ecently I took time out to discuss the Covid-19 situation with the King of Sausages Kevin McWhinney. His family have been producing high quality Irish pork sausages since 1898! Kevin has recently battled illness himself so knows what it means to be in total lock down! Austen: Hi Kevin how have things been at McWhinney’s since the lock down? Kevin: It’s been unbelievable. We went from making and delivering hundreds of thousands of sausages a day to fish and chip shops (via wholesalers) to almost nothing overnight. We always produce at full speed here at McWhinney HQ, so we were left with plenty of stock and no orders. Austen: How has that affected your staff? Kevin: Our staff are very loyal to us and a very big part of what makes our product so good. I protected them on full pay, with the aid of furlough, until such a time we move back up to full capacity again. We are now working again with a skeleton staff as shops start to open to ensure availability for shops across the UK – we stand ready and able to restock shops again. Austen: How was the bank in helping with your bridge loan to help fund this payment for staff etc? Kevin: Not great. I had to assume I was going to pay all of our suppliers and staff for three months and assume no one would pay McWhinneys (worst case scenario). This was a large sum to borrow at a very uncompetitive rate. Austen: What have you done at the factory in order to guarantee the safety of your staff? Kevin: Many things. We have taped off areas in the factory to ensure the correct distancing measures are in place. In the canteen one person only uses a table and staff breaks have been split for additional safety. We have even set up a system for the washroom to only allow one worker in at any time. They wear gloves under gloves, masks and faceguards, plus clean overalls every day. We also have a temperature control system in place to test incoming staff and obviously anyone showing symptoms would be sent home immediately without entry to the factory on full pay. Austen: Did you make gains with retailers (sales) as some of the other pie and meat manufacturers have? Kevin: No, our products are mainly sold in fish and chip shops and restaurants. Our RSP is quality for the right price, not something that larger retailers’ buyers are used to handling. Austen: Are you ready for the re-opening of shops on mass? Kevin: Yes, we are now working again in order to refill empty shop freezers. McWhinney’s sausages are a staple of the chip shop trade, so we expect to figure boldly in the new smaller menu era. Stock is available now so to avoid sell-outs I feel that it would be advisable for shops to order fresh stock ahead of opening. Austen: How can shops make the most of the situation? Kevin: We have to all work together and share our successes. I realise it’s not a one size fits all scenario, but there are some great things happening out there and we will all have to learn to adapt and listen Austen: What makes a McWhinney’s sausage so good on the smaller menu? Kevin: You can cook a box of sausages in around 7 minutes. Click and collect slots will need to be regimented and a product like our sausages will help to get meals out faster. McWhinney’s are made with the finest ingredients, which the majority of people are looking for especially from a treat from a takeaway meal. Austen: What was your tip for shops on the vulnerable in lock down? Kevin: There are over 1.5 million people (like myself) actually in complete lock down. We have not been allowed out for at least 12 weeks. If we could help to feed them a few days a week alongside their siblings, that is a 6 million audience right there waiting to be fed. Austen: What will be the new normal? Kevin: Social distancing, no walk ins, click and collect, & home deliveries. Thankfully, our sausages heat and travel well! Austen: Any tips on cooking a great sausage? Kevin: I am not one to teach my grandmother to suck eggs most of our customers cook our products to perfection. Unseated! 2021 National Fish & Chip Awards cancelled due to COVID-19

he 2021 National Fish & Chip Awards has been cancelled due to the current situation with coronavirus in the UK which has led to many fish and chip shops and restaurants temporarily closing. The announcement was made by competition organisers Seafish, the public body that supports the £10bn UK seafood industry. Entries for the 2021 National Fish & Chip Awards were due to open on 1 May 2020, with judging to take place in late summer ahead of the awards ceremony next January. In light of COVID-19 restrictions and the resulting closure of many UK fish and chip businesses, Seafish have decided to cancel this year’s competition, and turn its focus to helping fish and chip businesses to get back on their feet as quickly as possible. Marcus Coleman, CEO at Seafish said, “We’re aware of the huge impact COVID-19 is having on fish and chip businesses across the UK. In over thirty years of running the National Fish & Chip Awards, the industry has never faced such a difficult situation and it’s very sad that so many shops have been forced to temporarily close their doors over recent weeks. “Although we’re unable to go ahead with the awards this year, we are fully committed to supporting the UK fish and chip sector through this difficult

time. A

Are You Naughtea or Nice? The UK’s Tea Drinking Habits Under Lockdown
W
e all love a cup of tea with our fish and chips but how much are Brits drinking during lockdown? SaveOnEnergy sought to find out more about the tea drinking habits of Brits by asking 1,206 respondents about how much tea they are drinking now, compared to how much they were drinking before the lockdown. We then calculated the amount of CO2e* emitted by boiling the kettle daily. Are Brits drinking more tea during lockdown? In short, the answer is yes! In fact, the survey reveals that Brits are drinking two more cups of tea a day, on average, than before lockdown. When looking at the amount of tea Brits drank before lockdown, we found that we were producing 392 kgCO2e/year by just making tea. Some regions in the UK are drinking tea more than others. In Scotland, Wales, and the East of England, residents are drinking 5 cups of tea per day, on average, which produces a staggering 71kgCO2e/Year. We also found that residents in London and the West Midlands drink an average of 4 cups of tea a day, thus producing approximately 56kgCO2e/Year. Forgetting to boil the kettle twice per day increases the carbon footprint by 58% per year Their research has found that the majority of Brits forget about boiling

the kettle twice a day, which in a year increases the amount of CO2e drastically. In fact, when calculating how much CO2e is released after adding the two extra kettle boils to each area, it results in a whopping 934 kgCO2e/Year. This is the equivalent to more than three train trips from London to Edinburgh! Which tea do Brits enjoy the most? To find out more about the drinking habits of Brits, we also asked what assortment of tea they prefer the most. Perhaps to no surprise, English Breakfast tea (with milk) comes on top. What are the UK’s favourite types of tea? English Breakfast tea (with milk) – 47% Herbal tea – 24% Black tea – 13% Green tea – 9% (Austen’s Favourite) Fruit tea – 7% Which UK cities love tea the most? While tea is probably the one of the most popular drinks in the UK, we wanted to find out which cities love tea the most. We asked Brits “do you drink tea on a daily basis?”, to identify which cities have a cuppa most frequently. We can reveal that the top 5 most tealoving cities in the UK are as follows: 1. T. Quality launches its on-line ordering system early due to the Corona Virus T. Quality was planning to launch its online ordering system in May but due to the current climate and after vigorous testing by employees and customers it is now available and up and running.

ebbie Reeve Crook, T. Quality Marketing Manager said: Our customers were asking for the ability to order online and so we listened. To produce such a complex back-end system that is intuitive and easy to use for the customer was the hardest part, but finally we are delighted with the outcome. We understand that offering an online ordering facility is how a lot of our customers wish to order as many are open outside the traditional working day. During these difficult times T. Quality are keeping the lorries on the road and the Click and Collect service open. They are delivering to all their regular customers and with the introduction of the new Government guidelines, will also include pubs and restaurants that have introduced a delivery service rather than closing entirely. “We are encouraging our customers to order online, and the ordering system will show what products are available. Our Call and Collect have seen a massive

Chip-Pie Pledge! Pukka gives ongoing support to help fish and chip shops deliver pies to the people

ukka, the UK’s favourite fish and chip shop pie brand, is offering a helping hand to fish and chip shops with free marketing support. Chippy Chat Publishing Editor, Austen Dack, takes a closer look. When I learnt that Pukka is helping fish and chip shops with home deliveries or call and collect services, I wanted to help spread their message. “The Great British chippy is part of the fabric of the nation and they’ve always been at the heart of our story,” explains Pukka’s General Manager, Isaac Fisher. “That’s exactly why we’ve launched a campaign to help chippy owners continue to feed the nation. “We have created free posters that can be personalised for chip shop fronts, communicating home delivery and/or call and collect services. Plus, for the first 50 chip shops that contact us, we’ll run social media ads specifically targeting nearby communities to spread the word, helping to bring the People’s Pie and chips to the nation whilst driving sales for local businesses.” One of the first chip shops to take up Pukka’s offer of free support was The Stardust Fish and Chip Shop, in Hopton, after launching a delivery service via JustEat. In just one week, the personalised social media adverts reached over 80,000 people in the local area. Gary Costar, Owner of The Stardust Fish and Chip Shop, says: “The Facebook advert was great for driving awareness of our new delivery service with local residents, and it brought in new customers who hadn’t been to the shop before. What’s more, it led to over 1,500 clicks through to our website and a 50% increase in delivery orders.” Pukka is continuing to provide free support to fish and chip shops across the UK to make sure there are more success stories like The Stardust. “We’ve been working with fish and chip shops since 1963 so it’s only right that we step in and do the right thing,” adds Fisher. “We’re encouraging every chippy offering home delivery or call and collect services to get in touch to benefit from our free marketing materials and social media support so that together, we can make sure people continue to tuck into the nation’s favourite pie and chips.”

Unselfish Act! UK Fisheries’ donation ‘will help Humberside people through Coronavirus crisis,’ charities say
A
huge donation of delicious frozen fish will help feed people in the Humberside region for months, local charities have said. UK Fisheries, the Hull-based operator of Britain’s distant-waters fishing fleet, has responded to the pressures faced by charities amidst the Coronavirus crisis by donating a total of 1.2 tonnes of frozen cod to food redistribution charity FareShare Hull & Humber and Emmaus Hull and East Riding. The donation of over 7,000 standard 170g fillets was transported free of charge by Yorkshire food wholesaler Turner Price, making this a local team effort which will help to feed hundreds of vulnerable people in the region over the weeks to come. FareShare and Emmaus particularly welcome the food donation at a time when fish is a seasonal favourite. Jodie Colgrave of FareShare Humber & Hull, which distributes food to 128 charities and community groups throughout the region, said: “FareShare is committed to ramping up its support during the COVID-19 crisis, providing vital food supplies each week to charities and schools across Hull and the wider area. We welcome the cod donated by UK Fisheries, which is needed now more than ever and will make a big difference for the projects and vulnerable people we serve.” Alex Slater of Emmaus Hull and East Riding, which supports formerly homeless people to help them get back on their feet again, said the fish, caught in sustainable waters in the Barents Sea by UK Fisheries’ flagship vessel Kirkella, were

a very timely gift: “We are so very grateful for the incredible delivery of fish from UK Fisheries. We house 30 companions, and this amount of fish will give everyone a meal once a week for 16 weeks! During the retail shutdown our shops have been forced to close and this is a huge part of our income gone so to receive such a donation means a great deal. Thank you to all on Kirkella!” Jane Sandell, CEO of UK Fisheries, added: “The Humberside community has always pulled together and difficult times, and this is no different. Our company and crews have deep roots in the region and so we’re happy to be able to lend a hand.” The donation, which was filleted and frozen at sea within minutes of the catch and can be stored in perfect condition for many months, was welcomed by Emma Hardy, MP for Kingston upon Hull West and Hessle: “This donation is a wonderful act of kindness from UK Fisheries, I was honoured to be a guest on Kirkella last September, and it just goes to show that with us all working together in Hull we can make a huge impact on people’s lives. “Delivering sea-fresh, filleted cod to FareShare and Emmaus just before Easter must have been a delight. I know how hard everyone involved with FareShare and Emmaus are working during this difficult time, and to receive this amount of food would have helped their work immensely. he Covid-19 pandemic has impacted us all in ways we never thought possible and brought with it a multitude of consumer restrictions and behavioural changes, many of which will evidently stick, lockdown or not. The Norwegian seafood industry, which is the second largest seafood exporter in the world, has been fully operational throughout the lockdown, being classified a critical function of society. But as the globe starts to emerge from the heavy clouds of the viral outbreak, many producers and end users are faced with a very different marketplace than only two months ago. We now find ourselves in a critical period to navigate in order to return to as near normal as possible.
Together we must prepare for new consumer behaviours The pandemic has caused undeniable shifts in consumer behaviour and brought about changes to people’s eating and shopping habits that are likely to last far longer than any lockdown. New customers are now accustomed to online shopping, home cooking and meals around the table are enjoying a resurgence and consumers are opting for healthier and more environmentally conscious options, whilst also turning to 27

hearty dishes for comfort. What does that mean for seafood and the Fish & Chip sector itself? It’s certainly hard to believe that the nations favourite dish will be off the menu with its numerous citings in post-lockdown bucket-lists. Fish & Chips is comfort food at the highest level – the very best of British! But there are also learnings and opportunities to grasp for reopening. Perhaps there is a need for diversification, for example providing healthy and more budget-conscious options and continuing, or establishing, a takeaway initiative for those who don’t feel comfortable eating out of the home or simply enjoy the comfort of their own dining table. Agility and understanding the consumer will be key to successful reopening. Industry and global trade have proven resilient in crisis Overall, Norwegian seafood exports to the UK have been running relatively smoothly during the Corona crisis. All areas of the Norwegian industry and local processing partners have been operational during lockdown, including food safety authorities and vital research work which will form the basis for future catch predictions and suchlike. Strength lies in strong relationships and positivity for the future As the UK curbs the spread of the virus, there will obviously be many hurdles to overcome but we can start looking to the future. It is crucial to maintain the valuable, collaborative relationships that you hold with your suppliers and work together to adapt to this new normal. There is no doubt that the aftermath of this pandemic will be felt for a long time, but this industry is resilient. New Zealand fish and chip shop has come to a teen's aid after he ordered a McDonald's McChicken burger via Uber Eats, only for it to arrive with just the buns. A 15-year-old local boy had decided to treat himself to the popular takeaway after the country came out of level four Covid-19 lockdown. The teen was eager to eat after his meal was dropped off but when he opened the bag, all that was in the burger box was two buns and no fillings, the family claims. "It's bizarre, who would send a burger without the chicken? I could understand if they got the order wrong, but this one had nothing in it," she said. We never usually order McDonald's but because of the lockdown situation my son thought he'd treat himself. He ordered it through Uber Eats. I know it's not their fault as the bag was already sealed.” Unsatisfied at what was delivered, Tereza's boy went down to the Fish and Chippery on Richmond Rd to order his chicken burger and chips while she vented her frustration on social media. The Fish and Chippery had caught wind of Tereza's son's plight, and refused to let him pay for his meal, instead offering it to the 15-year-old for free.
Tereza said it was such a lovely and kind act, especially with local business struggling. “We went to pay and the owner said no, the child won't be without food for dinner and gave the order for free. They gave my son a chicken burger and chips and refused to take any payment. It was so lovely what the Fish and Chippery did for my son. We live in such a great community where everyone helps each other out." Tereza told the Herald she laid a complaint the same night, and the following day received a response from McDonald's apologising for the error. The Grey Lynn mum said McDonald's informed her that they will look into the matter and respond within seven working days. McDonald's has been so popular around NZ, more than 300,000 were sold on its first day back. In Rotorua, all three McDonald's branches have been forced to close until 9pm this evening after being "eaten out of stock".

To celebrate the launch, the first 100 people to order from Twisted London’s new Kings X site via Uber Eats received an extra free burger with their meal, as well as a free can of Metroland IPA from local London craft brewery, Two Tribes. Based at Tileyard, usually a thriving hub for the music industry, the new Twisted London site will not only be offering delivery but will also offer counter service for the first time since Twisted London launched, when lockdown is lifted and restaurants can operate safely once more. The menu offers the full range of Twisted London’s much talked about items including the popular Money Shot and Hashtag burgers as well as its vegan range, which includes the classic KFV, as well as the new ‘Hot Vegan Miami Style’ featuring the Miami Burger - a hyperrealistic tasty chicken substitute. The delivery radius stretches far beyond Twisted London’s first site in Bethnal Green, allowing customers within a 2.5 mile radius of Kings X and based in areas such as Angel, Camden, Stoke Newington and Finsbury Park to get a taste of its food. Since lockdown began, Twisted London has been working hard to feed customers as well as the city’s frontline health workers, partnering with DeliverAid to deliver fresh hot meals to our NHS heroes, whilst also supporting the charity Meals For The NHS by promoting its #MakeDonateNominate campaign. few metres away, a chef was standing and handling huge fish cookie dough, which was soon transformed into small round cakes for sale in the store’s fish counter. The perfect lunch drinks Salt and Pepper both wanted to indulge in Chablis and sophisticated ginger beer - inspired by a their neighbour who seemed to be enjoying himself. But after the waiter’s comradeship and almost insistent “a couple of beers, or?”, It was impossible not to resort to the round, small glasses of golden brown, “honest” pils from Frydenlund.

THE PERFECT CRUNCH There was plenty of good things on the menu - mussels, king crab, oysters - but the choice fell on two classics: fish and chips and fish soup. The orders were prepared in an open kitchen - so that one could witness the chef’s trusty deep frying of his own lunch. It stood on the table after just over ten minutes. After two slurping spoons, Salt was more than convinced. The creamy soup, with the power boiled in onions, halibut, cod and turbot, was brilliant - plenty of salmon, halibut and mussels as well as a fresh and good acid / sweetness balance. Pepper was no less pleased with the extremely crispy fish, which split with a perfect crunch from the first pruning but which was still juicy and in the right consistency on the fork. The potatoes needed no more salt and came with a home-made remake and a sweet pea puree - in abundance. “This is the best fish and chips I’ve eaten in Norway,” Pepper said. - Everything on the plate is correct.
