here are so many wonderful things to do in Upstate New York, especially during the warm-weather months. It’s the sort of place where you can line up an exciting day trip almost every weekend and just jump in your car and make them happen. Here are 12 ideas for capitalizing on what Upstate New York has to offer.

Cheese Trail Unless you are vegan, is there anyone out there who doesn’t like cheese? Apparently, New York has more than just wine trails, it also has a cheese trail. Visit www.flcheesetrail. com for some delicious details.

Visit a New York State Park Most of us have our favorites, but this year, visit one you’ve never been to before. It will give you a chance to discover something new to

State Historic Site New York is home to a multitude of historic events; you could dedicate every weekend this summer and fall to visiting a historic site. From women’s rights, to the Civil and Revolutionary wars, to amazing craftsmanship and architecture, there is a facet of a New York’s history to satiate everyone’s curiosities. Regional or Farmers Markets In the warmer months, you can’t drive far without coming across a farmers market or roadside farm market. Although these places often abound with fresh produce,

Taste Your State If you drive a lot, chances are you have noticed a big push from New York to Taste NY. Listen to these signs! There are so many restaurants and products that are locally made and hand-crafted right here in New York. From well-known restaurants to small-batch honey dealers, the dietary options are plentiful if you let your pallet enjoy its state. Visit taste. ny.gov/ for a wealth of ideas.

Farm-to-table A farm-to-table restaurant is an eatery that sources a lot or most of its ingredients from local suppliers. Their menus are often seasonal and quickly changing. Visiting one of these eateries is a great way to appreciate local fare and specialties and break out of a basic-burger routine.

Brewery or Distillery The popularity of craft beer and craft spirits is exploding — and the business community in New York is answering the call. There are breweries and distilleries popping up all over our region. A lot of these venues also offer tours or viewings of creation of their products. They offer an experience as well as a drink. Many of these places also feature food and live music, making them a great destination for weekend travel warriors.

Discover Local Music Concerts from national acts are fun, but they are also crowded and expensive. Local music happens at smaller venues all over our state. Shows are usually relatively inexpensive or free, and you won’t have to pay $11 for a beer. Follow venues that welcome local musicians using your favorite social media sites or follow the musicians themselves. Dedicate a weekend (or two) to supporting local music. If you get a chance to catch a show outside, that’s even better.

Civic or Community Band Concert Don’t let events like these become a thing of the past. Spend a summer evening catching a concert in a park or watching a community band. These events are usually early in the evening and family-friendly. They also often feature food carts or snack stands. They are a great way for families to break out of the weekly doldrums.

Pick Your Own Fruit A day in a berry patch or an orchard is a day well spent. There are so many options for picking your own fruit. There are the popular ones like apples, strawberries, blueberries and raspberries, but don’t stop there. There are places to pick grapes, currents, cherries, gooseberries, elderberries, pears, blackberries, black raspberries and more. Central New York welcomes several big acts in the coming months. • Carrier Dome in Syracuse (www. carrierdome.com) will host Paul McCartney this fall. He will perform at the Carrier Dome, Saturday, Sept. 23. Tickets went on sale for the public May 1 and were nearly sold out on the same day. Skaneateles

Skaneateles Lake’s reputation as trout waters has been growing. It’s also a hotspot for Atlantic salmon, smallmouth bass, chain pickerel, bluegill, pumpkinseed, yellow perch, rock bass, black crappie, white sucker, and brown bullhead. The DEC recommends the south end for bullhead, panfish and pickerel. The lake also offers plenty of lake trout, though the fish tend to be smaller than elsewhere in New York.

Lebanon Reservoir

Lebanon Reservoir in Hamilton supplies water for the Erie Canal and is home to many largemouth bass and rainbow trout, along with walleye, black crappie, pumpkinseed sunfish, bluegill, rock bass, yellow perch, golden shiner, white sucker, and brown bullhead. The DEC annually stocks the reservoir with approximately 2,000 mature rainbow trout.

Fishing Hotspots in Central New York By Deborah Jeanne Sergeant

ew York boasts 7,500 lakes and ponds and 70,000 miles of rivers and streams, according to the New York Department of Environmental Conservation. Once you have your fishing license in hand, try angling at these top fishing spots.

Salmon River & Oswego River

There’s a reason it’s called the Salmon River; is the place to be in fall for salmon as they make their way down the river from Lake Ontario. From these waters, anglers have caught the Great Lakes record Chinook salmon (47 lbs. 13 oz.) and the world record Coho salmon (33 lbs. 4 oz.). Also in the fall, don’t miss fishing

in the Oswego River for Chinook, and Coho, as well as steelhead. Though it may be crowded along the shore because of the river’s increasing popularity, the fishing is brisk

Oneida Lake

Oneida Lake offers good fishing for numerous fish from its northern and southern fishing spots. The species include walleye, largemouth bass, smallmouth bass, chain pickerel, northern pike, tiger muskie bluegill, pumpkinseed sunfish, rock bass, black crappie, yellow perch, freshwater drum, common carp, bowfin, burbot, longnose gar, lake sturgeon, gizzard shad, and round goby.

Owasco Inlet

Owasco Inlet, flowing through Peruville, Groton, Locke and Moravia, offers 13.3 miles of public fishing rights, along with rainbow trout, walleyes, brown bullheads, smallmouth bass, largemouth bass, rock bass, and white sucker. Thanks to the waterway’s variety of fish, the DEC considers the inlet as a multi-season fishing location.

Fishing Etiquette • “Elbow room to fish is a common courtesy. • “The stationary or slow moving angler should be given room by overtaking them noiselessly out of the water and re-entering as far away as practical. • “Wading right up to another angler could disturb a pod of feeding fish, and no one appreciates this type of conduct. • “Pleasant conversations are OK, so long as you don’t disturb other anglers.” Source: DEC

Time to Go Glamping It provides a way to get away from the distractions of modern life without giving up the small pleasures it offers By Deborah Jeanne Sergeant You’ve been camping but have you tried glamping? A portmanteau of “glamor” and “camping,” glamping makes camping luxurious without separating campers too much from nature. So what’s the difference? Campers haul all their gear to a bare site. Glampers usually arrive with just their clothing and personal items — the rest is provided. The glamper slumbers between high thread count sheets on a real bed on a raised wooden platform in their upscale tents, not in a sleeping bag on the ground. Glampgrounds usually provide heated restrooms and showers. Traditionally, campers provide or catch their dinners. Glampers may nosh on the featured delicacies of the glampgrounds. Glamping takes the work and sacrifice out of camping. Some may revel in the whole “man vs. wilderness” adventure. For those who don’t,

The skies over Niagara Falls are lit up many nights throughout the summer, starting at 10 p.m. Regardless of which side of the border you’re on, you can see the brilliant lights. www.niagarafallstourism. com/fireworks. In Rochester, a traditional Independence Day show lights up the night each July. Prime viewing spots include Main Street Bridge, Broad Street Bridge, and Chestnut Street near the Washington Square Garage. Check www.cityofrochester.gov/ july4 to verify date and time. Lake Placid’s celebration at 9:30 p.m. offers a mirrored view

Poughkeepsie also offers a waterfront display over the Hudson, beginning at 9 p.m. https://walkway.org/4th-of-july-fireworks-spectacular. Lyons’ display bursts over the Erie Canal. “Thunder Over the Erie” is impressively large for a largely rural county. The event is in mid-July and is part of Peppermint Days, so check www.lyonsny.com/peppermintdays.html as details emerge. The show at Darien Lake (9993 Allegheny Road, Darien Center, darienlake.com/special-events) is

one of the region’s largest fireworks shows. Since the price of the show is equivalent to the theme park’s admission, visitors might as well enjoy rides, too. Albany’s Independence Day fireworks in Empire State Plaza provide a bright, booming show starting at dusk. Check www.albany.com/ event/fireworks-festival-35517. Oswego’s Harborfest provides the Saturday Night Fireworks Spectacular on July 29. This will be the 30-year celebration of the festival and a large fireworks show is expected. The Harborfest website recommends the best view areas span from Fort Ontario on the east side of Oswego to the inner harbor and Breitbeck Park on the west side. www.oswegoharborfest.com.

ccording to History.com, “On July 3, 1776, the day before the Continental Congress adopted the Declaration of Independence, John Adams wrote a letter to his wife in which he presaged the role of fireworks in Fourth of July celebrations. ‘The day will be most memorable in the history of America,’ he predicted. ‘I am apt to believe that it will be celebrated by succeeding generations as the great anniversary festival. It ought to be solemnized with pomp and parade…bonfires and illuminations [a term for fireworks]…from one end of this continent to the other, from this time forward forevermore.’” His prediction came true the following year, and have continued ever since to mark Independence Day. Though many local municipali-

ties set off fireworks displays at various times all summer, some northern venues cannot host fireworks displays at any point in the summer because it doesn’t get dark enough. Point Barrow, Alaska, for example, waits until New Year’s Day to brighten a time of year when sunlight is scarce. Before the U.S, the Chinese had used fireworks as early as 200 B.C., according to www.history.com. Bamboo provides a kind of ground-level firework because it burst with a loud sound when roasted over a fire. Its hollow channels cause the explosion. “At some point between 600 and 900 A.D., Chinese alchemists—perhaps hoping to discover an elixir for immortality—mixed together saltpeter (potassium nitrate, then a common kitchen seasoning), charcoal, sulfur and other ingredients, unwittingly yielding an early form of gunpowder,” the History Channel website

states. “The Chinese began stuffing the volatile substance into bamboo shoots that were then thrown into the fire to produce a loud blast. The first fireworks were born.” The Chinese used early fireworks to keep evil spirits away and for special celebrations. They discovered that lobbing fiery sticks at enemy forces helped them win battles. In the 1830s, the Italians added small amounts of metal to fireworks so that they lit up the sky with many colors instead of the orange and yellow colors previously achievable. Shooting off fireworks seems a natural way for many countries celebrate and commemorate military victories since fireworks are so similar to the devices used in warfare.

ow about an adventure with a view? Parasailing combines parachuting and sailing into a high-flying water sport, thrilling for anyone seeking an adventure. Unlike parachuting, participants don’t face jumping a long distance. A motorboat tows participants by a safety harness attached to a parasailing canopy that works somewhat like a parachute. Their ascent and descent is gentle and doesn’t necessitate going in the water. Most tours allow a child to ride who is accompanied by an adult. After going over the safety rules, tour operators and crew typically take a group of 10 to 12 participants out in

the motorboat. One, two or three may parasail at a time. A few venues in New York offer parasailing. • Parasailing Adventures (Shoreline Cruises, 2 Kurosaka Lane, Lake George, 607-272-7245, www.lakegeorgerecreation.com) offers views of Lake George at over 300 feet in the air. Participants launch off the boat and land on it, too, so they need not get in the water unless desired. Several venues statewide offer the adventure of zooming over the landscape suspended by a safety harness on a wire. They include: Thunder Island (www.thunder-island.com, 315-598-8016, Fulton). It offers the Soaring Eagle zip line-based ride. Unlike other zip lines, visitors can ride side-by-side on a seat with a friend and ride in reverse as well. The 22-mph-speed in its first 100 feet slows in portions of the trip so riders can take in the view. While at Thunder Island, visitors can enjoy theme park attractions. A zip line ride costs $5; check the website for packages that include taking advantage of various parts of the park. It touts its rides as “mild” to “wild” to suit the taste of visitors. The facility offers both high tower obstacles and zip lines. Reservations required. Call for pricing. Adirondack Extreme Adventure (www.adirondackextreme.com, 518494-7200, Bolton Landing). It lays claim to being the largest aerial treetop adventure park in the nation. It takes about three to four and a half hours to complete all six adult courses, which includes zip lining at the end. The Kids Course is designed for children ages seven and older. The Kids Course is $25. The adult courses start at $45. The children’s playground is free. Howe Caverns (howecaverns.com, 518-296-8900, Howes Cave). It offers more than caving; above-ground adventures include a four-tower zip line course that’s 900 feet long and 40 feet in the air. The

zip line is $17.

Engelke Farm (www.engelkefarm. com, 518-478-4939, Troy). It provides numerous family-oriented activities for all ages at its farm market, along with the second-longest zip line in the state. Zip lining starts at $15. Bristol Mountain’s Arial Adventures (bristolmountainadventures. com, 585-374-1180, Canandaigua). It makes great use of the ski resort’s natural beauty. The Zipline Canopy Tour offers seven zip lines that total more than 5,000 feet. Two guides lead each of the three-hour zip line tours. Bristol also offers The Aerial Adventure Park’s seven obstacle courses that take about three hours to complete. Plus, there are two additional courses for children aged 4 through 7. Admission to the zip line is $109. Admission to the children’s courses is $25. Greek Peak Adventure Center at Greek Peak Mountain Resort

(theoutdooradventurecenter.com, 866-376-3907, Cortland). It offers views from 60 feet above the ground along 1,300 feet of zip lines. Also while at the Adventure Center, check out the Nor ’Easter Mountain Coaster, Aerial Challenge Course, and, for the little ones 3 to 6, the bounce house, kids’ climbing wall and slide. The zip line tours take about two hours and can accommodate 12. The cost for zip lining is $42. See the website for other attractions. Eagle Flyer Zip Line (adkeagleflyer.com, 518-668-9453, Lake George). It provides seated riders with side-by-side zip lines that begin at 125 feet off the ground and include a nearly 1,000-foot vertical drop at 50 mph. The entire ride lasts three-quarters of a mile and includes views of Lake George and the Adirondack Mountains. Cost is $45. Some zip line venues refund tickets for rainy days. Carefully review the website for dress and size guidelines and call ahead to make reservations.

Great NYS Fair

fter many long, gray months, the warm months offer a welcome break. Try these outings to enjoy uniquely New York venues and events.

The Great New York State Fair (https://nysfair.ny.gov, Aug. 23-Sept. 4). The NYS Fair is considered one of the nation’s largest, best state fairs for its size (375 acres) with free entertainment and a wide variety of entertainment. It’s also pretty affordable, with adult tickets for $10 and children 12 and younger free. The fair’s many discounted and free days such as for military personnel and seniors, make it easy for everyone to enjoy. Shuttles from other towns have also increased access. The fair’s recent facelift and improvements, including a new entrance façade and upgraded midway, augment the fairgoer’s experience. This year, the fair will last an extra day, too. County Fairs Wherever you live, your county fair offers a slice of nostalgia in your own backyard. Chances are, you’ll bump into a friend or neighbor. Watch 4-H animal exhibitors, try the Tilt-o-Whirl, and patronize your local organization’s food stand. Little has changed at the county fair since you were a kid — and that’s a good thing. Oswego County Fair This event showcases all the best in agriculture. But more than an agricultural trade show, anyone interested in rural life would enjoy strolling the show grounds at Rodman Lott & Son Farms in Seneca Falls. Presentations by Cornell Cooperative Extension, New York Grange and the Department of Environmental Conservation can help land owners better care for their property. Youngsters and adults enjoy live equipment and animal demos and can check out the displays and free samples at the numerous information tents and buildings. Oswego Harborfest (http://www. oswegoharborfest.com/, July 27-30, free) This festival, which is celebrating its 30th year, brings together all things good about summer: weather, live music, festivals and local food.

About 100,000 people think so every year. Harborfest has become the big event of the summer for locals and visitors, too. New York State Parks New York State Parks provide a means to nearly any outside activity you want to enjoy this summer. Water sports, wildlife watching, hunting, angling, hiking and more await you. The easiest way to gain access is through the Empire Pass (https://parks.ny.gov/admission/ empire-passport), which allows holders unlimited access to state parks all year instead of paying for parking and access each time you visit a state park. The annual pass is $80 and any member of the household may use it. The $65 vehicle pass decal isn’t transferrable. Multi-year passes and lifetime passes are also available.

Science Fiction Movie Adventures Exhibit at Glenn Curtiss Museum

new temporary exhibit for science fiction movie fans is taking place at the Glenn H. Curtiss Museum in Hammondsport, in the Keuka Lake region. Titled "Boldly Exploring the Universe: Futuristic Movie Adventures in Space," the exhibit features props, costumes and artifacts from such sci-fi films as “Star Trek,” “Lost in Space,” “Space: 1999,” “Andromeda,” “Galaxy Quest,” and many others. “Sci-fi fans of all ages will want to ‘beam themselves up’ to the Glenn Curtiss Museum this spring to see items from some of their favorite movies,” said museum curator Rick Leisenring. “We display props and artifacts that everyone, from Trekkies to classic science fiction movie buffs, will enjoy.” The exhibit will run from 10 a.m. to 4 p.m. April 1 through Sept. 30. The museum is open Monday through Sunday, It’s home to a priceless collection of items related to early aviation, motorcycles and local history. It also celebrates the life and accomplishments of Glenn Curtiss, the father of naval aviation and a pioneer in motorcycle manufacturing. Working Farm Tours

Some farms in the region open their barn doors to the public for touring their operations By Deborah Jeanne Sergeant

hether you’ve never seen a cow in person or you grew up doing daily chores, working farm tours can provide a fun outing for you and your family. While New York abounds with farming exhibits, farm stands, farmers’ markets, fairs, farm festivals and agritourism farms, working farms typically are not open to the public. These are a few examples of farms in the region that open their barn doors to the public for touring the farm’s operation and enjoying some fun for just a day or two a year.

operate a small gift shop year-round, it primarily functions as a working farm. During the festival, numerous vendors, performers and exhibitors come to the farm. Visitors can also go on hay rides, make crafts, join the 5k run/walk and pick their own fresh lavender.

Ontario County’s Fun on the Farm (Lightland Farms, 3090 Depew Road, Stanley,) takes place 11 a.m. to 4 p.m. Sept. 30. Organized by Ontario County Farm Bureau and Cornell Cooperative Extension of Ontario County, the event occurs biennially on odd-numbered years at a different farm in Ontario County. Re-enactment at Fort Ontario, Oswego

Reliving History Re-enactment programs show rich history of the region By Deborah Jeanne Sergeant

hile we can’t go back in time, historic programs and exhibits can help us feel more connected with the past. Several historic sites in New York offer history events. Historic interpreters usually dress in period costuming and may engage with visitors from a 21st-century perspective to help educate them about life in the past. Historic re-enactors, however, stay “in character” of either a specific or a general historic person from their era while visitors are present. They tend to be more meticulous about

details of their costuming, behavior and conversation. Here are some of the re-enactment programs in the region:

Fort Ontario (1 E. 4th St., Oswego, 315-343-4711, www.fortontario. com) hosts a French & Indian War— 18th Century Living History Event (June 17), among others this summer and fall. Check the website for details. Fort Niagara (Youngstown, 716-745-7611, www.oldfortniagara. org) offers a few events this season,

including Rebels and Redcoats, an American Revolution event (Jun. 3-4, free with paid admission), French and Indian War Encampment (Jul. 1-3, $13), Soldiers of the Revolution (Aug. 5-6, free with paid admission), which depicts life on the New York frontier during the American Revolution, and War of 1812 Encampment (Sept. 2-3, free with paid admission. Admission is $12 adults; $8 children 6-12; Free 5 and under.

Genesee is the largest living history museum in the state, so you’re sure to find plenty of interesting things to see and do as you stroll among dozens of authentic and replica buildings of the 1800s. Fort Ticonderoga (100 Fort Ti Road, Ticonderoga, 518-585-2821, www.fortticonderoga.org). It hosts several history events all summer, including the 1777 Brown’s Raid Battle against the British at Fort Ticonderoga and Montcalm’s Cross: The 1758 Battle of Carillon. The fort’s numerous exhibits and displays allow visitors to make a day of it as they explore the history interpreters going about daily life as if in the 18th century. Tickets start at $9 for children. Special weekends all summer long include Scots Day (June 17), Fife and Drum Corps Muster (July 29), and Heritage, Harvest, & Horse Festival (Sept. 30). The terrain includes woods, open meadows and a fort. Our Upstate New York The Best of Upstate New York

pstate New York includes most of the state of New York, excluding New York City and its environs. The region includes the major cities of Buffalo, Rochester, Albany and Syracuse. Before the American Revolutionary War, Upstate was populated by Native Americans, and was home to the Six Nations of the Iroquois Confederacy. The region saw many battles between the Continental Army and the Iroquois, and several treaties drawn up after the war ceded much of the land to settlers of European descent. The development of Upstate New York was spurred by the opening of the Erie Canal in 1825, which greatly eased the transport of goods between the port of New York City and inland cities along the Great Lakes. As a result, Upstate became a hotbed for manufacturing, giving birth to such firms as General Electric, IBM, Kodak, and Xerox, and it welcomed a large influx of immigrants. Since the mid 20th century, American de-industrialization has contributed to economic and population decline of Upstate, and the region is largely considered part of the Rust Belt. Unlike the New York metropolitan area, Upstate New York contains vast areas of rural land. As a result, Upstate also supports a strong agriculture industry, and is notable for its milk and dairy products, its fruit production (especially apples), and winemaking. New York City is dependent on the natural resources of Upstate for a variety of services, including the city's water supply and electricity. The region is home to several popular tourist and recreational destinations, including Niagara Falls, the Adirondack and the Finger Lakes. Source: Wikepedia

Best Lake Access to Lake Ontario: Cayuga County By Susan Peterson Gateley

or more than 150 years water has been drawing vacationers to the village of Fair Haven, Lake Ontario and Little Sodus Bay. The Fair Haven Beach State Park has one of the few sandy swim areas along this stretch of coastline and also includes a spectacular lakeshore bluff accessible to hikers. Here on a good clear day you can pick out landmarks 25 miles distant. No other portion of Lake Ontario shoreline has more public access to the water than Cayuga County’s. Little Sodus Bay, also called Fair Haven Bay, is one of just two large sheltered embayments on the lake’s New York shore with a deep-water channel. The bay has four shoreline parks for the

land bound, while each summer the village welcomes pleasure boats and yachts from 8 to 80 feet. Offshore vessels from Germany and South Africa have dropped anchor here. Two years ago a 100-plus footer stopped in for the night and a crew aboard a big schooner once owned by General George Patton tied up at a waterfront restaurant for dinner. Fair Haven is known around the lake as being a boater-friendly community with a public dock, three free launching ramps for paddle craft and car toppers and a good all season ramp at the Fair Haven Beach State Park suitable for launching larger boats. If you don’t have a boat to get afloat, the bay also has excellent ac-

cess to the water for fishing, wading or bird watching. Not surprisingly given the ease of reaching the water here, several businesses cater to getting you out on it. If you don’t have a boat Anchor Resort & Marina at the bay’s south end rents kayaks, canoes, runabouts and pontoon boats. If you want to set sail, you can do so with Silver Waters Sailing School located at the Pleasant Beach Hotel and Restaurant. Instructor Susan Gateley holds a Coast Guard license to carry passengers for hire and teaches aboard a 22-foot keel sloop providing individualized instruction for couples and single would-be sailors “We’re celebrating 20 years of helping women take the helm this season” says Gateley. She invites all genders to set sail this summer with a special introductory two-hour lesson on Little Sodus Bay. A few years ago the village took over stewardship of the West Barrier Bar Park, a lightly developed gravel and sand spit at the north end of the bay. It’s a great spot for beach combing, sun bathing, picnics or seasonal bird watching. The barrier bar includes a drivable right of way to the west jetty where people can take a stroll on a summer day and watch the ever changing weekend parade of boats moving in and out the channel. Here, too, you can scan the lake’s bold shoreline and clay cliffs to the east for a passing eagle. There are many miles of hiking trails in the area in the state park, Sterling Nature Center and along the old LeHigh Valley rail bed that runs 14 miles south to Cato. It’s an easy bike ride over level terrain on a gravel-and-dirt surface that isn’t ideal for skinny tires. The village of Fair Haven has seen several new businesses open over the last few years, including a cidery and a winery and is becoming a bit of an art destination with three galleries and a nonprofit art center that offers a variety of classes.

How to Make Every Stomach on Your Guest List Happy By Melissa Stefanec

ave you ever been excited to host a gathering only to have your excitement extinguished by the prospect of meeting everyone’s dietary restrictions? You’re not alone. Gone are the days where everyone on the list is happy with hotdogs, macaroni salad and potato chips and soda. These days, a lot of people are more conscious of what they are putting in their bodies. Most times, that’s a good thing, but it can leave the entertainer frazzled. So, here is a four-course meal that will have just about every guest on your list happily coming back for seconds.

Appetizer — Hummus Layer Dip

Highlights: Vegan, vegetarian, gluten-free, dairy-free, nut-free (contains sesame seeds), very low sugar Prepare: Take about 14 ounces of plain, garlic, or Mediterranean hummus, and spread it into a wide, flat dish. In a blender or small chopper, puree 4 ounces of roasted red peppers, ½ tbsp minced garlic, 1 tbsp olive oil and salt to taste. Set aside. In the same container, puree 10 pitted Kalamata olives, ½ tbsp minced garlic, 1 tbsp olive oil and salt to taste. Set aside and rinse the container. Then, take a few of your favorite hot peppers and puree with ½ tbsp minced garlic, 1 tbsp olive oil and salt to taste. Put each mixture over the hummus, using each mixture to cover one third of the top. Sprinkle with finely diced fresh parsley. Serve with fresh pepper strips, cucumbers and baby carrots. You can also include

pita chips, for those guests who can eat gluten.

Salad – Roasted Sweet Potato Salad

Highlights: Vegan, vegetarian, gluten-free, dairy-free, nut-free Prepare: Peel and cube four medium-sized sweet potatoes. In a zip-top bag, mix 3 tbsp olive oil, 1 tbsp salt, ½ tbsp black pepper, 1 tbsp cumin, 1 tbsp garlic powder, and 3/4 tbsp chipotle powder. Add one small diced red onion and ¼ cup dried cranberries. Put the potatoes in the bag and shake until all items are evenly coated. Spread mixture on a foil-lined baking sheet and bake at 375F for 20 minutes. Turn the oven up higher at the end if you want the potatoes to lightly blacken. Remove from the oven and let the potatoes cool. In the same bag you mixed the potatoes in, mix one seeded and diced poblano pepper with ½ cup honey and the juice of one lemon. Mixed cooled potatoes in the mixture. Place in a bowl and mix with a bag of fresh arugula and whole, pitted olives (optional).

Main Course — Grilled Romaine Salads

Highlights: Vegan, vegetarian, gluten-free, dairy-free, nut-free, very low sugar Prepare: Take heads of romaine lettuce and slice lengthwise. Brush lightly with avocado or olive oil and sprinkle with salt and pepper. Place lettuce on the grill, cut-side down. Grill until the bottoms begin to

Hummus layer dip brown. Remove from grill and add toppings. Prepare toppings ahead of time and keep them in separate dishes so cross-contamination does not occur. Toppings suggestions: crumbled, crispy bacon; roasted, slice peppers; diced red onion; halved cherry or grape tomatoes; crumbled bleu cheese; shredded parmesan cheese; sliced olives; sliced hot peppers; artichoke hearts; and hard-boiled eggs.

Dessert — No-bake Chocolate Peanut Butter Bars

Highlights – Vegan, vegetarian, gluten-free, dairy-free Preparation: Line a square baking pan with parchment paper. Melt ½ cup coconut oil in the microwave. In a chopper or blender, chop enough gluten-free and dairy-free animal cookies or graham crackers to make 1 cup of crumbs. In a bowl, mix crumbs, coconut oil, 1 cup of powdered sugar and ¾ cup peanut butter (smooth or chunky). Press the mixture into prepared pan. In a small bowl, microwave 1 cup of vegan chocolate chips (some dark chocolate chips and naturally dairy-free) with about 2 tbsp of peanut butter. Stir until combined and spread mixture evenly over crumb mixture. Top with chopped peanuts or chopped peanut butter cups (optional and note that peanut butter cups will add dairy). Refrigerate for about three hours or until bars are set.

Fall for New York’s Falls

hey may not be Niagara Falls, but Central New York’s waterfalls offer pretty scenery closer to home. In Cazenovia, Chittenango Falls State Park (315-637-6111) offers 194 acres of hiking (among five trails), fishing, picnicking space (including grills), and a 167-ft. waterfall. Since the falls are right off the highway, you won’t have to hike a distance to see them. But as long as you’re going, why not bring a picnic basket and watch birds, look for unusual plant life, and hike around for a while? The park also includes a playground for the children. Canastota’s Oxbow Falls County Park (315-366-2376) boasts 125 acres of woods, streams and three waterfalls, including a 100-foot waterfall. Bring along the wide angle lens to capture panoramic shots, as the view ranges from Oneida Lake to Lake Ontario.

Don’t forget your flying disc to play the park’s 18-hold disc golf course. The park also features a softball field. Most people flock to Howes Cave to explore Howe’s Caverns; however, just down the road, the Secret Caverns (518-296-8558) features a more rustic spelunking adventure and a surprise at the end: a 100-foot, underground waterfall. The caves’ temperatures stay stable and cool on the hottest summer days, so take a break from the heat in Howes Cave. Like Chittenango Falls State Park, Wolcott Falls Park in Wolcott (315-5949501), features a waterfall close to the road (in fact, you may drive over the 50-foot waterfall without knowing it). The upper portion of the park includes an observation deck overlooking the falls, grills and picnic pavilion, and a small playground. Don’t miss the trailhead on the opposite side of the park. The short hiking path that

winds through the woods to the base of the waterfall. There’s not much else to do in Wolcott Falls Park, but the village shopping district, a block from the park, includes dining and a few mom-and-pop shops to explore. The Salmon River Falls in northern Oswego County is another option to view waterfalls. Salmon River Falls encompasse 112 acres of land. The 110-foot Salmon River Falls and the scenic gorge are the popular attractions. Plan ahead for exploring area waterfalls. Since some parks book private events, call before you go to ensure access and hours. Most parks allow dogs if they’re on leashes less than six feet long, but ask first. Bring along your own trash bags in case you cannot find a trash receptacle so you can keep CNY parks clean. For more waterfalls statewide, visit www.nyfalls.com.

everal local businesses recently partnered with the Oswego County Department of Community Development, Tourism and Planning and I Love New York to host a team of German businesses who are interested in bringing visitors to Oswego County. The fishing familiarization tour was organized by the New York State Division of Tourism to attract Germans who would like to fish while on vacation in the U.S. The guests included Olaf Jochmann, publisher and owner of “Am Haken” magazine, Jan Hrdlicka of the magazine’s editorial staff, and Andreas Quenstaedt of Deutscher Reisring, a group tour operator that specializes in outdoor recreation trips. They were accompanied by Markly Wilson, director of international marketing for I Love NY, Wolfgang Wekwert, representing the I Love NY international staff in Germany, and Lori Solomon of Van Tourism Specialists. While in Oswego Oct. 29, the group enjoyed Oswego’s unique “urban” fishing experience on the Oswego River with Captains Kevin Davis of Catch the Drift guide service and Andy Bliss of Chasin’ Tail

The following day they experienced the more traditional fishing environment of the Salmon River with guide Mike DeRosa of Zero Limits Guide Service, and toured the Salmon River Fish Hatchery in Altmar with NYS DEC Special Projects Coordinator Fran Verdoliva. Meals were hosted by Steamer’s Bar and Grill in Oswego and the Tailwater Lodge in Altmar, and accommodations were provided by the Tailwater Lodge. “The experience in Oswego County was compelling, and will be re-lived by others from Germany in the future,” said Wilson. Dave Turner, director of the Oswego County Department of Community Development, tourism and Planning, and Janet Clerkin, tourism and public information coordinator, accompanied the group during their visit. “ The goal of this trip was to familiarize key tourism partners in Germany with the variety of fishing opportunities available in New York State so they can share this information with their customers firsthand. People come from all over the U.S. and Canada, and all around the world, to experience Oswego County’s superior fishery,” said Turner. “In

fact, visitors spent more than $135 million in Oswego County in 2014.” The international team also fished on Long Island Sound, the Niagara River and the St. Lawrence River while in New York State. Turner said that Oswego County far surpasses other areas of the state in the number of visitors who come to New York State to fish. More than 34,000 people from outside of New York State purchased non-resident fishing licenses in Oswego County last year. “The DEC estimates that the fishery generated nearly $43 million in Oswego County in 2007,” said Turner. “We expect the economic impact has increased since then, as the steelhead fishery has become another well-established element that follows the salmon season.” The Oswego County Department of Community Development, Tourism and Planning oversees a comprehensive year-round marketing program to promote Oswego County’s outdoor recreation, historic sites, events and businesses, and to increase visitors to Oswego County. 20th Year USS Slater Anniversary The Best of Upstate New York

his year marks the 20th year USS Slater has served as a National Historic Landmark in Albany. Many consider the vessel as one of the most historically accurate World War II ships. It is the only remaining World War II destroyer escort afloat in America. Initially, destroyer escorts were conceived to battle Nazi U-Boats while escorting convoys across the Atlantic. The vessels proved helpful in defending Pacific forces from Kamikaze attacks. Many destroyer escorts continued to serve during the conflicts in Korean and Viet Nam. The small ships led to the current US Navy Fleet’s frigates. Destroyer Escort Historical Museum, a private, non-profit organization, owns and operates USS SLATER. It is located on the Hudson River in Downtown Albany just south of the Dunn Memorial Bridge. The ship is open for tours Wednesday through Sunday, 10 a.m. to 4 p.m. through November. hy not let you dog do a little networking at an area dog park? The region offers several places for pooches to play and socialize. Here are some nearby places: • Wegmans Good Dog Park (2500 Cold Springs Road, Liverpool). It boasts two fenced areas designated for large and small dogs. They enclose what amounts to a doggy playground with ramps, tunnels, bridges and other obstacles to explore. The park provides a water fountain and plenty of benches. Dogged walkers can also take their pooches onleash along the five miles of walking paths along Onondaga Lake. • Jamesville Beach Off-leash Dog Park (4110 Westshore Manor Road,

To make your outing at the dog park fun and safe, keep in mind the following tips: • Make sure you bring your dog on a leash with a collar or harness. Although dog parks feature off-leash play areas, you’ll still need to walk your excited dog from the car to the fenced-in area. • Do not open both gates at the same time. • Only bring registered, well-behaved, well-socialized dogs that are up-to-date on their vaccination and flea and tick prevention.

Membership includes three dogs of the same household. Animals must be screened for membership, including vaccination and an assessment of socialization. • Greece Canal Dog Park (241 Elmgrove Road, Rochester, 585-7537275). It requires registration before using the park. Unlimited access to this park, as well as Ellison Park (395 Rich’s Dugway, Rochester), is $24 annually, so it’s not a great deal if you’re just passing through and want your dog to stretch his legs.

• Supervise your dog. • Do not forget to bring bags to pick up your dog’s waste and do so promptly (which is part of supervising your dog). • Watch for dog aggression signs, such as raised hackles, closed-mouth biting (as opposed to open mouthed “play biting”), deep growling and walking with stiff legs and raised tails. Happy, relaxed dogs wag, sniff each other and bark with a higher pitch. • Intact males are more likely to cause fights, so watch out for them.

Road Trip on a Budget Means More Fun By Mellissa Stefanec

his time of the year is the best for road trips. The nice weather makes many of us want to get out the house and visit places and people we missed during the cold winter months. When we meet our destinations, we can refresh and recharge by spending time with people and places we love. However, the costs of a road trip can add up as quickly as miles on your odometer. Odds and ends at gas stations and fast-food joints can limit your vacation plans by wrecking your budget before you even have a chance to cut loose. However, roadtrip peripherals don’t have to add up. A little bit of prior planning can go a very long way. It could mean the difference between enjoying a nice bottle of wine and seafood dinner or remorsefully eating the same. Plan well and vacation well. Here are some money-saving strategies to employ when you hit the road.

Do a little research

Check out the points of interest and restaurants at your destination and along your way. That way, you won’t get stuck paying money for something you didn’t really want in the first place and have insight to the sorts of places that fit your taste and budget.

Shop when you get there

If you are going someplace where there won’t be hosts to feed you, visit a grocery store when you arrive. Having a few snacks and staples on hand can keep you from making

impulse food purchases. If you are being received by a gracious host, buy a reasonable gift in advance of your trip so you don’t get stuck buying a pricey last-minute item.

Pack a travel kit

If you already have a first-aid kit, make sure it is stocked and bring it along. If you don’t, make your own using some sandwich-sized zip-top bags placed in a gallon-sized bag. Bring things like a pain reliever, allergy medication, antibiotic cream, an instant ice pack, aloe vera, insect bite relief and tweezers. Buying this sort of stuff at quick-stop stores can add up very quickly.

Pack a cooler and fill it with ice

Make sure the cooler is clean, and fill the cooler with full-size jugs or bottles of your family’s favorite beverages. Bring reusable beverage containers and refill your bottles with ice and drinks as you go. You can save even more money by making your first round of ice ahead of time. If you didn’t have time to thoroughly disinfect your cooler, transport ice in doubled-up gallon-size zip-top bags.

Bring some things to make a fast meal

You never know where your journey will take you, so pack some meal-worthy food. Bring peanut butter, jam and bread. Bring slices of cheese or lunchmeat. Pack a few bags of trail mix. You won’t regret it when you can say no to a slice of three-hourold gas station pizza.

Pack your medicine and toiletries

Forgetting your medicine can mean paying a premium for it along the way. Make a list of your medications ahead of time and check it before you pull out of your driveway. Do the same for your toiletries.

Pack a travel charger

Who wants to pay 15 bucks for a flimsy phone charger at a convenience store? No traveler ever. Make sure you bring charging cords that are vehicle compatible and capable of charging all your traveler’s devices.

Always travel with the indispensables

Always have these in your car, no matter what the age of your travelers: sunscreen; insect spray; baby wipes; sunglasses; a roll of paper towels, a couple of plastic shopping bags and umbrellas. So many travel mini-crises can be a verted with these simple items.

Think about gas

If you are going on a lengthy trip, it might pay to research gas prices along the way. There can be big differences in prices per gallon depending on where you are.

Keep the cash

Make sure you start your trip with cash. There are still places that don’t take debit or credit cards, especially mom-and-pop places that are quintessential for travelers. Get cash out before you leave so you don’t have to pay exorbitant ATM fees along the way.
