ways, it’s been a challenge and a blessing at the same time. It has most definitely taught me to live in the day. But enough is enough and I’m sure that we are all looking forward to cooler weather, less need to stay put and more interaction with family and friends. Until then, and until we get that promised vaccine, we have put together some great articles for you to peruse that will give you plenty of ideas to carry you through the next few months. From all indications, the home building/design/ decorating industry has been thriving during the last several months. Hence, it seemed timely to present a Builders Issue to showcase some of the eye-catching trends that are being offered from premium builders and designers in our area. The four featured homes are each unique in both exterior and interior styling. It is almost impossible to pick a favorite.

Additionally, we have some fabulous food ideas including rice grits, square biscuits (yes, that’s “square”) and a wild mushroom dinner. And, of course, some very good tips about the wines that you will want to consider for now and later. Since we’ll most likely be staying indoors for a bit longer, check out some good reads in Off the Shelf, some fabulous unexpected artwork in Composition, an inspirational floral arrangement for In Bloom and some collectable dogs that need very little constant care in Treasure. Have a gratifying fall season. We’ll be working on even more home-centric stories for our winter issue, out this November. Enjoy!

Separate vanities back up to one another behind LED lighted mirrors, each with its own entrance to the closet.

SUSAN PEACE-VERNON had long wanted to use a copper tub as the centerpiece for a primary bath design and this lake home at The Cliffs at Keowee Springs provided the perfect opportunity. “When it comes to bathrooms, most people these days are looking for a staycation,” she says. Peace-Vernon is a designer and Vice President of Dillard-Jones Builders, a Greenville firm that specializes in a turnkey experience, shepherding clients through each phase of their custom build from architectural renderings to the finishing interior touches. “We sit down with our clients and design their home from scratch,” Vernon says. This home was built as a retreat but, should it one day become their primary residence, the owners wanted a more modern aesthetic than the traditional lake home. Peace-Vernon’s take on this request combines subtle rustic touches with glamorous detailing. She calls the look “mountain modern.” In the bathroom suite, she utilized the freestanding copper tub as a jumping off point and matched it with a his-and-her vanity wall. “From there it all fell into place, from finishes to function,” she says. For a bit of a natural element befitting the lake setting, Peace-Vernon selected stone tile with a chiseled edge and took it all the way up and over the top of the vanity wall. She then went full modern with LED lighted mirrors. The clever layout of the vanity allows two people to be in the bathroom together while still maintaining a modicum of privacy. Each side of the vanity has its own entrance to the master closet as well, the very model of morning efficiency. Recognizing that given the choice most homeowners would pass on cleaning glass shower doors, the Dillard-Jones team did the math to execute a fully open walk-in shower but sized it to limit drafts. The shower is tucked away just beyond a small vestibule that provides a moment before stepping out in the larger bathroom. Geometry also came into play in the floor design, where four different sizes of tile are arranged in a Versailles pattern. Topped off with a beaded chandelier, the bathroom suite is an ideal marriage of form and design.

DRIED ELEMENTS: Broom Straw and Natraj Willow create vertical and horizontal dimension to draw the eye. FORAGE: Gold Dust Acuba, fern, moss and Crocosmia (a perennial from the iris family) fill in the mid-range and can come straight from the garden. PURCHASE: Sunflowers and Amaranth are both flowering seeds, perfect for harvest time with their rich, saturated color and are available for purchase locally. NATURAL ELEMENTS: Objects of the natural world help ground this display. Add moss around them (even inside the turtle shell) and use floral picks to secure.

ate summer and early fall always seem to provide us with a bounty of materials to help create a display for the seasonal table. All you need to do is to go searching for them. We turned to Frank Ogletree, of The Embassy Flowers & Nature’s Gifts, who is an expert at foraging just the right pieces to make a spectacular arrangement. As usual, he didn’t disappoint. Not only did Frank utilize plants that can be found in our gardens or along the roadside, but he added two unique pieces, a turtle shell which he found several years ago and an antler, that add an unexpected visual to the display. When asked why he picked these particular items he said, “I appreciate the beauty in nature and enjoy working it into my designs.” Our goal was to use something out of the ordinary as a container. Something that may have been overlooked as a possibility when it seemed easier to use a vase. Our choice is a vintage Italian Tole lidded metal ice bucket with a built-in plastic liner that is a perfect autumnal color. When picking a vessel, be sure to waterproof test it before using. Fill it with water and let it sit overnight before creating your arrangement. If you’re still not certain about its durability, place something waterproof underneath it to protect the surface on which it will be placed. This fall season, think outside the vase and dazzle your family and friends with your creativity. Explore nature first and maybe you’ll be lucky to find some treasures like Frank’s. Or take your chosen container to your favorite floral designer and let everyone think you did it all by yourself. It will be our little secret.

Ice Bucket Challenge

This 1950s Italian Tole ice bucket with its Chinoiserie styling makes an ideal container to bring to the florist. Its exterior is lacquered finished and it's lined inside the bucket as well as inside the lid. We like vintage pieces that can perform multiple tasks and think this arrangement can go from dinner party to sideboard stunner and back to the bar without missing a beat.

The newest finish that is trending is the black stainless finish. There are not many options in this finish; however, more manufactures have started offering it and you will see it more and more. The black stainless finish is very strong and gives your space a modern sturdy style.

T

here are five levels of boredom: indifferent, apathetic, calibrating, reactant, and searching. The levels are mapped on an axis of how negative they feel and how moved we are to do something about it. A 2014 study in The Journal of Experimental Social Psychology found that bored people “are likely to engage in sensation seeking.” This is especially true for creatives. Nine months into a pandemic, we have all worked through these levels and back again. And, evidence of spikes of creativity are all over social media and found in the innovative ways folks have reinvented their businesses under restriction. Erin Hughes is a fine art photographer and an encaustic painter with studio space at GCCA. She began photographing “beautiful things” to work through the grief of losing her father earlier this year. While capturing floral arrangements in her home studio, her daughters’ “fancy rat” Piper entered the frame. “She was just as surprised to be in the scene as I was to photograph her there,” Hughes says. “This is when the beauty of reality, even the often seen as ugly side of reality, began to demand my attention.”

A long-time lover of art and art supplies, it took Hughes some time to find her medium. In a darkroom, watching an image she’d captured appear on developing paper, she became hooked. “I love photography because you start the process with an established frame and then make decisions on what to include and exclude from that frame. It’s a conversation between you and the world in front of your lens.” Hughes says the intention behind her work has always been to grasp the sense of beauty and wonder that accompanies a child’s view of the world. Creativity has always played a role in helping people deal with stress, fear and uncertainty in times of crisis. Her father’s death was the first real loss she’d ever experienced and Piper’s visit into her studio was a moment of unplanned grace. “I desperately needed to escape into that goodness, that magic of light,” she says. “This moment is where my quarantine education began.” In the days that followed, Hughes and her three daughters created an environment for Piper to explore, adding snails or carpenter bees to the composition. At first, she would shoot the scene and add Piper in later but found that the image was simply less interesting. Admittedly, Hughes has never been overly fond of the idea of a pet rat. “Their faces, their mannerisms, and bodies were adorable but then

there’s the tail,” she says. “I mean, hamsters look so similar, yet no tail. The tail still gives me goosebumps!” But while photographing the rat within still life florals, she watched Piper discover new things, watched how she moved, and her sweet expressions and she came to care for her personally. “The absence of the usual noise allows us to see more clearly and pay attention to the beauty that surrounds us each day,” says Hughes. “It's right in front of us but we rarely take the time and let it hold our attention.” The photo series of Piper has become a dose of much needed whimsy during a strikingly difficult time and she has garnered a growing audience on social media, thirsty for inspired content. “I had so many people telling me how much they looked forward to the Piper pictures each day,” she says. She’s finished about three dozen images that include Piper and believes the series is complete. They will become matted and signed fine art prints. To keep up with demand, Hughes has expanded and will also sell event style posters with text, a first for the artist. Since Piper has retired her position as muse, Hughes has added tortoises, ducklings and a hedgehog into her compositions, which continue to feature flowers from her garden and what she can source locally that’s in bloom. “These are more singular still life scenes,” she says, “built on the same idea of finding beauty in the reality right around us.”

Rising towards the clouds from its primary manicured lot in Le Jardin, the Bailey home is a beacon of white hard coat stucco and clean mitered glass.


Chris Bailey, founder of the design/build firm Stoneledge Properties, worked at a building materials supply house when he was in college. After a brief foray into computer science, Bailey thought of how his father had owned a masonry contracting business and realized something: building is in his blood. He spent eighteen years in the materials distribution side of the industry when he and his wife, Meranda, formed Stoneledge to become artisan developers in the luxury home sector. The year was 2004 and they’ve never looked back. They are known for bringing a modern brownstone concept to Greenville with the development The Brownstones at Hollingsworth Park. Today, the Baileys are embarking on their most ambitious development project yet as a founding partner at Le Jardin, a 55-acre gated community in the heart of the Greenville Corridor (Stoneledge Properties is one of several approved builders). They decided almost immediately to build their own home on a prime lot and showcase the cutting edge designs they envisioned for the Le Jardin community as a whole. Inspired by the neighborhoods of Myers Park in Charlotte and the Buckhead area of Atlanta, their home takes a traditional yet modern spin on architecture. Working with architect Kevin Culhan, Chris took notes from French chateau, English manner and transitional styling to construct a residence of timeless modernity. “The response to this home has been overwhelming,” Chris says. “One of the things we’re trying to do throughout the neighborhood is consistent architecture and unique landscapes,” he says. The couple styled their own yard after European gardens and stately English motor courts, down to constructing a contemporary take on a cottage-style detached garage. The home’s roofline, with its shake shingle pattern, cuts a dramatic figure that seems to touch the clouds, while exterior walls are white stucco. A pre-cast stone from Classic Stone in Charlotte forms an arching entry flanked by two outdoor gas lanterns custom designed by famed New Orleans’ purveyor, Bevelo. The interior design is the work of Bailey’s wife, Meranda, who is Head of Design for Stoneledge. She’s learned that when building a home of this magnitude, it helps to start with small inspirations. “The first thing I chose was the hand cut marble tile on the back of the shower wall. That blue color is woven all throughout the home,” she says. Further inspiration came from the striking gold and black patterned marble that backs the media bar. “I wanted to have little pops of glam. I wanted something to draw me in no matter where I stood.”

Meranda refers to the four-bedroom, sixbathroom home as having “destinations” rather than rooms. One such example is the gold-gilded Champagne bar near a 2-story wall of glass. The glass wall, behind an open-riser floating staircase made by The Heirloom Companies, required the expertise of a structural engineer and consists of twelve separate windows from Sierra Pacific Window and Door Company. This destination has become a favorite gathering spot for the Baileys to watch the neighborhood wake up each morning and often to toast the setting sun at the close of day. Chris says that the bar was one of the elements that drove the design of the house and another was the kitchen. “We wanted something that had a more timeless feel to it. We also wanted it to be flooded with light,” he says. The kitchen is open and visually connected to all of the living spaces, but still achieves the feeling of its own dedicated place. A custom-built French range by Lecanche was a 25th anniversary present for Meranda. Made to order, it took nine months to arrive. “We built the kitchen around that range,” she says. A pyramid-shaped skylight stuns with more natural light over the island; and plumbing and fixtures are by Rohl, handmade in England. Meranda had particular ideals about the primary ensuite closet as well. “When I’m working with homeowners, I want them to think about their closet,” she says. She designed her walk-in to feel like a boutique, a perfect destination for her collection of designer handbags and a dressing room off the closet features a signature Christopher Guy occasional chair. The bedroom suite opens via French doors to a private spa patio with a reflecting pool that spills into the main pool and connects to a larger outdoor living space. A convenient perk to waking up here every morning is a custom-built coffee and tea bar inset in the Bailey’s bedroom. “If you’ve never designed and built a custom home before, you’re missing something special,” Chris says. “It doesn’t matter the square footage. Everything is in the right place for you, everything works the way your mind works and the way you want to live.”

Konrad Nyblom, Project Manager for Cobblestone Homes, has always lived straddled between two cultures, the Southern US and Scandinavian. “I grew up in Greer,” he says, “but my Dad is from a Swedishspeaking area of Finland. I have dual citizenship.” His father, Tomas, started Cobblestone in 2010 as a custom home builder in Greenville with the help of his wife, Mindy, when Konrad was attending College of Charleston. It was there that Konrad met a Finnish student named Heidi and ended up finishing his degree in Helsinki, Finland where the couple married and spent four years together before returning to Greenville. Heidi Nyblom received her Master's Degree in Architecture during their time in Finland and is the in-house Residential Designer for Cobblestone's custom homes. As Konrad explains it, “She designs and I’m on the business end.” Working harmoniously together at Cobblestone and sharing the same passions for blending modern simplicity of Scandinavian design with the Upstate’s more traditional vernacular led Konrad and Heidi to open BLOM Design Studio last year. BLOM and Cobblestone now work in tandem to serve an evergrowing portfolio of custom home builds. Driven by the conviction that thoughtful, efficient and beautiful design should be available to all, Konrad and Heidi used the design and construction of their own home as a way to embody their philosophy. After a 10-month building process, the couple moved into their new four bedroom home in Greenville’s North Main community, a location that was an intentional choice for the international couple. “Moving from a big city, we wanted to be able to walk places and feel connected to the places that we go,” Konrad says. Because they were building in such an established neighborhood, blending with the traditional surroundings was important. The Nyblom home sits at the end of a concrete retaining wall and walk-up, hugging a dense boundary of mature trees. Heidi spent six months designing a footprint that would best use what the lot offered without requiring the removal of any trees. “We don’t want to design a home until we know where it’s going. We want to be stewards of the land and help it to reach its potential,” Konrad says. The final design was an H-shaped home with the main living areas facing the old growth poplars and oaks to provide a peaceful private view. The exterior blends Hardie plank siding with accents of cedar tongue and groove for a clean contemporary look. The double gable roof makes best

use of the lot’s narrowness while complementing both the surrounding tree line and neighborhood. Going with a standing seam metal roof was both a stylistic and practical choice, “We’re trying to stray away from temporary architecture. We want things that last and patina with age,” Konrad says. The elevated deck in the middle of the home is made of Siberian larch wood, a slow growing ecologically sustainable alternative to composite material that doesn’t need to be treated. It will last a lifetime. Heidi’s design makes an intentional connection with the outdoors. “When you walk in you can see straight through to the backyard,” Konrad says. The focal point on the main level is the large custom built microcement wood-burning fireplace. “In Finland, the homes are designed around the fireplace. It’s a big part of the lifestyle in Scandinavia,” Konrad says, who experienced Finland’s Kaamos, or “polar nights” that occur each fall. This fireplace also serves as a functional separation between a more secluded back living area and the street-facing front and an abundance of glass ensures that high trafficked areas are washed in natural light. A “birdcage” partitions the stairs from the lower-level den. The striking metal design element has two practical purposes; it keeps the couple’s two-year old safe around the top of the floating staircase while allowing the spillage of window light. The den’s landing is an open sitting area which offers access to Heidi’s studio and a guest bedroom. The polished concrete floor adds another minimalist-inspired element while also making an art studio easy to clean. This level also houses a sauna with a connected Japaneseinspired post-sauna relaxation area open to the outdoor breeze. Konrad says, “it goes hand-inhand with Scandinavian design these days, emphasizing natural materials and letting materials speak for themselves.” Several Baltic birch furniture pieces throughout the house, including the downstairs coffee table, a record shelf in the living room, a bench in the mudroom and the kitchen table were designed and built by Konrad and are available for others to purchase through BLOM Design Studio. Everything from material selection to intended use has been thoughtfully considered. “We are passionate about simplicity and a house designed for the way you live,” Konrad says.

Ray Foral, Co-Founder of Ridgeline Construction Group, was influenced by the American West while growing up in Eagle, Colorado. “My grandfather was a builder. We built my family home when I was in fifth grade, and another one when I was a Junior in high school,” says Foral who worked in construction throughout high school and college. Now with over 22 years of experience building high-end homes, Foral still thinks about his grandfather Lloyd Eichler’s legacy. He was a man who believed, “if you really want to do something, you can do it. And if you care about what you’re doing you can do it well,” says Foral. The grit was put to the test when Foral and his partner Terry Lawler started Ridgeline during the most challenging economic times in 2008 and again in 2011 when they found themselves with only one home under contract when a call led to Ridgeline’s building a lake house designed by Travis Mileti of Mountainworks custom home design. Featured in our 2017 winter issue, “Home of Dreams” (as we titled it) was an impressive example of design execution at The Reserve. It was a project that Foral believes put Ridgeline in the mix for the most challenging custom high-end residential projects in the area. “I personally think of challenging as fun, so that’s not a negative term,” Foral says. This stunning Lake Keowee home was completed by Ridgeline just last year. Minimal and modern transitional, it opens to kitchen/dining/great room living that flows with polished concrete under foot and striking views of the lake from the first step inside. The owner of the lot had already engaged Johnston Design Group to design their 4 bed, 5.5 bath home and asked Ridgeline to build it. “They had a fantastic package pulled together: all of the interior drawings, lighting design, structural engineering, and a specification list for finishes,” Foral says. As detailed and planned as the design was, Foral’s experience has taught him there will always be challenges to have fun with; the design included a free-standing fireplace with a suspended concrete hearth and matching concrete mantle. A lift inside conceals the retractable television and the whole structure sits above a lower-level wet bar, meaning that wiring, water and gas lines all had to be artfully concealed in the concrete without traversing the exposed-steel ceiling.

Extensive steelwork ties the fireplace to the house and a floating mono stringer staircase to the fireplace in a precise balance of aesthetics and structural engineering. Custom concrete above the kitchen counter and sink was mocked up multiple times by the Ridgeline team before deciding on the pattern that worked in concert for the industrial leaning kitchen with its walnut cabinetry and large format concrete tile. Off the kitchen is an outdoor living area with a fireplace and weather-proof television. Even indoors, the natural beauty of the lake is never further than on the other side of the corner windows in the great room and in the primary bedroom suite on the main floor, which also includes a luxury that’s fitting for lakeside activities: an outdoor shower. While natural light paints its soft shadow angles on the walls and floors throughout the day, the interior lighting gets its finest display at night. A collection of recessed cans, monopoints, well lights, puck lights and tape light from Gallery of Lighting in Greenville illuminates the home whenever needed and from the least expected places. “The ambience is fantastic,” Foral says. Ridgeline had worked with concrete, steel and lighting elements before, but never in the combination that they’re found in this house. Foral says it was a project that required a tremendous amount of thought before they started on day one. Never worried it couldn’t be done, Foral knew that if his team stuck to what he calls the “Ridgeline Way,” an unwavering attention to detail and precise organization of team structure, schedule, and budget, then the result would be a home that looks as good on the lake as the lake looks from inside the home.

From high atop Bearwallow Mountain, this architectural stunner looks down into the heart of North Carolina’s apple country. A majestic view of the valley is offered at nearly every turn thanks to the mindful work of the team led by Bluestone Construction. Kevin Reed is the owner of Bluestone. He says working with a custom home builder affords a number of advantages. A home plan can be tweaked, but only a custom design can harness the beauty of the surrounding landscape, with abundant and wellplanned windows and vignettes. “We do a lot of our work in the mountains on lots with nice views,” Reed says. “Many of the lots we build on are steep and angled, and each of our homes is custom designed to fit that lot and capture those views.” Perhaps the best spot to enjoy the vistas is from the screened porch, where motorized screens and a stacked stone fireplace ensure year-round comfort. A 15-foot-wide folding door is constructed of panels that stack neatly to one side to open the living and dining area to the porch, creating an expansive space for entertaining or relaxing. This bird’s eye view of the world below is sure to attract plenty of guests, and the home’s four bedrooms and three-and-a-half baths provide ample space. The bunk room is a fun detail for small visitors, featuring four bunk beds with wood panels that slide away to reveal hidden compartments. The shower in the primary bath suite affords more stunning mountain views and offers entry from each of the separate vanities. The owners of this home planned and dreamed for years and came to Bluestone with a long wish list of details to be included. “This was really a dream project,” Reed says. “There were so many things they wanted to do.” At the top of the list were luxurious wood finishes and metalwork, a nod to the owner’s long career in the steel industry and his passion for woodworking. Reed incorporated a state-of-the-art studio customized to each of their respective hobbies: building furniture and working in clay. The timber framed entryway is a true work of art, and the detailing is repeated in the great room and on the screened porch. Reclaimed log siding is used both outside and in; the staircase showcases a number of steel elements, including hand-forged balusters and

metal straps that brace the posts at each landing. Air quality was another top priority, so handscraped black walnut floors were used throughout and radiant floor heating was chosen to minimize dust and other allergens that can be distributed through forced air systems. A mechanical engineer who has been building homes for 25 years, Reed’s favorite part of the process is the collaboration and problem solving it takes to work all of the homeowner’s wants and needs into the design. “Nothing is left to chance,” Reed says. “Custom projects are often completed faster because the client gets what they want the first time.”

e pitch chef Philip Bollhoefer an idea for a supper to make at home each season and wait excitedly to see what beautiful plate he’ll propose. For fall, we agreed on wild mushrooms and his response was immediate: I have a forager. “With almost all food being available, all year, wherever you are, foraged mushrooms are special,” he says. With this new wrinkle, we wanted the shrooms to be in the starring role and chef agreed. “Foraged foods and especially mushrooms are one of only a few foods that are still truly seasonal,” says Bollhoefer. “Temperature, moisture, altitude and forest conditions all have to be just right for edible mushrooms to grow, which for me earns them a spot at the center of the dinner plate.” In fact, our shoot pushed back (twice) because of a dry spell in the foothills of the Upstate and mountains of WNC; eventually a few days of precipitation righted conditions and his forager, Craig Hastings, struck gold. But fall is an ideal time to mushroom hunt. Cooler air and its resulting morning moisture pamper fungi, creating delicate lobes and flavorful caps with more pliant stems. Yes, there is the ever-present fear of mushroom misidentification, but more opportunities than ever before are available to join guided mushroom hunts, organized by clubs and well-versed hobbyists, or by hiring an experienced forager. Bollhoefer chose a trio of foraged mushrooms: Chanterelle, Oyster and Shiitake. The latter adds earthiness to the dish that feels right for the season but the Chanterelles (or Golden Chanterelles) offer their prized color and aroma reminiscent of apricots. Full of fatty acids, Chanterelles have been chemically identified as flavor enhancers in the mouth. What a bonus. “Chanterelle mushrooms, with their rich flavor and bright orange color, are the perfect way to welcome the fall and say goodbye to summer,” says Bollhoefer. He added sides of whipped parsnips and browned Romanesco florets to complement the wild game. The creaminess of the mashed root vegetable contrasts the slight crunch of the conical cauliflower-cousin creating a sumptuous supporting cast for the entrée.

CHANTERELLE A dense, meaty mushroom found in the wild in hues of gold to orange. Their wavy caps are ruffled, often in a tulip-like shape. The stem and cap are edible, and their flavor is described as nutty or peppery and mildly fruity. Their aroma can resemble stone fruit. Store them in the refrigerator and use within a week. SHIITAKE Their color can span from brown to amber, with creamy white underbellies, and the umbrella-shaped cap should display a bit of a curled rim. A pine needle aroma can be detected when cooked in oil. They are prized for adding an umami quality to dishes akin to earthiness. Notably, they are high in vitamins B and D. OYSTER Varying from grey to beige, oyster mushrooms are best known for their scalloped caps. Mild and sweet, they are valued for their delicate texture and often described as presenting a melting quality on the palate. This also makes them extremely perishable, so use them within a day or two to retain both flavor and structure.

Drink Cider with Braised Mushrooms Chef Philip Bollhoefer likes to drink local cider when wild mushrooms are in season. He picked Noble Cider’s flagship product the Standard Bearer. “It is a tart cider with relatively low sugar to balance the richness of the mushroom dish,” he says. Noble Cider began in 2012 in Asheville with a goal of making dry cider from all local fresh pressed apples and apple juice. Co-founder Lief Stevens says Standard Bearer would be classified as a modern dry cider. “Cider is apple wine and, much like grape wine, it pairs excellently with food. Our Standard Bearer's taste profile is very similar to a dry sparkling wine,” he says. Effervescent and clear, it efficiently cleanses the palate, cutting through a richly layered meal. Stevens liked the chef’s pairing too, “There is a long history in England, France, and Spain of pairing cider with food particularly mushrooms, cheese and fish.”

Skillet Mushrooms with Whipped Parsnips, Romanesco and Pink Peppercorns Serves 3-4 people

Cast Iron Mushrooms 1.5 l bs Foraged wild mushrooms (eight ounces each of Chanterelle, Oyster, Shiitake) 1 Shallot, sliced thin 2 tsp Fresh thyme 2 tsp Italian parsley, chiffonade 1/8 tsp Rosemary, chopped 1 Tbsp Grapeseed oil 2 Tbsp European-style butter ½ tsp Kosher salt ¼ tsp Ground black pepper 1 Tbsp Pink peppercorns Heat a 10” cast iron skillet over medium high heat. Add oil and swirl evenly to coat cast iron. Add mushrooms and butter and let it cook without stirring for 2 minutes. It is important to not immediately stir the mushrooms or they will not caramelize. Add shallots, thyme and rosemary and stir into mushrooms. Continue to cook stirring occasionally for 2-3 minutes. Finish with parsley, salt and pepper and top with pink peppercorns

Whipped Parsnips 2 cups Parsnips, peeled and sliced ½ thick 1/4 cup Onion, diced 2 Garlic cloves, chopped 1 tsp Butter 3 Fresh thyme sprigs 1 tsp Salt 2 1/2 cups Whole milk 1/8 tsp Ground white pepper Heat a medium size heavy bottom saucepan over medium heat. Add butter and onions and allow them to sweat for 1-2 minutes, until translucent. Add garlic and cook for 30 seconds; then add the parsnips and continue to cook for 2 minutes. Add remaining ingredients and bring to a simmer. Cook for 15-20 minutes stirring occasionally until the parsnips are tender. Remove thyme and drain parsnips reserving 1 cup of the cooking liquid. Transfer parsnips and 1/2c cooking liquid into a blender and process until smooth. If the puree is too thick add additional cooking liquid in small additions.

Romanesco 1 Romanesco, cut into florets 1 Tbsp Shallot, minced 1 Garlic clove, minced 2 tsp Fresh lemon juice 1 Tbsp Cooking oil 1/2 Tbsp Butter Heat a heavy bottom pan over medium high heat. Add cooking oil and Romanesco florets. Stir occasionally for 2 minutes allowing the florets to lightly brown. Add shallots, garlic and butter and cook for 1 minute. Remove from heat, add lemon and season with salt and pepper to taste. The florets should still have a light crunch to them.

Okra Gumbo with Rice Grits Serves 2-4

Y

ou may not think of rice when you think of American farms, but perhaps you should. Rice was very much a part of southern agriculture as any other staple crop. Whether smuggled, woven in the hair of enslaved West-Africans, or later imported by immigrants from China and Japan, both the Low Country and the yawning delta of the Mississippi River have deep roots with the ancient seed. When the Arant family started farming back in the ’20s, it was mostly cotton, cattle and catfish. But by the ’70s, they’d adapted to grow corn, soybeans and rice at their farm in Ruleville, Mississipppi. When David Arant Jr took over operations, he helped to develop Delta Blues Rice, a single source, farm-to-pantry rice company growing and milling traditional long grain, brown and Jasmine rice. Arant also began milling rice to make grits, a welcomed alternative to the traditional corn grit. Unlike regular grits, rice grits don’t require milk or copious amounts of butter to come out creamy, as the high starch content of the seed makes them naturally velvety. Not to mention that the absorbent nature of rice makes for a grit that sops up the flavor of whatever stock you choose to cook them in. It is important to remember that, like corn grits, rice grits take on the flavor of whatever they absorb, so it’s always smart to cook them in your favorite stock. Bring a 2:1 ratio of stock-to-grits to a boil, back the heat down to low, cover and let it simmer for about 20 minutes, giving it one good stir towards the end.

Grits: 1 cup rice grits 2 cups salted water or stock For Gumbo: 2 cups okra, sliced thick 1 onion, chopped 1 green bell pepper, chopped 3 celery stalks, chopped 5 cloves garlic, chopped 1 jalapeno pepper, chopped 1-2 cups veggie stock 1 Tbsp flour 2 Tbsp olive oil 1 Tbsp Cajun seasoning Method: 1. Begin by cooking your grits. Bring 2 cups of stock and 1 cup of grits to a boil, cover and let simmer over low heat for 20 minutes, stirring once. Let stand for 10 minutes. 2. To make gumbo, begin with a roux.

Add oil to a hot pan. Lower heat to medium and add flour, whisking constantly. If the roux is forming a thick paste, add more oil, if it is too liquid, add more flour. You want a viscous sauce that sticks to the back of a spoon, not something too watery or too thick. Stir continuously until the roux takes on a dark golden color, being careful not to burn it (remove from and return to heat, as needed). 3. Once the roux has taken on its color,

add onions and simmer it in the roux for several minutes. Add the remaining solid ingredients and allow them to sauté in the roux for a few minutes, before adding the stock. Stir in the stock in stages, so that it incorporates with the roux. 4. Add the cajun seasoning and simmer

for 20 minutes, until the sauce begins to reduce and thicken, nicely. Spoon a scoop of cooked rice grits into a shallow bowl and ladle the gumbo around it.

Rice Grit Congee

A staple in Chinese cuisine, congee is a velvety porridge that packs an intense and flavorful punch. Serves two. For Congee: ½ cup Delta Blues Rice Grits 5 cups veggie stock 1-3 s lices of fresh ginger For Gravy: 1½ c up mushrooms, coarsely chopped 1 onion, coarsely chopped 5 cloves garlic, smashed and diced 1 cup veggie stock ½ Tbsp soy sauce 1 Tbsp cornstarch Salt and white pepper, to taste Green onion for garnish Method: 1. Add rice grits, ginger, salt and stock to a large pot and bring to a boil. Cover with lid left widely ajar to allow steam to escape and stock to reduce, compacting all of those rich flavors. Boil for an hour, stirring occasionally, and more frequently as the porridge gets thicker. 2. While the congee cooks, it’s time to make the gravy. Start by sautéing onions on medium heat in a neutral oil. Once the onions have turned translucent, add garlic and sauté for several minutes. Add mushrooms and toss until cooked. Dash in soy sauce and simmer until the sauce reduces. Add stock, bring to a simmer and cook until the stock is reduced by half. Shortly before serving add cornstarch (dissolved in 2 Tbsp water to create a slurry) and stir to thicken the gravy. Add salt and white pepper to taste. 3. After an hour, the congee should be

thickening nicely. You’ll need to stir more frequently as the stock reduces. You’ll know it is done when it develops a creamy, velvety consistency. 4. To plate, add congee to a bowl, top

with the mushroom gravy and garnish with chopped green onion.

W

e Americans are an impatient bunch. So, when researching this article, it was no surprise that 80% to 90% of wines are consumed within 48 hours of purchase. That’s fine, because most wines are sold ready to drink, but that doesn’t mean some won’t get better with age. Laying down the right wine for five or 10 years can add depth, dimension and approachability. The key is patience. And, it must be the right wine. Age-worthy wines have good structure and the right amounts of sugars, acids and tannins. Time allows these to improve. Cellaring a $20 grocery store bottle is likely to, at best, accomplish nothing. Yes, you need some space to store wine, but not necessarily a huge, cobweb-laden cellar. These days, it’s not uncommon to see new homes with smaller wine cellars, and those of us in an older home can often repurpose a small closet or basement that has a cool, consistent environment. Once you have the space, you just need the wine. Robin Martz, operating partner at Chophouse ’47, shared five favorites that would be excellent wines to drink now or lay down for the future. This Napa blend of cabernet franc, merlot and cabernet sauvignon is aged in French oak for 18 months to create a medium bodied yet complex wine with soft tannins. Expect flavors of cocoa, cherries and cranberries when enjoying this smallproduction gem. “Cabernet franc is popular among vegetarians but can also be enjoyed with a salad topped with a ribeye filet,” Martz says. This wine could easily cellar for 10 or more years.

Jordan represents what cabernet drinkers expect from Sonoma County’s Alexander Valley. “This is a complex yet approachable wine right out of the gate,” Martz says. “However, the quality of the Jordan allows for cellaring up to 20 years.” This wine presents rich flavors of blackberries and chocolate, subtle hints of French oak, and fine tannins. “This is always enjoyable with steak,” Martz says, “but will pair well with lamb chops, garlic chicken and even our thick-cut bacon.”

Masi Costasera Amarone Classico DRINK IT NOW for its versatility CELLAR IT FOR 10 to 15 years

Amarone is a superb, full-bodied wine from Italy with flavors of cherries, plums, coffee and cocoa; aging for 24 months in oak adds a touch of spice. “This winery has perfected a grape-drying technique that includes laying the grapes out on bamboo racks to concentrate their aromas,” Martz says. Pour this ruby-red wine now alongside well-aged cheeses or lay it down and serve it with red meats in 10 to 15 years, or as an after-dinner wine with desserts in 25 years or longer.

“Man-Nature Interface” The most basic essential quality of a ‘home’ is protection from the elements. For millennia, home design and construction struggled to provide a haven from and a bastion against Nature. Making one’s house as tight as possible against the elements was the first step, followed by providing a safe and tolerably livable source of heat. Along the way came air conditioning which, along with the luxury of ‘central air,’ transformed our homes from being places to keep us warm and dry in inclement weather, to a citadel of comfort yearround. Indeed, home construction is so weathertight now, we have to install positive flow systems to remove harmful elements like radon, which used to simply leak harmlessly out of the amazingly porous envelopes we used to call walls. But now that we have all but conquered Nature in terms of our houses (notwithstanding, of course, hurricanes and tornadoes!), we have decided that we want to invite Nature back into our lives. The Man-Nature Interface is the cusp between the secure, weathertight environment of the house and the fickle climate just outside the doors. Fifty years ago this interface was provided typically with a concrete patio on grade – a cold slab of concrete that was unsightly and hard to keep clean. Then came the pressure-treated deck – ideal, it was thought, for outdoor grilling and hot tubs. But we soon realized that the climate wasn’t the only factor to be controlled; there were wasps, hornets, and the ubiquitous mosquitoes to contend with as well. riginally a mantel staple in Victorian homes, Staffordshire dogs have stood the test of time as a standard of traditional décor, but of late they have caught the whimsy of today’s first-time homeowners; owners of custom designed homes favor them them too, posing them handsomely in built-ins and bookshelves. Pairs of King Charles Spaniels, made from English Staffordshire pottery, are a classic collectable but in reality these stoic fellas offer fantastic mid-height interest in any combination for living spaces. The dogs are seated and often decorated with a locket attached by chain. The creamy coat is adorned with spots or patches, some highlighted with luster paint. Their colorations may differ; amber and white, black and white and white with gold accenting are sought after combinations. The legs most often are molded to the dog’s body and height can range from a few inches to 13 or 14 inches tall. Staffordshire dogs have been produced by factories in the county of Staffordshire, England since 1720. Reproductions began as early as the 1920s and many quality examples exist from this time period and include facial expressions that range from indifferent to fierce. Thousands and upon thousands of dogs were produced during the original production era (roughly 1720-1900) and yet few original pairs remain together. Most antique sets sold today have been correctly dated and coupled, which makes buying single pups more palatable. Consider assembling a pack; you’ll for sure save a bit of coin picking them up one at a time. They look smashing in built-ins on separate shelves facing away from each other. They make tremendous book toppers, sideboard pets and office companions. Grouping them in an array of sizes in a dining room can create a bit of styling magic.

Reproduction Spotting • Original Staffordshire dogs were made by press mold, while reproductions are made by slip casting, which leaves a hole in the bottom of the base as big as a dime or even larger. • Look for brush strokes. Antique figurines were painted by hand, but reproductions were mostly decorated by sponge. Newer dogs also often lack painted decoration on the back side too. • Gold trim on an original era Staffordshire dog should display a soft luster indicating its age and wear. It will not look bright, shiny or reflective. • Antique pairs will never be exact replicas of each other.

I

can’t pinpoint the moment when biscuits magically appeared in my life; they’ve just always been a part of my lexicon. My most distinct memory is Great Aunt Lottie mixing fresh batches of biscuits for lunch when we visited. She kept her flour in a wooden flour bowl under the cabinet and mixed “just by feel” enough biscuits for the occasion. I haven’t picked up the knack to bake-by-feel like Lottie, but maybe after a few hundred dozen more, I will. I know for sure I’ll keep trying. Over the years and countless batches, I have settled into my go-to recipe, but it’s methodology that has created a strikingly better biscuit. These are the three tips that vastly improved our family biscuit.

Square Biscuits

Makes about 16 2-3” biscuits 2 1/2 cups all-purpose flour 1 1/2 cups cake flour 1 tablespoon salt plus a pinch 1 tablespoon baking powder 1 teaspoon baking soda 1/2 pound (2 sticks) unsalted butter (cut into small cubes) 1 3/4 cups buttermilk Cut cold butter into small, pea sized, cubes. Alternatively, you can freeze your butter and push it through the grating disc on a heavy duty food processor. Sift all dry ingredients into a large mixing bowl, add butter pieces and stir or toss until mixed evenly. Rub larger pieces to break up. Pour in buttermilk and mix enough to incorporate all ingredients into a cohesive dough. It’s okay if you still have some loose flour. 1. KEEP YOUR BUTTER COLD AT ALL TIMES. Since this is the standard for better layers and lighter biscuits, I keep my butter in the freezer. But, cutting frozen butter is awful. Luckily, I discovered a grating wheel in a good food processor makes quick work of the task. It systematically chops butter down to the perfect size resulting in those wonderful flaky steam pockets later. 2. THE MORE YOU WORK THE DOUGH, THE TOUGHER THE BISCUIT. Cutting out biscuits with a round cutter means reshaping, cutting, reshaping and cutting again, which left me with half a batch of great biscuits and another half that got progressively tougher. The fix was an easy quick change. Simply cut the dough with a knife into squares. Since your knife is sharper than a dough cutter, the edges don’t get squished resulting in an even fluffier, taller biscuit. 3. A BISCUIT IS ONLY AS GOOD AS ITS LAYERS. To me, a good biscuit means splitting one open and adding toppings of your choice, from butter & honey to pimento cheese or barbecue. Halving and stacking the dough a few times during the process of rolling it out helps build in a couple of these layers, making it easier to split open for maximum enjoyment later.

Flour your surface well and turn out the dough. You can get precise with a rolling pin, but I use flour coated hands to mash the dough out to about ½ inch thickness. Portion the dough in half with the sharpest knife you have and stack the halves, pat out to ½ inch again, slice in half, stack and repeat again only this time leaving the dough at about ¾ inch thickness. Cut the dough into 2-3” squares with your knife, place an inch apart on a parchment lined baking sheet and bake at 425F degrees for about 15 minutes.

By mixing different metal and wood tones, you can create the appearance that your décor was collected along the way. To start, gather nearly twice as many items as you think you may need and about a third of them should be large. Bigger, statement pieces can hold their own alone on a shelf.

Risers build height for accessories. Books and decorative boxes are classic items, but now there are decorative wood risers built just for the purpose. Don’t be afraid to corner a riser; it will create room to layer in front of it. Soldiers need to be straight and perfect, not décor. Turn an item 90 degrees and create instant flow.

Mix in real or faux greenery to soften shelves for an immediate lived-in feel. These are the items to switch out when the seasons. Simply swap items of similar size. If you have a box as part of your display, store off-season pieces in it. Pottery and woven items add similar warmth with their natural finishes.

Too many small items grouped together look messy. And, too many large items feel heavy. It’s the right balance that makes a bookshelf stand out and feel harmonious. Stack items and tuck items behind each other to build layers. A change in levels encourages the eye to slow down and study what’s there.

Utilizing frames is the quickest way to add something personal to vignettes. Not just for beloved photos, consider adding kids’ artwork, flat mementos, even postcards to hinged frames of all sizes. Anything put under glass immediately feels special. Highlight a single item by placing it under a domed glass cloche.

And, don’t be afraid to refresh your shelves. “I call it never done,” says Turner. “The bonus is when you move something to a different spot, it feels new all over again.”
