Fall is a perfect fit

f Northeast Ohio has a favorite season, I’d argue it’s fall. That’s purely observational, of course, and entirely unofficial. But pierogies are somehow the unofficial food of Northeast Ohio and few beg to differ, so please hear me out. Certainly, there is a case to be made for spring, when winter’s chill finally thaws – sometimes much later than we’d all like – and the region begins to bloom. And who doesn’t love summer? Even if it often feels too short-lived, the season’s brightness and warmth bring with them a special vibrancy and highlight the joys of living on Lake Erie. But fall in Northeast Ohio seems special. Sports fans welcome back football on all levels, and in baseball, hope the home team can make a playoff push. Foodies welcome the season’s harvest, and families enjoy apple picking at the nearest orchard. Lovers of nature eagerly await the arrival of fall foliage, often best enjoyed at one of the many parks with which our region is blessed. Most all of those autumnal activities, it should be noted, involve being outside in the cool, crisp air the season

brings – which is where fall fashion comes into play. Putting on a cozy sweater, comfy hoodie, snug jacket or favorite pair of jeans – perhaps for a night out on the town or for gathering around a bonfire – evokes a certain sense of seasonal place and belonging. We tried to capture those senses in this fall issue of Jstyle’s fashion shoot. Our backdrop was The Club at Hillbrook, nestled in the picturesque Chagrin Valley, and included in the many seasonal, on-trend looks we showcased are – not surprisingly – all of the ever-popular clothing items mentioned above. After all, it’s fall in Northeast Ohio. Also in this issue, we cover two of Cleveland’s culinary institutions. One of those institutions, so to speak, is chef Doug Katz, whose chutney b. recently

Chagrin Documentary Film Festival

NCJW/Cleveland will sponsor “A Woman’s Work,” which will be screened Oct. 6 as part of the Chagrin Documentary Film Festival. The documentary follows a group of former NFL cheerleaders who fought to end 50 years of wage theft and illegal employment practices. Additional films of interest include “King Bibi” (Oct. 3, Oct. 6), which explores Benjamin Netanyahu’s rise to power, and “You Only Die Twice” (Oct. 3, Oct. 6), which follows documentarian Yair Lev’s personal and historical journey to uncover the truth behind the man who stole his grandfather’s identity during World War II. Both are sponsored by the Jewish Federation of Cleveland and the Cleveland Israel Arts Connection. Cultivating a More Youthful, Happier Look Through Forehead Rejuvenation Techniques Aging and gravity on the brow and forehead can result in an annoyed, fatigued or sad look in an otherwise youthful face. Fortunately, brow or forehead lift surgery, Botox injection, filler or fat injections are highly effective methods for lifting sagging eyebrows and eliminating unwanted lines and wrinkles in the Bahman Guyuron, MD forehead in order to reawaken a more youthful expression. With almost 40 years of experience in advanced plastic surgery techniques, internationally renowned surgeon Bahman Guyuron, M.D., has performed thousands of brow and forehead lifts throughout his career. He is highly sought after for his expertise and shares his proven techniques with his colleagues across the nation and around the world. Optimally, a youthful forehead is smooth, with the outer ends of the eyebrows appearing higher than the inner ends of the eyebrows. It is for this reason that artists depict a cheerful face with the eyebrows elevated on the sides and a sad face by sketching the side ends of the eyebrows downwards. Candidates who elect to have forehead rejuvenation typically complain of one or more of the following issues: • Sagging eyebrows • Horizontal lines and wrinkles in the forehead • Vertical creases between the eyebrows • Elongation of the forehead The options for rejuvenation of the forehead include: • Injection of botulinum toxin (Botox) • Injection of fillers • Fat injection • Laser therapy • Removing the frowning muscle through an eyelid incision, a technique Dr. Guyuron developed and is now used all over the world • Lifting the eyebrows • Shortening the forehead by moving the hairline down, with or without lifting the eyebrows The decision to move forward with the procedure is made between Dr. Guyuron and the patient after considering many

factors such as the type of forehead flaws, needed recovery time, patient priorities and financial resources. If a forehead lift and removal of the frowning muscle is selected, Dr. Guyuron will make a number of small incisions, approximately ½” in length within the hairline. Another option involves making a long curvilinear incision along the hairline to shorten and lift the forehead simultaneously. An isolated removal of frowning muscles, which also eliminates vertical lines between the eyebrows, can be done through an eyelid incision. This procedure may be performed in conjunction with an eyelid lift in an effort to maximize results; there will be only one incision in each eyelid to accomplish two separate goals. An important benefit associated with the procedure is one Dr. Guyuron discovered about two decades ago – the connection between a brow lift and relief from migraine headaches. After realizing the procedure was unexpectedly eliminating migraines in patients who had undergone a brow lift for aesthetic purposes, Dr. Guyuron gathered data from 40 studies that indicated that more than 90 percent of those who suffered from migraines experienced a significant reduction in – or complete relief from – migraine pain following a brow lift. According to Dr. Guyuron, by eradicating muscles and vessels, the procedure reduces and often eliminates irritation of the nerves that trigger migraine symptoms. Forehead rejuvenation procedures are minimally invasive and are typically performed on an outpatient basis. The procedures may result in some bruising and swelling, but these generally resolve quickly. The length of recovery varies by patient, but most are able to resume normal social and professional activities and enjoy their new look within one to two weeks of the procedure. Botox or filler injection seldom results in bruising. The Club at Hillbrook Nestled in the picturesque Chagrin Valley, The Club at Hillbrook is rich with history and tradition. In celebration of National Mustard Day on Aug. 3, the National Mustard Museum in Middletown, Wis. honored Cleveland’s own Authentic Stadium Mustard. The museum, the only one of its kind in the country, houses more than 6,000 different types of mustards, including Authentic Stadium Mustard, which was inspired by the original mustard served at the Cleveland Municipal Stadium. Started by longtime Mayfield Heights resident David Dwoskin in 1969, the recipe has never changed in the 50 years condiment connoisseurs everywhere have enjoyed it. For National Mustard Day, Dwoskin’s family helped create an Authentic Stadium Mustardthemed game that combined elements of skeeball and cornhole that served to celebrate the condiment, the brand’s 50th anniversary and the legacy of its late creator. Dwoskin’s son, Darryl, says his father loved the museum and helped curate exhibits in its earlier days – and of course – loved his mustard. He adds the game is a “great memorial to have” for his father and the brand’s 50th birthday.

Ranking the restaurants

Thrillist, an online outlet that covers food, drink, travel and entertainment in various U.S. cities, shined a light on Northeast Ohio recently when it published its list, “The Best Places to Eat in Cleveland Right Now.” The list was comprised of 20 eateries in Greater Cleveland’s burgeoning restaurant scene. The region’s Jewish community was well represented, with fire food & drink in Cleveland’s Shaker Square neighborhood and Red, the Steakhouse in downtown Cleveland both making the cut. Regarding chef Doug Katz’s fire food & drink, the site specifically applauded the restaurant’s ability to inspire new and regular customers to keep coming back. o eat a dish from chutney b. is to enjoy a sensory experience – one that begins the moment you walk into the Van Aken District’s Market Hall and breathe in aromas indicative of the menu’s wordly cuisine and that lasts through each flavorful, spice-infused bite. And it’s exactly that type of experience chef Doug Katz wanted to cultivate as he developed the menu for his quick-serve concept, which opened June 25 as a food stall at the Van Aken mixed-use development in Shaker Heights. Specifically, he sought to provide for diners an “explosion of flavor.” “I wanted people to taste it and say, ‘Wow, this is amazing,’ Katz says of his pre-opening menu tastings. “I think so many places want to do food that’s spicy that they don’t make it spicy. So, hearing people say, ‘Whoa, that was superspicy,’ in a way, I like that because I think there’s a population out there that really wants that. ... To me, doing it in such a way where there’s such flavor in the dishes – and there’s not blandness, and it’s not watered down – is really an important thing. That’s what I was looking for.” chutney b. – “chutney” for the spicy condiment central to the eatery’s options, “b.” as an abbreviation for “bowl” – evolved from Katz’s many other endeavors. The dishes were largely inspired by the ethnic offerings

at fire food & drink, his flagship restaurant in Cleveland’s Shaker Square neighborhood; the spices central to chutney b. are some of the most popular from his Fire Spice Company, which offers home cooks an array of international spice options and recipes with which to experiment; and the food is prepared at his catering commissary on Lee Road in Cleveland Heights, a space formerly home to his Katz Club Diner. “At fire, we’ve always had a tandoor oven, so we’ve really learned to enjoy cooking ethnic foods,” he says. “We do a lot of Moroccan, a lot of Indian, some southeast Asian, some Thai. Out of fire, I developed a spice company, where we toast and grind spices. “(chutney b.) came about because the space was available and we said, ‘What should we do?’” Katz recalls. “And we thought, ‘Why not expand on this spice model even more?’”

Making the menu It took Katz about a year to settle on chutney b.’s menu. All told, five tastings were held at his former diner, and various versions of the menu were workshopped before Katz felt confident potential customers could follow his culinary lead. “When you’re on the inside of that (process), you think it’s simple, but then you start showing

people your menu. I must’ve shown (the menu) to 50 people, and it was so hard for people to understand what we thought was simple,” he says. “After asking all those people and hearing what they thought, we were able to keep tweaking it and making it simpler and simpler.” Of the final menu, Katz says, “It’s super simple. It’s meant to direct you and allow you to experience what we’ve created without giving you too much decision-making.” Perhaps because chutney is synonymous with Indian fare, there remains one menu-related area where misconceptions still exist, Katz says. “A lot of people just assume (chutney b.) is Indian, and they’ll ask, ‘How’s your Indian place?’” he says. “What I would say is (that) it’s a fusion.” Variety is indeed key at chutney b., where customers have the ability to experiment with several flavorful combinations. Their

selections begin with a bowl of jasmine rice, on top of which can be placed three warm savory blends: Indian masala, a stew that consists of creamy tomato, eggplant, cauliflower curry; Thai yellow curry, which features carrots, mushrooms and peppers as well as “a lot of turmeric, kaffir lime, lemongrass and ginger”; and Moroccan Harira, a stew made with chickpeas, lentils and butternut squash. A fourth bowl – rice noodle salad with julienne vegetables, peanut dressing and harissa peanuts – offers customers a cold option. The Indian masala bowl is vegetarian while the other three bowls are vegan – an important point for Katz, who wanted to offer something other food stalls at Van Aken’s Market Hall didn’t. “We really wanted to hit on offering vegans a great lunch or dinner. We wanted to make sure vegetarians had options,” he says, also noting the menu’s gluten-free

friendliness. “We have a lot of people who come into (fire) who either have celiac disease or who are avoiding gluten and who are looking for things without flour. ... So, we really took into consideration dietary restrictions, but we also took into consideration the trends – and then our love for ethnic food.” Meat-eaters have options, of course. Once a bowl is selected, it can be topped either with masala grass-fed beef meatballs or curried organic chicken. Vegan misoglazed tofu represents yet another protein option. With or without a protein, adding a chutney is the next step. “We have a serrano chile chutney, which has a little bit of cumin, a little bit of cilantro and lemon juice. It adds this incredible heat to your dish and balances the whole dish,” says Katz, noting spices can also be served on the side. “We have an amba, which is a pickled-mango chutney,

which adds a little bit of the acidity and the sweet. We also have a yogurt, which is a cooling chutney. It’s a raita, it’s an herbed yogurt. And then we have harissa peanuts, which is a dry chutney, which adds a little bit of heat but also adds fat from the peanuts.” Rounding out the menu are two desserts – glutenfree coconut cake with cream cheese frosting as well as vegan and gluten-free candied ginger cookies – and various beverages, including DaoLu, a line of locally produced fermented rice drinks. In detailing the menu, Katz emphasizes that “fusion” theme, using the masala meatballs to illustrate his point. “In India, they’d never use beef. In fact, it wouldn’t be appropriate,” he says. “But in America, if we were to do a quick-serve concept and use lamb or goat, I think we’d have a problem with our sales. So, we made that decision to use

our local grass-fed beef and present it in the best way we can.” He’s comfortable departing from the traditional, even if others might not be. In part, riffing on the conventional is part of what makes a dish uniquely his creation. “I have no issue with telling people I’m this white Jewish kid from Cleveland, Ohio, making Indian food,” he says. “Do I have all the answers? No. But I think, in a way, that allows us to be a little bit more creative and to have fun with the flavors – and to put our stamp on what we’re making. Some people would say, ‘Oh, you’re bastardizing it.’ But I think we’re trying to do it as quality as we can and in a way that we’re representing great food, great flavor.”

Market research Also key for Katz is using quality ingredients. One of the early challenges he faced was determining portion sizes and prices. “We were definitely looking at cost-analysis because we really want to use great quality, but there’s a point at which people don’t really care. They’d rather it be a little cheaper,” he says. “We’re not willing to sacrifice it to that extent. For us, it’s about using the quality, and if it doesn’t work, I’d rather not do it. So, we’re really sticking with what we’ve decided to do. We know this is what we can do it for, and we hope the public loves that. I think people love the freshness, the style, and it has great flavor.” Another factor was efficiency. Based on what he’d witnessed during the six months between Market Hall’s opening and chutney b.’s

first day, he wanted to make sure customers could quickly receive their food. That’s part of why the food is prepared off-site as well as why the menu is streamlined. “What we learned in seeing all of the other places that opened here is that there were a lot of long lines, and that it’s hard to get through some of those lines,” he says. “If you don’t maximize your efficiency to get people through the line, they’re only going to wait so long.” So far, it’s all working – as is the location. Katz says when he chose Shaker Square for fire, family history – childhood trips taken to the shopping district via the Rapid – came into play. The same goes for chutney b. and Van Aken. “I’ve come here since I was 5 years old. I could name so many experiences we had at Mawby’s or at Sand’s Delicatessen. My brother actually had a natural foods grocery store at Van Aken in

the ’80s,” he says, referring to his brother Peter Katz’s Green Leaf Grocery. “Even when I was negotiating doing all of this and planning to be here, I didn’t think about him having a store here. It was only after I opened that I thought it could be that chutney b. is actually in the location where his store was.” Noting Van Aken’s diversity of storefronts and on-site programming, he adds he’s excited chutney b. is a part of what’s taking shape in Shaker Heights.

“We’re able to provide a really amazing experience for the people who live in the Heights – and even further – and I feel really good about the fact that we haven’t opened a quick-serve place and sacrificed what we do at fire,” he says. “At fire, we’re all about quality, but we’re also a fine-dining experience. We’re able to offer that type of experience in a quick-serve environment (at chutney b.), offering really great, flavorful food that’s of the same quality. So, I’m really proud of that.” js

s autumn arrives, there may not be a more evocative aroma than the blend of sweet, tangy and savory that emanates from a slowroasted brisket. For a certain generation of American Jews, nothing may call to mind Erev Rosh Hashanah more than a kitchen and home filled with the complex and distinctive scent centered around that particular cut of beef. Cooked perfectly, a brisket can be cooled, and under the weight of a meat slicer, can be shaved for a succulent sandwich or sliced by hand in generous slabs for a filling entrée. Preparing brisket well is not particularly demanding nor does it require sustained effort, but it does require patience and attention to all aspects of the process.

first cut brisket started coming in. “It’s easier to cook and it’s easier to slice.” Today, Kornblut is hearing from people who intend to slow roast brisket in the same manner as their mothers and grandmothers, but they’re requesting a different cut of beef. “What’s happening now is there’s so much new information out there that sometimes people are asking me for a second cut, which is just the point, but that’s really a fatty cut to cook for your family,” he says. “You really don’t want that because it’s primarily used to make something called burnt ends, which is,

you know, something you make when you’re smoking brisket. “So, I have to spend time now explaining to people that they don’t want a second cut even though they’ve heard it’s really good,” he says. “What they still want is a first cut, but they just want to make sure there’s some fat on it.” Why keep the fat? “A lot of people will go to the supermarket and buy brisket and complain to me how dry their brisket was because it had all the fat trimmed off it,” he says. “When I do a first cut, I leave fat on it.”

First, a primer on cuts of brisket. A whole brisket contains just two parts but several names. There is the flat section, a relatively geometric cut of beef that is nearly rectangular and fairly lean with a fatty layer on top. One of its features is a consistent grain. The flat is often referred to as a first cut. The point is a fattier, rounder, somewhat irregularly shaped triangular mass of beef that is attached to the neater flat. It is sometimes called a second cut. Hank Kornblut, proprietor of Mister Brisket, which has been a community staple in University Heights for decades, says it used to be that Jewish women preparing for High Holy Days knew exactly what cut of beef they wanted for a slow-roasted brisket in a speckled enamel roasting pan. “Forty years ago, all the Jewish women for holidays would order the full brisket,” he says. “They’d order it, you know, a month in advance, and they would cook it. They’d bring it back in and we’d slice it for them and they’d freeze it. “Then, everyone became afraid of fat,” Kornblut remembers, and the orders for

So, in the case of brisket, it turns out Mom (or Bubbe) really does know best. “Or they want to cook a whole brisket, with both sections intact,” he says. “In this day and age, I spend a lot of time trying to identify which type of brisket they want to cook.”

Time and temperature Starting with the right cut of beef trimmed appropriately will go a long way toward assuring great results from a traditionally slow roasted brisket. “The single most important thing is that no matter how you cook your brisket, no matter what recipe you follow, you still want to cook to what is called ‘fork tender,’” Kornblut says. “That means when you put a fork in there – or a toothpick or whatever device you got – it should be really soft. And when you pull it out, there should be virtually no resistance.” Kornblut’s advice on cooking temperature and time is 325 degrees for three-and-a-half hours and checking the internal temperature of the meat with a thermometer. The internal temperature needed to achieve fork tenderness will depend on the type of brisket. Typical American beef – whether USDA prime, choice or select – will generally need to reach an internal temperature of 200 to 205 degrees, Kornblut says. Wagyu are cattle whose roots can be traced to Japan. “But fork tenderness is always your ambition when you’re cooking a brisket,” Kornblut says. “So, no matter how you’re cooking it – whether you’re smoking it, whether you’re Instapotting, whether you’re Crockpotting, whether you’re roasting in your old-fashioned speckled roasting pan – you still need to know the temperature, and then you still need to make sure it’s fork tender.” The cooking time will not depend on weight. “The biggest factor in determining how long you have to cook your brisket is the thickness,” Kornblut says. “The thicker it is, the longer it takes.”

Selecting the seasoning There are, of course, dozens of ways to flavor brisket before it undergoes cooking. Mister Brisket’s famous recipe, which owner Sanford Herskovitz developed, includes a mix of sweet and savory flavors derived from just three ingredients: two cans of RC Cola (or any brand of non-diet cola), one bottle of Heinz chili sauce and an envelope of Lipton’s onion soup mix. Mix them together, pour over the top of a 6-pound raw first cut, fat side up, and pop into the oven in a covered roaster at 325 degrees. It’s possible, Kornblut says, to make a simple and savory pot roast with beef stock, onion, garlic, salt and pepper. Fruit and beef pair well, and that pairing might

be particularly appropriate for Rosh Hashanah, when sweetness figures as a prominent theme. In fact, Kornblut says he recently took a call from a man competing in a barbecue contest who was worried because he had injected the wrong blend into his brisket. It was a mix of pineapple and apple juices. “I’ve smoked brisket, and I used applewood, and I thought it was much better than when I used a non-fruit wood, like mesquite,” Kornblut says. “I told him, ‘Brisket loves sweet. So this might work out fine, just wait and see.’ And he goes, ‘Well, I’m sure the judges are going to think it’s interesting.’ The bottom line is, he came in first (place) out of 50.” js

Upstairs at Van Aken seamlessly brings an urban living experience to suburban Shaker Heights

Retired architect Richard Zingale had his eye on the Van Aken District from the get-go, when the mixed-use development that would take shape in Shaker Heights was little more than a combination of blueprints, conceptual renderings and big ideas. Through personal and professional connections involved in the project from the early going – Zingale consulted with barber Chuck Falk on the design of the Eddy’s Barbershop that Falk opened at Van Aken – he was able to gain an insider’s perspective on the development. He liked what he saw. “I was able to see the project before they even put the first shovel in the ground. It had my interest immediately, and I followed it along through all of the stages of construction,” says the fit, kempt and fashionably bespectacled 67-year-old. It wasn’t only with a passing or even professional interest that Zingale kept tabs on Van Aken, however. At the same time, he and his spouse, neurologist Dr. Rob Wilson, and their son Zach Wilson – all members of Anshe Chesed Fairmount Temple in Beachwood – were looking for a new place to call home. For about seven years, the trio had resided in a Moreland Courts condo in Shaker Heights that bordered Cleveland’s Shaker Square. Zingale and Wilson were in part interested in a more modern living space than the nearly 100-year-old Moreland Courts offered, and for Zach, whose bar mitzvah was this past spring and who’s entering young adulthood, they – and he – wanted to remain in Shaker Heights City School District. Enter Upstairs at Van Aken, the official name given to the five-story, 103-unit residential space that’s literally upstairs from the retail, dining and business components that comprise the rest of Van Aken. Having long observed its progress, Zingale felt the time was right to invite his spouse and son for an Upstairs walkthrough. They did so this past spring. “I brought them to see this unit, which was now completely finished, and we were like, ‘Whoa.’ The unit itself was very fetching,” recalls Zingale, noting its

open design, commodious kitchen and attractive finishes. “And then we had a challenge because Zach is in the Shaker school system and it really agrees with

him. The middle school is right up the street from here, and he can walk to school. … So, this checked a lot of boxes in a very major way.”

Amenities, programming stand out The family of three moved into Upstairs in late May – and they aren’t alone. Suggesting the RMS Investment Corp. development has been warmly welcomed to the neighborhood, Upstairs – which opened to residents slightly more than a year ago on Aug. 29, 2018 – is currently 99% full. “We have a very diverse demographic of people,” says Jason Russell, Van Aken’s neighborhood general manager. “Some people are fresh out of college or a resident (doctor) at one of the hospitals. We have people who’ve downsized out of their homes – empty nesters. I think we truly have a wide range (of residents), which in many ways is reflective of the Shaker Heights community overall. It’s good to see, because a lot of new apartments in this region are typically (occupied by) younger folks.” Between them, those residents occupy 67 one-bedroom and 36 two-bedroom units. The smallest space is a studio-style one-bedroom apartment at 559 square

feet; the largest a two-bedroom, twoand-a-half bathroom penthouse that occupies 1,949 square feet. Penthouses also feature a “flex room” that’s as large as a bedroom but doesn’t feature a closet as well as a private rooftop space. All told, there are 19 floor plans – all named after Shaker Heights streets or neighborhoods, like Zingale and Wilson’s “Moreland 2” floor plan – and prices range from about $1,200 to $6,600 per month. A “standard” finish at Upstairs, Russell says, means quartz countertops, a backsplash with dimensional tile, Whirlpool appliances and vinyl plank flooring, among other things. With each bump up in floor plan comes higher level finishes, and while specifics vary by plan, those upgrades take the form of higher-grade quartz, gas stoves instead of electric, kitchen islands with waterfall countertops, to name a few. In penthouses, which are on a secured floor, there are hardwood floors, wood cabinets, a higher ceiling, and in the master bathroom, there are heated marble floors.

Other Upstairs features: a large community room residents can freely use or reserve for entertaining guests; a rooftop deck with grills available for cooking; reserved underground parking or free first-come, first-serve surface lot parking; storage rooms available for rent; and pet-friendliness, so long as the weight of that pet – or pets – stays below Upstairs’ 100-pound limit. But Upstairs’ biggest draw might be its location. For starters, it’s a public transportation hub, serving as a stop for three of the Greater Cleveland Rapid Transit Authority’s bus routes as well as its rapid transit Blue Line, which simplifies travel to downtown Cleveland while providing a distinctly urban appeal to living there. More meaningfully, however, Van Aken’s location – in concert with how its operated and its mix of locally owned stores – is designed to cultivate community. “That local experience, it really plays out when you go to Market Hall,” Russell

FEATURE says. “Residents will stop in for their morning coffee or morning pastry and know everyone by name, and oh by the way, they’re talking to the owner when they come down here. I think that level of human interaction is what we’re losing in retail, frankly, and so having that experience where someone knows your name, you don’t have to say a word and the order just shows up – that’s an experience we provide here at Van Aken that I think puts us above our competitors.” Programming is another draw. From weekly farmers markets to seasonal outdoor movie nights and beer gardens, Van Aken schedules events as diverse as its mix of residents and business tenants. It partnered with the Cleveland Flea over the summer, and this fall, Russell says Van Aken is partnering with ESPN Radio to host family-friendly tailgates during Cleveland Browns games. “A number of events are mostly familyfriendly,” he says. “That’s our primary demographic here.”

City living, suburban setting That sense of community and the diverse programming play a large part in Zingale and Wilson’s overall satisfaction with living Upstairs.

“It was so hopeful to see people come together in a public space like that – and they’re not necessarily shopping or anything, they’re just hanging out – when (elsewhere) you see everyone on their phone or on their computer, disengaged,” says the 52-year-old Wilson. “It’s very hopeful to see people engaged like that on a consistent basis, and I think that’s one of the most attractive things about Van Aken District.” “What RMS has done – and very consistently – is programming,” Zingale adds. “The programming promotes community – and an emerging community, because I think it’s refinding itself. We’ll see what happens during the winter, but summer was all of this energy and activity.” Zingale credits Van Aken’s early success to both Russell and Jon Ratner, president of RMS Investment Corp., which is headquartered at Van Aken. “Jon Ratner is very present. He’s out and about, and he’s asking great questions. When Nature’s Oasis opened, he’d ask, ‘What do you think? Can you put a meal together in here?’” he says, referring to the all-natural foods market and cafe at Van Aken. “Jon is very visible.”

A Northeast Ohio native, Zingale lived in Tampa, Fla., for about 32 years prior to moving back to Cleveland – along with Wilson and Zach. When they left Florida, they moved out of a space on the 20th floor of a high rise in Tampa’s Hyde Park neighborhood, which he compared to Shaker Heights in that it offered an urban environment despite being outside of the city’s central business district. Zingale says he’s drawn to the energy of vibrant public spaces and Van Aken meets his metropolitan needs. “It’s probably one of the most urban spaces without being in the central business district. You have the opportunity to go down and get a coffee, you can go down and get a paper. Even in the secondary set of retail, which is across the tracks, there’s a wine shop, a Subway and a Donato’s Pizza. So, it’s an opportunity to walk to satisfy a lot of the domestic necessities throughout the day,” he says, recalling a recent walk to nearby Walgreens to pick up laundry detergent he hadn’t realized he’d run out of. “I like meeting friends and family here for lunch and for dinner,” Zingale adds. “There’s a lot (to do) without having to get into a car.” js

Smart money From home automation to more fully integrated use of voice and touch systems, smart home technology is increasingly sought after

wenty years ago this past summer, Disney Channel released “Smart House,” a movie in which a widowed father and his two children win a contest for a technology-enhanced home that helps take care of basic chores – until, that is, the house itself gets jealous and begins to take on a personality of its own. The film is decidedly science fiction (and somewhat sappy), but technologies that seemed completely crazy in 1999 have become more and more common in 2019, like smart home technologies completing tasks that previously needed a human’s touch. With that in mind, experts from Smart Home Innovations in Cleveland, K+ Integration Systems in Chagrin Falls and evoDOMUS in Cleveland Heights shared what customers are requesting from them when they want to add technology to their homes.

Systems for senses Despite the warnings given to us by “Smart House” and other fiction (“2001: A Space Odyssey” springs to mind), Mike Kolomsy, owner of Smart Home Innovations, says the big thing for his customers right now are voice recognition, house analytics and artificial intelligence for their homes. “With our company and the type of home automation systems we work with, we can tell Alexa certain commands to do certain things,” he says, referring to Amazon’s virtual assistant. “For instance, I can tell Alexa to turn on the lights, turn down the shades, turn on the TV.

“With the analytics features, at least in the home audio/video world, they have touch screens now that recognize who you are and will adjust the touch screen accordingly to control the home. So, if you just like using music in certain rooms, well, it will pop up that way,” Kolomsy says. “That’s kind of what’s big right now, at least with the systems I’m working with here. We’re hitting that hard.” He says a frequent byproduct of these smart home technologies is the improved energy efficiency, however most people aren’t coming in to his company specifically requesting more efficiency.

“They want the control aspect, too,” Kolomsy says. “They want to be able to, with one touch of the button, be able to turn on or off the lights. With new homes out there now, all the lighting is low-voltage lighting, so it really doesn’t take much power. That saves a ton of money on your energy bills.”

Time to upgrade Rob Myers, president of K+ Integration Systems, agrees most people aren’t looking to improve energy efficiency when they want to put smart technology in their homes. “Most of the time, the technology is part of the overall experience of sound and video,” he says. “We don’t often get requests for people to specifically automate lighting, for example. Mostly, it’s coupled with they’ve got some technology in the house, it’s kind of outdated, they’ve heard a lot about integrating sound, video, control of thermostats and lighting and things like that. So, they’re curious about that (and) they’re coming because it’s time to upgrade parts of the house that they interact with more.”

Frequently, Myers’ customers come to him looking to upgrade the sound system in their homes. “A lot of people still have CD players,” he says. “Everything’s moving to internet streaming. I’ve got a CD player, it’s part of my system and it’s been part of my system for 20 years – (with) drawers full of CDs – and I can’t tell you when the last time was that I opened one of those boxes and put a CD in the CD player.” Myers says it’s actually remarkably easy for people to update from CD player systems to internet streaming systems, often for no more than what a nice TV used to cost. And for most of the systems on the market, sound quality isn’t an issue. “Most of the equipment we sell, the sound quality is really, really good right out of the gate,” he says. “For most people, that’s good enough. ... It used to be if you were a real audiophile, you had to spend a ton of money. Today, you can get great, great, great sound for not a huge investment.”

Achieving automation Alexander Kolbe, owner of evoDOMUS, says most people come to his company looking to automate things around the house. “What I see is that people tend to request more home automation,” he says. “The catchphrase is ‘smart homes.’ What that means is it can be anything from a smart doorbell to a whole-house system that can be controlled by your ... phone. It allows you to have certain scenarios, so

actually you can program moods. You can say, ‘I want to throw a party’ (or) ‘I want certain lights on,’ and you can do all that just by pressing one button.” He says in order to accomplish this, the house needs a bus system, which would connect every electric fixture in the house to an IP address, allowing computers to access each fixture. But those options are on the higher end, he says, and people usually like technologies, such as the ability to control the temperature in their houses before they get home. Kolbe’s company specializes in making green homes, often combining efficient heat and cooling systems with a highperformance thermal envelope, providing more insulation in the walls and windows and an air-tight home.

He also says changes in technology have made some once common features obsolete. “What has changed is the nature of certain technology,” Kolbe says. “Nobody in their right mind would use incandescent light sources any more – it’s all LEDs, it’s all lower energy. I think LEDs have come so far in terms of the light color and they’re dimmable. You can just do anything with them, they just don’t need a lot of electrical energy. That has changed, but there are people who are uncomfortable and want the same things they needed 20 years ago. It’s just we have more to offer now. Smart home technology was almost unheard of 20 years ago. ... We can do more now than back in the day.” js

First appointment is to evaluate the area of the missing tooth, which includes a 3D scan to assess the bone volume and plan where we want the new tooth to be. From that information, we fabricate a surgical guide that precisely directs where the implant needs to go to support the ideal tooth position. 2. Second appointment is when we place the implant. We have a surgical guide we use for this appointment that can take less than 30 minutes in some situations! Local anesthetic is always used, which will eliminate any pain, but this can be combined with Nitrous Oxide (“laughing gas”), Valium, Xanax or sedation by an anesthesiologist, which will control any anxiety. For post-op discomfort, all that’s needed is Tylenol or Advil at the patient’s discretion. I tell my patients they can go to work the same day but should avoid strenuous exercise for a few days.

3. The last and third appointment is to check on the healing and fabricate the crown. Four months have typically passed since placing the implant, and statistically, 95 percent of a patient’s bone has fused to the implant. Anesthetic is typically not needed for this appointment. A scan of the implant head is taken and a crown can be made while the patient waits. Millennials and Cosmetic Surgery Millennials, followed by Generation Z, are the most technically inclined generations thus far and are more likely than past age groups to embrace all kinds of tech, including advancements that improve their physical appearance. Millennials (those currently 22-37 years old), specifically, have created what’s been referred to as a “prejuvenation” trend, utilizing the many noninvasive treatments such as Botox, lasers, facial peels, micro needling, etc., to prevent signs of aging before they appear. The new approach of controlling the aging process through self-care can be a very positive thing. There is a flip side for millennials and their preoccupation with tech, which comes in the form of social media. According to the Pew Research Center, 88% of 18-30 year olds said they were active social media users. One of the known effects of regular social media use is it’s tendency to amplify insecurities about one’s appearance. Looking at edited Instagram pictures of celebrities, filtered and perfectly tweaked selfies on Snapchat, or how-to makeup and hair videos on YouTube can all feed into an idealistic view of how real people are supposed to look. A 2018 American Academy of Facial Plastic Surgery survey showed that 72% of plastic surgeons surveyed had seen a significant increase in cosmetic surgery and injectable treatments in patients under 30 years old, that is up from only 54% in 2017 and 25% in 2013. There is also a new pattern emerging of patients referring to pictures on the internet as the reason for changes, be it an unflattering shot of oneself on Facebook or the appeal of the flower wreath, doe-eyed, tiny-nosed selfie taken with a filter on Snapchat. Valid but sometimes unrealistic notions of how one can improve their look in social media posts is a new factor in choosing plastic surgery. older generally held the belief that constantly taking pictures of oneself or spending money on plastic surgery were both acts of vanity; for millennials, it’s the norm. Many celebrities and influencers on social media regularly and openly discuss or show the results of cosmetic procedures. Plastic surgery is now very mainstream and no longer something being kept secret, yet another way social media has added to the increased business of treating millennials. Ultimately, whether it’s making changes to boost self-confidence or having treatments to slow down the effects of aging, younger people are now utilizing new advances in cosmetic surgery in large numbers. Most physicians are very much in line with these new trends, so long as the patient’s expectations and requests are realistic. As with any procedure, finding an experienced surgeon and well-respected practice is very important for optimal results.
