outdoor barbecues makes them simple to throw together at a moment’s notice, but sometimes, it’s nice to add an extra touch of ambiance to transform a summer luncheon, or dinner, into an even more special event. As it turns out, creating a

dazzling outdoor table doesn’t need to be laborious or expensive. Just take a few cues from PBS chef and national television personality Christy Rost, who owns a historical home in Breckenridge, and loves using her creativity to design unique table settings — and atmospheres.

Start in the center Effective centerpieces for outdoor mountain gatherings tend to mirror nature, so rather than spending large sums of money on one tall, enormous flower arrangement, Rost recommends dotting a table with multiple small bouquets, which can

range from wildflowers, twigs, pinecones, evergreens and leaves, to roses and baby’s breath. “One reason I like these are because they are easier to do and less expensive than big arrangements,” Rost says. “It allows you to incorporate the natural setting, and it spreads

the festivities down the table.” The casual atmosphere of outdoor parties allows hosts to be more inventive with their floral containers; as opposed to crystal vases fit for dining rooms, the variety of the natural setting accommodates everything from crystal to mason jars, mugs, saved bottles from barbecue sauces and jams, metal containers and planting pots. Working out, to the periphery Rost uses everything from storebought table runners to remnants of fabrics to fashion cheerful center runners. For summer, she prefers woven fabrics with texture. “Visually, it pops on the table,” she says. She always decorates around a theme, be it seasonal or specific colors or shapes. In summer, she likes to blend bold reds with bright yellows, or hot pinks with mint greens. 24

“You have the freedom to be more creative with colors when you’re outdoors because you’ve got the huge background of the outdoors,” she says. She also layers her tables with different shapes and colors through placemats, plates, glassware and napkins. “The more you layer, the more interesting the table is,” she says. “It just kind of makes your eyes dance.” Rost often blends round plates with square placemats, the latter of which she likes to change up by setting on a diagonal. Bringing it together Rost devises plenty of ways to tie together a table, or a grouping of tables, which incorporate a variety of elements. Within her variation of color or shape or size, she always maintains her central theme. She may use

When she doesn’t own enough matching plates for a large outdoor party, she pairs dishes by shape or pattern across the table, so people sitting opposite one another eat from matching plates, and guests sitting next to each other enjoy alternate patterns. Since many people don’t have enough matching chairs when they host large gatherings, Rost suggests using unmatching chairs, then fastening a matching ribbon, or cluster of greenery, around each one. Another common issue involves a lack of matching tablecloths. The solution: Use similar colors and then place matching vases of flowers on the tables, and voilà: The problem “just disappears,” Rost says. “Sometimes people are afraid to use things because it doesn’t all match, but I always say it doesn’t matter. Just put together what you have and enjoy it,” she says. “One likes to have the perfect table, but sometimes the perfect table is not the most fun table.” Hosts can incorporate elegant china onto outdoor tables for a more formal al fresco look, but they can also tone down the formal feel by adding casual touches, like a metal salad plate in the center of the china plate, more casual chargers, woven napkins or clay pots that hold wildflowers. Light it up Rost comes up with a plethora of ways to extend her warm hospitality beyond the table, and one is through outdoor lighting. She uses everything from metal to wood and glass lanterns — in all shapes, sizes and colors. She also likes to string clear bulbs or

wired jars, which hold candles, through nearby trees in a draped effect (as opposed to a Christmastree effect). “It adds a different kind of ambiance to the event and keeps it casual, kind of like being on a farm,” she says, explaining how she likes guests to linger after dinner, and lighting encourages them to do so. To welcome guests, she hangs lanterns on shepherd’s hooks or lines the driveway or entrance with mason jars filled with lit candles. “It’s extremely casual, but boy, do you light it up, and it just looks like a million bucks,” she says. There is a season … Though Rost isn’t afraid to mix and match plenty of sizes, shapes and colors, she refrains from over-decorating a table. “You never want to show all the tricks up your sleeve at one time. You should edit,” she says. “(Ask yourself): What is the ultimate goal? Color? Squares with rounds? Focusing on place settings or centerpieces? “It should reflect what’s going on with nature, and nature never has too much going on at once; it has seasons (in which it showcases wildflowers, golden aspens, and so on).” And just as nature highlights its décor through the shimmering green of aspen leaves; the wide, white petals of the Mariposa lily; the purple spikes of the fireweed; the tiny elkslips; the long, thin blades of grasses; and the rough bark of lodgepole pines, there are so many ways to showcase different textures, colors and shapes in outdoor table accents. All it takes is a little willingness to stretch beyond typical barbecue mentality, into the wonderful world of creative possibility.

TAKE IT OUTSIDE Make outdoor living an adventure with outdoor media

I

1928 Kodak projector mounted to a car in New Jersey. Since then, the romance of watching movies under the stars has persisted, first in the form of drive-ins, and now in a more personalized, and much higher quality, format: outdoor televisions. But you don’t have to go “all the way” to enjoy outdoor media; you can start by streaming music outside, and later upgrade to a more inclusive system, complete with a television or a screen and

projector. Outdoor media ranges from simple, exterior-rated stereo speakers, which pump sound into a garden, pool or patio area, to full-blown home theaters, complete with 210-inch televisions that pop out from the ground. On sound ground The least expensive, and most popular, method of incorporating outdoor media into a garden, deck or pool area comes through sound systems. Brad Ryan, CEO of Elite Elec-

tronics in Minturn, installs outdoor speakers into nearly every home, but the level of sophistication depends upon the application. “There’s a different product for everyone,” Ryan says. Perhaps the easiest involves speakers measuring about 8 by 6 inches, which mount to exterior walls or deck overhangs. Some homeowners take it a step further and opt for custom speaker boxes, installed in stone retaining walls or ceilings, and then faux painted to match the building material.

These speakers are adequate for decks, but areas beyond decks usually require different types of freestanding speakers, since there aren’t any walls to mount speakers upon. A variety of freestanding speakers exist — everything from ones in the shape of rocks, fish, frogs and even life-size German Shepherds, to planters, from which flowers actually grow. Rock and planter speakers can blend seamlessly into an outdoor mountain garden when placed properly.

For even better quality sound, companies like Sonance offer satellite speakers with subwoofers. The subwoofers sit below ground, while the satellite speakers, which look like small spotlights fashioned to illuminate trees or other features, direct sound toward patios and gardens, so music remains contained, rather than spilling out and disturbing neighbors. Sonance Landscape Series come in three models, which provide every volume possibility, from soothing background ambiance to rocking-loud music. When purchasing speakers, important aspects to consider involve speaker size and power. “Once you go outside, you’re losing tons of sound, so you need a big speaker,” Ryan says. “Ideally, you want the biggest speaker with the most amps.” He says most people purchase 35- to 50-watt speakers, but he recommends going a little bigger, since adding a lot of amps will blow out inexpensive speakers. “An 8-inch speaker compared to a 5-inch speaker, in my opinion, is huge,” he says. “With a bigger speaker, you can put more amps on it.” 28

However, a 100+ watt will cost approximately $5,000, he says, so it’s important to evaluate the size of the backyard, in order to choose an appropriate speaker size, without going overboard. Bose produces Free Space 51 environmental speakers, which disperse sound in 360 degrees. Bose designed them to sit underground, with approximately 5 inches sticking out, and the company guarantees them to withstand severe weather. Ryan is currently installing 16 Bose speakers around a pool in Aspen, using a 2,000-watt amp to run all of them. The Aspen homeowners already have rock speakers, but they decided they needed more volume, so Ryan is camouflaging the Bose speakers among bushes and plants. From drive-in to outdoor home theater When Richard Hollingshead invested $30,000 on a New Jersey drive-in in 1933, watching movies outdoors became a summer ritual. Now, drive-ins are far and few between, while residential home theaters are beginning to spring up. One benefit of building your

personal outdoor theater includes being able to roll into bed when a movie ends, rather than drive a long way home after a double feature. But the downside is: You’ll pay more than $8 a person for a show, and possibly more than Hollingshead’s $30,000 to set up your home system. Of course, there’s always a cheap way to go; Ryan knows of people who hang a bed sheet outdoors

and buy an inexpensive projector through Amazon. “(But) to do it right is expensive,” he says. Some people drag their television outdoors to watch a game or movie, but the biggest difference between outdoor televisions and indoor televisions, besides their durability against weather, is brightness levels. “The contrast ratio is very

In addition, though LED televisions are much brighter outdoors, they are subject to heat and sunlight damage, Hoerl says. The best way to go is to purchase an outdoor television, which is also waterproof. The televisions have improved in the last eight to 10 years, Ryan says. In the past, they measured about 7 inches thick and “looked like a TV in a massive case,” he says, but now, they’re thin, like indoor televisions, and still waterproof and able to withstand extreme temperatures, from hot to cold. “If it gets cobwebs on it, you can spray it down with a hose,” he says. The televisions, like SunBrite, range from 42- to 72-inch sizes, and companies like Runco provide a 176-degree viewing angle. The world’s largest LED television, C-Seed 210, employs 725,000 LEDs to deliver ten times the brightness of a typical display.

The 201-inch screen folds out like a bird’s wings in seven panels and includes 15 speakers. The most amazing feature, though, is the fact that it’s stored in an underground cage, about 12 feet underground. Of course, the C-seed will cost a pretty penny; the television itself costs upwards of $655,000, not including installation. Homeowners also can follow the drive-in model and purchase a projector system. Outdoor screens range from 120-inchers filled with air, like a funhouse, to screens built in teak cabinets by Stewart Film Screens, the leader in screens, Ryan says. He and Hoerl also recommend purchasing a high-end projector. “The brighter, the better,” Ryan says. He estimates a good quality outdoor theater costs approximately $25,000. Whichever route you choose for an outdoor media system, “a wireless network control of anything outdoors is the way to go,” Hoerl says, adding that remote control allows homeowners to adjust volumes, channels and more from an iPad, phone or remote control. Yes, we’ve certainly come a long way since Hollingshead mounted his projector upon his car and tinny speakers mumbled out sound.

Patti Penwill and Kaili Chipman, interior designers at Home Outfitters Vail, often help people accessorize their indoor and outdoor furnishings with pillows. “Throw pillows provide softness to the clean, sharper lines we are seeing on the current mountain modern furniture styles,” says Chipman. “Just by changing the size and style of a pillow, you can change a space from traditional, to transitional or contemporary.” What once was an either/or styling choice when it came to choosing pillows for indoor and outdoor lounge areas is now a little softer around the edges. “Outdoor fabrics for a long time were very stiff and canvas-like,” Penwill explains. “Now, companies like Sunbrella are producing beautiful indoor/outdoor fabrics that have a soft hand and are more indoor friendly.” She says that in general, design is seeing more highend residential upholstery companies incorporating these solution-dyed acrylic fabrics into their furniture lines. “These fade-resistant indoor/ outdoor fabrics are great to use on pillows in rooms with high sun exposure,” says Penwill.

COLORFUL QUICK FIXES When your garden has the mid-summer blues, perk it up with some easy maintenance and fresh flowers

I

n m i d - s u m m e r , i t ’ s common to have patio pots that are a mix of thriving flowers, and foliage and some stragglers that are less than lush. Maybe you were on a trip that resulted in neglect or you have been too busy to water, mix the fertilizer and dead-head the blooms regularly. It happens. Fortunately, there are quick fixes that can get containers

looking nice for the rest of the barbecue and patio season. Here are things you can do to restore your container ambiance: • If most of the plants are dead or droopy, then pitch them and pick up a ready-to-go planter filled with annuals from the local garden center. Your total time for this task is just your drive time. • If only a few plants are scruffy, then remove them and

drop in a fresh plant in each place where one has been removed. Before you get a replacement, see if you can diagnose what went wrong. Was the waning plant a shade plant that was in too much sun? Did you plant a lower-water plant next to a thirsty one? Plants with mismatched water needs can cause one of them to fail. Once you have selected good replacements, it will probably not take

more than 5 minutes per container to replant. • If you have a container that needs all new plants, then a fast fix is a color bowl or hanging basket from the garden center. Again, your DIY time will be drive time plus how long it takes to remove the old plants and some soil from the container, and put the fresh plants in it. The makeover will be instant.

Fixing bare spots What about bare spots? If plants got unevenly spaced at planting, or just one plant needs to be removed, then there are some quick fixes that may not require more plants. Here are a few ideas: • A bare spot in the center of a container is a great place for a large candle — and even a glass hurricane around it if there’s room. Once the hurricane is in place, but before setting the candle in it, fill the inside with a layer of enough clean white sand to cover the soil. • Use obelisks to add height

and form in containers. Dried branches with unique shapes can do the same. • Other objects such as glass orbs, little sculptures, small animals or figurines made for gardens — or any artistic element that matches your style and décor — can quickly fill a bare spot. Even a little truck or tractor from the kids’ toy box can be a fun addition. With minimal time and effort, your containers will once again be dressed up for the party. Going for Bronze Many new, beautiful bronze monuments have been erected recently in Avon. The latest of these large sculptures is “Lost Tribes,” by sculptor Vala Ola. Kayce N. Newell joined forces in 2013 to launch LKW Design Associates, which opened its new studio at The Riverwalk in Edwards this spring. Both Critchlow and Newell are passionate about expanding the scope of what we all envision when we think of the quintessential mountain home. They took the opportunity to answer a few questions about their boutique design firm and its services.

Why did you choose Edwards for your storefront location and why is it ideal for LKW? jamie critchlow and kayce newell : We love the town of Edwards in general, but locating our design studio here was also a matter of increasing efficiency. Edwards’ centralized location in the Vail Valley allows us to be close to the different resort areas where we have projects. Typically, our clients ask to meet with us in their home so we may discuss and see the challenges they wish for us to address with them. This also creates the opportunity to discuss in what ways the state of their current home doesn’t fit their personal style, and the areas of the home where function needs to be improved to meet their needs. vail valley home :

What is your range of involvement in home design? Explain the scope of your projects. This is one of the aspects of LKW Design Associates that we believe sets us apart as our projects have a very wide spectrum in both style and size. We are experienced in everything from new construction, full home remodels with spatial reconfigurations to smaller, simple fixed finish updates. In addition to the construction aspects of design we are also a full-service, turn-key design firm for interior furnishings and accessories. Our most successful projects are those in which we are involved from the first to final stages of a new home or remodel. This allows the entire design/construction team to work together to most effectively achieve all of the client’s goals regarding budget, timing and aesthetics. How do you feel the “mountain design aesthetic” has changed over the years? We are inspired by the opportunity to work with clients from all

over the world and enjoy infusing our clients’ diverse personal taste into their Colorado homes. Mountain design no longer requires red and green plaid fabric and antler chandeliers; we create designs with a fresh, eclectic sense of humor while staying true to a warm and inviting mountain home aesthetic. What presents the biggest challenge in your work? One of the biggest challenges we face is related to timing. Most of the resort buildings have restrictions that require construction projects be completed during the off seasons. Another challenge presented in working in a resort community is that, typically, our clients are second-home owners, allowing us a limited number of meetings

in person to review design decisions. This has given LKW the opportunity to excel at working with clients to make all of their design decisions through digital media presentations. As designers, what vital role do you feel you play in the Edwards community? We feel that the design industry plays an important role in the Vail Valley’s resort community economics. As designers we work alongside real estate agents and construction industry businesses, which all work together to bring business to the Valley and continue to satisfy second home owners. We are also involved with the Vail Valley Partnership and community events to continue building relationships with small business owners.

It Takes a Village Retailers and residents live in well-choreographed harmony

hen residential

and hotel living meet the rigors of retail business operations, sometimes the clash isn’t pretty. Truck backup signals, trash collection and delivery trucks on their normal rounds aren’t exactly desirable attributes to those in residence. And yet vacationers and owners who opt for the ease

and convenience of in-town digs with a host of ski-in/ski-out amenities do so because they want accessibility to restaurants, shopping, spas and more. Hence, a logistical dilemma. But not in Vail. From the beginning of Vail’s development, town leaders had a plan for a successful, pedestrian-dominated resort community. “They

knew they needed to provide a residential opportunity with services and amenities, a situation that continued to draw people and could keep people in the village core,” says George Ruther, director of community development. Maintaining a flourishing residential community is the key to a prosperous town, according to Ruther.

“Mixed-use development is what contributes to Vail’s success,” says Ruther. “Having no short-term regulations for renting is one of the important things that contribute to the lifeblood of the community. The Town of Vail has said, ‘The more often people are in residential units the better off the entire town will be.’ Seventy percent of the town’s annual revenue comes

from sales tax collected during the winter season, and without that revenue you can’t sustain a resort community; lack of occupancy closes down a town.” And making sure the town continually hosts the largest number of residents and guests as possible is what produces that revenue, creates the environment that draws even more people, and what fashions the experience and ambiance that is Vail. Ruther says Vail and Aspen are the only Colorado ski resorts of which he is aware that have no short-term regulations on residential units and speaks to the success of an emphasis on a “full town” plan. As Vail Village developed, finding a balance between residents, guests and commerce became a challenge. “It boils down to balance, and respect and harmony between the needs of both components [retail and commercial],” says Suzanne Silverthorne, Public Information Officer. “And the municipality

listens and solves problems collectively…and that balance includes special events that are held in town; how many events are too many? We look at quality verses quantity. The success is all part of creating a balance.” When the town’s multi-billion dollar renovation began approximately 15 years ago, the obvious beautiful enhancements were prevalent. And such things as the $16 million project that resulted in heated streets provided not only safer and more attractive transportations routes, but also eliminated the need for noisy, disruptive plowing. But among the projects that have had the biggest impact on the co-existence of the town’s populace, one remains unseen — because it’s belowground. An entire dispersed loading, delivery, distribution and removal system was put in place in tunnels under the town where goods, trash and recycling are delivered to and from shops, hotels and

And, just like the afternoon thunderstorms that grace our Rocky Mountain landscape, the summer real estate selling season comes in fast and ends with everyone gazing at the rainbows left in its wake. Local residents and brokers are familiar with summer showers,

I THINK WHEN ALL THE DATA IS COMPILED FROM OUR SUMMER SELLING SEASON, THE UPWARD TREND WILL BE EVEN MORE DRAMATIC.” According to Crissy Rumford, Vail Board of REALTORS® board member, opportunity is out there; we just have to look for it. “When asked over the past three years if our market has hit bottom, I’ve always answered, by the time we see an upward trend, the best deals will be in the rearview mirror. While I believe that is true of the market in general, each neighborhood community is unique to itself and there are still many opportunities out there. With inventory at a 7-year low, we are seeing more frequent price increases, but there will always be motivated sellers, and price is always the best indicator of motivation,” says Rumford. Up, up and away While active listings remain low — a decrease of about 7.8 percent for all property types — the median sales price continues to climb for all properties with a 20.2 percent increase over last year. And, as testament to the seriousness of the market, sellers are consistently getting within 95 percent of their asking price. This has remained a hard-andfast statistic since 2012. The takeaway: Properties are priced to sell in the Vail Valley market. This upturn is not only apparent in Vail Valley real estate it is also a solid national indicator. The ability for consumers to afford housing is directly connected with the employment market. With employment up slightly in the first quarter and even higher in the second, the economy is seemingly ready to jump back into homeownership throughout the country. Now is the time to purchase as lenders are in deep debate as to when interest rates will rise once again. In Rumford’s opinion, “The 58

steady upturn in our market is part of a nationwide trend, and with lenders anticipating increases in mortgage rates, this is the time to enter into home ownership or trade up. I think when all the data is compiled from our summer selling season, the upward trend will be even more dramatic.” Our little slice of the Rockies also offers excellent future opportunities. Like it or not, it’s time to think about next winter season. “But it’s only July,” you are saying. Yes, but this coming winter brings a historic event to our international community. We are talking about the hotly anticipated 2015 FIS World Alpine Ski Championships. This event will bring a multitude of people to the Valley. Many will consider purchasing while they are here for the festivities. If you are not considering selling or trading up this summer, be prepared for February. Or better yet, December. Always forecasting the next season in the Vail Valley, Rumford briefly touched on this upcoming market dynamic. Enthusiastically she notes, “I anticipate an increase in residential sales leading up to the world championships of skiing in February, 2015 and a residual effect for 60 to 90 days following. or the past six years, the Flaums have lounged on their outdoor sofa nearly every night they’re home, sipping wine

and taking in the aroma of meat sizzling on the barbecue — though sometimes they water their colorful perennials, which surround their outdoor kitchen, while waiting for their dinner to cook. An outdoor kitchen was on Jim Flaum’s list from day one. His architect designed the Vail Valley Realtor’s home to incorporate the exterior living space, covered with a wood ceiling, and opening to western views of the mountains. Three freestanding gas heaters allow the Flaums and their friends to comfortably enjoy summer evenings until 10 or 11 p.m. The stone-encased gas

fireplace provides both warmth and ambiance, as the couple gazes at the ever-changing clouds and light throughout the transition from sunset to dusk. Flaum wanted to “bring the outdoors and make it part of our home,” he says, so they built an outdoor kitchen with an extensive grilling system, a refrigerator, two sinks and a stove about 10 steps away from their indoor

kitchen. They connected the two with large double doors. Though they planned the outdoor living space into the building envelope, homeowners don’t need to pre-plan from groundbreaking; new outdoor kitchen products have made it easy to create a space dedicated to cooking and eating outdoors. A TASTE FOR OUTDOOR KITCHENS For years, outdoor living has comprised a large component of entertaining in the United States. And though it’s been popular in the High Country, newer products, specifically residential outdoor heaters, have made it more comfortable in the mountains. “The outdoor living and kitchen living idea is emerging,” says Mike Charles, owner of Maximum Comfort Pool and Spa

in Avon. “For a long time, we just put barbecues in, but (most) people didn’t pursue outdoor kitchens because at 6:30 or 7 p.m. it would get too cool. Now, with patio heating systems and outdoor heating — and fire pits and outdoor fireplaces — it’s becoming a comfortable place to be. Outdoor kitchens have caught on in other parts of the country, and now people here are showing high interest.” Many second-home owners from warmer parts of the country are driving the market, renovating their homes and including outdoor living spaces, Charles says. Partially, it’s due to the available heating technology, which allows them “the ability to stay warm but still be outside,” he says. Flaum owns three freestanding, propane-powered heaters but finds one sufficient when just

he and his wife spend evenings outdoors, he says. He didn’t install fixed heaters into his outdoor roof, which many homeowners do, because his stood too high. While most homeowners have opted for gas heaters out of convenience, Charles says electric heaters are more reliable, and slowly, they are gaining more interest. The downside involves the amount of necessary outlets. Charles recommends six to seven outdoor outlets solely for electric heaters, and many homeowners don’t plan for such large outdoor electrical needs in advance. RECIPE FOR OUTDOOR KITCHENS The first ingredient of an outdoor kitchen resides in the structure. In the past, most outdoor kitchens consisted of concrete masonry units, or CMUs, which

present limitations. They come in standard sizes, and masons must fit them together; it takes a stone mason approximately three days to build a 9-foot-by-6-foot outdoor kitchen, with 20 to 30 cuts in order to reduce the stone to proper dimensions, Charles says. By contrast, new modular

are much thinner than the CMUs. The modular systems afford homeowners plenty of flexibility in terms of crafting anything from long, straight kitchens to L- and U-shapes, as well as radial-shaped kitchens. Size isn’t restricted either: Charles is currently installing a 30-by-30-

These take about three hours to assemble into a 9-foot-by6-foot kitchen, Charles says. “And they’re a bit more stable and allow more room in the cabinets,” he says, explaining that the building materials themselves

get outdoors,” Charles says. He’s building his own outdoor kitchen this summer with two sinks: One regularly plumbed and another heat-protected one, which will run all winter. The enclosed plumbing outdoor kitchens include protect regular sinks (as opposed to heat-protected ones designed for winter use) during cold nights; Charles says temperature levels have to reach around 10 degrees for freezing to occur. Isolation valves drain and shut down the plumbing system for the winter; Charles follows the same schedule as a home’s irrigation system, opening it in mid-May and closing it in mid-September, or sometimes pushing it into October. Beyond cabinets, icemakers,

wine coolers, beer kegs, fire pits and sofas, perhaps the “spiciest” ingredient that makes up an outdoor kitchen is the grill itself. Today’s grilling systems offer a plethora of options, from infrared cooking, which many people consider safer because the flame doesn’t actually touch — and therefore cannot char — the food, to rotisserie motors, additional burners (to accommodate, for example, a lobster pot), warming drawers and more. Charles recommends Weber grills as “one of the best values in the business,” though Weber’s accessory line is more limited than the highest-end companies. Still, homeowners can purchase an entire set of pre-manufactured stainless steel or enamel Weber cabinets and then install

other manufacturer’s outdoorgraded appliances into them. For some of the highest end units, Charles suggests Lynx or DCS. “(Lynx is) commercial grade,” says Tom Perfetti, director of sales at Maximum Comfort Pool and Spa. “It’s like taking your kitchen outdoors.” Finally, components like canopy enclosures, stone and tile countertops, and flooring top off an outdoor kitchen. Stone, tile and stucco match home exteriors so outdoor kitchens blend into the whole. Charles often installs honed sandstone, flagstone or polished marble countertops. On the floor of his outdoor kitchen, he chose a ceramic tile that looks like wooden planks

because he wanted the durability and low maintenance of tile, with the appearance of wood. He looks forward to enjoying the last days of summer in his new outdoor kitchen — especially after installing so many for his clients. And, of course, he’ll deck out his outdoor kitchen with the latest patio furniture, which he says delivers the most durability, quality and comfort than ever before, allowing him to sit back and relax. “In our environment, we have some of the most beautiful views, and we have a very pleasing, cool climate — that’s one of the attractions of the outdoor living experience,” Charles says. “It’s so much more relaxing and refreshing than sitting inside.”

simplicity LOCAL CHEFS WEIGH IN ON THEIR FAVORITE DISHES, COCKTAILS AND DIVERSIONS FOR A NO-FRILLS BACKYARD BARBECUE by PHIL LINDEMAN

W

hen Kelly Liken throws a backyard barbecue for friends, the Top Chef side of her brain sits back, kicks up its feet and turns the menu over to something a bit more unassuming: beer-can chicken. For Liken, a frequent Food Network guest and owner of a self-named, talk-of-the-town

restaurant in Vail, few funky dishes say summer like beer-can chicken. The all-American staple is a favorite of backyard chefs across the country, with dozens of recipes online and just as many articles weighing in on secrets to juicy, succulent success. But Liken’s recipe is as straightforward as it sounds: take a whole chicken, remove the extra

bits, spice it lightly, then plunk the entire bird over a half-full can of beer, cavity first. From there, a propane grill does the rest while the chef unwinds with her favorite backyard libation, usually a seasonal brew from Bonfire Brewing or Crazy Mountain Brewery. And the recipe itself requires a few preparatory swigs for the chef — just an added perk

on a laid-back afternoon. “You basically have to open your favorite beer and drink half of it. That’s the best part,” Liken laughs. “But you really can’t screw this up — it’s a miracle, with juicy, crispy skin. It just works incredibly on the grill.” As Liken suggests, beer-can chicken is almost deceptively simple on the surface, calling for AUGUST 2014 | VAIL VALLEY HOME

little more than a small cache of spices and that all-important brew. It’s much humbler than the dishes found on her perpetually inventive restaurant menu — think grilled baby octopus with lemon-harissa vinaigrette, or the wildly popular Rocky Mountain elk carpaccio over a bed bulgur tabbouleh salad. But for Liken and a slew of local chefs, summer barbecues almost demand simplicity, if an energetic, fun-fueled afternoon at home can demand much of anything. Her go-to ingredients for backyard entertaining are easy enough to find: down-home recipes, a wide-open patio, plenty of close friends and a cooler stacked with chilled beer. “That’s the beauty of having a backyard barbecue — you just get to be with good friends,” Liken says. “It’s that idea of community with your people, so it’s not fancy at all. It tends to have that potluck, last-minute feel. It’s a 72

fantastic energy when people get together like that.” THE BACKYARD MENTALITY At Liken’s home in Eagle, the back patio is a gushing love letter to sun-drenched parties. She and husband Rick Colomitz, the restaurant’s general manager and wine director, have turned it into the backyard equivalent of a gourmet hotspot. There’s that massive grill, a fully appointed outdoor kitchen, a bar area for lounging and the crowning addition: a tap for draught

beer, which as usual is hooked to a keg from local breweries. Come summertime, gourmet doesn’t translate into impossible complexity, even for a chef with Liken’s background. Sure, she has the touch of a high-end chef — the sort of care and intuition that sets her apart from thousands of weekend barbecuers — but she rarely saddles her parties with black-tie pomp and circumstance. (It’s just part of her culinary philosophy: At the restaurant’s farmers market dinners, crafted

KELLY LIKEN’S BEER-CAN CHICKEN ingredients 1 (4-pound) whole chicken 2 tablespoons vegetable oil 2 tablespoons salt 1 teaspoon black pepper 3 tablespoons favorite dry spice rub 1 can favorite beer method 1. Remove neck and giblets from chicken and discard. Rinse chicken inside and out. Pat dry with paper towels. Rub chicken skin lightly with oil, then rub inside and out with salt, pepper, and dry rub. Set aside. 2. Open beer can and drink half of it (Liken’s favorite part of the recipe). Place beer can on a solid surface. Grab a chicken leg in each hand and plunk the bird cavity over the beer can. 3. Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its legs and the can like a tripod. 4. Cook the chicken over medium-high heat with the grill cover on. Use indirect heat (no coals or burners turned on directly under the bird) for approximately 80 minutes or until the internal temperature registers 165 degrees Fahrenheit in the breast area, or until the thigh juice runs clear when stabbed with a sharp knife. Remove from grill and let rest for 10 minutes before carving.

MICHELADA COCKTAIL ingredients 4 Mexican beers, such as Corona or Tecate 1/4 cup fresh-squeezed lime juice 2 teaspoons Worcestershire sauce 2 teaspoons hot sauce, such as Tabasco or Cholula 1 teaspoon Maggi or soy sauce Salt for rimming the glasses Fresh-ground black pepper, to taste method 1. Rim four tall beer glasses with salt. Fill with ice cubes. 2. Combine the lime juice, Worcestershire sauce, hot sauce and Maggi/soy sauce in a separate glass. Mix well. Split mixture evenly between the four salt-rimmed glasses. 3. Pour one beer over each glass and garnish with black pepper. Since you’ll have a little of each beer left over, serve the cocktail with the beer bottle so guests can continue adding beer as they sip.

almost exclusively with produce culled from Vail’s sprawling market, diners are treated to live jazz from local pianist Tony Gulizia.) On occasion, Liken doesn’t even bother to perch a chicken over a beer can. Instead, she turns the planning, preparation and blissful experimentation over to her guests with personal pizzas, built from scratch at the outdoor bar and fired on a pizza stone placed inside the grill. Liken makes the dough and selects the toppings, then the sky’s the limit. It’s a casual, no-frills way to tap that community potluck feel, all while making the most of summery appliances. Why sweat inside when there’s an all-in-one grill/oven/roaster on the patio? “You just have to remember a grill is nothing more than a big oven,” says Liken, who also has a soft spot for barbecued ribs and buffalo chicken wings from the grill. “If you think about it that way, you can do just about anything in there.” PROPANE V. CHARCOAL If Liken is a propane advocate, chef Charles Hays from vin48 in Avon is a consummate charcoal fan. When he has a moment to leave the kitchen and barbecue at home with his two young daughters — he tries to make it happen at least once or twice per week —

his grill of choice is an old Weber filled with Rockwood Charcoal, the same all-natural lump charcoal now used in the restaurant’s brand-new, wood-fired grill. “Sometimes it’s hard to find good charcoal, but the taste in the end is worth it,” says Hays, who stays away from chemical-laden briquettes, even though they’re easier to light. “You buy cheap pasta at the grocery store and it’s going to taste like cheap pasta. It’s like anything — you put the effort into it, you get better results.” For Hays, charcoal beats propane for one simple reason: flavor. Propane can roast and bake just fine, but for meats like chicken, that slight smokiness delights taste buds in an entirely different way. It can even result in better leftovers: When the chef decides to roast a chicken (no beer can included here), he chops up the remaining breast meat for homemade tortellini, given just a hint of sultry, summery spice thanks to the charcoal. Still, Hays and Liken share the same down-home mentality when it comes to backyard menus, even if the two don’t quite agree on grills. Both chefs love cooking trout and salmon, dressed with a straightforward combination of fresh, handpicked herbs. At vin48, Hays has access to several small gardens chock-full of high-alpine staples — lettuce, kale, rhubarb and the like. Together, the gardens are one of the restaurant’s claims to fame, and the chef is a master at working locally sourced ingredients into dishes like the grilled jumbo asparagus, lovingly paired with a housemade ham vinaigrette. Grilling on the patio with his daughters is just as fresh. For a

charcoal-fired take on salmon, Hays dresses the fish with thyme, parsley and scallions taken from his backyard garden. When paired with a grilled corn salad — made from red onions, red wine vinegar and diced jalapeño, if he’s in the mood for spice — it’s the sort of light, bright dish he makes daily in the bustling kitchen. The only difference is the atmosphere. “Everything is really simple,” Hays says about grilling at home. “Sometimes I’ll brine a chicken overnight and do it the next day, but it’s more fun to just play with the kids outside, have a few cocktails with friends. It’s a little more social.” FAMILY TIES For chefs like Liken, Hays and Veronica Morales, the culinary wizard behind dish! in Edwards, grilling at home is a welcome respite from the grueling demands of a professional kitchen. But good grub is only half of the recipe. The other half relies on incredible company. “When you grow up in a Mexican family, everyone gets outside and wants to use the nice, authentic flavors of summer,” Morales says. “It’s one of those things I love about grilling — you can get back to those flavors.” Morales, an Eagle County native who’s globetrotting flavors have turned the restaurant into a must-stop for tapas, has a refreshingly laid-back take on family barbecues. She keeps

everything close to home, from chunky salsa made with tomato, cilantro, red onion and little else, to a traditional Mexican version of corn on the cob. She starts with grilled corn and butter — nothing too unfamiliar — then dresses it with mayo, cotija cheese, lime juice and a dash of chili powder. And regional flare doesn’t end with sides and entrées. Liken has a penchant for regional brews and spicy Micheladas, while Morales keeps her libations simple, opting for straight tequila. It’s her yearround favorite, and a close second to lemonade with a dash of vodka come summertime. When Hays barbecues, his cocktail of choice is as pareddown as his main courses. Like his peers, he has a soft spot for seasonal, regional concoctions, albeit with a twist: His version of a Cape Codder — typically made with vodka, cranberry juice and a lime wedge — adds a touch of grapefruit juice (aka a Sea Breeze, for cocktail aficionados). The drink is crisp, relaxing and endlessly enjoyable — a nearperfect complement to lateafternoon flavors on the patio. “All the stuff I do at home on the grill is super simple,” Hays says. “It’s fun to grill and get a little creative, but at the same time you don’t want to be bogged down with a lot of complicated recipes. Summer is all about simplicity, right?”

ivers are a quintessential feature of mountain landscape, but not all homeowners are fortunate enough to live by a babbling brook. As a result, landscape professionals have been improving technology to create natural looking — or even contemporary and artistic —water features that don’t require as much maintenance as traditional ponds. “There are a lot more products in the industry that make it easier,” says Andy Henkes, owner of Henkes Landscapes & Designs in Vail. BYE-BYE PONDS During the economic downturn, Vail Valley homeowners shied away from installing large water features, but now they are beginning to invest in them again, says Ed Hood, owner of Hood Landscaping, which serves Eagle and Summit counties. However, people are opting for pondless water features over ponds. Pondless water features can be customized in terms of size and shape, but the one constant is the lower maintenance they require, as opposed to a pond. They employ a system in which an underground vault holds excess water, so water doesn’t stagnate above ground and develop algae. As water pumps through a series of waterfalls or flows down rocks, it gets aerated, which further reduces algae growth, Hood says. “They’re nice because we have a lot of clients who aren’t always here, and it doesn’t make sense to run the water (constantly),” Henkes says. “With pondless water features, you don’t have to worry about water stagnating because it’s all underground. Sunlight can’t get to it to create algae … they’re a lot less maintenance than ponds that you constantly have to run the water in or it will attract mosquitos … the plants and fish (in ponds) create an ecosystem that is supposed to maintain itself, but it really never does. It’s like owning an aquarium. There’s no simple solution.”

Pondless systems do require periodic water treatment and seasonal scrubbing, but homeowners can pull out the pumps and store them in garages for the winter. Pondless water features also take up less space on a lot than a pond, and they use less water — about as much as a lawn would, Hood says. “If they’re done right, you can tie them into your irrigation system,” says Bobby Head, president of Rocky Mountain Custom Landscaping in Gypsum. BLENDING IN Most High Country landscape design professionals prefer to build pondless water features that blend into the surrounding environment, making them look as natural as possible. For example, on a flat lot, Hood doesn’t like to construct a big hill that would seem out of place. Instead, he designs a water feature that appears to emerge from a spring, or perhaps from a group of trees, where viewers can’t quite spot the origin of the water. On one West Vail lot, he planted piñon trees to create a focal point for the origin of the water, which begins with a low flow and increases as it cascades down the hillside by employing a second water pump. A series of nine waterfalls — six of which drop 3-4 feet — ultimately lead to the patio, where the brook meets and wraps around the seating area. If a site is big enough to hold a large brook with several waterfalls — or if a homeowner’s personal80

ity simply calls for a “big” water feature statement — he still uses native rock and plants, in order to blend with the surroundings. “There’s a big difference in doing one that looks natural to the site and one that’s contrived,” Hood says. “It’s (about) matching what’s native.” One of the biggest reasons Vail homeowners opt for water features, besides the ambiance, involves mitigating the traffic noise from I-70, Henkes says. He tends to keep his water features at 20 feet in length or smaller, depending upon lot size, because a small water feature can babble nearly as audibly as a large one, since the vertical drop of the waterfalls and the amount of water pumping through them creates the sound. He and Hood warn people that a large waterfall, or a series of falls, can make so

much commotion with crashing water that it’s difficult to maintain a conversation or enjoy music. “It can make too much noise, which is not always calming,” Henkes says. He recommends limiting most waterfall drops to 3 feet or less, both for quality of sound and a natural look. But, of course, it ultimately comes down to what an individual homeowner desires. “They can be really dramatic or subtle,” Hood says. CONTEMPORARY FLOW Though most mountain homeowners prefer natural water features, some want a more contemporary look and feel. Stone walls built specifically for thin sheets of water to flow down can add a visually stunning effect to a home. “It’s appropriate when it’s tied

to the house,” Head says. “Once you get outside the building envelope, it’s not as appropriate.” For example, he added a water element to a stone veneer wall that held back the hillside next to an auto court at a home. The water pours over the stone wall, into a formal catch basin. He also added planting areas to soften the court, creating a soothing, tranquil atmosphere in an otherwise somewhat hard landscape. Another project involved a formal, square stone water feature just off a patio. Head elevated flagstone steppingstones with steel supports, in order provide the illusion that the stones float at water level. An Aspen couple chose to incorporate metal into their water feature; Head built a series of mine chutes, with 6- to 18-inch drops, through

which water flowed. Head also likes to add large, core-drilled stones, in which water bubbles up through the top hole, to gardens — a simple way to bring a water feature into a backyard. Other custom metal water sculptures go so far as incorporating the element of fire into the structure; in fact, it’s a safer way to bring fire into the ambiance of a mountain environment, since water forms a barrier between the fire and its surroundings. No matter how homeowners decide to bring water into their outdoor settings, the flowing, babbling element continues to add an overall sense of serenity and relaxation. “Water features are just a great backdrop to any landscape,” Hood says. “They can add a whole new dimension, through sound and sight.” AUGUST 2014 | VAIL VALLEY HOME
