th year behind this one, Eddie Ho is going to be missed by his regulars who pour out of the station of an evening and head for his shop. As one of his customers, retired nurse Sherry Wakeman said: “So many people have passed his doors and enjoyed their chips. He is providing a real service to the community. I think it would be nice to thank him from the locals and the not so locals for all his years of cheerful and gentle service. He is such a lovely man.” Mr Ho opened the Mountfitchet chip shop when as the chef at the nearby Chinese take-away, The China Garden, people kept asking him to cook them fish and chips. For a while he ran both businesses.

He remembers: “The door of the fish and chip shop would be open and customers would buy fish and chips while they were waiting for their Chinese take-away, sometimes the children would prefer pie and chips or chicken and chips.” The secret of success he says is quality. His chips are made from fresh potatoes peeled and chipped on the premises, never frozen. “I always use big, deep sea fish, between 16 and 32 ounces. Mr Ho came to England from Hong Kong in 1961. “I wanted to see the world and what it was like.” He didn’t mean to stay but he met his wife Madeline, a student nurse working at Whitechapel Hospital. “I knew her brother at home in Hong Kong, he told her to visit me in London.” They have three sons and four grandchildren and still live in London. Eddie’s chip shop will continue. Mr Ho is planning to retire in August but the eatery is being taken over by restaurateur Moinul Abedin who currently owns an Indian restaurant in Bishop’s Stortford. Happy Retirement Eddie!
