lthough I’ve written for Jstyle over the past three years, this is the first time I’ve been involved deeply in compiling the Singles Issue. As the new editor of the magazine, I quickly learned about the process for choosing the models, photographing and selecting their outfits, and designing the issue in a way that truly reflects each individual’s personality and style. I’m still learning, and I hopefully also contributed my own style to the feature, as well as the magazine more generally. But something special to me was the way the featured singles brought their own flair. Going into it, my fear was at least some of those selected would be reluctant to share anything real about themselves. After all, talking about dating and being single can be awkward, and I’ve probably watched too much of “The Bachelor” over the years to immediately assume acting fake or generic is inherent in potential matchmaking/ profiling scenarios. As put succinctly by the song from the band The 1975, “sincerity is scary.” Still, “sincere” seems like the perfect word to describe this year’s Jstyle singles. I loved the way each person earnestly discussed what they are looking for – as well as who they are – in a fun, genuine way. They each – in an in-depth, unique way – answered several on-the-spot questions we asked them on camera, so we could produce the accompanying video (which you can view at jstylemagazine.com/2019singles). And, they were happy and hopeful – doing their thing successfully on their own and looking forward to meeting someone new and special. I hope Jstyle can help our singles find what they are looking for. And if not, I hope the

magazine is something they can look to and be proud of, as we aim to reflect who they are in an enthusiastic and honest way. For some assistance with dating, we’ve compiled a Meeting in Jewish Cleveland guide, which features activities and organizations that can help people meet one another, date ideas, tips from a local Jewish matchmaker and a survey analyzing what Jewish singles are looking for. The feature is obviously geared toward our single readers, but I think it will have something appealing and interesting for everyone – after all, any of the “dates” can be done with a partner or friend, or solo. This issue also highlights eateries in Northeast Ohio leading the charge toward the plant-based, health food trend. We also check in with Larder chef Jeremy Umansky for how to make the perfect, simple latke. Similar to the Singles section, these features also focus on folks who are living out their interests in an original way. All in all, I hope this issue inspires you to put yourself out there – whether in dating or simply getting out in Jewish Cleveland – in a sincere and optimistic way, too.

Conquering Facial Aging The quest for eternal youth has endured for centuries with little yield. Over the past century, however, doctors who specialize in aging-related fields have begun to see tangible and promising results of their efforts. International expert on facial plastic and reconstructive surgery, Dr. Bahman Guyuron, who Bahman Guyuron, MD has conducted numerous studies on facial aging, shares the best steps for defying the aging process both before and after a facelift. Indeed, with today’s knowledge of the aging process, patients can resist facial aging itself. Dr. Guyuron offers several solutions to defeat the facial aging battle through methods he and other experts developed to help their patients appear essentially forever young. While some believe in graceful aging, most see it otherwise. Dr. Guyuron’s studies have shown that, in most instances, the harmony of a youthful face is considered more pleasing. For many individuals, a facelift is the gold standard for reversing the signs of aging. The outpatient procedure includes removing sagging skin and smoothing out wrinkles in the middle and lower portion of the face. Dr. Guyuron has performed thousands of facelifts and patients often remark that the procedure makes them look as young as they feel. In fact, following surgery, many patients report that they look 7-15 years younger, depending on the magnitude of surgery. After recovering from facelift surgery, however, it is natural for the patient to wonder how long their fresh, rejuvenated look will last. Fortunately for individuals in Cleveland and across the nation, Dr. Guyuron offers non-surgical therapies that halt the aging process following facelift. According to Dr. Guyuron, over the past several decades, he and other physician researchers have established therapies that not only reverse age-related changes to the face but also maintain the youthful appearance. These

transformative modalities, which include skin care products and procedures involving laser treatments and fat injections, are now being used to ensure facelift patients retain the look they have achieved through surgery for years to come. This success happens despite the continuous effects of gravity and the loss of volume and elasticity that occurs in all faces over time. The first level of self-care in post-facelift patients involves a comprehensive skin care routine. This approach involves the use of innovative products scientifically proven to stop the effects of sun exposure, maintain skin elasticity and improve overall skin health. Dr. Guyuron recommends his patients use state-of-the art, upscale skin care line designed by a board-certified practicing dermatologist to maintain and protect their surgical results Facelift patients may choose to supplement their skin care efforts with light laser treatments administered on an occasional or regular basis to retain the elasticity and tighten the skin. Treatments are typically delivered two or three times in the first year following facelift, and once or twice in the years that follow. This type of laser therapy requires a minimal recovery period, usually only 24-48 hours in duration, and yields significant results with a natural, youthful glow. Despite the efficacy of skin care therapy, particularly in combination with laser therapy, these methods alone will not mitigate the volume loss that occurs around the lips and eyelids as a result of age. In the years following facelift, a patient may choose to explore the use of fat injections to restore lost volume and deliver stem cells equipped with the power to rejuvenate surrounding tissues. As with all age halting or reversing therapies, the effects of aging will resume if treatment is stopped. Dr. Guyuron has many rejuvenation options to reverse or halt the process and each is available to be customized to suit the needs of each individual patient. About me: I have a strong love for all things art, nature, sports, fashion, tech, music and food. I’ve got a fraternal twin brother (he just got married so I have some catching up to do), a younger sister who is twice as smart as me and parents who mean the world to me. I play basketball whenever I can, but not until I’ve had my morning coffee, and I love exploring all of the amazing restaurants, bars and shops that The Land has to offer. What qualities are you looking for in a mate?: Someone who is driven but able to slow down and enjoy the little things in life. You love going out and exploring new things and places, but also doing absolutely nothing and watching Disney+ all day. A kind-hearted person who loves family, food, Cleveland sports and animals sounds awfully ideal. In terms of dating, what are your turnoffs or deal breakers?: Being your real and true self is most important for me, if you can do that I doubt I’d find a deal breaker. Favorite Jewish holiday and why: Sukkot - although I’ve never actually spent a night under a sukkah, the meaning of the holiday resonates with me as I’ve always had a love and appreciation for this earth and all of the all things that grow here. Favorite bar mitzvah memory: My twin brother and I shared our bar mitzvah and had an Israeli themed party – with an all you can eat Dippin’ Dots ice cream bar and a live camel to take pictures with. Need I say more? Favorite part of Jewish Cleveland: Jack’s Deli, the amazing temples and organizations we have throughout the city, Ho Wah at La Place on Christmas and how we all know each other.

Sapphire Creek Winery & Gardens

S

ecluded within the woods of the Chagrin Valley, Sapphire Creek Winery & Gardens is relatively new to the Northeast Ohio scene. The winery, which opened in March 2018, boasts a 28-foot barnwood ceiling and panoramic glass windows, projecting a modern yet slightly rustic aesthetic and blending effortlessly into its environment. Owners Kathleen and Andy Dangelo are lifelong residents of the Chagrin Valley and sought to develop a local winery with an outdoor-emphasis similar to those of Napa Valley, California. Sapphire Creek wines are made from Napa Valley grapes, with the flavor palate handpicked by the winery’s leaders. The restaurant’s food menu is best described as modern American with French influence, and features small plates, salads, a cheese board, pizzas and entrees like steak, salmon en papillote (cooked wrapped in parchment paper, with vegetables) and chickpea stew, as well as chocolate cake and a few other dessert options. The menu is seasonally inspired as well. The 11,000-square-foot building can be rented out for weddings and is booking into 2021. Additionally, two downstairs rooms – the cellar lounge and tasting room, which opens to a patio – can be rented for smaller parties. And Sapphire Creek isn’t finished building yet. It has plans to expand further into the woodlands, including an outdoor area where guests will be able to eat, drink and meander.

JSwipe study: What single Jews are looking for About four out of five users of the JSwipe Jewish dating app say marrying someone Jewish is important and consider Jewish identity personally important. That’s according to the 2019 JSwipe Love Study, which surveyed 4,000 of its users across ages and denominations this February. The survey divides responses into three sections: “the state of Jewish,”“the state of dating” and “the state of Jewish dating.” Why is it important to marry someone Jewish? The top response was wanting Jewish family/kids, followed by tradition/culture/community, then shared interests/values. Here are some of the other most notable findings: • Half surveyed say they feel pressured to get married – and women (59%) more so than men (43%). And 81% want a Jewish wedding. • Overall, 71% of users surveyed say they are looking for marriage, while 69% indicated a monogamous relationship, 45% companionship, 31% something casual and 9% an open relationship (they selected all that applied). • Generally, 57% are unsatisfied in their current dating experience. Their favorite part? Forty-six percent say getting to know someone new. Least favorite? One fifth say efforts to find someone, repetition and wasting time. • As far as trends in modern dating, the respondents indicate foremost,

Consider a Jewish matchmaker? Stop spending hours swiping on dating apps that aren’t getting you anywhere and try the matchmaking method that worked for your ancestors – but with a modern and local twist: Cleveland Yentas. Cleveland Yentas is a nonprofit public matchmaking service created and run by Rachel Heiser, a Pepper Pike Heiser resident, for Cleveland-area Jews or those with Cleveland ties. There’s no profile to create or app to download; individuals fill out a survey on cleyentas.com with personal questions covering everything from education to political views to past relationships to deal breakers in a potential match. Heiser and her team of volunteer matchmakers comb through survey after survey to make matches they believe could last – all for free. “We don’t want to waste people’s time, like some other dating opportunities I’ve heard where they fix you up just to say that they fixed you up,” Heiser says. “We’re truly looking for good matches for people. We want to grow the Jewish community and keep it strong here in Cleveland.” Heiser describes the matchmaking process as finding connections and shared values between people – but not too many similarities, as to prevent matching personality clones. After finding a prospect, the matchmakers reach out to each person with a brief description of the other, to see if they are interested. If they are, they are connected to meet on their own terms. “I think a lot of people want to text or find someone online like with these other dating opportunities,” Heiser says. “What we try to push is, when you agree to going out, you actually have to talk to each other on the phone and meet within a week or two. There’s a hesitancy to get in front of people, and we try to encourage people to do that more because that’s how you really can connect with someone.” Heiser says she notices many people nowadays think their first date has to go perfectly to think about a second date. She stresses this idea is false, and encourages people to try many different first date ideas, like a fun, out-of-the-ordinary activity to experience together, like museums, an ax throwing class at Class Axe Throwing in Valley View, a blacksmith class at Cleveland Blacksmithing in the Ohio City neighborhood of Cleveland, a glass blowing class at Glass Bubble Project also in Ohio City, or painting at Pinot’s Palette in Woodmere or Olmsted Falls. “It’s nice to go out to dinner, get coffee or meet at a bar, but there are other things that are more off the beaten path,” Heiser says. “Do an activity with someone to get to know them, or at least have the process where you’re not just sitting somewhere. When doing something interactive and out of your comfort zone, you’re experiencing something together so you have something to talk about and a way to be with someone.” To those hesitant about putting their romantic life into the hands of complete strangers, Heiser urges them to think about Cleveland Yentas’ 40% second date success rate and the 500 currently single clients, of which 250 are between 21 and 45 years old. “It never hurts to have assistance,” she says. “When people shop for a house, some people do it on their own, but some people have a real estate broker. I just tell people it’s just one more tool to help you try to find the right person.” -McKenna Corson

Museums galore Take advantage of Cleveland’s rich museum scene. Visit one or several of the museums near Cleveland’s University Circle, including the Cleveland Museum of Art, Cleveland Museum of Natural History, Museum of Contemporary Art and Cleveland History Center. Or, head to Beachwood to visit the Maltz Museum of Jewish Heritage for a great chance to learn and discuss your Jewish heritage – a perfect segue into an early conversation about your family and values.

Literacy is hot Can’t decide between a date at a brewery and the library? Probably not a serious question, but don’t discount opportunities to check your compatibility when it comes to your favorite books. Bookhouse Brewing in Cleveland’s Ohio City neighborhood boasts not only conversation-worthy beers (including non-alcoholic options), but a free library. All books are free, but Bookhouse asks that you donate at least one book in place of each you take home. The brewery also offers trivia night, spoken word open mics, craft events, beer releases, seasonal celebrations, meet ups, charity nights and more, according to its website.

All-in-one Want more flexibility – perhaps coffee or drinks, and seeing where it goes? Pinecrest in Orange and the Van Aken District in Shaker Heights both offer a range of eating, drinking and shopping centered activities. Consider choosing such a location for a date and see how many different activities it leads to.

Great Lakes Brewing Co. offers tours Friday and Saturday afternoons to evenings, detailing the brewing process. The tour of the Ohio City brewery includes beer samples to compare your palates, and of course you can stay for drinks and dinner after.

Art walks Get a sample of Cleveland’s arts and cultural scene. 78th Street Studios in Cleveland holds its free Third Fridays art walk monthly, featuring more than 50 venues with new art exhibitions, music, food, pop-up vendors and more. Another option is Walk All Over Waterloo, a first Friday monthly art walk in the Waterloo Arts District, also in Cleveland; or, Walkabout Tremont, which showcases the Tremont neighborhood’s galleries, shops, restaurants, performances and more on the second Friday of every month. Combine those events with the other many arts offerings of Northeast Ohio, and you’ll have at least one such date option each week.

Each year for our Singles issue, we ask the singles to list their favorite spots to get dinner and drinks – with both the intention of getting them to explain their personal taste in the Cleveland food/drink scene and to provide ideas for our readers. The top dinner/drink choice over the last five years? The Fairmount in Cleveland Heights. Apparently, they are not alone in that selection. Mike Hrvatin, general manager at The Fairmount, says he hears from people who either are on dates at the Fairmount, or met there, “all the time.” “A lot of singles meet each other here,” he says. “Whether it’s one of our private events that we do – like mixers ... (or) I think a lot of people will come here and grab a beer or wine, or some food. And a lot of people seem to meet each other here one way or another,” although he admits, “I’m not exactly sure how that works.” With an always fun and diverse food and cocktail menu, including seasonal and trendy favorites, Hrvatin says the bar-restaurant combination, and the not overly fancy – yet not a dive bar – vibe contributes to the appeal. There’s also a fireplace that attracts coziness seekers in the winter, and a “pretty deluxe patio” people flock to in the summer. Hrvatin credits owner Jake Orosz for his vision that makes the space special, as well as for deciding to stay open until 2 a.m. every night. “We have a pretty fun and diverse later night crowd, as well as happy hour,” Hrvatin says, adding the kitchen is

If somehow you stumble upon a nice enough day for an outside date this winter, consider some of Northeast Ohio’s nicest parks and walking spots, like along Cleveland’s Cultural Gardens or Shaker Lakes. For an outing resembling more of a hike, visit Cuyahoga Valley National Park, Rocky River Reservation or any of the Cleveland Metroparks. It’s a free way to get some steps in, enjoy nature and share stories with someone new.

Brothers Pete and Mike Mitchell celebrated 20 years of their ice cream brand, Mitchell’s Ice Cream, in October. The pair opened their first scoop shop on Oct. 5, 1999, in Westlake, alongside their father, Richard. Pete Mitchell told the Cleveland Jewish News the experience has been “meaningful and fun,” looking back on those decades with fondness. Adding that he couldn’t have done it without the help of his brother Mike, working alongside each other has made the experience “even sweeter.” “Our relationship as brothers and siblings is very important,” Pete says. “Mike and I share common values but have different strengths to complement each other. I wouldn’t have wanted to do this on my own.” Mitchell’s Ice Cream has several locations, which can be found at mitchellshomemade.com.

Stone Oven sees changes

Beloved cafe and bakery brand, The Stone Oven, has seen ownership and management changes at its locations throughout the Cleveland area. While the Cleveland Heights location is still under the leadership of the founding owners, Tatyana Rehn and John Emerman, the Woodmere and Cleveland locations have new faces in John Cerne and Estra and James Grant, respectively. Now called The Stone Oven Wholesale Bakery, the Cleveland location was taken over by the Grants following a move from rural Kansas to Cleveland due to James Grant’s new job. Following a layoff, the couple were looking for something new and found it in the bakery business. The Woodmere location is still part of The Stone Oven family, but Cerne and his partner Ravi Dodeja, bought rights to the store and all its properties. Cerne told the Cleveland Jewish News that Emerman and Rehn are still helping them serve the community.

Taco ‘bout new Condado Tacos A year after opening its first Northeast Ohio location at Pinecrest in Orange, a mixed-use development by Fairmount Properties, the Condado Tacos team opened a restaurant Dec. 12 at Crocker Park in Westlake, a mixed-use property by Stark Enterprises. Created by Joe Kahn, Condado Tacos offers a Scantron-style menu, where customers can build their dream creation from tacos to bowls and nachos. The madeto-order menu also features curated taco options and numerous libations. All Condado Tacos locations boast an urban feel, with walls adorned with murals by local artists. “When I started this company, it was always to create a place for myself, friends and family that was affordable and had high quality food you could get a couple times a week,” Kahn told the Cleveland Jewish News in December 2018. “Creating that community with the staff and people that come in, it’s been number one for us.” Condado Tacos opened its first location in Columbus’ Short North neighborhood in 2014. Condado Tacos’ Westlake restaurant is at 203 Market St., in the former Michael Kors store.

illennials became the largest living generation this year, and now with more spending power than baby boomers, many are choosing to buy differently than their parents.

In regard to food, studies have shown millennials are more likely to eat up their savings by dining out more frequently. However, they’re some of the healthiest eaters of any generation. In 2016, the Organic Trade Association reported 52% of millennials were stocking their shopping carts with organic items on a regular basis and eating more vegetables than their older counterparts. And the thought millennials are

putting into their eating habits has entrepreneurs taking note. Scott and Jamie Hersch were ahead of the curve, opening Shticks, a vegetarian kitchen in 1997. At the time, they were located in Case Western Reserve University’s Hillel building and their menu consisted of five sandwiches and a falafel bar. Over the years, their name, menu and location has changed. The couple’s restaurant moved to Solon in 2015 and

now goes by the moniker Munch, A Simple Kitchen. Noting the restaurant has never been completely vegetarian, Scott Hersch says “flexitarian” would better describe its menu. It also takes inspiration from Israeli favorites. “We sell a lot of bacon for a vegetarian place,” Hersch says. “Because in Cleveland, it’s a meat and potatoes town.” However, Hersch developed an attitude about how food “should be” early on, he says. “We try to make all the food good; I’m not trying to make the vegetarian food better than the other. There’s still that strong desire, I guess, for meat.” While there are many different notions about what a healthy diet is – and what is healthy for one person may not be for someone else – most would incorporate more plant-based, unprocessed food. Put succinctly by food writer Michael Pollan: “Eat food. Not too much. Mostly plants.” And as growing environmental problems are linked to mass production of meat and dairy, and for an array of other reasons, more and more people – and companies – are working to make plant-based foods the primary focus of an American meal. For example, look at the rise of the Impossible Burger, a plant-based burger formulated to be comparable in taste to beef. In Hersch’s experience, many people who alter their diet to be strictly vegetarian or vegan end up looking

Veggie burgers, for example, don’t really trend toward health, Hersch says, “They really just trend towards desire.” Thus, the goal at Munch – as well as other Northeast Ohio eateries taking hold of the health food shift – is to take whole foods and real plant foods and make them taste delicious. “So people don’t feel like they’re missing their burger or their steak or whatever they have,” Hersch says. “And if nothing else, (it’s) an alternative to ... eating meat at every meal.”

MAKING PLANT BASED BETTER Asked about nutrition, Hersch matterof-factly says, “I think we’ve been fed a bill of goods.” Describing America as “crazy about protein,” Hersch explains, “People here add chicken to falafel. In reality, unless you’re malnourished, you’re never protein deficient.” “You get enough protein from plants,” Hersch adds, “and the biggest beasts on the planet are vegetarians – the strongest and biggest elephants, gorillas, all vegetarians.” Having been in the restaurant business for over 20 years, Hersch has paid attention to trends and believes Cleveland is moving in the right direction. “There’s more places opening and there’s more vegan and vegetarian options on almost all menus than there used to be,” Hersch says. In his opinion, however, it still hasn’t gone far enough. Julie Hutchison, who opened vegan and vegetarian kitchen The Root Cafe in Lakewood in 2009, has a similar mindset. While more people are trying to embrace

healthy eating trends, Hutchison believes there are “a lot of falsehoods” when it comes to how Americans are taught about nutrition. “There are also concerns because of the fact that we don’t get a lot of sunshine in the winter and we don’t get outside as much,” Hutchison says of Clevelanders. “So we are missing some Vitamin D and things like that, but there’s other plant-based ways and healthy ways that you can get that rather than eating meat.” Hutchison tries to be mindful of how The Root Cafe sources its food. She says an important aspect of eating well is eating simply prepared foods that are close to the food source. Noting the cafe doesn’t buy any packaged or premade items, Hutchison says it tries to make everything from scratch, with the exception of bread, which is bought from a local bakery that also uses local ingredients. “There are a lot of people who want to support eating healthy in that way. So they’re eating a lot of local, fresh vegetables and fruits,” Hutchison says. Food allergies are another motivation for healthy eating. “A lot of people are realizing that certain things, for whatever reason, are causing problems,” she says. Listing gluten, corn, soy and dairy as ingredients that can be problematic, Hutchison notes The Root Cafe clearly labels each product with an ingredient list. Like Hersch, Hutchison has also noticed more healthy eating spots opening in and around Cleveland. She has developed a particular affinity for cold pressed juice bars that also offer a

food menu. “I see that happening a lot and I like that a lot,” Hutchison says. “I’m a big fan of Beet Jar juice bar on West 29th Street. You can go there and get tons of food and have a full meal. It’s all super healthy and I just know that whatever is prepared there is going to meet my standards.”

MOVING PAST PROCESSED FOODS Hutchison says in keeping with the health food trend, ideally people will want to eat things close to their source. “So getting used to eating things that aren’t processed, and that’s going to be something hard for people to unlearn, I guess – or to relearn to enjoy the flavors of simple, healthy foods,” Hutchison explains. People are used to eating flavored food products, Hutchison says, and even in the grocery store, almost everything that is in a package has added flavor. “Whether it’s juice, a frozen meal, whatever it is, they put flavor in it,” Hutchison says. “I think that’s going to be hard to overcome, but it would be really nice to have people be used to eating foods that are simply prepared without added flavors. And also shopping for themselves like that as well, and eating more simple in the home rather than buying premade snacks.” On a similar mission, Elliott Endsley opened Nature’s Oasis in Lakewood in 2016 with a vision to provide healthy, all-natural foods to the local community and travelers alike. He recently expanded with another location at the Van Aken District in Shaker Heights. Nature’s Oasis offers grocery items and prepared food, and Endsley believes current food trends are moving away from processed food. “It’s been that way for years, but I think recently, at least in the markets that we’re in, there’s a lot more focus on moving away from meat, going towards plant-based diets,” Endsley says. As a community, he says Lakewood embraced the concept early on, and positive customer feedback encouraged him to open the second location. “The Van Aken project seemed pretty exciting since it’s focused on a lot of Cleveland-based businesses,” Endsley says. “It seemed like a perfect fit for us to expand to the East Side to get a little better access to the customers that we don’t have over here.”

Nature’s Oasis’ Lakewood location is more focused on healthy, prepared food, Endsley says, whereas the Shaker Heights location offers a grocery section that is more than three times the size of Lakewood’s. “Because that community likes to cook at home a lot more,” Endsley notes, referring to the Shaker Heights area. Much of the prepared food sold at Nature’s Oasis is made using items from its grocery. “We follow the same ingredient standards that we do in our grocery, so no added colors or artificial flavors or high fructose corn syrups or any artificial preservatives,” Endsley says. “We have a whole list of ingredients that we do not allow in our store (and) our cafe.” Like Hutchison, Endsley focuses on sourcing local products and ingredients – Nature’s Oasis has partnered with over 150 companies in Northeast Ohio and over 100 more Ohio-based businesses. “We’ve been the launching point for ... (several) different companies. We were the first (store) to carry their products on the shelves,” Endsley says. “And so, for me being an entrepreneur, that’s super exciting because that’s a big deal for someone to get from a farmer’s market style onto a retail shelf.” Endsley, and Hersch and Hutchison, seem to agree the health-minded approach will continue to take root locally, especially as more restaurants and markets offer more plant-based and unprocessed items. “As the big picture, what I see is a lot more either restaurants or markets that are solely focused on health-based items or non-GMOs and all natural ingredients. There are a lot of places popping up,” Endsley says. “But not only that, it seems like almost every restaurant now offers some version of a vegan or vegetarian dish, whereas before, you’d have one or two, and now it’s a little more prominent on everyone’s menu.” js

of the Greek-Syrians after the Maccabean Revolt. “We know from various historians that latkes have their roots as a food of the Jews, a transient food, as a result of the Inquisition,” says the chef and co-owner of Larder. “We have historical evidence that puts them in Sicily in the 1400s. At that time, though, they were made from flour and cheese and honey, so they were drastically

different. They were more like a ricotta pancake you’d find at an Italian restaurant’s brunch, versus this. And eventually through the Diaspora, we spread out.” It was in the 1700s, in Central and Eastern Europe that the main ingredient changed to potato, he says. Umansky, a Cleveland native who grew up in Solon and graduated from the Culinary Institute of America in Hyde Park, N.Y., wanted to be true to the potato latke’s origins. While many American recipes include ingredients such as egg and flour, Umansky wondered about those particular additions. “Would a peasant Jew in Central or Eastern Europe who didn’t have many resources, would they have access to refined flour, which is something everybody adds to their latke recipes now? And the answer is no. Because that wasn’t something we saw until after the French Revolution towards the end of the 1700s. And would they necessarily have eggs or another fresh vegetable to work in there?” Umansky says it’s likely egg and old bread or breadcrumbs were used as a binder, but he made a decision to stick to the latke’s simple potato roots as much as possible. “As we created this recipe, we wanted it to be as directly reflective of the potato as a food,” he says, referring to chefs and co-owners Kenneth Scott and Allie La ValleUmansky, to whom Umansky is married. “As something that went with Jews as we migrated, and (to) be able to make a latke in a way that was literally just potato, and nothing else.”

SCIENCE, ART OF THE LARDER LATKE He developed a recipe that takes advantage of the tuber’s starches and sugars, obviating the need for the egg or any form of wheat. The only equipment needed is a box grater, an oven and a burner. First, Umansky roasts a russet or baking potato at 350 degrees Fahrenheit for 30 minutes, letting it cool only until it can safely

be handled. He then grates the potato, skin and all, forms it into palm-sized patties and fries them in oil, schmaltz or beef fat, at 325 to 350 degrees until dark brown, turning once or twice. He then drains the latkes on a rack, sprinkling salt on both sides and then, if necessary, holds them in a 170-degree oven until ready to serve. The latkes emerge from the oil in the shape of bird’s nests with many crispy “fingers” protruding from the edges. Crisp and light on the outside, they have a creamy center that he describes as pillowy. Umansky has a method to his method. “Russets are really advantageous for a

latke because they have a higher starch and sugar content than other potatoes; hence we get this beautiful dark color,” he says adding that yellow potatoes work well. Waxy varieties, such as red potatoes, will not have the same browning quality. The 30-minute bake catches the starches before they burst. “If we get them right in this gelatinization stage, it’s right where they’ve swelled up with the residual water in the potato,” Umansky says. “And when that happens, when they’re at their max swell before they burst, they’re very sticky.”

Umansky uses that sticky quality – stemming from the same starch that is often squeezed out of raw potatoes in some latke recipes – to act as glue. “When that happens, that’s when we want to grate this potato,” he says. “And this way we rely on everything that’s in that potato, instead of adding egg, instead of adding flour, whatever it may be.”

LATKES FOR A CHANUKAH PARTY For those who prefer onion in their latkes, there are ways to add that flavor by sprinkling onion powder at the end or adding dehydrated or diced onion to the grated potato. However, Umansky cautions against adding grated raw onion. “They might make it a little too wet,” he says. “We don’t want the excess moisture. It’ll cause the latke to fall apart.” When he makes latkes at home in Shaker Heights, Umansky often pulls out his waffle iron. Once the potatoes are roasted and grated, he pops the patties into the waffle iron and then fries them.

“So what you have is more surface area and more crispy crunchy,” he says. “On top of that, those divots, those impressions from the waffle maker, they hold a sauce – sour cream, applesauce – (so) it doesn’t slide off. It can’t slide off. Or you can just spread it smooth over the top, and you’ve got these little pockets all filled with applesauce and sour cream and whatever you’re filling it with.” Speaking of fillings, Umansky often tops his latkes with French onion dip he makes at Larder and whitefish caviar, spreads such as apple butter, or steelhead trout lox and cream cheese. He’s also used latkes as “bread” in building a pastrami or whitefish salad sandwich. When he throws a Chanukah dinner with La Valle-Umansky and their daughter Emilia, 5, the couple starts preparing a consommé – soup with bite-sized matzah balls – two days ahead of time. In addition to roast meat, perhaps steak, Umansky puts out a variety of toppings for his guests to top their latkes.

“As we created this recipe, we wanted it to be as directly reflective of the potato as a food – as something that went with Jews as we migrated, and (to) be able to make a latke in a way that was literally just potato, and nothing else.” Jeremy Umansky Emilia, he says, finds a lot to enjoy in the traditions of the eight-day festival. “My daughter is more than fascinated with the chanukiah now,” says Umansky, who grew up at B’nai Jeshurun Congregation in Pepper Pike and today gravitates to The Temple-Tifereth Israel in Beachwood. “She’s enthralled with fire, so she loves lighting the candles. And, of course … she loves getting presents. And she loves dreidel, too.”

• Preheat your oven to 350 degrees Fahrenheit. • Place potatoes on a parchment-lined baking sheet and bake for 30 minutes. • Remove the potatoes from the oven and allow them to cool just enough to handle, about 15 minutes. • While the potatoes are still warm but cool to the touch, grate them on a box grater or by using a food processor. • Season the shredded potatoes with salt to taste. • Heat the schmaltz (or oil) over medium heat to 350 degrees Fahrenheit. Use a thermometer to ensure accuracy. • Form the shredded potatoes into latkes, roughly the size of your palm and no more than half an inch thick. • Fry the latkes in the schmaltz until they are golden brown on both sides. If the latkes are not completely submerged in the schmaltz, you will have to flip them. The latkes will hold for up to one week in a refrigerator or can be frozen for up to six months. Always reheat them in the toaster or oven at 350 degrees until they crisp back up.

Repurposed Cleveland athletics landmark adds unique residential options Kevin Reeves

A

one-bedroom unit in The Athlon at the Cleveland Athletic Club looks and feels like a great, relaxing getaway after a hard day’s work. It’s a two-story space, the bedroom up a flight of stairs. Enclosed by a low wall, those sleeping quarters hold tall, narrow windows that look upon intriguing slices of downtown Cleveland. It’s a safe space in the thick of things. A three-level suite in the latest Playhouse Square-area redevelopment delivers a very different vibe. It feels like a castle, with ceilings so high you have to crane your neck. Above all, it feels expansive, its long hallway a trademark of the designer,

big suburban homes are intrigued by the larger suites, she says. The smaller onebedrooms are leasing quickly because millennials “just want their own little space and a place to sleep,” says Burke. “They’re not spending too much time at home. I haven’t seen families, but I have seen baby boomers who are selling their houses in the ’burbs and want to come downtown for the action.” Millennials and boomers alike will soon be able to use the walking track and then wind down in the near-Olympic-sized pool at The Athlon, the new, mixed-use transformation of the storied CAC. The building proudly nods to its ancestry with the vintage CAC logos on the elevators in the brightly lit first-floor lobby, the vintage-fixtured, technologically updated ceiling in the ballroom and the beautifully restored tile in the pool.

Joining the residential fray The Athlon – the name is a conflation of the Greek words for “athlete” and “contest” – is the newest contender in downtown Cleveland’s highly competitive residential market. Begun in 2017, 10 years after the club’s abrupt closing, the $61.2 million project should be completed by year’s end. Financing consists of $29.1 million from First National Bank, $7.8 million from TriState Capital Bank of Pittsburgh, $6.9 million from Huntington Bank, $3.6 million from the Ohio Water Development Authority, $10 million in federal historic tax credits and $3.8 million in state historic tax credits. While the one-bedroom suites are most numerous at The Athlon, the renovated building also is set for retail on the first floor and offices on the seventh. As of early November, finishing touches were being applied to the pool, a 3,000-square-foot fitness center and a deck – open to residents only – on the roof of the 15-story structure. The imposing building at 1118-1148 Euclid Ave. began leasing in April and is now close to a quarter rented. It is by no means a conventional, cookie-cutter building: Sandvick Architects designed more than 80 different floor plans, and the views include Euclid Avenue, Lake Erie, Progressive Field and the

terra cotta exterior of The Residences at Halle, another recent adaptive reuse immediately to the west. Like the Halle project and The Centennial, a planned residential repurposing of the old Huntington Bank building at East 9th Street and Euclid Avenue, The Athlon trades on its history. Not only was it known for its Vegas Nights and St. Patrick’s Day parties, it also is the site of a world record: Johnny Weissmuller, the champion swimmer who portrayed Tarzan in early films, set the 150-yard backstroke record there in 1922. Like residential units in other recent adaptive reuses in downtown Cleveland, The Athlon offers high ceilings (some are

downright stratospheric), state-of-theart, stainless steel appliances, a stacked washer and dryer, tiled showers and available bathtubs, ample closet space and community events. It includes a basement garage with some 35 spots, valet service and self-park at an offsite lot, says Burke. There are monthly parking rental rates. The place is pet-friendly, too. The site boasts 109 one-bedroom units and 54 two-bedroom units; 23 of the latter are multi-level. The one-bedrooms start at $1,250 a month, the twobedrooms at $2,300. Three-level suites rent for in the $3,000s, says Burke. Those three-level suites are extra-dramatic in an imaginatively designed complex,

where the smaller one-bedrooms are going especially fast. One-bedrooms are 500 to 950 square feet, multi-level one-bedrooms 650 to 850 square feet, two-bedrooms 900 to 1,350 square feet, and multi-level two-bedrooms 950 to 1,550 square feet. “It’s a modern, vintage building with a lot of originality,” says Burke. Apartments are on floors two through six, half of floor seven and the eighth floor, where there is also a comfortable, relaxed resident lounge. The other half of the seventh floor is a former ballroom, which real estate firm CBRE hopes to rent for office space. The 10th and 12th floors feature 23 two- and three-level suites. The three-level suites are throughout half of the former basketball court on the 12th floor. The 12th floor also features men’s and women’s locker rooms, a platform for yoga, the fitness center and the pool and walking track. Retail is planned for the first floor. While the pool and rooftop deck are unique features, a resident who is a veteran of downtown living tells Burke the resident lounge is special, too, giving The Athlon a particularly homey feel. “The design and architecture make it feel a little bit more like a home,” says Burke.

Coming together According to Burke, the transformation of the Cleveland Athletic Club started as the “passion project” of Ned Weingart, a former CAC member and Cleveland Heights investor who allied with Precision Environmental, Tony DiGeronimo’s demolition and remediation company, and the Bobeck family, which owns Great Lakes Financial Group. Also in the redevelopment mix: Welty Building Co. of Fairlawn and Whitestone Realty Capital, based in New York. When Joe DiGeronimo, vice president of Precision Environmental, walked into the shuttered building for the first time in 2017, he was shocked. Trashed by 10 years of closure, water damage and deterioration, the former CAC was a mess. “We’ve been in construction/ demolition mode for the last year,” he told Freshwater Cleveland, noting Precision

Environmental had to remove tons of debris. According to various accounts, the closing of the Cleveland Athletic Club on Dec. 31, 2007, was sudden, and the deterioration was profound while the closed building froze, sweltered and marinated for 10 years. Founded in 1908, when women weren’t allowed in, the CAC was a private club targeting athletes with its pool, a bowling alley (not in today’s options), a billiards parlor, a card room and 12 overnight guestrooms. It opened in the old National City Bank building at East 6th Street and Euclid but soon outgrew that space, and in 1911, moved into its most enduring home at its current address. The building was designed by J. Milton Dyer, who also designed Cleveland City Hall and the U.S. Coast Guard station on Whiskey Island. The Athlon has always had good bones, and now that it has been restored and reconfigured, it’s poised for contemporary success. But it faces stiff competition – 2,518 new residential units are planned for downtown in the next five years, according to the Downtown Cleveland Alliance – and it needs retail and office tenants. Kevin Moss, who handles Athlon retail for CBRE, has retail that “compliments downtown” on

his mind. Moss, who lives in Mentor and was bar mitzvahed at Suburban Temple-Kol Ami in Beachwood, would like a bank, a salon or a home goods store to occupy an 8,500-square-foot space on the first floor. Or maybe a pet store. If you live in downtown Cleveland and want to buy a toaster, you have to go to the suburbs. Same with pet supplies, Moss says, so The Athlon would be an ideal spot for a business that sells such items. The space available for first-floor retail would likely have to be split up to accommodate multiple tenants. When Moss became involved with The Athlon eight months ago, the greatest hurdle was that it still was a construction zone and there was scaffolding in the road. It took a while to complete, Moss says, so it was challenging for tenants and brokers to look at the property, to get people to visualize “what this project can and will become. Now that it’s complete, it’s easier to visualize the space in the project, so it’s more accessible and easier to pitch.” Living at The Athlon, apparently, already has unique perks. Expect more to come. js

How do you determine how well the material insulates? “If you put your hand in between your window and window covering, you can feel the temperature difference,” Herman says. “That is how you know the barrier is an efficient insulator.” With so many options available, homeowners might want to spend the better part of an afternoon browsing a design store. Deciding between shutters, blinds, shades and drapes is only part of the process. Some other things to consider include remote or automated systems, room-darkening products,

soundproofing treatment, and light and temperature control. Even if a window covering is not necessarily designed with insulation in mind, chances are it is going to improve energy efficiency, says Sharon Agin Rosenberg, president of Earl R. Agin &

By adding another layer onto the window, you will reduce your heating bills,” says Rosenberg, who prefers Andersen and Pella to other windows, although she does not sell windows at her store. The trick is to install the window treatment properly so it can serve as a barrier between the cold and the room, she says.

“We use high energy-efficient shades a lot in this business. However, anything on the window will help insulate the room, except for metal blinds,” she says.

On the other hand, homeowners should lower blinds on a cold winter night to help trap heat into a room, he says.

Opened, closed or in between?

One good option

Window treatments that serve as insulation are an exciting prospect because homeowners can open, close, tilt or see through them while enjoying a well-finished room. The strategic use of window treatments does more than increase energy efficiency. It saves money, keeps the home cooler in the summer and makes the most of sunny days. For example, Herman advises his customers lower shades in the summertime to make the air conditioning unit work more efficiently. However, they may need a different strategy for winter. “In Cleveland, we don’t want to look outside and see the snow and gray clouds of winter, so we close our blinds. It’s an expensive mistake,” says John Marcus, president of Designer Accents at Home, a window treatment contractor also in Beachwood. “When our window coverings are closed or down in the winter, we block out the sun’s warmth and thus cause our heating bills to increase. However, if you open those window treatments and let the winter sun help warm your home … you use less energy.”

Rosenberg, Marcus and Herman agree the Hunter Douglas Duette Honeycomb Shade, a cellular honeycomb-shape product, is one of the best insulating shades on the market. Each cell in the Duette “traps the cold air in the honeycomb pleats and prevents it from making its way into a room,” Marcus says. “Think of it as putting insulation in the attic … The resistance-to-heat factor is a gauge that tells you how well a product insulates. A cellular shade offers a resistance-to-heat factor that can exceed 7.2, depending on the shade’s size and construction. That means your window is truly energy efficient,” says Herman. “The Duette’s insulation quality is head and shoulders above that of other manufacturers.” A Hunter Douglas cellular shade is the only one that has ever qualified for an energy tax credit, says Herman, who also likes the Sonnette Cellular Roller Shade, which Hunter Douglas also manufactures. “It also features cells, and it’s a little more economical,” he says. js
