he A&E character summary couldn’t be more direct: “Daniel epitomizes the word ‘nerd.’” The geek in question is Daniel Green – unabashed lover of reptiles, science and math – and chief lab-tech on cable’s lighthearted Florida crime series The Glades. But in real life, Jordan Wall, the handsome 28-yearold actor who portrays him, seems very much the opposite of this TV bookworm. Athletic and outgoing, he lives on the beach, runs marathons and has a killer set of abs. “We are just a bit different, yes,” Wall says, making the “tiny” sign with his thumb and forefinger. Stopping in for a waterfront lunch at Giorgio’s Bakery & Bistro on Hollywood Beach, we are just down the road from where The Glades sets up shop from time to time.

The show, which returns for season four in June, stars Australian hunk Matt Passmore as the lead detective of a homicide squad based in fictional Palm Glade, Fla. With storylines that traverse the state, all of Florida is a regular co-star. Characters who lunch in St. Augustine might be in Naples by night. “We do shrink the state a little bit,” says Wall, originally from Clearwater and a graduate of the University of Florida. “Miami, Sarasota, maybe hit up Cocoa Beach – all in one day,” he says with a laugh. Sometimes they’re even driving over the Georgia border – with South Florida often standing in for just about any of it. As with most one-hour TV shows, the pace is grueling and production days can be very long. This show in particular, with its heavy reliance on dialogue

Repairing Aortic Aneurysms Old way Surgeons can cut open the body to get at the site of an aneurysm, a ballooning of the aorta, the largest blood vessel in the body; but frail older patients are not always good candidates. In those patients, a less invasive procedure may be used. Portable imaging equipment brought into the operating room allows doctors to see inside the patient and guide the tools needed to do the repair from inside the blood vessels themselves. But in complicated, lengthy procedures, the imaging equipment can overheat and shut down causing a delay in the procedure while it cools.

LEADING ROLE How Susan Danis is rewriting the libretto on South Florida opera BY GREG CARANNANTE The word is the granddaddy of Florida arts has gotten a new lady, and she’s about to rock his world. In fact, it’s already rocked.

It took Susan Danis just a few weeks as general director of Florida Grand Opera to help set a new course for the state’s oldest performing arts organization. Her daring debut season will kick off at the Broward Center this fall with the Southeast premiere of the challenging Mourning Becomes Electra, regarded as one of American opera’s finest and composed by Fort Lauderdale resident Marvin David Levy, 80. Danis, 52, crossed the state from the Sarasota Opera last fall with an impressive résumé: In 14 years as executive director she more than doubled its operating budget and individual giving, and helped save its historic opera house. Artistically, her innovative approach

Her plans to reprise that approach here is among the gleanings from our recent conversation, which – as the lights dim on the current season and a new era waits in the wings – we share here: Q. Why did you feel FGO was ready for the new direction? A. Many companies feed their audience a safe serving of opera. But what happens is the people who really love the art form tend to go away because they’ve seen La Traviata a million times. As I started to get to know people here, I found – and this is always the nightmare for regional companies – that if someone really loves opera, they’re like, ‘Oh, I’ll just get on the plane and go to New York to the Met.’ I realized that who and what would be on our stage had to be something that made opera lovers stay home, and that would have new ways of reaching out into audiences that might not think they even wanted to try opera. Q. Why did you choose Electra as the opener? Was it key that the composer is a resident? A. Absolutely. It’s an amazing piece of work. I have not met a person that will not tell you that it was one of the most exciting nights they have ever spent in the theater. I tell everyone we’re going to do the premiere [Nov. 7] of the Fort Lauderdale version, and they look at me like I’m crazy. And when I told Marvin, he laughed, because, he says, ‘You’re right’ – because every day he changes something. And there’s nothing like a composer at the end of the opening night performance coming out for a bow. Especially Marvin – obviously he’s had a long life, and to see somebody in their own community get that, I have chills just thinking about it. Q. What’s the response so far to your first season? A. A phenomenal response. I’ve gotten 106 people that have contacted me and said, I haven’t subscribed for years and I’m coming back. There’s great buzz in the opera world. Lux Against Them Buick Enclave, Volvo S60 and Acura MDX deserve some luxury car respect BY DEBORAH WILKER

Buick Enclave

I was at a Hertz counter a few years back – waiting for the keys to a RAV 4 (or some other comparably small-but-solid SUV), when the guy returned with something else. “We’re all out,’’ he said, “but I have something much better. It’s a Buick Enclave. It’s a luxury car.’’ What? This was back in the summer of 2007. The word “Buick” wasn’t on anyone’s radar, let alone as a luxury car. And as for “Enclave” – what did that word even mean? As many have since learned, the Enclave (extensively refreshed in 2013), turned out to be one of the catalysts in Buick’s much lauded turn-around – a spacious, three-row crossover that drives like a fine sedan, turns heads with an exotic grille and envelopes you in seats so comfortable you want to put them in your den. Six years on I’ve rented at least four more Enclaves, analyzing them all through free-for-all freeways, packed side-streets, teensy parking spaces, and I have come away with a new view of the phrase “luxury car.” Aside from the first-class comfort and serene ride, “the Enclave also attracts a lot of attention because it’s rather boldly styled,” says Edward Loh, editor-in-chief of Motor Trend magazine. “It’s sweeping and grand looking – it has a lot of leather and wood and chrome accents. It’s certainly a luxury car.” While the Enclave (MSRP $38,445-$47,625; MPG 17/24) typically skews older, it has younger fans in soccer moms (“who hate that term,” Loh says), “and who wouldn’t be caught dead in a mini-van.” Comparing it recently to a friend’s sleek and powerful Volvo XC90 (MSRP $39,700–$47,600), I couldn’t help but think there must be other luxury crossovers hiding in plain sight. Despite its “ease-into-luxury ad campaign,” Volvo, with its firm drive, unique structural design and unparalleled safety stats, is sometimes still seen as a sluggish, lumbering tank. “Volvo is really trying to change their image,” Loh says. And with its S60 line (a legitimate competitor to the BMW3 Series, he says) and the XC90s upcoming revamp, they are doing so. Similarly, the Acura MDX (MSRP $43,280-$54,805), another classy 3-row, also jumps out as a premium ride that makes a savvy statement - without a lot of fuss. It’s renowned for its advanced all-wheel-drive, but its luxurious, restful interior seals out the World. All three cars seem to be popular with buyers 2013 Volvo S60 who don’t necessarily have to be conservative – but choose to be. “Anecdotally there is evidence of that in this segment, particularly one or two years ago when the economy was more dire, some people who were doing very well thought, maybe a Buick instead of Cadillac. Or maybe even a Buick instead of a Mercedes,” Loh says. “Or, as Buick would have you believe, maybe it really is a superior car.”

HOT TIME The wellness sweat heats up Delray Beach BY CHARLYNE VARKONYI SCHAUB Sophisticated Zen was the image that came to mind when I walked into

Infrasweat in Delray Beach’s Pineapple Grove. The accent wall was painted with Benjamin Moore’s Strawberry Red. A large silver Buddha head from Z Gallerie hung above a white sofa. Then co-owner Kelly Dorsey entered the room dressed in Bohemian chic – blue jeans and long sweater with a print scarf tied around her head. Kelly Dorsey, co-owner of Infrasweat. Dorsey got the idea for her business - saunas that deliver infrared heat directly to the body for weight loss and other wellness issues - on a trip to California. These private sauna rooms, popular in West Coast spas, have been featured on The Oprah Show with Dr. Oz, The Doctors and Ellen. “You could easily find one at a spa, but I thought there has to be a better way,” Dorsey said. Her better way translated into a place where clients can get in and out in 30 to 45 minutes and not have to share a sauna cubicle. Infrasweat features six private rooms each with a Sunlighten sauna. If a heart rate monitor and special watch is purchased, the clients can wirelessly track heart rate, changes in weight and body mass index and calories burned. They can listen to music, select a color for chromotherapy and select from six programs – cardio, detoxification, pain relief, relaxation, weight loss and skin health. An introductory session is $20; the next session is $35 unless a membership package is purchased. Infrared heaters provide radiant heat to warm the skin rather than the air. They heat from 120 to 150 degrees vs. 180 to 200 degrees in a traditional sauna. Clinical studies have shown the infrared saunas can reduce blood pressure, increase core body temperature and burn calories, Dorsey said. Dr. Brent A. Bauer of the Mayo Clinic confirmed the saunas have some health benefits. “Several studies have looked at using infrared saunas in the treatment of chronic health problems, such as high blood pressure, congestive heart failure and rheumatoid arthritis, and found some evidence of benefit,” Dr. Bauer wrote on the clinic website. “However, larger and more-rigorous studies are needed to confirm these results. On the other hand, no adverse effects have been reported with infrared saunas. So if you’re considering trying a sauna for relaxation, an infrared sauna might be an option.” It should not be used by pregnant women, those with heart problems or by those who have insensitivity to heat. If you have any health issues, consult your doctor. Hydration with water, electrolyte drinks or coconut water is important before and after using the sauna. “This is for anyone over 18, male or female, who wants to detox, relax or shed a few pounds,” Dorsey said. “It is for people who are truly health or wellness oriented. It is not for a fast-food person.”

The appearance of Patrulla Acrobática Paracaidista del Ejército del Aire is in observance of Viva Florida 500, a celebration of the 500th anniversary of the Spanish discovery of the region. HMF at The Breakers becomes the place on the island again I wasn’t sure what to expect at HMF, the new drinking and

dining venue at The Breakers in Palm Beach. After all, HMF - named for the landmark resort’s founder, Henry Morrison Flagler - was replacing L’Escalier, one of my favorite fine dining experiences. Wouldn’t I miss the white-jacketed waiters serving with one hand behind their backs, wheeling a silver vessel filled with different champagnes up to the table before dinner? As we left the lobby, the sound of Cole Porter music filled the hall – the first sign HMF was going to be different from the more formal L’Escalier. New York designer Adam D. Tihany has transformed the Florentine Room, a large space that used to contain the Tapestry bar and L’Escalier, into a stylish and sophisticated space. Everything on the large menu of small plates here was full of flavor, with fresh, quality ingredients. The Greek Spiced Lamb Sliders on Pita ($19) were tender with just the right The Redhead amount of spice. The Orecchiette pasta with Cocktail is one of Tuscan duck sausage and wild mushrooms the specialty drinks.

($22) was fragrant and creamy. The Churrasco Steak Chimichurri ($24) was tender, and the best chimichurri I’ve ever tasted. The cocktails – my husband’s classic Manhattan ($15.50) and my Mojito Royale ($13) with rum, lemon grass and kaffir lime syrup – were well worth another round. Cocktails range from $10.50 to $15.50. We may still miss the white-jacketed waiters, but we liked our first experience at HMF so much that we have been back. We didn’t have reservations, which you really need now because HMF has become the place to be on the island. Everywhere we go people are talking about how much fun it is and how good the food is. But, one tip: Don’t try bribing for faster seating. Fine Art Lamps, with a corporate office in Miami Lakes, has a reputation for producing lamps that appeal to high-end design. The company’s glass department has developed a bakehouse for crystal, a new concept in art glass lighting. They use a five-day process to create crystal spires, crystal river stones and crystal colored shades by hand. The glass is baked for several days at high temperatures to produce a large block, which is polished. Bubbles and seeds form naturally. They are available in four different looks – Crystal River Stones, Crystal Spires, Crystal Shards Blue in aqua and cobalt and Crystal Shards Natural in carnelian and citrine. Checking into some designer hotels, checking out with some home design ideas BY CHARLYNE VARKONYI SCHAUB

H

ome décor used to be a road map documenting where someone had traveled. Chinoiserie chests brought back from Hong Kong. Wool blankets from New Zealand. Murano glass from Italy. Tea cozies and hunt cups from England. These days travelers do not only want to collect decorative objects from their trips, they want to bring the entire hotel experience back to their everyday lives – from the beds they sleep in to the way they see wines displayed. Sometimes the interpretation is literal; other times subtler. Here’s how four South Florida designers translated the hotel into the home. When anyone sees Marc Thee’s designs, it is obvious some of

his greatest inspiration comes from high-end boutique hotels. A lounge bed for outdoor living. A bathroom that is part of the master bedroom. Clean design with wood detail on the walls. “I think high-end boutique hotels are the number one place to find inspiration,” says Thee, who was twice named to the prestigious Architectural Digest Top 100 architects and designers in the world. He also has worked with celebrities such as Tyra Banks, Dwayne Johnson, Jeff Gordon and Alan Jackson. Thee says the design teams of high-end hotels take the time to select a theme with an overall aesthetic that fits the mood of the architecture. They also pay a lot of attention to wall treatments, which often are covered in elaborate wood or tile finishes. “When guests walk into one of these hotels, they completely shake off the stresses and realities of their world,” he says. “They immerse themselves in the design that speaks to them in a very sensory way – smell, sight and feel. The design ignites emotions in every way. The guests’ rooms tend to be relaxing, but there is much less investment than in the lobby.” He pointed out the breezy gauze curtains in the lobby of the Delano in Miami Beach as a way to create drama immediately as you enter the hotel. Stoking the senses “It is all designed to hit your senses,” he says. “The minute you have a gauzy curtain like you do in the Delano you are transported into something romantic. It is a detail that hits you emotionally.” His clients often bring him the links to their favorite hotels or show them photos of something they like in the bedroom or a bathroom detail. One favorite is the 2-½ inch thick marble countertop detail at the Bellagio in Las Vegas.

His design for a private residence villa at La Samanna in St. Martin included a rooftop sunset deck with an outdoor daybed and plenty of seating for parties. “The hotel experience is all about supplying what you don’t have at home and that’s what keeps guests coming back,” he says. “Hotels like the Delano and W hotels all understand that an outdoor loungey bed is a symbol of utter kickback and relaxation.” The inspiration for a luxury condo he designed in Naples was the hotel trend that morphs the bedroom and bathroom into a single space. “You can immediately picture candles burning, water running, music playing and big terry cloth robes,” he says. Thee created hotel-like wall detail with white painted wood in a waterfront that evokes the mood of the casual Key West lifestyle in a condo in Puerto Rico. The bedding is white with sea-color accents in the pillows, throw and garden stool. “Nothing says a resort like white sheets,” Thee says. “It gives a spa-like feel and a clean look. It is easy and breezy and not overly designed.” Weekend retreat Danielle DePerro’s clients treat their second residence as a hotel. They have a home in west Broward and a beach getaway in The Residences at The Ritz-Carlton Fort Lauderdale. The two-story penthouse features a wading pool where the owners can cool off while enjoying the outdoors. DePerro says they took the hotel feel and made it more like a home. She added a waterfall, because the clients wanted to hear the sounds of splashing water; and a grass area to make it seem more like a back yard. The building’s balconies are in a wave pattern and she repeated the wave in the grassy area.

But the more literal interpretation is inside the penthouse. “The clients had seen wine displays at the Setai in South Beach and asked me to give them the same feel of glass walls around the wine,” she says. “We have a bar lounge with high tops and lounging areas around the piano.”

Treating the walls Cecil Hayes loves what she describes as the drama of hotels but her work is interpretive rather than literal. “They make the walls come alive by putting dimensional things on them like wood panels,” she says. “They create columns dividing the lines of passage. It’s a little more daring. They use wood instead of wallpaper and faux paint.” Hayes took the same attitude in home design – transforming a square box into a room with architectural interest. She brings in natural items such as stone and wood. The 20-foot high ceiling was the only drama in her client’s home in Frenchman’s Creek in Palm Beach Gardens. Formerly when a guest walked in the front door, their eye was drawn to an ordinary sliding glass door with a view of the swimming pool. She created moveable shoji screens and replaced the slider with French doors trimmed in wood. The same wood was carried throughout the room with niches in structural columns. “When you first walk into a home it should be like walking into an expensive hotel lobby,” she says. “It’s the first thing you see and you want to create a handsome and charming look.” Hayes faced another tall ceiling in a home in Boca West. She added a laminate wall with a wood header to break up the space and provide architectural interest. A custom bar in a hand painted pewter finish with marble top completed the design.

A client in Parkland wanted a large bar that would take up a lot of room. To make this work, Hayes built a wooden sculpture wall that wraps around to the living room, where she added niches for art and the television. “I saw this as the same thing someone could do in a hotel,” she says. “It is like you are sitting in a lobby and could turn your head to see people having a great time at the bar.” Hayes is the first African-American designer to be named to Architectural Digest’s Top 100 designers and architects in the world. Some of her famous clients include actors Wesley Snipes and Samuel L. Jackson and athletes Anfernee “Penny” Hardaway, formerly with the Heat; Jamal Mashburn and Ty Law. Clean aesthetic Eric Dyer, an architect and the design director for Trend Design + Build in Hallandale Beach, has the same clean aesthetic reminiscent of hotels such as the W. No wonder. Dyer helped design the San Francisco, Denver and Seattle locations of the hotels, but he says he gets inspiration from contemporary Italian design. His design for a 5,200-square-foot condo in Boca Raton was based on his client’s request for a minimal look. For inspiration, she showed him photos of an apartment in Milan designed by Giorgio Armani. One of the most interesting features is how everything is hidden behind wall panels. The alcohol and breakfast bar looks like it could be in a hotel – with six bar stools facing a flat screen. The “wall” they face is actually a series of panels that open for storage. A hidden door allows entrance to the kitchen. The master bedroom is also minimalist and features hidden storage for hanging clothing and drawers. The headboard is ratcheted and can pop up for reading in bed. The bed is an upholstered playpen with a deep mattress. And the silk blend curtains have that same, sexy feel as the Delano, especially when a breeze moves them. “Life is stressful,” he says. “The home should be our sanctuary without clutter.” The living room is designed with plenty of seating for eight guests and has the same hidden storage in the fireplace wall and behind the concrete walls that open. Anyone who has been to The Royalton in New York City will recognize the horizontal fire pit. “I often incorporate this Rhythm fireplace,” he says. “It can be set into a coffee table. In this particular building, they didn’t have gas. If you don’t go to an electric fireplace, which my clients don’t like, this is the next best to a gas fireplace. It is vent-less and burns off the fuel [denatured alcohol] so you aren’t inhaling it. But it can still warm a room.” Dyer says some people love to go to five-star hotels; his clients love to live in a space that looks like a five-star hotel. “I think the difference between other people’s work and mine is the finishes and the [coverings on the walls] I use. If you walk into a five-star hotel, you don’t see drywall. It is finished to the nth degree. The architecture takes up at least 50 percent of the composition in my designs. A lot of designers put textiles throughout the whole space. I keep it clean. Too much confuses the eye.” ●

to move in mid-April from her current home in Cooper City to a two-bedroom, twobath unit at One Plantation, a new luxury apartment community where she’ll be about two miles from her office and within walking distance of shopping. “When I first saw the building being built, it was attractive to the eye,” she says. “And once I went there, I felt really at home. Even though apartment pricing is very expensive right now wherever you go, I thought they gave you a lot for your money.” Located at 1650 SW 78 th Ave. at the southern gateway to Plantation’s Midtown District, One Plantation is part of a new mixed-use project under development by Fort Lauderdale-based Stiles Corp. as a joint venture with Prudential Real Estate Investors. The joint venture is developing the residential component of the project while, independently, Stiles is redeveloping the adjacent 65,000-squarefoot University Shoppes. “Plantation is a great city and a great market,” says Doug Eagon, president of Stiles. “We’ve designed an apartment complex that from a location standpoint is superior, given its access to all parts of South Florida from I-595, and immediately adjacent to it is a retail component that will provide food and services that people will purchase on a regular basis. And you don’t even have to get into your car — there will be connecting walkways from the apartments directly to the shopping center.” Located on 5.5 acres, the contemporary-styled One Plantation features two 12-story towers with a total of 321 one- to three-bedroom units. Stiles Construction is building the residential component, which is one of Broward County’s first multifamily rental communities designed to achieve Leadership in Energy and Environmental Design (LEED) certification from the U.S. Green Building Council. Amenities at the gated community include a 10,000-square-foot clubhouse with pool, spa, California kitchen, fire pit, children’s tot lot, 4,000-square-foot fitness center, game rooms, movie theater, lounge and an on-site dog park. Atop the clubhouse will be a rooftop sundeck. A four-story parking garage, with rooftop tennis and basketball courts, will connect to the clubhouse and serve both towers. There are also numerous energy-efficient and sustainable features built into the project, such as Energy Star appliances, high-efficiency windows, energy-efficient lighting and integrated programs for green pest control and cleaning. Apartments at One Plantation will range from 750 to 1,330 square feet. Eagon says rents will run from about $1,600 to $2,300 per month. Unit features include private terraces or balconies, porcelain-tile flooring, walk-in closets and gourmet kitchens with granite countertops, islands and European shaker-style cabinetry. The developer is targeting professionals at nearby business parks as well as those working or teaching at Nova Southeastern University, Eagon says. “We feel that with the strong employment base in the immediate area, these residences will serve a real demand for people.” At least one industry professional agrees. “They have a real nice amenity package, with top-notch condominium-grade features in the units,” says Jack McCabe, a Deerfield Beach-based housing industry analyst. “It would be my expectation that this project will probably lease up very quickly because there’s a definite need for the product.” For more information about One Plantation, call 855-410-2687 or visit oneplantation.com.

Any resemblance to the nerdy character Jordan Wall plays on The Glades is purely incidental to his skill as an actor BY DEBORAH WILKER

T

he A&E character summary couldn’t be more direct: “Daniel epitomizes the word ‘nerd.’” The geek in question is Daniel Green – unabashed lover of reptiles, science and math – and chief lab-tech on cable’s lighthearted Florida crime series The Glades. But in real life, Jordan Wall, the handsome 28-yearold actor who portrays him, seems very much the opposite of this TV bookworm. Athletic and outgoing, he lives on the beach, runs marathons and has a killer set of abs. “We are just a bit different, yes,” Wall says, making the “tiny” sign with his thumb and forefinger. Stopping in for a waterfront lunch at Giorgio’s Bakery & Bistro on Hollywood Beach, we are just down the road from where The Glades sets up shop from time to time.

The show, which returns for season four in June, stars Australian hunk Matt Passmore as the lead detective of a homicide squad based in fictional Palm Glade, Fla. With storylines that traverse the state, all of Florida is a regular co-star. Characters who lunch in St. Augustine might be in Naples by night. “We do shrink the state a little bit,” says Wall, originally from Clearwater and a graduate of the University of Florida. “Miami, Sarasota, maybe hit up Cocoa Beach – all in one day,” he says with a laugh. Sometimes they’re even driving over the Georgia border – with South Florida often standing in for just about any of it. As with most one-hour TV shows, the pace is grueling and production days can be very long. This show in particular, with its heavy reliance on dialogue

Last year Wall’s perseverance paid off with a guest role opposite Kathy Bates on the defunct NBC legal drama Harry’s Law. “She was incredibly nice,” he said of the Oscar and Emmy-winner, widely regarded as one of the industry’s best. “She went

and outdoor locations, is also at the mercy of rain, wind “and airplanes flying over us all the time.” “Sometimes what you think will be a 10-hour day is a 14-hour day,” Wall says without a hint of distress. In fact there’s something about his enthusiasm that makes you suspect a 30-hour day would be just fine, too. “Perhaps when I’m in the business a lot longer, I’ll get jaded.” Four years into his adventure in series television, he says he remains awed by the complexity of it – the hours upon hours and dozens of production crew required to create even a 30-second scene. “It feels like chaos but somehow it all always comes together. They build this glorious sundae for us and we the actors are the final piece on top. We’re what everyone sees, but the more I learn about each job, the more astounded I am. Though Wall was active in school theater productions and attended the annual Florida State Thespians competition in Tampa during his high school years, his parents didn’t expect him to become an actor in real life. In fact, his dad was steering him toward law school after Gainesville. Later recognizing that his son had other

with friends when he is in L.A. rather than buy a home of his own just yet. “I don’t need much. How much do any of us really need?” Though he does have his own place in South Florida each winter during Glades production – “it’s a new apartment every time.” “I’m definitely a vagabond. I’m a nomad. I carry the clothes on my back. There’s only a handful of guys, maybe Leonardo DiCaprio or Brad Pitt, who have the next film waiting for them – who know where they’re going to be.” For now, movies can wait. Wall’s next gig is as team member of the Florida Chapter of The Crohn’s and Colitis Foundation of America’s Team Challenge – a series of marathons and triathlons that raise research funds for genetic inflammatory bowel diseases. “These diseases can change – even ruin the course of your life. But because they don’t necessarily cause fatalities at the same rate as some other illnesses, CCFA doesn’t always receive the fundraising attention it should,” he said. Wall was drawn to the charity after learning of a friend’s dire struggle with Crohn’s Disease. “I saw the debilitation first hand. She was a very active woman. It changed her life completely. Every day is compromised.” He is a member of the local Florida fundraising team that will run a halfmarathon in Napa Valley, Calif., this summer. Training for the group is supervised by CCFA coaches, whose strict regimen includes a 4 a.m. wake-up call most Saturdays – whether you’ve been shooting a TV show until 2 a.m. – or not. “Last year we were initially training in Weston,” he said of the pre-dawn commutes from his beachfront apartment. “Then they moved it East, which helped a lot. But one night I got about two hours sleep. I was OK – till about the middle of the next day,” he says, recalling with some amusement how he just about collapsed. “Running alongside these people has really taught me not to take my health for granted. If I can combine some personal goals of mine – staying fit – with an amazing cause, I think I should.” ●

Pancreatic Cancer: Not a Death Sentence About 37,000 people in the United States are diagnosed with pancreatic cancer each year, according to the American Cancer Society, and 91 percent will die of the disease, making it one of the deadliest cancers. According to Conrad H. Simpfendorfer, MD, a specialist in the treatment of liver, bile duct and pancreatic cancers at Cleveland Clinic Florida, a diagnosis of pancreatic cancer, however, is not a death sentence. He answers these important questions about pancreatic cancer.

Lower eye lid surgery Old way To reduce the look of bags under the eyes, some surgeons remove skin and fat below the eyes to tighten up the area, but this can change the shape of your eye. New Way Dr. Jacob Steiger, a Boca Raton facial plastic surgeon, performs the procedure from inside the lower lid using a method he compares to a hernia repair. “The first thing people see when they look at you is your eyes,” he says. “The eyes are the focal point of the face. Eyelid fullness is a symbol of youth and beauty, so you want them to look good.

But as we age, the ligament between the lower eyelid and the bone of the eye starts to get loose and starts to sag,” he says, and as a result the fat herniates forwards. Steiger tightens up the ligament and puts the tissue back where it belongs, he says. He supplements the natural eyelid fat with fat taken from the patient’s abdomen or thighs to create a more youthful appearance. “It looks a lot more natural, and doesn’t change the shape of the lower eyelid, so you look like you,” he says. The procedure takes about an hour and is done under IV sedation, followed by about a week to recover because of bruising and swelling.

Sleep apnea occurs when the base of the tongue obstructs the passage of air, and is more likely to occur in people who are overweight. Other suspected sleep problems, such as narcolepsy or periodic limb movement, still must be done at the sleep lab, Smolley says.

“Our lab started out in the hospital, but that is not as quiet or comfortable, so we moved it out to the Marriott Courtyard where people can be in a room with a flat-screen TV but still be monitored by a technologist,” Smolley says. Six rooms are for patients, and a seventh is a control room with computers. Smolley says if sleep apnea is strongly suspected, the patient is a candidate for a home sleep study using portable monitors that measure the movement of air through your nose and mouth, your pulse rate, the oxygen level in your blood and the movement of your chest and abdomen. Patients pick up the monitoring equipment from the doctor and get a lesson in how to use it. They attach the devices as instructed before going to bed. The next day, they return the equipment, the results are reviewed and the patient comes back to hear the results. “The gold standard of treatment is the CPAP,” Smolley says. CPAP, or continuous positive airway pressure, is a mask that uses mild air pressure to keep the airways open while you sleep. Depending on how severe the problem, there are other options, such as an oral appliance worn during the night.

New breast cancer t reatment Old way After a lumpectomy to remove a tumor, patients have radiation treatments five days a week for up to six weeks. New way As soon as the tumor is removed, an orb-shaped device is inserted in the cavity to irradiate the area for 20 to 40 minutes before the incision is closed. For some patients, this will be all the radiation they require. Others may need a short course of radiation after recovery. Dr. Joseph Casey, chairman of the Breast Program Leadership Committee at Holy Cross Hospital in Fort Lauderdale, says the new approach uses a device called Intrabeam to perform intra-operative radiation therapy before the patient leaves the operating room. “Prior to the 1980s, every woman had a mastectomy, and in the ’90s it became acceptable for women to have a lumpectomy. [Researchers] randomized people into three groups - mastectomy, lumpectomy and lumpectomy with radiation

therapy,” Casey says. “The group that had lumpectomy alone had a higher rate of recurrence of the tumor than they would like, so the standard has been lumpectomy with radiation.” The typical course of radiation can take up to two months and involves going to a facility five days a week. “For people with limited mobility or who live far away that was quite a hardship, so we’re looking at ways to reduce that,” Casey says. Intrabeam radiation is delivered through a miniaturized spherical device that comes in different sizes to fit the excision site, delivering a prescribed dose of therapeutic radiation concentrated at a depth of one to two centimeters. This targets any remaining cancer cells but spares healthy tissue. Clinical trials of the treatment were conducted in Europe and the results were published in the Lancet medical journal in July 2010. “Right now we’re only using it on older women, over 60, but we’ve seen women express a real preference for this if it’s available to them because of the convenience factor,” he says.

Liposuction refined Old way In traditional liposuction, the surgeon inserts a cannula - a suctioning probe - through a small incision and pushes and pulls the device through the fat layer to break it up. The suction pump draws the fatty tissue out of the body. The process can damage tissue such as nerves, blood vessels and collagen. New way Ultrasound-assisted liposuction uses specially designed probes that deliver ultrasound waves into the fat layer to selectively target and liquefy fat. Other body tissues like blood vessels and nerves are left intact. Dr. Tim Abou-Sayed, a plastic surgeon at Trasformare Fifth Avenue, says the new technique

is less invasive and affords the patient less down time. He uses a system called VASER Lipo. “VASER is a more refined delivery of the ultrasound. The thermal treatment melts the fat, making it easier to get it out,” he says, “that’s what makes it different.” Sayed says Sound Surgical, which makes the system, also teaches doctors how to sculpt the body to achieve a particular look. “If you want to create the six-pack abs musculature, you can actually give more significant definition than would be apparent from just their muscle tone,” he says. “It’s good for the young or middle-age fit guy who can’t get rid of the love handles, but it’s not a substitute for good diet and exercise.”

Chima Brazilian Steakhouse If you’ve never experienced a Brazilian rodizio, Chima delivers the authentic experience — from flavorful, fall-off-thebone meats and side dishes to waiters in gaucho garb carving at your table. Chima Meat Specialist Maradona Lima, in the restaurant business for 35 years, owned her own restaurant in Brazil and worked with Chima Brazil before opening Chima Fort Lauderdale in 2003. “At Chima, we cook exactly as we used to cook in Brazil,” she says. Coarse salt and special seasonings ensure authentic Brazilian flavor before the meats are grilled on a rotisserie imported from Brazil. “The meats are definitely our signature items,” she says. “If I had to pick one, it would be the melt-in-your-mouth beef ribs.” The meat is first seasoned with salt before being covered in foil and roasted in the oven for three hours. After that it goes on the rotisserie for 15 minutes, Lima says, to give it the “final touch.” “It is delicious; one of the most requested meats in the rodizio service.” In addition to the amazing array of meats, Chima boasts a gourmet salad bar with a mix of American and Brazilian favorites — such as black beans with pork, rice, farofa (toasted yucca flour), Brazilian vinaigrette and hearts of palm. The desserts are no less noteworthy, including such decadences as passion fruit mousse, walnut cream, papaya cream… in short, leave room. Jamaican cuisine is a fabulous mélange of influences from the generations of cultures that have inhabited the island — Chinese, African, Spanish, British and Indian — fused with the flavors of exotic herbs introduced from Southeast Asia. Morgan maintains authenticity at his Rocksteady Jamaican Bistro and Jamaican Jerk Café restaurants by using authentic Jamaican blends of ingredients, such as scotch bonnet pepper, pimento, thyme and garlic. Most traditional Jamaican cuisine is grilled, such as the signature jerk chicken (allow 30 minutes for grilling if you order the wings) and pork; while the delicious curry chicken and oxtail is braised. His favorite meal? “It’s the Chilean sea bass rundown style, which is cooked in coconut milk with curry and our herbs and spices.” We tend to agree, our only addition to that would be the Jamaican rum. The mezze falafel sampler plate. “It’s a great dish because you get a little bit of everything, from smooth, creamy hummus — we cook the beans for at least five hours — to the fresh, handchopped tabbouleh salad, to our perfectly smoked baba ganoush, veggie dolmas and, last but not least in my opinion, the best falafel balls west of Jerusalem.” Sultan Express Mediterranean Grill and Hookah Bar: 891 E. The new Wild Sea Oyster Bar & Grille makes a splash on Las Olas BY JAN NORRIS

W

hile the dark, clubby Grill Room at the Riverside Hotel in Fort Lauderdale served its power-lunch purposes over the years, Heiko Dobrikow, general manager of the venerable 77-year-old property, kept hearing that it was time for a change. Everyone was clamoring for a seafood restaurant, he says. “There is no restaurant on Las Olas that offers seafood as its focus, so we thought, what can we do different to make it a stand-out?” Dobrikow and his staff – executive chef Toby Joseph and food and beverage director Jason Cotter – have now opened the very different Wild Sea Oyster Bar & Grille, a chef-driven restaurant with a hip beverage program that definitely stands out. A redesign of the former Grill Room space sets a tone for lighter, modern cuisine here, with sea and sky blues, sand beiges and off-whites giving the minimalist rooms a cool, classic coastal feel. “We needed a bar – so we created one with dining around it,” Dobrikow says. “After hours, we can shut the sliding glass doors to the dining space and open the bar to the outside. Already we’re attracting a late-night following.” Cocktails do get their due here, with a select menu. Four featured drinks featuring four different spirits are prepared nightly (an elderflower liqueur and basil vodka gimlet was being shaken this night); while craft beers and some unusual wines are on the beverage lists. The beers in particular go well with the addictive bar snack: bar snack: Jalapeño cheddar popcorn – a special blend made just for the hotel, served in silver buckets. But to get to the bar, diners must first ignore the siren song of the oyster bar, a galley space set near the entrance. Fresh oysters are splayed out on ice, with shuckers ready to crack on command. Six from each coast are offered daily, with a trio of condiments made inhouse for dressing them. Top-neck clams from Cedar Key are on the half-shell, and a ceviche and poke of the day also are on the menu. Chef Joseph enthusiastically points to the wide list of sources for the bivalves, as well as the fish. “We’re looking everywhere and going beyond the usual purveyors to get really great fish and shellfish that nobody else here has. The menu will change almost daily because we never know what might affect the catch.” Chef de cuisine Jon Sanchez, fresh off a sous chef position at Comme Ça, the notable French brasserie in Las Vegas, is developing the menus with input from Joseph and the culinary team. A sampling of entrées at a press preview included a citrus poached wild-striped bass, the delicate fish set over a bed of mushrooms, kohlrabi and black garlic. An aromatic clam broth was poured over it by the server at the table. (On a subsequent menu, the fish used in this preparation was black bass). Another dish, the sunburst trout, was served with oysters, cipollini onions, baby carrots and scented with coriander. For non-pescatarians, the meltingly tender beef cheeks braised in craft beer was a table-wide winner. The chef went all the way to Alabama to source the beer, a Back 40 Honey-Brown Ale, which he uses to create the rich sauce. Dobrikow says the average check is $75, adding the price is justified in the unusual ingredients and sourcing of small-batch products or single catches giving diners a chance to sample foods they won’t find elsewhere in the area. He says he hopes inquisitive, smart diners will find Wild Sea and spread the word that it’s a “foodie” experience. “I think Fort Lauderdale needs something like this.” Wild Sea Oyster Bar & Grille, 620 E. MERLOT AND BEHOLD The movie Sideways crushed Merlot almost a decade ago. Is it time to show a little mercy – and appreciation – for a much maligned wine? BY BOB HOSMON or the past decade, Merlot has gotten a bad rap it really doesn’t deserve. It’s actually the one red wine you should be drinking, but are not. Consider the indisputable attributes of Merlot: It’s a “noble grape,” like Cabernet Sauvignon or Pinot Noir. It’s the major grape in the blend that produces popular reds from the St. Emilion region of Bordeaux, including such luminaries as Château Cheval Blanc and Château Ausone. And it’s the only grape in a bottle of Château Petrus, the most expensive wine produced in Bordeaux. The best argument for Merlot is that, when well-made, it is a wine that is low in tannins, soft and voluptuous on the palate, and yet rich and filled with complexity and nuances of spice and red and black fruits. So, with all of those attributes, how did Merlot get such a bad reputation? In the 1990s it was riding high, prompted by the revelation of the French Paradox, heralded as a nice, entry-level, smooth red that was easy to drink and like. So what prompted Miles, the lead actor (Paul Giamatti) on his way to a restaurant dinner party in the 2004 movie Sideways, to insist to his sidekick, Jack, “If anyone orders Merlot, I’m leaving”? And what moved the audience in the movie theaters to laugh at that line? The answer is simple: opportunism and greed. No sooner had American consumers learned to ask for “a glass of Merlot” instead of “a glass of Chardonnay,” when too many wineries, from California, Australia, Argentina and several other countries, began making too many mediocre - and sometimes really awful - wines called “Merlot.” Merlot vines were planted in places where they would never yield quality fruit but could yield high quantities of fruit. To add insult to injury, the bad or, at best mediocre, wines weren’t necessarily bargain priced. I remember sampling some unmemorable Merlots that were, at the time, retailing for up to $50 a bottle. The upshot was, consumers were drinking unpleasant Merlots, and they didn’t like it. So they moved on to another red, Pinot Noir (a varietal, perhaps not coincidentally, praised in Sideways). Unfortunately, well-made quality Merlots from California and Washington State suffered sales losses as well. Indeed, because of the bitter taste left in the mouths of so many consumers, some people in the wine industry seriously believed that the future of high quality Californiaproduced Merlot was finished. Fortunately, they proved to be wrong. Enough wine fans realized that the Merlot grape, if planted in the right places, could produce red wines that were worthy of our attention. Some of those that deserve your attention include the budget-priced Merlots from Bogle, Bonterra, Frei Brothers, Murphy-Goode and Newton. Among the premium-priced (and worth it) Merlots from California, I like Duckhorn, Grgich Hills, and MacRostie. And if you’re looking for some ultimate, non-French Merlot you’ll not find any better than Mt. Brave and Mt. Veeder Merlot, the La Jota Vineyard Co. Howell Mountain Merlot and the La Jota Vineyard Co. Keyes Vineyard Merlot. Each of these wines are made by Christopher Carpenter, a 48-year-old genius who clearly understands the virtue of mountain vineyards and just as clearly knows how to turn the grapes from those vines into liquid nirvana. The point is: if you’re still thinking like Miles, you’re living in the wrong decade. There are lots of very good to excellent Merlots out there. Do yourself a favor and discover them before they get trendy again - you won’t be sorry. ●

No, not the mythical Himalayan city of harmony and long life, but the Shangri La of the late tobacco heiress Doris Duke, the home in Honolulu she dubbed her “Spanish-Moorish-PersianIndian” complex. A world traveler, Duke was so taken by Islamic art and architecture, including the Taj Mahal, that she spent a lifetime collecting Islamic treasures and creating gardens inspired by those in Muslim countries. Doris Duke’s Shangri La: Architecture, Landscape and Islamic Art, includes udes textiles, ceramics, furniture, carved doors and gold and silver dining ware that span the centuries. “Doris Duke’s encounters with the Islamic world rld were transformative and Shangri La is her paean to the places and traditions she loved,” says Deborah ah Pope, Executive Director of Shangri La, which iss now a center for Islamic art and cultures.
