Cynthia M. Ellis I am never so happy as when March arrives and we get to celebrate the first day of spring. For me it’s officially a time I can kick off my boots and once again start wearing open-toed shoes. Don’t get me wrong, I love when fall arrives and I can wear boots. But I am glad for the day I can put them away. I am always happy with the change of seasons. Especially when it comes to fashion. I don’t know if I would be as happy living somewhere without it. (Granted, living on a beach somewhere always sounds nice when it’s 10 degrees outside.) When it comes to fashion I can sometimes be a rule breaker — I mean, I do wear white (especially jeans with a sweater) in the winter. However, my footwear is closed-toe once the first day of fall arrives, at least during the daytime. Of course, open-toed heels can be worn when dressing up for a hot date or a girls night out on the town. For the most part, though, I stick with fabrics and colors that don’t shout out warm weather or the tropics. I know the first day of spring may not always be the warm weather we anticipate, but at least I can put on a pair of pumps without wearing any tights. I can also wear the latest looks and styles. This month, check out what spring trends are making the mark. The Basic Beauty article showcases it all and makes you want to try the latest looks. Style Sense will also get you to “pencil” in a look that can be worn three ways. As always, this issue is packed full of great features and introduces you to some fabulous women in the community, including Dr. Valinda Allen, who serves as the medical director at Alton Memorial Hospital Center for Wound and Hyberbaric Medicine. One of the things I like best about my job as editor and senior writer of flaire is I get to meet so many fascinating women in the community and showcase their stories. wo years ago, Regina Huff injured her leg while shoveling snow. She pulled a hamstring, her hip began to hurt, and it affected her sciatic nerve, causing even more discomfort. “I was overweight, and I knew that wasn’t helping my leg get any better,” said Regina, or “Regie,” as her friends call her. She had been up and down in weight for a number of years; she had even lost significant

amounts with a strict lowcarbohydrate diet, but ended up gaining it back. But this time was different. While she did — and still does — try to stay away from too many carbs, it’s not the main or only focus of her weight control. “Now I ‘graze’ during the day rather than eating big meals,” she said. She has lost 110 pounds and went from a size 22 to an eight. “I even have a dress or two

that are size six,” Regie said. “But when I go shopping, I still pick up the larger sizes and then realize they are too big when I try them on. “It takes a while to see yourself differently,” she said. “It’s only when I see a picture of myself that I think, ‘I really am small.’” Her leg is much better; her blood pressure is down, her feet and ankles no longer swell, and her knees, back, and even her

head do not hurt like they did when she was carrying the extra pounds. Fitness is a permanent part of her routine, incorporating swim aerobics, or running and walking into her daily schedule. “I can run as much as four miles before I have to walk,” she said. “I started out just walking, and I slowly built up from there.” As far as Regie is concerned, maintaining her weight doesn’t mean you can’t eat good food, and it doesn’t mean she can’t continue to experiment in the kitchen. She grew up one of seven children, watching her mother cook. “Then I would make up my own dishes,” she said. “I was usually pretty creative, and my siblings would laugh at me, but if Mom liked it, that was all that mattered to me.” One of her favorites to experiment with and add other ingredients and cheeses was (and still is) macaroni and cheese. After she married, Regie put a hot meal on the table every night, because she thought that’s what she was supposed to do. Now she cooks simply because she enjoys it. She prepares healthy dishes much of the time, but is not opposed to making favorites like fried chicken or homemade rolls on occasion. “Or I will just eat a smaller amount,” Regie said. And she still comes up with a variety of new recipes and flavors through experimentation. The last time she made fried chicken, she added Ranch flavoring to the marinade, and

Italian bread crumbs 2 c. powdered Parmesan cheese 1/2 tsp. sea salt 2 tbsp. garlic powder 2 tbsp. black pepper 1/2 stick of butter 1 tbsp. basil flakes Preheat oven to 400 degrees Fahrenheit. Melt butter, then pour over chicken breasts. Mix all dry ingredients in bowl or bag. Put chicken in dry mixture and shake or mix to cover completely. Use olive oil to grease glassware or cookie sheet. Bake uncovered for one hour. NOTE: Chicken breasts can be substituted with Tilapia.

Stir Fried Green Beans

1 lb. of fresh green beans 1 can chicken broth 1 tbsp. garlic powder 2-1/2 tbsp. olive oil 4 to 5 green onions 1 tbsp. crushed garlic 2 tbsp. black pepper (1 for marinade, 1 while cooking) 1 tbsp. sea salt 1/2 c. Almond Accents Remove ends from green beans; marinate overnight in chicken broth, one tablespoon of black pepper and the garlic powder. Drain before cooking. In cast iron skillet or wok, put olive oil, green onions, garlic, one tablespoon black pepper and sea salt. Cook while stirring for 20 minutes. Add drained green beans. Stir fry on medium high for 40 minutes. Add Almond Accents while cooking.

Every other week, she and coworkers get together for a themed potluck dinner, which Regie said gives them all an opportunity to try new types of food. She gets recipe idea and shares some of her own on the Facebook page, Sistaz in the Kitchen. She likes to dance, go out to dinner with friends, and attend church. “I’m a real people person,” she said. In recent years, she has become a “cruiser,” recently going on her 11th cruise, and the second one she took with her grandson. “I go every winter, and I love every minute of it — and so does Charles,” she said. Even on the cruise ship, Regie is an early riser and gets her walk in early before most people are out of bed. “I like the entertainment, the ocean, visiting islands, the brunch, and I never miss the formal dinner,” she said.

said it was the best fried chicken she and her 13-year-old grandson, Charles, had ever tasted. Most days she incorporates vegetables and lean meats (mostly fish and chicken) into her meals, using a lot of sweet potatoes, very little butter, and eats no red meat. Parmesan chicken is one of her favorite dishes, and chicken salad or tuna salad wrapped in lettuce instead of bread helps keep carbs down. During the holiday season, her sweet potato pie, pineapple upside down cake and caramel cake are in high demand, and she sells as many as she can produce. She even makes her own vanilla using vanilla beans and White Bacardi rum. “I get so much pleasure from cooking for others,” Regie said. She has worked at Saint Anthony’s Health Center for 22 years — currently in security, and for a time in hospitality.

St. Patrick’s Day is an ideal time to embrace Irish culture, and revelers can celebrate in various ways.

his March celebrants will participate in parties, parades, festivals, and commemorations the world over. Young and old, those of Irish background and people who are Irish for the day will celebrate the life of St. Patrick. Food, fun and drink are customary components of the festivities. And a growing number of people desire a St. Patrick’s Day with more emphasis on culture and fun and less on celebrations that tend to be dominated by alcohol consumption. Anyone can embrace the spirit of St. Patrick’s Day without getting carried away by spirits. Certain organizations have sprung up across the country emphasizing the true focus of St. Patrick’s Day in an attempt to break away from alcohol-based celebrations. In 2014, Northeast Ohioans joined other groups in cities like New York City, Cleveland, Casper, Wyoming and Belfast, Ireland, promoting Sober St. Patrick’s Day®. In 2015, Philadelphia joins the fray with events centered on culture and enjoyment. While the idea is not to dry out the holiday entirely, supporters say it is to “provide an option for people who don’t want to be around binge drinking.” There are plenty of ways to make St. Patrick’s Day festivities lively no matter how you celebrate. • Enjoy Irish music. Few things convey the spirit of a holiday or a celebration more than music. St. Patrick’s Day can be celebrated in the company of talented Irish musicians. Whether you prefer classic ditties or modern and alternative Irish bands, there’s an abundance of talent at your disposal. If you prefer live music,

contact your local Ancient Order of Hibernians to learn about nearby musicians. • Take Irish dance lessons. Traditional Irish dance has been lauded for centuries. Many people still feel a connection to Irish heritage through dance. The Feis, or an Irish dance competition, is a popular showcase of dance talent from across the globe. It’s never too late to try your hand at Irish dance and show off your skills on St. Patrick’s Day. • Participate in a Sober St. Patrick’s Day® event. The organizers are always looking for new locations to hold their celebrations. Healthy, fun and safe activities are offered to all who participate. • Dine out at an Irish restaurant. There are plenty of other delicious dishes to enjoy, from lamb stew to colcannon to Dublin coddle. Otherwise, pick up the ingredients and treat guests to an authentic meal from the comfort of home. • Watch a Uillean bagpipe show. The playing of bagpipes is a tradition in many areas of Celtic origin. Historically, bagpipes were played outdoors at community dance festivals. Bagpiping remains a popular hobby, and bagpipers are passionate about their craft and may be ready and willing to treat an audience to a few tunes. St. Patrick’s Day is an ideal time to embrace Irish culture, and revelers can celebrate in various ways.

Doctor does more than therapy, she touches lives Hard work, dedication, compassion and passion — these are words used to describe Dr. Valinda Allen, not only in her professional life, but her personal life as well. As the medical director for Alton Memorial Hospital Center for Wound and Hyberbaric Medicine, Valinda receives plenty of praise from her patients. She doesn’t just treat her patients, she actually takes the time to get to know them. In doing so, she also allows them to get to know her. One would think there would be little room for anything outside of work. But Dr. Allen has managed a successful career as well as maintain plenty of interests outside the office.

Valinda grew up in St. Louis where she attended the Mary Institute and St. Louis Country Day School on scholarship program that was instituted to attract more city students. After graduating high school she received a scholarship to attend Washington University, where she graduated a semester early with a degree in biology. “I spent a half-year working in the physiology lab at St. Louis University School of Medicine, and the experience taught me that research was not for me,” she said. Valinda said she had been an optimistic adolescent and was moved by the plight of the poor and downtrodden. “In part, this is what motivated me to


become a physician,” she said. Valinda attended medical school at Howard University in Washington, D.C., and began taking in a general surgery residency at Washington Hospital Center. After leaving the program she began practicing emergency medicine. After many years of pulling shifts in the ER in Virgina, Missouri and Illinois, she realized the work no longer fulfilled her. The doctor landed in the emergency room at Alton Memorial in 2007. She worked at the hospital for two years before learning about the Wound Center and switching over. “I gravitated to wound care because it offered the opportunity to get to know my patients, and to understand the science (of medicine/wound healing) better,” she said. Valinda said her grandmother had venous leg ulcers at times and there was a significant lack of knowledge about wounds. She said it challenges her and she must look for answers as to why a wound may fail and find a way to remedy it, she said. “The mission is to take care of chronic wounds,” she said. “I am rewards by seeing

the progress of my patients week after week and the appreciation they show me.” On the bookshelf in her office sits a succulent garden. Gardening is something that brings pleasure to Valinda. “There is great satisfaction in seeing the green grass neatly trimmed, the beautiful flowering trees and shrubs and seeing how things change over time,” Valinda said. She said she doesn’t pretend — there have been a few failures with her plants. “I’ve tried both indoor and out, but that is part of the challenge of working with living things,” she said. She said one of her patients decided to adopt her, and for the holidays she sent her a check to buy lilies and plant them in her garden as a remembrance of her. “When spring comes I plan to do just that,” she said. “She was a woman with a beautiful spirit.” Gardening isn’t the only activity Valinda enjoys. She also takes pleasure in making jewelry — of which she has sold a few pieces — as well as cooking, traveling, decorating and collecting art. “Art is one of my passions,” she said. “I do not own a Picasso, Warhol or Chagall.

I buy art that tells a story, is whimsical or just pretty.” On the wall of her office is a framed pair of giraffes that a patient gave her. “It was drawn by her husband, whom she dearly loved and misses,” she said. “It was something she cherished and I display it with pride and gratitude in honor of our friendship.” Valinda spends much of her “off” time with her boyfriend, Guy, with whom she lives. Guy ,who works as a carpenter, shares Valinda’s love of art and design, all things Halloween, and their three dogs: Bridget, a miniature pincher; Kirby, a French bulldog; and Fiona, a rescued Shih Tzu/Bichon Frise mix. “He recrafts old furniture, designs ‘objet d’art’ and is a woodturner,” she said. “There really isn’t anything he cannot do, which makes him a keeper.”

Testing for Colorectal Cancer As a gastroenterologist, I am accustomed to the numerous excuses for not getting a colonoscopy. Typically, my patients seem anxious about the embarrassment or perceived pain or discomfort that they associate with the procedure. And they may think they are at low risk because they have had no symptoms. This mindset has made colorectal cancer the second leading cause of cancer deaths. And the sad part, screening is Mark Klucka, D.O. particularly effective at detecting the cancer at Contributing an early treatable stage — Columnist even preventing it in some cases. Most medical groups recommend screening starting at age 50 for anyone with an average risk of colorectal cancer. Persons with inflammatory bowel disease, a family history and/or African-American may need to start screening at an earlier age and have screening more frequently. There is really no excuse for not being screened since some options, other than a colonoscopy, are simple, easy, inexpensive, non-invasive and cause neither pain nor discomfort. FECAL OCCULT BLOOD TESTING (FOBT) is one of those simple options. It requires only a kit that you use in the privacy of your bathroom. You smear a small amount of stool, from three consecutive bowel movements, on appropriate squares of a test sheet and then mail in the kit for laboratory testing. It’s all very private. Some foods and drugs can affect results so you may have to make minor changes in your diet, such as avoiding red meat, right before the test. The idea is to see if there are small amounts of blood hidden in the stool. Precancerous polyps and cancerous growths have a tendency to bleed but usually not enough to make your bowel movement noticeably bloody. FIT, or fecal immunochemical test, is now recognized as a good alternative test to detect occult blood in the stool. This test reacts to part of the human hemoglobin protein that is found in red blood cells. The process of collecting the samples is

similar to that for FOBT, but there are no drug or dietary restrictions ahead of time. If results show hidden blood, a follow up colonoscopy must be performed for diagnosis and treatment. COLONOSCOPY is widely recommended as one of the most effective screening tests. It reduces colorectal cancer deaths by 60 to 70 percent, according to studies. And colonoscopies have the advantage of being able to remove any abnormalities that are found during the same procedure. When test results are negative, colonoscopy may be needed only once every 10 years for a person at average risk. A flexible lighted tube, or scope, is inserted through the anus into the rectum and threaded through the entire length of the colon so the doctor can examine it through images displayed on a monitor. Air is pumped into the colon to expand it and make viewing easier. Since the patient is given either general anesthesia or sedation, the whole procedure is not as uncomfortable as the description suggests. Many patients, nevertheless, are apprehensive about the procedure. Even more disagreeable, to some patients, is the need to clear the bowels in preparation. You need to quit eating solid foods a day ahead, and then take a substance that triggers a powerful bowelclearing diarrhea. SIGMOIDOSCOPY is a similar test, with similar effectiveness, using the scope to examine only the lower or sigmoid part of the colon. Bowel preparation, while still necessary, is less extensive since only part of the colon is involved. As a mixed blessing, sigmoidoscopy requires little if any anesthesia. There is some discomfort with the sensation of the tube traveling through your bowels. As a result, some persons are not comfortable having the procedure. And it’s usually recommended every five rather than every 10 years. When an abnormality is found, colonoscopy must be performed to remove it. With either procedure, there is a slight risk that the scope will tear or damage the lining of the colon. The above three screening tests are recommended by the U.S. Preventive Services Task Force and other groups: FBOT

or FIT plus either colonoscopy or sigmoidoscopy. Many medical facilities today have moved toward using colonoscopy as the default test. DOUBLE CONTRAST BARIUM ENEMA (also known as a lower GI series) was widely used between 1985 and 1992 but, like sigmoidoscopy, has been replaced by colonoscopy in many areas. As with colonoscopy and sigmoidoscopy, the bowels must be empty and clean, requiring a restricted diet for a couple of days and laxatives and/or enemas in the hours leading up to the procedure. Usually without anesthesia, a small, flexible tube is inserted through the rectum. Barium sulfate, then air is pumped into the colon so that x-ray images can be produced. At least in part to make screening more acceptable, other options have emerged in the past few years. STOOL DNA TEST: It tests for blood in the stool and also looks for DNA mutations that characterize colorectal cancer cells. With the stool DNA test, there is no risk of damage to the colon and no dietary restrictions or bowel preparation. The stool sampling can be done at home. And the test has been found to be sensitive enough to detect most, though not all, polyps and cancers. The high sensitivity can also be a liability, however, since it produces many false positive results, nearly all of which require a colonoscopy. So if you choose the stool DNA test to avoid colonoscopy, you may end up having one anyway. Like colonoscopy and sigmoidoscopy, the stool DNA test is believed to be effective for preventing as well as detecting cancer since it can detect the DNA mutations that suggest precancerous polyps. Colonoscopy, though, is still the bottom line for ruling out false positives and for treating polyps and cancer when they are detected. When it comes to preventing, detecting and treating colorectal cancer, no excuses are acceptable. ‘A League of Their Own’ cast membaers reminisce together

As Cardinals season approaches, fans get nostalgic for their favorites from the baseball diamond of yesteryear by watching their favorite hardball movies. There are many classic national pastime flicks, but only one that celebrated the All-American Girls Professional Baseball League from 1943-54, magically captured by director, Penny Marshall, in “A League of Their Own.” I caught up with some of the “League” cast members at a recent reunion and chatted with Rockford Peaches Patti Pelton (Marbleann Wilkenson, Second Base), Anne Ramsay (Helen Haley, First Base) and Bitty Schram (Evelyn Gardner, Right Field). You likely remember Bitty’s character, the mother of “Stillwell Angel,” whose scene with Tom Hanks will forever be immortalized by one line.

Corey: Flashing back to the training on the field, how intense was that?

Anne Ramsay: It was awesome. I broke my nose. The first day we switched from our modern-day gloves to the historical mitts that were from the ’40s, it was a bit of a learning curve. I was used to my mitt from the ’90s. I was too hasty. It went right up into my nose. Penny said, “Don’t worry, by the first day of filming, if your nose isn’t better, we’ll write it into the script.” I’m an athlete; so I loved

getting up and training every day for this film. I love women and women’s causes and celebrating and championing women. It was a dream come true.

Q

Corey: Did you save any memorabilia from the shoot?

Patti Pelton: We have the complete uniforms and our shoes. Madonna gave us some silky underwear that said “Peaches” on it. I never wore them, but I still have them. Bitty: I wear them for pajamas, actually, just around the house sometimes.

Q

Corey: How much of the league song do you remember?

Patti: I know the whole thing because I sing all the time with the old ladies when I see them at their reunions.

Q

Corey: What’s it like getting together with the original players?

Patti: We see each other once a month. We all went our separate ways, and then we found each other again… They love us like we’re their kids. Penny did so much for them, opened that whole world. They hid it from their families, some of them. Some of them told their sons, “I played baseball,” and they didn’t believe them.

Q

Corey: You really get the sense in the movie that these women really like each other. They’re really a team.

Anne: Totally. The feeling we were trying to emulate was what we felt after

meeting the women in the real league. It’s like life imitating art. It’s beautiful. I can never sufficiently explain what the movie did for all of us.

Q

Corey: When you get the opportunity to see several people from the cast like this, do the memories come flooding back?

Anne: Yeah, it’s always heartwarming. We don’t see each other but maybe five times a year, but when we do, it’s like we have not skipped a beat. We’re like family. Not many can say they had this experience together.

Q

Corey: What do you think is the legacy of the film?

Bitty: I don’t think they make movies like this anymore. I think people are hungry for feel-good films. Penny had a run there of some really good films, “Awakenings.” I think the casting and the chemistry of everybody is something that you can’t predict; so when it happens, it’s like the stars aligning. Anne: Keep going forward and don’t accept no for an answer. Anything is possible if you put your mind to it and you work hard. Follow your dreams. Patti: I think the legacy is the ladies. We were just actors coming into this. They are the legacy. I think all the girls who now want to play baseball, who come up to us, we always point to the ladies and say, this is the real deal here. I think it’s encouraged girls to go beyond their potential. You can do what you dream.

While St. Patrick’s Day may now be most quickly associated with parades and green beer, for many celebrants the day also marks a chance to indulge in Ireland’s native cuisine. When asked to think of Irish cuisine, many people might immediately think of corned beef and cabbage or even the versatile potato. But the Emerald Isle is rich in culinary history, and some might be surprised to learn Irish cuisine is about more than just the staples served on St. Patrick’s Day. For those who want to try their hand at something new this year, consider the following recipe for “CiderBraised Chicken and Cabbage” from Margaret M. Johnson’s “The Irish Pub Cookbook” (Chronicle Books).


Cider-Braised Chicken and Cabbage Serves 6

1. Preheat the oven to 325 F. Combine the flour, salt and pepper in a shallow 1⁄3 cup all-purpose flour bowl and dredge the chicken in it, 6 5- to 6-ounce bone-in chicken shaking off the excess. breast halves, skin on 2. GODFREY — The Commons on the campus of Lewis and Clark Community College was filled Sunday, January 25, afternoon as the college welcomed The Telegraph for its 8th Annual Bridal Show. The show brought together various area vendors as well as Frew’s Bridal to put all of the wedding necessities under one roof. “Everything that a bride would need is in one room, from the dress to the caterers,” event coordinator Kimberly Rice said. The sold-out show hosted 50 vendors, including Aerie’s Winery, Patty Cakes, Julia’s Banquet Center, Graveman Photography and others. The event drew so much vendor interest, in fact, that some vendors were put on a waiting list due to space concerns in The Commons.

Separating the truth from legend Few saints are as well-known and widely celebrated as St. Patrick. Known as the patron saint of Ireland, St. Patrick annually inspires people from around the world to pay homage to his legend, which includes bringing Christianity to Ireland. Revelers don green clothing, participate in parades and decorate with shamrocks and symbols of Irish folklore. Much of what is known about St. Patrick is shrouded in mystery and legend. Patrick has been credited with many miracles, including converting an entire country to Christianity from paganism, and also participated in many spiritual resurrections. While neither Patrick’s birth nor death dates are known with certainty, it is believed he was born in 373 A.D. in an area of Roman Britain, which is now Scotland. Patrick was not Irish, but a British Celt. Young Patrick was careless and not as spiritual as he eventually became. At 16, Patrick was captured by a band of pirates and was sold to a chieftain in an area of Northern Ireland. His labor included tending flocks of sheep. It was during his time of captivity that Patrick found God and decided to devote his life to professing the faith and grace of Christ. He acquired the Irish dialect of the Celtic language in captivity, which would prove essential in his future work. After six years of captivity, Patrick escaped and returned to his homeland, where he immersed himself in the scriptures and fully committed to Celtic Christianity, not the Roman Catholicism that became dominant throughout the Roman Empire. He spent years studying and preparing for life as a missionary. Through historical documents written in his own hand, Patrick says he was “called to be a servant in Christ to a foreign land.” He began evangelizing, but it wasn’t until around his 30th birthday

in 405 A.D. that Patrick set out for Ireland. Patrick established schools and monasteries in Ireland because he believed education and faith were closely entwined. He taught many people, including his most famous student, Columba. While St. Patrick is credited with many miracles, such as driving snakes out of Ireland, some historians believe these tall tales were just metaphors for pushing out paganism. Other miracles included feeding starving sailors with a herd of pigs that appeared when the sailors had faith in God. Some legends even suggest St. Patrick brought animals and people back to life. Many also associate St. Patrick with the shamrock. By using a three-leaf clover, St. Patrick was able to convey the concept of the Holy Trinity to a land of people familiar with the shamrock symbol. The supposed day of St. Patrick’s death, March 17th, was officially recognized as St. Patrick’s Day. In reality, St. Patrick was never officially canonized a saint by the Catholic Church and received the title in name only. At the time of his death, there was no official process for canonization, but Patrick was given the title by popular acclaim and likely with the approval of a bishop. St. Patrick is widely acclaimed and celebrated throughout the world, and his life is even more interesting than many of the legends associated with his name.

Although not everyone with copper tresses can trace their lineage to the Emerald Isle, a deeper look at genealogy may, in fact, point out Irish origins somewhere along the way. According to Eupedia, a website that investigates European ancestry and genetics, Ireland has the highest per capita percentage of redheads in the world. The rates hover anywhere from 10 to 30 percent. In order to have red hair, a person must possess the MC1R gene, which is recessive and only occurs in about 2 percent of the world’s population, says the National Institutes of Health. Both parents must pass on a copy of the gene in order for their offspring to be born with red hair. Red hair also tends to skip generations, so if you are a redhead, your children may not be born with red hair, but your grandchildren may. The rarest combination is a person with red hair and blue eyes, which also are a recessive trait. Other cultures that historically have red hair are Scandinavian nations, like Norway. It is believed that since ancient Vikings took Irish slaves to Norway centuries ago, their genetics intermingled. Keep in mind that redheads should stay out of the sun. Research says the pigment that gives hair the red color can make redheads more susceptible to melanoma than even fair-skinned blonds.
