CoverStory Crop Bistro & Bar offers one of the most visually appealing dining experiences in Northeast Ohio. Located in the former United Bank and Trust Building, Crop’s 1920s-era features include massive floor-to-ceiling arched windows and a restored marketplace mural above the bar. The bank’s vault now serves as a private dining room, and speaking of dining, the locally sourced dishes are as enjoyable as the setting.

TownHall Ohio City is one of the new kids on the (West 25th Street) block, relatively speaking, but it’s quickly become a neighborhood favorite. It isn’t hard to figure out why considering that in addition to its wide drink selection and organically driven and locally sourced menu, it features a juice bar, an espresso bar and a café designed in part to be a workspace. Ohio City was its own municipality until it was incorporated by the city of Cleveland in 1854, and for years it was known as an important hub of commerce along the Cuyahoga River – so much so that it was considered one of Cleveland's industrial rivals. For more than 100 years, the West Side Market has been a focal point of the neighborhood. Built in 1912, it's long been a bustling center of commerce and a popular destination for generations of Clevelanders. Following World War II, the Ohio City faced a season of economic and social change – change that ultimately resulted in a wave of restoration and redevelopment that maintained the look and character of the neighborhood. Today, Ohio City is known and celebrated for its diversity and many social offerings. The West 25th Street corridor, home to several bars and restaurants, is considerably popular, and districts like Hingetown (centered at the intersection of Detroit Avenue and West 29th Street) and SoLo (along Lorain Avenue between Fulton Road and West 45th Street) are growing in terms of businesses and new residents.

Skin

Thanks to English fashion model Cara Delevingn, the thick eyebrow trend is huge for fall. Avoid looking like a caveman by investing in a brow defining brush and powder shade to match your natural brows. Eye brow powders and brush from European Wax Center

The summer sun’s hot rays have a tendency to leave skin dry and damaged. To revitalize your skin, try using natural face oil, like this one that’s blended with organic hempseed, sesame, jojoba oils and organic essential oils of carrot seed, juniper, patchouli and vetiver. Face oil by Meow Meow Tweet from La Look Boutique

Scent Sea salt caramel – a widely favored ingredient used at bakeries and ice cream parlors – is now available at Lakewood’s Indigo Perfumery. Save the calories and perfume your body with Shay and Blue’s Salt Caramel, inspired by the English chocolatier Charbonnel et Walker’s Sea Salt Caramel Truffles. Salt Caramel perfume by Shay and Blue from Indigo Perfumery

Lips Make a dramatic statement with a deep rouge lip. Mirabella Beauty offers a longwearing, moisturizing lip pencil in six bold shades. Red Velvet lip pencil by Mirabella

Hair During the summer months, it’s easier to rely on the warm weather to “air dry” your hair. As fall sneaks in, so do the blow dryers. To protect against heat damage, consider using a styling balm, like Bumble and bumble’s BB Repair Blowdry, which protects against breakage, heat and UV damage. ‘BB Repair Blowdry’ by Bumble and bumble from Dino Palmieri Salon & Spa

ASKELANA *Dating. Love. Life

*

Elana Averbach is an experienced dating coach and licensed professional counselor. She founded the dating company, KickStartLove, to help singles find love. She leads dating seminars, and organizes singles events where thousands of singles have connected. For more information, visit KickStartLove.com.

Power Dynamics Dear Elana, I am a 34-year-old woman who has been single for two years. Last week, I finally met a great Jewish guy, but he hasn’t returned my phone calls. I texted him after our date to tell him that I had a good time and didn’t get a response, and then I called him three days later to invite him to a friend’s party and haven’t heard anything yet. I’m feeling frustrated. What should I do? – My Phone’s on Vibrate For You Dear Phone’s on Vibrate, Despite the fact that you don’t hear your phone, I hear you loud and clear. After two years of missed connections, you finally found a guy who might be your beshert, and you can already imagine your future curly-haired children decorating your sukkah. The problem is that he isn’t picking up what you’re putting down. First – and I say this with care – stop contacting him. No calling, no texting – find something else to do with your thumbs. I don’t care if he’s one of the chosen people, he needs to choose you, too. If he wants to find you, he knows how to get in touch. The fact that he didn’t

40

Jstyle Fall 2014

respond to your text or call tells me that he is either not interested or he’s pursuing someone else and hoping to keep you on the hook. Give him space. If he calls you, there’s a chance that you could develop a relationship, but if you keep running after him, you could chase him away permanently. Right now, you should be less concerned with his call and more interested in how to establish power dynamics that build a lasting relationship. Whether he comes to his senses and realizes that you are the milk to his honey, or you decide to meet someone new, here’s how to avoid moping around in sweatpants and eating leftover kugel while you wait for your iPhone to buzz. I’m going to share a secret with you from behavioral psychology: guys aren’t “great” or not “great.” They are people, and they respond to reinforcements. If you teach a man he can navel gaze while you call, write and swoon, he’ll learn he can maintain your affections without lifting a finger. This is not what you want. You need to establish power dynamics in the beginning of a courtship that will be in place throughout the duration of your relationship.

If you are always the one calling, arranging dates and texting him selfies from the dance floor of your niece’s bat mitzvah, then you are showing more interest than he is. You’re giving away your power, which makes you feel vulnerable, and ultimately makes you less attractive to him. Consider the balance of power you want in a relationship, and then act accordingly from your first interaction. If you want an equal partnership, then make him feel secure and loved – and hold him to the same expectations. The key isn’t to stumble upon a man who is “great,” it’s to find a mensch, a man who has good character and who likes you so much that he wants to match your level of affection and attraction. Put down that phone, and get out there. js

Jewels Two local jewelry makers share their talents, passion and creativity with the community By Jacqueline Mitchell

espite the most strenuous of searches, the hunt for that perfect statement accessory or piece of jewelry can prove to be a difficult process that can leave even the most skillful of shoppers empty-handed. For those with specific jewelry ideas in mind, Shirley Rosenfeld of Rosenfeld Jewelry, Inc. in Lyndhurst and Les Keller of ARK Jewelers in South Euclid are able to transform customers’ wildest jewelry dreams into solid gold reality.

Clockwise, from top left: A mezuzah and amethyst ring from Rosenfeld Jewelry, Inc., and a diamond ring and a custom pendant from ARK Jewelers.

Jstyle Fall 2014

Equipped with technology and a longstanding family legacy of jewelry design, Rosenfeld has been creating custom designs inspired by customers’ ideas, as well as her own originals, for about nine years through the art of computer-aided design and manufacturing. Jewelry design runs in the family. Her father, Henry Rosenfeld, now retired, joined the jewelry business in 1948, working as the shop foreman for a large jewelry manufacturer in Cleveland before he left in 1967 to pioneer Rosenfeld Jewelry.

From top, an engagement ring set and pendants from Rosenfeld Jewelry, Inc.

Rosenfeld worked in the insurance industry before she made the leap to the jewelry designing business. “I got tired of being an insurance suggester, and I joined the family business,” she says. She credits her brother, Art, with persuading her to join the business after he discovered jewelry design software and shared it with her. Rosenfeld uses the jewelry-specific, computer-aided design program to make nearly any type of jewelry, including necklaces and pendants, rings, charms, personalized wedding bands and religious items such as Star of David pieces and mezuzahs. Keller, a former diamond wholesaler who used to visit different factories and manufacturers, observing and learning from their examples until he joined the jewelry designing business in 1981, uses the same software in his designs, which he describes as mostly contemporary with a traditional flair.

The design process often begins by sitting down with customers and sketching until they decide on a design they like. When customers approach Rosenfeld with their own ideas, she tells them whether those ideas are workable or not, based on her experience. If not, she works to create a feasible version of the design they have envisioned. The customer receives a rendering of what the piece will look like, down to the color of the metal and the exact gemstones. After the customer approves of the rendering, it is sent to a milling machine, where an identical wax mold is carved in precise detail so that the piece can be viewed in actual size before the final product is cast and set. Keller says that when he started in the 1980s, the trend was large, bulky items, but “today it’s evolved into very light, very delicate, very detailed pieces of jewelry.” At ARK, workers

inspiration from nature and architecture, and sometimes just creates the designs that pop into her head. Using silver and gold, she often places diamonds, amethysts and smoky topaz in her intricately detailed designs, though she says she will use any gemstone the customer desires. Both jewelers’ pricing ranges from the hundreds to several thousand dollars, depending on the elements involved in the piece. Keller relishes creating heirlooms that can be passed on from generation to generation. A woman in her 90s recently stopped by ARK hoping to create a replica of a marquis diamond ring she had sold years ago. The image of the ring remained imprinted in her mind, and Keller worked with her based on that idea to reproduce it to her liking. “We brought something back into her life that she

missed,” he says. Keller is inspired by each customer’s unique personality, and tailors his designs to their individuality, infusing the piece with their image. “It’s like a snowflake,” he says. “Each person is different. We try to mesh the personality of that individual with the ring or the pendant.” His Jewish background influences him as well. He recently created a version of the silver and gold breastplates adorned with gemstones, which priests used to wear, and are described in the Torah. Keller says that he was inspired by stories of priests who, when faced with a question, would go to the temple, and watch as the gemstones lit up a certain way to give them an answer. “I always look for something that has a deeper meaning,” he says. js

ave you heard the one about how getting a tattoo means you can’t be buried in a Jewish cemetery? It’s a story told by almost every Jewish mother who’s ever tried to keep her son or daughter from getting a tattoo. Perhaps you’ve watched the Season 3 episode of “Curb Your Enthusiasm” in which Larry David’s Jewish mother was buried in a “special section” of the cemetery once a tattoo on her right buttock was discovered. For generations, the greater Jewish community has renounced tattoos. Whether they rely on what some consider urban legends or are reciting Leviticus 19:28 and Deuteronomy 4:15, parents often are on the front lines Aaron Sechrist’s mother was no different – though she eased up a bit when her now 34-year-old son had a portrait of her added to his left calf. “That was the only tattoo Mom wasn’t sad about,” says Sechrist, who lives in Cleveland’s Ohio City neighborhood. “Every other one, I tell her it’s my last one.” When he was younger, his father, too, was not happy with his tattoos, worried they might make it hard for his boy to get a job. His having his own business erased that, says Sechrist, who owns OkPants, a design and marketing firm in Cleveland. Sechrist eventually got a portrait of his father tattooed on his right calf. “He was pretty excited about the father one, too, I suppose. But he never had much of a problem with them.”

Sechrist grew up Reform, was bar mitzvahed and attended Sunday school at Suburban Temple-Kol Ami in Beachwood – where, he speculates, he was the only pupil to ever get detention. (The offense: “being the class clown.”) “I could be way better at observing holidays,” says Sechrist, acknowledging he’s non-observant, “but I’m definitely part of the club.” His body is a gallery, Sechrist said. “Certainly not a temple,” he laughed. A key Sechrist exhibit: The OkPants logo on his left arm, basic to everything he’s done since he launched his brand about 12 years ago. His tattoos reveal his inner curator, bespeaking a man whose body is becoming a virtual art collection. “None of my tattoos are religious in nature,” he says. “Being an artist, I like to look at them. The first tattoo I got

when I was 18 years old was terrible, so I just kept getting more. Thematically, there wasn’t much of a deeper meaning to me; getting most of them done by my friends is where the meaning lies, in addition to just having them done mostly by friends of mine, artists that I respected.” Drew Dallet, who is 44, owns boom-creative.com, a marketing, advertising and design firm. He’s been accumulating tattoos since the early ’90s when he was at Kent State University, where he earned a bachelor of fine arts degree in graphic design in 1993. The Twinsburg man is proud of the stories – of love of family and his notion of Judaism – his tattoos tell, and the self-expression inherent in them. “By the time you get your hands and fingers tattooed, you’ve kind of checked out of corporate America,” Dallet

notes. The fingers of his right hand spell “R E A L,” the fingers of his left, “L O V E.” His thumbs are tattoo-free.

What’s the verdict? So are Sechrist, Dallet and countless other Jews doomed to be buried in the “special section” of the cemetery – or worse, not in a Jewish cemetery at all? Not necessarily. “It is indeed a myth that one who has a tattoo cannot be buried in a Jewish cemetery,” says Rabbi Binyamin Blau of Green Road Synagogue in Beachwood. “However, the prohibition against getting a tattoo is discussed openly in the Torah

… which is why this activity has typically been frowned upon in Judaism. It is fairly clear that the original concern was not to imitate idolatrous practices, and there is much discussion in Jewish Law as to exactly what type of tattoos are included in this prohibition. However, after all the analysis, it remains uncommon for Orthodox Jews to receive permanent tattoos.” Rabbi Robert Nosanchuk

of Anshe Chesed Fairmount Temple in Beachwood agrees, but adds, “every Jewish cemetery and chevra kadisha (burial society) can determine its own criteria as to who or who may not be buried in their plot. … Because some cemeteries do not allow tattooed persons to be buried, there has been a common misconception that this ban was an inherent part of Jewish law. It is not.” At the same time, Rabbi Nosanchuk said that though he has issues with tattoos – to him, they conjure the numbers the Nazis engraved on Jews during the Holocaust – getting them is a personal decision. Just make sure the Jewish cemetery you’re considering for your own burial is OK with your tattoos.

Art of expression Such considerations don’t apply to either Sechrist or Dallet. One weekend afternoon in early August, Dallet is preparing for the first of three sessions with Sean Jaundice, his go-to guy at Voodoo Monkey, a bustling tattoo emporium on West 25th Street just south of the West Side Market and Lorain Avenue. Besides the portraits of his mother Debbie, his wife Blythe and their kids Quinn, 8, and Piper, 5, and three other tattoos, all his bodywork is done by Jaundice, whom Dallet calls a master of line work. Dallet’s arms are covered with tattoos. “What I like about my ‘sleeves’ is they’re just a big, combined story about my family,” he says. “They’re like little short stories that combine into a big novel.”

Today, Dallet is committing to sessions that will yield a Native American design, a totem with what looks like a raven’s head, in cyan, blue and black, on his left side. Tattoos also occupy a lot of his leg real estate. There’s an elaborate one of the original Apple logo – it looks like a woodcarving from the Old West – on the inside of his right leg. Dallet likes to make statements. “This will be the first one on my torso,” says Dallet, who grew up Reform but doesn’t observe. “I avoided the sensitive areas until I ran out of room.” Among Dallet’s most prominent tattoos is one on the back of his left arm showing a sparrow bearing a message in its beak, perched on a wall. To him, though he’s “not a God person,” the image of the sparrow symbolizes the birds that take prayers to heaven that people have inserted in the cracks of the Western Wall in Jerusalem. That multilayered and complicated bird image honors his heritage, he says. Dallet likes to tell stories like the one about the sparrow. When he was growing up in Milwaukee, he

Drew Dallet prides himself on his family “portraits,” including the one of his son Piper on his left arm. The image of the sparrow speaks to his Jewish heritage.

was shy and tattoos weren’t that common, so getting one stood out. Getting one was self-expression. Sporting so many “makes me feel people are interested in me,” Dallet says. “I’m thrilled to tell the stories of what these tattoos mean.”

Worth the pain Dallet and Jaundice settle on the size of the Native American design for Dallet’s right side. It will be about a foot by 4 inches. Time to get started. Dallet squeezes himself quasiembryonic onto a tiny pallet, exposes his back and right side to Jaundice, and the buzz begins. The space, curtained off to separate it from the other five, is not unlike a doctor’s office: semiclinical and sanitary (OK, a

doctor’s office doesn’t boast such cool picture books), it’s a place where one person wreaks intimate havoc on another. Only this isn’t repair work. “You almost done?” Dallet asks Jaundice three minutes in, acknowledging the pain of the needle. The buzz goes on. They’ve only just begun. Sechrist also acknowledges the discomfort of the process. “The older I get, the more they hurt,” Sechrist admits, “but I don’t ever envision stopping collecting tattoos. They’re easy to carry around with me, they’re easy to collect, I don’t look at them as having to be cool anymore. If I see an artist that I like or if a friend has some free time, I’ll get one.” Designers stereotypically generally have a vision for the way a finished thing should turn out, Sechrist says. For him, tattoos break that rule. “I kind of work counter-intuitively to that,” he said. “It’s sort of like a neverending work in progress.” js

Yet other charitable efforts put clothing at the forefront by framing their efforts with fashion, and Northeast Ohio is home to two such stylish events this fall: Saks Fifth Avenue’s Key to the Cure campaign and National Council of Jewish Women Cleveland Section’s Designer Dress Days. For Key to the Cure, couture and comedy are joining forces for charity in October. “Saturday Night Live” and Saks Fifth Avenue will partner to celebrate Saks’ 16th annual Key to the Cure campaign, which benefits women’s cancer charities, and SNL’s 40th anniversary.

Past and present SNL cast members Will Ferrell, Ana Gasteyer, Cecily Strong, Colin Jost and Northeast Ohio native Vanessa Bayer – a graduate of Orange High School – will serve as Entertainment Industry Foundation ambassadors for the collaboration. “When we heard about the SNL partnership, we were really excited. On a personal level, I was more excited to see Vanessa as one of the cast members being featured due to her local connections,” says Hallie Bram Kogelschatz, marketing director for Saks Fifth Avenue, Beachwood.

“She’s so beloved here in the Cleveland market. We’re proud of Vanessa for being an ambassador for such a worthy cause.” Bayer – known for her SNL character Jacob the Bar Mitzvah Boy and her portrayals of Hillary Clinton and Miley Cyrus – and her fellow comedians were photographed in the limitededition, unisex $35 Key to the Cure T-shirts designed by New York duo Marcus Wainwright and David Neville of rag & bone. The shirt will hit stores and become available online on Oct. 1, and all proceeds from shirt sales will go to

local cancer research charities and EIF’s Women’s Cancer Research Fund. The Key to the Cure T-shirt will be available for purchase at the Beachwood Saks starting at its annual kickoff event at 7 p.m. on Oct. 16, says Bram Kogelschatz, adding that during that entire weekend, shoppers’ designer finds at her store will support cancer research at Cleveland Clinic. “In this case, it’s like you’re getting something for your fall wardrobe and you’re able to give back,” she says. “Particularly in the Cleveland market, it gives us a chance to be a part of the Left: Promotional material for Saks Fifth Avenue’s 2014 Key to the Cure campaign features past and present Saturday Night Live stars, including Northeast Ohio native Vanessa Bayer (second from top left). robust medical community that we already have in town. ... The Cleveland consumer is very fashion-conscious, but also wants to shop on behalf of causes that matter to them.” While Key to the Cure is the “jewel in the crown” of Saks’ charitable efforts, Bram Kogelschatz says, it’s by no means the only effort. Saks Gives encompasses all of the national chain’s efforts, and it’s through Saks Gives that the Beachwood store hosts charitable givebacks throughout the year – givebacks that have led to local partnerships with Jewish Federation of Cleveland, Israel Bonds and Friends of the Israel Defense Forces. Also using fashion as a vehicle for charity is NCJW/ Cleveland. Forty-six years ago, Liz Faulb, then-vice president of the local section, invited women to wear their finest clothes to a “sherry hour,” then asked them to

take the clothes off their backs to be resold. The women left the event wearing paper dresses donated by one of Faulb’s manufacturer friends. This concept gave birth to the first of the NCJW Cleveland section’s annual Designer Dress Days. That first year, the organization raised $4,000, far surpassing its $1,000 goal, and donated the profits to its various community service projects. Though the concept of the event has changed, proceeds still go to these projects, and the organization hopes to raise $200,000 this year. NCJW/Cleveland will host this year’s Designer Dress Days on Oct. 24, 26, 27 and 28 at the Mandel Jewish Community Center in Beachwood. The event, run by 250 volunteers, will offer a selection of new and gently used designer and brandname clothing, furs, jewelry, purses, leathers, outerwear, scarves and more at a steeply

don’t know of any other organization in the community that has an event this large in scope. We are bursting at the seams with donations. Wendy Elconin, NCJW/Cleveland vice president of retail operations discounted price. “I don’t know of any other organization in the community that has an event this large in scope,” says Wendy Elconin, vice president of retail operations. “We are bursting at the seams with donations.” Elconin listed St. John, Armani, Valentino and Burberry as some of the brands that customers can anticipate. In the past, NCJW has also received donations from local stores such as Lisa Moran, Ltd. and Art of Cloth. The event provides access to designer pieces for fashion aficionados while supporting various community service projects designed to enhance

the lives of women, children and families. These programs include Reader’s Theater, a drama/literacy program for fourth-grade students, Hello Israel, a middle school social studies program that teaches students about Israel, and the Entertainmobile performing group, which provides entertainment to residents of nursing homes, senior housing and independent living facilities. On Oct. 28, Elconin says, the fundraising process will start all over again and donations will continue to flood in, not only from members of the organizations, but from all over the community. js

About seven years ago, three restaurateurs decided it was time to ratchet up Greater Cleveland’s French cuisine, so Tom and Joy Harlor launched Le Petit Triangle in Cleveland’s Ohio City neighborhood, John McDonnell kicked off Tartine in Rocky River, and Zack Bruell put together L’Albatros Brasserie in Cleveland’s University Circle neighborhood. They did not work in concert, so this was synchronicity. Inspired by French restaurants in their country of origin and interpretations of those in New York City, all three establishments have thrived, and all their owners suggest there’s room for even more Cleveland eateries specializing in that savory cuisine. This despite Bruell adding Cowell & Hubbard in Cleveland’s PlayhouseSquare district in 2011 to his French restaurant quiver. The Harlors had never been to France when they established Le Petit Triangle in 2007 in the space formerly occupied by Oui Oui Café, an

establishment best known for its crepes. The Harlors wanted to build on Oui Oui’s crepe foundation, but they also wanted a fine dining, “liquor license sort of thing, and we were familiar with the style of French cooking,” says Joy. “And this place just looks like it should be a French restaurant.” The name fit, too, as the original dining room was shaped like a triangle. When they finally got to France for the first time in 2009, the Harlors discovered they were on target. “The look of the café, the menu, the size of the restaurant, at that time was exactly what you were finding in Paris,” Joy says. And business, much of it repeat, has been good; Le Petit Triangle now seats 53 inside, and an outside patio accommodates another 12. Her favorite dish is “our smoked trout lentil salad,” said Joy, noting Le Petit Triangle’s signature offerings include a croque monsieur sandwich, beef bourguignon, a cassoulet – and, of course, the crepes. “We have so many different kinds, that’s kind of what people coming in for,” Joy says. Six years ago, when John McDonnell decided to leave Fulton Bar and Grill (now occupied by Momocho) to launch Tartine, there wasn’t much French cuisine in Cleveland, he says. Taking his cues from French restaurants he popped

into whenever he visited New York City, where his daughters live, McDonnell decided to try one himself. He’d also always liked French bistros in Paris, which he’d first visited in 1976, when he was a college student in Galway, Ireland. Its signature dish the open-faced sandwich it’s named after, Tartine does increasingly good business. “We take a baguette, slice it laterally, put on one of our three different toppings, put it back into a little cast iron skillet, put it in the oven, serve it with a small, lightly dressed French salad,” McDonnell says. And customers keep coming back. “We’re in a nice little area just over the bridge from Lakewood,” McDonnell says, noting Tartine seats 40 in the main dining room, another 12 at the bar, and maybe another 30 on the patio. “It’s a long, narrow place with French doors that open to the patio, brick walls to the ceilings,” he says. “We get a kick out of it.” While McDonnell favors the beet salad – Tartine roasts its own beets – another signature dish is its French onion soup. So is a stuffed pepper made of piquillo pepper and chicken chorizo, served with saffron aioli. “And our pizzas are phenomenal,” adds McDonnell. “We get our dough from Breadsmith (in Lakewood), an organic

whole wheat dough we cook in our own oven.” Zack Bruell, who owns six restaurants in Cleveland, cites L’Albatros Brasserie and Cowell & Hubbard as his French eateries (though, he says, French-style cooking is a Bruell hallmark no matter the cuisine). L’Albatros is more “rustic,” he says, while Cowell & Hubbard, which stresses fish dishes, is more modern, in lighter style “and something you would see in Paris.” The fare served at L’Albatros is heavier and includes more secondary cuts; it’s “comfort food before there was a name for it,” Bruell says. Among its signature dishes: a cassoulet that can be slow-cooked with veal. Try the seared skate wing with lemon dish at Cowell & Hubbard, advises Bruell. “Paris itself is urban, so you’re going to get stuff from all over the world,” he says. “Skate wing is something you’d see in Paris.” There still aren’t many French restaurants in Cleveland, says Bruell, a philosopher of the gustatory who launched his food empire in the 1980s. “In all of my restaurants, the technique is somewhat French,” he says. “The difference between the French and the Italians is that with the Italians, there are fewer components to a dish, so it’s simpler but harder. In French food, mistakes can be masked. You cannot mask mistakes in Italian food. There’s such simplicity to it that any mistakes cannot be covered up. … In that respect, just because the dish is simpler doesn’t mean it’s easier to execute.” js

he medium-brown glow of the crust, the outer sheen, the chewy inside, lox and schmear – everybody knows a great bagel when they see (or taste) it. Bagels are deeply entrenched in Jewish culture – the word “bagel” is said to come from the Yiddish word for “ring.” Over the last several decades, the hand-sized rolls with holes, which have origins in Poland and were brought to the U.S. – New York City, in particular – by immigrant Jews, have gained wide appeal and become an all-American treat. Here in Cleveland, we’re fortunate to have both a rich history and an emerging market of local bagel makers, from the well-established Bialy’s Bagels to newcomer Cleveland Bagel Co. Bialy’s Bagels opened for business in 1966 in University Heights. Terry Skolnick, a Jewish bagel maker in New York City, had moved to Cleveland and wanted to start a new bagel business. “When he came to Cleveland, he looked in the phone book for Schwartz, which he knew was a Jewish name, called someone up and asked them where the biggest Jewish population was in the city. The man told him at that time it was University Heights, so he came here, found a place and opened the store,” says Mark Osolin, Skolnick’s son-in-law. Osolin now runs Bialy’s Bagels with his wife, Ellen, after Skolnick retired and moved to Florida about 15 years ago. The bagels sold at Bialy’s are first boiled in water for a minute or two, which softens the bagels and gives the yeast time to rise, resulting in a hard, shiny outer coat. The bagels are baked in the oven on a rotating board for about 15 minutes,

jstylemagazine.com

resulting in a soft, chewy inside. Osolin says the store’s most popular flavor is mish mash, which incorporates sesame seeds, onion, garlic, salt and poppy seed. Plain and sesame are close runners-up. Osolin says a lot of customers who grew up eating bagels from Bialy’s have since moved away, but they still stop by the store to purchase some whenever they’re in town. “Everybody knows Bialy’s Bagels. I’ve been to Las Vegas and Florida and

Canada, and everywhere I go someone somehow knows Bialy’s Bagels,” Osolin says. “People will tell me their son or daughter misses our bagels and wants them because they don’t have the same kind of bagels where they live now.” While Bialy’s Bagels has been serving up bagels on the East Side for decades, Cleveland Bagel Co. is beginning to make its mark on downtown Cleveland and from Ohio City to Rocky River on the West Side.

Previous page: A sesame seed bagel from Cleveland Bagel Co. Clockwise, from top: Bialy’s Bagels owner Mark Osolin stands behind his finished products, while other bagels rest in various stages of production, from baking in the oven to cooling on the pan.

Dan Herbst of Cleveland Bagel Co. presents a variety of his bagels, including plain, everything, sea salt, sesame seed and poppy seed. Pour Cleveland in downtown’s 5th Street Arcades is one of several locations throughout the region where people can find Herbst’s bagels.

After being let go from his warehouse job, Dan Herbst started tossing around the idea of starting up a bagel company with his friend and business partner Geoff Hardman. Herbst quickly started researching the history of bagels and amassing as much knowledge as he could about the process of making bagels. The first Cleveland Bagel Co. bagels debuted last summer at local farmers’ markets. Herbst says his bagels are a mix between New

74

Jstyle Fall 2014

York City bagels and Montreal bagels. “When we were researching bagels, we read about what a Montreal-style bagel is like and how that baking process works, and then how the New York process works. We just kind of fell into something that’s in between,” he says “We’ve been told we’ve got a nice mix that’s in between the two but it’s its own thing, and people who know bagels have told us that they appreciate that. It’s a

Cleveland bagel.” Herbst describes his bagels as “rustic looking.” The bagels are formed into circles and chilled in a refrigerator for about 24 hours. Once it’s time to bake, the bagels are boiled in a malt water solution before being baked on racks instead of a giant bread oven. Cleveland Bagel Co. currently offers plain, poppy seed, sea salt, garlic and sesame varieties. Herbst hopes to experiment with wheat and pumpernickel flavors this fall. The bagels are made out of Ohio City Pasta’s kitchen, and Herbst handdelivers the bagels to businesses such as Rising Star Coffee Roasters, Market Garden Brewery and The Flying Fig in Ohio City, Erie Island Coffee Co. in Rocky River, and Pour Cleveland, which is in downtown Cleveland’s

5th Street Arcades. The company recently added Juma Gallery in Shaker Heights to its locations, and Herbst says Cleveland Bagel Co. will extend its East Side reach once Rising Star Coffee Roasters opens its new location in Cleveland’s Little Italy neighborhood. Herbst contends that besides Bialy’s Bagels, Clevelanders haven’t really been exposed to “real” bagels before. He’s excited to be part of that change. “In the long term, I would eventually like to get to the point where we have a shop that people can come in and get the bagels and it’s more a production facility also,” he says. “And then after that open two stores then three stores, then get to the point where someone stops at a rest stop in Tennessee and there’s a Cleveland bagel there.” js

etting interior designers to describe their favorite style is hard because, they say, they don’t have one. It’s even harder to get them to name a favorite project they’ve worked on, because adaptability is key to their profession. But get them talking about the process itself and conversation begins to flow. The interior design work of Nancy Benjamin of Pepper Pike and Cindy Rae Cohen of Beachwood includes homes, offices, commercial spaces and, in Cohen’s case, a unique hotel. Benjamin runs Nancy Benjamin Interiors out of her home, while Cohen commands C. Rae Interiors at her very busy office in Beachwood. Neither wants the interiors they design to reflect them, because the client is who matters. Theirs is a service industry, they suggest, and the diversity of the work keeps them creative. “I have meetings with all different types of fascinating people,” says Benjamin. “I’m a lucky person and I’ve become a good listener.” Sensitive to clients’ hopes and dreams, she aims to “interpret what they’re saying as to what they need in the space, what they want in the space, what they

hope to achieve by doing interior design work in their homes or offices.” Cohen is a kind of juggler, fielding questions at her Commerce Park office as she deals with the carpeting of a home she’s designing in Montana, introduces a college intern to her assistants and answers her cell phone. She’s working on 42 different projects, she says, covering lighting, construction, space planning, gutting houses, additions, furniture, and project management. Accommodating people came naturally to Benjamin,

who helped her father arrange displays, then called “vignettes,” at his furniture store in her native Chicago. “In those days retail stores had vignettes, and he had me come in when I was maybe 8 or 9 and have me design them so that they seemed lived-in,” she says, referring to furniture displays arranged by room type. Now furniture stores display their wares by style or item, not function. The main markets for Benjamin, a member of the American Society of Interior Designers, are Greater Cleveland and Naples,

Fla. She frequently works with clients who want to incorporate revered family pieces of furniture into their home design. Commercial ones, she says, often want to feature the company logo in theirs. Benjamin tailors her designs to the client even when the client may not be sure what he or she actually wants. “A lot of times clients will say that they’re contemporary and actually what they really like is a lot more traditional,” Benjamin says. “I always have them show me pictures of things that they’ve cut out on the

first meeting and that shows me the style and which direction to move toward.” Cohen, too, channels her designs according to the client – and likes all kinds of style. “It’s not just that I like it. I respect it, I understand it, and I know how to design spaces that in the end are what the client wanted or needed,” says Cohen. “Somebody wants a casual space, an elegant space, a traditional space, I know how to give it to them,” she says. “We do a lot of custom work, a lot of high-end design. different, creative. We never want to do the same thing over; if somebody asks us to do it, we won’t.” If someone asks for a replica of work she’s done in someone else’s home, she says no; to Cohen, originality and individuality are critical no matter the type of work – even, say, in branded restaurants. There, Cohen will customize, catering “to the individual city and the site location” while adhering to brand standards. And, she says C. Rae Interiors provides the whole package.

82

Jstyle Fall 2014

“We do all our drawings, all our designs, so it’s one stop shopping,” Cohen says. “We do everything.” Benjamin’s projects, meanwhile, span upscale residences; conversions (like the interior of an Aurora barn repurposed as a home), and commercial spaces including Chelm Properties, a Solon real estate firm. One project can lead to another, so “someone in a residential job would lead me to a commercial job in the same family.” And renovations can yield long-lasting fruit. Her work updating the interior of the

Wildwood Cultural Center in Mentor, a sprawling English Tudor mansion Avram Garfield designed as the summer home of Cleveland industrialist John Q. Oliver, led to trips to Charleston, S.C. and New York City in search of antiques and periodappropriate wallpaper – and to many new connections and clients, she said. (Avram Garfield was the brother of President James Garfield.) Speaking of refreshing, Cohen did the interior design of the DoubleTree by Hilton-The Tudor Arms Hotel, an 11-story 1931 structure at East 107th Street

and Carnegie Avenue in Cleveland’s University Circle. When developer Rick Maron called to offer her the work, Cohen jumped at the chance. She grew up in Beachwood and rode by the striking building often when she was younger, and “when I walked in there it was a dream come true for me,” she says. “It was really exciting to take something that old and gorgeous just to bring it back to life.” Last used as headquarters of Cleveland Job Corps, the building, shuttered since 2011, was in rough shape except for two floors with

So Cohen studied the neo-Gothic structure with an eye toward bringing it into the present. “In my opinion, it had to be very interesting, so when you left the building your remembered it,” she says. Because it was envisioned as a boutique hotel rather than more conventional lodging, Hilton gave Cohen “100 percent freedom” in design, she said. Because she had to adhere to brand standards, there was a lot of preparation work. “Once you follow their standards, there’s little room for error and a lot of room for

creativity,” Cohen says. “For a hotel, you’re designing for thousands of people, you know thousands of people are going to experience something you put your heart and soul into,” she says. “Whereas for a client, you’re really designing for the owners, the select few. What I do at least is cater to their specific needs and wants. It’s not 100 percent what I would do in each case, it’s catering to their needs, their wants, their specific styles, their budget.” Arguments? “Not with me. My clients are fantastic.” js

ADVERTORIAL

YOUR HOUSE TODAY, YOUR DREAM HOME

TOMORROW H ello,my name is Tali Israeli, and I would like to share my “Dream Home” story with you. Renovating a home can be a stressful and even intimidating challenge, but as a lifelong architect and designer in Israel, who recently emigrated to the US, I was excited to tackle converting our newly purchased condo into our families dream home.

3656 Massillon Rd. Uniontown, OH 44685 www.thevillagehandyman.com 330-896-2000

The challenge that I ran into was that here in the US, versus in Israel, renovation professionals of various trades (contractors, architects, designers) do not typically work under one operation, and the homeowner is stuck trying to cobble together everything that is needed to design, draw, and execute the perfect renovation. After interviewing 6 different contractors in a row, with none of the the things we were looking for, my husband Aviad and I were beginning to lose heart. I found what I was looking for in The Village Craftsmen, a true one stop shop for the seamless conversion of our 1980s condo into something truly special, reflective of my families unique taste and needs. With a staff architect, designers and 8 employee craftsmen instead of the usual train of lackluster subcontractors, our homes transformation was completed on budget and on time. As an architect, I have over 25 years of experience in assisting customers to make a decision whether to renovate their existing home or to build a new one. Many time this is not only a financial decision but an emotional decision as well. There are so many different details to be consider! If you like your existing house and its location you may seriously consider renovating and upgrading what you already have. Once the renovation decision has been made, here are some considerations that I have distilled from decades of helping others modify there’s, and most recently renovating my own home: Do not settle for a generic design! Always work with professionals. When you need medical care you always seek a professional’s advice, the same with your car, why not do the same with

renovations before dumping thousands of dollar into a project that doesn’t meet your expectations? Renovating your investment is no less important.

1

Always work with an architect (when you do major design) or interior designer (when you do aesthetic updates, and always ask for recommendations and referrals from these professionals.

2

Renovate with a professional contractor. Ask to see previous projects (completed and in progress). Make sure your contractor is financially stable and does not sell the job to sub-contractors, instead look for a contractor that has in-house staff craftsmen for most of the work you need done to ensure the quality of the work. Talk with the contractors past clients and hear about there experiences.

3

Include all the variables and components of the project in the written proposal. Do not allow yourself (or your budget) to be at the mercy of unforeseen events, insist that all the work and materials will be included in the quote. ‘Eye-opening’ experiences Outpatient procedures can lead to a more rested, youthful look By Dr. Gregory M. Fedele, M.D.

A

person’s eyes are usually the first things we notice about someone. More than any other facial feature, your eyes play an important role in the expression of your emotions – and the early signs of aging. When your eyes are bright and alert, you appear energized, well rested and in control. If you feel that “bags” or puffiness under your eyes, drooping upper eyelids, wrinkles or scowling eyebrows make you look older, angrier or more tired than you feel, then you may want to discuss the benefits of an eyelid-rejuvenation procedure with Dr. Gregory Fedele, a board-certified plastic surgeon. There are many cosmetic procedures available today to enhance or improve the appearance of your eyes to give you a more rested, youthful look. Surgery of the eyelids, also known as blepharoplasty, is one of the most common cosmetic procedures performed by Dr. Fedele. Blepharoplasty is a procedure to remove excess skin, fat and muscle around the eyes to improve their appearance. Blepharoplasty is commonly performed as an outpatient procedure in Dr. Fedele’s office, a surgical center or a hospital. The incisions are hidden in the natural creases of the upper eyelids and just below the eyelashes of the lower eyelids. The swelling and bruising that occurs around the eyes after the surgery gradually subsides, and most people can return to work with light makeup or sunglasses within seven to 10 days. Healthy men and women ages 35 or older with realistic expectations are the best candidates for this procedure. Eyelid rejuvenation may also include a brow lift, which can minimize drooping eyebrows, “hooding” over the upper eyelids or scowl lines that come with age. This is accomplished with an advanced, minimally invasive technique known as an endoscopic brow lift. By placing the eyebrow into a better anatomic position, the eye appears more open and there is less excess tissue on the upper eyelid. Dr. Fedele performs an endoscopic brow lift procedure to enhance or improve the appearance of your eyes to give you a less angry, more rested, youthful look. Men and women seeking to improve the appearance of their eyes to a more youthful, rested look can benefit greatly from these outpatient cosmetic surgical

Laser body contouring offers quick, pain-free, slimming results

O

hio Laser Contouring is now open in Beachwood. Our laser procedure provides non-surgical inch-loss with no pain or downtime. This process results in inch loss as early as the first 20-minute treatment. A course of eight treatments produces cumulative inch loss, resulting in the reduction of clothing sizes for both men and women. Featuring the FDA-approved Strawberry Laser, as seen on TV’s “The Doctors” and “The Rachael Ray Show,” Ohio Laser Contouring treatments provide unparalleled technology and results. It is a 100 percent non-invasive treatment that uses a low level laser applied externally to stimulate the fat cells and emulsify and release fat. There is no use of anesthesia, nor any pain, gels, creams, numbing agents, needles and no downtime.

What is a treatment like? You can expect 20 minutes to relax, read or do absolutely nothing. The treatment is completely painless. Each treatment, you will be met by your technician, who will position the laser at the desired areas of the body. Our unique 10-paddle system is recommended to treat a total of two areas for a total of 10 minutes of laser treatment time. For most individuals, this will allow an entire abdomen treatment in one session. After you are done, you can get back to your normal activities with absolutely no downtime, no pain, no swelling and no discomfort. The process has no side effects, with the exception of a welcomed energy boost!

Is it permanent? Results are as permanent as if you exercised the inches away, however, you must continue with exercise and a healthy diet to maintain your loss. By maintaining a healthy diet and exercise, you can expect long-term results.

Who should consider having the treatments? Laser body contouring is especially ideal for two types of people: those who are already following a healthy diet and lifestyle and want to remove localized pockets of fat or lower body fat or those who want to use laser body contouring to “jump start” their slimming efforts as motivation for maintaining a healthier and slimmer lifestyle.

Is everyone a good candidate for Ohio Laser Contouring? Most are good candidates. Even people who are not overweight can lose inches. Be sure to discuss your health background with your physician and ask any questions about your particular areas of concern.

The right credentials

How can consumers determine who really is a cosmetic dentist? By Dr. Paul Mikhli, DDS

I

f you’re reading this magazine, and this article in particular, you’ve probably thought about how to enhance your appearance. In fact, you may have already decided to move forward and do something but are wondering who you can trust with your most valuable personal and professional asset: your smile! Cosmetic dentistry is not considered a specialty by the American Dental Association, therefore any dentist can call themselves a “cosmetic dentist.” Specialists, such as an oral surgeon or an orthodontist, are only allowed to designate themselves as such once they have completed a boardapproved post-doctorate specialty program. In regards to cosmetic dentistry, there is no governing board that requires additional training, continuing education or knowledge to restrict a doctor from referring to themselves as a “cosmetic dentist.” So how do you, the consumer, know where to find someone you can trust to deliver the results you are looking for? The first way would be to find friends and family who have had the same procedure you are looking to do. Whether it’s porcelain veneers, bonding or even a single front crown, the first question you want to ask is, “Can I tell that they had any dental work?” A good cosmetic dentist will blend things seamlessly so everything looks very natural. Another way to find a cosmetic dentist is to go to the American Academy of Cosmetic Dentistry website at AACD. com. There, you will find dentists that have at the minimum aligned themselves with an organization dedicated to education regarding cosmetic dentistry. The AACD also provides a mechanism for accreditation in cosmetic dentistry. Even though this is not recognized by the ADA as a specialty, it mirrors the testing and quality standards as if it were a specialty. Once you meet the dentist, notice if they are wearing loupes to do dental work. Viewing teeth at two- to fourtimes magnification goes a very long way in making sure the fine details of dentistry are done at the highest quality. Tell the dentist what your goals are and ask to see some examples of his or her previous work. A good cosmetic dentist will always have before and after pictures. You may even be invited to contact patients that have a similar procedure done. If the work you are looking to do involves many teeth, molds of your teeth should be taken to “wax up” the vision

of the final restorations. This wax up will be presented to you so you can visualize the shape and contour of the end result and achieve the outcomes that you find esthetic and not just the visions of the dentist and dental lab. You, the patient, should be very involved with the entire planning process. Your smile is something that you “wear” all the time. Educating yourself to find the best people to entrust your smile with will go a long way to getting the results you desire.

Making the best choice

The latest options for surgical and non-surgical facial rejuvenation By Dr. Steven A. Goldman, M.D.

T

he repertoire of options for treating signs of aging in the face continues to expand. While the facelift remains the gold standard for decisive and dramatic facial rejuvenation, a wide array of surgical and non-surgical options allow plastic surgeons to tailor treatment plans to the specific concerns and physical characteristics of each patient. Non-surgical options include injectable agents, ultrasound and radiofrequency-based treatments, and laser therapy. Injectable agents have rapidly increased in popularity because they are performed in the office, show real benefit, are safe and have minimal downtime. There are two main classes of injectables: botulinum toxin and fillers. The former includes Botox™, Dysport™, and Xeomin™. All three “toxes” are injected directly and precisely into muscles that cause frowning or wrinkles, paralyzing them, thereby smoothing the face in those areas. There are subtle but important differences between the three “toxes,” so your doctor can optimize treatment for you. The injectable fillers are similar to the “toxes” in that these are injectable agents administered in the office with minimal downtime and significant results. Fillers, as the name implies, fill wrinkles and add volume to the face. Restylane™, Juvederm™, and Radiesse™ are currently the most widely used fillers. Perlane™ and Sculpta™ and the newly FDA-approved Juvederm Voluma™ and Belotero™ are also commonly used. With so many fillers, all of which have different physical characteristics and ideal uses, patients and their surgeons need to thoroughly evaluate and discuss the available choices to maximize results. Ultrasound and radiofrequency treatments, like Ulthera™ and Fractora™, utilize energy to heat the deeper layers of the skin and subcutaneous tissue. This acts like a mild burn, stimulating collagen proliferation, which in turn can tighten skin. These procedures have minimal downtime; there is no cutting and minimal swelling. These treatments cannot match the results of surgery, but most patients can return to work the next day, making these treatments a powerful addition to the range of options available for patients. Laser treatments, like the Fraxel Re:Pair™ CO2 laser, have more significant down time than the Ulthera™ and similar therapies, because they actually ablate, or destroy, precise amounts of skin to produce a healing response that tightens and smooths. CO2 lasers are generally considered the standard for improving sun-damage, superficial and deep wrinkles, and pigmentary changes.

Surgical options remain the gold standard for dramatic correction of facial aging. A wide array of surgical procedures exists to precisely address specific areas of concern for patients. Blepharoplasty (eyelid lift) and endoscopic brow lifts can be used to treat the upper face. The midface lift, lower facelift, and full facelift can be used to enhance the cheeks, jawline, and neck. An open neck lift is used to more aggressively treat heavier necks. Adding volume with injectable fillers or fat injection (using the patient’s own fat) may be useful in conjunction to restore youthful facial contours. By choosing the right combination of procedures, plastic surgeons can create a dramatic but natural result for their patients.

Knowing is half the battle Familiarize yourself with the right procedure By Dr. Steven Carp M.D., FACS

E

ach of us has at least one thing about our appearance that we would like to change. It may be a scar, body or breast shape, or aging facial features. Cosmetic surgery provides safe and effective options that help individuals address these concerns. A wide variety of treatments and procedures are available to reshape normal structures of the body in order to improve appearance and just as important, self-esteem. The more common surgical procedures today include breast augmentation, tummy tucks, liposuction and rhinoplasty. Nonsurgical options include Botox, Restylane, Juvederm and laser treatments. Healthy individuals with realistic expectations are appropriate candidates and understand that cosmetic surgery should be done for yourself, not to satisfy someone else. Before proceeding, make certain you are well informed about your options, risks, and that you understand the physician’s credentials. Any individual can claim to be a doctor, cosmetic surgeon or plastic surgeon. A doctor’s training and certification

should be appropriate to the planned procedure. Certification by the American Board of Plastic Surgery ensures in-depth surgical training in all aspects of plastic surgery. Dr. Steven Carp specializes in cosmetic and plastic surgery. Certified by the American Board of Plastic Surgery, Dr. Carp has specialized in cosmetic, plastic and reconstructive surgery since 1993. He attended Michigan State University and earned his medical degree from Wayne State University. Dr. Carp completed six years of General Surgery training at the University of Texas Medical Branch and received his specialty training in plastic and reconstructive surgery at the Medical College of Wisconsin. Dr. Carp has successfully completed re-certification and continues his Maintenance of Certification in Plastic Surgery. He is a member of the American Society of Plastic Surgeons and has received the Certificate of Advanced Education in Cosmetic Surgery from the American Society for Aesthetic Plastic Surgery.
