FROM THE EDITOR

Saying what we mean

A

television commercial for a national banking chain made the rounds earlier this year that likely resonated with anyone who’s dipped his or her toe into the dating pool. card rewards program, but as a barroom conversation I recently had with friends suggests, what sticks with people is the all-too-familiar scenario the commercial portrays, not the “1 percent cash back” being advertised. Most anyone who’s been left out to dry by a would-be suitor knows the feeling, and in this issue of Jstyle, we hope to help you avoid such situations. To do so, we proudly present the third annual Jstyle Singles Issue. Ten of Greater Cleveland’s most eligible Jewish singles – five women and five men, all of whom were selected from community nominations – are featured in this year’s issue. They’re all interesting, intelligent and attractive, and I can tell you from working with each during our fashion photo shoot at the Cleveland History Center of the Western Reserve Historical Society, they’re also all fun to talk to and be around.

In the 30-second spot, a man walks a woman to a taxi following dinner on a first date. As the couple prepares to draw their evening to a close, this conversation takes place – with smiling faces and cordial tones of voice: Her: “I’ve had a wonderful time tonight.” Him: “Me too.” Her: “Call me tomorrow?” Him: “I’m going to send a vague text in a couple of days that leaves you confused about my level of interest.” Her: “I’ll wait a full two days before responding.” Him: “Perfect.” (opens the taxi door for her) “We’re never going to see each other again, will we?” Her: “No.” Then the narrator says: “Wouldn’t it be great if everyone said what they meant?” The commercial goes on to tout the bank’s credit

The Singles Issue

If you’re no longer on the market, don’t worry, this issue of Jstyle has plenty for you, too. For example, we visit with Jamie Synenberg to learn about how a recent trip to Israel with the Jewish Women’s Renaissance Project inspired her to pursue her jewelry-making aspirations; we sit down with restaurateur Seth Bromberg, who opened two new eateries this year; we catch up with restaurateur Brad Friedlander, who shares a recipe for Chinese food that might come in handy on Dec. 25; and we take a look inside the Flats at East Bank Apartments in downtown Cleveland. So, when I say there should be something in this issue of Jstyle for everyone, believe me, I mean what I say.

Reshaping The Neck this technique. The fat that lies deep inside the muscle cannot be safely removed with suctioning alone. For this reason, those of us who specialize in facial surgery prefer to sculpt neck fat under direct visualization through a small incision under the chin that often heals quite favorably. During this surgery, the platysmal bands are eliminated by overlapping the muscles using a technique I developed over 30 years ago and continue to use today.

O

ne of the most common concerns for patients who visit a plastic surgeon’s office is neck blemishes. Multiple imperfections can make the neck shape undesirable. Fortunately, all of these flaws can be eliminated with a high degree of success. While redundant neck skin is merely the consequence of aging, there are other reasons for a suboptimal neck shape. The younger population also may have an undesirable neck contour. Neck fullness in younger individuals is a genetic trait, and often other family members possess a similar neck shape. The extra fat in the younger population resides between the skin and the underlying muscle, which is called the platysma. Commonly, extra fat can even exist deep inside this muscle.

However, as we age, fat naturally deposits in the neck layers, resulting

in a displeasing neck appearance. Consequently, another common concern for patients is redundant neck skin. As part of the aging process, the skin becomes loose and the underlying muscles cause banding, known as “platysmal bands.” Furthermore, the deeper muscles can become larger and more prominent. These muscles are called the digastric muscles. An additional element that may result in a less than ideal neck is larger than normal—or drooping— salivary glands. Finally, having a receding chin or jaw can also have an adverse effect on the appearance of the neck. The good news is that all of these flaws can be corrected. While the fat can be suctioned, suctioning often fails to deliver an optimal outcome, since only the fat between the skin and the muscle can be partially removed through

Redundant neck skin is removed from either in front of or behind the ear during facelift surgery, and with this technique, conceals scars. The overgrown muscles can be trimmed without disturbing neck function. The sagging or enlarged glands may

also be trimmed without concern, since many other neck glands will take over for those that are missing or reduced. In reality, glands that are enlarged are usually due to inflammation and tend to function improperly. If a receding jaw or chin is present, it can be advanced, which would invariably improve the contour of the neck. Most patients simply need fat contouring, with or without tightening of the neck skin through a facelift. However, some patients with an obtuse neck may benefit from a combination of techniques. Dr. Guyuron specializes in aesthetic surgery of the face and neck, rhinoplasty, non-surgical facial rejuvenation and surgical treatment of migraine headaches.

At the Cleveland History Center of the Western Reserve Historical Society, they say “Cleveland Starts Here.” True to that slogan, the University Circle institution is home to the Euclid Beach Park Grand Carousel, the Bingham-Hanna and Hay-McKinney mansions, and numerous historical exhibitions – which made it a great place to photograph this year’s Jstyle Singles Issue. Ten of Greater Cleveland’s most eligible Jewish singles – five women and five men selected from community nominations – are featured, and when all is said and done, perhaps they’ll be able to say “Beshert Starts Here.”

Are your dating habits “kosher”? No, I’m open to anyone. Celebrity crush: Harrison Ford What song do you belt out in the car when no one else can hear? Anything by Adele or Carole King. Favorite Jewish holiday: Chanukah because people just tend to be happy when they’re thinking of other people instead of themselves. At a Jewish wedding, you’d find me ... on the dance floor. Favorite part of Jewish Cleveland: The sense of community that’s so strong. From her nomination: “She is active, outgoing and has a great sense of humor.” What she says: I like to have fun, I enjoy being with other people, I love to dance and I’m an animal lover. Joe Hochheiser

34 | University Heights Green Road Synagogue Assistant prosecuting attorney for Cuyahoga County and officer in the United States Air Force Reserve JAG Corps Qualities you’re looking for: Contrary to what Jerry Maguire says, I am not looking for someone to complete me. As a divorced father of two awesome kids, my life is pretty complete. I am looking for someone to complement my completeness. A strong independent woman who is sweet, caring, athletic and knows how to have fun. Someone who can turn any floor into a dance floor. Turnoffs or deal breakers: Someone who is negative and pessimistic. How would your bubbe describe you to a prospective mate? I’m a smart ass, but I’m her smart ass. Are your dating habits “kosher”? Yes. Celebrity crush: Ellie Fredricksen

At a Jewish wedding, you’d find me ... behind the bar – or with your bubbe on the dance floor. Favorite part of Jewish Cleveland: Going to parties and recognizing everybody from Jswipe. From his nomination: “Joe is the man. He’s committed to Judaism, committed to the community, committed to Cleveland and committed to the country.” What he says: I’m fun-loving, and a father above all else. I’m charismatic, and I love life. Connect: Find me on Facebook.

Favorite Jewish holiday and why: Passover because it’s a time when family and friends get together at my parents’house. You never know what race, religion, nationality or sexual orientation will show up at our house, and we all sit together as family.

Erin Katz 27 | Beachwood Park Synagogue Bartender at The Greenhouse Tavern in downtown Cleveland

Favorite place to grab a drink: I love craft, old-style cocktails, so for those, it’s The Speakeasy at Quintana’s Barber & Dream Spa in Cleveland Heights. I also like The Side Quest and 16-Bit Bar+Arcade (both in Lakewood). Qualities you’re looking for: Somebody who reads a lot, because I read all the time; somebody who’s passionate about what they do -- it doesn’t matter to me what they do as long as they’re happy; and somebody who’s always willing to try new things, whether it’s an activity or restaurant – I’m always interested in trying new things. Turnoffs or deal breakers: Arrogance is always a turn

off. There’s a fine line between arrogance and confidence. How would your bubbe describe you to a prospective mate? I always liked the word “firecracker” that she used to use. She’d warn them for an adventure. Are your dating habits “kosher”? I would like to date Jewish. I think it’s always been something I look for, but I kind of just go off of what I feel. Favorite Jewish holiday: As a kid, I liked Purim because it was like a second Halloween, but now it’s probably Passover because it’s a big family holiday for my family. From her nomination: “Erin is fun and outgoing ... and has a unique perspective of Cleveland.” What she says: I like to think of myself as very nerdy. I like to read, I’m into sci-fi and I like to learn a lot. I enjoy my profession extremely. I like to be outdoorsy and rock climb, and I like to have a good glass of bourbon. I like to spend time with friends; I’m a social butterfly, and I want someone who’s along for the ride and wants to do the same things. Connect: Find me on social media at @katzcle.

ASK ELANA

DATING. LOVE. LIFE.

Questions of

availability

Dear Elana,

Dear HUNG UP,

Some time ago, I started dating this amazing guy. Everything was great and we got along in every way. However, he had finished a two-year relationship right before we started dating, and after a few months he said he wasn’t ready. We concluded that probably not enough time had passed since his previous relationship, and that he could not be emotionally available to me or anyone else. My heart was broken, but as we both really liked and admired each other, we decided to stay friends. Now we spend time together, but I am still in love with him. How do I know if he is ready for a relationship? When that happens, how can I make him see me as a romantic interest once again? P.S. We are gay. Thank you so much! – Hopeful Underdog Not Giving Up

It sounds like the first question is how honest your friend is being with you. Is he really “not ready” to be in a relationship, or is he hesitant about being in a relationship with you? If you truly believe that your former flame can keep burning like a Chanukah miracle, then you need to have a conversation. Ask him how he feels about his ex, and how he feels about you. Remind him of the fun you’ve had together, and tell him you want to keep having adventures with him. However, I would caution you to examine your expectations, because you don’t want to play dreidel with your heart. It is possible that he will remain your friend, but fall for someone else. If that time comes, make sure that you are open to other matches whose flames are burning brighter for you.

Dear Elana, Do you have advice for guys who want to find love when they have PTSD due to a history of child abuse, sexual abuse or bullying? I’m talking about guys specifically because it

seems that guys have to be confident and seductive, yet abuse hinders that confidence. – Concealing Overly Personal Emotions

Dear COPE,

your date’s positive feedback. Remember that your gut reactions might be based on past experiences instead of the emerging relationship. Try to evaluate your feelings about the woman sitting across from you based on her words and actions – not the hurtful actions of other people from your past. As your relationship develops, you can start to open up about your symptoms. One of my clients had vivid nightmares that woke him in a cold sweat. When his girlfriend slept beside him, she would reassure him and help him

First of all, I want you to know that you are not alone. According to the Diagnostic and Statistical Manual of Mental Disorders (DSM-5), about 8 percent of the U.S. population will have post-traumatic stress disorder at some point in their lives. I’m going to channel Jewish mothers everywhere and assure you that you can still find love and get married. In fact, support and connection are two of the best defenses against the isolation and selfdoubt that often accompany trauma.

After a trauma, your nervous system is on heightened alert and needs reassurance that it’s safe to ease into an evening of candlelight, scotch and innuendo. Practice mindfulness to increase your awareness of the present moment. Focus on the colors, scents and textures in the room. Notice the necklace your date is wearing, the way she holds her hands and the sound of her laugh. One of the hardest things about dating after a traumatic event is not being able to fully trust your instincts. You might feel jumpy and insecure despite

fall back to sleep. After many exhausting nights, they were both able to sleep peacefully. Your life experiences shape who you are, and your exposure to trauma may have allowed you to develop greater empathy, gratitude and courage. The right woman will admire your strength and honesty. A fashion-focused trip to Israel restores shine to Jamie Synenberg’s jewelry-making endeavors Story by Amanda Koehn Photography by Michael C. Butz

Jamie Synenberg, of Beachwood, sets a 23-stone Swarovski crystal rivoli necklace in her home studio.

Winter 2016

jstylemagazine.com

One night in February,

Jamie Synenberg was browsing Facebook when she saw a post about a fashion trip to Israel with a group called the Jewish Women’s Renaissance Project. At the time, the 37-year-old Beachwood resident was mostly a stay-at-home mom, doing part-time work in the jewelry industry. She always loved semi-precious stones and had started to think about starting her own jewelry line, but the competitiveness and lack of kinship between colleagues in the industry bogged her down. She needed something to shift in her mind. “I knew immediately that that was the trip I needed to get on. It just spoke to me,” Synenberg says. “Without even speaking to my husband, I applied to go on the trip.” After a long interview process that began with hundreds of applicants, Synenberg was one of only 35 women chosen from around the world to spend eight days in Israel this past July. There, she became immersed in Israeli fashion and culture and connected with women who changed how she saw her place in the jewelry world – and inspired her to revisit, more purposefully, her jewelrymaking interests.

Growing up in the business Synenberg’s late grandfather, Holocaust survivor Saul Gottlieb, founded the Cleveland-based fine jeweler, Gottlieb & Sons. Her father, Jeff Gottlieb, continued the family business, which Synenberg grew up around. However, she found her own inspiration in colorful semi-precious stones early on. When she was in elementary school, she learned about gems and minerals and was immediately drawn to them. “I would save all my birthday and Chanukah money to go to gem and mineral shows and buy semi-precious stones,” she says. In high school, Synenberg worked for her father after school. She then attended Lynn University in Boca Raton, Fla., where she studied fashion marketing. After working summers with her father and doing an internship, she decided to further pursue jewelry design and completed an intensive six-month training program at the Gemological Institute of America in New York City. “That was my dream. When I went to the GIA, I wanted to be a diamond wholesaler like my dad and I wanted to be a jewelry designer,” she says. After graduating from GIA, Synenberg searched for a job in the industry, however,

found no one would hire her because of the Gottlieb name. “Nobody wanted to hire me because they knew my family and thought I was going to steal their trade secrets and give them to my family,” she says. After exhausting outside prospects, she took a position at the Gottlieb & Sons factory in New York City. Along the way, her now-husband Eric, whom she met while growing up in Cleveland, moved to New York with her. Unbeknownst to her, before Eric proposed, he reached out to her father and they concocted a plan where she would create her own engagement ring. Gottlieb asked Synenberg to design a ring for a “customer.” “I said, ‘I can’t pick some guy’s ring, I’ve never done that before. I don’t know what his fiancée is going to like,’” Synenberg says, laughing. After shipping away a creation she built and loved, she forgot about it. “We were in Florida and it was New Year’s Eve and we were at the Fontainebleau and he proposed to me in the room. And he brings out the ring. I’m like, ‘Oh my god I made that ring, I designed that ring, oh my god I love that ring,” she says, smiling. After stints working on high-end jewelry for her father’s company and later for David Yurman in Miami, Fla., Synenberg returned to Cleveland. She stopped working while she was pregnant with her second son. Raising her three children – Ari, 8, Noah, 6, and Asher, 2 – she continued occasionally making special pieces for friends and family and started to consider what her line might look like. Then she went to Israel.

of Jewish Family Experience, a Beachwood partner of the Jewish Women’s Renaissance Project, was on the group’s first trip in 2009. “They don’t want people coming home from the trip and (saying) ‘now what?’We want them to bring experiences back to the community,” Koval says. Koval has been on five trips herself and was excited to hear another local woman was selected for the fashion trip. Although she wasn’t on Synenberg’s trip, she followed it on social media.

“It was so much fun, I was virtually experiencing it along with her,” Koval says. “I sort of immediately felt this kinship with her because she was going on this trip with all the people I knew.” Synenberg, a member of Jewish Family Experience and B’nai Jeshurun Congregation in Pepper Pike, says the trip mixed fashion and cultural experiences in a special way. The group met an Israeli perfume designer at the Dead Sea, and they visited the Yvel jewelry company, which specializes in pearls and has a school, the Megemeria School of Jewelry and Art, where Ethiopian refugees are trained in jewelry design. Altogether, however, the sisterhood bonding the women from all over the world on the trip left the strongest impact on Synenberg. “Everybody from the group, we became like sisters. We let our guard down and told stories about our hardships, about everything,” she says. “I realized that in the fashion industry, usually people don’t want to help people, they don’t want to share their secrets. It’s very protective. And this trip, it was the first time I had seen in my entire life people wanting to help other people succeed.” By the time Synenberg was on her way home, she knew what she needed to do.

“I was like, ‘I’m going to go back and I’m going to start my own jewelry line,’” she says. Moreover, the bright colors inherent in Israeli jewelry took Synenberg back to her childhood interest in semi-precious stones. “I felt very lively there and they weren’t afraid to use color in their jewelry. So in my jewelry, I decided I was going to use lots of colors and I wasn’t going to just do diamonds,” she says.

Inspiration in action Upon returning, Synenberg told her father that she was starting her own line and asked for his support, which he gave unequivocally. She decided to begin on two lines. The first line is high-end, like her previous work. The second line, made using Swarovski crystals, is more affordable and is inspired by the sense of sisterhood imparted via the Israel trip. Synenberg wanted every woman she cares about to be able to afford a design. “One of the things she wanted to do was to make her jewelry line affordable,” Koval says. “She did come home inspired to connect to that professional space.” One of the first designs she created was a cuff, designed with the Western Wall’s uneven stones as inspiration. She says she wore the cuff out recently and joked that

someone tried to buy it off of her, but she is still refining the piece before selling it. “It’s one of those things I want to perfect,” she says. Synenberg still keeps in touch with her friends from the trip daily through a WhatsApp group. She is taking her business process slow, working with a manufacturer to perfect each design along the way. She recently began selling the Swarovski crystal line at Pennello Gallery in Cleveland’s Little Italy neighborhood and online. The higher-end pieces are in the manufacturing process, and Synenberg says she hopes to have the website launched this coming summer. “The trip really gave me the confidence to say ‘I can do this, I know I can, I believe in myself, and if I believe in myself, I know I will be successful.’ And I know that my new sisters are going to help me and make sure I succeed in any way possible.” She says she is also more motivated to give back and connect to the local Jewish community since returning from Israel, volunteering with the Jewish Federation of Cleveland and Jewish Family Experience. “I feel like it made me a better person,” she says. “It made me really want to be more involved with the community here and help people in anyway possible.” js

chefs and restaurateurs in Northeast Ohio

Reservation relocation

A handful of Northeast Ohio restaurants recently made the move to RESO for their online reservation services. Among them are Bistro 185, fire food & drink and The Driftwood Group restaurants like Cibreo Italian Kitchen, Hodge’s, Washington Place Bistro & Inn and Welshfield Inn. RESO is new to the Cleveland market and is a direct competitor to OpenTable in the world of online restaurant reservations. Company spokesmen say they chose to roll out RESO in Northeast Ohio due to the region’s growing national reputation for chef-driven restaurants, and they feel RESO will resonate with users and restaurateurs alike due to reportedly lower fees. Those who haven’t yet heard of RESO likely aren’t alone. It’s new to the U.S., but it isn’t new to the business of making reservations. RESO is an offshoot of Bookenda International, which is a player largely in the Canadian restaurant market, where 1,500 locations from Montreal to Vancouver are signed on. Last year, Jstyle visited with The Driftwood Group founder and managing partner Scott Kuhn to learn how he got into the business. For that story, visit jstylemagazine.com/ getting-the-drift.

Winning pitch

Chef Douglas Katz was one of nine entrepreneurs, startups and small manufacturers awarded a grant and an array of professional services by way of the Manufacturing Advocacy and Growth Network’s inaugural [M]spire pitch competition. Katz’s winning pitch revolved around his Fire Spice Company, through which he’s creating an international array of high-caliber spice blends – think French spice cake, Jamaican jerk chicken and Vietnamese beef noodle pho – for home cooking. Katz launched the company in May. He’s also owner and executive chef of fire food & drink in Cleveland’s Shaker Square neighborhood, owner of The Katz Club Pop Up Diner in Cleveland Heights, and chef/partner of Provenance, Provenance Café and Catering By Provenance at the Cleveland Museum of Art. To read Jstyle’s previous coverage of Fire Spice Company, visit jstylemagazine.com/spicing-things-up.

New ownership

Bistro 185 in Cleveland’s Collinwood neighborhood has a new owner – but familiar face – at the helm. Ryan Kaston, Bistro 185’s executive chef, recently purchased the restaurant from owners and founders Ruth and Marc Levine, who opened the doors 10 years ago. During that time, the restaurant earned a reputation as a cozy neighborhood favorite at which the Levine’s employed a tasty farm-to-table philosophy. Prior to joining (and purchasing) Bistro 185, Kaston worked as an executive sous chef at LockKeepers in Valley View, a sous chef at Paladar Latin Kitchen and Rum Bar in Woodmere, and an executive chef at StoneWater Golf Club in Highland Heights. Jstyle recently caught up with Ruth Levine to dish about Rosh Hashanah recipes. For instructions on how to recreate her honey cake and apple confit, visit jstylemagazine.com/sweet-new-year.

Following the openings of Kantina and Raving Med in 2016, restaurateur Seth Bromberg is solidifying his place in Cleveland’s dining scene

Seth Bromberg is a perceptive individual. Sitting at a small table inside Raving Med, his most recent venture in the local restaurant scene, the 49-year-old restaurateur watches closely as guests enter and exit the restaurant. He keeps a watchful eye as plates of falafel and chicken shawarma are brought to the surrounding tables, making sure each item is prepared to his satisfaction. He speaks slowly and deliberately, mulling each remark in his head before sharing his thoughts. Although Bromberg left Brooklyn, N.Y., decades ago, his accent still slips through as he speaks, especially when he speaks fondly of his family. “My Jewish grandmother from Brooklyn used to call me the overpaid busboy,” Bromberg says with a smile. Having a keen eye for detail and learning to carefully execute business plans have played key roles in Bromberg’s success. Far from a busboy these days, Bromberg is the owner of two restaurants in Cleveland’s theater district – Raving Med, located in the Keith Building on Euclid Avenue, and District, across from the Hanna Theatre at East 14th Street and Euclid. He says he’s inspired by the downtown landscape every day. “What we think makes Playhouse Square very special is how awe-inspiring it is to be able to work in the theater district, with the lights and the glamour. Even for Cleveland, it’s understated, but it really is a lot of fun,” says Bromberg,

a member of B’nai Jeshurun Congregation in Pepper Pike. Bromberg’s restaurants can be found outside of downtown Cleveland, too. From Kantina in University Circle’s Uptown district to The Melting Pot at Legacy Village in Lyndhurst and at Westgate Shopping Center in Fairview Park, Bromberg has made his mark across Northeast Ohio. Kantina and Raving Med both have Jewish themes and both opened this year, in January and June, respectively. Being able to share cuisine that holds a special place in his heart has been an important milestone for Bromberg this year, and it’s something that he’s excited to share with all of Greater Cleveland. With a handful of thriving restaurants in the area, it may come as a surprise that Bromberg never had a desire to become a chef, nor did he have a mentor to help him navigate his way through the industry. Rather, Bromberg sees himself as a “student of the game.” He’s relied on his ability to quickly learn new concepts and skills to further his career. “There’s not a day that goes by that I don’t want to learn more,” he says, adding that keeping an open mind and staying humble serve as mentoring forces in his life. Bromberg has always approached his business in a straightforward manner. It revolves around a philosophy of “if his staff is happy, his guests will be happy.” Combine that with a focus on fresh, healthy food and a spirit

of hospitality, and one can sense Bromberg’s recipe for success.

Gathering ingredients

Growing up in Brooklyn, Bromberg was interested in entrepreneurship and finding business opportunities. At 15, he and his friends scalped concert tickets, purchasing 20 or so at a time and selling them above face value to make a profit. He left New York in the late ‘80s to study finance at Florida Atlantic University in Boca Raton, Fla. There, Bromberg worked as a waiter at various restaurants, country clubs and sports bars to cover tuition. “When I first started, I was told, ‘People tell you what they want to eat, you give it to them and they give you

money.’ And I said, ‘Wow, that’s perfect. How easy and fun is that?’” Upon graduating in 1991, Bromberg got an entry-level position with The Ritz-Carlton Hotel Company and Morton’s The Steakhouse of Chicago. He spent the next nine years with Morton’s, and along the way was promoted to the executive level. Bromberg credits his experiences at The Ritz and Morton’s for instilling in him a strong work ethic. “The Morton’s operation really trains general managers and executives in an entrepreneurial standard. You were responsible. The buck stopped with you. That training ground really solidified my approach to business – hospitality, integrity and creating culture,” he says.

Above: A falafel pita that features spinach, Israeli salad, pickled beets, pickled cauliflower, pickled carrots, tzatziki and tahini, also from Raving Med.

Bromberg eventually left Morton’s and moved back to New York, where he opened a line of steakhouses in Long Island. However, Bromberg says he struggled over whether he wanted to go back to school or stay in the restaurant industry. He soon met his wife, Jodie, in New York, and the two married in 2000. They decided to move to Tampa, so Bromberg sold all of his possessions and restaurants in New York.

Starting from scratch

Bromberg, however, couldn’t stay away from the restaurant industry for long. In 2002, he answered an online job posting for a business consultant position with The Melting Pot restaurant chain. He spent the next year-and-a-half traveling the country to visit various franchise locations and help owners identify areas in which they could improve business. He quickly realized there was an opportunity to bring this restaurant concept to the Cleveland market. His partnership with Legacy Village, which is owned by Mitchell Schneider of First

54 Jstyle

Winter 2016

Interstate Properties, helped seal the deal. “Their commitment to excellence and their commitment to service is very similar to my philosophy,” Bromberg says of Schneider and First Interstate. Bromberg moved to Cleveland in January 2004 and opened The Melting Pot at Legacy Village that June. His second franchise opened four years later in Fairview Park. While opening The Melting Pot at Legacy Village had been mostly a smooth process, opening the second location brought a set of challenges. “I unfortunately lost my crystal ball and couldn’t predict one month after we opened that the stock market would crash and the subprime mortgage disaster would happen. Needless to say, it’s been an interesting 8-year run at that location,” Bromberg says. That experience taught Bromberg to be much more conservative in his approach to opening District, a contemporary American restaurant featuring fromscratch dishes. District opened in Playhouse Square in April

2013, at a time when the theater district was still finding its place in the downtown Cleveland landscape. Bromberg faced the challenge head on. “We loved the vision that Art Falco and his team at Playhouse Square had for the area, and although we opened a year-and-a-half prior to the re-grand opening, if you will, of Playhouse Square, we bought the vision, we understood the vision, and we really were excited to be part of that downtown landscape,” he says. While The Melting Pot is a vibrant, upscale casual atmosphere, Bromberg wanted to take a more understated approach to District, allowing the surrounding metropolitan landscape to take the spotlight. “We really wanted the city to be the décor, and we wanted that to complement the food,” he explained. “When you can look outside and see the bright lights of the city and the hustle and bustle of people passing your window, you can’t draw that on any kind of canvas. That yourself is your canvas.”

Serving Jewish dishes

Bromberg decided to open his first kosher restaurant, Kantina, in January of this year. Although Bromberg grew up in a kosher household and attended a Jewish day school until fourth grade, he says it took some time for him to find his place in Cleveland’s Jewish community. “While I understood the kashrut from top to bottom and left to right, you have to be able to prove through doing and executing and not just by saying,” he says. “We’re very fortunate that the community has embraced us.” Kantina, which serves a variety of soups and salads, sandwiches, burgers and platter meals, operates as the main food service for Hillel at Case Western Reserve University. The restaurant provides Shabbat meals for more than 100 students every Friday night, which Bromberg considers a mitzvah. “The warmth that we feel to provide that from-scratch, kosher meal to these students is amazing,” he says. Taking things one step further, Bromberg opened

jstylemagazine.com

Raving Med in June after being approached by his Israeli chef with the concept for the restaurant. “The food at Raving Med is the true, authentic, realdeal Israeli food that you would have in Israel right this second,” Bromberg says. “It’s not Americanized, it’s not modernized, it’s not gentrified. The menu is ripped from the streets of Tel Aviv, Haifa, Jerusalem and Tzfat.” Bromberg recalls taking his first trip to Israel in 2013. While other tourists took photos of historical and religious sites, he snapped pictures of food. “There’s something about when a fresh falafel comes out of the oil, it hits your pita and it’s stuffed with tahini and hummus and pickled beets and carrots and peppers and eggplant, and you have this sandwich, there is nothing better,” he says. The feedback from customers at Raving Med has been overwhelmingly positive, Bromberg says, with many guests telling him how excited they are to finally have “real Mediterranean food” available in Cleveland. He hopes to one day bring both Raving Med and Kantina to the East Side suburbs.

Family dining

Being in the restaurant industry never comes without challenges. For Bromberg, the biggest learning curve has been understanding the planning and budgeting process of building new restaurants. He’s learned to ask more questions along the way, he says. “I don’t come from a construction background. I’m a Jew from Brooklyn that played stickball in the streets and

jstylemagazine.com

was fed by my grandmother,” Bromberg says with a laugh. Bromberg’s career goes beyond new business ventures. The part he enjoys most, he says, is being able to employ nearly 100 people and helping his workers provide for their families. “Growing up Jewishly in Brooklyn and learning about tzedakah and giving to others who were less fortunate, not that I grew up so fortunate, but you always gave,” he explains. “I think that, coupled with learning about hospitality and learning good service from two of the greatest hospitality companies, I bought into it and I understood it. It was very simple.” Bromberg balances running his restaurants with being a father of three children: Evin, 14, Noah, 12, and Jules, 11. He credits his wife, Jodie, for keeping him sane and taking care of their family at home in Pepper Pike. Bromberg says he’s enjoying being able to share his passion for food with his children. He hopes that as they grow older, they’ll think back and cherish the memories, just as Bromberg does when he thinks of his grandmother. “I can think back and remember watching my grandmother prepare Shabbos dinner and the smell, as you would open the door, would overcome you,” he says. “That smell has been recreated in my home when I make my grandmother’s matzah ball soup with my kids. There’s something about food that brings you back to a time in your life, brings you back to a special occasion or a remembrance, and it’s the most powerful experience.” js

Holiday tradition Red Restaurant Group’s Brad Friedlander shares a recipe for those in need of a Chinese fix on Dec. 25 – but who are hoping to stay home Story by Amanda Koehn Photography by Michael C. Butz

rad Friedlander may have grown up in a foodie family before such a designation even existed. However, of all the foods his parents experimented with, Chinese was a mainstay. His family frequented top local Chinese restaurants, but they also created Asian-inspired dishes at home. “We were eating curries back in the ’50s, when nobody was making stuff like that,” he says after preparing Szechuan beef at Moxie the Restaurant in Beachwood. Friedlander – a partner in Red Restaurant Group, which includes Moxie, Red the Steakhouse in Cleveland and Beachwood, and 811 Kitchen Bar Lounge in Cleveland – says as a kid growing up in Shaker Heights, his mother, Anita Barnett, cooked dishes that were popular at home, while his father, Alvin Friedlander, ran Cleveland’s Alvie’s restaurants, among other professional food-related endeavors. “My mother was a phenomenal cook. My father had some

restaurants, (and) he had the food concession at the Cleveland (Municipal) Stadium for 50 years. So I grew up around food,” he says. Christmas traditions while Friedlander, today a member of The Temple-Tifereth Israel in Beachwood, was growing up consisted of going to a movie and getting Chinese food. While such a tradition is pretty common, avoiding the bad weather and diving into your Netflix queue might be a cozier change of pace. Friedlander’s recipe for Szechuan beef is perfect to try out your Chinese cooking chops, without the stress of preparing a more difficult, multiple-course meal or incurring the expense of going out.

Brad Friedlander, one of four partners in Red Restaurant Group, stands in the dining room at Moxie the Restaurant in Beachwood, which he says has occasionally featured Asian dishes on its menu over the years.

Friedlander’s Szechuan beef, a dish he sautéed in five minutes after pre-chopping vegetables and preparing rice, was inspired by a meal his stepson, also a chef at Moxie, cooked during a recent staff meal. The dish was an immediate hit. “It’s so easy. It’s not complicated at all,” Friedlander says. While cooking the beef over a flame, Friedlander recommended using high-quality beef and not overcooking it.

As he quickly removed the vegetables from heat, he advised not overcooking them, too, because they will lose their color. While Moxie has had various Asian dishes on the menu over the years, and 811 Kitchen Bar Lounge offers them regularly, Friedlander speculates more may some day be in store. “Eventually, who knows, maybe we will open up a Chinese restaurant,” he says. js

Brad Friedlander’s recipe for Szechuan beef, stir-fried with red and green bell peppers in a mildly spicy, savory sauce: Ingredients

Instructions

2 tablespoons oil 8 oz. beef, cut into thin strips 2 cloves garlic, minced ¼ small green bell pepper, cut into long strips ¼ small red bell pepper, cut into long strips 1 to 2 baby carrots, cut into matchstick strips ½ teaspoon chili oil (bottled chili oil), optional 2 stalks scallions, cut into 2-inch strips

1) Marinate the beef with all the ingredients in the marinade for 15 minutes. 2) Combine all the ingredients in the sauce, stir and mix well. Set aside. 3) Chop vegetables, if not pre-cut. 4) Heat up a wok and add

1 tablespoon of oil. When the oil is fully heated, add the beef and do a few quick stirs, until the surface turns opaque and slightly charred. Transfer out and set aside. 5) Clean the wok and add the remaining 1 tablespoon of oil. When the oil is fully heated,

add the garlic and stir-fry until aromatic. Add all the peppers and carrots and stir a few times before adding the beef back into the wok. Add the sauce and stir to combine well. Stir in the scallions and chili oil, dish out and serve immediately with steamed rice.

Marinade 1 teaspoon cornstarch ½ teaspoon Shaoxing wine (Chinese rice wine) 1 teaspoon dark soy sauce

Sauce ½ heaping tablespoon oyster sauce ½ tablespoon chili garlic sauce 1½ teaspoons soy sauce 2 teaspoons sugar 2 tablespoons water ½ teaspoon chili oil ½ teaspoon sesame oil

feature story here were times this summer that Jason Cohen, who grew up in the suburbs and wanted city action, could “see a train, an RTA bus, a plane, a car and a boat at one time” from the window of his fourth-floor bachelor pad at the Flats at East Bank Apartments. “It’s pretty cool,” says Cohen, a wealth manager associate at Stratos Wealth Partners, a Beachwood firm he commutes to daily. It’s 30 minutes each way, no big deal to a man who clearly enjoys where he lives. To Cohen, who just signed a second, one-year lease for his 1,700-square-foot corner apartment, the strikingly modern, 241-unit building combines the best of the urban and the suburban – with emphasis on the former. Cohen enjoys living in the city – but at a remove; while he can walk to the buzz that is East Fourth Street and Uber to Ohio City and Tremont, going home to his high-style Flats apartment feels like sanctuary. In 2015, bored with the social life available to him in University Heights, where he owns a home, Cohen decided it was time for his first shot at city life. He’d witnessed the growth of deeply urban hot spots like Tremont and East Fourth over the past seven years and decided to take a chance on the Flats East Bank, the $750-million, multi-phase project developed by The Wolstein Group and Fairmount Properties. “Seeing and being part of the city is kind of why I moved down here,” says Cohen, noting his father had a hand in Flats East Bank. Harley Cohen is principal of Orange-based construction management firm Harlan & Associates and has been a spokesman for the Wolstein-Fairmount development. The dramatic, towering apartment building is the cornerstone of the second phase of a project that, all told, might take up to eight years to fully develop. While he loves the high ceilings and floor-to-ceiling windows of his apartment – not to mention views of Lake Erie, the

Cuyahoga River and the Terminal Tower – Cohen hopes the area becomes more of a community, not just a destination limited to residences and restaurants. In the meantime, he’s pleased with his place, where he entertains up to 30 at a time. With the Cavs becoming NBA champions and the Indians finishing a whisker away from winning the World Series, “it’s just been a crazy, wild ride,” he says of this summer. Cohen, who attends Park Synagogue and helps out at The Friendship Circle, also enjoys the Sky Park a floor below. It’s a 40,000-square-foot outdoor area, an Astroturf where people can meditate, entertain, grill, play sports or relax. It’s an ultramodern gathering place that, like the subdued palette of the apartments, defines the complex. The Sky Park also is a favorite spot of fellow resident Anna Ryan’s. She’s luxury property manager for the Flats at East Bank Apartments and moved from suburban Cincinnati to Cleveland when the project was in its infancy. “It’s kind of nice not to be on a block that has a building and has a building and has a building and has a street light and all the busyness of cars going back and forth,” says Ryan, detailing the difference between a typical urban setting and the oasis that is Flats East Bank. “This kind of feels like I’m in the city, but I’m also looking out at something peaceful and I get away from all

the commotion and the commuting and the nightlife.” Occupancy is at about 92 percent, she says. Apartments in the pet-friendly structure are 720 square feet to 1,700 square feet, at a respective monthly price range of $1,655 to $3,900. They are predominantly one-bedroom units. “You’d be surprised who lives here,” says Ryan, citing empty nesters and young professionals like herself, Cohen and employees of the Cleveland Clinic, University Hospitals and Ernst & Young. People working for those companies get a break through waived application fees, lower deposits and a 3 percent discount off each month they rent. What these tenants occupy are state-ofthe-art apartments in a style that could be called “champagne industrial.” They feature exposed HVAC, the use of concrete for ceilings and pillars, and a neutral, largely off-white palette, that blend tying them to Cleveland’s labor-intensive past in a futuristic, but not unsettling, way. These energy-efficient apartments come with a washer/dryer, low-flow toilets, brushed nickel fixtures and an ultramodern kitchen. The fixtures are quirky, handsome and effective, and the furnishings in a 1,023-square-foot model ranged from an extravagant but understated marble dining table to a sturdy, funny settees that look like puffballs.

feature story Color is used for accent, such as a gold spread on the off-white bedspread and a green-and-white mat in front of the double sink. The walls are plain and the lighting is effective, soft yet penetrating. Look out the window and see a part of the Port of Cleveland operation, and nearby is the old U.S. Coast Guard station, an Art Moderne landmark under new management by Cleveland MetroParks. The interior decoration comes courtesy of Iris Wolstein, widow of developer Bertram “Bart” Wolstein and mother of Wolstein Group principal Scott Wolstein. Dimit Architects of Lakewood worked with the developers on the furniture. “I have a propensity for contemporary,” Iris Wolstein says. “I’m very concerned with commercial projects being low-maintenance and (with) clean lines, and, of course, in a building like this you’re dealing with different people with different tastes, and I felt that contemporary and clean appeals to most people.” She kept the color scheme simple. “We kept it soft so that people could go in any direction. They could spice it up with bright colors or keep it a monotone.” The walls are a “taupy gray,” and “the tile is gray and white in the kitchen and in the bathrooms,” she says. The idea was to give residents a neutral palette to work with. The bedroom carpeting, too, is neutral and simple, though, as befits such a high-class building, “plush is a good word.” As for the windows, the treatments are uniform. “It’s important with a building that size to keep all the window treatments similar because on

the exterior you don’t want to see curtains in one window, shades in one window,” Wolstein says. “So all the window treatments are shades which could be embellished on the inside with draperies or curtains.” She wants the “face” to be the same all the way around the horseshoe-shaped structure. “Different projects call for a different feel,” she says. “When we built Barrington Country Club (in Aurora), we wanted that to fit into the community. When we renovated Glenmoor Country Club in Canton, it was a whole different genre because it was a former seminary and we wanted to keep that feel. So it depends on the project and the location.” Wolstein has been handson with interior design on projects ever since her late husband, who died in 2004,

began building homes “50, 60 years ago,” she says. “I could decorate that model house, and then, when he moved up the ladder and started building shopping centers, I would work with the architects to design the centers. Then we built hotels and country clubs and I was always involved in that. It was love and devotion. “When we built this home that I live in, which is, like, 45 years ago, we built a

contemporary house and everyone called it modern, and everyone thought that would never last,” she says of her Pepper Pike residence. “But when people come into my home, they think I just built it – contemporary done in a warm atmosphere.” The Wolstein touch – light, inviting and au courant – applies to the Flats at East Bank Apartments, too. js Carlo Wolff is a freelance writer from South Euclid.

Options abound for Northeast Ohioans looking to shape up but not ship out (of the house) By Michael C. Butz

orking out at a gym can offer many benefits, from providing an array of equipment to offering a social environment in which to get or stay in shape. But gyms aren’t for everyone, and three local businesses – Specialty Fitness Equipment in Bedford Heights, Core Fitness Training Center in Warrensville Heights and Ultimate Workout and Recovery in Cleveland – offer a variety of ways to work out without leaving the house. One option is to install a home gym, which Specialty Fitness Equipment founder Chuck Herman says has become more affordable due to machines that offer a wider range of workout options. Home gyms also offer convenience. “It’s nice to be able to roll out of bed, go downstairs, have a workout, and then take a shower and go to work,” he says. Herman works with medical professionals and uses his exercise science background to implement a “consultative approach” to determine what equipment will be best for clients.

“We delve into it like a doctor would, asking about what their current goals are and about their future goals – as well as the space they’re working with,” he says. “We’re not just some guys who sold shoes the other day and now we’re selling physical fitness equipment. We work hard to stay on top of the industry.” A second workout-from-home option is Ultimate Workout and Recovery’s patented resistance band-based system. Originally devised for bed- and wheelchair-bound patients, the system has grown to become a tool used by

ROOM SERVICE people “of any age and at any stage” of physical ability, says one of its co-creators, Ultimate Workout and Recovery chairman Joe Salamon. “It’s a great tool for home health caregivers, personal trainers, athletic trainers and physical therapists,” says Salamon, who has a wellness specialist background. “It’s a tool of independence, strength and empowerment for the end user who is immobile short- or longterm due to injury, surgery or disease.” Salamon also touts the system’s easy storage, convenience for travelers and its relative safety. “You really can get everything workout and rehab related completed with this convenience gym,” he says. “Our goal is to maximize

safety and adaptability for all users of any age and any stage with this system.” Yet another workout-fromhome option is to have the gym come to you, which is something Core Fitness Training Center founder Adam Bernon offers. “It’s always huge when you’re really short on time to have someone who’s able to be where you need to be,” he says, adding his in-home clients range from stay-at-home moms to busy businessmen. Bernon – whose “full circle” fitness approach incorporates yoga, free weights, cardio and diet – says in-home workouts allow clients to avoid distractions associated with exercising in public settings, and that such privacy often leads to better results.

Ultimate Workout and Recovery Country music singer and former professional wrestler Chad Brock uses Ultimate Workout and Recovery’s resistance band system.

“When you don’t have to worry about being judged, you’re more open to speak freely,” he says, adding that stress release pairs well with

physical exertion. “Certain people don’t want to go to certain places, and not everyone wants to go to gyms.” js
