nlike any other Australian city, Darwin’s distance from the rest of the country is one of its main attractions. Over 700,000 visitors last year thought so too. Beyond its shady CBD streets, Australia’s northern-most metropolis offers a rich flavour of the Top End life.

TRACE INDIGENOUS FOOTSTEPS Take a Pudakul Aboriginal Cultural Tour on Limilngan-Wulna land near the Adelaide River. Learn about bush tucker and medicines as well as traditional spear making and hunting – pudakul is the aboriginal name for the freshwater hibiscus tree used to make hunting spears – from an Aboriginal-owned and operated business.

If you’ve resolved to be fitter this year, ditch your chair and opt for a standing desk instead. According to research, standing regularly helps reduce our risk of obesity,

diabetes, heart disease and an early death. Touting itself as “the world’s first standing smart workstation”, the Aspirus aims to make it easier for desk jockeys to make the switch. It can be used with any existing desk or surface and its userfriendly interface means you can control the height of your desk via its app or the button on the workstation without having to manually unscrew and adjust it. Other highlights include a sensor that tracks your sitting and standing time; a built-in laptop and mobile phone stand, as well as adjustable mounts. aspirus.co

FireChat, an iOS and Android app, lets users connect even without a mobile or Internet connection via Bluetooth. As long as they are within 210ft of each other, they can use the off-grid solution to exchange messages. And if there’s a crowd using the app, it lets users form a “daisy chain of smartphones”, so even those who are farther away can receive messages as long as they are part of the decentralised network.

When you’re a nation made up of natural atolls, the issue of climate change takes on greater significance since a slight increase in ocean temperatures can spell trouble for both the environment and local economy. At the Angsana Ihuru, guests who want to do their part to help conservation efforts in the Maldives can participate in its Citizen Scientist Programme to help record sightings of marine life. What would Andy Warhol think of Instagram were he alive today? Chances are, he would probably have been an early adopter if the polaroids he took of his celebrity friends are anything to go by. From 1958 till his death, he took scores of candid photos of his posse and surroundings, 30 of which will be on display at Andy Warhol: Social Circus. Held at Gillman Barracks, the exhibition is part of Singapore Art Week (16-29 January) and is the first time these polaroids from the 70s and 80s are being showcased together in Asia. Subjects include Warhol himself as well as such celebrities like Bianca Jagger (left), André Leon Talley, Diana Vreeland and Tina Chow. Admission is free. artweek.sg SILKAIR.COM | 13

SIDETRACK / FOOD SNAPSHOT

F No genteel Shirley Temple, this spicy aperitif is as complex as the famous dish after which it’s named WORDS LISA-ANN LEE

or a dish that is one of Thailand’s most famous culinary exports, tom yum goong’s origins remain a mystery. Some say an enterprising cook decided to take advantage of the abundance of freshwater prawns in the Chao Praya River (goong means prawn in Thai) and pair them with that trifecta of Thai herbs – lemongrass, galangal and kaffir lime leaves – to produce a heady, spicy broth that’s familiar today even to those who have never visited the country. For fans who cannot get enough of its complex bouquet of spicy and sour notes, the Banyan Tree Samui (99/9 Moo 4, Maret, Lamai Beach, Koh Samui) offers a refreshing crave-quencher: its signature tom yum cocktail (minus the shrimp), available at Saffron

and The Edge restaurants. Given its bold flavour profile, the cocktail stands on its own with equally robust dishes like spicy seafood or meat salads. How did the concept behind this somewhat peculiar concoction come about? Says Thaichatchawan Sanpoowa, bar & beverage manager, “It was inspired by our own herb garden – Thai herbs and spices add strong flavour dimensions – and we wanted to create an unusual drink that would make the senses come alive.”

DO IT YOURSELF Ingredients 45ml vodka 2 Tbsp brown sugar 2 pieces lemongrass stalk 1 lime wedge 2 slices galangal root 2 kaffir lime leaves 2 slices Thai red chilli 30ml fresh lime juice Instructions Muddle all the dry ingredients in a glass until the juices are extracted. Pour vodka and lime juice, and top with crushed ice. Stir all ingredients thoroughly. Add a stalk of lemongrass and a slice of red chilli for garnish and serve.

“POOR KID” SCAMS What’s hard is turning a blind eye to a child who appears to be in need. But if a child asks you to buy something from or for him or her, most likely you’re both victims. Be wary when: l A cute kid – sometimes with a

“sibling” in his arms – asks you to buy milk for the baby.

l A child comes up to you and

says, in remarkably good English, “I don’t want money mister, I need book for school. It costs only three dollars”.

The requests seem reasonable. You walk together to a shop, and make the purchase. The child beams thanks and you walk away feeling good. Here’s often the reality: as soon as you’re around the corner, the child returns to the store and sells the item back. The shopkeeper takes a cut, as does the cartel organising this scam all over town. The parents get just enough to encourage them to keep their child working instead of in school.

tourists are a lucrative source of handouts, education is not necessary and that begging is okay. In short, you could be trapping them in the cycle of poverty. l Do not engage with anyone

soliciting donations, visits to and volunteers for orphanages and schools. Not all of these institutions have the kids’ best interests at heart. Don’t make children tourist attractions.

If you do volunteer, choose your project carefully and volunteer for at least a few weeks. But remember that you could be taking a job away from a local.

BEST WAYS TO REACH OUT Use local resources. In Cambodia, ConCERT (concertcambodia. org) vets charities and advises the best ways to make your donation go furthest. Agencies like Friends-International (friends-international.org) match volunteers with the greatest needs. Your best bet is to donate through a registered charity in your home country, or give microloans through an organisation like Kiva (kiva.org). Bottom line: if you avoid being scammed yourself, eventually the scam business will be unsustainable.

WHEN YOU THINK YOU’RE HELPING BUT YOU’RE NOT l By buying things for or from kids – even giving gifts of candy or pencils – you are hurting their future. You’re signalling that SILKAIR.COM | 21

I

t was the year 1910 when French missionaries broke ground for a small stone church in Cizhong, a hamlet of whitewashed courtyard houses peering over an infant Lancang-Mekong River in the northern reaches of China’s Yunnan province. The French Mission had already been in Yunnan for decades, hoping to infiltrate the wilful Tibetan tribes of the north with Christian gospel. Enraged by the challenge to their faith, the Buddhist Lamas in the area initiated the Tibetan Rebellion in 1905, burning churches, beheading the congregations and forcing the missionaries south, deep into the Lancang-Mekong River Canyon and onto the relatively peaceful slopes of Cizhong at the foot of the Himalayas. Along with constructing the stone church with its towering ramparts and steeple-like bell tower, the missionaries planted Rose Honey, a wine grape that was brought to China in the mid-1800s to make altar wine, shortly before the Great French Wine Blight forced the extinction of this variety in Europe. Flushed with a purple hue and producing a crimson drop with a slightly sweet nose, Rose Honey thrived on Cizhong’s east-facing slopes, protected as it were from the fierce winds and weather of the Tibetan Plateau by the canyon’s

kilometre-high walls. Wine making was rudimentary; the grapes were harvested every September and the congregation would break the grapes’ skin between their fingers before burying them in clay amphorae, and wait for the grape juice to turn to wine. WINE RENAISSANCE A hundred years on, northwestern Yunnan has become the unlikely heart of a wine renaissance in China. Partly prompted by the aphorism, “the vines must suffer to make great wine”, and partly by the provincial government’s campaign to reinvent Deqin – the county to which Cizhong belongs – as the fictional Shangri-La described in James Hilton’s 1933 novel Lost Horizon, the wine business is booming in these

parts. From the barren terraces carved into the slopes below the Mingyong glacier of Meili Snow Mountain, to the arid, moonscape setting of the Tibetan village of Benzilan and the forested valleys of Tacheng, where the endangered golden monkey lives, the ethnic Tibetan and Naxi farmers of northwestern Yunnan have been turning in their traditional crops of wheat, corn and barley to grow vines. Up until now, China’s wine market has been dominated by government-sponsored wineries Shangri-La and Sunspirit, both of which produce table reds for the domestic market. But with French luxury wine behemoth Moët Hennessy now tending 30 hectares of Cabernet Sauvignon, Merlot and Cabernet Franc grapes SILKAIR.COM | 25

“Deqin’s wine industry is taking a giant leap towards becoming a serious player on the world wine stage”

in four remote Yunnan villages in hopes of making a “Bordeaux blend” for an international market, Deqin’s wine industry is taking a giant leap towards becoming a serious player on the global wine stage. Moët Hennessy – owner and producer of Dom Perignon champagne and Premium Cru Supérieur sweet wine Château d’Yquem – spent four years scouring China for the perfect terroir to grow Bordeaux wine grapes. Although the hamlet of Adong, which sits at around 2,500m in altitude, is over 2,000m higher than southern France’s famous wine-growing region, Moët Hennessy believes they have found an almost identical climate here, with low rainfall, spectacularly cold winters and sun-filled summers. “This is a dream project for any vigneron,” says Aurelie Badel from Moët Hennessy. “Deqin has fantastic potential for wine. Plus there is a rich Tibetan culture, breath-taking landscapes and a traditionally organic and handtended outlook to farming”. Moët Hennessy is planning to release its first vintage, called Ao Yun (literally “flying above the clouds”) by early this year. They 26 | SILKWINDS

are also hard at work putting the finishing touches onto a traditional rammed-earth visitor’s centre, hoping to lure tourists to this far-flung corner of the earth. PATH LESS TRAVELLED Both Adong and Cizhong sit inside the Three Parallel Rivers of Yunnan’s World Heritage zone – a mammoth 1.7-million-hectare swathe of land where the Jinsha (Yangtze), Nujiang (Salween) and Lancang (Mekong) rivers simultaneously tumble off the Tibetan Plateau, sometimes

within 30km of each other. The landscape is staggeringly beautiful here, but the northern reaches of Yunnan have never really fallen on the tourist radar. The residents of Cizhong are hoping the new wine boom will bring visitors their way. Songstam, a small luxury boutique hotel brand, opened a stone and wood lodge in the village last year and several guest houses are under construction. Most tourists come to walk through the old church, where a jovial priest holds mass three

times a week. Others come to try Cizhong’s wine, much of which is produced from cuttings of the Rose Honey vines planted in 1910. Lui Wan Zhen, a Christian of the Naxi ethnic group, learned winemaking from his grandmother, who picked up the skill from Cizhong’s last French Mission before they left in 1949 on the eve of the founding of the People’s Republic of China. After plucking the crimson fruit from the thick, blackened trunks of vines surrounding the old stone church, Lui stores the

At a glance, these are characteristics of a great drop, but the wine has sadly oxidised. Still, it’s not hard to see how far the wine could go with more sturdy equipment and a professional touch. Bordeaux may be halfway around the globe from Yunnan,

but sitting on the steps of the Cizhong Catholic Church with a glass of Lui’s red, surrounded by century-old vines and further afield, hectares of newly planted vines, I realise a little piece of the French city is flourishing in China. Often overlooked in favour of Thai or Vietnamese food, Khmer cuisine appeals with subtly distinct flavours that grow on you. Cambodians have perfected the art of creating harmony in taste in their cooking, wielding fish sauce and a variety of spices as expertly as their closest Southeast Asian neighbours. But the twist in Khmer cooking often comes from the generous use of savoury fermented pastes such as prahok, a pungent fish paste sometimes called “Cambodian cheese”. Prahok can be eaten plain with rice or porridge or added to a stir-fry or soup, such as the ubiquitous samlor machu (‘sour soup’), to enliven the taste. When you’re in Siem Reap, be sure to visit Cuisine Wat Damnak, which made British magazine Restaurant’s list of Asia’s 50 Best Restaurants 2015. Chef Joannès Rivière’s uses native ingredients, either grown on-site or sourced locally, to create delightful dishes (above) that marry French culinary techniques and authentic Cambodian flavours. If you’d like a more hands-on experience of Khmer cuisine, sign up for a cooking class at Mahob. Every class begins at a bustling local market where Chef Sothea Seng will guide you in selecting some of the freshest ingredients Siem Reap has to offer, before you head back to Mahob to learn to whip up three delicious Khmer dishes and a dessert. SEE KOTA KINABALU

What’s Kota Kinabalu’s best-kept secret? Drive to Kota Belud, an hour away from Kota Kinabalu, and take a speedboat to Mantanani islands. Try tuaran mee, a local dish made of yellow egg noodles with vegetables and chun kien (egg rolls). Shopping tips? If you’re in the city on a Sunday, visit Gaya Street market. Open from 6.30am till 1pm, it has everything from fresh produce and dried fish to colourful sarongs and handicrafts.
