Spring into action
Many things have happened during the last quarter, which could be pretty overwhelming. As we leap into Spring, I hope it will come to a conclusion and be ready for a cheerful quarter filled with events. This issue of the magazine is packed full of news and information that we are eager to share with you. The Chung Wah Association buildings have been under a dust cover of renovation.
Lesley WONG Administration Officer and Project Coordinator, introduces the renovation work in our feature article. The Lion Dance Troupe, who seems to be missing in action, were busy under-going training in Malaysia and subsequently winning awards in overseas competitions. More detail can be found in the Chung Wah News section. The third Annual WA Chinese Guzheng festival was held, with the highlight being the one hundred Guzhengist Grand Ensemble. Chung Wah has more exciting events coming up soon, hope to see you at some of them.
We still feature our regular columnists, Mr LEE and Dr FU who have kindly shared with us both Western and Eastern Medical points of view on the after-care of post-COVID infection. The Chung Wah Association has been working hard to ensure the welfare of the community is looked after. In the last quarter, with the support of the Western Australian government, we have achieved a few milestones.
The capital grant received by Chung Wah has been utilised to fix and upgrade the Chung Wah Hall in Northbridge and the Balcatta Cultural Centre. Thank you for the support from the State Government via the Office of Multicultural Interest for providing the funds for this essential work. More information can be found in this issue of Chung Wah Magazine.
The 2023 Chung Wah Annual General Meeting was held at the Balcatta Cultural Centre on 22 October from 2.30pm. A hard-copy of the Chung Wah Association Annual Report is available from the Administrative Office and a digital version is also available from the Chung Wah Website for your reference.

With all the paperwork done and having renewed the Development Approval and Building Permit for another two years until January 2024, time is running out for the Chung Wah Autumn Centre Board of Management. They have been working hard on strategies to raise as much funds as possible to at least get the project started. In need of funding to commence the foundation work, chairperson Doreen CHIN has been engaging with local and international philanthropists for their kind assistance. The Chung Wah Chinese Orchestra organised the 2022 GuZheng Festival in Western Australia. An amazing folk music concert was held at Hadley Hall in the Methodist Ladies’ College on 2 October 2022. The renowned A Hundred Guzhengist Grand Ensemble took place at Forrest Place on 16 October 2022, making it the largest Chinese Orchestra event in Western Australia.
The Chung Wah Lion and Dragon Dance troupe have been to Malaysia for lion dance training and ended up entering a lion dance high poles competition. Eleven members under the leadership of Ben LIM, toured the Malaysia Peninsular for nine days in September.

In December this year, Australia will celebrate the fifty year anniversary of the diplomatic relationship with China. Chung Wah will host a concert to celebrate the fifty years of friendship, on 10 December 2022 at the State Theatre.

The Chung Wah Association 2022 Annual General Meeting for members was held on 22 October 2022, in lieu of the initial date of 15 October that did not have enough quorum to commence the meeting. A total of 22 registered members attended the meeting.
In the President’s address, Chen TING thanked the Executive Committee, together with the office staff for their hard work over the past year. He highlighted the support from the Western Australian government in providing the Capital Works Grant, which was used for essential repairs and upgrades of Chung Wah’s premises and assets, to benefit the community. He specially extended his thanks to Project Co-ordinator, Lesley WONG for her dedication in overseeing the renovations.
In the absence of the Honorary Treasurer due to COVID infection, the financial report was presented by Honorary Secretary, Jen Nie CHONG. For the year ended June 30, 2022, Chung Wah Association posted an operating surplus of $955,194, an increase of 22% compared to the 2021 surplus of $785,430. The good performance of Chung Wah Association is foremost due to the government’s support for Chung Wah Association and the efforts of all members and the management team of each division. The overall revenue of the Chung Wah Association was $13,721,054, an increase of 16 percent compared to the previous year’s $11,842,045. As there was no other business, the meeting was closed at 2.52pm.
Mr James CHONG, Trustee from the Council of Elders and Chung Wah Life Member, congratulated the Executive Committee team for a job well done for 2022, and would like to see continuity in the year to come. Honorary Administrator Doreen CHIN also praised the team, and commented that the congratulatory message should be documented in the meeting minutes, even though it was made after the meeting closed.

Many thanks to all the helpers and dancers, especially dance intructor Lay Choo , for decorating and organising the impromptu cultural celebration.

Chung Wah Lion Dance Troupe Malaysia Tour
The world of dragon and lion dance activities have resumed. Chung Wah lion dance troupe travelled to Kuantan, Malaysia in September for advanced high pole training. Three weeks before the departure we were asked to participate in a high pole competition as well as various performances in Malaysia. I am proud to say this lion dance troupe has created history for the Chung Wah Chinese Community and for Western Australia. With limited preparation the troupe competed in their first high pole competition in Taiping, Malaysia and finished in 9th position. The competition was against twelve top international teams from Malaysia, Singapore, Thailand, Vietnam and Indonesia. High pole performances were performed in front of over 1,000 Club Med members and over 10,000 temple members in Kuantan, Malaysia. We received a lot of applause and recognition from Malaysian government officials, event organisers and world lion dance masters and VIPs. Surprisingly, we met a Taiping government official who is the owner of the Morley Village Shopping Centre. The team will aim to compete at a higher level to promote our city Perth, Western Australia to the whole world.

In October 2020, the State Government launched the Community Capital Works Fund programme, which is a one-off grant through the Office of Multicultural Interests. It was part of the Government’s $5.5 billion WA Recovery Plan from the impact of the COVID-19 pandemic.
The grant was open for Western Australian CaLD community associations or community service organisations to apply. It supported projects that maintained, refurbished, or extended existing buildings that are owned and operated by community associations. Subsequently, it created opportunities for local businesses, such as architects, engineers, builders, construction trades, and suppliers.
Chung Wah Association’s grant application was successful. The Association was granted $150,000 for Chung Wah Hall in Northbridge and $80,000 for Balcatta Cultural Centre.

The Chung Wah Hall project started on 16 August 2021 and was completed on 29 April 2022. However, there was a slight delay starting the Balcatta Cultural Centre project due to unforeseen circumstances. It was started in 24 July 2021 and is finally completed now.

In October, Perth is filled with an artistic atmosphere! The 3rd WA Chinese Guzheng Festival finally kicked off on 2 October. This event was hosted by the Chung Wah Chinese Orchestra, co-organised with Methodist Ladies College, Perth Huaxing Art Troupe, Ziyinfang Studio, and Western Guzheng College Western Australia Zheng Art Troupe. The following organisations also supported it: Christ Church Grammar School, Oberthur Primary School, Chung Wah Chinese School Leeming, Muso Music Academy, Aohua Tourism, IQI, Eternity Tile bath and home, Ausvital Nutrients, Murdoch University, Global Lithium, Zijing Mining, Perth Post, Perth Today, Australian Times, Global Business Australia, Western Australia, Voice of China. The Guzheng Festival is aim to promote the art of Chinese folk music, providing Australian friends with the opportunity to experience the charm of folk music.
At 5:00 p.m. on 2 October, the first part of the Guzheng Festival (National Folk Music Concert) was held at Methodist ladies’ College. Outstanding from previous concerts, this year’s concert was more worth attending, not only adding many new elements but also presenting new repertoires of the concert director’s different styles. To prepare for this event, Ms WANG Huilan and the actors prepared well for the concert through months of practice and rehearsal. The theme of this concert is a quote from ‘Mencius’: ‘It is much more joyful to share the joy than enjoy alone.’ This means their music doesn’t have national boundaries, regions or ages. As long as people love music in their hearts, they will enjoy it and have a lot of fun.
The national concert officially started with ‘Welcome to the Country Ceremony’, followed by the well-known national classics ‘Jasmine Flower’, ‘Spring and Autumn, ‘Blue and White Porcelain’, and Konghou performance ‘Loulan Chasing Dreams’ by Teacher HUANG Zirui. The beautiful melody from Konghou seems to take the audience to the mysterious Silk Road in the Western Regions! Then there are Beethoven’s classic ‘Ode to Joy’ played by the guzheng ensemble, and “Peacock by the Lake” by Hulusi.
The beautiful performances continued to the second half part. First, several guzheng teachers played the song ‘Butterfly and Blue’. Then, Teacher WANG Huilan played ‘Fishing Boat Sings Evening’, while Teacher DENG Naiqiand danced to the music. The professional dance techniques perfectly matched the
rhythms of the guzheng which surprised the audience. Immediately afterwards, Teacher ZHOU Yongjun and Teacher ZHU Li sang the song ‘Cunheart’ together. When the passionate melody started, the hearts of countless Chinese friends living overseas cheered up! Finally, Teacher CHEN Xueyan and Pianist CAI Yijing performed the guzheng concerto ‘Yunshang v.’, which moved the audience again.
In addition to the national musical instruments, the concert featured the piano piece ‘Ode to the Yellow River performed by Adien, a child from the MUSO Conservatory of Music, and the orchestra. This piece has a far-reaching artistic conception. It was a challenge for Adien, a nine-year-old boy born in Australia, to interpret this piece well, but he did it with his superb piano skills!
Then came the highlight of the concert, the special guests of the African Reunion Band and the Chinese Orchestra performed the Manilo music songs ‘Yelo Ice’ and ‘Big Maroon’. It was the first time for the Chinese Orchestra to cooperate with other bands on the stage of a concert, which was an innovation. It shows and embodies that Chinese folk music is not minority literature and art and that folk music can also play different styles and modes like Western instruments. It is great to see the Chinese orchestra’s development and breakthrough by integrating into the music styles of different countries. We hope that this kind of cooperation with music from different cultures can bring Chinese music to the local community and introduce other music cultures to the Chinese community.
As happy times fly, the concert ended with the Erhu songs. The heart-pounding ‘Oriental’followed the finale the cheerful ‘Horse Racing. The concert ended successfully with warm applause from the audience!
The concert’s success is inseparable from the continuous rehearsals of the actors and the hard work of the staff over the past months. They presented this high-quality artistic feast to the audience! Thank you very much for the recognition of this concert and the support of the Chinese Orchestra. We will continue challenging ourselves and bring you a different art feast next year. Here, I want to thank all the friends who supported this Guzheng Festival! At 4 pm on the 16th of this month, the second session of the Guzheng Festival ‘Hundred-person Guzheng Ensemble’ will be held at Perth Square, which will be more exciting.

In mid-October, the 3rd Western Australia Guzheng Festival has entered the final stage - ‘A Hundred Guzhengist Grand Ensemble’. Everyone is looking forward to attend the most exciting session! The performance venue was located in Forrest Place in the CBD, which allowed more Australian local friends to access to the charm of folk music and guzheng easily. This also presented the theme of the Guzheng Festival, ‘It is much more joyful to share the joy than enjoy alone.’, meaning that there are no national boundaries, regions or age divisions when people who love music experience music and art.
This Guzheng Festival is hosted by the Chinese Orchestra of the Chung Wah Association, in collaboration with Methodist Ladies College, Perth Huaxing Art Troupe, Ziyinfang Studio, Western Australian Guzheng Academy, Western Australian Zheng Art Troupe and other performing organisations. The Guzheng Festival is inseparable from the support of other organisations including Christ Church Grammar School, Oberthur Primary School, China Dawn Chinese School, Aohua Tourism, IQI, Eternity Tile bath and home, Ausvital Nutrients, Murdoch University, Global Lithium, Zijing Mining, Perth Post, Perth Today , Australian Times, Global Business Australia, Western Australia, Voice of China. We appreciate all the organisations providing help and support in the event.
At 4:00 pm on 16 October, there was crowded with people in the Forrest Place square in the CBD of Perth. The scene was extremely spectacular. Many audience, including but not limited to the elderly and younger children, came much
earlier and waited for the guzheng performance, which showed the high enthusiasm of the people for this Guzheng Festival! This Guzheng Festival attracted the largest number of audience ever based on the rough statistics.
To make sure the foreign friends who came to watch the performance for the first time better understand the Guzheng Festival, the host FENG Kaiying gave a brief introduction of the history of Guzheng. President Chen Ting of Chung Wah Association and MLC Music Director Dr. Andrew Sutherland then delivered speeches for the event. Under the leadership of three guzheng teachers, WANG Huilan, HUANG Zirui, and CHEN Xueyan, the performers involved were ready for the Hundred Guzhengist Grand Ensemble that made a grand debut in the warm applause of the audience.
The first song was ‘Battle Typhoon’, which is a full-of-skill piece. The mian guzheng techniques such as tremolo and glissando like thunder knocked foreign audiences’ socks off. Their emotions were cheered up, sometimes holding the breath and sometimes clapping the hands. The classic Guzheng songs ‘Dance of the Yao Nationality’, ‘The Fishing Boat Sings Evening’ and ‘Spring River Flower Moon Night’ were followed. Different from the previous Guzheng Festivals, this year's event not only included the performance of the Guzheng, but also invited the Taijiquan performance from the Taiji Li's Academy in Yangshifu to better showcase traditional Chinese art. Master HE Changdai leading his team, showed the
art of Taijiquan along with the rhythm of ‘The Fishing Boat Sings Evening’, which combined the image of Taijiquan kungfu with the sound of the historical guzheng music. This well illustrated the Oriental Philosophy of ‘The greatest truths are the simplest’ and ‘The greatest music has the faintest notes’, as well as the beauty of Chinese Ancient Culture! The adapted version of ‘So Many People in This World’, a very popular lyric song, was guided by the sound of guzheg and combined with the voice of children. The audiences were touched deeply by the beautiful melody. Then, the famous song ‘You & Me’ that was the theme song of the Beijing Summer Olympic Games and is well known among foreign friends. The performance of this song is to express our expectation for the friendship between China and Australia.
There were slightly stylistic differences in the following songs such as ‘Ode to Joy’, ‘A Laugh in the Sea’, and ‘Jungle Tramp’. The folk song ‘Jungle Tramp’ is very popular in Australia, showing that the guzheng can not only plays traditional music, but also music from different countries with different styles!
At the end of a Hundred Guzhengist Grand Ensemble, all the guzhengists played the impassioned ‘National Music of a Prosperous Age’, which pushed the atmosphere to a climax. The wonderful sound of the guzheng was telling the audience about the long history of oriental folk music.
The 3rd Guzheng Festival in 2022 has ended successfully. Thank you to all the friends who participated in this Festival! The sound of Guzheng being appreciated by more people and the art of Chinese folk music cutting a conspicuous figure in Australia depends on support and affirmation from the public! We will always be here and look forward to seeing all of you in the 4th Guzheng Festival to witness a new chapter of music legend together!
On Thursday 29th of September, Kevin Michel MLA arranged a sundowner event for the Honorable Dr. Tony Buti, the Minister for Citizenship and Multicultural Interests, to meet various CaLD representatives. This event has indirectly promoted the development of cultural diversity in the regional area.
The participants were from the from Chinese community, Indonesian association, Filipino associations, Indian associations, Thai community, and Australian organisations. This sundowner allowed everyone realise that Australia is becoming so much more diverse. According to Census 2021, there were 49% of Australian population born overseas; even in the remote city of Karratha, nearly a third of residents were born overseas.
MLA Michel said the government would seek to establish a local multicultural complex to provide a venue where cultural groups can meet and hold events. At present, various cultural groups in Karratha hold events by hiring venues from other organisations. However, this often limited by the function of each venue, and the costs of hiring venues and equipment had caused so much unnecessary economic pressure to the nonprofit cultural groups.
Chinese is a minority group in the local area; however, our contribution to the local community and economic development cannot be underestimated. Cultural representatives look forward to seeing the construction of the multicultural complex carried out and hoping that more local organisations will value more talents with the diverse backgrounds.

The roles of the Fair Work Ombudsman and the Fair Work Commission
The Fair Work Ombudsman and the Fair Work Commission (FWC) (previously called Fair Work Australia) are independent and separate government organisations. Both organisations regulate Australia’s workplace relations system but have different roles.
The Fair Work Ombudsman (FWO)
FWO enforces compliance with the Fair Work Act 2009, related legislation, awards and registered agreements. It also helps employers and employees by providing advice, education, and assistance on pay rates and workplace rights and obligations.
What FWO can do
• provide reliable and timely information about Australia’s workplace relations system
• educate people about fair work practices, rights and obligations
• resolve workplace issues by promoting and monitoring compliance with suspected breaches of workplace laws, awards and registered agreements
• enforce workplace laws and seek penalties for breaches of workplace laws
• enforce certain orders made by the Fair Work Commission.
What FWO can’t do
• investigate unfair dismissal and unlawful termination applications
• make changes to the legislation, awards or registered agreements
• investigate bullying and sexual harassment complaints.
The Fair Work Commission (FWC)
The Commission is the independent national workplace relations tribunal. It is responsible for maintaining a safety net of minimum wages and employment conditions, as well as a range of other workplace functions and regulation.
What the FWC does
• help employees and employers bargain in good faith and to make, vary or terminate enterprise agreements
• deal with applications relating to ending employment including unfair dismissal, unlawful termination or general protections
• deal with applications for an order to stop bullying at work
• deal with applications for an order to stop sexual harassment at work
• make orders about industrial action, including strikes, work bans and lock outs
• provide mediation, conciliation and in some cases hold public tribunal hearings to resolve various individual and collective workplace disputes
• make workplace determinations, hear and decide on equal remuneration claims, and deal with applications about transfer of business, stand down, general protections and right of entry disputes.
What the FWC doesn't do
• provide advice on entitlements under an award or a registered agreement
• enforce minimum pay and award entitlements

CYBER SCAMS
大家好. 很高兴认识您们。Hello everyone! For this issue we wanted to firstly, introduce the new team and then provide some important advice on the growing issue of Cybercrime.
The Diversity and Engagement Unit (DEU) currently includes, Sergeant Craig Clarke, Senior Community Diversity Officer Dr Umile Gwakube, Senior Constable Kamsani Mohd-Hashim and myself, Senior Constable Mike (Jerry) Sinfield. We come from a diverse range of backgrounds and enjoy working with the local culturally and linguistically diverse (CaLD) communities to provide them with assistance, advice and support. Some of our ongoing responsibilities include liaising between community members and their local police to ensure they are receiving the help they need and also raising awareness on crime prevention.
Recently, DEU have received numerous reports of cryptocurrency investment scams specifically targeting members of the Asian community and sometimes involving substantial amounts of money.
Unfortunately, these offences are on the increase and can be very hard to prosecute as the perpetrators are usually based overseas. But they can be reported to the Australian Cyber Security Centre (ACSC) via the following link: https://www.cyber.gov.au/
A recent report on Cybercrime revealed the following statistics:
• The top scams by amount lost are investment scams ($48,845,513) and dating and romance ($8,101,643).
• At the time the report was published (May 2022), the total amount lost in scams for 2022 was $72,231,217.
• There has been an 84% increase in scams since last year.
• One in four Australians have fallen victim to identity fraud. An example of a commonly used crypto scam is included below (taken from the Australian Securities & Investments Commission website).
• Investors who have been scammed are typically called or emailed by scammers with an investment opportunity, or approached by their friend, family member, or online romantic partner who tells them how they have made money online and suggests that they try it too.
• Investors typically sign up to ‘crypto-asset trading’ online and deposit funds into a trading account, either via a crypto wallet or bank account.
• Scammers encourage consumers to deposit more funds into the account.
• When an investor logs into their account, it may look as though they are making profits initially (due to fake data), but eventually shows ‘trading losses’ even though no actual trading is taking place.
• When the consumer asks to withdraw their funds, bitcoin scammers either cease all contact, or demand further payment before funds can be released.
• Often scammers are also seeking to mine personal information from victims to engage in identity fraud.
Do your research and always remember, if an opportunity seems to good to be true….. it usually is!

More than 80% of patients with COVID-19 infection have suffered from long-term symptoms (1). According to WHO, if a person whose symptoms have persisted more than three months after their first COVID-19 infection, where these symptoms cannot be explained by any other causes, it is known as Long COVID (2).
Almost 60% of Australian GPs reported that they have seen at least one patient with Long COVID (3). Unfortunately, there is no proven treatment, more than 200 symptoms (see diagram 1) have been associated with Long COVID, and many symptoms such as fatigue and brain fog are hard to measure (4).
Dr Christabelle Yeoh, an integrative GP who is also an ex-president of the Australasian College of Nutritional and Environmental Medicine (ACNEM), explains that it is a neurological disorder driven by immune factors. Despite the huge range of symptoms, we shall address the basics, such as correcting the imbalance of gut bacteria, avoiding foods that cause inflammation such as sugar, alcohol, processed food, and lastly, stress management (5).
Dr Mark Donohoe (current ACNEM president) reminds us that vaccination remains as an important first line of defence. Two recent studies suggest vaccinated people are significantly less likely to have Long COVID (6). However, a balanced and healthy diet, a healthy lifestyle, adequate and high-quality sleep, along with exercise and mind-body practices like yoga and meditation reduce Long COVID symptoms and improve recovery. Supplementation which supports the immune function (vitamin C, zinc, and vitamin D) and supports mitochondrial energy production are also worth considering (5).

How to prevent colds and allergies in Spring
Julia FU is a practitioner in traditional Chinese medicine. She graduated from the Anhui University of Traditional Chinese Medicine in China in 1983, and has 36 years of experience.
Spring is the season during which the natural world revives and reinvigorates after the colder winter months. During spring, dormant plants begin to grow again, new seedlings sprout out of the ground and hibernating animals awake. However, amidst this, there are potential dangers of seasonal diseases. Today, I will talk about how to prevent the most common colds and allergies, from the perspective of traditional Chinese medicine combined with personal experience.
Causes: Chinese medicine believes that ‘wind’, as the main characteristic of Springtime, is usually the beginning of all diseases. If people stay in the wind for too long, they may easily get sick. Also, external pathogens such as cold, dampness, dryness and heat are often hidden in the wind that invade the human body. For spring health care, we should try to stay out of the ‘wind’. At the same time, the temperature changes dramatically in spring, and frequent rain leads to high humidity. The wind also blows suspended matter such as pollen everywhere. The factors of temperature and humidity are conducive to the rapid reproduction of mites, bacteria and mold, which infects the skin and respiratory tract of the human body, so people are prone to colds and allergies.
Prevention: Follow the below methods to significantly reduce the incidence of colds and allergies.
1. People with some knowledge of traditional Chinese medicine know that when there is sufficient positive energy (healthy “qi”), pathogens have no way to invade the body. The most effective preventive measure is to enhance healthy ‘qi’ in the body. How do you improve ‘healthy qi’? It’s important to have enough sleep without staying up late, and follow your natural circadian rhythm. Traditional Chinese medicine focuses on balancing your yin and yang. At night when yang disappears and yin grows, you should be in a state of rest and sleep to conform to the laws of the external natural environment.
2. It is advised to wear a mask when walking, exercising or going out in the morning. First, this can keep the nose warm, improve blood circulation and reduce respiratory secretions. This can also prevent pollen and bacteria in the air from invading the respiratory tract.
3. When you participate in outdoor activities or in a gathering in a crowded place, you should wash your hands before meals and try to touch your nose and mouth as little as possible to prevent pollen and germs.
4. Wear a warm jacket when going to the beach or the bush. Spring is windy, and the wind is stronger in the seaside or in the wilderness. In addition, the oceanic climate leads to great temperature changes. The strong wind and temperature difference will make you prone to catch colds.
5. Under the guidance of a Chinese doctor and based on your constitution, you can take some seasonal tonic Chinese medicines such as astragalus, ginseng, Yupingfeng powder, and Shengmaiyin to improve healthy qi and build resistance.

A Mid-Autumn Festival Greeting
May the brightest and roundest moon shine above cities everywhere. We wish you “a golden MidAutumn festival”!
Calligraphy is an elegant traditional art form. During this special season, Mr Jin created a calligraphy painting for Chung Wah Community Care (Chung Wah CC), wishing all members a delightful MidAutumn festival.
Mr Jin was born and raised in Vietnam. Many years ago, Mr Jin’s father immigrated to Vietnam from Hubei, China. Unfortunately, the immigration officer mistakenly spelt his last name wrong at the time, and it became Du. Mr Jin has a unique talent and excellent business sense. He has owned businesses in eyeglasses, watches, and jewellery. In his prime time, he also invested in the starch business. Later in life, Mr Jin enlisted in the military and entered the political world. Unfortunately, when Northern Vietnam won the war in 1975, Mr Jin’s life hit rock bottom. He lost all his property and assets and had to start from zero.
With a big loving family, tough decisions must be made in challenging times. Mr Jin has 15 children in addition to his siblings, a family total of 23. Yet, despite the paramount financial challenge, Mr Jin persevered and became a pillar of
strength for the entire family. He first sent part of his family to Thailand, then to Germany. The following year, he sent the rest of the family to Malaysia and later arrived in Western Australia. It was undoubtedly an unsettling journey with everyone separated in different parts of the world. This Mid-Autumn festival is reminiscence of the past. He treasured life deeply with an appreciation of the past and a forward-looking future in mind.
Mr Jin loved his parents dearly. He lived in Vietnam until his parents passed away in 1984 and later moved to Western Australia to be reunited with part of the family. Language and cultural barriers were the greatest challenges living in an unfamiliar environment. But once settled, he continued to conquer the world and pursue his dreams. Mr Jin opened up a Vietnamese restaurant, deli, and jewellery store. But unfortunately, his business model did not thrive.
Later on, Mr Jin decided to enjoy his retirement. He likes calligraphy and singing and has won quite a few calligraphy competitions. Under the
encouragement of friends, Mr and Mrs Jin successfully applied for the My Aged Care program and participated in community activities. They engaged in Chinese Cantonese, Mandarin and Vietnamese in the community hubs. As a result, he enjoys the new landscape and golden years of his life. We hope to continue to bring more positive impact to our seniors.
Chung Wah has been servicing the WA community since 1909, dedicated to improving the quality of life of individuals from diverse backgrounds. Moreover, Chung Wah CC has over 35 years of professional care experience helping seniors and people with disability improve their well-being and better integrate into the community. Kuih Lapis
(Malaysian Steamed Layer Cake)
Kuih lapis means layer cake in Malay. It is an everyday steamed cake sold at roadside stalls in Malaysia.
I was not crazy about this cake before I left Malaysia, but for some reason, I can’t stop thinking about it lately. Since I have a gathering over the weekend, I decided to make this beautiful cake to share with my friends.My version of kuih lapis is made from scratch using rice (instead of rice flour) and natural colouring (Ang Chow and Pandan Leaf). It tastes real good, and is all-natural.
Ingredients:
• 250g Long Grain Rice
• 15g Tapioca Starch
• 50g All purpose flour
• 400ml/1 can Coconut milk
• 600ml water
• 180g Sugar
• 1/2 tsp of Ang Chow/Red Yeast Vinesse
• 4-5 pieces of screw-pine Pandan leaves
Process:
1. Wash and soak rice submerged in water for at least 5 hours, drain the rice.
2. Grind the soaked rice, 180g sugar, 400ml coconut milk, salt and tapioca flour together to form a thick batter.
3. Divide the batter into three equal parts. Add 200ml of water to one part of the batter to make a white batter.
4. Cut pandan leaves into small pieces, add 200ml of water into a mixer and grind them into a thick paste. Sieve and squeeze out as much pandan juice as possible, and add the juice into the second part of the batter to form a green batter.
5. Blend 1/2 tsp of Ang Chow with 200ml of water and add it to the third part of the batter to form the red batter.
6. Grease a 7-inch baking tray and place it in a steaming pot over high heat for a few minutes.
7. Pour in slightly more than 1/2 cup (130ml) of red colour batter, cover with a lid and steam for 3 minutes or until the batter is set. Then add slightly more than 1/2 cup (130ml) of green mixture onto the red layer and steam for another 3 minutes. Repeat with the white colour batter.
8. Repeat the steps alternating colours until all the batters are used. Remember to stir the batter every time before adding for steaming.
9. Steam the last layer of kuih lapis for 13-15 minutes to ensure the cake is fully cooked.
10. Leave the steamed Kuih Lapis to cool completely (around 2 hours), and invert the pan to knock out the kuih. Grease the knife before cutting.

Reduce, Reuse and Recycle
The three R’s of reduce, reuse and recycling are the best strategies for protecting our environment.
REDUCE means the reduction of ‘desirable’ and ‘want’ items and keeping it simple to fill the ‘needs’. We should think twice before acquiring a new item and see if it’s essential to fulfil our needs. We often make impulse purchases on repetitive items that we’ve already had, which constitute wastage as we cannot consume the full quantity. The remainder would then become waste.
• Think when you buy multiple items because they are cheap.
• Rethink taking that brochure. A lot of information can be found online.
• Don’t take freebies unless you absolutely need them.
• Limit your use of single-use and disposable products and choose alternatives that can be used again. Bring your reusable cup; some cafes even discount when you use your cup.
• Opt for products with minimal packaging where possible.
• Refuse plastic and paper bags when you don't need them. Keep reusable bags
handy or in your car, so you remember to take them to the shops. You can also use boxes or your shopping trolley bag or backpack.
• When buying fruit and vegetables, put them into your trolley rather than plastic bags.
• If you don't read advertising mail, put a sign on your letterbox.
• Mend and repair clothing and shoes when broken instead of throwing them out.
• Buy in bulk where you can, such as buying refills for soap wash and dishwashing detergent.
REUSE means we find an alternative use or purpose for existing items that have lost their initial usage. It might be a pair of pants that no longer fits or a toy the kids are no longer interested in. If they could be reassigned to people who would still find value in them, that would again re-assign their value for a purpose. Join your local Facebook Buy Nothing page to give away items you no longer require. Some fashion brands accept second-hand clothing in exchange for a discount voucher.
RECYCLING means the changing forms of items to be re-engaged back to the production cycle: i.e. deconstructed kimono into everyday wear; plastic bottles being collected back to be remodelled into other products. Many consumer brands have engaged in such a recycling movement by using non-first-hand plastic for their packaging and clearly labelled their product as part of the advertising campaign. Check the recycling code printed on containers to see if they can be recycled.
Sometimes, two more 'Rs can be added to the three basic ones.
RETHINK can be added to the start of the list. It means we should think about the way our actions impact the environment.
RECOVER is sometimes added to the end of the list. It refers to the act of putting waste products to use. For example, decomposing garbage produces methane gas, which can be recovered and burnt to produce energy.

toner can be dropped off at your local library for recycling. Please check your local City council's website for more details.
Plastic bottle lids can also be taken to any Containers for a Change refund point. There is no refund for the lids, but they are processed to make a variety of items and are diverted from landfill.
Plastic bread-bag tags are too small for general recycling machines and end up in landfill, causing harm to our native wildlife and wreaking havoc on the marine environment. They can be recycled at https:// ozbreadtagsforwheelchairs.org.au
Aluminium foil can be recycled in your yellow bin. Collect pieces of aluminium foil such as easter egg wrappers, until they can form a ball the size of a fist. Please note that if the foil pieces are too small or light, they may get lost in the recycling process.
Makeup empties can be taken to any Priceline, David Jones or MECCA cosmetics store for recycling.

For a fun school holiday activity, take your children on tour to the Resource Recovery Group Canning Vale Centre where you can come and see exactly what happens to your waste. Free 1.5-hour tours are available to educate visitors about the recycling process and allow safe and exciting views from observation decks into the various facilities.
