Rhubarb Sweet Bread with Streusel Topping By Dawna Donohue I have used this recipe many, many times and it is a favorite of mine. This bread has a nice tart-sweet taste and it easily converts into giant muffins also.
Ingredients:

1 ½ cups brown sugar ⅔ cup vegetable oil 1 egg 1 cup buttermilk 1 ½ cups all-purpose flour 1 cup whole wheat flour 1 teaspoon baking soda ½ teaspoon salt 1 ½ cups diced rhubarb 1 teaspoon cinnamon Streusel Topping: ½ cup brown sugar ⅓ cup flour ¼ cup butter ½ cup chopped walnuts 1 teaspoon cinnamon

Grand Mound farmer John Kesting supplies fresh vegetables to various farmers markets in Lewis County. He offers helpful advice for keeping your produce fresh. “The main thing is to buy local. You’ll never really know when the produce was picked, how far it has actually traveled to get to the store, or how much time it has spent on the shelves,” Kesting explained. Tip: When planning weekly meals, eat what will spoil first: asparagus, broccoli mushrooms and corn; beets, carrots and onions will last much longer; zucchini, lettuce, peppers and spinach fall somewhere in the middle of that range.
