FROM THE EDITOR

Rewarding awards e at Jstyle strive to make this magazine a breezy and enjoyable read, but to get it that way, a lot of hard work is put into it – which is why it’s always rewarding when our efforts are recognized by our peers in journalism, as has been the case this year. In fact, it’s repeatedly been the case in recent years, both for Jstyle and the entire Cleveland Jewish Publication Company family of publications, though I’ll be the first to acknowledge that – at least on the pages of Jstyle – we seldom step back and share this celebratory news. Allow me to change that. The 2018 awards season wrapped up in August with the Ohio Society of Professional Journalists awards ceremony. In that contest, CJPC Columbus Bureau Chief Amanda Koehn earned first place in the “Best Religion Reporting” category for “Within Reach: Area Orthodox and Modern Orthodox women are pushing boundaries and making their voices heard both in the synagogue and in feminist circles,” which appeared in the spring 2017 issue of Jstyle. In June, the Press Club of Cleveland recognized Koehn with a second-place award in the “Public Service/ Investigative” category for

general circulation magazines for “Experiencing anti-Semitism,” which featured firsthand accounts of anti-Semitism from women who endured it in the workplace and via social media. The article appeared in the summer 2017 issue. The Press Club also awarded Staff Reporter Ed Carroll with second place in the “Food Writing” category for all Ohio publications for “The art of (food) presentation,” in which chef Jeremy Umansky offered tips on how to make dishes look delightful. That story appeared in the fall 2017 issue. Also in June, Koehn’s “Within reach” earned her second place in the “Excellence in Writing About Women” category in the American Jewish Press Association’s 37th annual Simon Rockower Awards for Excellence in Jewish Journalism. We hope you enjoyed their stories as much as the contests’ judges did, but if you missed them, you can read them at jstylemagazine.com.

Fall 2018

In this issue of Jstyle, we offer articles that will compete for awards next year. We check in with NCJW/Cleveland as it prepares for the 50th anniversary of Designer Dress Days in October; we meet Katie Pollock and Andy Simms, who recently launched Dough Street, a mobile edible cookie dough business; we catch up with former Bistro 185 owner Ruth Levine, who provides us with her recipe for applesand-honey challah; and we visit downtown Cleveland’s Warehouse District to tour Worthington Yards, one of the newest luxury apartment buildings in the city. And speaking of new, we held our fall fashion shoot at the latest lifestyle center to call Northeast Ohio home: Pinecrest. How will these stories fare in 2019? Keep reading Jstyle to find out!

Restoring a More Youthful Appearance Through Eyelid Rejuvenation Bahman Guyuron, MD Eyes are the first feature others notice, and likely admire. The eyes express emotions with a glance, engage with others and connect with the world around. No other aspect of the face attracts or receives as much attention. Given their extraordinary visibility, it is one of life’s ironies that the eyes are also the first feature to show signs of aging. As one grows older, the eyelid skin tends to stretch and the muscles that support the eyes begin to weaken, leading to sagging, heavy, drooping eyelids and the formation of bags under the eyes. The lower eyelids may develop dark circles, resulting in a tired appearance. The bags under the eyes may appear as a result of genetic disposition at an early age, even in teenage years. Fortunately, internationally-renowned, board certified plastic surgeon, Bahman Guyuron, MD, has 38 years of experience in eyelid rejuvenation, a procedure known clinically as blepharoplasty. It is a technique he has used on thousands of patients to render the eyelids younger and more energetic. One may be wondering if eyelid lift surgery is right for them. Individuals of all ages with a range of concerns may be candidates for this safe, minimally-invasive procedure. Most commonly, patients seek Dr. Guyuron’s assistance in addressing the following issues: •Loose skin of the upper or lower lids •Excess fat deposits of the upper eyelids that contribute to puffiness •Bags or dark circles beneath the eyes •Fine wrinkles along the lower eyelid that may be accompanied by discoloration •Loss of tissue around the eyes that lends to a sunken or hollow appearance •About 50% of patients who are candidates over the age 50 have a condition called eyelid ptosis, which makes the eyelids droop and obscures peripheral vision. Eyelid ptosis is often missed, even by the professionals, since most patients compensate by utilizing their forehead muscles to help open the eyelids artificially by raising the eyebrows. This is why many patients develop forehead wrinkles. All blepharoplasty candidates, regardless of their concerns, must be in good health and not suffer from any serious ophthalmic conditions, such as very serious dryness of the eyes, in order for Dr. Guyuron to recommend the procedure. Once the patient decides to move forward with eyelid lift surgery to restore a more youthful look to their eyes or to improve eyelid function, Dr. Guyuron will meet with the candidate to review the personalized treatment plan and address the questions and concerns. At this time, Dr. Guyuron may discuss other available treatments from which one may benefit, including rhinoplasty, a browlift or facelift surgery, so long as the patients express interest about these procedures. These therapies can be delivered in conjunction with blepharoplasty. Depending on factors such as age and the presence of underlying medical conditions that affect the eyes, Dr. Guyuron may recommend an examination with

an ophthalmologist to further enhance the safety of the operation. Blepharoplasty is performed by making small incisions in the natural crease of the upper eyelid, along the lower lash line or, often inside the lower lid. During the course of the procedure, excess fat or skin is removed and loose muscle tissue is tightened. By removing excessively redundant skin, from the upper eyelids or tightening the upper eyelid muscle, Dr. Guyuron can improve the visual field. Performing an upper or lower lid blepharoplasty can make the eyes appear more youthful, alert and rested. He also eliminates the hollowness in the eyelids by injecting the patient’s own fat in the eyelids. The procedure is performed in an outpatient setting and can be completed in less than 90 minutes. The total time needed for recovery is typically one to two weeks, during which time patients are expected to avoid any strenuous activities. “Blepharoplasty is one of the most effective procedures available to refresh and rejuvenate the upper face,” said Dr. Guyuron. “With the right surgeon, one can eradicate the signs of time and reclaim youthful eyes.” The decision to have an eyelid lift begins with a consultation; call Dr. Guyuron’s office at 440-461-7999.

HAVE FUN THIS FALL

Pinstripes When it opened in July, Pinstripes introduced a unique mix of bowling and bocce to Greater Cleveland’s entertainment-dining landscape. In addition to focusing on sophisticated fun, Pinstripes offers a menu that features a modern take on rustic, Italian-American cuisine. It’s that combination of enjoyable experiences that founder and CEO Dale Schwartz, a Beachwood native, feels is integral to connecting family, friends and communities. The two-story complex offers indoor and outdoor dining – convenient for any season – and can host private events ranging from social celebrations to corporate gatherings.

Melissa wears a leopard-print sweater by Generation Love, vegan leather jacket by Cupcakes and Cashmere, black leggings by Spanx and small black bag (also shown above) by Elizabeth and James, all from Laura of Pembroke. Open-toe booties by Nine West (worn on Page 20) are her own. Brad wears a burgundy check sport jacket and plaid shirt, both by Etro Milano, and twill navy trouser by PT01 Pantaloni Torino, all from Kilgore Trout. Belt by Swiss Gear and brown shoes by Golaiman (both worn on Page 82) are his own. Susan wears a gray, ribbed turtleneck with bell sleeves by Paige and vegan leggings by Splendid, both from Fringe Boutique. Black heels by Nine West (worn on Page 82) are her own.

HAVE FUN THIS FALL

Sweeties Big Fun When you combine one of Northeast Ohio’s favorite toy stores and largest candy stores, you get Sweeties Big Fun. Steve Presser, owner of the former Big Fun toy store on Coventry Road in Cleveland Heights, joined forces with candy connoisseur Tom Scheiman, owner of b.a. Sweetie Candy Company in Cleveland’s Old Brooklyn neighborhood, to open the Pinecrest shop in July. Since then, it’s been a go-to location for those in search of timeless toys, sugary indulgences or nostalgic Cleveland merchandise.

Zach wears a red and black modern-fitting sport shirt by Culturata, Lennox slim-fit midnight gray matte-finish pants by Paige and cashmere scarf by Kinross, all from J3 Clothing Company. Golden opportunities Designer Dress Days, which helps NCJW/Cleveland serve Northeast Ohio by offering discounts to the fashion-forward, celebrates 50 years By Alyssa Schmitt

I

nside a Warrensville Heights warehouse, volunteers work tirelessly – and year-round – sorting through nearly 10,000 pieces of new and gently used clothing. In their previous existence, these designer-brand dresses, coats, pieces of jewelry and accessories might’ve served as attire for a gala fundraiser or celebratory occasion. But in being sorted and inspected for quality by volunteers, they’re being prepared for second acts with noble purposes: NCJW/Cleveland’s Designer Dress Days.

This year, Designer Dress Days marks its 50th anniversary. Since its inception in 1968, the event has offered Northeast Ohioans high fashion at low prices, and in the process, it’s served as the National Council of Jewish Women/Cleveland’s major annual fundraiser. Money raised through the event has allowed the organization to support a variety of causes, from programs that aid those aging out of the foster care system to literacy courses. Along the way, Designer Dress Days has become an event many in the community mark on their calenders well in advance. This year’s iteration, which begins with a preview day on Oct. 12 and continues Oct. 14-16, will again fill the Mandel Jewish Community Center’s Stonehill Auditorium with aisles of clothing racks (and, naturally, a dressing room). Shoppers typically line up outside several hours before the doors open. Debbie Rosenthal, who’s co-vice president of this year’s event along with Michele Kaminsky, says Designer Dress Day isn’t a store or a retail operation, it’s an event.

Open for business Before Designer Dress Days grew into what it is today, it was held in someone’s garage. The event was conceived by Liz Faulb, then vice president of NCJW/Cleveland, and dubbed “Sherry Hour,” most likely named after the adult beverages passed around during the sale. Available to purchase were items donated by local women. “She thought it would be a really good idea to invite the women to a ‘Sherry Hour,’” says Rosenthal, an Orange resident and member of Anshe Chesed Fairmount Temple in Beachwood. “Basically, she asked the women in NCJW and in the community to ... take the clothes off their backs and donate them to be resold to women desiring fashionable dresses at that time.” The women left wearing paper dresses donated by a manufacturer. In the event’s first year, the women surpassed their $2,000 goal and grossed $14,000. Two years later, in 1970, the event was renamed Designer Dress Day. In its early years, NCJW/Cleveland didn’t have a warehouse or any other location to host the event except for its headquarters, then located at 3535 Lee Road in Shaker Heights. During the weeks leading up to the event, most of the building was turned over for the sale, says lifelong NCJW member Jean Sarlson. “It was a very tight headquarters,” says Sarlson, who chaired the event in 1981 and 1982. “We turned our auditorium into the main sales area. We did all the sorting and pricing in the building. All the clothes were dropped off in the building while this was still a very active, ongoing headquarters for NCJW. You can imagine the hundreds and hundreds of people coming to the building, dropping off their clothes and their accessories and still continuing the business of the organization.” While she chaired Designer Dress Days, Sarlson, of Pepper Pike, saw the first uses of credit cards during the event and created the fine jewelery category after noticing “real” jewelry was being donated. One piece she remembers categorizing as such was a Cleveland Indians 1948 World Series ring.

Serving a community Designer Dress Days’ early events generated the same buzz and level of excitement among shoppers and volunteers that today’s events do, says

Sarlson, explaining those early events also served as the financial foundation on which NCJW/Cleveland built partnerships with other nonprofits in the community.

“They raise a tremendous amount of money, and that’s why Designer Dress Days was so – and is so – important. It’s a major fundraising event,” she says. “I think without Designer Dress Days, a lot of these community partnerships could not exist.” Through years of support of the event, the organization has built 10 libraries in schools throughout Cleveland at which students have book clubs. Last year, NCJW/Cleveland started the TLC Project, which donates bags to hospitals for rape victims. “NCJW purchased new items – like clothing, shoes, bras and underwear, health and beauty products – and gave them to MetroHealth Hospital,” Rosenthal says.

“When a victim comes to a hospital and does a rape kit ... they have to leave their clothes there, so (with these donations), they go home with brand new clothes. Some people come in without shoes, so they have flip flops for them. It’s more for dignity and a little bit of comfort to know that someone cares about what’s happening.” Using support that comes from Designer Dress Days, NCJW/Cleveland has also advocated against human trafficking and created a Share What You Wear program through which children can pick out back-to-school clothes or backpacks for free, Rosenthal says. At last year’s Share What You Wear event, 600 backpacks were given away.

Saving always in style When it comes to the styles one can find on Designer Dress Days sales racks over the course of 50 years, there’s been one relative constant: change. Such is fashion. While pieces by highprofile Italian luxury fashion houses and well-known American fashion companies that specialize in handbags, accessories and clothing will be available this year, as they have in the past, organizers have some new additions in store for shoppers. For example, this year’s Designer Dress Days will include pieces from a leading brand in athleisure wear as well as an award-winning American designer whose style was described as “preppy-bohemian luxe” by New York Magazine. Also, for the first time, jeans will be on sale during the event. “The styles have changed, so we want to keep up,” Rosenthal says. “We want not only the people who have been coming for 50 years, we want people who are just starting to come and just starting to buy a work wardrobe. ... We just want the people to be able to come in and feel like they’re getting something that is today’s fashion.” Although Rosenthal doesn’t want to give away too much about this year’s event, she says there will be special giveaways in honor of the milestone anniversary as well as coupons offered on the 50th minute of every hour Designer Dress Days is open for business.

Volunteering in vogue While fashion has changed during the last half-century,

volunteering for Designer Dress Days has remained fairly consistent. The 250 volunteers expected to help make this year’s sale a success represent the same number of volunteers Sarlson remembers contributing when she served as event chair. In fact, before she chaired, Sarlson volunteered – and she’s continued to volunteer for decades. She considers it just as much a draw as the discounted designer labels, and in recent years, she’s seen a positive trend among those who volunteer alongside her.

“I noticed last year there’s a new core of much younger volunteers participating,” she says. “That’s what’s so outstanding. I’m very active in the volunteer world in Cleveland and the volunteers are diminishing either because of age or because so many women have joined the workforce. Most organizations are struggling to have volunteer participation.”

Rosenthal and Sarlson are both second-generation NCJW members, and Rosenthal’s mother also once served as vice president of the event. Sarlson says that type of generational continuity will help sustain Designer Dress Days for another 50 years, thus allowing NCJW to forge and strengthen partnerships to better serve the community well into the future. js

The third iteration of BOMBA Tacos & Rum, the Caribbean-centric eatery started by Paladar Latin Kitchen founder Andy Himmel, opened in August in Beachwood. The 3,800-square-foot restaurant inside the Beachwood Lifestyle Center (formerly LaPlace) offers bar and dining-area seating for 150 guests and features a variety of chef-driven taco options as well as made-to-order guacamole with up to 14 add-in ingredients. There are also snacks and grain bowls with vegan, vegetarian and gluten-free options. A day before opening BOMBA to the public, a charity event to benefit Bellefaire JCB was held at the restaurant. One-hundred percent of sales benefited the Shaker Heightsbased nonprofit child service agency. The first BOMBA opened in 2015 in Rocky River while the second opened in 2016 in the Fairlawn area outside of Akron. To read about the opening of the first BOMBA, visit jstylemagazine.com/bomba.

In May, Jeremy Umansky, co-owner of Larder: A Curated Delicatessen and Bakery in Cleveland, announced he’ll be the co-author of “Koji Alchemy,” due out in spring 2020 via Chelsea Green Publishing. “It’s essentially going to be an overview of the historical use of koji and its unparalleled importance in food production,” he says. “It’s used for more than just miso, sake and soy sauce; there’s a wide variety of things. … (The book) is going to cover some of the newer techniques for using it.” Umansky is teaming up with Rich Shih, whom he describes as the “miso master” behind the OurCookQuest website. “We realized our work was often being compared and used by chefs,” Umansky says. “Right away, we sort of realized maybe we should team up and do this.” To read an article that details Umansky’s interest in koji, visit jstylemagazine.com/curious-gastronomy.

Among the many openings planned for the very near future at the Van Aken District in Shaker Heights is Mitchell’s Homemade Ice Cream. Pete and Mike Mitchell aim to open their latest scoop shop by mid-October, Pete Mitchell says. The shop would be the Mitchell brothers’ 10th, joining a shop that also opened in 2018 in Strongsville and recently renovated shops in Beachwood and Solon, among others. The Shaker Heights shop’s location is certain to make it easier for those in the East Side’s inner-ring suburbs to get their hands on time-tested favorite flavors like Vanilla Bean, Fresh Strawberry, Cookie Dough and Caramel Fudge Brownie or flavors that feel like perfect fits for fall, including Dark Roast Coffee and Campfire S’mores. The newest address in Northeast Ohio for satisfying a sweet tooth is

Dough Street Story by Ed Carroll Photography by Michael C. Butz

eel free to eat the cookie dough. That statement defies conventional wisdom handed down by bubbes and bakers for years – that eating raw cookie dough can make one sick despite its deliciousness – but it’s the central tenant of a delectable new venture by Katie Pollock and Andy Simms called Dough Street. Traditional cookie dough contains both raw eggs and raw flour, which, yes, can make people sick. But Dough Street uses pasteurized egg whites and heat-treated flour, which Pollock says makes their dough safe to eat. You can even bake Dough Street’s doughs because they aren’t egg-free. Unlike a traditional bakery, Dough Street isn’t bricks and mortar. Rather, the couple’s confectionery concept involves a mobile

dessert cart that will appear at weddings, life-cycle celebrations, family reunions, corporate events and other occasions. In fact, there’s one very special event already on the calendar. “(Dough Street) will now be (at) our daughter’s bat mitzvah,” Pollock says, laughing.

Starting from scratch Both Pollock and Simms – Solon residents, parents of 12- and 10-year-old daughters, and congregants at Anshe Chesed Fairmount Temple in Beachwood – have full-time jobs outside of Dough Street. He’s an agent for Dallas-based Young Money APAA Sports, where he oversees football operations. None of his NFL clients had tasted Dough Street’s dough as of early September since they all were in training camp through August, but he said word has spread and many were excited to try it.

FIRST COURSE though they each take on different responsibilities. Pollock takes care of what she calls the “creative production” end of the business, as well as its social media, while Simms handles many of the business aspects. He’s also tasked with the horrible, awful, no-good responsibility of tasting the recipes. Someone has to do it. (In all seriousness, he says “it’s the best part of the job.”) What makes a great edible cookie dough? Simms says he knows a good cookie dough when he tastes it, echoing former Supreme Court Justice Potter Stewart’s threshold for obscenity. Beyond that, the dough’s consistency is important to him. “When you’re eating it, you want it to taste like a cookie,” he says. “But you’re eating the dough.” Pollock wants a “nice flavor” in her cookie dough, she says, adding she uses full-sized chocolate chips because she doesn’t feel mini chocolate chips have the “full flavor.” “Whatever it is (it should have full flavor), whether it be sugar cookie or chocolate chip. Or, we have a gluten-free peanut butter cup – it should taste like peanut butter,” Pollock says. “I use all-natural ingredients, nothing artificial. I don’t like that artificial taste when I eat other things and I don’t want that artificial taste in our product, either.”

Mixing ingredients

Pollock and Simms work together on a batch of chocolate chip cookie dough.

She’s a head trainer at five different TITLE Boxing Club locations in Northeast Ohio, and together, they’re minority co-owners of the TITLE Boxing Club in Cleveland’s Ohio City neighborhood. So, how did they decide to get into the dessert business? It all started due to Pollock’s love of cookies and baking, but what planted the seed for making a business out of it was a summer 2017 visit to then-newly opened DŌ, Cookie Dough Confections in New York City. Pollock waited in line for 45 minutes to taste it. “It was just so delicious,” she says. “We had it again that weekend while we were there, we ordered it online. Every trip we went (on), I wondered, ‘Well maybe they have cookie dough!’ We kept thinking, ‘How can we do this and how can we bring it to Cleveland?’” It was a July 2018 trip to California, during which they found and ate more cookie dough, that got them thinking seriously about launching what’s now Dough Street. They weren’t aware of any places in Northeast Ohio that exclusively or even primarily sell edible cookie dough, so they decided to act. As co-owners, and despite recently hiring some part-time help, Pollock and Simms handle all aspects of the business,

Dough Street’s four flavors – chocolate chip, original (the chocolate chip dough minus the chocolate chips), sugar cookie and gluten-free peanut butter cup – came about through Pollock’s tinkering in the kitchen. The couple is open to experimenting with new flavors but doesn’t plan on expanding the menu anytime soon. “Right now, we really want to do what we do and do it right,” Pollock says. “In the very short time we’ve been in business, I’ve gotten a lot of flavor suggestions from people. Maybe when we get more experience and we roll (the company) out more, we’ll do like a flavor of the month that we would add to the menu.” Dough Street flavors are served like ice cream is served, scooped, which gives customers the option of eating cookie dough from a bowl or waffle cone. Pollock says bowls have been more popular thus far, but Simms says the couple doesn’t have a large enough sample size yet to draw conclusions. “If a few people have a cone, others will see that it looks good,” Simms says. “In general, I think the cups will sell more, but there’s a place for (the cones).” A single 4 oz. scoop is $4, a double scoop $7, and if the customer wants it in the waffle cone, it’s an extra dollar no matter how many scoops. Right now, the waffle cones are supplied by an outside vendor, but making their own cones is something they’re considering for the future. After customers decide on their dough flavor and preferred vessel, they can decide which toppings to add. Current options include M&Ms, chocolate chips and sprinkles, but like the dough flavors, topping selections could expand. “The cookie dough is the prize itself right now,” Simms says. “It’s the star of the show,” Pollock adds.

FIRST COURSE Dough Street isn’t kosher-certified since it’s made in a shared kitchen, but all of the individual ingredients in every flavor of its dough are kosher. The cookie dough isn’t prepared in the couple’s home kitchen but rather at the Cleveland Culinary Launch and Kitchen in downtown Cleveland. Pollock researched obtaining a license for having the company’s kitchen in their house, but they needed a bigger mixer to make large batches of dough. She learned about the culinary kitchen from friends who had used it. “I called (the culinary kitchen) and said I need information. The owner said, ‘Do you want to come to an informational meeting?’ and I said, ‘No, I want to start tomorrow!” says Pollock, laughing. The couple works in the kitchen together, but Simms jokes his wife “won’t let me touch the mixer.”

Taste test Dough Street had its first “test run” Aug. 18 at Solon Pop-Up in the Park, where Pollock and Simms planned on selling for the event’s full five hours but sold out of their dough in just three hours. They plan to do more local events, like the Cleveland Flea, but would also like to eventually be on shelves at local grocers. They plan to begin online sales in the next few months.

“We’ll see where it takes us and where it goes, but right now, we’ve got a fun product and people want to try it,” Simms says. “We just really wanted to bring this to the community. Nobody in Cleveland was doing just cookie dough, so we felt like there was an opening for it and people were going to enjoy it,” Pollock says. Despite time constraints put on them by their other full-time endeavors – including as parents – they’re committed to making Dough Street a success. “Our attitude is, we know it’s going to take time to get this business up (and running),” Simms says. “We’ve got a great product. Not only do we believe in it, but it seems like other people do, too. So, we create the time right now, no matter how hard it is, to be successful.” js

Sample the scrumptious Dough Street is scheduled to be available during at least three upcoming public events: • Beachwood Fall Festival: Noon to 5 p.m. Oct. 7 at Beachwood City Hall, 25325 Fairmount Blvd., Beachwood • Cleveland Flea: 9 a.m. to 4 p.m. Oct. 13 at 3615 Superior Ave., Cleveland • East Side Flea: 10 a.m. to 4 p.m. Oct. 21 at the Van Aken District, 20065 Chagrin Blvd., Shaker Heights For more information, visit doughstreetusa.com.

Pollock prefers to use full-size chocolate chips so that Dough Street’s cookie dough has “full flavor.”

hallah has regularly been on the table during indelible moments in Ruth Levine’s life, from after-school snacks she enjoyed Friday afternoons as her mother prepared Shabbat dinner to the “beautiful” challah the Lax family – of the former Lax & Mandel bakery in South Euclid – baked for her following the birth of her son.

“The memories are always good around challah. They’re always connected with Friday night, Shabbat – there always had to be a challah on the table,” says Levine, a Pepper Pike resident and former owner of Bistro 185 in Cleveland’s North Collinwood neighborhood. “When I travel to relatives or friends, there’s always challah. Whether you make it or you buy it or you just have two little egg rolls in the shape of a challah, it’s significant.” Opposite page: Ruth Levine enjoys baking in part because every time one bakes, it’s “kind of a surprise” how the finished product will turn out, especially when slicing into something with filling. Here, the inside of her apples-and-honey challah turned out just right. Right: Levine uses her mother’s rolling pin to work the dough. Below: Levine likes adding sunflower seeds to give this challah a sweet-and-salty element.

SECOND SERVING

Above: Levine adds powdered sugar to her challah for taste as well as decoration. Next page: Levine folds her apple filling into the dough.

As traditional as challah is to Levine and the Jewish community at-large, it mustn’t necessarily be prepared in a traditional manner. “One of my best dishes – I love serving this at a brunch party – involves pulling apart the challah,” she says. “You soak the pieces in that French toast mixture, and I’ll use some orange liqueur, cream, vanilla – this is not a diet dish – and then I’ll have a wok going with oil and I deep fry them so they come out like doughnuts. They’re like challah doughnuts. “‘Pretty good’ doesn’t even begin to describe it. It’s really good.” Since selling Bistro 185, Levine has been encouraging her brand of culinary creativity as an instructor at the Loretta Paganini School of Cooking in Chester

60

Township, where she’s written her own curricula for classes on Spanish tapas, Vietnamese cuisine and the foods of India. She also occasionally instructs students on Jewish dishes. “I did do a quasi-kosher-style Jewish kind of cooking class based on some of the work of Ina Garten (of Barefoot Contessa fame). I did some of her traditional Friday night dishes, and that was a big hit. I gave (them) a French twist,” she says, adding she may offer another Jewish-themed class leading up to Passover. To spark similar creativity among Jstyle readers, Levine offers her recipe for apples-and-honey challah, a dish that incorporates two elements that, to her, are key to a good challah. “Texture and sweetness. I like a sweet challah,” she says. “I think with the idea of

putting apples and nuts in it, it becomes almost like a babka, but with a challah texture.” Why sweetness? “Polish people like everything sweet,” she says. “We have this tendency to enjoy sweet, and I can say that it has stayed with me (from childhood).” This particular challah is round, which carries significance – along with apples and honey – in the fall, around the High Holy Days. It’s also practical considering the way in which the apple filling has to be folded in. In general, though, Levine tends to prefer round challah over braided. “(Round challah) is also better for making sandwiches,” she concedes, laughing. “There’s some method to my madness.” js

Apples & Honey Challah By Ruth Levine, adapted from New York City-based Smitten Kitchen

Ingredients Bread • 21/4 teaspoons (1 standard 1/4-ounce packet) active dry yeast • 1/3 cup plus 1 teaspoon honey • 1/3 cup neutral oil, plus more for the bowl • 2 large eggs plus 1 large yolk • 11/2 teaspoons table salt • 41/4 cups all-purpose or bread flour, plus more for your work surface

Apple filling • 2 medium baking apples (I love baking with McIntoshes), peeled, cored and in 1 /2- to 3/4-inch chunks • Squeeze of lemon juice, to keep them from browning • 1/2 cup chopped walnuts • 1/4 cup turbinado sugar • 1/2 teaspoon cinnamon

Egg wash • 1 large egg

Additional • Turbinado sugar, cinnamon, chopped walnuts and salted sunflower seeds for taste contrast. Serving size: Makes 1 round challah

Instructions 1) Make your dough: Whisk yeast and 1 teaspoon honey into 2/3 cup warm water and let stand until foamy, a few minutes. • With a stand mixer: In the bowl of a stand mixture, whisk together yeast mixture, oil, remaining honey (1/3 cup), eggs and yolk. Switch to dough hook and add 41/4 cups flour and salt. Use dough hook on a moderate speed until it pulls all of the flour and wet ingredients together into a craggy mass. Lower the speed and let the dough hook knead the dough for five minutes, until smooth, elastic and a little sticky.

jstylemagazine.com

• By hand: In a large bowl, whisk together yeast mixture, oil, remaining honey (1/3 cup), eggs and yolk. Add flour all at once and stir with a wooden spoon until you get a craggy mass of uneven dough. Turn dough out onto a floured counter and knead it into a smooth, elastic dough, about five to eight minutes. Try to use as little flour as necessary when kneading the dough; you don’t want to toughen the bread. A bench scraper can make it really easy to remove it from the counter if it gets stuck in a spot. 2) Both methods: Transfer dough to large oil-coated bowl, cover with plastic wrap and set aside for one hour, or until almost doubled in size. 3) Add apples to dough: Turn dough out onto a floured counter and gently press it down into a flat, oblong shape. The shape does not matter so however it goes, it goes. Spread two-thirds of apple chunk mixture over half of the flattened dough. Fold the other half over the apple chunks and press the dough down around them, flattening the now lumpy dough. Spread the remaining one-third apple chunk mixture over half the folded dough. Fold the other half over the apples, pressing the dough down again. Your dough packet will likely be square-ish. Fold the corners under

with the sides of your hands and form the dough into a round. Upend your empty bowl over and set it aside for another 30 minutes. Divide dough into four pieces. Roll and stretch each one as carefully as you can into a rope – don’t worry about getting it too long or thin, just 12 inches or so should do. If any apple chunks fall out as you form the ropes or at any other time in the forming of the loaf or risings, just poke them back in with your finger. Transfer the dough to a parchment-covered heavy baking sheet or baker’s peel (if you’ll be using a bread stone). Beat egg until smooth and brush over challah. Let challah rise for another hour but 45 minutes into this rise, preheat your oven to 375 degrees. 4) Bake your loaf: Before baking, brush loaf one more time with egg wash and sprinkle with sugar walnut topping. Bake in middle of oven for 40 to 45 minutes. It should be beautifully bronzed; if it starts getting too dark too quickly, cover it with foil for the remainder of the baking time. The very best way to check whether it’s done – in any bread, but especially one like this where the wetness of the apples can slow down the baking time a bit – is with an instant-read thermometer. The center of the loaf should be 195 degrees. Cool loaf on a rack before serving.

Art apprecia Story by Carlo Wolff Photography by Michael C. Butz

W

orthington Yards in Cleveland’s stylish Warehouse District is just right for Heidi DuBois. After a year living in a rental in Chagrin Falls, the retired dental hygienist was ready for downtown and eager to take part in such a distinctive complex. She loves how art – largely local – permeates all five floors of the Johnson Court rental building. Art, above all, sets Worthington Yards apart. “I love having art openings there,” says DuBois, who lives in a 1,475-square-foot, two-bedroom apartment on the fifth floor. “It’s a whole new culture for me. It’s a whole new scene.” After her divorce, DuBois left the family home in Beachwood for that three-story Chagrin Falls townhome, but after six months, DuBois was bored and ready for something different. The Mayfield Village native had never lived in the city itself. She’s a committed urbanite now. “I was leaving the Idea Center (at Playhouse Square) one summer day and got the crazy idea to start looking at places along the water,” she recalls. “I saw about eight different buildings from West 25th Street to Gordon Square, but was not feeling it. I needed parking, large rooms, an outdoor space, in-suite laundry, and most importantly, it had to be pet-friendly.”

Fresh ar twor k saturates Wor thington Yards Her dog, Boozer, a German shepherdAkita mix, is close to 15 years old and weighs 80 pounds. DuBois entered all her requirements into an apartment-finder app and Worthington Yards came up. It was love at first sight. And second. “I was one of the first people to come into the construction zone,” she says. “I instantly knew this was where I wanted to be. The next day I had my brother and nephew come and see it.

The second time I was even more sure. I had pick of the building and chose the top floor with a walk-out patio/bridge that connects two buildings. The rooms are large with exposed brick, pillars and very high ceilings.” As one of the first tenants, DuBois has a special sense of ownership. Along with another Heidi – Heidi Quicksilver, interim vice president of technology at the Rock & Roll Hall of Fame – she watched Worthington

Yards take shape. Like Quicksilver, DuBois is a professional. She travels a lot in her new career as director of education and strategic development for a New Yorkbased dental company. “We were literally at the construction site,” says DuBois, who considers herself a spiritual-traditional Jew. “It’s almost like my own project.” DuBois particularly likes how her apartment links to an industrial bridge connecting to another Warehouse

District building. She shares a deck with another tenant she knows from her suburban days. DuBois moved in at the beginning of October 2017. “I feel like I was part of the project,” she says. “The workout room, parking, green spaces, art and management were beyond my expectations. I am enjoying learning more about the Cleveland art scene and host an open house in my apartment during all of the building’s art openings.”

Bridging the old and new Worthington Yards is a repurposing of four buildings and a touch of a fifth that used to house the George Worthington Company, a hardware wholesaler serving 10 Northeastern and Midwestern states. The Worthington enterprise ceased in 1991. The complex was vacant for decades. In 2016, the Dalad Group of Independence, a long-time power in the Warehouse District, submitted plans to

The art collector Neil Viny is president of Dalad Realty and principal, real estate, at the Dalad Group. Where it used to store hardware, Worthington Yards now houses 98 apartments. Like Zygote, an incubator for local art, Worthington Yards aims to enrich the area’s artistic conversation and be a magnet for artists and art lovers alike. “Incorporating the highest-quality art not only enhances Worthington Yards, it also adds a sense of pride for the residents,” Maugans says. “Rotating art within the gallery constantly brings in new artists and is a way to celebrate the other creative and innovative people living there – they network, too, promote the work, and have a stake and take pride in their surroundings. Worthington Yards residents get to know their neighbors, new folks from the neighborhood, and others coming in for programs and events. It is a very special, unique and inspiring place. Developer Neil Viny, architect William Ragaller and the entire Dalad Group team did a remarkable job, and I’m proud to be a part of this team and community.” When Viny met Maugans in November 2016, he learned that Zygote Press had promoted many different artistic styles and was involved in collections spanning those of Progressive Insurance, University Hospitals, Cleveland Clinic, the MetroHealth System and the Westin Hotel. He brought her on as a curator to help

get local and regional art into the public spaces of Worthington Yards and “start initiatives” that connect art to its residents and the greater community. She started working for this for-profit in June 2017. “One of the missions for the art gallery itself is to support emerging artists and artists of color and people who have historically been under-represented in the art world and our galleries,” she says. “It’s a very ongoing conversation that we’re having here in Cleveland about equity.” In programs like Art Ventures and Art Bar, she connects residents – and the public – directly to the artists, either at Worthington Yards or at their own studios. In January 2019, Maugans intends to roll out Resident Select, a collection chosen by the residents.

“I want to engage audiences,” she says. “I want participation. I want people to see what goes into artists’ work. Do you want to buy some art? I got it. I want to celebrate creatively building Cleveland. What better place than a building like this where you’re living with art?” Maugans is in conversations with Mitchell Schneider of First Interstate Properties and Josh Rosen of Sustainable Community Associates and hopes to persuade other developers to “think this way.” “Neil, I think, is a visionary, building a gallery and wanting to open it up to the neighborhood and bring people together through arts and culture,” she says. “I think it’s amazing, and I think every developer should be doing this in Cleveland.” js

ROOM SERVICE

Getting personal One-size-fits-all homes become a thing of the past as more clients incorporate personalized plans into home building By Michelle Jacobson

The Orlean Company

T

oday, building a home is like throwing paint at a white canvas. It’s an opportunity for home-owners to start from nothing and create a masterpiece of a space that is entirely personalized. More and more, home building companies are seeing clients steer away from cookie-cutter design plans and move toward individualized solutions. Buyers prefer to be a part of the entire design process to incorporate trends that reflect their style and family life, experts say. Various design elements are incorporated to carry out those details to tell the client’s own story.

Personalized plan Cameron Orlean, vice president of The Orlean Company in Beachwood, says a major shift in the design process “in general, is a more informed consumer base that does its research during the process. Having more access to information and available products has drawn considerable attention.” Each home Orlean’s company builds is customized

70

Jstyle

Fall 2018

to the buyer’s desires. Design features such as finishes, cabinetry and technology systems are selected based on the client’s preferences. And often, people bring in their own interior designers to bring their ideas to life. “This shows that the client truly understands the process and that they are invested in their ideas,” Orlean says. Popular features buyers build into their homes to mirror their lifestyles include gyms, home theaters, and closets and shelving built into garages. They also bring in transformative elements through smart-home devices to create a leadingedge, energy-efficient space. High-tech features such as digital-door entry, thermostat products, leak-detection systems for pipes, automatic

lighting systems, garage openers and car charging stations are popular trends. Another accommodating preference Orlean has observed is placing the master bedroom on the first floor, allowing the buyer the option to live on only one floor as he or she grows older.

Small space satisfaction No matter what age group, there are also several preferences for downsizing and living in more centralized areas. “There is a big emphasis on community,” says Catherine Pace, project manager and leasing agent at Cumberland Development in Cleveland. “People want to find a space where they can live, work, play and learn.”

Smaller spaces are popular among those who want a second home, frequently travel, prefer walkability or work for themselves and want to use the space as an office, Pace says. By living in a central area, people can conveniently walk to work, get groceries or go out to socialize. They have more of an experience by living in close proximity to amenities. Part of creating a living space downtown is also a way to “work with the city and bring neighborhoods to that space,” Pace adds. By integrating certain features, living in a smallersized apartment can feel the same as a larger, customized home. It’s important for people to tailor their preferences into these spaces, Pace says.

jstylemagazine.com

For example, floor-to-ceiling windows that open can make people feel like they are in an open space, with the ability to see the surrounding area. Having a veranda is another customizable apartment feature that allows people to feel more comfortable. It serves as an extension of their living space and provides green scenery. “It’s not just about moving into a smaller space but learning to live with only what you need,” Pace says. As people downsize, they also figure out how to consolidate and only live with what is essential, she adds.

Luxury features Another common design element used in smaller spaces is an open floor plan. Jeff Halpern, president of Kingdom Homebuilders in Solon says, “As we see more people go for smaller-sized homes, they are choosing more efficient, more nesting types of floor plans.” Instead of dividing up a space into a more formal dining room, open floor plans are composed of an area where the kitchen is open up to entertainment and eating rooms. This allows for multitasking in one space, more design freedom and offers flow for socializing. Buyers are also paying special attention to stylistic details in the kitchen, Halpern says. A variety of materials are typically chosen to incorporate a combination of colors and materials, such as wood, marble or quartz. For instance, a marble top and wood island can be paired with cabinetry that is a different color. Not only does this design combination

jstylemagazine.com

Cumberland Development Kingdom Homebuilders

offer a sleek look, but it also is functional as certain countertop materials are easier to clean. Another popular kitchen feature involves a casual bar built into a portion of the cabinetry spaces, Halpern says. The bar is set up with a set of glass cabinets, a wine rack and wine cooler. Many clients have even designed a morning bar to be placed in their master bedroom, where

they have easy access to make coffee or espresso right by their bedside. Lastly, tubs are becoming less common as a master bedroom amenity, Halpern says. Instead, more multi-head showers, with larger floor space, are being designed to incorporate a spa-type atmosphere. For convenience and family safety, buyers incorporate apps and technology into

their homes, Halpern says. This allows them to check on the home or monitor and change the temperature while away. Notifications can be sent as alerts when the doorbell rings, reassuring safe visitors. “People are focusing more on themselves and their family when it comes to their home’s design,” Halpern says. “It’s more about their own nucleus instead of focusing on wanting a home to be big.” js

With today’s modern technology and advances in pain management, replacing a missing tooth can be as easy as 1, 2, 3: 1. First appointment is to evaluate the area of the missing tooth, which includes a 3D scan to assess the bone volume and plan where we want the new tooth to be. We have a surgical guide we use for this appointment that can take less than 30 minutes in some situations! Local anesthetic is always used, which will eliminate any pain, but this can be combined with Nitrous Oxide (“laughing gas”), Valium, Xanax or sedation by an anesthesiologist, which will control any anxiety. For post-op discomfort, all that’s needed is Tylenol or Advil at the patient’s discretion. I tell my patients they can go to work the same day but should avoid strenuous exercise for a few days.

3. The last and third appointment is to check on the healing and fabricate the crown. Four months have typically passed since placing the implant, and statistically, 95 percent of a patient’s bone has fused to the implant. Anesthetic is typically not needed for this appointment. A scan of the implant head is taken and a crown can be made while the patient waits. Once the crown is placed on the implant, there are no restrictions and the patient can now eat whatever he or she likes. So, pick up the phone and let’s get that broken or missing tooth replaced. It’s as easy as 1, 2, 3!

Ageism and Plastic Surgery

age·ism - āj izəm / noun • prejudice or discrimination against individuals or groups on the basis of their age.

More than 50 years after the Age Discrimination in Employment Act became law, nearly two-thirds of workers 55 to 64 cited their age as a barrier to getting jobs, according to a 2017 survey by AARP. The sharp increases in the duration of unemployment for older workers during and after the Great Recession indicate that older individuals who lost their jobs because of the downturn or who were seeking new employment have had a harder time finding work than younger workers. There are a variety of factors at play when it comes to discriminatory practices as they relate to ageism, in many the perception of age is vital. Today’s business climate values youthful energy, as companies worry about productivity, yet good management recognizes the value that experience brings to the mix. The key for people ages 50 and above to not only maintain their positions but to continue advancement will rely greatly in their perceived energy level and proficiency. We all know people in their 60s who look like they’re in their 70s; from the standpoint of an employer or potential employer, they could be deemed less energetic and current. Right or wrong, the discernment of age can affect hiring and promotions. In cosmetic surgery today there are many options available to men and women to assist them in maintaining their youthful appearance. There are a variety of non-surgical methods, such as injectables and skin care regimens, that can slow things down. Botox® injectable is used to release deep wrinkles that form between the eyebrows from frowning and to limit facial gesturing around the eyes and forehead to slow down the wrinkling process in those areas. The line of Juvederm® products

are used to add volume and fullness to the skin to correct facial wrinkles and folds, such as the lines from the nose to the corners of the mouth and to plump thinning lips. Aside from wrinkles, one of the first things to betray a person’s age are the eyes, be it sagging eyelids or under-eye bags. Although there are tons of products to temporarily improve the appearance, short of surgery, nothing will remove the excess skin above the eyes or fat and skin below them. Luckily, the surgical procedures to address aging around the eyes are relatively quick outpatient surgeries with shorter downtime. For some people, hereditary influences such as jowls and/or saggy necks (waddles) can show up earlier in life than expected, adding years to one’s appearance. A plastic surgeon experienced in performing face, neck and/or brow lifts can easily turn back the clock, making a person look 10 or more years younger. These procedures are also performed as outpatient surgeries but require a bit longer down time. When a consultation is scheduled with a surgeon, they should provide you with their patients’ before-and-after photos and discuss all aspects of the surgery. It is vital to find a surgeon who is practiced at restoring a natural, youthful appearance! A facelift that is extreme and obvious will only add to the impression of advanced age. Like it or not, many aspects of business today are built on perception, and in the competitive job market, it can’t hurt to consider all the ways one can improve an employer’s assessment of us. Cosmeceuticals and plastic surgery can definitely help to take age out of the equation, tipping the scales in favor of those with proven efficiency and expertise. jstylemagazine.com

The J. Parry Clinic 216-716-7762 • thejparryclinic.com NeoGraft Hair Restoration Cleveland To many Clevelanders, a full head of hair represents attractiveness and desirability both personally and professionally. For this reason, it is vital to understand what effects a hair restoration procedure can have on your daily interactions. Hair restoration should be unnoticeable to all but those you tell. Approximately 50 million men and approximately 30 million women, including many in Cleveland, suffer from male/female pattern baldness or thinning hair. Many potential patients shy away from (or are not candidates for) the traditional “strip method” of hair replacement because of the slow recovery time, the loss of feeling at the incision site, the tiny linear scar on the back of the head or the amount of postoperative pain involved. After much research, Dr. Jim Parry has chosen to offer the Follicular Unit Extraction (FUE) method utilizing the NeoGraft Minimally Invasive Hair Transplantation system. The FUE method of hair transplantation removes individual hair follicles from the scalp to their naturally occurring groupings of about one to four hairs and are then placed in the areas of the scalp where balding has occurred.

Hair Loss Consultation with Dr. Parry As a double board-certified facial plastic and reconstructive surgeon, Dr. Parry has extensive knowledge and experience in hair loss for both women and men. During your consultation, Dr. Parry will review your medical history regarding your hair loss and perform a thorough exam to determine the type of hair loss you are experiencing. Based on the findings, Dr. Parry will recommend an individual hair restoration treatment plan for you. Dr. Parry exclusively uses the minimally invasive NeoGraft hair restoration device along with Platelet Rich Plasma (PRP) therapy to obtain optimal results. 78

Procedure & Results NeoGraft is an FDA-cleared machine used for hair transplantation. It uses a minimally invasive method that is a variation of the FUE technique, which involves harvesting hair grafts one at a time instead of cutting a strip of skin from a donor site like the back of the head (FUT technique or “strip method”). NeoGraft uses an automated handheld device to remove follicles and implant them in balding areas. • Results are IMMEDIATE! You will leave being able to see the grafts in place. • Hair grows in cycles, the hair implanted will shed for two to four weeks and then will be replaced by new fully functioning hair. • Results will continue to get better each week with full realization at nine to 12 months post procedure. • Higher graft take rate (greater than 90 percent) than strip method and leads to less hair irritation and trauma to the scalp. • You are awake during the procedure with oral and local anesthesia to make you relaxed and comfortable. Downtime/Recovery • You may return to work the next day, if you choose, and resume normal activity within 48 hours, excluding strenuous exercise. • You will wear a bandage (like an ACE wrap) with a small amount of swelling for up to 24 to 48 hours. • You may wear a hat after 48 hours as long as it sits 2 inches from the treated area. (Example: baseball cap)
