As the oil is pulled deeper in to the matrix of the pad during filtration, smaller and smaller particles are caught in a process called entrapment. Absorption: This is the process whereby inorganics, metallic ions and fine particles are absorbed in to the pad’s cellulose matrix, much like a sponge absorbs water. The carbon powder makes the pad extremely absorbent. Adsorption: This is the process whereby macromolecules, oxidants and organic compounds are neutralised by the active ingredients, such as carbon powder, that is incorporated in the matrix of the pad. The compounds are attracted to the structure of the pad rather like a magnet. These neutralised compounds cannot contaminate the oil. The activated carbon powder removes off-odours and tastes from the oil. SuperSorb CarbonPads remove sub-micron particles down to 0.5 microns – this is 100 times smaller than a grain of sand. ®

Crewe Cuts the Well what a year! Although the journey didn’t start in 2015, we started out on our path in 2009 when I purchased a closed run down fish and chip shop. By Craig Buckley

T

he shop previously had a poor reputation and wasn’t in good repair, after a small refurbishment we opened our doors; “Crewe Fish Bar”. It was a learning curve and looking back i wish i had have been aware of the industry training available through the NFFF and KFE. We made many mistakes but we also made some great decisions. Improving the quality of food, customer service and professionalism of the shop whilst entering the Young Fish Frier Of The Year. The YFF competition opened my eyes to the size and scale of the fish and chip industry. It was scary but a wonderful journey making me aware of the complexity of potatoes. Learning about sugar percentages, dry matter, storage conditions and Drywite really boosted my knowledge & the quality of my chips. The competition is definitely the best platform for young people embarking on

a career in fish and chips. Please, if you are reading this and employ young and eager staff, encourage them to enter the YFF competition. Winning the competition heavily boosted our involvement within the industry and created the standard we now set in our shop. This flagship shop was created from scratch. I didn’t want it to be a conventional shop. I have created a modern brand that is widely recognised for quality. Creating a unique glass preparation room for our potatoes allowed us to add value to our chips by showing our customers the great lengths fish and chip shops go to when making the perfect chip, and in turn educating a younger generation that chips do actually come from potatoes. Our journey in the Field To Frier Of The Year began down on a farm… P.J Lees. The Lees family kindly gave up their land for an Isle Of Ely Produce open day and it was amazing! Seeing the never ending land of flat potato growing, the machinery involved and the packing and storage operations of IOE HQ really made me appreciate my potato prices, although don’t tell the farmers that! Mustard! have not been to one of these open days yet, please do - you will learn so much. Following my third visit to the open day i thought it was about time i entered the Field To Frier award. Thankfully, on a cool January morning we were crowned national champions. We were up against two huge shops in the final three, both regional winners either that year or previously, both shops fantastic at what they do, so it was a huge but wonderful surprise. Winning awards makes all the early starts peeling potatoes and cutting fish worth it. I have been very lucky that it has also opened doors within the industry, helping me open shops abroad in Lithuania and Australia, being appointed a regional director for the NFFF, becoming involved in training and making some lifelong friends…. Long may the journey continue!

A Crucial Second Squirt

Crucial are very proud of their squirt, and rightly so; the branding looks hot, the range is extensive, the taste is second to none, and they are extremely good value for money. So how do they do it? Stuart Catterson takes a trip to Birmingham to find out

arrived at the Crucials HQ, Birmingham, way ahead of time, the welcome from the crew on the front desk was warm, and after a quick coffee I donned a white coat, a very fetching blue hair net, and Gabe Gabriel MD of Crucial Sauces led me away for a tour of the plant. Some of our readers may remember my visit to Crucials a couple of years ago when I got the full story of the evolution of this unique brand. At first the operation was small scale, only distributing to chippies in the Birmingham area, supplemented by market trader sales at car boot events. Humble origins, but the high quality, ground breaking sauces soon developed a cult following, word spread and demand grew. Crucial Sauces the brainchild of gastro-entrepreneur Gabe Gabriel developed into a brand to be reckoned with, and it eventually caught the eye, and taste buds, of British Pepper and Spice

(BPS) a division of the family owned SHS Group based in Northern Ireland. The Crucial Sauce Company, now backed by the might of the SHS Group is making constant strides forward, expanding their range of products and the list of outlets you can find Crucials in. The knowledge sharing and positive synergy between the two companies has been a big factor in the growth of around 50% Crucials has seen since the acquisition. Growth, changes and forward strides aside, the very start of the tour of the plant confirmed one thing that has not changed in the last two years under BPS; the atmosphere in the work place is still so very, very positive, with happy faces around every corner; these sauces are made by people who are really genuinely happy to be there. People who really know the business, people who value their fellow workers. It seems the firm is set in its ways in that respect. Good thing too. Soon after their acquisition by BPS Crucials landed the coverted BRC industry standards rating of ‘Double A’ providing

There is always so much to report on after a visit to Crucials and I could proceed to take up another eight pages of the mag. Hmmm, don’t think my editor would be too crazy about that idea. Crucials are moving forward on the promotional front showing the same kind of vision and healthy joined up thinking they give to their product development. Great consideration has been given to the design of all marketing imagery, with the advertisement and on the previous page and the design of the website being a good example of their new look. It reflects the vitality of the brand; it’s fresh, urgent, it has a youthful street cred buzz, embellished with bright juicy, healthy looking ingredients. FE, of Bentley Business Park, in Northfield Industrial Estate, Market Deeeping, has installed a stateof-the art grilling area and wet fish presentation area to its School of Frying Excellence. The new equipment was unveiled for customers and suppliers at a ceremony attended by celebrity chef JeanChristophe Novelli. Sales manager Tanya Henderson said: “We are delighted the launch went so successfully. “This will enhance our training school. It enables us show a range of healthy cooking options to students. We can also demonstrate the use of some underrated fish. Fish and chip shops are not just about cod and haddock.” The KFE School of Frying Excellence was created to raise cooking standards within the industry. It caters for 100’s of people every year. Its students come from across the globe. Tanya said: “We teach people from all over the UK but have also had people from Australia and the US.” Many of the country’s top fish and chip owners turned out to see the new school equipment in action including Harry Niazi

from Olley’s Fish Experience, Richard Ord from Colman’s and Fred Capel from Chez Fred. Chef and owner Gary Rosser was also on hand to deliver to the audience his incredible knowledge of fresh fish and how to cook prepare and access over 20 varieties of fish. I managed to grab a quick lesson from Jean Christophe on grilling fish – do I need to add salt I asked “No (he replied) this fish has been in the sea for five years it doesn’t need it.” Isle of Ely Produce also delivered some potatoes for KFE to range fry on the day for their hungry visitors. Family-run KFE has been in operation for 20 years and supplies quality frying ranges to fish and chip shops across the country. Trend it like Beckham It’s been a good year for famous stars tucking into fish and chips!

ot on the heels of the massive stir when David Beckham was seen eating fish and chips earlier on in the year girl band Little Mix hit the headlines for indulging in our favourite dish too. This positive publicity for fish and chips is great as the pictures are used across celebrity magazines and online all over the world targeting younger audiences. Little Mix’s Perrie and Leigh-Anne recently ate fish and chips on a hometown beach visit The popstars enjoyed an afternoon of fairground rides, fish and chips, and icecream on a visit to Newcastle Popstar Perrie Edwards let her hair down as she went back to her hometown during the Newcastle leg of Little Mix’s Get Weird tour. The blonde beauty led the way to the seaside town of South Shields, near Newcastle, with fellow Mixer Leigh-Anne Pinnock and their dancers in tow. She shared snaps on Twitter and Instagram and it looked like the gang had a lot of fun visiting the beach, eating fish and chips and ice-cream and having a spin on the fairground rides. The X Factor - winning girl group had been at the Metro Radio Arena, in Newcastle, for the second of three hometown dates for Perrie and bandmate Jade Thirlwall, who also hails from South Shields. Banger Firm Backs Bangor Firm The Frying Squad in Bangor, County Down, won the Staff Training and Development Award after frying out on top at the 2016 National Fish & Chip Awards, organised by Seafish.

hey were unfortunately unable to attend the awards ceremony in London in January however just last week Seafish were finally able to arrange a visit to The Frying Squad to present them with their winner’s trophy. To earn their spot at the top, The Frying Squad has been appraised across a wide range of judging criteria including internal training policies and systems, training assessments to gauge the need for development, training support and forward plans for staff development. Branches of The Frying Squad also received mystery judging visits from an awards auditor who reviewed their staff training and development practices, in addition to ascertaining the level of customer service and quality of the fish and chips on offer. Commenting on their award win Managing Director Michael Neill said: “After entering this award category for a third time, it’s amazing to have finally won! We are delighted to be able to now display the trophy in our shop and celebrate with our team. “Since our formation in 2003, an integral part of the business has been to provide excellent training for our staff, after all

Great Danes! Amanda - strong historical roots bridged with an innovative look to the future

manda Seafoods have been creating Fish with a smile for 100 years. It was founded by Mr. Chr. Hansen in Kerteminde in 1916 under the trademark 555. The Company was one of the very first producers of canned seafood in Denmark. Canned fish balls and boneless herrings were the original products of Amanda Seafoods. In the mid-1950s the idea of canned cod roe appeared as only a small part of the best cod roe at that time was industrially exploited. Mr. Finn Tengberg-Hansen, descendant of

Mr. Chr. Hansen experimented with the liquid cod roe which, when boiled, became a solid mass. This was the start of Amanda cod roe in cans-an industrial success in Denmark and abroad. Today Amanda Seafoods is situated in Frederikshavn in the very North of Denmark nearby the famous town Skagen. They have 45 dedicated employees in production, warehouse, quality/developing and sales. Do Pay the English-born brothers Jack and Frank Alger first opened SPUD FISH & CHIPS on Alki Beach Seattle in June of 1935—right in the midst of the depression—when 10 cents could buy a paper ‘boat’ stuffed with fries and two big pieces of breaded cod reminiscent of a happier time, on a coast far, far away.

I

t’s not commonly known that in 1938 when Ivar Haglund opened his first café—a fish and chips stand at the entrance to his aquarium on Pier 54—that the Alger brothers inadvertently helped him: Roy Buckley, Ivar’s first employee, taught all about fish and chips while working at SPUD. And all of them, Frank, Jack, Ivar and Roy were from West Seattle, not far from the original SPUD. Following the war, the original building was replaced with a nifty modern building featuring portholes, and has since grown to a two-storied anchor for visitors to

Alki beach. Shortly after there were more SPUDs at Green Lake and Juanita too and now at this months featured shop at Edmonds Ferry at Salish. Larry Marion had never worked a day in a restaurant before purchasing the Kirkland SPUD Fish and Chips in 2008 along with his wife Cara. Now they are also the owners of the Edmonds Ferry shop too. Judging by this local review the day before the official launch the latest SPUDS in Edmonds Ferry is going to be a success. The marine-blue SPUD brochure says “Start with only the best fish and potatoes.” And I agree. Halibut was super moist; steam came out as I took my first bite. The ultra-light coating on my cod was so crisp; I heard a slight snap as I bit into the piece. Best part- the pieces of fish and the chips passed my paper napkin test, with flying colours. Only a trace of oil showed beneath the second layer of napkins. To

Ferry Man! me this indicates fresh oil at the correct temperature in the fryer and skilled timing in the kitchen. I’d be hard put to say which type of fish product I liked best, but with Jack Alger’s batter…I understand why they are “proud to use his original recipe. ” Tucked under generous pieces of fish are Washington and Idaho potatoes, cut and fried to crisp perfection. I loved the Home Style Onion Rings, a weakness of mine. Not sure if it is good to have these crusty golden orbs so close to my home. Maybe if I walk, both ways? Coleslaw’s tang balances well with the fish as does the dressing on their “Seasar” salad. Tender clams in the chowder and attention to detail on every menu item; I predict long lines tomorrow. The brochure’s third premise- “Always stay close to the water.” Makes me glad we have a beach in Edmonds. I hope you will be pleased as well. www.spudfishandchips.com

usco’s of Whitby has opened a new takeaway shop in Robin Hood’s Bay, creating up to five new jobs. The family-run fish and chip business has launched ‘Fish Box’ after investing £500,000 in the purchase and refurbishment of the former Candy’s Cafe on New Road. Fusco’s of Whitby own the award-winning Quayside restaurant in the town as well as Royal Fisheries. The business opened its first Fish Box venture in Whitby in 2013 and last year launched The Whitby Fish and Chips Catering Trailer.

The Buck Stops Here A chip shop in Leicester has taken away a top award - Buck’s Chippy of Buckminster Road, off Anstey Road, has been crowned Chip Shop of the Year by Pukka Pies for 2015.

T

he chippy battered the opposition from hundreds of takeaways throughout the country. Owner Tim Louca, who opened Buck’s Chippy in 2001, was delighted to receive the award. Tim first became involved in the chip shop industry through family and he opened Bucks Chippy in December 2001. Since then he has served his local community with high quality and tasty food, including Pukka Pies. As the business has become more established Tim has also created local jobs and now has a growing team of people working in the shop. The takeaway won the award after being named Pukka Pies Chip Shop of the Month back in September. Tim said: “Winning Chip Shop of the Month in September was an amazing reward for me and my team’s hard work. “To then win the award for the entire year means so much to us all.

The Italian Job!

Celebrate 131 years of Irish Italian tradition this ITICA National Fish & Chips Day 2016

T

he Irish Traditional Italian Chippers Association (ITICA) recently launched their seventh annual ITICA National Fish & Chips Day which will take place on Wednesday, 25th of May. To celebrate the 131 year old tradition of a ‘one and one’, all ITICA members throughout Ireland will offer their customers half price Fish and Chips. Established in December 2009 and now with over 180 members throughout the country, ITICA was created to promote and build on the traditional values and ethos of the Irish Italian chipper community. In their first six months, ITICA successfully launched National Fish & Chips Day to celebrate the tradition of Fish and Chips. All ITICA member chippers carry the official ITICA logo which assures customers of the highest levels of quality and service. With over 500,00 lbs of potatoes and 70,000 lbs of fish prepared during the day participating shops are gearing up for a busy day. The Irish Italian chipper culture was started by members of the Irish Italian community who arrived in Ireland in the 1880’s. Take the Rooster Challenge Isle of Ely Produce have been sponsoring the ‘Field to Frier’ Award at the National Fish and Chip Awards for five years now.

A

s part of the award the firm have produced a great platform which really does link up the potato seed suppliers, farmers and friers and helps them all understand the importance of the chain as finally the potato reaches the consumer. The Isle of Ely Produce growers group have been growing Rooster potatoes under licence from Albert Bartlett to supply their Westwick factory. Although traditionally grown in Ireland (the Rooster is Ireland’s favorite potato) the combination of the dark rich fertile soils of East Anglia and the extra hours of sunshine mean we can grow Rooster for chipping too here. Recently we took one of our Isle of Ely Produce growers Richard Lee (from PJ Lee & Sons) to the Golden Union fish bar for them to try the hugely successful Rooster variety in their busy London fish and chip shop. It was the first time that we have encouraged one of our main growers to visit a fish and chip shop and actually see first-hand the frying process. The award winning Rooster is already Britain’s favourite branded potato. Probably best known for its supermarket presence and fantastic marketing campaigns Its red

skinned appearance really makes it stand out from the crowd. The proof of the pudding was certainly in the frying. Rooster fried very well indeed, producing a lovely white chip, with a crisp outside and a fluffy inside. Kerry and Billy at the Golden Union were delighted to see the team visit their shop based in Poland Street. Kerry said “Having someone with his knowledge of growing potatoes in our shop really help us understand the process more. The Rooster we tried were great and we will be asking our merchant for more soon. Some of the tips they helped us with regarding what to look out for we will be using next time the merchant calls.” The Golden Union Fish Bar is an independent, family-run business. When they opened in August 2008, Billy & Kerry set out to create an authentic-feeling British chippy with a modern twist. From the beginning they’ve worked hard to give every single customer great quality home-made food and fast, friendly service. Aside from the perfectly fried Rooster potatoes the fish was perfect and their home made mush peas a delight. We are keen for key shops to try Rooster out for themselves in the UK for chipping. Grab them while you can! It is time once more to start promoting the annual Isle of Ely Produce Open Day. Already over 400 fish and chip owners have visited the farm in Ely Cambridgeshire to find out more about the potatoes which end up in their shops.

he all-important date is Sunday 11th September 2016. We’ve moved it to a Sunday so hopefully more shops can make it. Last year chip shop owners from as far afield as the Shetland Islands flocked to the area to see just how the humble spud gets from the field to their fryer. It is also a unique event as it showcases lots of new products and also invites key industry presenters to give key pointers on how to market your business and current trends.

Last years attendies visited a potato farm followed by a tour of the the Isle of Ely of proccessing and storage plant hosted by IOE Director Oliver Boutwood.

There were many speakers, slide shows and even a short movie tracking the journey a potato makes on it’sway to the chippy Lucy Frazer MP for South East Cambridgeshire started proceeding followed by the President of the NFFF - Gregg Howard

Many suppliers to the industry also attended, making it one of the largest events of its kind in the UK. This year we will include a trip to a local grower who will be harvesting the 2016 crop. (weather permitting). We will try to predict potato prices for 2017 and also have some great potatoes on trial. In 2015 the opening speech of the day was by National Federation of Fish Friers president Gregg Howard, who opened the day with a presentation about how important knowledge of chip preparation, storage and frying is to serving great fish and chips. The NFFF are in 2016 becoming an event partner, and will be promoting the FREE day to their members. Last year more than 100 people gathered at the farm and were welcomed by myself and I went on to deliver them the packed agenda for the day. This year due to popular demand we have space for over 150 people. With more than 10,000 chip shops in the UK, the potatoes from East Cambridgeshire and the Fens play a key part in supplying an industry which has an annual retail spend which tops £1.2billion.
