he first customer at Cuckfield’s new fish and chip shop, was Independent State of Cuckfield Mayor, Claire Bellamy. She opened the business and was delighted to see it donated 20 per cent of first day takings to local charities. After two years the new fish and chip shop on Cuckfield High Street has finally opened. The shop – named Cuckfish - was beset with various difficulties, including planning and utilities supply, but owner Mustafa Dilek and wife Jan have now opened the restaurant at the end of 2019 Mustafa, who has owned a kebab shop in East Grinstead since 1993, was drawn to Cuckfield’s village life and the surrounding countryside after having driven through it many times and was reminded of his childhood growing up in a village in Turkey. This inspired him to open a traditional fish and chip restaurant that reflected the character of the village. “I’m really looking forward to being part of this community and getting involved,” Mustafa said. After launching a competition to find the perfect name he was delighted to have over 300 entries, including seven suggesting ‘Cuckfish’. How did you come up with your name? Blue Lagoon – Simply the Best! Calum Promotes Shop’s £500,000 makeover!

I

talian born entrepreneur Ersilio Varese and childhood sweetheart Edda Varese opened the first Blue Lagoon Fish & Chip shop on Glasgow’s Sauchiehall street in 1975. An 80 seater Fish & Chip restaurant and takeaway located closely to the top end of Buchanan Street, the shop was unique to Glasgow in an era in which the high streets where mobbed, shops where queued, and at a time where very few fast food operators existed. Through hard work and tiring long hours together they both ensured the restaurant became an instant hit with the Glasgow public upon opening its doors. The business very quickly took off expanding on to West Nile Street, Argyle Street, Howard Street and Renfield Street all within Glasgow’s city centre in a matter of years truly establishing Blue Lagoon as the face of Traditional Fish & Chips in Glasgow. Through basic principles of bright attractive clean premises, high quality smiley service and top-quality foods and consistency – their business has

continued to grow over the past 40 years. Currently there are several Blue Lagoon Fish & Chip branches located throughout Scotland including a recent opening in the St Enoch Centre food court. It is the first time the chippy, which owns multiple venues across Glasgow, has opened in a food court. They have continued plans for expansion locally and overseas. As the business gets passed on to the third generation of the Varese family, all at the Blue Lagoon continue to be as passionate about Traditional Fish & Chips as their Nonno Ersilio and Nonna Edda were back in 1975. Their chippy on Argyle Street was recently given a fresh look in a £500,000 redevelopment. Blue Lagoon posted on their Instagram confirmed Calum Best appeared at the chippy in Argyle Street! Posting on their social media they channels they had said: “Pop down Friday December 6 at 1pm when Calum Best will be popping in to check out our new design!” Chippy Chat & Fast Food Magazine • February 2020

The redesigned chippy will supply 20 new jobs to the Glasgow community after the shop was extended. The Argyle Street branch has nearly doubled from 45 to 80 seats in the new transformation.The fresh vibe in the store offers a holiday style feel with palm trees and funky beach huts. A spokesperson for Blue Lagoon said: “We felt that despite all the doom and gloom currently surrounding businesses on the high street, this was a once-in-a-lifetime opportunity to really do something special with our brand and create our flagship Blue Lagoon branch.” In 2016 Just Bieber famously visited Blue Lagoon for some fish and chips after performing in the city in front of thousands of people

The Masterpiece! The British Pie Awards

T

he Pie is one of the icons of British cuisine. Savoury or sweet, hot or cold, the British eat millions of them every year many of them in a fish and chip shop or restaurant. These Awards are a national celebration of British Pies in all their varieties and have been running since 2009. Carnivores, brace yourselves. A vegan pie picked up the Supreme Champion gong at the 2019 British Pie Awards. The curried sweet potato and butternut squash pie was praised as “outstanding” and “well-balanced” by judges as it beat close to 900 other entrants to win the prize. The Awards are held in Melton Mowbray, the Rural Capital of Food, and hosted by the Melton Mowbray Pork Pie Association For the purposes of the Awards a pie is defined as the following: ‘A Pie is deemed to be a filling wholly encased in pastry and baked’. The Mission “The British Pie Awards is a celebration of the British Pie, recognising the craft and skills of those that produce them whilst promoting British produce and our regional specialities”

Awards: There will be a Champion in each of the classes. The Champion from each category will compete for the title of Supreme Champion. The British Pie Awards have become an institution for pastry-connoisseurs country-wide. Our annual event sees hundreds of pie-makers gather for a celebration and competition of this British culinary favourite. Held each year in Melton Mowbray, they have a selection of the most knowledgeable figures in the industry on-hand presiding over the day’s proceedings. 11th Anniversary This is the 11th Anniversary of the Awards after they were founded in 2009. Since then they have judged well over 7,000 pies. During that time the quality and range of pies submitted has increased significantly, a tribute to the craft and skills of the British Pie Maker. Cod’s Almighty! Nottingham-based business wins flagship title at The National Fish & Chip Awards 2020

he Cod’s Scallops in Wollaton, Nottingham, has netted the highly-coveted title of Fish and Chip Shop of the Year at the National Fish & Chip Awards 2020. Owned by John Molnar and wife Helen, The Cods’ Scallops beat off competition from nine other shortlisted finalists to be crowned the UK’s best fish and chip shop, an accolade which has led to previous champions doubling their turnover in the twelve months following the announcement. Hailing from across the country, entrants are judged on far more than just the fish and chips they cook and serve. Sustainability, menu innovation, catering for special dietary requirements, customer service and marketing activity are all part of the package of what makes an award-winning fish and chip shop. Judges looked for evidence of menu development and innovation when promoting healthier options as well as assessing customer health awareness methods and employee training procedures focusing on dietary requirements, ‘free from’ products, allergens and ingredients knowledge. Charlie Collins nets prize at 2020 National Fish & Chip Awards

harlie Collins, from Frydales in Leicester has been crowned winner of the Drywite Young Fish Frier of the Year Competition at the National Fish & Chip Awards 2020. Worthy winner Charlie, 24, battled it out with four other shortlisted candidates to take home the prestigious title. Top placings in the competition were as follows: • Winner: Charlie Collins, from Frydales in Leicester • 2nd Place: Alex Walker, from Low’s Traditional Fish & Chips in Aberdeen • 3rd Place : Adam Hutton, from Wetherby Whaler in West Yorkshire To win the competition Charlie underwent an intensive skills based assessment – which included chipping potatoes, making batter and frying fish – followed by a personal interview during a comprehensive judging day at the headquarters of the National Federation of Fish Friers (NFFF) Training School in Leeds, West Yorkshire. Charlie was also tested on his presentation and marketing skills. The final stage of the competition was a mystery shop visit where judges assessed on his practical skills in his own working environment. ichard Ord of Colman’s Fish & Chips wins Outstanding Achievement Award Local fish and chip industry legend Richard Ord of Colman’s Fish & Chips, South Shields has today (23 January) been recognised for his long-standing contribution to the fish and chip industry, receiving the Outstanding Achievement Award at the National Fish & Chip Awards 2020. Over 100 leading representatives and stakeholders from the wider sector were invited to put forward nominations for this year’s Outstanding Achievement Award. There was one clear winner - Richard Ord of Colman’s Fish & Chips. Richard has vast experience in the world of fish and chips, having worked in industry for over 50 years. Both he and several generations of his family have been responsible for innovating, modernising and generally advancing the UK’s favourite takeaway. His determination to protect the environment and championing local producers has seen Colman’s Fish & Chips become a local institution that has cooked for many a celebrity. Richard even cooked for the Queen’s Birthday celebrations The British Embassy in Guatemala in 2008. Marcus Coleman, Chief Executive at

Where to Find the Best Fish and Chips in Dallas

Who’s Hot An experience at Fish & Fizz made me realize I didn’t understand the dish. So I tried as many as I can. These are my favourites By Catherine Downes

I

t was dark and drizzly the evening I ventured up to Fish & Fizz. Inside, the walls are decorated with British flair and fish knickknacks. Wooden tables fill the dining room; families and neighbourhood regulars settle into metal chairs. One wall is adorned with a cartoonish painting of beachgoers, relaxing in the sand along the Banjo Pier in the small English coastal town of Looe. The seaside destination is one that Fish & Fizz owners Nick and Kelli Barclay know well—it’s where they ran a boutique hotel and restaurant and raised their kids. Most come here for the fish and chips, a mound of golden and glistening Atlantic cod piled on a bed of thick russet fries. The fish is battered and then fried in a blend of canola and cottonseed oil. Although a bit oily, the crisp coating is thick and clings to the tender white flesh. The fries are a suitable match for the flaky fish if doused in malt vinegar and HP Sauce, the vinegary brown condiment commonly found on British tables.

The fish and chips were good. I mean, I was pretty sure they were. But I realized afterward that I had nothing to compare them to. I rarely order this dish. I can count on two hands—and maybe a foot—the number of times I’ve had fish and chips in my life. I’d had them in England twice. One time was in London, but I was 10 and preoccupied with my hot pink raincoat. (I wish I still had that coat.) I know that my dad really enjoys them, and I’m sure I’ve had them at a restaurant with him at some point. Here’s the thing: I don’t go out of my way to order fish and chips. So, after leaving Fish & Fizz, and feeling at a loss for comparison, I decided to explore the fish and chips scene in Dallas. First step: ask friends where they go for fish and chips, make a list. Anyway, if you’re looking for some solid fish and chips in Dallas , this is where you should go. 5p Chips Headline Glastonbury! Oldest fish n’ chip shop in England rewards customers with “fabulous evening”

T

o celebrate 110 years of a family run business Knights fish n’ chip shop in Glastonbury offered meals for 1/- (5p) to customers who had bought a meal before the date of the celebration last year. It is now recognised as the oldest fish n’ chip shop in the country and the oldest independent shop in Glastonbury. Having taken over the business 10 years ago Kevin Mitchell and his wife Charlotte were delighted with the response they received. Mr Mitchell said: “It was an excellent day, really positive. “ We have a good relationship with suppliers, some we inherited from Bill (Knight), Charlotte’s dad, and it was great

to see them here. “We sold about 110 one shilling meals, with a few more on our gluten free Thursday as well, but the interest generated by the publicity from the press and TV is still ongoing. “People have been coming in and saying we saw you on the telly.” BBC Points West spent the day at Knights fish n’ chip shop filming the preparation of the food and interviewing Mr Knight. The chippy is also featured in another programme on BBC as part of the ‘Glastonbury is the UK’s most out-there holiday destination’ in November. Mr Mitchell said: “It was a great atmosphere and it was good to something for the regular and loyal customers. “It was very pleasing to see so many friends, family and regular customers enjoying themselves. “Glastonbury is such a vibrant place, the High Street is always full, shops rarely remain empty for long.” With the next generation waiting in the wings to join the family business the future looks bright for Glastonbury residents and Knights fish n’ chip shop. Ladies Day! Women in fish and chips event hailed a success

T

he organiser of the inaugural Women in Fish and Chips conference (WiFC), JJ Foodservice, has reported that its first event which took place in Birmingham in January has been a success. Shops up and down the UK from Scotland and Wales down to Devon and Cornwall attended the day, which hosted eight Award-winning speakers sharing personal success stories, market trends and staff-retention tips. Head of Communications at JJ Foodservice and event Chair, Elit Rowland, said, “It was a privilege to be able to bring together many the industry’s top femaleowned shops in the first UK event of its kind.” More than 50 shops attended on the day, a mixture of established and up-andcoming talent. Sarah Heward, Joint-Owner of The Real Food Café in Tyndrum was voted the best speaker after sharing the compelling story of how she over-came the loss of her husband, theft in the business, and family illness to take her shop from bankrupt to £1.4million turnover. ‘’It can be isolating being in a senior position or running your own company. It can be doubly isolating being a woman in business as females are still massively in the minority. Women empowering, inspiring and supporting each other will help change these statistics gradually.” She added, ‘’As a progressive industry,

fish and chips should be a leading light when it comes to championing equality. Well done JJ Foodservice for putting this together.’’ Kelly Barnes, Joint-Owner of Krispies, Exmouth (officially the UK’s no.1 fish and chip shop) said, “Today was a fantastic event – it showcased women in our industry in a positive light, it was great to hear from so many speakers. Events like these give you fire in your belly! JJ’s did a fantastic job – I look forward to the next one.” The conference took place at The Studio in Birmingham New Street on January 13th. Shop owners speaking on the day included Caroline Murphy, Director of Wetherby Whaler which has five sites in Yorkshire; Lesley Graves, co-owner of multiple-Award winning Burton Road Chippy in Lincoln and Janet Colclough, Founder and Owner of Nana Jan’s in Buckshaw Village. Representatives from the Marine Stewardship Council (MSC) and Seafish also presented on the key market trends and opportunities for shops. A workshop on how to improve business performance through your team was hosted by Alan McColm of The Real Food Café. Chippy Chat Editor Austen Dack joined the mainly female audience on the day too. “It was a great event with some great stories, im sure the group would have learned a lot on the day.” JJ has confirmed that WiFC will be a regular event. Rowland said, “100% of the people that attended would like to attend more WiFC events in the future, so we will make it happen.”

Fake (Well Bake) News! A MUM has proved whipping up mouth-watering fast food creations is - quite literally - a piece of cake.

elina McCloud, 37, charges up to £250 a pop for her super-realistic bakes inspired by takeaway favourites like McDonald’s Big Mac plus fries a KFC chicken bucket and of course fish and chips with mushy peas! The talented baker from Gosport in Hampshire left friends speechless and struggling to tell the difference with a ‘KFC meal’ she whipped up. “I started out making a KFC cake and the reaction to it was wild,’ Selina told Metro. “People kept saying to me how amazing they thought it was after I posted a photo of it online.” The mum continued: “The kids often pick up chips and pieces of chicken thinking they’re real. They’re never very impressed when they turn out to be cake.” She explained that each cake can take days to finish, since some seemingly minor elements - like chips and lettuce leaves - can individually take hours to create. A Magnificent Shop A Norwich fish and chip shop has had its grand opening after months of delays. The Fish ‘n’ Chip shop in Magdalen Street was due to have its grand opening in May, but this had to be delayed due to struggles with securing a gas connection

afik Hussein, 53, who helped turn the ex-butcher’s into a fish and chips shop said it is “a dream come true” for Mr Ali.He said: “It’s fantastic to be opening after months of waiting and we are hoping that The Fish ‘n’ Chip shop will be a real asset to the community. “The plan is for Juber to fulfil his dream of beginning a fish and chips shop franchise and also to employ disadvantaged people and people with special needs who wouldn’t necessarily have the opportunity to work otherwise.” As well as the usual chip shop fare, the menu includes tiger prawns, spicy chips and feta cheese salads. There is also a lunch special, consisting of cod goujons, calamari, fish bites, tiger prawns, and chips and dips for £15. Opening times are 10.30am to 3pm and 5pm to 9pm Monday to Saturday. NZ Chippy Serving Up Vegan Delights

luten-free fries, hunks of halloumi and vegan plates aren’t what you’d expect from a chippy, but they’re proving just as popular as the classic fish and chips at a Christchurch food truck. The Chippy, founded by Paula Revell, said despite running a primarily fish-focused operation, she noticed a market gap for quality vegan and vegetarian trailer food and wanted to “cater to all” from her Britishthemed chip shop. Next to fish and chips, fish burgers, mushy peas and curry sauce on the menu, she

introduced gluten-free fries, prepared in a separate vat to anything with batter, corn and black bean vegan loaded fries and battered slices of halloumi served to imitate the fish. Mixing up the meal offerings had been “incredibly popular”, with Kiwi appetites for vegan diets on the rise, she said. Pantastic News! The Real Food Café helps flush away poverty by achieving toilet twinning goal

T

he Real Food Café, Tyndrum is celebrating after reaching a charity milestone recently: the funding of 100 toilets in Malawi, with the charity, Toilet Twinning. On top of this, due to the work of the café, Tyndrum has been accredited as an official Toilet Twinning village. Toilet Twinning aims to improve toilet sanitation in developing countries by building loos where no such luxuries are currently available. The Real Food Café has raised £6,000 to build the 100 toilets. To encourage donations, a Just Giving Page was created and promoted in the café and on social media. On top of this, throughout the year the café organised various activities and events. On National Fish and Chip Day, limited edition cupcakes were served with £1 from each sale donated to the charity. The café made one final push during its inaugural Gluten Free Fortnight in October by setting up a tombola offering a range of prizes to raise funds and awareness for the cause. Sarah Heward, co-owner of The Real Food Café said:‘It is hard to believe that 2.3 billion people do not have access to a clean toilet, something that we take for granted here in the UK. At the beginning of 2019 we wanted to reach 100 toilets by the end of the year, and I am absolutely delighted we have reached our goal.‘We will continue to support Toilet Twinning, a fantastic charity working tirelessly to support some of the poorest communities. I hope that one day I will visit Malawi to see the fantastic work of the Toilet Twinning team’.
