A Hearty Hello and a Warm Welcome... from Wimborne Minster Chamber of Trade - your very own local Business Community Forum A dedicated team of volunteer committee members have been working to re-work, re-brand and re-vitalise the Chamber of Trade, which has served the town for nearing 60 years. Recognising the economic difficulties facing the country and our area, the team have been determined to review the current situation and make adjustments accordingly.The change of name in the new year to Wimborne Minster Chamber of Commerce reflects the fact that we intend to be all inclusive, we would like to encourage all businesses in our local area to enrol. Our revised mission statement will read:‘The Chamber will seek at all times to assist in the creation of a sustainable business environment in which all retailers, manufacturers, professionals, service providers and others... can become established and thrive in the historic market town of Wimborne Minster and its surrounds’. Re-establishing close links with the Town Council and East Dorset District Council is a priority, as is developing ideas alongside the BID team (Business Investment District) to ensure tangible results.

During the meeting held in February 1956, the committee discussed the merits of producing a Town Guide, to contain maps and good quality photographs, and members were asked to support the guide by taking up advertising. On turning more pages, a wonderful photograph was uncovered of a Carnival Parade pictured in the High Street, celebrating the Coronation of Queen Elizabeth II in June 1953! - with Chamber float. Your team of enthusiastic committee members are as we speak completing a trial production of the 2012 Town Guide. It is hoped to produce a bumper edition with updated format and increased circulation. How apt it is that, some 60 years later with the exciting re-launch of the Chamber, we find ourselves once more celebrating with the Queen by way of her Diamond Jubilee.

The year 2012 may yet see the start of the lifting of the gloom as the country hosts the Olympic Games. It is also the 60th anniversary of the Coronation of Her Majesty Queen Elizabeth II.

We recognise that key to the success of the new Chamber of Commerce will be open and accessible communication with you, the businesses of our town. With that in mind, could we ask that you let us have your thoughts and suggestions to help shape the Chamber and its activities?

Salt Crust 500 g Coarse sea salt (not fine salt) 150 ml Water 2 Egg Whites 1 tblsp Ground juniper berries 1 tblsp Ground star anis 1 tblsp Ground cinnamon 1 tbisp Ground black pepper 400 g Plain Flour

29 Creamed Horseradish 4 tblsp Crème fraiche 1 tsp Dijon Mustard 1 Lemon 1 tblsp Freshly grated horseradish or in a jar Method 1. To make the salt crust, add the salt, egg white, water and spices in a bowl (keep a Jun Tanaka, Executive Chef small amount of spices to the side). Slowly add the flour little by little and work at London’s Pearl Restaurant using your hands to form a dough. 2. Rest the dough for one hour then roll out to ½ cm in thickness. 3. In a very hot oiled pan, sear the venison all over. Roll in the remaining spices and place venison on the salt crust. 4. Cut a cross in the salt crust and gently fold the edges around the venison. Flip over, place in an oven proof dish, make a small hole in the top of the salt crust and cook in the oven for about 8min at 225 C. To test the doneness, insert a metal skewer into the hole at the top of the salt crust and leave for 10 seconds. Place the skewer on your lips and it should feel warm (for medium rare) 5. To roast the potatoes, peel them first and in a very hot oiled pan start to colour the potatoes. Do NOT season at this point as the potatoes will stick to the pan if you do. In our community Swimathon Success

Over 150 swimmers took part in the annual Wimborne Rotary Swimathon which has moved to the new swimming pool at Canford School Sports Centre. The total amount of money pledged on the day was £5474 and this will increase when Gift Aid is added to it.

The Living River

Even in town I catch a flash of electric blue as the kingfisher zips past. I know that the otter has left its calling card on the bridge nearby and under rocks and stones in the river hides one of Britain’s rarest creatures, the native white clawed crayfish. Here, in the heart of Wimborne Minster, flows the River Allen, just before it joins with the Stour. The crystal clear waters have made their 10 mile journey through chalk hills from Wimborne St Giles and on the way provided a home for an incredible array of plants and animals. Sadly though, the most iconic and endearing river animal is almost nowhere to be seen. Wind in the Willow’s Ratty is only just clinging on in the River Allen. A glimpse of the water vole’s blunt nose, flattened ears and short hairy tail, or the characteristic “plop” as one enters the water, are a very rare privilege. A closer look at the river reveals years of man’s modifications. All along the river valley, mills, weirs, drainage, dredging, straightening and abstraction have taken their

toll on habitats. Alien invaders like the American mink and signal crayfish, as well as plants such as Himalayan balsam threaten our local wildlife.

Dorset Wildlife Trust wants to look after this precious Dorset river by enhancing and reconnecting the vulnerable habitats. We are teaming up with local landowners, fishing syndicates and partner organisations to bring back characteristics such as shallow clean gravels, banks with lush vegetation and wet floodplain meadows. Not just water voles will benefit but other wildlife too, with more food and spawning sites for brown trout, salmon and other fish like bullheads and brook lamprey, and better wet grassland for birds such as lapwing, redshank and snipe.

 

Winter Photography Winter is a time when many people do not consider going out and about with a camera. Cold, wet, windy conditions are not necessarily winter weather though. Just look back at last summer! Colours are often bright and vivid particularly on calm days with lots of blue sky, or after rain.These are wonderful conditions for getting out; getting some exercise and fresh air and coming home with some stunning images, so always carry a camera. Subject variety is there with floods, frost and snow. Reflections in water, sunrise and sunsets, even silhouettes are all worth tackling. The advantage of winter is that you don’t have to get up in the middle of the night to capture those wonderful early rays. Technique - The illustrations this month show a variety of both subject and technique. The point-to-point horse race needed a fast shutter speed to capture the action and to freeze the drops of water. Use ‘action’ mode on your camera or manually set the shutter speed to as fast as possible. Note the panoramic format to cut out uninteresting foreground and background. Two tree pictures with very different techniques, one of snow covered conifers where two large trees frame the picture and giving a sense of depth and distance. The other picture uses a diagonal composition and is converted to black and white to emphasize shape, tone and texture. Water comes in many forms during winter. The reeds in frozen water reflecting the blue sky is panoramic and uses minimalism. The silhouette emphasizes strong shapes. The riverbank scene combines mist, snow and reflections. When faced with this type of situation, take plenty of photos of different parts of the scene using wide angle, telephoto, as well as landscape, panoramic or portrait format. Chances are the conditions won’t last long so be ready to grab the photos while you have the opportunity.

I had a customer recently who ordered a pair of hobbles from my web site (horsebitsdorset. co.uk) and 3 days later she ordered another pair, so I phoned her to make sure this was not a mistake, she wanted both pairs because she has a horse that objects to being clipped and tries to kick her, so she hobbles him so he can’t kick (hobbles are two pieces of padded leather with a link between that you tie around your horses’ legs so they can’t walk far or kick). I think this is a great idea - many people think their horse will panic if they try hobbles; I have used them on all my horses including my Lipizzaner, he never objects and my young Friesian is just getting used to them - at first she tries to bunny hop but soon gets fed up with that and just takes small steps. Charities Fair Raises over £4,000

35 Local Charities and Organisations, manning 42 tables took part in the Grand Charities Fair organised by Wimborne in Bloom and held in the Allendale Centre on 12th November. Between them they raised over £4,000 for the various causes they represented. Stalls included Wessex Autistic Society, Parkinson’s disease, Streets Meadow, and Lewis Manning Hospice whilst the Town Mayor Councillor Robin Cook, who opened the Fair, had a stall raising money for his Charities, the Priest’s House Museum and the Allendale Community Centre. “We had around 700 visitors during the day”, said Anthony Oliver, Chairman of Wimborne in Bloom “and we hope that it gave the various Charities and Organisations represented an opportunity to publicise themselves”.

Wimborne in Bloom itself had a successful table with four Hampers as prizes and also the proceeds from the entrance money. Together these raised over £1,500 thanks to Barclays Bank and their matched fundraising Scheme under their work in the Community Programme, which doubled the amount raised by the Hamper Raffle. Two of the four Hampers were generously donated, one by Vines Close Farm and the other by Edwards, Estate Agents. Next year’s Charities Fair will be held on Saturday 10th November 2012.

1935 The Japanese motorcycle industry is founded as a result of Harley-Davidson licensing blueprints, tools, dies and machinery to the Sankyo Company of Japan. The result is the Rikuo motorcycle.

Joe Petrali and his Harley-Davidson peashooter win all thir teen of the American Motorcycle Association National Championship dirt track races. Petrali breaks four records in the process.

1936 Harley-Davidson introduces the EL, an overhead valve, 61 cubic inch powered bike.With increased horsepower and bold styling changes, the motorcycle quickly earns the nickname of “Knucklehead,” due to the shape of its rocker boxes. The same year, the Motor Company introduces a 80 cubic inch side valve engine.
