PRESENTING THE PAST Kevin Davidson considers himself “very, very fortunate” to have established a faithful following of collectors and enthusiasts interested in his paintings.


M

any may think of art as delicate works behind glass, ringed by gilt frames. Others envision immobile blocks of marble standing in a sterile, silent, museum foyer. But most art is found outside of museum walls. Many once-unknown but now appreciated artists of the past used what some considered commonplace objects. One man in Dorchester County intends to continue the tradition of making ordinary objects into uncommon works of beauty. Kevin Davidson has always enjoyed art. He created flat art — painted on canvas or paper — for a time but was restless to find a path of his own. Handpainted advertisements and signage interested him, and well-designed materials made him curious to learn more about a quickly fading art form. Living in Cambridge allowed him the opportunity to watch and learn from the old-school hand letterer Burton Whaley, owner of Whaley’s Sign Shop. He was fascinated by the clean, graceful lines flowing from Whaley’s lettering quill. Those lines reflected years of experience, so Davidson began designing pieces using stencils, shortly moving to hand-lettering.

Davidson is known for his talent in composition and design, and he has a particularly keen eye for details most do not notice. He loves the way signs and utilitarian objects age. The patina gained from hot summers and brittle winters is his specialty. “I like to take time and look at the details of something” is how he casually describes his uncanny notice of years of wear. He is patient in his observation, and he replicates age with unflinching precision. Distressed boards, doors and weathered firkins are all used for his paintings — he routinely buys old nails and dated hardware. The materials contribute only a portion to his success in recreating vintage signs. He has studied the patterns of how old things weather and wear. Though he uses durable and readily available materials, like 1 Shot enamel paints, he has developed techniques to make the paint look and feel old. He will not explain how he does it, but his style is convincing enough to fool experts.

“I’ve been very, very fortunate,” Davidson comments as he considers his work. He is supported by collectors from around the country who wait in line to buy his latest paintings. His folk-art trade signs have appeared in movies and hang in corporate offices of large companies as a reminder of long-gone brands that were once household names. The work of Kevin Davidson is a reminder. It points to another era, before speed became the currency of progress. It was when ordinary objects, like painted signs advertising oysters, cigars and beer, had time to weather and hang undisturbed for years. They are fading history, and his eye for detail notices the charm found in those things nearly forgotten. Instead of lamenting the loss, he is reviving the love for a lost art form. With old boards, paint and a brush, he is restoring its legacy. CS

Imperfections at Their Finest THE ANCIENT ART OF JAPANESE “KINTSUGI” HAS COME TO LEWES Story and Photography by Deny Howeth

In his small, upstairs Lakeside Pottery Studio in Lewes, Morty Bachar uses kintsugi to mend broken pottery while taking traditional Japanese techniques in new directions. Historians say the art of kintsugi was originally used to repair a broken pot for an important aristocrat who then proclaimed the repair was more beautiful than the original piece. There are few kintsugi artisans in the country, and Bachar is one of them. His most famous work is a red vase that was created by a potter friend in record time who was able to produce the specific red glaze the United States State Department desired. He then, unfortunately, shattered it. Using kintsugi techniques, Bachar repaired the vase, which was later presented by President Joe Biden to thenJapanese Prime Minister Yoshihide Suga in April of 2021.

The always jovial Bachar still carries a light accent. Born and raised in Israel by Bulgarian immigrant parents, his family moved to the U.S. in 1981. Bachar began his career as an engineer but then transitioned to operate the very successful Lakeside Pottery Studio in Connecticut. While teaching ceramics, Bachar recognized how heartbroken his students would be to discover, after long hours of work, their pieces were broken in the kiln during the firing process. “I secretly mended the pieces before the class,” Bachar said. What he didn’t realize was that his path to kintsugi had begun. When fixing a broken piece, instead of hiding the repair, kintsugi uses gold to highlight the blemish. Kintsugi, he said, “is a metaphor people can apply to themselves. Emotional or physical scars can be carried with pride because those are what make you beautiful.”

About 10 years ago, a priest asked him to assist with a ceremony involving kintsugi. He researched the art form and discovered it was difficult to find artists and materials. After a few months of experimentation, Bachar felt the quality met his standards, and he began offering kintsugi through Lakeside Pottery Studio. There are several steps to complete a kintsugi repair: preparing the surface, bonding the surface and applying gold powder. Bachar spent more than a year developing a proprietary blend of powdered metal and bonding materials to mimic the look of gold. “Gold paint or glaze just doesn’t have the quality of interacting with light the way real gold does, but the process I created is extremely close to it. It is offered at a lower cost compared to real gold, making the kintsugi art more affordable to many more who seek to use the beautiful metaphor,” he said.

His first purposeful 3D repair came from an artist friend who found himself on hard times. Priceless Mexican pottery had been entrusted to his friend for repair, but the efforts were not flawless. Bachar researched how to make a seamless repair and helped the artist fix the pottery, so he could keep his client, and this opened the floodgates to his restoration business. While developing this aspect of his business, he accidentally broke a plate his wife adored. “I’m still not completely convinced it was accidental,” Bachar’s wife, Patty Storm, said. “I decided I would record the process of a seamless repair and post it on my website for others to learn from, and the number of hits on that page taught me there was a niche for this type of business and a hunger for education,” Bachar said. He shares his knowledge freely with anyone who wants to know. Bachar’s mind is always in motion, looking for solutions. “With restoration, my goal was to not see the repair. So, I began my journey of researching materials, testing and experimenting with epoxy adhesives, fillers and glaze companies,” he said. Eventually he landed on a material that could withstand UV light without altering colors and sheen, and he convinced his supplier to produce a new product, which has since become the new standard for 3D art restoration. “With any frontier, you make a lot of mistakes,” he said. By helping others along the way, he has created new products and a business that today leads the industry. Bachar and Storm wanted to relocate to an area that had similarities to Storm’s native Maine. A new customer in the Lewes area introduced them to eastern Sussex County — and that was all it took. Now in Lewes, the studio does seamless repairs on priceless heirlooms, as well as sentimental objects, achieving the exact tone and depth of paint to match. He also does custom kintsugi. If you already have a broken piece or select a piece of pottery from the website, Bachar will break it with as many cracks as requested, repair it with the technique and stay within your budget. Choose gold or his gold effect metal blend, which is indistinguishable from real gold and more economical for the client. CS

Her heart is in Provence — and her spirit is in curating and developing lifestyle collections of artisan wares for her online marketplace, Magali Boutique. Fabiola L. Nadjar Fiore grew up on the French Riviera, and in some ways never really left. Her e-commerce shop reflects the culture and aesthetic of this region and others across France and the world. “France has a lot of creativity and different materials and mediums that are used to fabricate everything for the home,” says Fiore, now of Millsboro. “They are very colorful, bold, and this is represented in patterns, whether for textiles or porcelain.” She was also inspired by the 1600s, when kings would travel to the Indies for batik and goods, and this influence is represented in her virtual shop. As for the name Magali, Fiore collected dolls from French regions as a girl and was inspired by their folkloric outfits. A particular doll in Provençale dress had no name, so Fiore thought about the traditional dance townspeople led after Sunday mass, called Magali La Farandole. The doll and name Fiore gave her, Magali, came to life as the poster child of Magali Boutique. Just as each region of France has its own music, dance, crafts and characteristic trade, Magali Boutique’s expansive collections have the same essence. It started with categories: textiles, pottery, glassware, china, aromatherapy, specialty foods and stationery. “Now, we have everything you need for the home,” Fiore says of the shop’s growth.

Curating Collections Magali’s “bespoke luxury lifestyle collections” are created by artisans producing one-of-a-kind and custom work, along with those who offer items you won’t find just anywhere. There’s a decidedly global feel to the shop. “For a while, I was going to about 25 shows a year for all the different industries I represent, to seek out different products,” Fiore says. As a member of the French American Chamber of Commerce in New York City, Fiore connects with artists and business owners by obtaining trade lists. This way, she can identify new and interesting wares to showcase and sell in her shop. She goes a step further and reaches out to French province chambers to source artisanal items. “Suppliers also find me,” she says, adding that the online shop has an advantage over a storefront in the global market. It expands her reach. “It’s more international,” she says. Fiore is interested in doing more than selling products from France and other countries. “I want to teach people, ‘This is where it’s from,’ and through the products, show how they are made by showing pictures of the artisans and their work,” she says.

Always Innovating In the beginning, Fiore was an importer. “I was going to the airport, going into the bonded warehouse with the customs broker, getting my merchandise,” she describes, relating that this was before e-commerce and direct shipping were mainstream or even a thing among retailers. Fiore is always thinking ahead. “I’ve always put myself at the beginning of every kind of action, and that started with getting this business online,” she says. When e-commerce began taking off, Fiore was at the forefront. She reflects back to the early days, when the only search engine available was Yahoo! It’s hard to imagine in today’s Amazon world. “I was even teaching people at trade shows and fairs what it was to be online,” she says. Fiore recalls meeting with suppliers at gift shows and events who didn’t understand how she’d pull it off. Today, Magali Boutique’s artisans ship directly to customers in a seamless transaction. And Fabiola continues to seek out fresh ways to connect with clients, such as presenting a booth of her products at farmers’ markets, wineries and other artisan events.

Magali Boutique is just as much about sharing culture and expanding horizons as it is a dynamic marketplace. For example, “If you tell someone, ‘I sell tablecloths from France,’ right away they will think of a jacquard-style cloth of solid colors, but what I sell is totally the opposite,” she relates. “It’s mimosa, bold reds and yellows, mint green — it’s flashy, and there are more subtle ones too.” Offering a taste of tradition and modernity is the Magali Boutique way. Fiore says, “Our boutique and its collection indulge all of our senses — sight, smell, touch, feel, taste and sound.”

A Creative Edge Fiore started a new collection last year, upcycling glass bottles she collects from restaurants. “I bring them to the kiln, get them slumped, fused and shaped into trays or bowls that maintain the shape of a bottle,” she describes. The serveware is selling. “I made more than 250 of them last August through November,” she reports. Fiore works with Nancy Robinson of Back Bay Art Glass, who also provides colored glass. This inspired Fiore to design a tabletop line of glassware and dishes. “I started cutting the glass in half diagonally and fusing different colors together,” she says. “Those are part of the Fun and Fancy line. Diagonally cut pieces are called Diago Duos.” Sometimes, Fiore will add marble glass and colored chips to decorative dishes that can be used to hold jewelry or trinkets. Fiore reflects on her Wall Street banking career days when, on the side, she would design clothing and ask her father to take it to one of his students at Columbia University or Parsons School of Design. “I would go to the jewelry district and up and down the floors to seek wholesalers and give them my designs,” she relates. Once, she discovered a quaint fabric shop in the Flushing, Queens, where she purchased some material. “I asked the owner, ‘Do you know a tailor?’ and he said, ‘Yes, go to the back of my store.’ He introduced me to his tailor and assistants, and I made an entire collection of fashion for my mom and me.” A vibrant connector and creator, Fiore is devoted to delivering fresh ideas, and she will continue to curate limited and specialty products to share with the world through Magali Boutique. She says, “We are committed to offering authentic, finely crafted products from [French] regions.” CS

“We value handmade items, craftsmanship and artisans.” “My partner, Sara, and I were looking forward to growing a family. I thought it was time to consider changing careers, to do something less dangerous,” said Mark. “This area was a great place to grow up, so I knew it would be a great place to raise kids.” Around that time, his older brother passed away from a heart condition, so Mark wanted to be near family as well. Once back, Mark began giving ecotours across Cape Henlopen, through his brother Matthew’s company, Quest Adventures. While he enjoyed the opportunity to connect with nature, the off-season was slow, so he searched for a side gig. Mark wound up at Dogfish Head Craft Brewery, where he was hired full-time to oversee the brewery’s events. Fourteen years later, he is the company’s Beer & Benevolence director. He still manages events but also focuses on the brewery’s significant philanthropic initiatives by collaborating with local nonprofits and leading community relations. “My role is not so much marketing but more like, ‘Okay, there’s a town park. How do we help make that grow?’” said Mark, adding that his time as a public affairs officer in the Marines translated well to his community work at Dogfish Head. While fatherhood, his career at Dogfish Head and guiding ecotours for Quest Adventures certainly keep him busy, Mark found time to take up woodworking as a hobby. “Sara is the director of the Rehoboth Art League, so she and I travel and look for art. We value handmade items, craftsmanship and artisans,” he shared.

SKY’S THE LIMIT It would seem perfectly logical for Mark Carter’s natural woodworking ability to grow into a business, since it appears he can make almost anything out of wood.

Mark’s interest in woodworking was sparked by a lifelong desire to sail. He came across an Annapolis-based company called Chesapeake Light Craft, which specializes in making boatbuilding plans, kits, supplies and gears. Through working with the company and learning the foundations of woodworking, he discovered he had a genuine aptitude for the craft. Today, Mark’s portfolio boasts a wide range of exquisite wood-based pieces, such as beer totes, cutting boards and more. He independently hand-builds each piece in his farm-based studio, and everything is both purposeful and complementary to nature’s intrinsic splendor. Mark’s hobby has since blossomed into a successful side business called 7 Hands Wood Craft. The name is derived from a project during which Sara’s family of seven and Mark worked together to build a chicken coup. Mark has recently showcased his work in two artisan shows, during which he sold out of just about every item he brought while receiving numerous requests for new commissions. REINVENTION Though she has a devoted clientele from her expertise as a landscape designer, Jan Kirsh’s talent as a sculptor has brought her a whole, new audience.

Jan Kirsh is an ebullient creator. Her passion as a landscape designer has earned her a devoted clientele that trusts her expertise. But she is a sculptor too. Her whimsical work springs from the soil in quiet gardens or looks freshly picked when displayed in homes, local resorts and prestigious galleries. Stylized and colorful, her sculptures always suggest they belong right where they stand. PASSION PLAY Regarding her sculpture, artist Jan Kirsh says, “Once I got going, I was obsessed.” Today, she says she can’t wait to get up in the morning to continue her work.

“Once I got going, I was obsessed,” she remembered. She began with a pear but quickly shaped a habanero pepper, avocado, asparagus and others. Her inspiration was the work of photographer Edward Weston, known for his dramatically lit and interestingly cropped black-and-white photos of vegetables. The primary burst of creativity was exciting for Kirsh. “I couldn’t wait to get up,” she recalled with a smile. But enthusiasm was not her sole motivation. She asked for feedback from others, and what she heard was encouragement to move forward with her ideas. Initially, she was motivated to place her sculpture in gardens, so the scale of each piece was important to her. Though she was creating one-of-a-kind pieces, Kirsh had always been interested in making multiples and experimented with the moldmaking process. She is indefatigable in searching for the results she is after and not afraid of combining traditional and modern techniques. Kirsh works in clay and collaborates with Direct Dimensions in Owings Mills, MD, to scan and replicate the cast-resin sculptures. The final sculptures still require her skill and patience in the finishing process and will withstand the elements in the gardens she designs.

Three-dimensional sculpture adds variety to her work, but she also creates two-dimensional panels used to loosely separate spaces in garden landscapes. A recent one, called the Grape Screen, features aluminum panels with a waterjet-cut grape pattern. She has begun the drawings for another, featuring succulents.

Kirsh moves from one discipline to another without fumbling. Her sculpture is at home, surrounded by her landscape design, seamlessly blending the difference between plants and sculpture. Unmentionable:

The Indiscreet Stories of Artifacts 1

What do bloodletting tools, a bazooka rocket and a catalog featuring the latest fashion trends for the recently departed have in common? They are all currently on display in the Nabb Research Center’s latest exhibition, Unmentionable: The Indiscreet Stories of Artifacts. Unmentionable examines some of the controversial, intriguing, disturbing and surprising artifacts in the Nabb Center’s collection. The exhibition highlights not only objects we find difficult to discuss but also provides a peek behind the curtain of museum collections and practices. Just because an artifact might be considered disturbing or odd by some doesn’t mean it shouldn’t be preserved. In a museum setting, artifacts illustrate a moment in time, a social movement, a person, a place, a scientific development, or an idea. Artifacts stay the same, but their meaning changes based on what is happening around us. Like many historical repositories, the Nabb Center has been given some unusual and sometimes offensive items over the years. The inspiration behind Unmentionable comes from the “curiosities” that often find their way into museums.

1. Brooch of Human Hair During the Victorian era, mourning attire extended to jewelry and other accessories. A popular trend in mourning jewelry was to have elaborately woven bracelets, brooches, necklaces, and earrings made from the human hair of the deceased. This brooch woven of human hair belonged to Mary Rider of Salisbury. Her mother, Josephine A. Toadvine Rider, was born in 1841 and died of “consumption” (tuberculosis) in 1883. Mary, being only 9 years old at the time, likely received the brooch to remember and honor her late mother.

BELOW THE SURFACE Undergarments seem to be abundant in historical collections. The Nabb Center has many wedding trousseaus, which include undergarments.

2. Bazooka Anti-Tank Rocket Shell This bazooka rocket shell was manufactured in Crisfield, at the Carvel Hall factory. Carvel Hall was founded in 1895 by Charles D. Briddell. What began as a modest blacksmith shop making carts, farm equipment and crab and oyster harvesting tools, became a thriving business. During World War II, Carvel made machetes and over two million bazooka shells for the war effort. Soon after the war, the company became world famous for its Carvel Hall steak knife. This shell was given to the Nabb Center after the donor found it in the basement of his mother’s home.

3. Mortuary Collections Last year, the Nabb Center was contacted by Holloway Funeral Home when they were looking to donate a collection of historic items used by both Holloway and Stewart Funeral Homes in Salisbury. The Center gladly accepted the collection and several items are on display in Unmentionable. From portable embalming jars and tools to sales catalogs featuring the latest in burial fashions, the collection, while perhaps considered macabre, provides a wealth of information about historic mortuary practices. 4. Women’s Unmentionables From restrictive garments, such as corsets and hoop skirts, to sheer slips, women’s undergarments have evolved to complement the silhouettes popular during the day. Changes in undergarments also paralleled women’s changing role in society. Undergarments seem to be abundant in historical collections. The Nabb Center has many wedding trousseaus, which include undergarments. This makes sense, as one is more likely to keep items associated with a wedding. Odder are the countless everyday slips, chemises and bloomers that fill collections. We don’t think about donating our used underpants to a museum, but luckily someone did!

In November of 2015, Dickerson’s senior year at WPS, he signed a letter of intent to play and attend college at University of Tampa. According to Dickerson, it was the values he learned at WPS that helped him transition into college. “In the classroom, I felt very comfortable and adapted well to the workload that higher education demands, because of the tools and fundamentals Worcester Prep taught me,” he said. “On the field, the transition was much harder. Everybody in college was the best player on their team in high school; fortunately, my athletic experiences at Worcester Prep instilled values in me, such as determination and perseverance, so I was ready for the challenge.” At University of Tampa, Dickerson played Division II lacrosse his entire college career, for which he received academic scholarships each year and an athletic scholarship his junior year. As we built a program from scratch, we made sure the team foundation was focused on similar team values.” Early in Nechay’s senior year at WPS she signed a letter of intent to play Division II field hockey at Queens University of Charlotte in North Carolina, where she was one of the founding players of the team. “It was by far one of the grittiest yet fun and rewarding experiences,” she said. Nechay thanked WPS for implementing the tool of time management, both academically and athletically. “I quickly learned the importance of scheduling and organization, to make sure I was always putting my best foot forward,” she said. “Athletically, I learned humility, as well as confidence. We learned to win and lose with grace and to always represent Worcester in a positive light. I also learned the value of a team and how each player plays an important role in order to be successful; we had to work in unity.” Looking back Nechay’s favorite memory of WPS were the celebrations after big wins. “After each big, hard-earned win, we would all sprint to our goalie, and our group hug would stumble into a dog pile. Especially when we would beat a rival. Those were the sweetest of victories,” she said. Competing in college, Nechay had the opportunity to travel to Ireland. “Getting to travel to a country I had never been to, with 20-plus girls I called my sisters, was amazing enough, but getting to compete and train at that level was an experience I will never forget,” she said.

AT THE READY Regan Lingo learned the importance of “balance” during her time at WPS, which helped propel her into a positive college experience.

According to Leigh Lingo, WPS consists of a dedicated support system that recognizes students’ hard work both on and off the field. Offering many athletic and academic resources, WPS helps students succeed and reach their full potential. “Throughout my time at WPS, I was able to develop time-management skills, which allowed for an easy transition when becoming a collegiate athlete,” she said. “Committing 20-plus hours of your time a week while balancing a full course load can be challenging, but I was able to adjust quickly because of what I had learned throughout middle and high school.” Prior to graduating from WPS, Leigh Lingo signed a national letter of intent to attend and play lacrosse with Virginia Tech. She played Division I lacrosse at Virginia Tech all four years while earning her undergraduate degree. Now, she has her eyes set on a graduate degree at the University of Florida, where she plays Division I lacrosse. oward the end of 2013, Carol Skaziak was deeply troubled by one aspect of her profession. As a public relations representative for a luxury boarding facility outside of Philadelphia, she began to see a pattern develop — one in which owners of high-energy dogs were not returning to pick them up at the conclusion of their stays. Feeling the need to share this information, she wrote an article titled “Throw Away Dogs,” which appeared in the Philadelphia Inquirer. The story also generated more desire to change the situation herself. Determined to change the way the dogs were viewed, she wanted to repurpose and give them a new, happy life. But Carol’s mission was to do even more — and her dedication would benefit police departments and communities across the country. Married to officer Andrew Skaziak of the Philadelphia Police Department, Carol knew firsthand the value dogs brought to departments and the communities in which they served.

“Being a part of the family in blue, it seemed only natural to help our police departments who couldn’t afford a K9 dog, but also being able to have a dog trained to become a service dog to help a veteran perform everyday tasks with some comfort was a no-brainer,” Carol said. “It was then decided that the dogs will be donated to police departments and veterans around the country. Saving a dog, while helping the community that the dog serves in — a win-win for all involved.” Within a few short months of writing her article, January 2014, she filed for nonprofit status with her business partner, K9 officer Jason Walters, and the Throw Away Dogs Project was officially born. Operating under the principles to repurpose, train and relocate “unique” dogs to positively impact communities, the organization has had more than 30 K9 placements within police departments across the country, as well as within the federal government, to date. Throw Away Dogs Project also strives to enhance the relationship and abilities of officers and their K9 partners. In April, with the support of the Worcester County Sheriff’s Office, the organization hosted a specialized, three-day training retreat for nearly 100 K9 teams from across the country and Canada at Frontier Town Campground in Berlin.

“If they must make a split-second decision, we want to help them make the right decision that will save lives,” Carol said. “We feel this is so important, especially in today’s world and with the budget cuts taking place. This is so necessary.” “This event would not have been possible without the support of local businesses and the community,” said Lt. Bethany Ramey of the Worcester County Sheriff’s Office. The event included tactical training and lifesaving technique exercises, as well as motivational speakers, meals, entertainment and gift bags at no cost to the officers. A special tribute was paid to Hatboro, PA, K9 officer Ryan Allen, who died in April from complications from a bee sting. Officer Allen was an instrumental member of the team who planned the retreat. Throw Away Dogs also announced the debut of its Blue Program — a support-and-outreach initiative in partnership with Leashes of Valor, which provides emotional, mental and physical comfort to first responders. “This event was a wonderful opportunity for Worcester County, the Throw Away Dogs Project and all of the teams that came to participate, some from as far as Canada,” said Worcester County Sheriff Matt Crisafulli. “The relationships that were formed among these officers will last a lifetime. few years back, I visited one of my daughters, who lives in the rural Midwest. One afternoon, I volunteered to do the grocery shopping, so I scuttled off to the local supermarket. Pushing my cart through the produce section, bereft of organic options, I stumbled upon bottles of high-priced Aronia juice, positioned like elite players waiting for selection by a collegiate coach. Signs in neon cardstock, with “local” written in black Sharpie, announced the availability of the deeppurple juice. Aronia berry often takes backstage to the more popular elderberry. Maybe Aronia berry’s (Aronia melanocarpa) more common name, chokeberry, prevents the North American shrub from elevating to health-food-celebrity status. But it’s just a matter of time before this super-berry gets the attention it deserves. Interestingly, the antioxidant capacity of Aronia berry exceeds that of elderberry. So, this year may be the year to make Aronia berry a part of your health-wellness protocol.

ARONIA BERRY SUPERPOWERS Over the years, I adorned my backyard with various varieties of edible delights. Aronia performs well in my area. You could try your hand at growing a few Aronia shrubs. Before investing in plants, check if they thrive in your growing zone. It’s been about seven years that I’ve managed my hedge of lush Aronia foliage. Harvesting the fruit begins in late August to September. During harvest, buckets brim with berries. I suspect, however, that if supermarkets stocked pints of fresh, astringent Aronia, I am sure that the thin-skinned fruit would land on the Environmental Working Group’s Dirty Dozen list. As a farmer, I know my Aronia shrubs are ready for harvesting when the branches bend with clusters of dark-velvet berries. But, as a healthand-wellness coach, I wanted to dig deeper into Aronia’s medicinal and nutritive properties. Before losing my nerve, I contacted Dr. Andrew Ristvey, extension specialist for Commercial Horticulture. We met for an interview in which he explained that “the color of the Aronia berry is a tell-tale sign of high concentrations of flavonoids, including phenolic compounds.” Dr. Ristvey mentioned that plant phenolics provide antioxidant benefits. For example, fresh Aronia berries have the highest antioxidant capacity among berries and other fruits. Therefore, eating plants rich in antioxidant fruits and vegetables reduces the risk of many oxidative stress-related diseases like cancer, heart diseases and diabetes. For example, recent studies show that chokeberries inhibit the growth of colon cancer. Vegetables and fruits like Aronia also contain anti-inflammatory qualities, an added benefit. WAYS TO USE ARONIA BERRY These days, it’s pretty common to find bottled Aronia juice in supermarkets throughout the U.S. and Canada. My only caution is to pay attention to the sugar used to sweeten the juice. After all, you want to distance yourself from refined sugar, so note the amount of added sugar. In addition, industrially made Aronia juice is often expensive, so stock up when you see it discounted. Finally, because of Aronia’s powerful medicinal qualities, try to consume it in as many forms as possible. SYRUP, TONICS AND TEAS Syrup, tonics and teas are easy to make and store. Herbalist and author of Making Plant Medicine, Rich Cech, recommends making syrups and decoctions for bitter herbs when using the roots, berries, barks or herbs seeds. But again, the trickiest part of making syrups, tonics or teas is choosing the healthiest sweetener. Word of caution: Choose the sweetener with the maximum health benefits. My favorite sweeteners for syrups and tonics are raw honey and date syrup. Dates provide potassium, calcium and magnesium. In addition, because of their high fiber content, dates are a healthier sweetener on the glycemic index.

SERIOUS SUPERFOOD Though elderberry may currently enjoy an edge in popularity, the antioxidant capacity of Aronia berry is actually greater.

JUICE, JAMS/JELLIES AND WINE As you search for jam and jelly recipes, collect only those recipes using plantbased sweeteners. ARONIA BERRIES IN SMOOTHIES/SMOOTHIE BOWLS Wellness-boosting ingredients, like fruits and vegetables, are the essential ingredients in a smoothie. Adding Aronia berries to your blend increases the nutritional value. Nutritionally, the best way to use smoothies in your eating plan is to view them as a supplement, not as a replacement for real food. However, if you need to skip breakfast or a quick snack, smoothies serve as an excellent fallback. Add a handful of fresh or frozen Aronia berries to any smoothie recipe. Let Aronia berry occupy shelf space in your refrigerator and medicine cabinet this year. Then, toss the fruit in your smoothie, smoothie bowl, muffins and granola recipes.

ARONIA BERRY HEALING SYRUP RECIPE Inspired by Farmhouse Teas Prep Time: 25 min Cook Time: 45 min Total Time: 70 min

Ingredients: 1 cup Aronia berries, dried or fresh 6 cups of water, filtered ⅛ cup astragalus root, cut and sifted ⅛ cup echinacea root, cut and sifted ½ cup orange peel, dried ½ cup rose hips, dried 10 cloves 1 Tbsp cinnamon bark chips 1 Tbsp ginger root, dried ½ cup raw apple cider vinegar 1 cup raw, local honey ½ cup elderberries, dried or fresh (optional) Instructions: Bring filtered water, Aronia berries, dried herbs and elderberries to a boil in a medium saucepan on the stove. Once the herbs and berries are boiling, cover with a lid, then reduce to a simmer. Simmer the herbs and berries for about 30 minutes or until the liquid is reduced by half. Strain the berries and herbs from the mixture using a fine-metal sieve or an unbleached cheesecloth, carefully removing all of the juices. A metal potato masher, wooden spoon or silicone spatula can help remove them without the mess of the juice and getting burned from the heat of the herbs. Pro Tip: If you have a French press, it works well in place of a sieve to get all the juices removed from your decoction. Once strained, dispose of the pulp in your compost pile and let the Aronia berry juice cool to room temperature. It is essential to allow the liquid to cool. Otherwise, the heat will kill the beneficial enzymes and nutrients in the raw honey and apple cider vinegar. Add raw apple cider vinegar and local raw honey after the juice has cooled to the touch and is no longer hot. Whisk well or use an immersion stick blender to incorporate the honey and vinegar well. Pour into a quart-size Mason jar and store in the refrigerator. You can store it safely for up to two weeks. This recipe can be doubled or cut in half to accommodate your needs. Supplement one tablespoon daily for adults. When fighting a cold or flu, increase to one tablespoon every two hours until symptoms subside. CS

HIGH EXPOSURE SKIN CANCER ON THE SHORE IS PROMINENT, BUT MOHS SURGERY OFFERS HOPE Written by Dr. Sara Moghaddam One in five Americans will get skin cancer during their lifetime, so the chance that you or a family member will encounter a discussion of a skin cancer diagnosis and treatment is likely. My partner, Dr. Curtis Asbury, and I were trained by one of the national experts in skin cancer detection during a three-year dermatology residency. During this time period, we became experts in early detection and treatment of common skin cancers related to sun exposure. The main reason I moved to this area was because of high numbers of skin cancer and the need for more dermatology services in our community. Mohs micrographic surgery, or Mohs, for short, is a unique treatment because the person performing the procedure is both the surgeon and the pathologist. It offers the highest cure rate available and allows us to save as much healthy skin as possible which becomes important in areas of the body where there is little tissue to work with. Who performs a Mohs surgery? Only a board-certified dermatologist who has extra training in Mohs surgery performs this procedure. Last year, the American Board of Dermatology created a new board exam to make sure dermatologists are competent in performing Mohs surgery. You should ask your dermatologist, “Are you board certified in Mohs surgery?” This distinction will help ensure you are in good hands. If somone was recently diagnosed with skin cancer, should they pursue Mohs surgery? If this is a non-melanoma skin cancer involving the face, scalp, ears, hands, shins or feet, the answer is yes. Mohs surgery is the gold standard in these areas, since conserving normal skin is very important. Skin cancer in other areas of the body, when small, can be treated with other treatment options outside of Mohs that have pretty good cure rates. If, however, the skin cancer on the trunk or extremities is very large or aggressive, or if it’s a recurrence from a past cancer, then Mohs surgery is appropriate to consider. Why is Mohs surgery better than other treatment options? Mohs surgery is superior because it offers the highest cure rate and smallest scars. This is especially critical with cosmetically sensitive areas, such as the face. It also allows us to have results immediately and ensure the cancer is fully removed all in one day. CS

Pioneering medical education TidalHealth to welcome first class of residents this summer It’s a busy time for Dr. Hameem Kawsar and his team. As summer approaches, they are steadily working to prepare for the next generation of physicians who have selected TidalHealth for their residency training in Internal Medicine. The program, in its first year, attracted more than 2,000 applicants, all of whom were hoping to land one of the 10 open slots.

According to Dr. Kawsar, there is much to do prior to their arrival. Each resident must have a background check, obtain a medical license, and complete two weeks of orientation before they can begin caring for patients as part of their medical residency training. “We are currently working on their rotation schedules for their clinical experiences, their didactic schedule and other components of training, he said. “We are also sending them information regarding apartment complexes, schools and neighborhoods so they can choose a place that is a good fit for their families.” Applicants were evaluated on test scores, their medical school graduation year and performance evaluation, letters of recommendation and clinical and research experience. Dr. Kawsar said virtual interviews were scheduled for the Top 240 candidates, and 10 individuals were ultimately “matched” with the program. Coming from all over the East Coast, these medical school graduates will train at TidalHealth for the next three years, from July 2022 through June 2025. Each year a new class 62

of 10 will start, so once fully up and running there will be 30 physicians in the program. Upon their completion of the program, they will be eligible to take the American Board of Internal Medicine examination to become a board-certified physician. Once they graduate, they can choose to be a primary care physician; a hospitalist, caring for patients who have been admitted to a medical facility; or they can pursue further training to become a specialist. "Our residents will not only practice medicine, but will also participate in quality improvement and patient safety and clinical research to improve the quality of care and lessen adverse outcomes,” Dr. Kawsar said. “Our main focus is to train highly skilled, clinically competent physicians who will treat their patients with respect and compassion, and practice cost-conscious and evidence-based medicine.”

In TidalHealth’s hybrid operating room, clinical teams perform symphonies. Leading the group like a conductor is the surgeon, who gives direction to the orchestra (a talented group of healthcare professionals) to ensure they don’t miss a beat. That surgeon is Dr. Sophia Shakur, a James M. Bennett High School graduate who returned home from medical school to provide a brandnew service to her community: minimally invasive neurosurgery. Assisted by high-tech equipment with advanced medical imaging capabilities, her team is dedicated to achieving positive outcomes for their patients — and their families.

Minimally invasive surgery has many benefits, Dr. Shakur said. Not only is there no incision — procedures are performed with a needle puncture — but patients typically experience shorter hospital stays, faster recoveries and better outcomes. The hybrid operating room at TidalHealth Peninsula Regional where these procedures take place, the first of its kind in Maryland, is a surgical suite with an interventional angiography biplane unit. Its two radiographic X-ray detectors provide images in two planes simultaneously: one from the front and another from the side. There are other healthcare facilities in Maryland that have this technology, but Medical Imaging Senior Director Mary Lou Melhorn

“TidalHealth has the same capability as the larger academic medical centers to provide advanced neuro procedures here on the Shore,” Melhorn said. “Providing this service closer to home is making a big difference for our patients — in their recovery and peace of mind for their families.” Before TidalHealth’s hybrid operating room opened, patients were forced to travel hours away to metropolitan hospitals for treatment. Now, Dr. Shakur said, patients don’t have to leave the Shore. It’s not only convenient, it saves lives. “Time is brain, so this is having a big impact on patient outcomes. It really benefits patients medically to stay here,” she said. “If someone has a stroke, for every 30 minutes that goes by there’s a 10 percent decrease in a good outcome.” Dr. Shakur operates on patients with strokes, brain aneurysms, vascular malformations and intracranial stenosis (the narrowing of arteries in the brain), to name a few. Minimally invasive neurosurgery drew her in because the diseases are more acute and patients experience quicker recoveries.

Pioneering robotics New technology yields smaller scars, quicker recoveries “I couldn’t even lie down, I had to sleep in a chair.” Something was seriously wrong with Samuel Malcomson. The Seaford resident was having trouble breathing, and something was weighing on his chest. A scan showed it was a large amount of fluid in the sac around his heart. The patient went to see Dr. Kurt Wehberg, who quickly scheduled him for surgery. Malcomson needed a pericardial window procedure, which opens up the sac to safely let out the fluid. He needed a biopsy too — cancer can cause this condition.

Malcomson was to become the very first patient at TidalHealth Nanticoke to undergo surgery using the da Vinci Surgical System robot. Robotic-assisted surgery with the da Vinci Surgical System allows surgeons to perform complex, minimally invasive surgical procedures with precision and accuracy. BACK ON TRACK DR. WALTER GIANELLE DEFIED THE ODDS TO RETURN TO COMPETITIVE EVENTS AND SHARES HOW HE OVERCAME INJURY AND OBSTACLES ON HIS WAY TO THE PODIUM Written by Jonathan Westman

L

ess than 5% of adults participate in 30 minutes of physical activity each day, and only one in three adults receives the recommended amount of physical activity each week, according to the World Health Organization. Your Doc’s In founder Dr. Walter D. Gianelle, an experienced ER physician and former pararescue team member in the United States Air Force, certainly knows the benefits of exercise. He’s an avid runner, biker and swimmer who regularly competes in regional triathlons, half-marathons and half-Ironman events. But after a 2018 procedure to reduce pressure and pain on the inside of his right knee, Dr. Gianelle was advised by his surgeon not to run any more. That development was both unanticipated and unsettling for the 63-year-old, who’s been active his entire life. “The surgeon told me that the inside of the knee was shot but that my outside compartment was good,” Dr. Gianelle recalled. “So, I thought, Well wait. If I can lose some weight, get better-supporting shoes and find the right knee brace, I might be able to pull this off.” As he began his rehabilitation, Dr. Gianelle weighed 220 lbs. Part of his physical therapy involved walking in a zero-gravity treadmill. As he started the process, the machine assisted him by reducing the amount of his physical weight by 50%. Essentially weighing 110 lbs, Dr. Gianelle was able to walk pain-free, and the process quickly became an investigative journey to discover at what weight he might feel pain again. By manipulating the machine, Dr. Gianelle was able to walk all the way to 195 lbs before feeling discomfort. Thus, he rationalized that if he could keep his weight below 195 lbs, he could conceivably pursue his passion for running again. He was right, and with a sound nutritional plan, a positive mindset and a specialized knee brace, Dr. Gianelle competes in roughly 12 races per year. We asked him about his experiences, advice for new runners, his long-term goals, and perhaps most importantly, what music he listens to when competing.

HOW DO YOU TIE NUTRITION INTO YOUR RACE PREPARATION? I eat really well. I eat a lot of fish, and I alternate between pork, chicken and fish, but fish is probably my biggest source of protein. I eat a lot of yogurt, a lot of fruit and a little bit of salads. I find that if I keep my caloric intake down, I usually can cut the weight.

WHAT ARE YOUR RECOMMENDATIONS FOR SOMEONE WHO WANTS TO GET INTO RUNNING? Start out easy and listen to your body. If you’re on the heavier side, getting your weight down is most important. For me, when I was getting back into it, alternating walking and running was a key, too. What you’ll find is that your walking intervals decrease, and your running intervals become prolonged. I also recommend using a treadmill. It may seem kind of boring, but if you get some music going, you’ll be surprised how fast 30 minutes will go by. Don’t make it work; make it fun. I think those are the keys.

WHAT’S ON YOUR GO-TO PLAYLIST? I’m more of a soft-rock guy — I like James Taylor and Leonard Skynyrd. “Freebird” is probably my favorite song. I like the Steve Miller Band. “Fly Like an Eagle” is a perfect running song. A lot of the challenge is just trying to relax your mind and not think about the run. Just think about relaxing and enjoy it. The prize is at the end because that runner’s high is real. It’s a really nice sense of accomplishment. At 63, I thought this chapter of my life would be closed, but it’s been reborn.

HOW MANY MORE YEARS DO YOU PLAN TO RUN? DO YOU HAVE A GOAL IN MIND? I’m going to go as long as I can. You always face that crossing in the road. You either make a left turn and make your life easier, or you take the more challenging route and turn right. Being in medicine, the Special Forces and starting a business, I’ve always made that turn toward the challenge. When you weigh all of the options and think it’s right for you, pursue it. That’s my plan for running — just as it has been in life. CS

Lovingly renovated old buildings are beautiful reminders. They provide a sense of place and an appreciation of a longgone style. The Wildset Hotel campus contains multiple historic yet thoroughly renovated structures on Talbot Street, the main artery that runs through the town. Ruse, the restaurant that is part of the Wildset campus, works with the hotel to create an immersive experience and offers a fresh take on local cuisine. The name even reflects the local history of St. Michaels, known as the town that fooled the British during the War of 1812. The restaurant captures the restful vibe and emulates the meticulous attention to detail of the entire campus. But Ruse is not only about looks. The style of its award-winning executive chef, Michael Correll, is based on classic technique and features the best ingredients from the Chesapeake region and around the world. “He gets food in a way that I’ve never seen anyone else do,” is how Ball describes the chef’s talent and vision. It is not that the Wildset or Ruse experience rests on one person. “Teamwork” is a word Ball uses frequently in his descriptions of the hotel and restaurant. He is effusive about the group effort that made it possible to not only launch a venture in 2021 but also make it thrive. THE CHESAPEAKE BAY MARITIME MUSEUM CELEBRATES THE ENDURING LEGACY OF WATERMEN AND THEIR INDUSTRY WHILE CURATING AN EVER-GROWING COLLECTION OF TIMELESS TREASURES

Museums are often meant to stand apart, be revered and inspire a sense of awe. But instead of a welcoming space to be explored, they can become a cold and lifeless monument to history. However, some museums still have the lifeblood of history coursing through their exhibitions. The Chesapeake Bay Maritime Museum is one of those. It is alive. The dynamic museum was founded in 1965 on picturesque Navy Point in St. Michaels. The surrounding 18 acres were

the previous site of a thriving collection of seafood packing houses and docks where skipjacks once moored to unload their daily catches. It still retains the Chesapeake Bay flavor of a working waterfront, and some buildings remain after being restored for museum usage. The grounds ideally complement this town with a history of sailing, commerce and maritime exploits. The old Knapps Narrows drawbridge — once standing a few miles away, connecting the commercial-sailing Tilghman Island

community to the mainland — guards the entrance to the museum. Pieces of Chesapeake Bay history rest around the campus. An icon of the Chesapeake Bay region is the screw-pile lighthouse, and the museum owns a classic example of the style in the Hooper Strait Lighthouse. The structure once resided in waters off of southern Dorchester County. The museum saved it from demolition and shipped it on a barge to its current location on Navy Point.

The bandstand from Tolchester Beach, a once-thriving resort near Rock Hall in Kent County, now sits peacefully near the lighthouse. “CBMM is a place to come and experience pieces of history from the Chesapeake all in one place,” says Izzy Mercado, the museum’s director of marketing and brand management. He is right. These objects hold memories like the salt that has soaked into the wood. Perhaps the beating heart of the Chesapeake Bay Maritime Museum is its boatyard. It is practical and necessary to maintain the museum’s “floating fleet” — a collection of vintage vessels that still operate much like when they were commercial workboats. Recently, the boatyard received even greater attention, when it was selected to build a new Maryland Dove, a replica of one of the two trading ships that brought settlers to the original Maryland colony. The ship, owned by the state of Maryland and operated and maintained by the Historic St. Mary’s City Commission, will make its maiden voyage across the Chesapeake Bay later this summer. The construction of the tall ship brought shipwrights from around the country to construct and learn in the museum’s famed boatyard. The dedicated and diverse team at the Chesapeake Bay Maritime Museum brings energy to exhibits. Each day is “always new and interesting,” Mercado said while describing the projects he works on each day. A new library and collections building — a boon for the curatorial team — is nearing completion. Exhibits frequently change, but the museum’s collection of photos, manuscripts, books and oral histories continue to anchor the museum to the Chesapeake Bay community. The Chesapeake Bay region is still thriving, a vibrant community proud of its traditions. And though the Chesapeake Bay Maritime Museum remembers the past, only sawdust covers its collections. The true history of the Chesapeake Bay region continues to flow, and this museum is not just collecting it; it is making it, too. CS

Water views from every window inspired a decidedly coastal interior overhaul in this Easton second home located in a cove off the Tred Avon River. From shiplap finish to a robust palette of blues and greens, the aesthetic is Eastern Shore — and no room or surface went untouched. “When the owners bought the house, it needed a big pick-me-up,” said Fiona Weeks, owner of Dwelling & Design in Easton. The 3,000-square-foot Cape Cod situated on 2.5 acres was built in 2001 and required a revamped floor plan to suit modern living. The existing kitchen was choppy, with a separate dining room, and the first floor lacked necessary office space. The upstairs master bedroom needed a bathroom. “We had a lot of free rein with this project, and because the owner used to work with me many years ago, it made it extra fun,” said Weeks, relating that collaborating and sharing ideas, along with the trust that goes with partnering with someone you know, resulted in a smooth project and stunning results. The previous kitchen included an L-shaped island that was oversized for the space and positioned in a way that created an obstacle and lacked functionality. “It was just in the way,” Weeks said, adding that it didn’t showcase the water views either. The reimagined island is a simple rectangle with room for four barstools. The deep navy finish and crisp marble top juxtapose the cabinets, which were repainted in Benjamin Moore Chantilly Lace, a linen white. Removing some cabinets over the cooktop, allowed for hood space and below it a variegated indigo tile set in a herringbone pattern. A furniture piece adds interest with glass doors that showcase drinkware. Opening up the kitchen and eating area created an airy space. Then, the dining room was converted into an office.

A STUDY IN DESIGN This residence serves as a case study in how a house with quality construction and location can be transformed into a home brimming with charm.

Meanwhile, a fairly bland family room with vaulted ceilings — lots of plain drywall — received some much-needed character, with shiplap ceiling detail. “Adding shiplap can be difficult with angles,” Weeks said of the carpentry expertise required. A statement light fixture, in a rustic, ring-shaped candelabra style, complements the circular coffee table, offset by a sectional in warm gray. All finishes and furnishings were new to the home. Upstairs, a bathroom was added to the master, creating a true en suite without losing living space. A blue-green palette spills from room to room for a seamless transition. The en suite is painted in Benjamin Moore Sheer Bliss, an icy, calming blue. In the main bedroom, Sherwin-Williams Byte Blue covers

walls in a muted teal. Another bedroom, with vibrant indigo walls, add pop against fresh, white trim, carpeting and furniture. To a boxshaped room, Weeks and the owner selected a grasscloth of Thibaut Navajo in gray with a blue accent. “It has a natural weave with a blue trip that goes through it, almost giving it the effect of being shiplap, with a beautiful texture that makes the room far more interesting,” described Weeks. Another space where Weeks applied wallcovering was in the powder room. A navy backdrop with green trellis “pulls everything together as you walk through the house,” Weeks shared. Throughout the home, window treatments warm spaces and draw the eye up. “I’m a huge fan of window treatments and especially

panels, because every room needs peaks and valleys,” Weeks said. Window treatment selections throughout the home add movement, texture and pattern to rooms. Plus, they’re aesthetic and functional. “They warm up the rooms and absorb sound, and they are operational, so you can block out the light,” she says. The Easton residence is a case study in how a home with good bones and a desirable location can be transformed into a place loaded with personality. “It’s a great house, and it just needed some TLC and character built into it,” Weeks said, adding that a close connection with the client made the design project such that “there couldn’t have been a better situation.” CS

A fixer-upper, waterfront home on Bayside Drive in Fenwick Island came across the radar of Dr. Kendra O’Hora and her husband, Jason, at an opportune time in 2019. The couple had recently received the crushing news that they were infertile — news that would later be delightfully disproven when they birthed their miracle son, Lincoln, in the fall of 2021. At the time of purchase, the home’s appearance was outdated and included 1990s home trends, such as naturalwood trim, antiquated appliances and laminate countertops. It’s safe to say that it needed a lot of work to transition to current times, but Kendra and Jason recognized its potential from the beginning. They also saw the home as an opportunity to redirect their infertility grief as they pursued an extremely hands-on renovation. Jason leveraged his extensive background in commercial construction to bring their combined vision to life. One of their first collective decisions was to build two additions that increased the square footage significantly. In addition to increasing the available space, the large-scale renovation included an almost complete gut job. Peeling back the home to its most basic form allowed the couple to rebuild it to meet their specific needs. “The project was a labor of love. There were a lot of design decisions, and we made these decisions together,” shared Kendra. Their vision was to incorporate a clean palette with subtle nods to the surrounding coastal setting. Using their Pinterest board as their guide, Kendra and Jason curated the furnishings and decor themselves by acquiring many of their selections from online retailers.

WIDE-OPEN SPACES In their whole-home reno, the O’Horas placed an emphasis on showcasing coastal views.

Key themes throughout the now 4-bedroom, 3.5-bathroom home are openness and an emphasis on showcasing the coastal views. Black accents sprinkled throughout the residence create a pleasant contrast. A favorite component for the couple is the open kitchen area, which they consider the heart of the home. The renovations were not limited to the interior of the home, as there were also extensive updates to the exterior, which included tearing down an existing screened-in porch and building a spacious covered outdoor area. The couple also added in a pool — another favorite spot for both — that overlooks the bay and delivers a luxurious outdoor living experience. While the renovation was a lengthy process due to its scope and delays derived from the COVID-19 pandemic, there were certainly many high points. “We actually found out that we were pregnant in the house. We have a sweet little video of us finding out while the house was completely gutted around us,” expressed Kendra. Jason and Kendra have completed the renovation stage and are now enjoying their updated home with the company of their young son. They look back to the transformation stage fondly, and they are thrilled at how together they were able to build their dream home. “It’s been a neat journey of renovating while our lives were changing,” shared Kendra. RAISE A GLASS St. Michaels-based Windon Distilling was named 2021 Best Craft Rum Distillery in the annual USA Today 10Best Readers’ Choice Awards.

Drinking rum is like going on an adventure. Just saying the word conjures visions of wooden sailing ships, trade winds and the tropics. Rum is also a historic spirit made with a simple list of ingredients. In St. Michaels, a town known most for its maritime legacy, a decadeold distillery creates a revered version full of quality ingredients and the romance associated with this piratical libation. Jaime Windon founded the Windon Distilling Company in 2012. Owning a distillery was admittedly only a fleeting idea. “I just thought it would be for one or two years,” she laughed. But Windon’s experience — she was a journalist, photographer and world traveler spending years in the hospitality industry — provided the perfect ingredients to distill into being a successful entrepreneur and enthusiastic rum expert. But why rum? “Rum,” Windon said, “is the quintessential American spirit.” Lyon Rum sources its raw ingredients from Louisiana and uses molasses — a by-product of the sugar-making process — to be as sustainable as possible. There is also a rum (Sailors Reserve) aged in former bourbon whiskey American oak barrels. These are ways that Lyon Rum provides the most complex product, using ecologically responsible methods. “We do things the hard way,” she was quick to point out, “because it makes a better product.”

Rum is versatile too. It is fun but also sophisticated and easily used in place of whiskey or other spirits in cocktails. Lyon Rum’s head distiller, Brett Steigerwaldt, has created offerings that show the varied character, color and taste available in this seemingly humble drink. The unique and complex flavors will contradict anyone who thinks rum is a one-dimensional drink lacking in body and substance. Along with carefully distilled white, dark and unique rums aged in bourbon barrels, Windon and Steigerwaldt create liqueurs, featuring coffee, orange and other seasonal flavors. Lyon Rum is also proud to partner with local suppliers for ingredients. One recent collaboration was with Emily’s Produce in Cambridge to produce a raspberry rum. The enthusiastic team not only distilled the rum but also picked the succulent berries to use in the process. The last two years saw its wholesale operation expand, and there have been

awards, such as the coveted Best Craft Rum Distillery in the annual USA Today 10Best Readers’ Choice Awards in 2021. Lyon Rum is not simply an entrepreneurial experiment for Windon, though. Since most people do not know much about rum, there are myths and stereotypes that she and the staff work to dispel. Education and appreciation are key. But the goal at Lyon Rum is clear: The distillery, and those who spend their time and talents crafting such a stellar product, want to be true experts in the field. Perhaps Lyon Rum started as a simple idea, but like the rum it produces, it has taken a group of rum lovers on an adventure. Through hard work and creativity, it is known for superb quality and has a welcome place in a creative community that loves the tang of salt water. Maybe, more importantly to Jaime Windon, it is a cane-to-glass distiller that bottles history every day. CS

CLASSICALLY CREATIVE Award-winning executive chef Efrain Martinez leads a culinary team known for creating authentic and dynamic dining experiences at Papa Grande’s Fenwick Island.


Ingredients: 5 lbs ground beef 1 cup onions, chopped 1 cup Pico de Gallo 1 cup pineapple, chopped 1 cup raisins 1 cup walnuts, crushed ¼ cup garlic, minced ½ qt ketchup 1 Tbsp salt 1 Tbsp ground pepper ¼ cup chipotle in Adobo purée 2 eggs, beaten 1 pack puff-pastry sheets 1 lb queso fresco Vegetable oil Instructions: In a round, hot pot, cook the ground beef with vegetable oil. Put it aside. Clean and use the same pot to sauté onions, garlic and add the cooked ground beef. Let it cook until the meat gets soft and the onions get a nice, light color. Add the rest of the ingredients, saving the chipotle puree until the end, and add that in small quantities until you get the spiciness you are looking for. Cut 3-inch-wide circles on the puff pastry. You can use a soup bowl or cup; the size may vary depending on what you have in your kitchen. Brush the edges of the circles with the beaten eggs. Using a tablespoon, add the stuffing in the middle. Close the empanadas using the tip of your fingers. Brush the top of the empanadas with beaten eggs and bake in a preheated oven at 300°F for 20 minutes — or you can dip fry it for 6 minutes at 350°F. Plate the empanadas using avocado salsa verde in the bottom of the plate, topped with roasted tomato and pineapple salsa, drizzle of crema and a sprinkle of queso fresco.

AVOCADO SALSA VERDE Ingredients: 4 ripe avocados 2 jalapeños ½ cup lime juice 1 cup cilantro 4 garlic cloves 1½ cups water 1 tsp salt 1 tsp pepper Instructions: In a blender, mix all the ingredients; adjust the flavor with salt and pepper at the end.

CREMA Ingredients: 2 lbs sour cream 2 cups buttermilk Instructions: In a mixing bowl, combine the ingredients until you get a nice, smooth mixture.

ROASTED TOMATO AND PINEAPPLE SALSA Ingredients: 1 pineapple 5 tomatoes 1 white onion 4 cloves of garlic 1 bunch of cilantro 4 fresh jalapeños Salt pepper to taste Instructions: On a stove burner or grill, roast tomatoes, jalapeños and onions. Wrap the garlic in foil and roast on the flame. When the vegetables have a nice, charred color, mix with a blender, adding a bunch of cilantro, salt and pepper. Clean the pineapple and pull out the heart. Dice and add to the salsa. Mix with the rest of the ingredients.

FLAVORS CILANTRO, LIME SHRIMP RICE BOWL Ingredients: 1 lb medium-sized shrimp 1 green bell pepper, julienned 1 red bell pepper, julienned 1 zucchini, sliced 1 yellow squash, sliced 1 cup Brussels sprouts, shaved 1 cup corn, shaved 1 cup white onions, julienned 1 cup cabbage, sliced ½ cup soy sauce ½ cup fresh lime juice ½ cup agave nectar 1 cup cooked rice 1 cup cooked beans 1 egg 1 bunch cilantro, chopped 1 cup fresh guacamole Vegetable oil

DID YOU KNOW? Cinco de Mayo, also known as Battle of Puebla Day, is a holiday that celebrates the date of the Mexican army’s victory over France at the Battle of Puebla during the Franco-Mexican War on May 5, 1862.

Instructions: In a hot sauté pan, start cooking 6-7 pieces of shrimp using vegetable oil. After shrimp start getting a nice, red color, add onions, shaved Brussels, zucchini, squash and peppers. With the shrimp fully cooked and the vegetables with a nice charred look, add soy sauce, lime juice and agave nectar. Let the liquids get soaked up, and then add the chopped cilantro. Toss it together. Next, fry the egg. Plate using the rice, beans and cabbage as a side and add guacamole and fried egg on top.

BARBACOA SHORT RIBS BURRITO Ingredients: 1 12-inch flour tortilla 2 cups short ribs barbacoa 1 cup beer-braised beans 1 cup cooked rice ½ cup enchilada sauce ½ cup fresh guacamole ½ cup shredded jack cheese 1 cup queso fundido Instructions: Extend the tortilla and place cheese, rice, beans and the short ribs barbacoa in the middle. Fold, roll and close the tortilla, putting it on a slightly hot pan on both sides. Cut the burrito in half. You can plate it using the enchilada sauce on the bottom of the plate. Stock the two halves and cover them with queso fundido. Add a side of guacamole with a wedge of lime.

COOKIES AND CREAM FRIED ICE CREAM Ingredients: 1 tub cookies-and-cream ice cream 1 loaf Wonder white bread 1 cup milk ½ cup sugar 2 eggs 3 cups corn flakes, ground 1 cup chocolate crumb 1 cup chocolate sauce Whipped cream Instructions: With a wooden roller, roll a couple slices of white bread, making them slim and flat. With an ice cream scooper, make balls of ice cream and place them in a cupcake baking pan. Put it in the freezer for at least two hours. When ready, remove the ice cream balls from the freezer and wrap them with flat slices of bread until they are completely covered. After covering all the balls, wrap them with plastic wrap, place back on the cupcake bake pan and return to the freezer for another two hours. In a small mixing bowl, mix the milk, sugar and eggs. Pull the covered ice cream balls from the freezer, unwrap the plastic and dip each in the egg wash mixture and dust them with ground corn flakes. After you have all the balls covered, put them back on the baking pan and return to the freezer for another two hours and repeat the process with the corn flakes. Let them sit overnight. Using a fryer with oil at 350°F, dip-fry the ice cream balls for one minute. Cut the balls in half to serve; use chocolate sauce on the bottom of the plate, whipped cream and finish with a dust of chocolate crumb around the plate.
