elanoma is the most common deadly cancer here on the Eastern Shore. May is Melanoma Awareness Month, so we asked local board-certified dermatologists Dr. Curtis Asbury and Dr. Sara Moghaddam from Delmarva Skin Specialists in Selbyville about the disease and what you need to know about it.

What is melanoma, and why is it so serious? CA: Melanoma is an uncontrolled growth of the pigmented cells in our skin. Usually, melanomas can look black or brown, but a small percentage of them can be pink or flesh-colored. It is serious because advanced melanoma can spread through lymphatics to other parts of the body, including bones, the brain and other organs. In the U.S., almost one person dies from melanoma every hour.

What causes melanoma? SM: Ultraviolet light, whether from the sun or an artificial source, such as a tanning bed, is the major cause of melanoma. Other things that can contribute to developing melanoma are a genetic predisposition or someone who has a lowered immune system. Using tanning beds can increase your risk of melanoma by 59% and increases with each use. Melanoma can occur anywhere, but the most common location is the back. In our area, I especially see melanomas on the legs of women.

Who gets melanoma? SM: This is important: Anyone can get melanoma, young or old, fair or dark-skinned. A history of blistering sunburns as a teenager or excessive sun exposure throughout one’s lifetime are key risk factors that determine who will get melanoma. Being outdoors is deeply ingrained in our community, which is why we see so many cases here on the Eastern Shore. Other factors, including fair skin, light hair or eyes, or multiple preexisting moles on your body can increase your risk.

What should someone look for on their skin? CA: We all hear about the ABCDEs of melanoma, which represent spots that have Asymmetry, irregular Borders, Color irregularity and Diameter larger than the eraser of a pencil, and Evolution and change of a lesion. I always tell patients to look out for an “ugly duckling” or something that doesn’t look like any of the other spots on their skin. Any outliers should definitely be evaluated. In general, normal moles do not develop after the age of 35, so if you see something new developing, it probably needs evaluation.

What if someone is worried that they have skin cancer? CA: Schedule a skin exam with a boardcertified dermatologist; they are the experts in skin cancer detection. It is important to have the spot of concern evaluated, but also a thorough skin cancer screening is appropriate. I can’t tell you how many times someone comes in for a certain spot, but we find a different spot during skin screening that is cancer. Dermatologists spend at least three years training in skin cancer detection, so they will easily be able to determine if the spot is normal or if it is suspicious and needs a biopsy.

What is one surprising thing about melanoma that most people wouldn’t know? CA: People tend to think that if they are tan, they are less at risk of melanoma. Although sunburns are notorious for causing skin cancer, tanning also damages the DNA in your skin cells, causing cancer. I have treated many dark-skinned, olive-toned, and African American patients for melanoma.

SM: The most unique places I’ve found melanoma was the bottom of the foot, in a fingernail and in the scalp where hair was hiding the cancer.

ong before “coronavirus” and “COVID-19” staked their claims as the world’s most trending and reviled terms, Atlantic General Hospital was strategically preparing for the potential of a pandemic to reach its doors. Over the past decade, AGH has participated in statewide emerging-infectious-disease drills focused on various planning and execution scenarios in the event a healthcare crisis occurred on the Eastern Shore. When it became evident this winter that such an event was developing, AGH president and CEO Michael Franklin began meeting daily with his executive team to monitor the virus’s spread across the Eastern Hemisphere.

“It was becoming clear in late January and early February that we needed to be ready to consider every option in our emergency operations plan,” Franklin said. “In early March, when things became very serious in Maryland, we set up our incident command center; in doing so, we were able to rely upon our earlier planning to really speed up the process of what we were going to do.” Those actions were swift and decisive. In just three weeks, some of the significant capacity expansion changes included the following: • Its Medical Infusion Center was converted into a respiratory care unit for its Emergency Department and equipped with telehealth technology, so providers could assess patients from another room, reducing

exposure while maximizing the use of personal protective equipment (PPE) (masks, gowns, goggles, etc.). • The south wing of its inpatient care area was converted into a COVID-19 unit, with negative-air-pressure systems installed in each of the rooms, to keep pathogens contained. The entire facility’s airflow was also modified to prevent the recirculation of air throughout the hospital. • An additional 17 ICU rooms were created through the conversion of its post-anesthesia care unit (PACU) and other operational areas. AGH now has a total of 25 ICU rooms. • AGH partnered with the Berlin Nursing and Rehabilitation Center to open a 16-bed, AGH-staffed, alternative care site in the lower level of its facility, on the AGH campus.

• All outpatient surgeries that weren’t emergent were postponed. Aside from reducing the potential spread of infection, this also provided space for a second intensive care/ventilator unit during a COVID-19 surge. • Atlantic ImmediCare on 10th Street in Ocean City was converted to a COVID-19 referral-based community-testing center. • Its outpatient laboratory was repurposed as ER-overflow space. • AGH began offering videodoctor telemedicine visits to patients at home through its FollowMy-Health patient portal. “All healthcare workers are getting a lot of support from their communities, as they should, but our plant-operations team members, who work behind the scenes, are the unsung heroes,” Franklin said. “I think our entire performance has been really outstanding.” Franklin, who has altered the entrance and exit patterns of his own home to reduce risk of infection of his 87-year-old motherin-law, expects the peak surge of COVID-19 to occur in Worcester County sometime in May. When it arrives, the Maryland State Department of Health projects the need for 320 hospital beds across the Eastern Shore for severely ill patients in respiratory distress, with Atlantic General predicted to need 83 beds to meet the demands of the anticipated surge, in addition to its traditional patient volume needs.

MEETING SPACE Social distancing applies inside Atlantic General Hospital’s COVID-19 strategic planning sessions. The facility’s plant operations team (opposite right) stands at the ready after completing a host of expansion projects in just three weeks.

AGH’s healthcare network extends across state lines regionally, to serve residents of Delaware and Virginia. In fact, about one-third of its annual primary care visits are with patients who reside in Delaware. As of April 19, 886 cases of COVID-19 had been confirmed in Sussex County, and Franklin said that AGH was actively treating some of those individuals. Training to do so has been ongoing across multiple medical disciplines for months, according to Matt Morris, the hospital’s vice president of patient care services. This initiative has brought together experts from various fields to create critical care teams for those who test positive for COVID-19 and the expected increase of patient volume throughout the hospital. Community physicians, who traditionally work in outpatient and office settings, have also volunteered to obtain emergency privileges, to help with staffing at the hospital. They will all require the use of scarce personal protective equipment, and the community has been instrumental in providing critical resources for its employees. Restaurants have donated food to feed its staff, and businesses such as Hardwire (face shields), Royal Plus (ventilation systems), Sherwin Williams (face masks), Seacrets and Dogfish Head (hand sanitizer) and Plak That (intubation boxes), among many others, have made vital contributions to the effort. “When something like this happens, it’s so rewarding how quickly our community responds to help,” said Toni Keiser, vice president, public relations. “We’re contacted daily by people who want to help our caregivers. We’ve received an incredible outpouring of support, and it reminds us all what a tremendous community we live in.”

Currently, all COVID-19 testing through its Emergency Room, 10th Street ImmediCare facility and the Worcester County Health Department is sent out for processing. The results are fast, according to Kim Justice, the hospital’s vice president of planning and operations, but she’s hopeful that in-house testing kits will become available by May. Justice stressed that if someone thinks they’re sick or has been in contact with someone who has the virus, they’re instructed first to isolate and then contact their primary care provider for instruction. If they don’t have a primary care provider, she advises them to call their local county health department to be prescreened. found myself, as I often do, reflecting on a recent epiphany, dissecting it compassionately with the intention of finding its meaning. As I was journaling about it, the puzzle pieces began to fit into place, and I realized that what I had done was use a practice I learned in graduate school. It’s a practice of radical compassion, known as RAIN. RAIN is an acronym for: Recognize what is happening; Allow the experience to be there, just as it is; Investigate with interest and care; Nurture with self-compassion. RAIN is a resource useful in determining if we are within our “window of tolerance.” Not only does this practice provide a framework for what we are experiencing, it is an avenue for selfempathy to arise organically. The following is an example of what I’d experienced in the early days of quarantine and how I processed it using the RAIN technique. Early one Saturday morning, I received a worrisome text about the impending possibility of a lockdown. My very first thought was: I. Need. Produce! I went to OC Organics, then Walmart, when the epiphany happened. I was in the frozen-vegetable aisle, staring in confusion at the empty freezers: Recognize: I became aware of a sense of unease, a sense of inner agitation, and I became conscious that something wasn’t right. This was a nervous system activation, and it was communicating to me through my entire body.

Allow: I stopped, oriented to my environment and established a sense of safety and ease. I was holding space for whatever needed to be felt, acknowledged, seen and heard. I realized the feelings I was having were not compatible with who I am traditionally.

Investigate: Then, I used my feet and legs to ground me (bottom-up regulation); I took a few purposeful breaths with extended exhalation (meaning, I let the out breath be longer than the in breath) to proactively tip the scale from sympathetic (fight-flight) to parasympathetic (rest/digest) nervous system activation. I then asked myself: “What’s this about, really?” And said: “Whatever it is, I’m ready to face it.” Nurture: I was able to soothe myself with thoughts of ease, shifting back to my true essence of abundance (internal resourcing). I was able to access my deep faith and recall the countless times that when I needed support, it was always there, and what I needed to survive had always been provided (external resourcing). I thanked the universe for helping me recognize that not only was I experiencing this fear but that we are all connected energetically, and I was picking up on the palpable sense of those affected around me. As we begin to entertain and experience our reentry into the now-changed world, experiment using the RAIN technique whenever the need arises to support a sense of ease and notice the effects to your body and mind. cs

The Brace Place Dedicated to the continued good health, wellness and safety of all its patients Back in the early 1980s, when Dr. James Crouse was attending dental school at the University of Maryland at Baltimore, it was standard for dentists not to use protective gloves when examining or treating patients. As the Salisbury native was graduating magna cum laude as part of the class of ’85, the HIV/AIDS pandemic was starting to garner national media coverage — and universal precautions were put in place throughout the industry for the protection of dental-care providers from infectious disease transmission. Today, with the current pandemic and social distancing in place, Dr. Crouse has implemented strict policies and procedures at The Brace Place to ensure the health and safety of his patients and team. His robust practice, which usually treats 80-100 patients per day, is now seeing just a handful — the majority presenting with emergency needs, such as lost retainers, loose brackets, or poking wires. Only one family is permitted to be in the reception area at a time, and any appliances, such as new aligners, are available for pickup in the practice’s parking lot. Although Dr. Crouse and his team always practice excellent infection control measures in their office, they have stepped up the frequency of those measures. All team members must pass annual infection-control training and implement the high standards set by the CDC and OSHA. He has strategically reduced the use of aerosolproducing high-speed handpieces and employs many other techniques designed to maintain a safe environment. “I’ve been dealing with potentially deadly pathogens and infectious diseases my entire career,” Dr. Crouse said. “I have always taken infection control very seriously, to ensure our offices are very safe for our patients and team.” With a majority of its patients at home, The Brace Place has implemented remote monitoring to continue care for their orthodontic needs. Patients can take photos of their teeth on their phones and email them to be reviewed. “This is a great option for patients who are uneasy, selfconscious or noncommittal based upon length of treatment or cost concerns,” Dr. Crouse said. “We’ll review their photos and determine if their treatment is progressing as it should and establish if a phone call or an in-person consult is necessary.

The Brace Place is also offering virtual consultations, which allow both the doctor and patient to understand the complexities of treatment, have questions answered and maximize their time. “Our virtual exams allow those interested in straightening their teeth to still experience a free assessment, during which we can determine if it’s appropriate and, if so, begin its implementation and monitor the progress remotely.” Dr. Crouse also shared self-care advice for his patients during the current situation: “People should obviously continue to brush their teeth, watch what they eat, so there’s no damage to their teeth, and, most importantly, not panic in the event of an emergency,” he advised. “If a patient really needs to be seen, we’ll see them and take good care of them.”

A majority of new glucose monitors do not need a daily fingerstick to calibrate the meter, and they provide a good moment-to-moment picture of one’s blood sugar to help to determine the effects of various food types and activities. This new and exciting technology has been very helpful for patients.

The entire world has some anxiety about COVID-19, so normalizing and validating their feelings will help. Share with them the tools that you have been using to manage your own anxiety. What advice can you provide our readers to maintain their mental wellness? • Make sure social distancing doesn’t turn into social isolation. Utilize phone and video calls to stay connected to friends and family. • If you are home, maintain a schedule or routine. Wake up at a normal time, get prepared for the day, and give yourself a set of tasks to accomplish for the day to help keep your mind occupied. Include time to take breaks and to just relax. • I’ve been recommending that my patients check the news only once per day from a reliable source. The constant stream of updates can be overwhelming. What can you share for those affected long-term from the pressures of this crisis? It is OK to grieve, and feeling sad and anxious about what is happening is normal. If you find that your stress or sadness is beginning to affect your ability to function or your relationships, I would encourage you to reach out to a local mental health professional. There is a wide variety of therapies available that are usually tailored to the individual person’s needs. In certain cases, medications are also prescribed.

My theory is that we need to protect those at the greatest risk, which includes our elderly, those in nursing homes, those caring for elderly family members at home and those employed at nursing homes and in our healthcare fields. In doing so, they need to be tested frequently, so we can capture results from those who are infected and keep them from exposing others.” Dr. Gianelle believes the COVID-19 will continue to spread throughout the summer months and that as many as 200,000 people could die from the virus worldwide. lorence Nightingale, the pioneer of modern nursing, revolutionized care at the bedside through her devotion to smart clinical care of soldiers in the Crimean War. Nightingale taught that “wise and humane management of the patient is the best safeguard against infection.” Two hundred years after her birth, the wise and humane nursing team of Peninsula Regional Medical Center’s 5 Layfield unit are putting those principles to work closer to home in the fight against COVID-19.

Experts say the COVID-19 crisis hasn’t yet hit its peak locally, and that has given the PRMC Layfield 5 Medical Nursing Team time to prepare for what may be still to come.

The 5 Layfield unit is the medical care area for COVID-19 patients, who come to them either straight from the Emergency Department after being identified as a possible COVID-19 patient or after they have been cared for in the COVID-19 intensive care unit and now are on the road to recovery and require medical management. The unit typically cares for neurological or orthopedic patients, such as those recovering from spinal surgery. When the unit was chosen as the COVID-19 medical unit, those patients were sent to the floors and the nursing team began to train and prepare for COVID-19 patients – no simple process. “On a ‘normal’ 5 Layfield day, our patient population is confused, combative, strokes, spines, brain surgeries, etc., so it takes a very special nurse to do what we do on a neuro floor to begin with,” said Jacqueline Williams, clinical supervisor. “One day, our entire world as we knew it turned upside down. But instead of using fear to disable us, we have used it to empower us. We have asked so many questions, things no one thought about yet. Ways and ideas to improve processes. Ways to keep everyone safe. We are doing a type of nursing that we never thought

would exist. Processes are improving every day. Every time we have a “first,” we are able to carefully critique and improve the way we do things.” Nurse educators and infection prevention nurses worked closely with the team, ensuring they are completely familiar with the safety processes for CDC-recommended personal protective equipment (PPE) they have to wear all the time, including face shields, N95 masks, gloves and gowns. “As a team, we have had to reexamine every detail of our work, from the smallest to the largest,” said Bridgette Devaney, clinical manager of the floor. “We’re protecting our team, ourselves and our patients,” Devaney said. “It’s a slow, meticulous process. Every step of our care is carefully thought through for how we can do it safely, and we’re also very cautious about waste.” The 5 Layfield team even chose to take on environmental services duties. “Instead of exposing our beloved EVS staff to the harm of COVID directly, our nursing staff are cleaning our patient rooms; we asked them for a mop; we're taking out our trash... on top of caring for the ever-growing COVID-19 population,” Williams said.

Investigating Treatment Options By Dr. Dennis Killian, Vice President, Clinical Operations

As we continue to deal with the global SARS-CoV-2 pandemic (COVID-19), many researchers and clinicians are rapidly searching for effective treatment options. At this time, there is no conclusive evidence regarding any treatment option. There are many controlled, randomized clinical trials in progress to fully understand the benefits and risks associated with therapeutic options for COVID-19. This article will highlight a small handful of COVID-19 treatment options that are currently under investigation. These include: Chloroquine or Hydroxychloroquine: Older, FDA-approved compounds originally indicated to treat malaria. Hydroxychloroquine exhibits less toxicity than chloroquine and is commonly used in the treatment of autoimmune diseases, such as lupus and rheumatoid arthritis. A small French study showed promise when oral hydroxychloroquine was combined with oral azithromycin (Zithromax; Z-Pak). There have been anecdotal reports of therapeutic success with this combination. Additional recent studies with small sample sizes have shown no benefit from this same medication combination. Remdesivir: Non-FDA-approved medication manufactured by Gilead Pharmaceuticals and currently in Phase III trials. This medication is administered intravenously and is thought to work by inhibiting viral RNA polymerase, thereby inhibiting viral replication. Availability is limited to existing research protocols or compassionate use only. Preliminary clinical trial data appears promising. Tocilizumab (Actemra): FDAapproved monoclonal antibody primarily used for rheumatoid arthritis. Works by inhibiting interleukin-6,

which is thought to decrease effects associated with “cytokine storm,” which is immune system hyperactivity in some COVID-19 patients. The primary route of administration is intravenous. Convalescence plasma: Investigational therapy involving plasma from individuals who have recovered from COVID-19. The hypothesis is that the antibodies from these patients will confer clinical benefit to infected patients. Vaccine development for COVID-19 is underway by multiple companies across the globe. Even though rapid progress has been made thus far, experts estimate that a vaccine release for public use will not occur for 12 to 18 months. One company, the Boston-based biotech firm Moderna, started Phase I trials in humans on March 16, which is the fastest vaccine development ever seen. Their vaccine uses a piece of genetic material from COVID-19, mRNA, to elicit an immune response in patients. The timeline for vaccine development is long because researchers want to be certain the vaccine is not only effective but has limited side effects. We are still trying to understand other important aspects of COVID-19 that may impact vaccine production, such as RNA mutations and patient immunity to COVID-19 after infection. Dr. Dennis Killian graduated from the University of Maryland-Baltimore School of Pharmacy and was the first student to complete the Pharm.D. (1999), Ph.D. (2001) dual-degree pathway at this institution. He currently serves as the vice president of Clinical Operations at Peninsula Regional Health System, where he has been employed since 2004. And while the COVID-19 ICU drew from a volunteer pool, the 5 Layfield team — including nurses, nursing assistants, clinical quality specialists, care coordinators and secretaries — was already in place. “We were not given a choice to be the COVID-19 floor, but everyone accepted it with the same determination we are known for,” said flex nurse Dana Elliott. None chose to leave the unit, apart from pregnant staff members, who by hospital policy are not permitted to care for COVID-19 patients. “We all chose healthcare because we have a calling to serve and to care,” Devaney said. “That is what we are here for. They didn’t volunteer, but they didn’t complain — they have pulled together, and they have been so engaged.” Kelsy Haugh, a nurse on the unit, said she is proud to be part of this team that has stepped up to the challenge without missing a beat. “5 Layfield encompasses all of the best parts of a family and all of the best parts of PRMC. We took the news of the transition of our unit humbly, we face the daily challenges gracefully, and we press forward confidently. We work vigorously to improve ourselves individually but never once take the focus off our unit as a whole, as a team. We are a family, a family full of warriors, and I am so proud to be a part of it.” Their hard work is gratefully acknowledged by colleagues — especially those in the COVID-19 ICU. Dr. Yashvir Sangwan, interventional pulmonologist, said, “They are the ones that hold down this fort and are in the field keeping us safe.” Medical experts say the COVID-19 crisis hasn’t yet hit its peak, and that has given this team time to perfect its care in preparation for what may be still to come. “As the number of COVID-19 patients grows, we may discover that this is the hardest work any of us has ever had to do,” Devaney said. “There are surely difficult days ahead, but I am confident that our team will make it through. We will be there for our patients, our community and for each other.” And Williams reminds the community: “If you are sick enough to become hospitalized during the COVID-19 pandemic, chances are you will see our smiling eyes behind our masks, shields and gowns. We will be with you during the scariest wait of your life — reassuring you, caring for you and about you. We will fight for you, advocate for you and teach you how to keep yourself and your families safe when you leave us. Please continue to wash your hands, social distance and STAY HOME! PRHS partners with Anchorage Healthcare Center on a dedicated COVID-19 Recovery and Rehabilitation Unit A dedicated 25-bed COVID-19 recovery-and-rehabilitation unit has opened at Anchorage Healthcare Center in Salisbury (below). The goal is to provide a support system so patients can continue to get well upon discharge.

hat should not be lost in all the daily reports of COVID-19 casualties is the reality that people are recovering. In fact, the vast majority who contract the virus will get better. That, however, creates another challenge for the healthcare industry already facing a year of unprecedented challenges. How do you assist recovering COVID-19 patients who are stable enough to move out of a hospital to a short-term step-down unit, freeing up critical care beds in the hospital? A significant part of that local question was recently answered with the opening of a dedicated 25-bed COVID-19 recovery-andrehabilitation unit at Anchorage Healthcare Center in Salisbury. “Anchorage took the lead, knowing this is important to the community,” said Dr. Kathryn Fiddler, vice president of Population Health for the Peninsula Regional Health System (PRHS). “We are meeting daily with our posthospital care providers in the region and working together to ensure the safety and welfare of our community.” The unit, with its own highly trained, volunteer team, will provide skilled nursing care for COVID-19 patients who are not yet able to safely stay at home or care for themselves. These could include patients requiring IV treatments, antibiotics and respiratory support. Equally important is the physical therapy component. It is designed to help patients resume the normal activities

of daily life, such as feeding themselves, getting up and down stairs and in and out of their vehicles. “Our entire healthcare system is working together to meet this incredible challenge,” said Fred Stratmann, spokesman for the CommuniCare Family of Companies. “We feel it’s important for us to do our part and to be transparent with our residents and their families, our staff and the community as a whole about what we are doing.” A lot of extra work went into designing the unit. A double-plastic wall was installed at the entrance, and all edges were sealed. A decontamination area was established for carts, trays and equipment coming off the unit. A changing area was set up for the team to get into their personal protective equipment, which is being kept in the isolation unit. Precautions were taken to create a negative-pressure environment and to ensure the heating, ventilation and air conditioning systems would stay separate from the rest of the center. “The continued safety and well-being of all our residents is our highest priority. We created this unit following all industry guidelines on establishing isolation units and have put similar units in place in other centers where residents have tested positive for COVID-19,” Stratmann said. “This unit is on a completely different floor than the rest of our resident rooms, and we are confident that we can keep all residents safe with the plan we have in place.”

Peninsula Regional Medical Center (PRMC), which is essentially a neighbor to the Anchorage Healthcare Center in Downtown Salisbury, has been providing education and training for staff on appropriate protective gear and protective measures. PRMC clinicians are also working with their counterparts at Anchorage to develop medical pathways for care and making sure patients will have the support system they need to continue getting well upon discharge. “This includes medications and other care support they may require,” added Dr. Fiddler. “We and our Anchorage partners are creating ways to safely transition them home and to guarantee follow-up care will be provided for as long as it’s required. It’s a great honor to be working with our amazing community partners who are redefining and redesigning care.”

It can be as simple as a telephone call or one of the many other telemedicine phone apps or video-based options; there are countless ways to communicate electronically between patient and provider. These visits can be done by video on a smartphone camera, laptop with camera or personal computer with camera. There are even some visits that can be done simply over the telephone. It’s medicine at a distance, and it aids in evaluation and treatment. Patients need to speak with their provider and the practice office staff to find out if their visits can be done through telemedicine and by which method; new technology is allowing for even greater video assessment and communication.

Dr. Jim Trumble, vice president of Clinical Integration for Peninsula Regional Health System, said patients should not have concerns about privacy during telemedicine appointments. “Our conversations are very secure,” he said. “There are a variety of platforms out there that have been in existence for a while, and they offer that privacy — it’s just you and a doctor.” While telemedicine isn’t a solution for everything, Trumble says it’s perfect for follow-ups and medication management. “A lot of people are uneasy about it at first — there are certain mannerisms, certainly facial expressions, things that describe for us what they’re saying, so we have a better understanding, and I think people are afraid of losing that,” he said. “What we’ve found is that some people are apprehensive in the beginning, but they find they still get that connection with their provider and they become very

comfortable and engaged in just a couple of visits.” Many primary-care providers are now using telemedicine for annual checkups. When a health concern arises, patients should first call their primary-care physicians; patients get the most efficient care because the provider knows them and their medical problems. If the provider is unavailable, urgent care should be the next point of contact. Patients should only visit the hospital’s Emergency Department for life-threatening problems.

Furthering Matt’s Mission SODEL CARES CONTINUES THE HUMANITARIAN AND PHILANTHROPIC EFFORTS OF SODEL CONCEPTS FOUNDER MATT HALEY CLOSE TO HOME HISTORY: SoDel Cares is the philanthropic arm of SoDel Concepts, which owns 12 coastal restaurants, a consulting company and a hospitality management company — all located in Southern Delaware. The foundation was created in honor of SoDel Concepts founder Matt Haley following his untimely passing in 2014. Haley, a noted philanthropist, was the recipient of the 2014 James Beard Foundation Humanitarian of the Year Award. WHO IT HELPS: SoDel Cares provides monetary grants and support to hyper-local organizations that assist children, at-risk youth and adults and the elderly. Its primary mission is to contribute positively to the communities in which it conducts business. Through its efforts and the support of local restaurants, businesses, communities and its patrons, SoDel Cares has granted more than $550,000 over the last five years. Beneficiaries have included the Rehoboth Beach Boys & Girls Club, the Harry K Foundation, Pathways to Success, Primeros Pasos, the Joshua M. Freeman Foundation and Camp Barnes. A GOOD EXAMPLE: SoDel Cares is proud to support the Community Resource Center (CRC). Created in 2011, the CRC helps low-income individuals and families of greater Rehoboth get to the next step of their journeys toward self-sufficiency and stability by providing assistance through its food-rescue program, emergency assistance, job center, baby pantry and day center. In addition to its monetary donations to the CRC the past three years, SoDel Cares conducted a food drive in January 2020 as part of SoDel Concepts’ annual corporate retreat. Each of the company’s 250 employees was asked to donate one food item to the cause. Most brought more — and SoDel Cares donated more than 40 grocery bags of food from the initiative to supplement the CRC’s Food Pantry.

CARING FOR ITS COMMUNITIES SoDel Cares has provided more than $550,000 in grants to nonprofit organizations in Sussex County during the past five years, in part, through events such as its annual 5K race/walk and fundraiser.

Match Point A COLLABORATION BETWEEN PROPERTY OWNERS AND T&G BUILDERS PRODUCES A SPECTACULAR NORTH OCEAN CITY HOME Story by Joe Willey Photography by Stacy Goldberg

T

he relaxed, inviting view of the waterfront is a relentless call, but one that has been answered by both Mike and Mary Strittmatter, thanks to the team at T&G Builders. The couple and Berlin-based design/build company collaborated on the complete renovation of an impressive yet relaxed home nestled on a quiet bayside property in North Ocean City. The partnership was a fruitful one and resulted in a custom-made home that fits both the family’s needs and personality. When considering a second home, choosing the North Ocean City location was easy for the Strittmatters. “We love the view, and we love being near our friends,” says a pleased Mary Strittmatter. The proximity to their primary residence in Potomac, MD, was also an appealing prospect. Choosing a builder to complete the project was almost as easy. On the advice of neighbors, the Strittmatters interviewed T&G Builders — and there wasn’t a need for further interviews with other contractors. Mary, who operates Strittmatter Interiors, was impressed. She smiles when describing what she enjoyed about working with T&G Builders. They were “trustworthy, reliable and do wonderful custom work.” That is high praise from an experienced interior designer.

Though the house was poised to provide a spectacular waterfront view when the Strittmatters purchased the residence, it was obscured by heavy columns and oppressive walls. Working with architect Warren Ralson and T&G Builders, the Strittmatters created an open floor plan with unobstructed views of Assawoman Bay. Entering the home and viewing the bay through a bank of windows is reminiscent of being on an ocean liner. The home exudes an easy coastal style that is “all flip-flops and grilling.” The interior is warm, inviting and casual. And that is the point. “There is nothing formal about this house at all,” she said approvingly. What is almost as impressive as the view and the attention to detail are the compliments Strittmatter has for T&G Builders. “They were passionate, so enthusiastic,” she exclaimed. She was thankful to use a local company and saw firsthand how they worked together and offered creative solutions during the renovation process. Collaborations often result in satisfying work. This welcoming home with an impressive view is an example of a homeowner’s vision and a builder’s attention to detail. The results are found in a home that, like the waterfront, gives its own relentless call. cs

Directions: Make your homemade croutons by cutting up rustic ciabatta bread into 1” chunks. Next, toss the bread chunks in EVOO and sprinkle with garlic salt. Spread mixture on a cookie sheet and bake in a 350° oven for 20 minutes or until golden brown. Cut tomatoes and cucumber into small chunks and slice onion. Next, make the dressing by combining olive oil, vinegar, salt and pepper in a large bowl and mix together. Remove the croutons from the oven and toss them in salad. Drizzle with olive oil, add the basil leaves and serve. cs


BEET SALAD WITH QUINOA & HARISSACURRIED YOGURT RECIPE BY EXECUTIVE CHEF CHRIS PARKS SODEL CONCEPTS

Ingredients: ¼ cup EVOO 1 tsp garlic, minced 1 tsp curry powder 1 tsp harissa sauce 1 7-oz container Greek yogurt (any fat content will work) 2 lbs red beets 1 cup dry quinoa 1 oz arugula greens 16 each, picked leaves of tarragon 2 oz Thai cashews, roughly chopped (substitute other nuts if desired) 2 oz goat cheese, crumbled (feta or pecorino also work well) 2 oz EVOO 1 oz red wine vinegar or apple cider vinegar Kosher salt and cracked black pepper to taste

Procedure: Trim off the tops of the beet greens, discard or clean and save for a salad. Place the beets with skin on into a stockpot and fill with cold water. Cover the beets with water by at least 4 inches. Bring to water to a boil and then drop it down to a low simmer. Depending on size, the beets will take about 2 hours to cook. You can test this by removing a beet from the water and piercing it with a knife. The beet is fully cooked once there is little to no resistance to the knife going through it. Once the beets are cooked, pour off the hot water into the sink and place the pot into the sink. Then, run cold water over top of the beets. Once the beets are cool enough to handle, peel off the skin by hand. It should remove fairly easily if done in a timely manner. Trim the ends off the beets and discard them, along with the skin. Cut the beets into 1’’ x 1’’-thick slices or cubes. Chill in the refrigerator until cold. Take the cup of quinoa and rinse with cold water inside a fine-mesh strainer. In a 2-quart saucepan, combine the quinoa and 2 cups of water. Simmer for 20 minutes or until cooked. Cool completely before using. In a large sauté pan, add ¼ cup of olive oil and turn it on a low-medium heat. Add the garlic and curry powder. Lightly sauté the garlic and powder for about 2 minutes and then add the harissa sauce. Stir the sauce and continue to cook for another minute. Remove from the heat and allow to cool for 10 minutes. Next, stir the entire garlic mixture into the Greek yogurt. Mix well, until combined, and season to taste with salt and pepper.

Assembly: Lay down four plates and divide out the curried yogurt onto all of the plates, evenly spreading it out. Take the chilled beets and dress them with 2 fluid ounces of olive oil and 1 fluid ounce of vinegar. Season to taste with salt and pepper. Add in the quinoa and lightly mix into the dressed beets. Lay down half of the beet-and-quinoa mixture over top of the yogurt on all of the plates. Add some arugula greens into the layers of beets. Add the rest of the beets and top off with the remaining arugula, goat cheese, Thai cashews and tarragon. cs

Add seasoning to crabmeat, if desired. Layer ingredients proportionately in tortillas — lettuce first, then tomatoes, bacon and crabmeat in succession. PHOTOGRAPHY BY GRANT L. GURSKY Serves 4 Preheat Oven: 350° 4 filets wild rockfish, roughly 5 oz each Preparing the fresh fillets of rockfish is determined by the size of the fillet. If the fillet is thin and long, split it down the center, keeping the ends intact. Lay the fillets on a lightly buttered sheet pan. Create an oval-shaped hole with each fillet and stuff the imperial base in the oval. If the fillet is short and fat, spread the imperial base across the top evenly.

No matter the size, be sure to lightly season each fillet with salt before stuffing. An added step of quality is to lightly rinse each fillet in cold, salted water, then pat dry before seasoning.

1 egg yolk 1 tsp Old Bay seasoning

FOR CRAB IMPERIAL STUFFING 1 lb jumbo lump Maryland crabmeat

¾ cup mayonnaise 2 tsp Dijon mustard ½ tsp Worcestershire sauce

Empty into a bowl and clean out any shells.

In a small bowl, whip the egg yolk and Old Bay together until doubled in volume.


Fold mayonnaise, Dijon and Worcestershire into the yolk/Old Bay paste thoroughly. Reserve 25% of mixture for final glaze. 2 tsp whole milk 1 tsp lemon juice 1 Tbsp parsley, chopped Add milk, lemon and parsley to the reserved 25% of base sauce. This is the final glaze of the imperial. Add the 75% sauce base portion to the crab. Season with a pinch of salt. Lightly fold the ingredients together, making sure to not break the crab lumps. Divide the imperial stuffing equally across each fish fillet. Evenly coat each stuffed rockfish fillet with the imperial sauce Bake in a 350° preheated oven. The center of the fish fillet and crab imperial stuffing should be hot when finished baking. Average cooking time will be 10-14 minutes. The best way to check the internal temperature is by inserting a thin pairing knife in the center and feeling the heat of the center on the back of your hand. If using a thermometer, 140° is a suitable temperature for cooked imperial stuffing and medium-cooked fish. The glaze should be lightly browned and slightly puffed. With a spatula, place the Rockfish Imperial on your serving platter. Add a fresh spritz lemon, pinch of sea salt and serve with beautiful local vegetables. Enjoy! cs

Fluffy Vegan Pancakes Planet Hollywood Beach Resort, Costa Rica

Ingredients: 1 cup flour 2 Tbsp organic sugar 1 Tbsp baking powder

½ tsp salt 1 cup non-dairy milk 1 Tbsp apple cider vinegar 1 tsp vanilla

Recipe: Add flour, sugar, baking powder, and salt to medium bowl and stir to combine. Add non-dairy milk, apple cider vinegar, and vanilla in separate bowl and stir to combine. Pour the liquid mixture into the dry mixture and whisk until smooth. Let batter rest for 5 minutes. Pour about ½ cup of batter onto a nonstick pan or griddle over medium heat. When the top begins to bubble, flip the pancake and cook until golden. Serve warm with maple syrup and enjoy! cs

IN PREPARATION FOR SOCIAL DISTANCING, Streamsong Resort Executive Chef Michael Ford noticed while the grocery store shelves were bare, the fresh produce section was well-stocked. He incorporates one of his family’s favorite pastimes — homemade pickling — into his resort menus, and suggests it to families stuck at home as a delicious activity for all.

“I insist on having a cooler full of great homemade pickles in the kitchen,” Ford said. “My personal favorite is the spicy bread and butter green tomatoes. You don’t have to be a professional chef to pickle; the process is easy, fun and the entire family can get involved. Most of us have the ingredients in our pantries already, like salt, sugar and vinegar.”

Chef Ford said you can adjust the ratios to your own tastes, but a general guideline for creating great pickling brine is: Ingredients: 1 cup water 1 cup vinegar ¼ cup sugar 1 Tbsp kosher salt
