t Lucy’s Fish and Chips portions of chips were garnished with two new additions recently - a football shirt and trophy to mark the Canaries’ promotion success. The team bought in special potato cutters to create the unique chips for Bank Holiday Monday, to coincide with the recent promotion parade through the city. Owner of Lucy’s Fish and Chip Barclay Gray, 50, said the idea had been two or three weeks in the making. “We have done hearts for Valentine’s Day at that time of the year, and we were thinking what we could do for this special day,” he said. He said they were just waiting until Norwich City clinched promotion before they bought the cutters in, and both stalls sold the shirts and trophies as the city celebrated. “Because the potatoes this year are quite small we are trying to pick up the biggest potatoes we can to fit in the cutters,” he added. Going Dutch... We opened our first Chip’d store in Feb this year in the ‘Dining Quarter’ of Chester where you can find wine, culture, lunch and spot of shopping. By Andrew McKechnie

W
e had a great launch with the local MP cutting the ribbon and long queues down the road. We’ve had a lot of local interest and really enjoy showing people our new store and telling them what makes us different from a traditional chippy. We get asked all the time “What makes your chips Dutch?” So, no fish, no mushy peas or battered sausages in sight, and for that matter, no bog-standard potatoes either. We are paying homage to the best chips you can get, bettered only by the addition of sixteen (and rising) delicious dipping sauces. The taste of our chips is noticeably different to that of your typical chippy – they’ve got a distinct flavour; skin on, hand-chipped, twice fried and flipped in salt. It’s brilliant when people try them and we get the same response….”OMG, they are gorgeous!” We get called the “Artisan Chippy” which I’m not particularly fond of, but the definition (‘made in a traditional or non-mechanized way using high-quality ingredients’) certainly does apply, ‘It’s never come out of my mouth, I usually say posh chips. But

yes, there’s a craft here and better, highquality ingredients. I’m not claiming chips are healthy but these are about as healthy as chips can be for you – in terms of the way the potatoes are handled and prepared, and added nutrients from leaving the skin on.’ As they do on the continent, we use the Agria potato. They are not the easiest to get hold of and they certainly aren’t the cheapest but I love the way they cook, their colour and most of all, their taste. The inspiration came from a trip to Utrecht in 2015 to catch the start of the Tour de France. We were out looking for somewhere to eat and the number one place on Trip Advisor was a chip shop. I thought I was taking my wife out for a romantic meal and we ended up at a chippy having the best chips I’d tasted. The shop was cool; full of young, trendy people hanging out, smiling and laughing. Everything in there was fresh and organic with a lot of theatre; the potatoes piled up in the window. You saw your potato getting hand chipped, cooked and served to you. Nice and simple; just a great product served well. I hadn’t seen that before and I returned home with plans to investigate further. It was a few years later, after leaving CocaCola (where I worked for twenty-two years) and honing the offering at local festivals and pop-ups that I found a fixed home for Chippy Chat & Fast Food Magazine • July 2019

my vision in Chester. The shop fit was hard work and we had “fun” and games getting planning permission, sorting the gas supply and installing the over the top extraction required by the local council. We put a lot of effort into the design of the shop, the fixture and fittings to make it stand out from other fast food shops in the area. I love it and it makes me really happy when we get great feedback from our customers. After a great start in Chester we opened our second location in Liverpool taking a residency at the Dockside Dining Club. It’s brilliant to be in Liverpool in such an iconic location and becoming part of the vibrant, independent food scene. It’s been hard work, but I really enjoy it and I love the industry. Everyone I have met has been so supportive with their time, experience and encouragement. Going forward, we are focusing on establishing the business in Chester and growing our presence in Liverpool where we are looking at some other permanent locations. www.chipd.co.uk Want to feature your business? X Men A Day at the Chippy Hugh Jackman visits Bennie’s in Clydebank Hollywood star Hugh Jackman stopped in at an unexpected destination recently.
A
fter working up an appetite, the Wolverine and Greatest Showman star stopped off at Bennie’s fish and chip shop in Clydebank. Hugh posed for a picture with staff at the Kilbowie Road chippy and shared it on his social media much to the delight of locals. He also tried a deep-fried mars bar too. Mohammed Ishaq Bennie’s owner said, “It was unexpected to see him I was so happy to see him. He was very down to earth lovely man.”

The 50-year-old was in town for a threenight run at the SSE Hydro and shared his movements online. The singer and actor filmed himself arriving at the venue with the excited caption “3 sleeps” on Saturday. During his tour of the west of Scotland, he also hopped on a boat on Loch Lomond and visited Inchcailloch. The Greatest Showman star brought his ‘The Man. The Music. eafood Week is all about the seafood industry working together to celebrate and promote the great variety of fish and shellfish to be enjoyed in the UK – whether enjoying a fish supper at a fish and chip shop, eating fish at home, eating out at restaurants and cafes, or a lunchtime sandwich. Seafood Week aims to celebrate the wonderful seafood available in the UK to the consumer, which will hopefully have an impact on the amount of fish and shellfish sold. The event is all about celebration and adventure, and during which Seafish will undertake to: Promote seafood as one of the healthiest, most convenient and delicious foods available. Promote the fact that there is a huge variety of different fish and shellfish to be enjoyed by consumers in the UK – in excess of 100 different varieties available in the UK – possessing different flavours, different textures, etc. Promote the fact that seafood is incredibly versatile – there are literally thousands of different seafood recipes and ways to cook seafood. Make consumers aware of seafood’s great value for money. Celebrations for the week will begin on Friday 4 October 2019 and will be followed by eight days of intense consumer-focused activity organised by all sectors of the seafood industry. Seafish will once again be promoting Seafood Week via various media channels, so that consumers will be more aware of what Seafood Week is all about. David Miller – Millers, Haxby I first met Paul and Daniel from the Leinebris, when I went out to Norway on a study trip with the top 10 Finalist for the 2017 National Fish & Chip Awards. As soon as I met them. I knew I wanted to use their fish. So, we as a family went out to Norway to meet up with Paul and Daniel again to see if we could do business and I’m very glad to say, we’ve been using the Leinebris line caught haddock since 2017. The quality of the line caught haddock is superb, ‘’Outstanding” some of the best haddock fillets I’ve ever had the pleasure of working with. Why did you start using the brand? Craig Maw – Kingfishers, Plympton As part of being a top 10 finalist in the

Also consistency is very good making our job a lot easier in ensuring our customers receive the same size and quality every day, What do they think about the quality? Tim Barnes – Krispies, Exmouth In our opinion it’s the best on the market from its sweet flavour, to the consistency of the product we have never had a bad batch. We sell so much more haddock since we’ve been using the Leinebris brand. In which ways does it stand out? David Miller – Millers, Haxby The fish is such an excellent consistent product, white like snow when you’re working with it and when it’s cooked. But the way it really stands out is when our customers say I haven’t tasted fish like that for years, that’s the money for us. What more would you want? Also I think the packaging is sleek and

clean! The black and gold branding is very classy and who doesn’t want a gold hook!! What do they think about the packaging? Craig Maw – Kingfishers, Plympton In our shop we purposely chose lime green packaging, firstly to conjure up a fresh image and feel, but also to try stand out from the crowd and to be different. The Leinebris branding is very similar plus there is a sense of quality when you see the brand and packaging. What do they think about them as a company, as people, as suppliers to the fish and chip trade? Locked in Freshness! Why Seafood from Norway is good for you and your customers. By Hans Frode Kielland Asmyhr

F
reezing food is one of the oldest preservation methods. For centuries it has been used to prolong the availability of food over winter. The nature of freezing does not require added preservatives, as microorganisms do not grow on produce when the temperature falls below -9.5C. Yet it has long been the myth that fresh fish is best. Such is the need to bust this myth it would not be surprising if many foodies were unaware that it is illegal to serve sushi had it not been frozen beforehand. The Food Standards Agency stipulates fish intended to be eaten raw or lightly cooked in food businesses and restaurants must be frozen first to kill parasites. Today, frozen-at-sea production is now considered to be one of the best and most consistent sources of whitefish supply to the UK’s HORECA industry. Frozen-atsea produce is favoured by many awardwinning fish and chip shops and is used in catering events where consumption volumes are high. Once the fish is caught, it is processed, filleted and frozen to below -20C within 2-5 hours on board several advanced vessels fishing in the Arctic waters of the Barents Sea and the North Atlantic. From ground ZERO (where all was deemed impossible), within 5 hours, trucks were hired, run sheets re written, stock that fortunately was due for delivery that morning was redirected to a temporary yard unloaded and out for delivery. Top of the Plas! Anstruther fish and chip shop ditches plastic
A
famous Fife chip shop ran by Robert and Alison Smith, which serves suppers in containers made from plants has been commended for its efforts to go green. Anstruther Fish Bar’s packaging and tableware is fully compostable and takes only 180 days to break down. Straws, cups, bowls and plates which look like plastic are in fact made of plant starch. Even the gloves and bin bags are compostable. The multi-award-winning chip shop, which has fed royalty and A-list celebrities, is the first business in the town to be named a plastic-free champion by marine conversation charity Surfers Against Sewage (SAS). The packaging they present their famous food is 100% compostable. The disposable cups, bowls, plates and even napkins are all made from plant-based material, capable of being returned to the earth in just 180 days. These Vegware items are low-carbon, made from renewable or recycled materials, and all can be recycled along with food waste. Community group Plastic Free Anstruther, a project formed under the SAS umbrella, presented staff with a plaque to mark the achievement. Plastic Free Anstruther, set up last year, aims to achieve plastic-free status for the town through the SAS campaign. Plastic Free Anstruther leader Alice Pearson said: “We were absolutely delighted to receive confirmation from Surfers Against Sewage that the Anstruther Fish Bar has met the requirements to become a plastic-free

champion. “We hope they will act as an inspiration to other local businesses, to demonstrate that cutting out single-use plastic is achievable. “More and more consumers are demanding that the businesses they support have given thought to this issue, and in a coastal community reliant on the health of our marine environment it is obvious why it matters. “Now we can enjoy our fish supper knowing that it isn’t damaging the sea.” Plastic Free Anstruther meets monthly. As well as working with local businesses the group organises regular beach cleans. Surfers Against Sewage is a national movement which helps to tackle the 12 million tonnes of litter which enter oceans each year.As well as co-ordinating a network of plastic-free communities and schools, it oversees beach cleans across the UK.Plastic pollution is its main focus but it also works on climate change, water quality and coastal development issues. KFE – Rockets Ahead! From inside of one of Plymouth’s most iconic buildings, the glassblowing house on the Barbican, comes the cities latest addition to fish and chips.

wner Phil Thompson took over from what had become a tired restaurant and, having previously co-owned the multi-award winning Harbourside Fish and Chips for 7 years, had no hesitation in converting it into a more modern eatery in early 2016. “It was a real position A site” explains Phil. “It’s a site that has always had great potential. It offers stunning views across the harbour and once the planning had been confirmed for the takeaway, boasts an amazing footfall. Being so close to the water is the perfect place to enjoy fish and chips.” When asked why he had chosen KFE to provide his new range Phil said

“Simply put they’re the best. Having been a previous customer at Harbourside I’ve always been impressed with the customer service not to mention the power and efficiency of the equipment. My favourite part of the set-up is the new Swiss grill. No cross contamination and less oil absorption is making the grilled options ever more popular. I’ve always been a massive fan of the basket frying system as it offers speed in busy periods and portion control.” The Harbour is able to offer every option from its menu as gluten free as Phil opted to have a separate pan to cook all gluten free options in. When asked why he had opted for two types of grill (char and flat grill) he replied, “I spend so much time eating in here myself I wanted as many option as possible! It provides healthier options and I can enjoy more varieties of local fish.” The restaurant has gone from strength to strength and in Spring of 2019 Phil expanded the business with the opening of The Harbour in St Ives. Nestled in the Old Lifeboat House the restaurant is another amazing building that Phil has turned around and offers customers wonderful views over a tantalising menu. ello, my name is Steve Calvert! I joined Jeff and Moira Stephenson in Premier1 Filtration in the early summer of 2017. I quickly realised the potential of the company. When Jeff mentioned his interest to retire, I didn’t hesitate in securing an amicable deal and bought the company in Sept of the same year. Since then P1F has renegotiated our agency contract with the leading UK filter media manufacturer, doubled our sales of filter systems to frying range suppliers and increased our customer base by 30%. The A-Team The first thing on the agenda was to strengthen the P1F team with additional staff for sales and warehouse logistics. Martina Cuccunato came on board in Jan 2018 as our Finance/accounts manager. Martina is also fluent Bi-lingual, Italian and English. Our new sales manager, Graeme Kitching has proven to be a great asset since he joined the team in June 2018 and has boosted sales. Sarah Robertson our telesales lead has become more involved in our stock ordering and control and has continued to be invaluable to the company.

Leading the way on Merit P1F had long been, the sales agent for Merit Processing Ltd, the manufacturer of the Merlin filter machine and supplied filter media to a small customer base. When the directors of Merit asked if I would be interested in the company, it was an easy decision to add this company to the P1F portfolio. I bought the company and partnered with John Green, who has a vast experience with filter machine manufacture. The addition of a manufacturing arm allows us to maintain high quality and a UK based manufacture. The company “Merit processing” was rebranded “Merlin Filtration” to follow the strength of the Merlin name. Sales and manufacture were split, to allow the companies to utilise their strengths and focus more efficiently on customer needs. In 2018 we had over 120 friers and suppliers join us for one of the best industry days out of the year and 2019 we already have lots of owners and friers registered to attend.

DeactiVATe! A Norwich takeaway owner has launched a petition to get tax removed from fish and chips.
I
t’s a Friday night favourite but due to increasing fish and potato prices Paul Slater, who owns the Long John Hill Fish Bar, Norwich fears fish and chips may soon become too expensive for many to regularly afford. Now, in the face of rising costs and in a bid to reduce costs to the consumer, the 48-year-old has set up a petition calling for VAT -which is 20pc- to be taken off fish and chips. Mr Slater who has run the Long John Hill takeaway for five years and who has been in the fish and chip business for 15 years said that during that period he had seen the price of cod and haddock “go through the roof”. Putting the increase of fish prices down to a combination of the weak pound, Brexit and fishing quotas Mr Slater said: “At the end of the day if prices continue to go up, and I’ve heard they’re going to over the next few months, then we’re going to be a in place where fish and chips is a very expensive meal, “Fish and chips have been a part of British heritage for many years, I think it’s a tradition on a Friday, people head down to the fish and chip shop and it’s a lovely meal,” he said. Adding that as the price of the fish and chips increased so did the profit the government made from VAT on the meal Mr Slater said: “We need to do something as a business and an industry to reduce the cost [of fish and chips] and I think a big chunk of that is VAT. “It’s important that people understand what’s happening with regards to fish prices at the moment, they need to understand why prices are going up and a big part of that is VAT as well as sustainability and getting people to try other fish.” Adding that many of his customers hadn’t realised VAT was added to fish and chips, Mr Slater said once they did, people were often happy to sign

the petition. W
ith the rise of online ordering for takeaway food, the idea that it can actually cost you money has become a popular thought process for many business owners, but is this really the case? When done correctly, online ordering can be very profitable. The trick is understanding the costs of receiving the orders and the long-term effect on your business, and then making the right choice about how you implement online ordering. In the example below, we look at what using an online ordering platform could cost you for every order you receive through them. Ordering Portal Charges: • 20% commission on order value (average) • 50p admin per order • VAT added to total cost Using the figures above on a single £20 order: • 20% commission = £4 • A charge = £0.50 • VAT on charges = £0.90 • TOTAL CHARGE for £20 order = £5.40 This example shows that on a £20 order you only receive £14.60, which means in total you have paid a whopping 27% to receive the order. If you multiply this by 200-300 orders a month you can see that you are giving away £1000’s a month in fees to receive your online orders this way. The arguments for using online ordering portals vary between ‘they do everything for you’, ‘they bring you more customers’, ‘it isn’t any cheaper to do it yourself’ or ‘it is too expensive to get your own service’. The truth is very different, and many of these arguments are myths, probably started by the online ordering portals themselves. A study done by one of the online portals, during their merger with another business, states that around 80% of customers would probably order direct from the businesses they listed, even if they didn’t use the portals. This means that up to 80% of the orders you could receive from using an online portal, would have come to you anyway, so why are you giving away up to 27% of your order for an

existing and regular customer? The simple answer is you shouldn’t! How Do You Rate? Britain’s lowest food hygiene ratings revealed by area & town!
More than one in 15 establishments across England, Wales and Northern Ireland have a food hygiene rating of two or lower.

n Birmingham alone, one in five establishments have an appalling rating of two or under, however Walsall has emerged as the town with the poorest overall rating in the UK, with an average

score of just 3.68 out of 5 across its entire food offering. A shocking rating of two or below means that urgent improvements surrounding the eatery’s facilities and handling practices are required. Out of all the eateries, takeaway joints were the biggest offenders as more than one in nine have a cause for concern rating of under two. The announcement follows Just Eat’s pledge to remove all restaurants with zero hygiene rating from its platform and provide funding to its establishments with a rating of two or lower to get up to the satisfactory level.
