AUSTRALIA: 13 DAY/10 NIGHT Day 1: Depart the USA Day 2: Lost to Travel Day 3: Arrival Cairns, Australia (D) Morning arrival at airport & greeted by our Professional Tour Manager. Day 4: Cairns - Great Barrier Reef/Cruise/Snorkeling Lessons - Cairns (B, L, D) After breakfast, begin our full-day excursion to the Great Barrier Reef and our cruise. Day 5: Cairns - Kuranda - Cairns (B, D) Following breakfast at the hotel, we delight in a full-day excursion to Kuranda. Travel via Scenic Train one way with Skyrail for the return. Day 6: Cairns/Community Service - Palm Cove – Cairns (B, D) After breakfast, we participate in a service learning opportunity (to be determined). Following our community service, we transfer to fabulous Palm Cove Beach and enjoy the rest of the day. Dinner together this evening. Day 7: Cairns - Gold Coast (B, D) Following breakfast and a hotel check-out, we transfer to the airport for our regional flight to the Gold Coast. Upon arrival to the Gold Coast, we transfer to our hotel for check-in and delight in dinner together. Day 8: Gold Coast - Surfers Paradise/Surfing Lessons – Gold Coast (B, D) After breakfast this morning, we transfer to Surfers Paradise and embark on a two (2) hour Surfing Lesson. Free time this afternoon to enjoy the beach and shopping. Dinner together this evening. Day 9: Gold Coast/Carrumbin Wildlife Sanctuary (B, D) Today after breakfast, we transfer to the Carrumbin Wildlife Sanctuary, having the chance to interact with Koala, Kangaroo & many other exotic Australian wildlife. This afternoon, we enjoy additional sightseeing throughout the Gold Coast. Dinner together this evening.

Day 3: Johannesburg/Dainfern College Exchange – The Cradle of Humanity - Johannesburg (B) After breakfast at our hotel, transfer to Dainfern College for an exchange where we become students for the morning. Afternoon visit to the UNESCO World Heritage Site: The Cradle of Humanity. “Mrs. Ples” & “Little Foot” fossils will transport us back 3 million years while we discover how every member of the human race can scientifically be traced back to this area of Africa. Meet our Johannesburg Homestay families & enjoy evening activities unique to South Africa with our host family. Day 4: Johannesburg – Soweto– Johannesburg/Apartheid Museum/Freedom Square Breakfast with Homestay families Gather together & transfer to neighboring Soweto. Learn about one of South Africa’s darkest times & discover the incredible influence of Nelson Mandela and his liberation of the South African people from Apartheid. Return to Johannesburg & explore the Apartheid Museum. Visit Freedom Square and the Hector Pieterson Memorial. Day 7: Pilanesberg – Johannesburg - Cape Town (B, D) After breakfast at our hotel, we depart Pilanesberg and transfer from Johannesburg to Cape Town via regional flight. Upon afternoon return to Cape Town, we visit the Robben Island Prison where Nelson Mandela spent 18 of his 27 years as a political prisoner for his fight to end Apartheid. Day 9: Cape Town/Table Mountain/American International School of Cape Town Exchange (B, D) Breakfast at the hotel. Morning hike to the top of Table Mountain. Our hike provides some of the most stunning vistas overlooking Cape Town from the summit. Afternoon Experiential Exchange at The American International School of Cape Town. Rice Cave Exploration: 4 Day/3 Night Day 1: Depart Columbia for West Virginia After a lively drive, arrive to the Organ Cave for our 2-hour historical cave tour. Check into the General Lewis Inn in Historic downtown Lewisburg. After we clean up and settle in, we enjoy a wonderful Welcome Dinner in a local restaurant. Day 2: Full Day of Cave Exploration Early breakfast before heading off to our full day of wild caving adventure at the Lost World Caverns. Lunch during our caving exploration. Return to our hotel to clean up for dinner. Dinner at local family-owned Humble Tomato for a true West Virginia Italian Feast. After dinner we will explore some of the Historic area of Lewisburg. Day 3: Hike, Cave, and Tube After breakfast, we load the bus to ride to the Rice Family Farm. Hike to Haynes Cave for our next hour-long caving exploration. Lunch following our return hike. After lunch we relax and enjoy a lazy float down the Greenbrier River, during which time we get to hear the stories of a “young Rice” about how he grew to be the amazing old science teacher we have come to love. Plenty of time to debate the difference between cut-off jeans and jorts! Return to our hotel to clean up for dinner. Dinner at local burger joint, The Asylum. Day 4: Depart Lewisburg for Columbia After a leisurely morning and breakfast, we load the bus to take the scenic ride home. Along the way home we will say a final farewell to the Organ Cave as we travel down Highway 52. This drive takes us down the majestic Blue Ridge Parkway. Lunch along our return. Our return trip gives us the time to recap all the amazing things we have learned and experienced. Day 1 – June 23: Depart Columbia for Washington, DC. This morning we board our plane in Columbia for a quick ride up to the Nation’s Capital. Upon arrival we will transfer to our downtown hotel to drop our bags and begin our adventure. Our first afternoon tour will be led by Mrs. Riley. Dinner at a local restaurant. Tonight, we tour the US Monuments in a different way…..by Segway! Day 2 – June 24: All day, All DC! After breakfast we quickly hop the Metro and head to the Smithsonian. Which one? Well… All of them! The group will decide the order of visits. After our afternoon tour, we will head back to the hotel to change for dinner. Tonight, following dinner, we see Hamilton at the Kennedy Center! Day 3 – June 25: The Room Where It Happened Following breakfast, we head out where Dr. Ruehlen will begin our day touring. Today takes us to all sites Lincoln! Lunch today will be a special treat as we visit one of DC’s historic restaurants. Our afternoon tour takes us to Georgetown. Pacific Northwest, Deschutes River Expedition: 8 Day/7 Night Deschutes River Expedition The setting for this adventure is the Deschutes River, which runs for hundreds of miles from the mountains near Bend, OR to the Columbia River. Learn the basics of whitewater rafting, as you travel in the footsteps of Lewis & Clark. Day 2-5 – July 28-31: Our Multi-day river trip begins! Today be begin our adventure and hone our skills by learning to read the currents of the river, practice paddling skills, learn swift water rescue techniques, and help guide a raft as our team navigates the roaring rapids. We explore Oregon’s backcountry, paddling through Class II – IV rapids, discovering hidden swimming holes, and hiking to cascading waterfalls while we experience the adventure of a lifetime! Over these incredible days, we will travel through a majestic landscape, and embrace learning in a wild wilderness classroom. During this time, we will actively practice the principles of Leave No Trace, river navigation, expedition mentality, plant and animal identification, and backcountry cooking – eating wonderful food we prepare. Believe it or not, we will make 5- star meals along the riverside! Day 6 – August 1: Return to the Lodge Today we return to the Riverside Lodge for dinner, showers, a campfire, and competitive lawn games. Day 7 – August 2: Majestic Mt Hood After breakfast we take off for a full day excursion to Mt. Hood. Arrival Rome/Pizza Making Lesson Arrive in Rome and meet our Professional Tour Guide. Check into our hotel Afternoon Pizza Making Lesson: Learn the secrets of a Roman pizzaiolo during this hands-on, small group lesson in a rustic pizzeria in one of Rome’s typical neighborhoods. Meet at the pizzeria where we don our apron and begin the theatrical lesson on the proper base, choices of toppings and cheeses and preparation techniques. Then we begin work on our own pizzas and pop them in the wood-burning oven. We’ll enjoy our pizzas for dinner.
Day 3: Rome – Grottaferrata & Mazzano Romano/Tour Family-Owned Rustic Farm and Restaurant with Tastings of Local Delicatessen – Mazzano Romano Enjoy the Roman countryside. Visit the little town of Grottaferrata with its famous abbey – Santa Maria di Grottaferrata better known with the name of San Nilo Abbey. Visit the picturesque village of Mazzano Romano; proceed to a family farm for a tour of the grounds accompanied by an expert chef for our specialized small group cooking class. Return to Rome for dinner and overnight. Day 4:
Rome/Chef-Led Cooking Lesson Morning walking tour to see the Trevi Fountain, Pantheon, Spanish Steps, and Piazza Navona. Afternoon: We enjoy the experience of cooking a complete Italian meal with a Roman chef, who will reveal his best techniques during this small group lesson. We shop in a local market, choosing fresh ingredients to use in our cooking class and then prepare our meal. We make homemade pasta such as ravioli or fettuccine and prepare other dishes under the guidance of our personal chef to produce a full meal. At the end of the course, enjoy the dishes we’ve created.
Day 5:
Rome/Gastronomic Walking Tour of the City Experience a morning in the life of a typical Roman exploring the local markets and specialty shops in search of the finest gastronomic specialties of the city. Stop in a local bakery to learn about Rome’s breads and pastries. Continue to the Campo dei Fiori with its characteristic open-air market featuring local foods and souvenirs of the city. End the tour in a well-established gastronomy shop and enoteca that hosts an abundance of regional cheeses, cured meats and enjoy a tasting of three typical appetizers of cold cuts and specialty cheese.
Day 6:
Rome – Orvieto/Olive Oil Museum & Tasting - Rome Depart Rome this morning. Upon arrival in Orvieto, visit the Olive Oil Museum, featuring a collection of old machinery and antique tools, in addition to historic illustrations and photographs related to olive farming. At the end of the tour, enjoy an olive tasting accompanied with local cheeses, cold cuts and vegetables. Return to Rome for dinner and overnight.

Day 7: Roma/Gelato Making Lesson Morning Gelato-Making Lesson. Our class takes place in the laboratory of an authentic Roman gelateria that has been around since the 1950. The class begins with an introduction to gelato itself, explaining what makes it different from ice cream and the ingredients and methods used to make it. We dive right in to the gelato making process, creating gelato from scratch in a step-by-step process led by a chef. At the end of the lesson, we taste samples of our own creations and a few other gelatos at the gelateria, and bring home the recipes we’ve learned. Day 4: Perugia - Bevagna & Montefalco/Olive Oil Tours & Tastings - Perugia After breakfast, enjoy a guided tour of Perugia. Afternoon excursion to the medieval cities of Bevagna and Montefalco. Experience Olive Oil Tours that include visits to family-run oil mills in the most famous Umbrian oil regions with tasting of the local produce along with accompanying local olive oils. Return in Perugia for overnight.

Day 5: Perugia - Florence Morning departure from Perugia. Upon arrival in Florence, enjoy panoramic tour of the city before hotel check-in. Free time this afternoon and overnight in Florence.
Day 6: Florence/“Accademia Cordon Bleu” Today, we have the incredible culinary experience at “Accademia Cordon Bleu” Begin with a short walk through the beautiful historic center of Florence…it is here that we become a ‘’Chef in a Day’’ and our cooking adventure starts! We will be taught from scratch how to make three (3) different fresh pastas from two (2) different doughs (a long pasta, a stuffed pasta and a short pasta). Prepare a traditional second course of meat or fish with vegetables. Create a delicious dessert. This cooking lesson is ‘’hands-on’’ and unforgettable.
Day 7: Florence - San Gimignano/Tuscan Culinary Cooking Class - Rome After breakfast depart for Rome. Stop in San Gimignano, en route where we create traditional dishes in a rustic, Tuscan kitchen. Begin our full immersion in the Tuscan tradition with our tour that is designed to bring out the Italian. foodie within us and put us in touch with the enchanting Tuscan countryside, locals and food. Visit a villa on top of a hill in the heart of the Chianti area, where we create authentic Tuscan antipasti such as bruschetta, savor aged pecorino cheese while learning how to understand the magic of local extra virgin olive oil. Roll our own home-made pasta. Relish in a Tuscan dessert. Learning about the traditional Tuscan cuisine is an experience full of celebration and satisfaction; a truly hands-on experience which will never be forgotten. Continue to Rome and upon arrival, check-in into our hotel.
Day 8: Rome/Italian Gelato & Biscotti Making Class Today we have one of the most authentic Italian culinary experiences - gelato and biscotti making class. We learn how to make our very own gelato & biscotti or tiramisù from scratch. We have the amazing opportunity to customize and create classic Italian gelato with our favorite flavors - choosing from fresh fruits of the season, like Tuscan strawberries or lemons from Sorrento, deep-green pistachios, high-quality dark chocolate from Perugia, or the always lovable Nutella. While our gelato is freezing, we will learn how to make either Italian biscotti, the perfect partner to gelato, or choose to make the most quintessential Italian dessert, the fabulously rich tiramisu.
