e lcome to the 2012 Roper Mountain Holiday Lights. 2012 marks the 21st year for Roper Mountain Holiday Lights. Co-managed by the Rotary Club of Greenville and the Roper Mountain Science Center Association, Holiday Lights has raised over $1.8 million for the benefits of charities and educational programs in the Upstate. Inside this Guide you will find information on just some of the organizations and programs that Holiday Lights has supported with the funds we have raised. As an all-volunteer-run event, volunteers spend literally thousands of hours throughout the year to plan, organize, and then make Holiday Lights a reality. Their efforts make the event the magical, family-oriented experience that has become a family tradition for many. As Chairman of the Roper Mountain Holiday Lights Committee, I want to thank all of our volunteers for all they contribute. I wish that space would allow me to recognize each of them individually here. Since I cannot, I want them to know that their efforts are recognized and applauded. Gives Back
T
he Rotary Club of Greenville—our state’s oldest and one of the world’s largest Rotary clubs—has supported the Greenville community since 1916. With the motto, “Service Above Self,” the club has sponsored many landmark service projects over the years. These include the Rotary Lake at Camp Greenville, Textile Hall, and a YMCA health center. At present, the club’s focus targets literacy, ranging from educational to financial. Projects benefiting from this focus include Teacher of the Year, Salute to Education, Money Smart, the Science and Engineering Fair, and the awarding of 5 new four-year college scholarships annually. In addition to projects, Rotarians also have a history of supporting programs that benefit our communities. In 2005, the Rotary Club helped create the Rotary Family Literacy center in conjunction with the YWCA and Greenville Literacy. Today, Rotarians participate in the “Read to Me” program where Rotarians read to disadvantaged pre-schoolers and elementary aged children. The club also recognizes the importance of vocational service. During Career Day, students shadow a Rotarian to learn more about different career opportunities. On Law Enforcement Day, local law officers are recognized and rewarded for their service. Internationally, Rotary has led the way in the near elimination of polio worldwide, as well as funding humanitarian grants for nutrition programs and the installation of water wells and clean water systems in third

While the Rotary Club of Greenville is responsible for many philanthropic efforts in the Greenville area, the one that is perhaps most beloved by the community is Roper Mountain Holiday Lights. The Rotary Club of Greenville has co-sponsored this event since its inception on Thanksgiving Night, 1992. Since then, the event has raised more than $1,800,000 for local charities and non-profit organizations. Last year, more than 20,700 vehicles passed through Holiday Lights, carrying an estimated 83,000 visitors to the Roper Mountain Science Center. A total of $150,000 was split between Rotary Charities and the Roper Mountain Science Center Association. The Rotary Club of Greenville is proud of our efforts to support Holiday Lights with hard work and dedication, and hopes that visitors enjoy the lights and activities of Holiday Lights today and for many years to come. Isabel M. grew up in Mexico. Since she was a little girl, she had always dreamed of having an education. She was denied an education partly because her parents did not realize its value and importance. However, she made it a goal in her adult life that if she had the opportunity to get an education, she would. As a teenager, Isabel moved to Greenville County. She married and had a son. When Isabel became a student at the Greenville Literacy Association in June, 2008, she enrolled in the English as a Second Language (ESL) program. She knew very little English, but now with the help of the staff and volunteer teachers, she is able to read, write and speak English with ease. Isabel explains, “It was not easy, especially in the beginning, but with all the hard work that I put into studying and the tools that Greenville Literacy offered me, I was able to become one of the most dedicated students in the ESL program. I took advantage of everything that Greenville Literacy offered me. From the daily classes to the awesome computer lab programs and with the support of a loving and caring staff, I am living out one of my biggest dreams in life, which is to understand the English language.” Isabel transferred seamlessly from the ESL program into the Pre-GED program at Greenville Literacy. In the spring of 2012, she earned her GED in

English, and her next goal is to go to college and complete a degree so that her family can have a better life than she had growing up. She wants to show her parents that an education is truly the key to a better life. The mission of the Greenville Literacy Association is to empower adults to participate more effectively in the community by providing quality instruction in reading, writing, math and speaking English.

Through Dec. 24 – Santa EVERY night from 6:30-9 PM Santa will be in Winter Wonderland every night from Thanksgiving night through Christmas Eve (unless there is an unexpected emergency at the North Pole that Santa has to tend to). Optional professionally-taken photos with Santa are available for an additional cost. Visitors may take their own pictures on Monday, November 26, Tuesday, November 27, and Monday, December 3.

The large, colorful Holiday Cards displayed along the path in Winter Wonderland are actually works of art created by local students. Starting with a blank, large piece of plywood, school art classes create the spectacular Holiday Cards each year. This year, a fun, “audience appreciation” contest will take place. Crispy Chocolate Chip Cookies (Yield: Approximately 60 to 80 cookies) 3 1/2 Cup Flour 1 1/3 Cup Unsalted Butter, softened 1 1/4 Cup Rice Krispies 1 Cup Sugar 1 /3 Cup Regular Oats 1 Cup Brown Sugar, packed 1 Teaspoon Baking Soda
1 Large Egg 1 Teaspoon Cream of Tartar 2 Teaspoon Vanilla Extract 1 Teaspoon Salt 2 /3 Cup Vegetable Oil 1 Cup Chopped Nuts, toasted 2 1/2 Cup Chocolate Chips
Heat oven to 355 degrees. Lightly grease or line baking sheets with parchment paper. In a medium bowl, whisk together flour, cereal, oats, baking soda, cream of tartar, and salt. Gently stir in chopped nuts. Set aside. In a large bowl with mixer on medium speed, beat butter, sugars, egg, and vanilla until light & creamy, about 2 minutes. Scrape bowl well. Add oil and beat 30 seconds until smooth. Scrape bowl well. Add dry ingredients & stir by hand with a large spoon or scraper. Do not use mixer or cereal may be crushed. Stir just until combined. Add chocolate chips & gently stir to combine. Scrape bowl well.

Using a 1-inch diameter scoop, portion dough onto baking sheet 2 inches apart, or spoon out in 3-tablespoon-sized mounds. Gently flatten dough balls down with palm of hand. Bake 16-18 minuntes until light golden brown. Cool 10 minutes on pan before moving to cooling rack. Store tightly covered.
Pepperoni Bites Add Color to Your Appetizers for the Holidays! 3 Ounce Sliced Mozzarella Cheese, cut into 1 inch squares 48 Triscuits 3 1/2 Ounce Package Sliced Pepperoni Heat oven to 425 degrees. Place one cheese square on each cracker. Top cheese with slice of pepperoni. Place crackers on baking sheet and bake 4-5 minutes or until cheese melts. Serve immediately. (Can also be done in microwave, heating at full power for 30-45 seconds until cheese melts.)
