Do Downtown Greenville is an initiative of several downtown merchants, restaurants, and hotels in partnership with the Greenville Journal. Our goal is to communicate to residents and visitors alike everything our downtown has to offer. The redevelopment vision of the City of Greenville is to have “a thriving Downtown which is recognized nationally as an example of a ‘state-of-the-art’ community in which to live, work, and play… which serves in itself as a national attraction.” Mission accomplished. Downtown Greenville is home to more than 90 shops and 90 restaurants. If you can’t find it here, chances are it can’t be found! Another component of Do Downtown Greenville is a focus on all things local. Shop local. Eat local. Support local. When you shop local, you help support our community. ...while Cooking with Class Do Downtown learns to prepare a Cozy French Supper It’s oft-repeated—there’s been a little research, too—that food tastes better when prepared by someone else. Not necessarily, say the folks at Charleston Cooks, and what’s more it can be healthier, more economical—and plenty more fun—to cook for yourself. So Do Downtown headed over to the Main Street kitchen retail shop/ culinary classroom for a little research of our own. Choosing just one class to attend is deliciously difficult—every month there’s a smorgasbord of options, from workshops on Southern cooking to theme nights on various cuisines to class for couples-only. Some are demonstrations, others are handson; all include tips on ingredients, techniques and tools designed to inspire even the most apprehensive chef to absolutely try this at home. “We want to demystify the kitchen,” says Mark Pollard, culinary director and manager at the Greenville store. Ultimately, Do Downtown opts for the Cozy French Supper class and we settle in

with a baker’s dozen of attendees: two sets of ladies enjoying a Girls Night Out, a trio of co-workers celebrating a career move, and a father/daughter couple indulging their shared interest in all things culinary. Our chef instructor this evening is Season Stepp, who fell in love with cooking as a little girl sitting on her grandma’s kitchen counter and later trained at the Culinary Institute of America. Season and her assistant have pre-prepped most of the ingredients, which are placed at work stations throughout the bright, open kitchen/classroom. Walking us through the steps for each recipe, Season explains the “why” behind every “what” we’ll be doing. She elaborates on the safest, most effective ways to use common kitchen tools, placing particular emphasis on what knives are—and aren’t— supposed to do. Ours is a chatty bunch, full of questions, and as we divide into crews, tasked with turning the evening’s recipes into actual dishes, it’s possible some of us are more adept than others. “Foodies of all experience levels are welcome at Charleston Cooks,” Season says.

Together we cook up a very cozy, very French menu: Asparagus Shrimp Quiche Lorraine with Mixed Green Salad, Steamed Mussels in Shallot Thyme Cream Sauce with Toasted Baguette, Gruyere Potato Gratin, Beef Bourguignon, and Chocolate Souffle with Warm Cherry Sauce. Season flavors her directions with a sprinkle of humor here, a dash of anecdote there, and she provides interesting morsels of info, such as: • The handle on a kitchen knife isn’t, in fact, for handling; it’s for balancing. • When cutting, bring the knife to the food, not the other way around. (We learn this looks easier than it actually is.) • A shallot is “the love child of onion and garlic.” • Convenience doesn’t justify jarred garlic. Get fresh…and a good garlic press. • Start bacon in a cold pan. • Use your senses—rather than a kitchen timer—to determine when a dish is done.

• “Freshly ground nutmeg will change your life.” • Don’t lick your fingers. (Full disclosure: this rule was broken once—okay, more than once—at the dessert-making station.) Along the way we realize complicated French dishes aren’t quite so daunting after all (note: it’s nice having an assistant stop by every few minutes to whisk away dirty utensils) and we discover there are LOTS of cool Foodie gadgets. “If any of these tools make cooking easier and more fun, that means you’ll cook more,” Season says. “And that makes me happy.” Our results are Instagram-worthy and for a few minutes everyone takes pictures of ourselves, of each other, of our food. Then wine is poured, dinner is served. Amidst the clinking of silverware, there’s a murmur of positive appraisal. We decide, here at Charleston Cooks, that food tastes particularly good when you learn to prepare it together.

We Jules Verne fans have traveled under the sea, around the world, even to the center of the earth … but March is the month to book an adventure of another sort: rather than the iconic 80, Upstate International can take us Around the World in 31 Days. No new-fangled steamships, elephants or hot-air balloons required. A month-long celebration of our region’s global connections, Upstate International encompasses an eclectic array of events that showcase the world’s cultures found right here at home. It provides an opportunity to explore international traditions as expressed in music, dance, art, food and spirits, literature, sports, even automobiles. There’s something for everyone, from anywhere … and everything’s happening in Greenville and surrounding cities. “This is a month filled with fun things to do, featuring cultures from all over the world,” says Whitney Walters, executive director of the International Center of the Upstate. “It’s a chance to show off – and also to discover – just how multi-cultural we are in the Upstate.” Upstate International Month is coordinated by the International Center, with regional businesses, retailers, schools and cultural groups encouraged to host events under the organization’s umbrella. “We spearhead the celebration, but the real heroes are the people, groups and companies who are making all these interesting events happen,” Walters says. “They’re the ones filling up the calendar.” While delighted with the entire schedule, Walters does admit being partial to one event in particular. “Oh, our opening gala (A World Sensation) is my favorite,” she says. “Guests wear traditional dress from their home countries…we look like the United Nations!” The world truly is at home in the Upstate, says Lauren Justus, special events manager at the Hyatt Regency Greenville, and that is good for everyone – local and transplant alike.

“When we celebrate other cultures, it helps us grow as a community as we learn from and embrace those with different backgrounds and skills and experiences,” Justus says. “That’s why Upstate International Month is so important.” Justus is organizing Get Green @ NOMA Square, an outdoor St. Patrick’s Day festival on the plaza at Hyatt Regency featuring live music by The Accidentally Irish Lads, prizes for best St. Patty’s attire, and an authentic Irish menu of food and spirits. “The weather is transitioning from winter to spring, and we are all itching to get outside and enjoy our beautiful Main Street,” she says. “NOMA Square is excited to be part of International Month.” A number of other Main Street businesses are part of International Month as well, with Continued on 6 »

tasty events like Port City Java’s International Coffee Cupping, Greenville Sister Cities’ Belgian Beer Dinner at The Trappe Door, a series of hands-on cooking classes at The Cook’s Station and Ten Thousand Village’s International Food Tasting. “International Month is a great opportunity to celebrate Ten Thousand Village’s artisans and the countries they represent,” says Libby Wright, the fair trade retailer’s communications/ marketing manager. The store is making the most of the community’s heightened interest in all things international to promote its favorite food products such as Equal Exchange Coffee, jams and jellies from Swaziland and chocolate from Ghana. The Greenville Library System has booked plenty of educational fun, from Traditional Indian and Bollywood Dancing to Bilingual Story Times to a Downton Abbey Tea. Venues across the Upstate are offering community book discussions on “The Iguana Tree” along with myriad other educational offerings and arts events galore. Michelin is hosting an InTIREnational Art Contest; CU-ICAR, the Millenium Drive car show. Happenings for good sports include the Kroc Center’s Special Friends Tennis Expo, German-American Club’s International Soccer Tournament and a Saint Paddy’s Dash & Bash.
