Fine dining at Colonial ‘revolutionary stuff’ How often throughout your day do you wonder what’s for dinner? Roasted pork loin and mashed potatoes sound good – or maybe just a cheeseburger with fries? What if you could have your choice of freshly prepared restaurant-quality food every single day … at a retirement community? Residents of the Colonial Communities of Berkeley Square and Westover do. The communities recently broke from the traditional “nursing home” dining mold and created a culinary revolution – to offer residents tastier, fresher food options and the freedom to eat what they want, when they want. “We’re completely
turning this place inside out and upside down,” said Doug Brown, director of Culinary Services. “We’re changing the way we make food, so it’s all more exciting.” The traditional steam tables of nursing-home dining have been dropped like hot potatoes. Processed bread is toast and frozen foods have been tossed aside like bad apples. Now, the aroma of fresh-baked cookies, pies and breads wafts through the dining areas and hallways of Colonial Communities. Brown’s goal is to transform the entire culinary atmosphere at Colonial. Residents are now greeted by a person who takes their order,
and can choose from a full menu with salads, appetizers, entrees, side dishes and desserts. Cooks prepare fresh meals, instead of just heating up food. “For this industry, it’s totally revolutionary stuff,” Brown said. For the past year, Bill Lutz, president of Optimum Solutions & Strategies, has been working with Colonial staff to implement a grassroots cultural change, which is slowly occurring in residential health care communities across the country. The model is based on ideas and methods from the restaurant industry, resulting in improved food preparation and
customer satisfaction. His ideas, Lutz said, began when he first experienced the typical dining policies at nursing facilities.
Menu features food people want to eat
His goal, he said, has been to ensure residents are able to control when and what they want to eat. The implementation of the new dining services has made this possible; someone can now eat breakfast at 10:45 a.m., while a friend can begin lunch at the same time. And the food on the menu is what people want to eat. Ruth Jurrus has lived at Westover for more than nine years and has
been impressed with the recent changes. “I like the fact that we have fresh fruit all the time … . We no longer have frozen vegetables,” Ruth said. “Everything is fresh, and it tastes that way. I think it’s so much healthier. Their hamburgers are nice and juicy, and they even feature kettle chips. They make them fresh here and they’re hot when served.” Ruth also enjoys the salmon spinach pasta and chicken piccata. “These are dishes that are served in high-quality restaurants,” she said. That is how they showed their love to their families. The meal experience is more than having someone else decide where you eat and what meal you eat.
