Hello Utah. My name is Tyson Enniss and I’m
a born and bred Utah boy. My family even has a mountain named for them, Enniss Peak in Draper, honoring our pioneer roots. My upbringing ignited a passion within me for our environment and this community as a whole. I love our state and all of the recreation it allows us from skiing the best snow on Earth, to enjoying our wonderful outdoor concerts and many community events and festivals. I didn’t foresee myself staying in the service industry. I was simply in it to pay the bills. I’ve jumped around from restaurants to bars in my 20+ years in the industry. I look back and I thank those that have given me an opportunity to learn. My good friends at Over The Counter and Park Cafe taught me that a business truly is a family. We are all in this together. We’re here for each other. At the old Rivers Effortless Dining and Private Reserve I was close to getting a sommelier certification when the restaurant closed. That certainly would have sent me down a different path. From there, I was recruited to work at the new Lumpy’s Downtown. Though I had the experience,
I showed up for my first day of work not on their records as a new employee, and began working as a bar-back. In this industry, that’s entry level and it took a slamming night for me to jump in and help run the bar to show the owners my true potential as a bartender and eventually a manager. They entrusted me to run Bar Named Sue on Highland Drive when they brought that brand under the company umbrella. And then again when they purchased the old Oscar’s Club in Midvale and expanded the Bar Named Sue brand there. After several years operating the two brands, I was given an opportunity to come on board as a part owner. Running a bar is no easy feat. Owning one, doesn’t make it easier. But, it does give me a chance to give back to this community. That’s why Bar Named Sue supports Wasatch Back Country rescue with an annual fundraiser, we host monthly live art exhibits with local artists showcasing their work, and we support the local music scene weekly with live music on Friday and Saturday nights at both venues. This community gets better the more we support each other. We Are Utah and I Am Utah.

Brought to life six years ago (and still owned and operated) by Kristin and Todd Gardiner, T27 brings a unique culinary spin to the classic taco. Todd infused his street-food-inspired menu with items like Achiote marinated grilled chicken and house-made turkey chorizo. You’ll find some distinctly non-traditional items as well, like the succulent duck confit tacos or the customer favorite the P.B.L.T.A. taco (pork belly, lettuce, tomato & avocado— for first-timers). Salt Laker’s love their tacos, as evidenced by the rapid expansion of Todd and Kristin Gardiner’s stepped-up taco joint. Each Taqueria 27 location has its own daily specials that vary based on seasonal flavors, the freshest fish and the creativity of the chefs. The daily GODs, TODs and FODs—guacamole, taco and fish of the day—are ever changing with the seasons. And don’t forget to sip on the MOD— the margarita of the day. Speaking of sips, the establishment offers a full tequila and mezcal menu along with a great selection of beer and wine. Enter the modern and inviting Taqueria 27 and you’ll wish you could sit and dine for more than one meal, especially during patio season. It’s a fun and unpretentious environment great for dining with family or friends. Just a few years ago, there was only one location along the Wasatch Front. hen Joe and Missy Cannella opened Cannella’s Italian eatery in 1978, the Salt Lake City dining scene was vastly different than its current iteration. At that time, places like Sea Cove, The Hawaiian, Mama Eddy’s Beanery, and the original Finn’s lined the streets. Now, 40 years later, Cannella’s stands as one of the city’s most beloved institutions continuing in it’s mission of serving authentic Italian cuisine. Mushroom risotto, spaghetti and meatballs, lasagna, chicken marsala and all other mediterranean favorites line the menu pages along with a black and blue salad that will leave your taste buds hollering delizioso! There’s also an array of delicious sandwiches—some favorites include a house made meatball sandwich, a delectable parmesan sandwich and a reuben. Each option is memorable and worth a trip to Cannella’s to devour each one. The seafood scampi is also a crowd favorite, as is the zucchini rolls for the vegetarians. At Cannella’s there’s truly something for everyone. Joey, the son of the late founder Joe Cannella, has expanded the restaurant and installed its own bar and lounge. The lounge has become one of the friendliest drink spots in town, complete with a killer playlist of tunes that somebody with excellent taste in music put together. While updating the restaurant, Joey Cannella spent a lot of time looking through old black-andwhite family photos. The walls of Cannella’s are now filled with those lovely family photos. He clearly misses his dad, Joe, and so does Missy, his mom. But then, so do many Cannella’s customers, who remember him fondly. The longevity of Cannella’s can also be attributed to the service, which couldn’t be better. located just across the parking lot from Smith’s Ballpark,” says Rob, “and we have a really nice patio so we get a good turnout on it for game days. And with the Trax stop just across the street, we’re kind of a natural stopover.” Ron added, “We were originally looking for a building downtown, but with the 1300 South freeway exits so close, and Trax, and the ballpark... We just decided we wanted to put our energy in here. It’s home now.” Rob and Ron agree that the big draw isn’t from the baseball fans though. It’s from burger fans. “We were fortunate enough to have taken first place for Best Burger at the World Food Championships in Las Vegas back in 2012,” say Ron. “It’s the beef,” adds Rob. “It’s on the grill within a day or two of being ground.” And the bacon? “We twice-smoke our bacon in-house every day,” Rob says, “It’s the best bacon I’ve ever had, but it’s not just great beef and bacon. Local buns delivered daily, as well as the produce. And our staff is well aware that they are cooking and serving a world class burger. They take pride in that and they’re good at what they do. It’s those details that make us stand out.” So what’s next for the popular watering hole? “We get requests from customers all the time for another location by their house,” laughs Ron. “We’re always looking to improve and expand,” Rob says. “But it has to be the right avenue. Something our customers already want, and something we’re good at.”

elcoming the patrons of Lucky 13 to its front door is the iconic big red tractor. The tractor embodies the hard work that went into opening this Utah roadhouse. Started in 2009 by three friends, a construction worker and two firefighters, Lucky 13 was a labor of love from the beginning. “We just wanted to open the kind of place that we wanted to go to.” says co-owner Ron Lay, “A place with a relaxed vibe, great food, and good, reasonable drinks that go beyond a Jack & Coke.” That desire came to life in the form of an old building finished with lots of wood and iron, that’s adorned with antique Americana giving Lucky 13 a solid, old-school feel. The menu, featuring award winning burgers, has a varied beer selection to complement the well stocked bar that is highlighted by an impressive whiskey and mezcal showing. Having working firefighters as partners made co-owner Rob Dutton the de facto General Manager from the beginning. Already having some bar managing experience, he left construction work behind for good and made Lucky 13 his home away from home. “I was head-cook, and head bartender as well as manager when we first opened.” says Rob. “It was tough back then, but in the long run it’s paid off. I wrote the job descriptions because I’ve done them all.” That experience from the trenches is especially valuable when spring brings baseball season, and baseball fans. “We’re

ome of the Jazz, Grizzlies, Real Salt Lake, Royals, Utes, Bees and others, sports are integral to the fabric of the Utah community. Hoping to fuse the gametime atmosphere with a complete dining experience, Lisa and Dave Forman launched Legends Sports Pub in downtown Salt Lake City. While the sports bar is a local success today, it wasn’t smooth sailing the first time the pair traded in their white-collar jobs for an apron. “My background is in corporate sales and Dave worked in exploration drilling and mining,” Lisa said. “We got tired of traveling all the time and not being home with our kids. We had no experience in the area, but my husband saw something in the newspaper one day and said, hunny, why don’t we try this.’ It was a struggle at first, there was a steep learning curve and we knew absolutely nothing about the restaurant industry. To say we failed at first is an understatement.” The secret in creating a now flourishing sports bar? It lies in the values we find in sports—dedication to a cause, hard work and respect. “We were both athletes,” Lisa explained. “I played basketball, volleyball and track and my husband played football and track. All of our children were athletes, too—our daughter participated in cheer, and our other three boys played baseball and hockey. Our youngest was into competitive hockey. When he was 14, he was on a travel team and did really well and played Junior Hockey. We all learned valuable lessons playing
sports. It teaches you hard work, discipline, getting along with teammates, respect, stuff we wanted to emulate in our business.” When we think of sports bars, we often think of tasteless, unhealthy food. At Legends, that’s far from the case—the Formans love stocking their shelves with local ingredients, spirits and beer. Quality service and meals created a haven for not just sports viewers, but corporate meetings, wedding parties, celebrations of life and birthdays. “Our food differentiates ourselves from everyone else. Everyone has an idea of what sports bar food is, and it’s not good—it’s deep fried and unhealthy. It’s a lot of work, but it’s what we believe in. You can get alcohol and TV’s anywhere, but you can’t always get good food. “You still have to get people in the door if the Jazz, RSL or the Utes aren’t doing well or are out of season. So we try our best to get people in no matter what sport is going on. We offer our private VIP room free of cost, fit with projectors and sound systems for corporate events—if someone is already coming into our place and ordering food and drinks, we don’t think it’s right to charge even more on top of that to

rent a room. As a mainstay in the valley, the Formans have plans to improve customers’ experience at Legends even further with a new weekend brunch, all day breakfast and a Bloody Mary bar. An additional location is in the works, too. However, it’s the relationships with everyone that steps through the door that are most fulfilling for Lisa and her family. “It’s the hug, smile or experience that we thrive off of. That’s what makes it worth it. We want everyone who comes in to feel our love and energy. You never know what someone is going through and how good it can feel getting away for a little bit in a good environment. wenty five years ago, four of the six Pappas siblings: Dino, George, John and Stephanie opened Roofers Supply with the vision of building a world class distribution company. “Driven by our desire to succeed, everyone worked tirelessly. Through our dedication and focus, along with the combined efforts of all employees, the Company has grown from its original two locations in Salt Lake City and Ogden, to include operations in Lindon, Cedar City, St. George and Logan,” states Dino. While Roofers Supply is proud to be the largest and only local roofing distributor with a statewide presence, the Pappas family has never forgotten what powers their success: the people who work for them and their loyal customers. Being part of a community also means giving back, so the company teams with the Utah Food Bank to host its twice yearly food and clothing drives. “Our winter hoodies are such a hot commodity, we see people wearing them all over the state. Younger generations are invited as well, but just having the Pappas surname doesn’t automatically offer an inside track to advancement within the company; everyone starts either on the sales or delivery team while they earn their stripes within the company. Starting from humble beginnings, George Pappas is proud of how his family businesses have evolved. “My dad was in construction and transportation,” he continued, “In 1964, our parents founded Pappas Builders Supply, which they operated out of our home.” On many occasions, the Pappas family shared their table with the people who stopped by. “ We weren’t wealthy by any means, and we shared what we had. When additional people gathered at our dinner table, mom reminded us to be more modest in our portions as there were more mouths to feed. We learned that sharing with others, is an invaluable experience.” All six siblings grew up working in the family business, doing building demolition to reclaim lumber, brick and steel. Today, Pappas Builders Supply is a long haul, predominately flat-bed, trucking company. There is an

hen we picture the U.S. Marine Corps, we see the pride of the Armed Forces, fit with strong individuals who sacrifice more than most will in their lifetime for a cause greater than themselves. What we don’t imagine is that Marines are often our neighbors, friends and family, living “normal lives” yet answer the call to defend the nation’s land, sea and air. The Marine Corps is a fast-growing career path for Utahns. It certainly takes a strong-willed person to take on the challenge, but to serve is a debt repaid with high interest in the form of benefits, career stability and purpose. Utah-natives Staff Sergeant Samuel Balle, Lance Corporal Austin Roberts-Daniels and Private First Class Parker Pratt offer some insight on their experience within the Marines. SSgt Samuel Balle, a recruiter for the Salt Lake area, explains why you should join the Marines: “The biggest thing that caught my eye was the uniform. After that, I bought into what it takes to be a Marine. I wanted to be part of the fight after 9/11 after I graduated from Copper Hills High School. Some individuals do it for the tangible things such as financial stability or retirement. What separates military service are the intangibles—self-confidence, discipline and giving up momentary things for what you want in the end. “We have over 250 jobs in the Marines, but people only think of infantry,” Balle continued.
Many young Americans have preconceived ideas about what we do as Marines, or that we are all infantrymen. My job is to educate them on their options and the vast array of opportunities the Marine Corps has to offer. We have jobs that take pictures on deployment, write for public affairs and offer a ton of technical skill jobs. As soon as someone determines their top three jobs they want to do at the Marines, my job is to get you one of those three. It makes our country better.” LCpl Austin Roberts-Daniels is reintegrating into civilian life after a deployment overseas. Delving into his experience, Roberts-Daniels said, “I was recently deployed to Australia, and it was great to see a different culture and get that experience seeing a different part of the world. You take everything you learn from boot camp and keep your good habits. Everything you learn in the beginning is all you need for the rest of your career. I chose the Marines because I wanted to be with the best. They’re hardcore, they’re professional and it’s everything I wanted to be.” PFC Parker Pratt grew up in Salt Lake City and recently finished boot camp after graduating from Riverton High School. “My recruiters prepared me for boot camp,” Pratt said. “It was demanding—the Marines teach you discipline and made me appreciate what I have. I explored every branch, but if I’m going to put in the dedication and effort, I wanted the Marines because I wanted to serve my country with the greats.”

Peter Van Dyke, CEO of Metric Media, explains how his Utah-based company is helping local businesses adapt to the digital age.
working that well, it needs to be changed. Is your customer experience a positive experience a negative one? Is it a song that’s playing that makes everyone’s mood shift? If you played something different, did people’s emotions change to an upbeat one? It’s taking what you’re already doing and providing more data points. It increases the overall experience and putting more value to your customer experience and tweaking that experience to the data provided.
Q: What exactly is Metric Media and how was it conceived? Peter Van Dyke: Metric Media is about bringing big data to the little guys. We provide high-end tech to small business locations and analytics data which makes sense for them. We provide them this data through our interface on a simple platform. In the form of kiosks and screens, we have embedded cameras, just like a phone and laptop have. All of them take in data points businesses never had before such as how many people entered their business, how many customers are male or female, how tall or short, age groups between them—young adult, adult, senior—and their demographic. On top of that, on the outerface, a business can promote their brand while having our platform running in the background and be able to pull up the data. That’s the product and the core of Metric Media. In a nutshell, it’s bringing big data to the little guy and small businesses.
Q: Is it challenging to explain those benefits to your clients? What are some other challenges? We love to be able to show what our product does rather than explain it—we try to bring it in and show it. People may think it’s too technical of data that they need, or don’t need. But being able to show them is huge. We make it really simple. We’ve simplified the interface to make it easy to read for our customers.
As far as myself, it’s been a concept of mine for the last couple of years with a big push in the last year to put our product in the market. We’re making our push this summer with some of our units—we have about 1000 units coming throughout the year. At Metric Media, we hone in on the metric and data aspect, but also the media aspect. By providing the media aspect, we provide data our customers never had before in media creation. We can touch up websites, submit photography, all sorts of media content. We’ve even done drone services before when we’ve been asked to do so. Q: What are the benefits of small businesses using analytic tools? A lot of our analytics do heat sense mapping and emotional expression tracking. If you took someone walking into a cupcake shop, for example, we can tell if that user is having a positive experience, negative, just a passer-by, if something caught their attention for a few seconds or a minute, et cetera. People think we may be doing something negative with tracking, but there isn’t any collection of personal data. It’s all just general categories of data points with specifics, like I mentioned before. Q: Digital technology is always adapting. How do you keep up and keep evolving your products? For everyone that is scared of technology, there’s another that love it as well. We’ve kept up with the cool aspect and keep up with latest and greatest technology in the digital realm. While the facial analytics may be a little scary and hard to explain, we’ve embedded it and people love the sleek look and people know their business need to go digital. We make sure our products appeal to that audience for their benefit. We also try to keep up with industry trade shows and where the technology and market is going, so we’re always change. Why on earth would I go to First Baptist Church? Baptist? Are you kidding me? I would not be caught dead in a Baptist Church!
