Venice adopted it to represent both beast of water and of land, thus highlighting its power on the seas and mainland alike. se leone non fosse? È questa la domanda che da subito si fecero i veneziani che in una delibera del Maggior Consiglio del 1293 decisero che la statua in bronzo, che tutt’ora sovrasta piazza S. Marco sopra una delle due colonne in granito (l’altra è la colonna di San Teodoro), andava restaurata. Stiamo parlando dell’opera più misteriosa e leggendaria di Venezia. Tanto più che fa riferimento al simbolo stesso della città. Il leone posto sopra la colonna è un arcano non risolto anche dai più recenti studi che non hanno saputo decidersi né sulla data della sua costruzione, né sulla provenienza. Abbiamo solo delle ipotesi, anche se ben argomentate. Diciamo subito la più accreditata: il leone è un ibrido fra un leone e un grifone pro-

The Venetians asked themselves this right away, and in 1293 the Maggior Consiglio or Higher Council resolved to restore the bronze statue, which to this day sits overlooking St. Mark’s Square on one of the two granite columns, the other pertaining to St. Theodore. We are talking about the most mysterious and legendary of Venice’s restorations, the very symbol of the city. The lion placed on top of the column is a mystery still unsolved even by the latest studies. Disagreement prevails as to its construction date and origin. All we have are well-reasoned conjectures. Let’s talk about the most credited of these: the lion is instead a hybrid between a lion and a griffin supposedly made in the early Oriental



Sarebbe un monumento eretto a Sandon, divinità pagana, protettrice della città di Tarso in Cilicia, nella regione ospitata dalla Turchia. Qui, secondo gli studi degli archeologi, esisteva intorno al III secolo un monumento in cui la divinità appariva su un grande leone alato e cornuto, di aspetto compatibile con quello del leone di S. Marco. Tarso fu sede vescovile almeno fino al IV secolo ed è plausibile che questa statua sia stata abbattuta perché pagana, riducendola ad una semplice raffigurazione leonina (un grifone con la testa di leone). I mercanti veneziani, abili nel portare in patria le bellezze di altri paesi, frequentavano assiduamente fin dal secolo XI il Golfo di Alessandretta e nel XIII secolo avevano ad Ayas (presso l’antica Isso), chiamata dai veneziani Laiazzo o Giazza, un bailo, un fondaco e una chiesa di S. Marco. La città del resto entrava nei percorsi della via della seta e da qui gli stessi Polo partirono per il loro viaggio verso oriente. È quindi probabile che, nel corso del XII secolo, i veneziani si fossero impadroniti della statua (che aveva già perso la sua caratteristica raffigurazione di Sandon) in una città costiera del vicino Oriente. Ma altre furono le attribuzioni di questo strano leone. Far East, or that maybe it was a Babylonian monument. But let us return to more recent times and the year 1797 when, on May 12, the aristocratic Republic of Venice fell. The ensuing democracy saw the iconoclastic fury of the Provisional Municipality destroy numerous winged lions, the symbols adopted by the Serenissima Republic. Luckily, the French took the bronze statue to Paris along with the Basilica’s own four lions, where they remained until 1815 to then return to Venice, in pieces, the following year. Over two thousand years, the lion received at least five restorations and modifications, which is why it is hard to pin down its origin. Strangely enough, prior to 1293 there is no written record of the winged lion. Historians, after all, agree in believing that the origin of the winged-lion cult dates back to the end of the 8th century. Meanwhile in Venice, Marco replaced Theodore, the Greek-Byzantine warrior-saint, who also rests atop the column on the square’s pier. Legends surrounding the evangelist’s preaching in the Rialto isles and to his antiArabism; he was buried in Alexandria, Egypt and his remains were returned to Venice by two cunning merchants who fooled the Muslims. With Marco also came the roaring Lion, a symbol of the city’s courage and strength. Con la democrazia vengono distrutti, in una furia iconoclasta della Municipalità Provvisoria, innumerevoli leoni marciani, simboli della Serenissima. Fu una fortuna che i francesi portassero a Parigi il bronzo, insieme alla quadriglia della Basilica, dove restò fino al 1815 per poi tornare a Venezia, l’anno dopo in pezzi. In duemila anni di storia il leone subì almeno cinque fra restauri e modifiche e questa fu la causa della difficoltà di attribuirne l’origine. Stranamente poi, prima del 1293, non c’è scritto che parli del leone alato. Gli storici del resto sono concordi nel ritenere che l’origine del culto marciano risalga alla fine dell’ottavo secolo. A Venezia Marco prese il posto del santo guerriero greco-bizantino Teodoro, anch’egli sulla colonna del Molo della piazza. Anche per le leggende della predicazione dell’evangelista nelle isole di Rialto e per la sua componente anti araba, visto che fu sepolto ad Alessandria d’Egitto e le sue spoglie riportate a Venezia da due mercanti che gabbarono con un espediente i musulmani. E con Marco arrivò anche il Leone ruggente, simbolo del coraggio e della forza della città che lo adottò come figura di bestia d’acqua e di terra per sottolineare il potere sui mari e sulla terraferma. Con il libro aperto annunciatore di pace (Pax tibi Marce Evangelista meus) o chiuso con la spada sguainata sulla zampa in guerra.

Hellenism by a Greek or Greek-Ionic artist, somewhere between the end of the 4th and the beginning of the 3rd centuries a.d.. The monument was apparently erected on behalf of Sandon the pagan goddess and protectress of the city of Tarsus in Cilicia, in modern-day Turkey. According to archaeologists, around the 3rd century there existed a monument representing the goddess atop a large winged and horned lion, the appearance of which is compatible with that of the lion of St. Mark. Tarsus being an Episcopal seat at least until the end of the 4th century, one can surmise that the statue was knocked down due to its pagan nature and stripped, to simply represent a lion-like figure (a griffin with a lion’s head). Venetian merchants, who skilfully brought home beautiful artwork from foreign lands, assiduously visited the gulf of Alessandretta as of the 11th century. And in the 13th century at Ayas, known as Laiazzo or Giazza by the Venetians, (where the ancient Issus lay) they had established an official Bailiff, customs warehouse and a church named after St. Mark. After all, the city lay along the routes of the silk road and it is from here that the famous Polo’s undertook their voyage to the Orient. It is therefore likely that, at a coastal city in the near East, during the 12th century, the Venetians may have come into possession of the statue (which by then had already lost the part representing Sandon). However, this lion had other attributes. The shape of the face for instance, is more human than animal, and the wings led researchers to believe it came from the



adaism - one of the most revolutionary, interesting and productive artistic movements of the 20th century - officially emerged on 5th February 1916 in a cabaret in Zurich: the Cabaret-Voltaire, named after the outstanding French Illumist philosopher who advocated “reason”. The aim of its founder - the theatre director, painter and expressionist writer Ball - was that of rejecting anything that the “traditional” society considered “values”. Since that very society was guilty of having produced a world war the which logic of destruction swept away all human values. The ‘dada’ movement therefore condemns values like the love for the homeland, honour, tradition and all those forms of pre-established society as they are known today. i.e. ruling elites, economic power as well as culture - including art literature, poetry and everything which is normally considered beautiful and perfect - which cannot but be debunked, being the ante-litteram expression of that very society. The term “dada” - meaning stuttering and toy in French - was come up by chance and was chosen to reflect “nonsense” since the movement exalted irrationality, anarchy and nihilism in the arts as well in all other forms of society. The symbolic seat of Venetian power, formerly the seat of the Doge and State Magistratures, the Palace is the supreme embodiment of Venetian civilisation. Their friendship was an interesting human and artistic partnership which began in Zurich just in the years when Dada emerged and further intensified reaching remarkable results.

A new Swiss Cultural space has been opened in Venice since February 2002. It is considered as an extension of the Swiss Institute in Rome. Highlight: THE CHURCH OF FRARI In the heart of the church lies the ancient choir, the only work in Venice which has maintained its original position and structure; 4,50 metres high, 13,70 metres wide and 16 metres long, with 124 inlaid and carved stalls.

The “Santa Maria Formosa dei Frari” church is one of the most remarkable gothic constructions in Venice. It treasures marvellous works of art like Tiziano’s “Assunta” (1518) -thanks to which he was hailed as successor of Giovanni Bellini, who painted for the “Frari” - friars - the triptych and the Pala Pesaro - altarpiece marked by an innovative spatial structure. Tiziano, almost ninety-year-old and affected by plague, asked to the Frari to be buried close to the moving work “Pietà” which was left incomplete in 1576 (it can be viewed today at the “Gallerie dell’Accademia”). La Chiesa di Santa Maria Gloriosa dei Frari è una delle più belle costruzioni gotiche veneziane. Splendide sono le opere al suo interno. Come l’Assunta del Tiziano (1518): la prima opera che lo rivelò come degno successore di Giovanni Bellini, che per i Frari dipinse un’incantevole trittico, e la Pala Pesaro, dall’innovativa impostazione spaziale. Founded in the 12th century, this church was rebuilt during the 17th century and, at the beginning of the 18th century, it was modified also its aspect, facing now the Grand Canal: the new façade made by the architect Domenico Rossi. Built in the middle of 1300, this church changed its original name (San Cristoforo) in Madonna dell’Orto when an imagine of the Virgin, found in a garden nearby, was brought in the church itself. In the middle of the 17th century, Venice was struck by a terrible plague; in order to free the city, the Republic of Venice’s Senate decided that a church should have been built, dedicated to the Virgin, asking her for Health (salute). Between eleven plans presented, it was chosen the one by Baldassarre Longhena and works started in 1631. He designed a temple having a central area on an octagonal plan, dominated by a huge dome with great arches. To see: “Nozze di Caanan” by J. Tintoretto, “Pentecoste” by Tiziano, “La Madonna Bizantina” work from the 13th-century Greek-Byzantine school. According to the legend, this is one of the eight churches founded by St. Magno, Bishop of Oderzo, in the VII century, and dedicated to the Virgin who appeared in a dream to the Bishop. However, the church, as we can see it nowadays, was built in 1492 by Mauro Codussi, the leading architect of the early Venetian Renaissance. One of the greatest examples of Palladio’s architecture, and by some considered his masterpiece, this church was built as a result of a motion carried by the Senate after the plague that struck Venice in 1576. It was built between the 14th and the 15th centuries and it is the largest church in Venice. After S. Marco, this was considered an “official” temple: it was used for the solemn obsequies of the dead Doges. It is one of the most beautiful VenetianByzantine buildings of the 12th century. The exterior of the hexagonal apse is very interesting, both for its architectural beauty and the wealth of its decorative elements. Five columns of Greek marble divide the interior into three naves. The old church, which belonged to the nuns of the convent bearing the same name, is located near the main church, which was built by Codussi between 1480 and 1500. The new façade is a typical example of Venetian Renaissance. Two rows of columns with beautiful capitals divided the interior into three aisles. The great altar is surmounted by a cross vault and a hemispherical dome. The stunning interior is literally covered with paintings. SANTA MARIA DEL ROSARIO CHIESA DEI GESUATI

Built by the Carmelites and dedicated to Saint Mary of Nazareth, it was designed by B. Longhena. The façade, made of Carrara marble, is an example of the Venetian Baroque style. Once there was also a marvellous vault frescoed by G.B. Tiepolo; unfortunately, in 1915 it was destroyed by Austrian bombs. To see: sculptures, gilt and polychromatic decorations and the fine marbles.

This is an 11th century VenetianByzantine building in the form of a Romanic Basilica. It is the oldest monument of this type preserved in the lagoon. The simple and solemn interior is made up of precious marbles and gilt mosaics. To see: the mosaics of the small apse on

The church of the Jesuits was built between 1726 and 1735, it was commissioned by Dominicans, after they took the place of the Jesuits, in order to replace the small church that still stands beside it. Giorgio Massari was the author of the church’s design and of the internal decoration, assisted by two great artists of the period: Giambattista Tiepolo and Gianmaria Morlaiter. The interior, with its single nave, side chapels and a deep presbytery, is beautifully balanced. To see: the altarpiece and the ceiling by G.B. Tiepolo, the altarpiece by Piazzetta and “La Crocifissione” by Tintoretto.

The church of S. Giovanni Elemosinario was founded before 1071, but nothing remains of the primitive building, due to the devastating fire that swept through the Rialto area in 1514. The current building has simple and somewhat classical interiors, richly decorated with many works: token of the special devotion of the school of arts and trades that used the church premises. To see: The altarpieces by Titian and by Pordenone and the frescoes in the cupola came to light again during the restoration work.

This 16th century Renaissance building, designed by Bartolomeo Bon, lodges the school dedicated to San Rocco, the protector of plague-strickens. His technique, as stated in written texts, consisted in blowing glass by means of instruments passed on by the lateRoman glassblowing activities. It is from those activities that this art developed in Murano and across Europe. The Murano industrial district benefited from the trade bond that the Serenissima Republic had with the Middle and Far East. The Murano art of glassblowing soon became the most renowned and sophisticated in the world. From the famous Islamic furnaces and from the Phoenicians, the Syrians and Egyptians - who had a longstanding glassmaking tradition Venetians learned secrets, techniques, instruments and colours that have rendered this lagoon production unique. In the past fifty years, drawings have made their way through century-long tradition and culture. A fundamental renewal that has enabled Murano glass to reach the most famous modern and contemporary art collections of world galleries.

Solo che qui, in questo distretto industriale ante litteram, ci si giovava dei contatti commerciali che la Serenissima possedeva con il vicino e lontano Oriente. Ci volle poco perciò a fare dell’arte vetraia muranese la più apprezzata e la più sofisticata del mondo conosciuto. Dalle celebri fornaci islamiche e dai popoli di antica tradizione vetraria come i fenici, i siriani e gli egiziani, i veneziani seppero raccogliere segreti e tecniche, strumenti e colori che conferirono alla produzione lagunare una singolarità riconosciuta da tutti. E fra tradizione e cultura millenaria si è inserito negli ultimi cinquant’anni il disegno. Una rinascita che ha portato il vetro muranese fra le grandi collezioni d’arte moderna e contemporanea delle gallerie di tutto il mondo.

Arte e design Qual’ è stato il momento esatto in cui il vetro è divento arte? Non si sa. Ma c’è un punto nella storia del Novecento in cui qualcosa ha avuto inizio. Era il 1953 e un tal Egidio Costantini... 1946 - Gio Ponti

ll’inizio fu Carlo Scarpa. Il grande creativo dell’architettura moderna fu fra i primi a cimentarsi. Nel 1933, a 27 anni, allora insegnante all’Istituto superiore di Architettura di Venezia, collabora con la Fornace di Venini. Che allora era Vetri soffiati muranesi di Cappellin Venini & C. e che aprirà “piazza” nel 1921. Cappellin antiquario veneziano, Venini avvocato milanese. Eppure furono loro a legare indissolubilmente il disegno all’arte del vetro. A capire il valore aggiunto di opere disegnate da Napoleone Martinuzzzi, Scarpa, appunto, Gio Ponti, Tommaso Buzzi. Ma quel che successe all’inizio degli anni Cinquanta, dopo un periodo bellico difficile per tutti, ha dell’incredibile e si ritrova nei libri di storia dell’arte e del design. Egidio Costantini non è maestro vetraio. Arriva tardi all’arte del vetro, ma ne capisce subito le potenzialità. Gravita a Murano come venditore, nel 1950 crea il “Centro Studio Pittori nell’Arte del Vetro di Murano” dove raccoglie i primi artisti veneziani che disegneranno per lui e per le fornaci muranesi. Presto (1953) si costituirà “La fucina degli angeli”. Il nome è inventato dallo scrittore francese Jean Cocteau, gli angeli saranno, fra gli altri, Oskar Kokoschka Le Corbusier: Picasso, Licata, Braque, Chagall, Moore Max Ernst, Arp, Guidi. E poi tutti gli altri, artisti, scrittori, scultori, architetti che contribuiranno a far conoscere le avanguardie artistiche attraverso il vetro. James Carpenter, Ettore Sottsass, Fulvio Bianconi, Gae Aulenti, solo per fare qualche nome. Le loro opere sono esposte nei più prestigiosi musei internazionali.

arlo Scarpa, modern architect of great inventiveness, was among the first artists to dedicate himself to this form of art. In 1933, at the age of 27, at the time professor at the Higher Institute of Architecture in Venice, he starts working at Venini’s furnace. The furnace, that opened in 1921, was then called “Blowed Glass of Murano of Cappellin Venini & Co.”. Cappellin was a Venetian antiquarian, Venini a Milanese layer. It was them who indissolubly linked the drawing to the art of glass and who sensed the added value of the works of art drawn by Napoleone Martinuzzi, Scarpa – see above – Gio Ponti and Tommaso Buzzi. What happened at the beginning of the fifties, in the difficult aftermath of war, is almost incredible and is documented in the history books of art and design. Egidio Costantini is not a master glassmaker and gets into contact with glassmaking art rather late. However, he immediately grasps its potential. He works in Murano as a seller. In 1950 he founds the “Painter Study Centre in the Art of Glassmaking of Murano” were he accepts the first Venetian artists who will draw for him and for the furnaces of Murano. It soon turns its name into “The Furnace of the Angels”. The name was invented by the French writer Jean Cocteau and the angels include, among others, Oskar Kokoschka, Le Corbusier, Picasso, Licata, Braque, Chagall, Moore, Max Ernst, Arp, Guidi, as well as all the other artists, writers, sculptors and architects that contributed to making all art avant-gardes known through glass. James Carpenter, Ettore Sottsass, Fulvio Bianconi, Gae Aulenti only to cite a few names. Their works are exhibited in the most prestigious international museums.



Abbiamo realizzato le Ali perchè crediamo fortemente nel valore di un progetto che vede l’unione collaborativa dei maestri vetrai e la felice sinergia tra la tradizione artigiana e la contemporaneità industriale. Opera selezionata dal Corning Museum of Glass di New York per l’anno 2004. Attualmente l’opera è esposta temporaneamente presso l’areoporto Marco Polo di Venezia in attesa di una collocazione definitiva ove possa gridare la bellezza e la creatività del vetro veneziano. Questa opera è una sfida tecnica ed artistica.

A rediscovered technique that, after a period of decline, has gained new momentum in the nineteenth century and is widely used today with its modern form. The Murrine, mosaic and millefiori glass are obtained from the overlapping fusion of various layers of coloured glass around a starting amalgam. The soft glass sphere coming out from that fusion is then pulled into a cane form. Within this glass are hidden colourful ‘flowers’ resulting from the glass overlappings. The canes, that can be several metres long, are cooled and then cut into small segments. The second process consist in uniting the various cold segments in the form of a mosaic. The whole is then heated thus uniting them in different compositions. A simple but at the same time skilful work that has evolved through the creation of new drawings. The Murrine glass appears for the first time in the first century BC, although there is no continuity between the Roman and Venetian glass which began to appear in the tenth century AD. It is only in the XV century (around 1490) that the Murrine glass begins being produced again by Marietta Barovier, who invented the cane for the production of the ‘Rosetta’ pearls. This period of glass production was however brief and a long period of standstill followed. It was only in the mid-nineteenth century that, thanks to the work of Bussolin and Franchini (father and son), the production of the Murrine glass gains renewed interest. In the first 1970s numerous artisans begin producing a large number of small ornamental objects, known as ‘murrine’. In those years, the production of the murrine was further renewed thanks to the intuition of Ercole Moretti and his brothers to put together various compositions of the murrine canes within a small ring made of copper. Once the whole has been brought to fusion it is perfected and polished.

Una tecnica riscoperta, che nei secoli ha trovato numerosi tramonti per poi rifiorire solo nella metà dell’Ottocento e risplendere oggi nelle forme più moderne. I vetri Murrini, il vetro mosaico e il vetro millefiori sono ottenuti grazie alla fusione sovrapposta di più strati di vetro colorato attorno ad un’amalgama di partenza. Il “bolo” che si ottiene è allungato ancora morbido in lunghi filamenti che nascondono al loro interno i “fiori” colorati delle diverse sovrapposizioni. Le “canne”, lunghe anche decine di metri, una volta raffreddate, si tagliano a piccoli segmenti. La seconda lavorazione delle “murrine” consiste nell’unire (a freddo) a guisa di mosaico i tasselli per poi unirli (a caldo) nelle diverse composizioni. Una lavorazione semplice ma allo stesso tempo ingegnosa che negli ultimi anni ha scoperto le suggestioni di disegni innovativi. Il vetro Murrino appare per la prima volta intorno al primo secolo a.c. ma non esiste continuità nemmeno tra i vetri romani e i vetri veneziani che cominciano ad apparire intorno al X secolo d.c. Per i vetri murrini in particolare bisogna attendere fino alla fine del XV secolo (1490 circa) perché se ne parli nuovamente con Marietta Barovier, l’ideatrice della famosa canna per produrre le perle Rosetta. Questo periodo di produzione di oggetti di vetro con murrine fu breve e seguito da un lungo periodo di completo oblio. Solo verso la metà dell’800, per opera di Bussolin e di Franchini padre e figlio, si assiste ad un rinnovato interesse per il vetro murrino. All’inizio degli anni ’70 del XX secolo si avvia da parte di numerosi artigiani una grande produzione di piccoli oggetti di ornamento, le cosiddette “murrine”. L’ultima “scoperta” avvenuta in quegli anni fu della Ercole Moretti & f.lli che ebbero l’intuizione di assemblare una composizione di segmenti di canna murrina all’interno di un cerchietto formato da una fettuccia di rame. Una volta portato a fusione, l’oggetto viene rifinito e perfettamente lucidato.

E’ un magico incontro tra acqua e fuoco, quello che la storia ha regalato a Murano, isola consegnata all’incorruttibilità del tempo per la lavorazione del vetro, che vi avviene da quasi un millennio. L’isola del vetro si raggiunge da Fondamente Nuove in una decina di minuti di vaporetto. Scendendo alla fermata Colonna, ci si può incamminare lungo la Fondamenta dei Vetrai che fa mostra di un’arte che ancora oggi costituisce la principale, e forse l’unica, attività dell’isola. Il primo riferimento storico del nostro percorso è quello della chiesa di San Pietro Martire, consacrata nel 1417, che raccoglie opere di Bellini, Tintoretto e Veronese. Dopo Fondamenta Cavour e Fondamenta Giustinian (con i rispettivi palazzi quattrocenteschi) si attraversa il ponte Vivarini sul Canal Grande, e poi, sulla destra, si percorre Riva Longa dove si incontra il Museo del vetro che raccoglie circa quattromila pezzi d’arte. Proseguendo, si raggiunge la basilica di Santi Maria e Donato. Consigliamo l’escursione di prima mattina per poi proseguire il proprio percorso in direzione Burano.

The history of the city of Murano has seen a magical encounter between water and fire. It is an island that, thanks to glass working - a craft which has been carried on for about a thousand years - is still untouched by the corruption of time. The island of glass can be reached with a vaporetto from “Fondamente Nuove” in around ten minutes. By getting off at the stop “Colonna” you can walk along “Fondamenta dei Vetrai” - were “vetrai” means glass-makers - that will display the main, perhaps the only activity of the island. The first historical reference of our route is the “Church of San Pietro Martire”, consecrated in 1417, containing works by Bellini, Tintoretto and Veronese. Passed “Fondamenta Cavour” and “Fondamenta Giustinian” - with its fifteenth century palaces - you will cross the “Vivarini” bridge on the Grand Canal and carry on, on the right, along “Riva Longa” where you will encounter the Museum of glass that gathers more than four thousand works of art. If you carry on along the same road you will reach the “Basilica di Santi Maria e Donato”. We recommend this excursion early in the morning so that you can then proceed towards Burano.



esurrection Sunday is celebrated by donating and eating hardboiled coloured eggs blessed in church. The egg is everything and nothing at the same time. It is the symbol of birth and Resurrection. This year, Easter occurs late compared to the previous year and recipes will contain ingredients which are typically found in April. In Venice, like in the rest of the peninsula, the consumption of goat and kid meat is a typical tradition deriving from an ancient Jewish custom. With the new season approaching you'll be able to find the fresh new aromatic herbs and ‘wild’ edible weeds spontaneously growing in your gardens that can be used for your Easter recipes. The “cavreto de Pasqua” (Easter roast kid) used to be spit-roasted and it was filled with rosemary, chopped bacon, garlic and sprinkled from time to time with white wine and pomegranate. The sauce of the dripping-pan was then used to dress the bitter wild weeds which had been previously boiled and squeezed. Happy Easter and do not forget to eat the “fugassa” (or ‘Colomba’, literally meaning ‘dove’, is a typical Easter cake ndt)!

THE RECIPE LAMB CHOPS STUFFED WITH FAT LIVER IN BREAD CRUST Ingredients for 4 people Fat liver 200g, flour 60g lamb loin 1.5 kg, sliced bread 150g thymus, rosemary, salt, hot pepper black truffle as needed white mustard diluted with water Garnish: Dry plums, roasted almonds sliced bacon fat, smashed potatoes

Cut the chops, carve them into the center and stuff them with the fat liver. Carve the plums, remove the bone and stuff them with fat liver and almonds then wrap them up with the bacon fat. Place them into the fridge for 30 minutes. Whisk the sliced bread and chop together thymus, rosemary and a bit of truffle, add salt and hot pepper, toast it all into an antiadherent pan. Cook the plum always into antiadherent pan. Cook the chops with a little of oil, dry them with blotting paper and “paint” them with the white mustard, dust them with the breaded thymus, rosemary and truffle. Serve with smashed potatoes, garnish with the plums and a paint of cooking soup.

a Domenica della Resurrezione si festeggia donando e mangiando uova sode colorate benedette in Chiesa. L’uovo è tutto in sé, e niente al tempo stesso. Rappresenta la nascita e la resurrezione. Quest’anno la Santa Pasqua è alta e di conseguenza molti ingredienti ci riportano a un mese di Aprile inoltrato. A Venezia come nella penisola non si può prescindere dall’agnello o dal capretto come da antica usanza ebraica, e se ci guardiamo attorno possiamo già pensare alle prime erbette spontanee e dire: “no ghe xe erba che varda in su che no gabia a so virtù”, ricordando che il “cavreto de Pasqua” lo si cuoceva allo spiedo farcito di rosmarino, battuto di pancetta ed aglio, irrorandolo di tanto in tanto con vino bianco e melograno. Poi col sugo della leccarda si condivano le erbe amare di campo, prima lessate e poi strizzate. Buona Pasqua e non dimenticate “la fugassa”.

LA RICETTA COSTOLETTE DI AGNELLO FARCITE AL FEGATO GRASSO IN CROSTA DI PANE Ingredienti per 4 persone: Fegato grasso 200g, tartufo nero qb farina 60g, carrè d’agnello 1.5 kg pan carrè 150g, rosmarino timo, sale, peperoncino senape diluita con poca acqua. Guarnizione Prugne secche, mandorle tostate fettine di lardo, purè di patate.

Tagliare 4 fettine di fegato ed il restante a cubetti, spolverare di farina, salare e cuocere in padella antiaderente molto calda per 3 minuti. Far raffreddare. Tagliare le costolette, inciderle a metà formando una tasca e farcirle con il fegato grasso, e incidere le prugne, eliminare l’osso, farcire con fegato grasso e mandorla, avvolgerle nel lardo e far riposare in frigorifero 30 min. Frullare il pan carre e tritare le erbette. Mescolare il pane e le erbette, salare ed aggiungere un pizzico di peperoncino, tostare in padella antiaderente. Cuocere le prugne in padella antiaderente e mettere da parte. Cuocere le costolette in padella antiaderente con un filo d’olio. Asciugarle su carta assorbente e spennellarle con la senape e spolverarle con la panatura alle erbette. Servire con purè di patate, decorare con le prugne e una pennellata di sugo di cottura.

The exhibition can be viewed at the ‘Palazzo Revoltella’, in the neoclassical Church of San Francesco – containing numerous works of the Ferrarese school – and in the Chiesa dela Beata Vergine del Soccorso – also known as the “La Rotonda” – entirely covered with Venetian ‘teleri’ (i.e. large pictorial compositions on canvas used for mural decorations). An itinerary giving visitors the opportunity to view altar pieces, frescos, paintings that enrich monasteries, convents, parishes, villas and palaces of a silent and hidden “Land between two rivers”.

La prima è che la mostra consente di individuare ambiti coerenti, che formano quasi più mostre affiancate: sui segni dell'antichità classica in terra veneta, sull’incontro tra i Tesori della Basilica di San Marco e quelli del Tesoro Sacro dei Musei Vaticani e sull’esistenza di un'originale arte “padana”, un'intuizione di Roberto Longhi, che pone a confronto, con opere strepitose, le diverse anime del Rinascimento così come esso si è declinato tra i centri del Veneto e della Lombardia. La seconda novità consiste nel fatto che, da quest'anno, la mostra di Palazzo Leoni Montanari diviene una sorta di grande anteprima, perché successivamente le opere saranno oggetto di altre specifiche esposizioni nel territorio da dove provengono.

Oreste da Molin (1856-1921) – refined portraitist, subtle observer and artful evoker of atmospheres – was one of the most sensitive interpreters of reality described through numerous scenes of popular life. He experienced the social changes of his time which he portrayed in his works with irony, subtle ability and moral participation paying particular attention to the life of the poorest classes. A good deal of his mature works, excellent for their virtuosity, are centred on those subjects. A careful preparatory work, on the occasion of the 150th anniversary of the artist’s birth, will enable the discovery and rediscovery of his wonderful painting. Ninety works of the most authentic interpreter of the great Venetian painting of the time – including oils on canvas, pastels and drawings – retracing the artistic route of the master-artist are on show at the Musei Civici agli Eremitani of Padua. Oreste Da Molin, (1856-1921), fine ritrattista, acuto osservatore e abile evocatore di atmosfere, fu a cavallo dei due secoli uno dei più sensibili interpreti della realtà descritta attraverso numerose scene di vita popolare. Fu partecipe dei mutamenti sociali del suo tempo che trattò con ironia, pungente arguzia e viva partecipazione morale, prestando particolare attenzione alla vita delle classi più disagiate. Buona parte delle opere della maturità, eccellenti per virtuosismo, sono appunto dedicate a questi temi. Ora, nel 150° anniversario della nascita, un attento lavoro preparatorio consente di scoprire o riscoprire l’emozione della pittura dell’artista. l’interprete più autenticamente realista della grande pittura veneta dell'epoca, in una mostra che, ai Musei Civici agli Eremitani in Padova, riunisce 90 tra oli, pastelli e disegni che ricostruiscono l’intero percorso del maestro.

“Restituzioni” is an initiative which was conceived almost twenty years ago and which has formed a relationship between private and public institutions responsible for the safeguard of cultural heritage. There are two novelties in this year’s edition, which is bound to be the richest of all. Firstly, the exhibition will present two coherent environments which almost form two parallel exhibitions. The subjects include marks of classical antiquity in the Veneto region, the encounter of the Treasures of the Basilica di San Marco with the Sacred Treasure of the Musei Vaticani and the existence of an original art created by artists of the Po valley area. Roberto Longhi had the brilliant intuition of confronting the diverse ‘souls’ of Renaissance through the display of marvellous works. Secondly, the exhibition at the Palazzo Leoni Montanari becomes a sort of preview, since the works will be later displayed in specific exhibitions in the cities where they come from.
