Food, restaurant related memories

S

ome of the strongest memories I have of places I’ve lived or visited took place in restaurants. Together, the smells, what I ordered, how it tasted and the overall vibe shape the experiences, along with the conversations with family and friends had over those meals. And for about a year and a half in 2013 and 2014, I worked front of the house at a farmto-table restaurant, Summer Kitchen + Bake Shop, in Berkeley, Calif. As a transplant to the area, the experiences and friends I made at the restaurant largely defined my life. The busiest days – every Saturday – required such a high level of efficiency that the other front-of-the-house workers and I moved about in what could be described as a state of flow. Lack of focus or confusion for even a moment could make quite a lot fall apart, the worst being confusing guests’ orders or dropping something with expensive saffron in it. The experience taught me how to work hard in a way no formal education could mimic. There wasn’t time to avoid something you didn’t want to do. The difficult customer or task was there before you had a chance to second guess it. I learned about new ingredients, cooking and food systems. I admittedly mostly pretended to learn about wine, guessing at descriptions when writing the wine list. And the food was absolutely delicious – I still think about the crunch and creaminess of the kale salad with crispy chicken, the thin crust of the pizzas and the richness yet snack-quality of the marble cake. Thinking back, I can only

imagine my world in that restaurant being turned upside down by the pandemic. The loss of income, free food that served as supplemental income and time with friends there would be incredibly challenging; I probably would have had to move back to Ohio and in with my parents. Looking back though, I almost never had time to eat during dinner service. Each day as I clocked out, I would stuff dinner for the night in my backpack, along with some leftover sandwiches and cupcakes we were allowed to take. I biked two miles, uphill home. Once I biked my route with two full pizza boxes on my back. Somehow, they were still almost perfect once I got home. This is all to say, takeout food – even after a bumpy bike ride – can be awesome. Since the pandemic, my roommate, Abbie, and I have ordered from a local restaurant, sometimes somewhere new to us, sometimes an old favorite, at least once a week. While I certainly miss the atmosphere of being out at

these places – which are now slowly reopening – I have new memories of enjoying different dishes and good times, perhaps with a homemade cocktail or on a Zoom call with a friend. In this issue, we highlight two local eateries – Zhug and Luna Bakery & Cafe – in our photoshoot, as well as Appletree Books. The photos were taken in early March, just a week before the pandemic forced us all to shut down. To me, the images of our models, all volunteers from the Jewish community, in those spaces evoke a feeling of nostalgia for dining out with friends. As you read our first digital magazine – and we’re hoping you peruse our next issue in print and online – I hope such content brings about similar memories. I also hope you are inspired to support local restaurants and other businesses when possible, so once this is all over, they will continue to serve us with experiences for years to come. Nostalgia As summer fades in, Northeast Ohioans are being greeted by warm weather, but are likely still cautious about classic summer social activities like sharing a meal with friends or exploring new neighborhoods together. Local dining and retail spots, such as Zhug, Luna Bakery & Cafe and Appletree Books in Cleveland Heights’ Cedar Fairmount district, are slowly returning to normalcy, although with some necessary social distancing alterations. zhug “It’s certainly not like being open, but it feels safe for our employees, it feels safe for the community. It’s a small team and we’re able to really prepare great food and the system is just working well. So we are enjoying doing it – we are excited to come back one day, but we’re not ready yet.” Doug Katz, owner

The Middle Eastern-inspired restaurant in Cleveland Heights’ Cedar Fairmount neighborhood opened last year, named after the Yemeni hot sauce that pairs with the menu. The space is open and sunny, with a minimalistic, modern yet earthy look. After closing for dine-in service due to the pandemic in March, Zhug switched to curbside pickup and delivery – all via an easy-to-use online platform. The restaurant also made some minor menu

changes to highlight foods that travel best and are more home style, and different specials. Zhug owner and chef Doug Katz says the restaurant’s staff is talking dates for reopening for table service. “It sort of just depends, but we are thinking maybe the next four weeks we would consider it, but we just want to make sure everything is stable and we didn’t want to be the first ones,” to reopen, Katz says.

On top of making sure Zhug continues to cook delicious takeout – food emphasizing spices and strong flavors – Katz opened a new ghost kitchen in Cleveland Heights for South American-inspired takeout. Chimi, named after chimichurri, an Argentinian herb relish, opened June 12 for curbside pickup and delivery only – summery food for a different kind of seasonal dining experience.

“It’s just so odd that you can’t plan for it – we had no idea what was coming. We were coming off of like our best year ever – we’ve grown every year. So we definitely had to change how we are doing things.” Bridget Thibeault, owner

The bakery known for its delicious cakes and pastries, as well as coffee drinks, crepes and more, has been a growing presence in the Cleveland Heights community since 2011. But when the pandemic hit, it converted to takeout only. Luna reopened its patio for dining once Ohio Gov. Mike DeWine allowed it, says owner Bridget Thibeault. And around June 1, indoor dining reopened at Luna, although due to the nice weather, most customers have elected to munch on treats and sip coffee outside. The bakery’s Moreland Hills location – which had been closed since March 18 – also reopened in early June, with limited hours.

“Our sales are definitely down – we are probably doing about 50% of what we normally would do this time of year,” Thibeault says. “But we have seen an increase over the last couple weeks, so we are hoping it will just continue to grow as the summer goes on.” Another downside for the business is as people avoid big gatherings, they also aren’t ordering wedding cakes from Luna Cake Shop. The bakery is well known for its colorful, intricate and tasty designs. And there is the loss of catering orders for other large parties, like graduations, that are typical this time of year. The bakery also had to lay off staff, but has now been able

to bring most back. Thibeault says as the weather warms and the state relaxes orders, “some confidence is coming back” for people looking to go out and visit local spots like hers. She says the bakery has also started offering decorating kits for cakes and cookies, as well as take-and-bake sticky buns and cookie dough to aid customers with their home baking endeavors that may have become a hobby during the quarantine. “I’m thinking more about wholesale and how can we sustain ourselves if something like this were to happen again,” Thibeault says.

The independent neighborhood bookstore that has been in business for 46 years shut its doors when the pandemic hit Ohio in March. Since then, it’s slowly coming back to life in a new form. “It’s really a mainstay in the neighborhood, and I really hope that we are able to maintain it,” says owner Lynn Quintrell. “We are working very hard because it’s been such a community

presence for so many years.” Quintrell says the store first reopened around April 15 to accommodate curbside pickup and home delivery of email and phone orders. It has since increased its hours due to strong business. And one new service the bookstore developed to prevent physical contact between people and items is referred to as the book guru. A customer can make

an appointment with a staff member knowledgeable about books who – from at least 6 feet away and outside the store – will make recommendations based on the reader’s interest. The book guru will then sell the customer the books they choose. “It’s a way to bring the merchandise to the customer without the customer coming all the way into the store,” Quintrell says.

Davis Bakery celebrates 80th birthday

Around since 1939, Davis Bakery is celebrating its 80th anniversary as a community bakery institution. The bakery in Woodmere and Warrensville Heights is now operated by the second, third and fourth generation of the Davis family. President Joel Davis says he couldn’t be prouder of the accomplishment. “There aren’t many businesses that make it that long,” he says. “We kind of feel like we’ve made it this long by changing and adapting our operation. When we first started, we were focused on retail and at one time, we had 39 stores. As we saw supermarkets start getting into bakery – and now you can find bakery products at gas stations – we saw the writing on the wall. If you can’t beat them, join them.” He says a shift toward supplying baked goods to local companies, like grocery stores and hospitals, helped the company thrive. “Today, we have two stores and changed operations, scaling down on retail and going after institutional businesses,” he says. Though much has changed, the team at Davis Bakery say there are two things that haven’t – a family-like work environment and their highquality products the community has come to love. “(The quality) is something we will never sacrifice to save on cost,” Davis notes. “We’re always going to put the product out there. Our rye bread, for example, is our calling card, it is what opens a lot of doors for us.” Whether it’s the Chinese cookies, white coconut bars, chocolate rugelach or hamantaschen, Davis Bakery continues to offer delicious options with seasonal and cultural flair. And the bakery’s leadership hopes families continue to choose them. “It just kind of makes you feel old,” Davis says, jokingly of the big anniversary. “But, it does make you feel good that you’ve become part of the tradition of many families. ... (It) makes you feel good when you put in those 70 hour work weeks. It makes it worth it.”

Making the most of mold

Jeremy Umansky, co-owner and chef behind Ohio City’s Larder Delicatessen & Bakery, released his first book, “Koji Alchemy: Rediscovering the Magic of Mold-Based Fermentation,” on May 6 with co-author Rich Shih, a leading culinary explorer of koji and miso. Umansky says he hopes the book, which includes a foreword by American food writer and DIY food activist Sandor Ellix Katz, helps brings koji mold to the forefront of culinary conversations. Koji, which is used in many fermenting practices, is the microbe behind the umami flavor of products like soy sauce, miso and mirin. “This is an ingredient that I would place a lot of money (on) that every American has in their house,” Umansky notes. “We have soy sauce packets from takeout – so it’s something that is there, but we don’t know how it is made.

As an extension from that too, it is really fun and fulfilling for me to see other people fall in love with a mold the way I have.” Umansky says he was compelled to write about koji in a way the general public will understand, as much information available is either hyperscientific or in Japanese. He says “Koji Alchemy” is “the first single-subject book in English completely devoted to it.” “In my research, I could only find stuff in Japanese or scientific literature, so unless you’re one of the two, it’s really hard to understand,” he explains. “So, seeing that problem, I was wondering where the information was. Nosh News Big giving at Bialy’s

Bialy’s Bagels and its patrons are doing their part to provide nosh for local front-line workers during the pandemic. After the University Heights institution reopened in April after a closure due to the pandemic, customers purchased 251-dozen bagels to be donated, and Bialy’s matched it to donate more than 500-dozen bagels. Delivery sites include Hillcrest Hospital, MetroHealth, University Hospitals Cleveland Medical Center, The Taussig Cancer Center at Cleveland Clinic, Heights High School, Whole Foods and Heinen’s. “It seemed like an easy thing for us to do,” said Rachel Gross, who owns Bialy’s with her sister, Sarah. “While there is labor involved in making bagels, it is really almost nothing to us to put these donations together. It was important for us to do something. We couldn’t do anything medically and we don’t have access to PPE, so we thought this was the next best thing to brighten these people’s days who have been working so tirelessly to keep us healthy and safe.”

Pepper Pike development attracts renters seeking a flexible lifestyle, a little lavishness By Carlo Wolff

T

he floor plan is open, the appliances are state of the art, the palette is bright, the amenities are first class, the place is ultra-modern – and it feels like home as soon as you enter. Welcome to The Luxe, developer Jason Friedman’s 82-unit townhome development at Cedar and Brainard roads in Pepper Pike. Friedman says his project, which has 40 units in its first phase and 42 in its second phase, is already a hit. The first phase units are 100% occupied, while

phase two is still under construction and is scheduled to be complete in August. Sixty percent are already leased in phase two. Since construction is considered an essential business, Friedman says the building process continued throughout the pandemic, and tenants continued to move into now-leased units, although tours were virtual. The project began in 2017 with 20 side-by-side duplexes. Originally designed as for-sale condominiums,

they’re all rentals. “Early in our marketing, we found that people wanted luxury rentals, so we pivoted to that use,” Friedman says, adding he has developed more than $1 billion of such projects all over the country. This is the first of its type in the Cleveland area, he adds. Friedman, who attends B’nai Jeshurun Congregation in Pepper Pike, was born to real estate. He formed JA Friedman Capital and Addison Properties in 2015 after he and his father, Jeffrey, sold Associated Estates Realty Corp., their

former company, to Toronto-based Brookfield Asset Management Corp. Amenities at The Luxe include gated access, pet friendliness, state-of-the-art fitness facilities, an outdoor entertaining area, high-speed internet access and proximity to shopping, medical facilities and freeways. The cost is $3,400 to $6,200 a month. The size ranges from 1,860 square feet to 2,500 square feet, and the townhomes are a combination of one and two stories, with two to three bedrooms. All units feature 2½ bathrooms, walk-in closets and two-car garages. Friedman says The Luxe townhomes are leasing as fast as he can build them. No matter the demographic – and there are many – they appeal because they are substantial but, at the same time, they also support a flexible lifestyle. They are large, and by no means inexpensive. People who rent them seek a home that’s comfortable, contemporary and easy to navigate. They rent because that and the utilities are the only costs. Addison Properties takes care of all the rest. “Renting at Luxe is a choice,” Friedman says. “People want flexibility. Some people travel, and others don’t want to be tied down with a house. We handle everything for our residents. Each unit is smart and we have security cameras around the property inside a gated community. If you are in Florida for the winter, we watch out for you. At The Luxe, you don’t have to worry about landscaping, real estate taxes, insurance or upkeep. Renting makes your life easy. Most importantly, there is nothing like this anywhere in Cleveland. We also are a community that has families, and people want to know their neighbors. “We have people who literally say we will never move out of here. People plan to live here for a very long time.” Fans of The Luxe also include empty nesters tired of rattling around a big house or who feel cramped in older homes that need tender, loving care they’re reluctant to provide. “Most people, particularly women, walk in here and say, ‘This is nicer than my house,’” Friedman says. “What they’re really saying is that they live in a big house, and this is nicer. is old and too big, they don’t want that anymore. So they end up coming here and falling in love.”

Coming home One family that likes The Luxe for its hominess and, above all, its ease, is the Loebs. Julie and Aram Loeb are doctors

accustomed to renting. The Luxe is a way station for them, giving them time to “make a great decision before settling on our permanent home,” Julie writes in an email. Julie practices family medicine at University Hospitals; Aram works at the urology institute at UH and is an assistant

professor of urology at Case Western Reserve University. They have a nine-month-old son and a three-year-old daughter. “We moved because we were done with our medical

training and ready to settle down,” Julie writes. “We grew up in Pepper Pike and my parents still live here, so it was an easy choice to move back. We were living in Florida, so house/apartment hunting

was difficult.” They rent a three-bedroom unit with an unfinished basement “great for storage,” and their children particularly enjoy playing in the loft area on the second floor. “The townhouse is great because of the open floor plan and all the natural light we have the majority of the day thanks to abundant windows,” Julie says. To Julie, The Luxe is indeed a community. Management does “a great job of throwing events throughout the year that bring neighbors together,” she writes. “Also, during the warmer months people are out and about, either walking their dogs or with kids. Everyone is in a similar transitional state in the neighborhood and it definitely bonds everyone together. We’ve had two sets of great neighbors in the unit adjacent to ours and

have been lucky to meet many other people in the development.” Does she regret the move? She misses the “year-round blue skies” of Tampa, “but with young kids, having family nearby definitely wins out.”

A place to recharge Families are by no means The Luxe’s only market. Singles – particularly people going through a divorce – are prominent in the development’s tenant mix. Friedman has helped personal friends getting through difficult divorces find a home, usually one of the smaller units, at The Luxe. “This is a happy place to go, even for people in the midst of a divorce or in a position that may be not so happy,” says Bonnie Ursetti, the onsite property manager. The Luxe is “either comparable to or better than where they were, versus scrambling to find something that they’re not happy with.” “Or a place their kids won’t like,” Friedman amplifies. “It’s about keeping themselves feeling good about where they live. These are people who can afford to rent or buy, and this is the best option – and there’s nothing else like it in the area.” js
