Sweet & Sour Tofu

Shockingly easy to make, this delicious vegan sweet-and-sour tofu is a guaranteed hit at family dinner and makes for fantastic leftovers too!

Ingredients 2 blocks firm tofu 1 bowl of cornflour Sesame oil 2 white onions 3 bell peppers 3 cloves garlic 1 tin pineapple chunks 8 tbsp brown sugar 2 tbsp ketchup 1 tbsp sriracha (or other hot sauce) 200 ml white wine vinegar Splash of soy sauce (Optional) Sesame seeds and spring onion, to garnish

Method Chop tofu into rough chunks and coat in cornflour. • Add to a pan with enough sesame oil to half-cover on a mid-low heat. • Chop onion into simliarly-sized chunks and dice garlic. Add to the pan. • Chop peppers into simliarly-sized chunks and add to the pan. • Fry until tofu is lightly browned and onions are translucent. • Add the tinned pineapple, chunks and all. • Add sugar, ketchup, soy sauce, and sriracha, stir well, and add enough vinegar to cover halfway. • Raise heat and simmer until thick and sticky.

Serve with rice and top with sesame seeds and chopped spring onions.
