he family run shop served up the festive treats across their three branches in Stoke Newington, Islington and Boxpark Shoreditch, with sprouts at £2.50 and mince pies for £3.50. Husband and wife Danny and Hana Sutton, who started the chain, came up with the idea after getting fed up with the Christmas staple. Danny said: “I’ve never been a huge fan of Brussel sprouts, so we tried battering them for the Christmas season and they are a great way to get everyone to tuck into them.” The sprouts and mince pies join their other battered desserts, including battered crème egg and Scottish classic, deep fried mars bars. The idea was replicated at Huddersfield shop Terry’s Traditional Fish and Chips too. The sprouts are the idea of manager Andrea Long. But she has been stunned by the demand with 150 portions going out to regulars and they all say they love the battered sprouts, including children. Only two customers gave the sprouts the thumbs down. Not content with sprouts, they also introduced battered stuffing balls on followed by battered pigs in blankets too. Norway introduced a strict ban on discards in 1987. Not only is dumping unwanted stock back into the sea a waste of food, it leads to unrecorded catches and inaccurate statistics, disrupting the basis of scientific assessment. The Digital Chippies Still taking orders on the phone? With diners expecting to order their favorite takeaway in just a few clicks, the chippies responding are boosting service and sales.

S

ituated on the busy Cockfosters Parade, Chippers has been operating for more than twenty years attracting regulars that include professional footballers Aaron Ramsay and Kieran Gibbs. Since launching their own website where diners can order and pay online, the team has enjoyed a significant uplift in sales. “Convenience and speed are keys to good service”, says owner Huseyin Celebi. “Since launching our new website with FOODit, customers can order online and on the go. It’s so easy to use, we’re attracting new customers every week”, he adds. Technology is a theme that runs throughout his business and Huseyin uses digital wholesale pioneer JJ Food Service to buy everything he needs. “I make great savings by placing my orders online via the App. JJs are great on price and being able to get everything in one place saves me time.”

Another fish and chip shop having great success with its own website is The Golden Cod, a thriving family-run takeaway based in Thorne, Doncaster. “Since joining FOODit, we’ve attracted new customers every day and our annual sales have increased by a fantastic 50%”, says owner and manager Gurdit Olick. “We’re constantly driving extra traffic to the site via our Facebook page and we’ve received more than 1000 positive reviews, which has really helped our business.” Most of Gurdit’s sales now come via orders placed online. “We no longer waste time on the phone”, he says. “We’re in the process 14

Fire risks in Fish and Chip Shops Fish and chip shops can present a significant risk of fire, and the effects on people and property can be devastating. In 2014 the Deep Blue chain of fish and chip restaurants suffered not one, but three fires. The chain’s CEO, James Low, shares a shocking story of inappropriate cover, inefficiency, and complacency from insurance providers. Let down by insurance

James, like any business owner, expected co-operation and support from his insurers to help restore his businesses and assist with temporary loss of income. Sadly, this was not the case. Although the insurance company accepted liability for the Reading shop six weeks after the incident, the claim was not settled until almost eight months after the fire. James said: “It was clear that the insurance policy was ill equipped to deal with the day to day working practices of fish and chip shop operators. The insurers looked for reasons to decline the claims, turning to clauses within the insurance policy to justify this, one being that the staff were not ‘in attendance’ of the frying range at the time of the fires. Staff were actually doing their morning preparation no more than a few feet away.”

You pulling my bed? Hodgson’s Chippy teamed up with Erol Fin to support Radio Lancashire’s recent Children in Need - Bed Pull. They fed over 60 people and then helped to pull the ‘Children in Need Bed’ all the way to Bare.

t was part of Graham Liver’s crusade, (Newsreader on BBC North West Tonight and Breakfast presenter on BBC Radio Lancashire), he set off from Pudsey, near Bradford and walked more than 100 miles to Bare in Morecambe for Children in Need. They dragged the specially-designed bed along highways and country lanes meeting listeners in many of the towns and villages covered by the station. Nigel Hodgson of Hodgson’s Chippy said. It was great to help with this extraordinary event. We fed them the finest fish and chips in the area, and then went onto help with the effort. Best of British! Calum Richardson, Owner of the Bay Fish & Chips, recently returned to Stonehaven after yet another overwhelmingly successful annual showcase of the best of British produce in Japan. Fully stocked with Scottish MSC haddock from Coupers, Vegware packaging, and The Bay’s bespoke Premium Bay Batter, Calum began the first leg of his journey with a pop-up shop in the Isetan department store in Shinjuku, Tokyo.

E

ach day, the pop-up was filled with hordes of Japanese customers eager to try authentic Scottish fish and chips. The Bay’s pop-up stand had the highest number of sales with over 700 portions of fish and chips sold per day, and a record number of The Bay’s British Victoria Eggs aprons and The Bay’s bespoke Premium Bay Batter sold too. The department store even hired a Japanese version of the Beatles to continue the British theme. Following the pop-up, Calum was invited

to conduct two Marine Stewardship Council (MSC) seminars in Tokyo. The first seminar was designed for business and chef officials and the second for the general public. Both sold out seminars included a cookery demonstration, sustainability tutorials, tastings and Q&A sessions. Calum Richardson, Chef/Owner of The Bay Fish & Chips, said: “I am incredibly honoured to be given the opportunity to take my product to Japan for the fourth year in a row. Every year I am overwhelmed by the popularity of The Bay’s fish and chips, and I feel proud to be in a position where I can promote great, sustainable produce, not only in the UK, but also overseas in Japan too. Just Winners! Two chippys made it to the final of the Just Eat British Takeaway Awards

C

atch Seafood, Halifax won Best Takeaway in Yorkshire and Humber, whilst Chris’s Fish and Chips in Barwell won Best Takeaway in East Midlands after winning the main award in 2015! They were both presented with their awards by comedian Rob Brydon. Chippy owner Stratis Kyriacou said: “We weren’t expecting it last year and we definitely didn’t expect anything again this year.” The business was hit by a major blaze in March when a fire severely damaged the kitchen and smoke damaged much of the rest of the building. The community rallied around helping to repair the damage, enabling the takeaway to reopen eight days later. Stratis said: “It’s amazing, surreal and humbling – we’re just a little village in the East Midlands. “We would like to thank our local community and

all the support they given us.” Apart from the regional title, the two businesses were presented with a £1,000 cheque. Catch Seafood cooks in the traditional way with beef dripping, and it offers haddock and cod, chips, spam fritters and fish cakes, as well as more exotic items such as tempura king prawns and halibut with dressed crab and poached lobster. The judges were also impressed by its growth and community spirit. After starting the year with just two staff members and the owner, it now has a team of 10, and also offers catering for events. Katie Parkinson, owner of Catch Seafood, said: “We came to the awards and we were very excited but we didn’t think we would win, so it’s absolutely amazing. “It means the whole world to us to win. We’ve put our heart and soul into Catch and it’s wonderful to get the recognition from both our customers and the takeaway industry.” However, they were both pipped to the national £5,000 prize by Chicken George, in Luton. Apart from the national title, there were 13 regional and other prizes up for grabs. In total, over 110,000 members of the public voted in the BTAs. T

he news means the shop is now only the second MSC certified fish and chip shop in the West Midlands. It can now use the MSC ‘blue tick’ label on its hake, haddock and cod, assuring customers that the fish has been responsibly caught using sustainable methods. To set the celebratory mood for receiving their award today from the MSC’s George Clark, the shop has been decorated and has been offering free sustainable fish goujons to their customers. Open since 1969, Our Plaice is owned by Caroline Howard and husband Gregg Howard, who is also president of the National Federation of Fish Friers (NFFF). Along with manager, James Houlston, the team dedicates much of its time helping fellow friers all around the world. Fish and chip shop staff from Paris, Iceland and Japan have been trained on Our Plaice premises and the team even recently travelled to Tokyo to help open Japan’s first authentic British fish and chip shop. The award-winning shop is hoping for further good news in January when

James discovers if he has won the Young Fish Frier of the Year Awards, having been a finalist for three years running. Insurance with assurance Kingfisher Fish and Chips in Plymouth, Devon, is the latest chippy to realise the benefits of taking out an insurance policy with the industry specialist, Wrapped

ingfisher Fish & Chips is almost unrecognisable from the business that Craig Maw and Nikki Mutton bought four years ago. Switching things up a gear from the minute the pair took over, they moved from pre-prepared chips to chipping and peeling their own potatoes, carried out a full refurbishment of the premises, installed a five pan high efficiency Kiremko frying range and put sustainability at the heart of the business. It’s a formula that’s worked with the chippy scooping a host of high profile accolades, including the much sought after 3 Stars from the Sustainable Restaurant Association, a world record for the most number of MSC species on its menu, the highest rating from Fish to Fork, as well as the Good Catch Award and second place in the Independent Fish & Chip Shop of the Year at the 2016 National Fish & Chip Awards. It’s no surprise then that the chippy is tipped to do well again at the 2017 awards this coming January. Wanting to protect the thriving business he and Nikki have built up, Craig recently started to question his insurance policy after speaking to a number of friers in the trade whose claims were not paid out due to inadequate or inappropriate cover. Craig comments: “Like most fish and chip shops, you just make the assumption that if there’s an incident, you’re covered. If there is a fire in one of the pans, the fire suppression system will extinguish it with immediate effect. I heard a fact recently that 80% of business that suffer a serious fire either never re-open or they close within 18 months. With this system, there’s a 48 hour turnaround before we can use that pan again, which is pretty good because it’s not going to put us out of business.” Also fundamental to Craig’s decision to go with Wrapped was knowing that the cover he was purchasing is open to improvements and that, over time, it would become even more tailored to the sector than it already is. He adds: “The fish and chip industry is evolving, it’s getting better and more stringent, and it’s important that insurance companies evolve and move at the same time. Gleethorpes Pier! CLEETHORPES Pier is to be transformed into the “world’s biggest” fish and chip restaurant and takeaway that will create over 100 new jobs and be able to host up to 500 people at a time.

apa’s Fish and Chips have confirmed the purchase of officially the UK’s best pier and have vowed to let the spirit of the iconic venue live on alongside the resort’s newest venture. An “ecstatic” Papas family, who established their first restaurant in the Kent seaside resort of Margate back in 1966, have vowed to “bring the pier back into its heyday” and create a family-orientated resort icon that will attract thousands of people from all over the world. Whilst promising to serve up the “best fish and chips you have ever tasted”, the family will continue to operate the Pier as it is in its current format, with the tea room, bar and function room staying open alongside the new fish and chip restaurant. Weddings, parties and family functions will all continue to take place and anyone wishing to book a function should contact The Pier directly. Head of the family business, Sid Papas, 53, who has just opened a mega

outlet on the North Bank, capable of hosting 420 people, said: “It’s a beautiful pier but at the minute it’s not accessible to everyone with it being a fine dining experience. “We want to offer affordable and accessible fish and chips with a smile. It’s the nation’s favourite dish at the nation’s favourite pier. “It’s a traditional pier and we are so pleased and so proud and want to make everyone else proud of it. “We are grateful that we have been given the opportunity to keep the pier open and to make it more accessible.” Earlier this year it was named as the Pier of the Year 2016 by the National Piers Society. Dino Papas, Sid’s son, spoke of how the family are “excited” to be given the chance to “bring the pier back to life” and jumped at the opportunity to open up an outlet in Cleethorpes when the pier was put up for sale. He said: “We are one of the top five fish and chip operators in the country and we are so pleased to link our history with the piers. “Cleethorpes and Grimsby have got a great reputation for fish and chips and the pier experience will be part of the package. “People should expect a fantastic service and fantastic food.” The Pier remains open for business as usual, with the transformation into Papas expected to take shape in March.

The next generation game! The Wetherby Whaler Group has helped recognise the enterprising nature of two young businesswomen at the Yorkshire Young Achiever Awards.

T

he Yorkshire-based business sponsored the Achievement in Management and Enterprise award, which was presented to talented twin sisters Laura-Jane (L-J) and Emily Keston, by Caroline Murphy, a director at the Wetherby Whaler Group. The pair received the award after establishing their own musical theatre workshop business, Stagebox Musical Theatre, following appearances in numerous stage shows, films and television productions, including ITV’s Mr Selfridge and Bridget Jones: The Edge of Reason. Stagebox offers high calibre musical theatre training to help exceptional young performers aged seven – 18 years-old looking to take the ‘next step’. Stagebox runs for five weeks during the school holidays, operating from bases in Leeds, London and Manchester. It combines video showcases with intensive musical theatre training led exclusively by West End professionals and leading creatives. The company only accepts 25 children into each of its Elite Team programmes to ensure that every child receives the very best training and opportunities. Magnificent Seven! Seven fish and chip shops have scooped a national award for its selection of gluten-free meals. They all achieved gold medal status in this year’s Free From Awards. Well done to all here is what the judges said.

Bizzie Lizzie’s - Skipton ‘A very comprehensive free from menu! The fish and chips were eaten by non gluten free family members and they all preferred it to the normal fish and chips – much lighter. Very good value – can’t wait to go again!’ David’s Fish and Chips - Brixham ‘David’s provides an excellent, tasty and authentic fish and chips with a great choice for allergics and coeliacs. All members of staff were confident and knowledgeable. My scampi and chips were delicious, the portion size equally as generous as non free from options. It was lovely to be included in a true fish and chip shop experience without any worries about safety.’ The Fish Factory - Worthing ‘Excellent reception; they have a huge dedicated menu to hand and we felt really welcome. The food was excellent. Beer batter very, very light and crunchy; the chips had skin on and looked home-made. Amazing value for money, especially when their fish is sustainable and their menu is so broad.’ Quayside - Whitby ‘The batter was crisp and the fish moist and delicious, the chips great – you couldn’t tell it was gluten free. Vinegar Jones, Bowness on Windermere ‘Fab fish and chips! Batter was light and crispy, with no soggy-next-to-fish going on. Fish was very fresh, and perfectly cooked. Chips were great too - proper chips, and not greasy. We had a portion of mushy peas too. Possibly the best gluten free fish and chips we’ve had!’ Kingfisher Fish & Chips - Plymouth ‘I felt very welcome as a gluten-free customer – the owners really want to make the effort to give the gluten-free customer a great experience. The chips are everything you’d expect from a chippy; there is a good amount of choice on the gluten free menu and it’s really good to have non-fish options and the extras like curry sauce and gluten free vinegar. They also offer 12 varieties of MSC certified fish on the menu. Something that greatly impressed my marine biologist wife!’ Olley’s - South London ‘Staff were friendly and welcoming and demonstrated familiarity with Celiac and Lactose and Egg allergy and intolerance. Mushy peas were neither too sweet nor salt. Fish was excellent and complimented well by lemon and tartare sauce. A very satisfying fish and chips dinner. And, given the comfort of the seating, service, quality and quantity of food, very good value for money.’

The After a devastating loss at their King St. location of ish & chips in the Uptown Waterloo area of Ontario from a building fire in 2012, their friends at Herrle’s Market tweeted them the idea of opening up a food truck.

F

ast forward a few years later and ish & chips is back in the KitchenerWaterloo region in full swing. Just like their original restaurant, they’ve still got their award winning fish & chips, homemade falafels, coleslaw and much more. Since hitting the streets of the KW region in July 2014, they’ve been blessed to be a part of the community once again and have reconnected with old customers, neighbours and friends throughout the region. Nearly five years after a fire devastated Ish & Chips, the restaurant is back in Waterloo – this time on wheels. In June 2014, the Ish & Chips food truck had its grand reopening, and was set up near the King and Bridgeport intersection for the afternoon. Kamil Mytnik, son of

the restaurant’s owners, said it has been a long road since the fire to today. “Well it wasn’t hell and back, but it was tedious. A lot of different things were happening,” he said. “As you can imagine we had nowhere to really turn to for a source of income, other than get everything finalized with insurance. In August 2012, a blaze destroyed the restaurant, along with a neighbouring convenience store and apartments above them. Since then, the family has been adamant on getting the business reestablished. Then finally the family opened a location in London , which Mytnik said took about a year and a half to set up. However, he said their hearts belonged in Waterloo. While they were setting up the restaurant in London, they were also working on the food truck. Mytnik said he noticed the popularity of the trucks and thought it would be a quick solution to reopening in Waterloo. “It didn’t really happen quickly because it was almost two years,” he said. “Things just kept getting postponed and postponed … as you can imagine it’s been

Stops Here! a long, hectic ride between the food truck and the London locale, but we’re happy it’s all finally done.” Mytnik said he the food truck following is an advantage to them, because they can be “anywhere and everywhere with the truck at any time – within reason.” The mobility of the business is already proving to be valuable; since the reopening there has been no shortage of customers – Mytnik noted there had been more people there than the first day at the London location. “Everyone is really excited over food trucks. It almost seems like a little niche cult following. It just seems to be booming,” he said. When asked if the family ever plans on reopening a permanent location, Mytnik noted it was still on their “to-do list.” “It was a prime location for us. We got a lot of props from people coming in telling us how much they loved the design and atmosphere of our interior. We’d love to bring that back,” he said. “I know my mom is still pretty devastated over the fire, but it’s definitely there that we’d like to come back.” For now, Mytnik said his family has got

the truck involved with the festivals in the region, including the Uptown Waterloo Jazz Festival. “There’s a lot of opportunities for us to sort of reach out to the community, further away from just the uptown. So being mobile is a huge plus,” he said. It was a tedious process for the Mytnik family, but the wait for their famous fish and chips is finally over. The world-famous Awards, which are to be held on 8th March 2017 in the Leicestershire town of Melton Mowbray, are in their ninth year. The hotly coveted contest continues to grow in popularity.

he Awards celebrate our nation’s love of pies – be they hot or cold, sweet or savoury. A few simple pie rules must be adhered to though: all pies are to be totally encased in pastry with a closed top, and fit into one of the pre-assigned classes. All pies, except the specialist class, must also be commercially available in the UK.
