Knowing what truly matters It’s the end of July as we write this preface. It’s been a challenging and extraordinary period, to say the least. Our thoughts go out to those who were greatly affected. Luckily, these past months have still held much value, despite the challenges faced. We're grateful for the home we have. The place where we may live, love, eat and enjoy. Where we can share and dream, the place where we can be ourselves. This place became more important for each of us throughout the past months.
What have we been up to? Ruchama: "Just like many other parents, I home-schooled my four children. Plenty of mothers and fathers will agree; this is no easy task. At the same time, we very much enjoyed this time together. Being with each other’s company all day created time and space for long lunches or preparing elaborate meals. This gives opportunity for great conversation and allows us to discover talents in your children you hadn’t yet witnessed." Björn: "In some ways, it also provided a break. With the cancellation of all the sport and extracurricular activities, the ‘Bakker taxi service’ was briefly put on hold. In its stead, we spent time in nature, went for long walks and hit the water. The kids went jogging and mountain biking." Ruchama: "The outdoor life suits our family. Spending time in nature offers perspective. There’s room for good conversation, you gaze in wonder at everything around you, everyone enjoys the freedom and company. I found time each day to work on our social media channels. It was so fun and inspiring to contact other people working from home –fans of our brand who enjoyed a hard-earned cup of coffee from a beautiful mug or a delicious salad for lunch. It was fantastic to see how people inspired one another. When I spotted the enthusiastically shared photos, I felt part of a huge Bunzlau Castle family.

Björn: "Our family enjoys sailing very much and throughout this period I often reflected upon a sailboat. On a sailboat, everyone has a task. With wind in your sails, things are relatively easy. In the midst of a storm, however, structure, focus and clarity are key. At home and at the office, that is our approach: love, structure and focus."

How did this focus take shape within the company? Björn : "Above all, we said, we will continue with the plans already made. We will continue to build and continue to dream. We will accept the situation for what it is, and we will make the best of it."

Ruchama: "Some situations are not necessarily easy, but they can still be interesting. It’s the mindset that makes you an entrepreneur and we are always searching for opportunities and potential. We also wanted to be there for our clients and help wherever we could!"

Björn: "We worked hard on new collections and products. Our first questions are always: what does our target market want? How can we reach new audiences? How will production be arranged? We then look at what we can do in terms of form and color, without sacrificing the identity. Treasures purchased twenty years ago must still pair beautifully with our newly introduced items. With the expansion of our product range, we’ve noted more new, young collectors in the past years. People choose our brand conscientiously. All of our products are produced fairly and sustainably, offer excellent quality and are, of course, exceptionally beautiful. In this day and age, it is of even greater importance to know where and how you will produce a product. We have been handed responsibility for this world and for ourselves but also for our children."

Baroness Nathalie van Verschuer: “We don’t want to keep this place all to ourselves. Come enjoy all there is to experience.” Baroness Nathalie van Verschuer and her husband live at Heerlijkheid Mariënwaerdt, an estate in the heart of the Dutch Betuwe area. With an expansive 1,000 hectares (some 1,500 football fields), the estate is one of the Netherlands’ largest. No easy feat to manage and maintain. 15

A home full of family history Nine generations have lived in Huis Mariënwaerdt. Every nook and cranny breathes family history. Her in-laws lived there until three years ago, and before World War II, two unmarried aunts enjoyed the Huis as their summer retreat. We are sitting around the kitchen table of baroness Nathalie van Verschuer-des Tombe (53). Across from us hangs an impressively large painting by Marie Emily from 1825. A distant relation, perhaps?
The estate’s family history begins with Count van Bylandt, a distant ancestor, who purchased it in the mid-seventeenth century. At that time, the estate had already been on the market for a century. Nathalie explains, “the count built the house on the vaults of a fallen abbey – the ruins of which can still be seen in our cellar today. It was christened Mariënwaerdt: Maria’s ‘waard’, or island. The area was, in fact, the only portion that wasn’t regularly flooded by the Linge river.

Maintaining the estate with care Remarkably, the estate has remained entirely intact since the seventeenth century. When Nathalie married Baron Frans Van Verschuer twenty-five years ago, they were looking for ways to pass on the estate to the tenth generation. No easy task, as maintaining a thousand hectares of land involves enormous expenses. Nathalie explains that “the estate primarily served as an agricultural company. My husband added dairy cattle to the mix, and we decided to launch the annual estate fair and open a pancake restaurant. A Bed & Breakfast and two holiday homes followed – one in the former gamekeeper’s cottage and a holiday rental in the old farmhouse – and five event locations were added.
“We proudly retail Bunzlau Castle in our shops. We’ve done so for nearly twenty years now. The brand aligns perfectly with the estate’s image. High-quality tableware to be enjoyed for generations and delightfully colorful; we’re not ones to embrace sleek, grey interior design. Our target market also adores the brand. My personal favorite is the Bunzlau Castle teapot, you won’t

We also developed a line of organic gourmet food items that we retail with other organic treats and the unique Bunzlau Castle tableware in our estate shop. In 2019, we also opened our shop / lunchroom, the Landgoedkeuken, in Utrecht.” The noble couple upholds an equal distribution of activities; “Frans leads the farm team and takes care of management, finances and personnel. I am in charge of the fun stuff, haha. I spend my time on product development, event ideas, marketing and communication.”

Living and working on the estate Before moving into the main residence, the family resided in a different house on the estate. “We lived quite privately. Now that we live in the main house, we have a steady flow of visitors. The personnel manager stops by for a meeting, the carpenter wants to discuss plans, tour groups are interested in visiting the abbey ruins in the cellar, etc. This took some getting used to.” On our question, whether there are things in the house that aren’t exactly her favorite but that have too much historical value to get rid of, Nathalie laughed. “So many! My husband grew up in this house and is quite attached to everything. When we first moved in, I had a few conditions: a new kitchen and a new bathroom. We now live in a wonderful home. The kitchen is an especially fine space, and it’s where we spend most of our time. You’ll almost always find the children here. ‘Go study in your room where it’s quieter,’ I often hear myself saying, but no, they’d rather hang out at the kitchen table.”
“Our biggest challenge is taking care of everything that really needs to be done. You become a jack of all trades. I enjoy getting things done myself, but after starting one project, something else comes along and demands your attention. You can’t focus solely on the shop. Or only in restaurants. Or the events. In all these activities, I’m supported by a great team of professionals who, in turn, also require attention and coaching. How do I then ensure that the house stays presentable and the groceries are done? Not to forget the spontaneous visits. Our college-age son recently popped in unexpectedly for dinner with seven friends. No problem, I simply search the pantry and get creative. Just one of the many things that demand attention on any given day. On these occasions, having your own shop, pancake restaurant and a garden full of lettuce are a godsend!”

Life as a baroness “The strange thing about being a baroness is that you suddenly become interesting to others. It isn’t an achievement; all I did was marry Frans. All the same, it’s why I now receive requests for interviews and television appearances. Journalist and TV presenter Jort Kelder was here, and we were also on talk show De Wereld Draait Door with our staff for a ‘Downton Abbey in the Betuwe’ feature. I found that very intimidating, especially as it was live. I go regardless, though, as I want to overcome my fear. In hindsight, I was sorry I didn't say more. There is so much momentum in such a program though that it is difficult to interject with a comment”. “Other than that, I don't experience many significant aspects of being a baroness. My mother-in-law truly embraced that role. We're of a different generation, and we aren’t addressed formally, for example.” Nathalie is silent for a moment and adds, “although I, too, have a role to fulfill. A friend said that to me recently, and he’s right. I need to embrace it. I am the lady of the house, and I serve a certain position. After all, you are the face of the estate, and that means that you feel a sense of responsibility and are highly involved. You can’t simply withdraw from things without reason.”

Sustainable future With an estate that has over three hundred years of history, it's easy to hide behind the 'that's how we've always done it’ excuse. But not the Van Verschuer family: in 1999, they were among the first large companies in the Netherlands to shift to organic farming. Nathalie adds, “you can only keep things running if you don't harm nature. In other words, no harmful chemicals and careful soil management. Another advantage of organically grown crops and fruit is the significant health benefit”. "It is our dream to hand over a company to our children that forms a sound foundation for preserving our unique heritage – a raft upon which the estate can float. Personally, I would like to expand to ten shops with our organic products. Frans would like to enrich the estate with a hotel to receive even more guests. We've always said that we don't want to keep this beautiful place to ourselves. We love to share it: come and enjoy."

Ingredients serves 8 - 10 100 g gingerbread biscuits 50 g butter 500 g mascarpone 325 g MariĂŤnwaerdt lemon curd Juice of 1 small lemon Raspberries and blueberries, to garnish Icing sugar, to garnish
Heavenly lemon curd cheesecake with gingerbread crust Lemon curd is one of our favorite estate treats. This sweet crème prepared with eggs, sugar and lemon is delicious on a slice of cake or toast, but you can also incorporate it into a range of pastries. Lemon curd cheesecake is divine and surprisingly easy to make.
Preparation Cover the side of a 28 cm diameter springform pan with baking paper. Finely crush the gingerbread biscuits. Melt the butter in a saucepan and stir in the biscuits. Divide the butter-biscuit mixture over the bottom of the pan. Press evenly with the rounded side of a moist spoon. In a bowl, combine the mascarpone with the lemon curd and lemon juice until smooth. Spread the mascarpone mixture over the biscuit crust; smooth the top with the rounded side of a damp spoon or spatula. Leave to set in the refrigerator for at least 4 hours. Remove the edge of the springform pan. Place the cheesecake on a beautiful dish. Decorate with the fruit and sprinkle with icing sugar.

Tip You can prepare the crust of this cheesecake a day in advance. Cover with plastic wrap and store in the fridge.

Herb and cheese breadsticks Preparation 1. Preheat the oven to 180째C (350째F). 2. Brush the pastry dough with a whisked egg. 3. Combine the old cheese with the Italian herbs and a pinch of pepper. Sprinkle evenly over the sheet of pastry and ensure that all areas are covered. 4. Slice into strips of approximately 2 cm with a sharp knife. 5. Twist the strips of pastry twice and place carefully into the baking sheet lined with baking paper. 6. Place them in the middle of the oven. 7. Bake at 180째C (350째F) for approximately 10 minutes. 8. The breadsticks are done when golden brown and crispy.

Salads Salads are light and fresh and provide a welcome dose of veggies. Colorful pasta salads are always a winner, but nothing beats a rich potato salad. Perfect as snak to pass the time as the grill heats up!
Homemade sauce No barbecue is complete without delicious sauces. Add the finishing touch to your perfectly grilled steak or drizzle over crisp grilled vegetables. Don’t be afraid to whip up your own sauce, it’s much easier than you’d think. Take a look at this healthy example! Hummus 400 g chickpeas, 1 clove of garlic, 1 tbsp tahini, dash of lemon juice, olive oil, pinch of cumin, salt and pepper. Combine the ingredients in a bowl and blend with an immersion blender until the hummus is creamy. Add salt and pepper to taste and a dash of lemon juice if needed. 32
Meat or veggies? We are so used to featuring meat at a barbecue, but did you know that grilled vegetables are also delicious? Give veggie shish kababs a try, for example, with bell pepper, onion, corn and zucchini. Wonderful with a drizzle of olive oil and garlic.

Our Bunzlau Castle Kitchen Textiles
Did you know that our tea and kitchen towels are made in Portugal? In Mozambique, our manufacturer operates its own plantation, where the cotton used originates. When the cotton arrives in bales at the factory, it is ready to be spun on huge spools. At this stage, the cotton still has its natural look. After mechanical spinning, the coloring process of the yarn begins, and the large spools are placed in a special closed dyeing machine. When developing the colors, the three basic colors are used to obtain the desired shade. The yarn for all our textiles is fully dyed through in this manner; this is known as yarn-dyed. Drying also takes place in the same machine. Depending on the color intensity, this drying process can take up to five to twelve hours for optimal results.

The nice thing about the yarn-dyed method is that the most beautiful patterns - designed by us - can be woven into the cloths. To produce our orders, the factory uses the raw, uncolored cotton in stock. They dye it, adjust the weaving machines and weave it. This takes about three weeks. Now for the final state, which consists of finishing the textiles; the trimming and sewing of the four sides. Finally, our Bunzlau Castle brand label is placed by hand along the top seam. A piece of handmade love! With our Bunzlau Castle textile, you can wash the dishes in style. Drying your hands becomes a pleasure with the true 'because this is home' feeling!
