Holiday Tour of Historic Homes THE STORIED NEIGHBORHOOD OF NEWTOWN IN SALISBURY OPENS ITS DOORS THE PUBLIC THIS DECEMBER SALISBURY’S HISTORIC NEWTOWN NEIGHBORHOOD will host a holiday tour on Sunday, December 8 from 11 a.m. to 4 p.m. The tour, a tradition of more than 30 years, provides a special opportunity to visit some of Salisbury’s oldest and grandest homes decorated for the holidays. The area that would become Newtown, located directly north of downtown, was developed on farmland of the Poplar Hill plantation. After massive fires consumed Salisbury’s commercial district in 1860 and 1886, residential building of Newtown began in the late 19th century, which continued well into the 20th century. Politicians, business owners and professionals of the day all built homes in Newtown. Their Federal, Colonial Revival, Italianate, Queen Anne, Shingle-style and English Cottage-style houses are among Newtown’s cherished dwellings, along with historic workers’ homes, outbuildings and churches. Homes on this year’s holiday tour vary in age from the late 18th century to the 20th-century inter-war period, and most have been renovated or restored, complete with period furnishings and antique holiday decorations. Tour tickets are $15 and will be available at Poplar Hill Mansion at 117 Elizabeth St. in Salisbury at 10:30 a.m. The Mansion will also celebrate its Yuletide Open House with seasonal decorations, music and refreshments. The more than 1 million letters that are addressed to Santa in the United States each year are delivered to the small town of Santa Claus, IN.

HEARTS OF GOLD WORCESTER COUNTY GOLD, INC. (GIVING OTHER LIVES DIGNITY) PROVIDES A HELPING HAND DURING TIMES OF FINANCIAL DIFFICULTY AND CRISIS Compiled by Alison Clary

HISTORY: In 1996, The Worcester County Department of Social Services conducted a needs assessment, which ultimately identified a gap in emergency services available to Worcester County citizens. In response to the assessment results, Worcester County GOLD, Inc. was officially established as a 501(c)(3) nonprofit in 1997. GOLD’s vast array of services was designed to address and fill the gap by providing Worcester County residents with a safety net to meet emergency needs. In the years since its inception, GOLD has carried out its initial vision to promote dignity in the community by lending a helping hand to those who need it the most. In 2018, GOLD delivered essential support for 919 families, including 1,292 adults and 1,468 children. In addition to providing assistance in emergency situations, such as preventing the disconnection of utility service, GOLD also runs annual programs and drives including distributing backpacks and grade-appropriate school supplies to students, managing summer activities for at-risk youth, delivering turkey meals for Thanksgiving, and offering holiday assistance through the “Helping Hands for the Holidays” program. This year, GOLD was awarded the “Non-Profit of the Year” by the Ocean City Chamber of Commerce. WHO IT HELPS: The recipients of GOLD’s services and support are local residents who fall below the poverty line and include families in crisis, vulnerable adults, those who are homeless, and children in foster care.

THE GOLD STANDARD Worcester County GOLD, Inc. provides a variety of programs and services for the community, including school supplies for students, seasonal clothing and outerwear and Helping Hands for the Holidays.

HOW TO HELP: GOLD’s paid staff includes only one full-time employee and one part-time employee, so community support and participation are essential for the organization to carry out its mission successfully. Last year, GOLD received support from over 200 volunteers from across the county, and they are hoping to increase volunteer numbers in the future. She adores kids and gets along with most other pups but does need a home without kitties or small animals. She will need some help in the training department, especially since we believe she may be mostly deaf. When Gus grew too old to fulfill that role, he was abandoned at a local vet’s office. Gus was severely broken down by that point, so euthanasia was thought to be the most practical option. But, literally moments before the fatal needle was administered, a vet tech named Emily halted the procedure and claimed him for herself. The entire staff rallied around Gus, who was discovered to have a lot more life and energy left in him once he was loved and cared for. They even went so far as to create a bucket list for Gus, which included things like watching

Let’s get the full-disclosure thing out of the way right upfront: Alison Clary, coauthor of Old Dogs, New Chapters: Uplifting Stories of Senior Rescue Dogs, is a frequent contributor to Coastal Style. That said, if Adele were your cousin, are you automatically biased because you think she can sing a bit? The same is true of Clary’s book, which shines a heartrending spotlight on those noble yet all-too-often overlooked and underappreciated creatures who grace our lives with love and loyalty yet ask so little in return. To pull you in with the gravitational force of a Sarah MacLoughlin commercial to an insomniac at 3 a.m., Clary and coauthor Jason Pappas get off to a strong start in the foreword, in which Clary recounts the loving tale of her own rescue dog, Stanley, whom

a sunset, visiting a dog park and having both his portrait painted and a birthday party thrown in his honor. The poignant object lesson in Gus’ tale is that, as the authors point out, every dog deserves a second chance. UNCHAINED Let’s not forget an unlikely TV star named Bear. Rather cruelly, Bear the black lab was acquired originally only to provide protection for a family that for 15 years never allowed him to place a paw inside their house. Weighed down by a 35-lb chain, Bear was finally liberated from his daily misery by the Guardians of Rescue, who convinced his owners to give him up. One morning, a woman from New York named Kerrie uncharacteristically turned on her television and began watching Good Morning America, which, as fate would have it, was airing a segment on Bear. So charismatic is Bear that he even commanded the attention of actorcomedian Ricky Gervais, who was part of the segment to plug his upcoming movie but who kept pivoting his attention to the black beauty. Though the segment inspired hundreds of requests for Bear, Kerrie was ultimately determined to be the best fit. As you might have expected, Bear has adapted to life as an indoor dog just fine

Suffice it to say, between TV, social media, his patented half-lip-curl “Elvis” smile and irresistible adoration face (marked by one upward-pointed ear and one floppy, downturned ear), Bear is extremely popular and surrounded by warmth and love everywhere he goes. Ultimately, the measure of our value as people relies not on how much money we make, how high our IQs are or what we can bench at the gym; it’s how we treat that which is weaker and more vulnerable than we are. The fact is, most dogs have the equivalent intelligence of a 2-2.5-year-old human child, and that’s just intellectually. In terms of emotional intelligence — the ability to perceive the emotional states of those around them — dogs are actually significantly more advanced than even adult humans. So ask yourself this: What is the justification for treating a dog worse than a 2-yearold child, when it is at least as smart, just as feeling and perhaps even more selflessly devoted to you? The answer is simple: There is no justification once you remove human ego from the equation, so three cheers to Alison Clary and Jason Pappas for knowing that well enough to write this tender and uplifting book in tribute to one of humankind’s greatest alltime creations: Canis familiaris. cs

Writing With Purpose FEMALE WRITERS UNITE TO SHARE STORIES OF HEALING AND HOPE

For three years now, the Ocean City Center for the Arts has celebrated women artists with all-female exhibitions curated by Berlin artist Deborah Rolig. The goal of RISE (an October 2019 show) is to empower women through art, emphasizing women overcoming adversity.

Rolig fills the walls of the Arts Center with a remarkable collection of visual art created by local female artists. And each year, the show gifts the community with a lasting endowment: a literary work that lives on past the exhibition, expanding and celebrating the theme in written words, presented and preserved in book form. The book of original prose and poetry, Women Writing, Women Rising, is the third edition by the Seaside Scribes — 34 women from the Rehoboth Beach Writers Guild and the Ocean City Writers Group. Curated by Kathleen Martens with a collaborative editorial team and published by Berlin’s Salt Water Media, proceeds benefit charities important to women — breast cancer research, healthcare, scholarships and arts programs for women writers. “For me, it’s about the circle of healing through the arts,” Martens said. “Women are writing their stories about healing and rising up and meeting challenges in life. They are

writing about characters who are doing the same. As a result, the readers relate and are inspired. And the money from book sales all goes to charities addressing challenges women face in life.” Rolig believes the book is one of the most important facets of the annual exhibition. “I love that the written word is part of our shows. People look forward to it, and it just keeps getting better every year,” she said. The previous two editions from the Seaside Scribes, The Divine Feminine and She Writes, each took second place in the Delaware Press Association’s statewide contest for quality of writing and editing. s it embarks on its 29th season, the Salisbury-based Eastern Shore Ballet Theatre (ESBT) continues to bring beautiful classical ballet to Delmarva audiences. Since it was founded in 1991, hundreds of young dancers from the Lower Eastern Shore have performed in its beloved The Nutcracker and other productions, such as Alice in Wonderland, Coppelia and Peter Pan. “From its inception, this company has been ambitious,” said Leslie Belloso, a member of the Theatre’s board of directors. From humble beginnings and without funding, founder Betty Webster and original artistic director Tatiana Akinfieva-Smith created a full-length Nutcracker production. Webster, who has taught generations of dancers at her business, Studio of Dance, in Salisbury, and the late Akinfieva-Smith, a gifted dancer and teacher trained at the Imperial Ballet School (now the Vaganova Academy of Russian Ballet), set a high bar for their production, with demanding choreography and dazzling handsewn costumes. “The arts feed the soul, and dance is one of the great arts,” said Webster. ESBT’s second artistic director, Elena ManakhovaAmy, herself an international award-winning prima ballerina, continues the company’s high standards. Manakhova-Amy was one of the dancers in the 249th graduating class of the Vaganova Academy. As artistic director, she envisions every aspect of the ballet, from choreography to costumes, props to sets, while teaching its choreography to its more than 80 members. In April 2019, ManakhovaAmy unveiled the company’s newest ballet, Peter Pan, which combined ballet choreography with performers flying from cables. During its nearly three-decade history, many of the Theatre’s dancers have gone on to successful careers in dance and choreography, most recently Da’Von Doane at the Dance Theatre of Harlem, Donna and Vanessa Salgado at CONTINUUM Contemporary Ballet on Broadway and Shelby Trenary at Peconic Ballet Theatre on Long Island. he Mid-Atlantic Symphony, Delmarva’s only professional orchestra, continues its 22nd season with a trio of special themed concerts. This November, in Easton, Ocean View and Ocean Pines, the MSO will showcase three world-class soloists in a concert titled “Appalachian Spring.” The program will open with Vivaldi’s Concerto for Two Cellos in G Minor, featuring cellist Daniel Gaisford and the MSO’s Jacques-Pierre Malan. The first half of the concert will close with Dvorak’s Serenade for Strings in E Major. After intermission, the MSO will feature pianist Didier CastellJacomin performing Haydn’s Piano Concerto No. 11 in D Major. According to MSO music director Julien Benichou, Didier brings to Haydn “the lightness and expression but also the depth of color.” The concert will conclude with the titular piece, the original chamber orchestra version of Copland’s Appalachian Spring.

This year marks the quarter-century anniversary for the annual Southeastern Delaware Artists Studio Tour (SEDAST). While the number of featured artists and range of their artistry has continued to evolve throughout SEDAST’s history, its core mission has remained the same: to provide a venue where attendees can witness local artists at work and have the opportunity to purchase their artwork directly. “The tour was originally started as a ‘grassroots’ effort by a group of seven local artists and artisans to raise public awareness of the quality of art available in the southeast Delaware area,” shared artist Jeanne Mueller. SEDAST was the first of its kind in the area, and it was immediately wellreceived by the public. In fact, the first tour was attended by over 400 people. It has since become known as one of the area’s staple annual events. An inherently unique experience, SEDAST presents attendees of all age ranges with the opportunity to get a “behind-the-scenes look” at talented artists working in their personal surroundings. Attendees can also interact with the artists and ask them questions about how they create their art. Throughout its long-running history, SEDAST has traditionally taken place the Friday and Saturday following Thanksgiving, allowing it to serve as a tranquil alternative to the notorious Black Friday chaos. Rather than braving the crowds at large retailers, just to purchase lackluster gifts, SEDAST attendees may find comfort in purchasing locally made holiday gifts that are truly one-of-a-kind. Because of its self-guided structure, SEDAST offers the flexibility for attendees to move at their own pace over the two-day event. In addition, it is always free to the public.

DAMON PIA, Acrylic Painter A 15-year SEDAST featured artist, Damon is a full-time artist who once created large murals before morphing into a landscape and surrealist acrylic painter. He draws inspiration for most of his work through listening to ambient music and observing lateafternoon light. During this year’s SEDAST, Damon plans to unveil the third installment in his four-painting series called “The Enlightenment Series.” The painting presents someone’s hands lighting a lighthouse.

Because of its ever-evolving nature, there are always new things to see at SEDAST, which is likely why so many attendees return year after year. Tourgoers can always count on a vast range of featured artists who create their work through many different media, such as watercolor, oil, acrylic, mixed media/collage, pastel, ceramics, jewelry, stained glass, blown glass and photography. This year, there is even greater diversity in terms of “types” of art presented than ever before. SEDAST also proudly supports local arts through its “Art in the Hat” raffle, which was introduced as an element to the tour in 2000. The raffle prizes include pieces of artwork donated by each participating artist, and 100% of the raffle proceeds go to art-education programs in the Indian River School District. “The “Art in the Hat” raffle has been wellreceived by attendees of the tour, and over $63,000 has been contributed to local schools to date,” said Mueller. Sew Charming BRAVO TV STAR AND DESIGNER CRAIG CONOVER FINDS INSPIRATION IN HIS DELMARVA ROOTS Story by Katie Riley | Photos by Ryan DeNeff

I

t’s been five years since Sussex County native Craig Conover found fame on Bravo’s popular series Southern Charm, and the reality star is now stitching up a new career in design. Sewing Down South, Conover’s sewing lifestyle brand, recently launched a line of pillows that takes its cues from the Delmarva coast. At the brand’s launch in Selbyville, more than 200 people lined up at Casual Designs Furniture for the chance to meet Conover and purchase one of his coastal-inspired pillows. The event was the latest stop on Sewing Down South’s “Pillow Party” tour as Conover visits a dozen retailers in the mid-Atlantic and Southeast. “To come home and have the support of local merchants is really special,” Conover said. “To be able to sell my designs where I grew up is what means the most.” Design wasn’t always in the cards for Conover. The Indian River High School graduate headed south in 2006, to the College of Charleston, to study finance and later law at the College of Charleston School of Law. After graduating, Conover was approached by a friend in 2013 about starring on a reality TV show that offered an insider’s view of the Charleston lifestyle. That show, Southern Charm, was an immediate hit, and Conover quickly gained fame not only for his good looks but also as the lone Yankee on the show. “I originally went to law school to help people, then, Southern Charm happened, and life took a detour,” he said.

Fame took a toll on Conover, so he turned to sewing as an outlet for stress relief. “Until four years ago, I hadn’t done any sewing since the eighth grade, when I took home-ec with Mrs. Hurley,” Conover said, recalling his former teacher at Selbyville Middle School. His newfound hobby became a central plotline of the show, inspiring a cult of supporters on social media who championed his passion. “I [had gotten] a lot of grief, but it’s silly to let stereotypes control your life. If you want to sew, then sew,” said Conover, who draws his own design inspiration directly from his affinity for the water. “I spent my life growing up at the beach; being near the water has always provided clarity somehow,” he said.

After a hiatus from the show, Conover returned to Charleston in 2018 and launched Sewing Down South. The first pillow, featuring a blue crab design, sold out within hours. It remains the brand’s number-one seller. “The crab pillow was my first design because I wanted to pay tribute to my roots,” he said. Most of the pillow patterns reflect the brand’s beachy aesthetic and are offered in both indoor and outdoor versions, the latter made from durable Sunbrella fabrics. Coming next is a line of pastel-hued nursery pillows, with plans to expand into kitchen decor in the near future. For Conover, it was a circuitous route to design, but he knows that no matter where this new path may take him, all roads will lead back home. “I will always be drawn to my hometown and the coast. It’s my comfort zone, and there’s nowhere else I’d rather be.” cs

ic Feehley might be the coolest Santa you’ll ever meet. On a bright Wednesday outside the Berlin public library, he arrives in a scarlet SUV — a modern-day sleigh, if there ever were one. He dons a bright-red fedora and chunky black sunglasses, a perfect complement to his bushy, white beard. Ric first donned the world’s most famous red suit in 1995, when he made his home in central Maryland. A local nursery, Arnold Farms, ran an advertisement for a seasonal Santa, to dovetail with their burgeoning venture into Christmastree sales. “I answered the ad and said, ‘I’m your Santa, and this is my rate; for an additional amount, you can get Mrs. Claus along with it,’ Ric recalled. “The people loved it, because the only other Santa in the area had more than an hour wait to get in line and see him. The best part was, Mom and Dad could trust leaving their kids with Santa while they did their shopping.”

Ric and his wife, Doris, eventually moved to Berlin, and they branched out with more Santa and Mrs. Claus appearances: at the fire hall here for spaghetti supper, a few church breakfasts, some private parties. Doris, who endured years of mounting health complications, passed away in 2015. They were married 26 years. Now, at age 68, Ric has elevated his Santa game, going from local appearances on Maryland’s Eastern Shore to landing coveted mall gigs across the nation. “This year, they’re sending me to Lake Champlain, Illinois, and of course they take care of airfare, car rental, hotel, everything,” Ric said. “I’ll be at the mall seven days a week, from midNovember all the way to Christmas. It’s a great company to work for.” That company is Cherry Hill Programs — the New Jersey-based outfit that lays claim to the largest Santa Claus placement organization in America. Cherry Hill Programs staffs more than 900 venues across North America during the holiday season and has more than 1,000 seasonal Kris Kringles under management. Santa Ric meets about 500 kids a day — and even more as he gets closer to Christmas Eve. There’s more to playing Santa than just wearing the iconic suit and growing a beard (Cherry Hill Programs requires its Santas to sport authentic white whiskers). He has to research what toys are popular, so he can anticipate a child’s holiday wishes whispered in his ear. Ric mentions that he discourages requests for guns or gun-like toys, stressing that a gun isn’t a toy.


THE MAN IN RED Ric Feehley’s signature Santa costume features a column of brass buttons all the way down, with a matching vest underneath, for an authentic yuletide look.

“If you’re looking to go hunting with your father,” he’ll tell the child, “then you sit and discuss that with your father. That’s the most negative it gets.” Portraying Santa Claus isn’t just about being a toy giver, Ric says, cognizant that he’s a mythical role model to the thousands of young children he meets. To that end, he’s carefully crafted his image and dresses in a debonair Santa suit he says would look at home on a Coca-Cola billboard. “I have brass buttons all the way down; I have a matching vest underneath,” Ric said. “It’s something I worked long and hard at, as far as trying to create that image of me, so it’s going to make me unique from everybody else out there. Hopefully, people like what they see.”

One special Santa memory in a career that’s generated thousands comes to mind when asked to share his favorite: Ric sentimentally recalled a father who brought his daughter with severe cerebral palsy to see Santa every year at the convention center in Ocean City. “Every time she saw me,” Ric remembered, “she just lit up like a Christmas tree. Her father would lift her from her wheelchair and place her in my lap, and I would let her sit there as long as she wanted. She was as happy as she could be, and for me, that’s what it’s all about.” cs

estled in the heart of downtown Snow Hill lies a self-proclaimed “grandma and grandpa” toy store known as Jerry’s Toys and Wooden Crafts. The store’s owners, Diana and Jerry Nolte, went into business because they wanted to help keep the small-town spirit alive and vibrant in Diana’s hometown. “We are proudly a battery-free toy store, and all of our toys are imaginative toys,” expressed Diana. What truly makes Jerry’s Toys and Wooden Crafts unique is their handmade toys, which are creatively crafted with exquisite precision by Jerry. A skilled woodworker with over 40 years of experience, Jerry’s imagination is limitless, and he’s built countless wooden toys, such as toy boxes, life-sized children’s wardrobes and toy cars. No matter what the finished product is, everything Jerry creates is built to stand the test of time.

“Most of the ideas for handmade toys come from experiences with our six grandchildren. They are always willing to test out new toys for us,” said Diana. One of the most popular handmade items in the store’s collection is a children’s table with four matching round stools. What makes the design of this set stand apart from classic sets is that the four stools actually attach underneath, so seated kids do not risk toppling over. Many customers, including a local nursery school, have purchased the sets after appreciating their design, careful construction, durability and exuberant appearance. HOLIDAY HEALTH HAZARDS As the winter months set in on the Shore, PRMC officials remind you to beware of these potential dangers inter is fast approaching, and so are the hazards brought on by the cold weather and flu season. Here are some common health hazards and tips to make sure you don’t fall ill or become injured.

W

1. SLIPS, TRIPS AND FALLS The season’s slippery conditions are one of the most common causes of injury in wintertime. Jill Stone, Director of Physical Medicine for Peninsula Regional Medical Center, says her team sees a lot of patients who have been injured due to slips and falls. “January and February are when we see a lot of hip fractures and shoulder fractures, when people reach out to try to break the fall,” she said. “It’s very easy to slip on black ice. It can happen to anyone.” However, some common-sense precautions can make all the difference. “Appropriate footwear is very important,” Stone said. Pack up the high heels or slickbottomed flats and instead choose footwear with grip and tread. Walk slowly and deliberately — black ice can be hard to spot, so be sure of your footing. Don’t forget, slippery conditions are very

dangerous for drivers, as well. Slow down and look for ice, especially on bridges and overpasses, when driving in chilly or snowy conditions. Stone also suggests making sure stairs are clear of ice and have solid railings to hold on to and that walkways are cleared and salted or sanded. 2. SHOVELING STRAIN Clearing your walkway might help prevent a nasty fall, but the process of shoveling snow requires caution, too. Stone says she follows the advice of the American Physical Therapy Association, which recommends lifting small loads of snow, rather than heavy shovelfuls, to avoid potential muscle strain. Lift with your knees, rather than bending and straining your lower back. Even more important, take frequent breaks. Sweat is a common sign that people are working hard and should slow down. Cold weather dampens that effect, so it’s very easy to overexert. Dr. Steven Hearne, Co-Medical Director of PRMC’s Guerrieri Heart & Vascular Institute, says cold weather puts an extra strain on the heart as it works to warm up the body.

People with heart disease or high blood pressure should be very cautious about snow shoveling and other cold-weather exertions. 3. EXPOSURE When the weather is extremely cold, take appropriate precautions. Limit time spent outdoors and dress appropriately. The CDC says dressing in layers helps: • Start with an inner layer that will hold body heat and wick away moisture, such as wool, silk or polypropylene. • Cover that with an insulation layer, such as fleece, wool or down. • Finally, have a tightly woven outer layer that will keep you dry and protect you from wind. Covering extremities is vitally important, so invest in a good pair of mittens or gloves, and don’t forget your hat, scarf and a pair of warm, moisture-wicking socks. Shivering, exhaustion, confusion and drowsiness can be signs of hypothermia. Keep an eye on infants and the elderly, who are most likely to develop hypothermia. A body temperature lower than 95 degrees is an emergency — get medical attention immediately.


PROMOTIONAL SECTION 4. RESPIRATORY Cold air is very dry, which can trigger reactions in people with respiratory ailments, says R.J. Wilkinson, BSRC, RRT, Director for Respiratory Services at PRMC. “A humidifier is beneficial to have in the home for those who have respiratory complications, especially those with asthma and COPD.” Wilkinson also recommends covering your nose and mouth with a scarf when going outside, as the cold air can exacerbate breathing problems. “If prescribed a rescue inhaler, such as Albuterol, keep it close by for immediate use when needed,” Wilkinson said. “Always remember to use a spacer for maximum effectiveness.” 5. COLD & FLU Colds and the flu are prevalent in winter as people crowd together indoors. “To prevent the spread of germs and greatly decrease your chances of becoming sick, it is very important to wash your hands frequently,” Wilkinson said. While colds are unpleasant and an inconvenience, influenza, which shares many symptoms, can have very serious complications. It’s important to immunize children and seniors especially, as complications are more common in these age groups. How do you know if it’s the flu or a common cold? Flu symptoms are more likely to have a sudden onset, while colds come on more gradually. Fever, chills, aches and fatigue are common in flu but less common in colds. Whether you have a cold or flu, if the symptoms are milder, you can treat them at home with plenty of fluids, rest and over-the-counter medications. Antiviral medication may be appropriate for some people, especially children and seniors — call your doctor for advice. If you think you or a loved one may have the flu, look out for signs of emergency complications.

Let’s TAKE FIVE Dr. Kathryn Fiddler shares five simple ways to stay healthy and less stressed this holiday season The holiday season is one of my favorite times of year. I enjoy the cooler weather, warm cozy fires and time with family and friends. Despite all this talk about the joy of the season, it can also be an exceptionally stressful time, and that stress can influence our health. So, this year, give yourself a gift by taking time to reduce your stress; it is one of the greatest gifts you can give yourself and those who matter in your life. Take a walk: It seems so simple, but it works! Get outside, wear your warm wooly mittens; if it’s cold, button up, but just get outside. Harvard Health data suggests walking reduces the risk of cardiovascular (heart) related events by one-third! Just 30 minutes, 5 times a week will do the trick. It also helps you sleep, which reduces anxiety. Write a thank-you letter: Much has been written about the power of gratitude. People who practice gratitude have greater optimism, increased self-esteem, improved immune system and lower blood pressure. So why not capture some of those good feelings and share them with someone else? Write one letter to someone and let them know what makes them special in your life. Eat well: This time of year comes with so many choices…which party, which dessert, which cookie, which beverage? Some simple advice to beat temptation: Stand more than an arm’s length away from the cookie tray or whatever tempts you. The distance will help prevent devouring a plate of food. Get a good night’s rest: Did you know that, according to WebMD, people who are well rested eat an average of 300 calories less each day than those who don’t get enough sleep. A good night’s sleep also helps improve your mood, heal your body, protect your heart…and makes you smarter! With all that evidence, get to bed. Laugh: It has long been said that laughter is the best medicine. It relaxes the body, boosts the immune system, burns calories and improves emotional health. For this holiday season, share some humor with friends and family. Laughter is contagious! Watch a YouTube video; a silly sitcom; tell a story; spend time with a child or whatever brings you joy. As the Christmas song Holly Jolly Christmas says, “Smile at everyone you meet.” Bring them joy and get a little back yourself.

Primary care providers are your advocate for better health. They can help guide you through the healthcare system and coordinate better care. Your provider will make sure you are up-to-date with your immunizations, screen for depression, and identify potential health problems early. Research shows that people who have a primary care provider have 33% lower healthcare-related costs than those who do not. Dr. Danielle Giddins of Peninsula Regional Family Medicine Millsboro encourages everyone to find a family doctor — someone who can be their advocate and help manage chronic conditions. “The role of the family doctor is not just to see you when you’re sick,” she said. “We need to get an overall picture of your health.” Patients often say during an Emergency Department visit that they “didn’t want to bother their doctor with a call,” but on the contrary, physicians welcome those. “As primary care physicians, we know our patients better, and we are in a much better position to take care of their problems,” said Dr. Vel Natesan, a physician in private practice in Salisbury. “This improves appropriate care, provides continuity of care, avoids unnecessary medication and testing and also allows us a chance to continue to provide preventive care and education.” While your primary physician cares for most of your health needs, there may come a time when you require the expertise of a physician specialist. Abdominal Aortic Aneurysm (AAA) Screening: The U.S. Preventive Services Task Force recommends that people over 55, especially those who have a history of smoking, have a one-time (not annual) screening for weakness in the aortic wall. Men ages 65-75 who were or are currently smokers are at the highest risk. Fortunately, the screening is a simple, painless ultrasound. Blood Pressure: Blood pressure checks should be performed annually at your regular checkup. Blood Sugar/Diabetes Screening: The U.S. Preventive Services Task Force recommends screening for abnormal blood glucose and type 2 diabetes in adults 40 to 70 years of age who are overweight or obese, repeating testing every three years if results are normal. Individuals at higher risk should be considered for earlier and more frequent screening.

The American Diabetes Association recommends screening for type 2 diabetes annually in patients 45 years and older or in patients younger than 45 years with major risk factors. Cholesterol: A cholesterol check should be part of your routine exam when you are an adult and should be checked annually once you are age 35 and older or if you have elevated blood cholesterol levels. Heart: Heart disease can strike at any age, but the risks increase as people get older. Your primary care doctor should check blood pressure and cholesterol annually, but you can do more. PRMC’s Guerrieri Heart & Vascular Institute offers free heart-disease risk assessments that include a fasting lipid profile (total cholesterol, HDL, risk ratio and glucose), ankle/brachial index, resting 12-lead EKG, body fat/body mass index, blood pressure and pulse oximetry testing and more. Call 410-543-7026 to make an appointment. No insurance is required. Peripheral Artery Disease: The risk for vascular disease increases as we age. For people over 55 with risk factors (high blood pressure, smoking, diabetes, high cholesterol, obesity, family history) or symptoms of vascular disease (leg pain when walking, numbness in leg or foot, stroke-like symptoms, unexplained abdominal or back pain), PRMC offers free screening for PAD. The test is known as ankle-brachial index and is a measurement and comparison of blood pressures. It is performed in conjunction with an ultrasound to screen for AAA. Pneumococcal vaccines can help prevent pneumonia and are recommended for people 65 and up. There goes the promise you made to yourself last year: that 2019 would be the season to Keep Calm & Holiday On, to embrace simplicity and release the self-induced pressure of preparedness.

By learning how to breathe properly, you will see a dramatic improvement in your life. — Julie Schoen There is one powerful yet seriously underrated strategy that can help us to not just survive the holidays but to shift how we interpret our experience of them. Outwitting Overwhelm: Are You Breathing? Observing the quality of our breath. Whether it’s the creeping feeling of “too much to do, too little time,” or the imminent provocation by a distant cousin’s partisan views on just about everything, being aware of how we are breathing is essential to thwarting a sense of overwhelm. Things to notice: • Am I holding my breath (this often happens unconsciously when we get activated)?


• Am I sipping air, or breathing shallowly, mostly from the upper chest (also known as reverse breathing)? • Do I feel like I can’t get enough breath or have to take abnormally deep breaths every three to four cycles? Many of these breathing patterns up-regulate (amplify) the Sympathetic Nervous System (fight-or-flight) response, keeping us in a perpetual state of stress and arousal. The simple act of noticing these characteristics creates a pivot point from which we can purposefully modify our breath to induce a relaxation response. The respiratory system is unique in that it works on its own when we’re not thinking about it, but through observation followed by intention, we can direct this system to operate in a way that alters our physiological state. Shifting to a breathing pattern that is slow, deep and fluid has a calming effect on the mind. The result is a sense of space – room to breathe, room to think, room to feel. From this space, we can acknowledge what is arising within us and make a conscious choice to respond in a way that is in alignment with our values. This is the power of the pause… we can shift from reacting to responding, from overwhelmed to hopeful. With awareness and intention, one breath at a time, this holiday season really can be different! and display a selection in their stores. One-of-a-kind pieces even occupy space atop support beams or hang from the rafters of Toy Town Antiques. In Snow Hill, a rare Buddy L train set resides high above the center of the store, and a 1980s life-size, bi-wing plane, (which Richard discovered in a Salisbury barn), proudly hangs toward the back. Fully functioning today, it appears to be soaring through the store and serves as another inspiring reminder of what makes Toy Town Antiques so special. The array of vintage items available at Toy Town is vast. Special-occasion collectibles are showcased, as well, including rare Christmas, Easter and Halloween-themed items, which rotate by season. Notably, a majority of the items on display in Snow Hill and Berlin were acquired from customers looking to sell their collections or those of a relative, and clients travel from one end of the Eastern Seaboard to the other to find rare items they covet for their own collections. “We receive calls multiple times a day, every day, from people wanting to sell things, and the calls are becoming more widespread,” Richard said, noting their recent acquisition of an impressive antique humidor from New York City and a client who drove from North Carolina in October to sell items of interest. The Seatons feel an immense sense of pride not only in how far their business has come but in how their customers provide ancillary benefit to the Snow Hill and Berlin communities that have embraced them. cs

T

rain enthusiasts travel back in time more than a century as model trains of many shapes and sizes, dating back to the 1880s, travel around five uniquely breathtaking layouts inside the Delaware SeaSide Railroad Club in Dagsboro. Nearly every inch of the 2,000-square-foot building is filled with history right at your fingertips. “It’s something you can feel and experience,” club president John Hodges said of the vast array of trains that greet visitors every Wednesday and Saturday year-round. The collection ranges from the Overland Express baggage cars dating back to the late 19th century to the Amtrak trains that, at 20 years old, are still considered new by longtime collectors. The nonprofit club began in 2004 with four members at SeaSide Hobbies in Ocean View. As the group grew to its current total of roughly 70 members young and old, it moved to its current location, at the corner of Routes 113 and 26. Setups here feature trains chugging along over bridges, through mountainsides and around picturesque towns with real smoke billowing from the smokestacks. Venture deeper into the building, and you will find tracks surrounding a working outdoor fair and amusement park on

Meanwhile, club members enjoy a hobby that began in childhood but has since outgrown their homes. “I’m in heaven here. I don’t have a train room at home that’s 36 feet long,” show organizer and longtime member Bill Ziegler said. Still, he pointed to a small wooden train set near the club’s front door. “This is the hook. The kid runs to this,” he said. “We want to get young people involved. They’re the future of model railroading, not just this club.” The club has six junior members, from ages 10 to 17, who Hodges hopes will continue to grow the club through free weekly open houses, hands-on workshops for students at local schools and two annual shows at Roxana Fire Company. “The mission [from the club’s inception] was to promote the hobby of model railroading. The original members felt like it was a dying hobby,” said Hodges, whose collection includes some trains from his childhood. “It’s a pretty neat franchise to be involved with.” cs

These days, he also rekindles those memories through the customers who visit SeaSide Hobbies, the store he purchased the same year his dad passed away. “SeaSide Hobbies is absolutely the best place to shop for anything trains,” said customer Daniel Burris. “Craig and his family are great people. There’s always something new to see; the selection is great, and the prices are fair. I’m so addicted to this place, I go weekly!” Craig said his store continues to grow in popularity among train enthusiasts throughout the region, so we thought we would sit down with Thomas, to determine just what makes his quaint shop tick (or chug, as it were).

“EVERY DAY IS LIKE CHRISTMAS” at SeaSide Hobbies on Daisey Street in Ocean View, according to its owner, Craig Thomas — yet it’s Thanksgiving Day he looks forward to most each year. This was the day when Craig and his father shared their fondest hobby together: assembling and running a fully functioning train set that spanned nearly half their living room. It was a family tradition that Craig and his father, Richard, enjoyed for some 40 years, until Richard’s passing in 2011. “He’s no longer here, but his trains are, and I will keep that memory alive as long as I can,” Craig said. Craig’s train layout has navigated its way to the garage, thanks to its sheer size — a collection that features about 700 pieces in all. Thomas still owns every train he played with as a boy, many of which he received as Christmas gifts.

How do you see the industry growing, moving forward? It will be gradual, but it will continue to grow because I believe when older guys pass away, and their kids find their trains, that will rekindle something they remember. Then, they can build on the hobby and share it with their kids. Was there a specific routine your father used that you follow to relive that tradition? As soon as Thanksgiving dinner is done, the base layout went down. The next morning is when it started coming together. We changed it up every year. At first, it was just a half a sheet of plywood, four feet by four feet. It went all the way to 8 feet by 15 or 16 feet at the end. It took up the whole center of the living room. We always got something new every Christmas — a train set, an operating accessory. It drove my mom, Shirleen, crazy because she lost her living room. But she dealt with it pretty good for the month that it was up. How does your mother feel now when she sees that train layout? It brings a tear to her eye. It’s a good ol’ family tradition. cs

All Aboard! SNOW HILL’S CORDDRY COMPANY CROSSING MODEL RAILROAD CLUB IS MILES OF FUN — AND THEN SOME Story by Victor Fernandes | Photos by Grant L. Gursky

T

he elaborate train display on the second floor of Pocomoke River Canoe Company already stands approximately 40’x20’ and has 1.16 miles of track for nearly a dozen model trains to run on. But store owner Barry Laws says there is always room for more. “We just can’t help ourselves,” said Laws, who is also the president of the Corddry Company Crossing Model Railroad Club. His store in Snow Hill again provides the backdrop for the club’s 27th annual holiday train garden. The expansive layout, which found its current home nearly two decades ago, will feature a model of Furnace Town Historic Site, added lighting and more buttons for kids to press. The layout already includes custom models of Beamon Hardware and Pullman’s Lumber Yard, and of course the canoe store. It also has a model of the Pocomoke River with water flowing through it and, on occasion, goldfish swimming in it. “It has slowly expanded. Now, we’re almost out of room. So we’re working on building upward,” said club member and engineer Frank Deuter, 20, who has been a member since he was 5 years old. “We’re building up a little every year.” The multitrack, multi-train setup runs trains ranging from the early 1900s to the modern era, but all have realistic sound effects and smoke emanating from them. “He runs the trains with his phone and all that. In the old days, you couldn’t do all that,” Laws said of Deuter. “But the old trains are great still, too.” Either way, kids and their families serve as the inspiration. “It’s fun to see people of all ages enjoy it,” Laws said. “We feel like we’ve done a good job with the space we have. We try to improve it every year, add something to it ever year, and we’ve been successful in doing that.” cs

ohn Baldwin joked that he was “railroaded” into overseeing the committee tasked with putting on the Del-Mar-Va Model Railroad Club’s 34th Annual Holiday Open House in Delmar. It’s a yearlong project that was placed in his capable hands two months ago. But jokes aside, he’s serious about his task. The 8,000 square feet of layouts spread across the second floor of St. Stephen’s

United Methodist Church is an awesome example of the passion Baldwin and more than 40 other club members have for model trains. “It’s a wonderful thing to be able to share all these layouts with the community,” Baldwin said, “and to show off all the work that’s gone into them over 35 years the club has been there. When you look at all the love that has gone into all this, it’s astounding.” Given all that space in the church, Baldwin

estimates the club has the largest selection of layouts on the Eastern Shore. The more than half-dozen setups feature historical trains dating back to the 1940s and 1950s as they share the spotlight with more modern trains, including the always popular and historic Lionel train sets. “We are very lucky to have that as a platform where we can build our toys and enjoy,” Baldwin said, no pun intended.

Baldwin anticipates hordes of train enthusiasts marveling over the constantly evolving layouts from the open house’s first day on November 30 through its final showing, January 12. “It’s really neat to see all the families come through with little kids going ‘ooh’ and ‘aah,’” he said, “and share the fun stories from some of the models.” The committee heads into the club’s latest open house as it puts the finishing touches on an extremely intricate project. “There is a ton of wiring that comes with all these layouts. There are all the little details that have to make everything work perfectly,” Baldwin said. “We have all these different gauges and all these different sizes, and each one has its strengths and weaknesses. It’s a phenomenal way to show your love for model trains, year-round.” cs

nown as the Christkindlesmarkts in Germany, the Christmas markets of Europe, started in the 1600s, are reminiscent of the Christmas’s of the American 1940s-1960s. Small towns and large cities alike across the continent decorate their central squares for the holidays. Wooden stalls, typically shaped as chalets, are brought in and erected like magic — each decorated with fresh greenery and old-fashioned bulbs. When the market is in full swing each evening, each stall is laid out with its specialties, including inviting food, warm drinks or gifts for all ages. The season of the European Christmas markets begins the Friday prior to the first Sunday of Advent (in November) and runs nightly until Christmas Eve or a specifically chosen Christian event, which may be in early January, depending on the country.

In a large, heavy-bottomed sauté pan or Dutch oven, and over medium-high heat, arrange the sprout halves facedown. Add enough water to come up one-quarter of the way of the sprouts — just enough to steam gently. When the water has evaporated, add the oil and the sliced shallots. Allow the sprouts to aggressively caramelize but not burn. When the onions have started to color, add the bacon and the butter. Stir well to mix. Add the parsley and season well with salt and pepper. Transfer to a serving platter or bowl. Enjoy!

Mix the starter with a hook and add butter after gluten starts to develop. Add nuts and fruit and mix to incorporate. Put in a warm place to raise, allowing to double in volume. Roll into a ball and place onto a papered sheet pan. Brush with standard egg wash and proof again. Bake at 350° for 12-15 minutes.

Panettone — The Bread Of Legend Although there are many legends that surround the creation of this dried-fruit-filled bread, panettone actually has its roots in religion. According to author Stanislao Porzio, the bread first originated in Milan in the 15th century and was referred to as pane di tono, which translates to “luxury cake.” During those times, yeast was considered a very special ingredient, so it was only used to make bread for religious celebrations, like Christmas. In 1919 Angelo Motta, who was said to be responsible for implementing the proofing process to the recipe, started mass-producing panettone out of his Milanese bakery, simultaneously revolutionizing the cakes by giving them its now traditional dome shape.

Blend the eggs and sugar together, add the butter and mix well. In a small bowl, mix together the flour and baking powder and add to the butter mixture. Add the vanilla, lemon zest and lemon juice, stirring until combined. Let the batter rest in the refrigerator for 1 hour. Preheat oven to 375°. Spray a madeleine pan with cooking spray. Spoon the batter into the pan, filling each mold ¾ full. Bake 10 minutes, until the madeleines are golden brown. When cooled, dust with powdered sugar.

For the Pumpkin Pecan Brie Braid, unfold one frozen puff-pastry sheet onto a floured surface with the short end facing you; roll out to make flat if necessary. Spread half of the pumpkin filling down the center of the pastry. Top with several slices of the Brie to cover the pumpkin filling and sprinkle with pecans. Using a sharp knife, cut both sides of the pastry into halfinch strips, making sure not to cut through the pumpkin and Brie. Brush both sides lightly with the egg wash and fold each section, alternately across the center to form a braid. Brush the top and side with egg wash and transfer to the baking sheet.

Spread remaining pumpkin filling into an even layer over the entire sheet. Sprinkle the chocolate chips over the pastry and roll the pastry sheet jelly-roll-style. With a sharp knife, slice down the center of the roll, leaving about 1 inch at the top. Twist the two pieces together, one over the other, making sure to keep the pumpkin filling sides faceup. Form the pastry into a circle by pulling the two ends together and pressing securely, pinching the seam. Brush the pastries with egg wash, then transfer to the baking sheet and sprinkle with coarse sugar. Bake both breads for 30-35 minutes or until golden brown. Remove from the oven and let cool for 10 minutes. Glaze the Chocolate Pumpkin Swirl Bread by whisking together the powdered sugar, milk and vanilla until smooth. Drizzle on top of the warm bread and serve!

FOR THE TART DOUGH: 1 cup butter, room temperature ¾ cup confectioner’s sugar, sifted 2 yolks 1 tsp salt 2½ cup all-purpose flour, sifted Up to 2 Tbsp milk, room temperature

FOR THE FRANGIPANE: ½ cup butter, room temperature ⅓ cup almond paste ½ cup + 2 Tbsp sugar 2 large eggs 1 Tbsp almond extract ⅓ cup cake flour

In a stand mixer fitted with a paddle attachment, mix butter and sugar until creamy. Add yolks one at a time, scraping bowl between additions. Add flour and salt, mixing just to combine. Add milk if dough feels dry.

In a stand mixer fitted with a paddle attachment, cream butter, sugar and almond paste until very light and fluffy. Add eggs one at a time, scraping down bowl between additions. Mix in almond extract. Add sifted cake flour, mixing just to combine. Refrigerate until needed, up to 3 days.

Turn dough out onto counter, shape into a flat round with your hands, wrap in plastic and refrigerate for up to 2 days. When you are ready to bake the shells, let dough sit at room temperature for 1 hour before rolling out. Roll dough out on a floured work surface to 1/8-inch thick. Cut out 8 rounds with a five-inch round cutter (or use a 5-inch round plate as a stencil and cut with a knife). If you are not able to get 8 circles, collect the scraps and re-roll. You can re-roll this dough 2 times before it will negatively affect the final product.

Press the rounds into 4-inch ring molds, trim the excess dough around the edges with a paring knife. Chill the dough in the ring molds thoroughly in the fridge or freezer and then line with parchment or extra-large cupcake liners filled with pie weights (we use dried chickpeas, which are much cheaper than ceramic pie weights). Blind bake for about 18 minutes at 350°.

FOR THE POACHED PEARS: 4 ripe pears (any variety is fine, but Bosc is a variety that stands up well to poaching and has a long neck which makes for a dramatic-looking finished product). Pears should not be overripe or have blemishes. 2 cups water 1 cup sugar 2 cups white wine (we use Riesling) 2 cinnamon sticks 4 cloves 1 vanilla bean 1½ cup orange juice Pears, peeled, cut in half and centers cored with a melon baller. Bring the remaining ingredients to a boil, then lower to a simmer.

Allow to cool and remove the baking beans and liners. The shells should be baked fully; if you notice any raw spots, bake again without the liners or pie weights for 5-10 minutes, keeping an eye on them.

Add the pears, cover with a round piece of parchment paper directly on the liquid to keep the pears submerged. Poach for about 30 minutes, checking every 10-15 minutes for doneness. Pears should be slightly tender but not soft or mushy. Allow to cool at room temp in the liquid. Store in the refrigerator in the liquid for up to a week.

Allow to cool completely. These can be baked up to 2 days ahead if they are wrapped tight.

INSTRUCTIONS: Preheat oven to 400°. Coat a 15x10x1inch jellyroll pan; line with wax paper and grease lightly. Combine first three ingredients; beat at medium speed, gradually adding 3/4 cup of sugar and continue beating until thick and lightly colored. Fold in flour, cocoa and vanilla. Spread mixture evenly into prepared pan. Bake in oven for 13 minutes or until surface springs back when gently pushed. Sift 3 tablespoons of powdered sugar in a 15x10-inch rectangle linen towel. Turn cake out onto sugar; remove wax paper from cake. Starting with short end, carefully roll cake and towel. Cool thoroughly on a wire rack, seam-side down. Unroll and remove towel. Spread with whipped cream and reroll. Chill for several hours.

Flowing With Seasonal Flavors LONGBOARD CAFÉ PROVIDES AN ALTERNATIVE TO TRADITIONAL HOLIDAY DINNERS WITH ITS ROASTED-PORK ROULADE WITH POMEGRANATE GLAZE & DUCHESS POTATOES

FOR THE POMEGRANATE GLAZE

1½ cups pomegranate juice 2 Tbsp shallot, finely chopped 2 Tbsp olive oil 1 Tbsp honey 1 tsp balsamic vinegar Dash allspice, ground Pinch salt & pepper

1½ -2 lb pork tenderloin, butterflied and pounded out with a meat tenderizer to about ½” thick throughout 2 cloves garlic, minced 2-3 cups baby spinach, wilted, drained and squeezed dry 8 oz roasted red peppers, drained and chopped coarsely 3-4 ounces feta cheese, crumbled

Sauté shallot in oil on low heat until tender, about 3-4 minutes. Add pomegranate juice, spices, honey and vinegar. Bring to a simmer, reduce heat to medium and simmer uncovered for 15 minutes or until it reduces to ½ cup.

Preheat oven to 450°. Lay the butterflied roast open and rub the minced garlic on the side that is facing up. Layer the baby spinach, roasted red peppers and feta cheese in strips on top of the butterflied roast, lengthwise in the center. Begin rolling the end that is parallel to the fold in the roast. Roll tightly as you work with all the filling to keep it in tack. Tie the roast with kitchen twine every 2-3 inches along the length.

Place the roast cut-side down on a wire rack in a shallow roasting pan. Cook in oven for 10 minutes to get a good browning. Reduce heat to 325°, cover the roast with tented foil and cook for an additional 30 minutes or until it registers 140° in the thickest part of the meat. Remove from the oven and let sit for 10 minutes.

While the potatoes are boiling, melt 2 Tbsp of butter and set aside. You will use this butter to coat the potatoes right before they go in the oven. Preheat the oven to 425°. When the potatoes are cooked, drain in a colander and put the potatoes back in the pot set over low heat. Allow them to release steam for a minute or so. Add 2 Tbsp of butter and mash the potatoes until the butter has been incorporated. Add the nutmeg, black pepper, heavy cream and continue mashing the potatoes. Once everything is incorporated, add salt to taste and the egg yolks. Continue to mash until the mixture is smooth.

FOR THE DUCHESS POTATOES 2 lbs potatoes (Yukon Golds work best), peeled and cut into chunks ¼ cup heavy cream 4 Tbsp unsalted butter, divided ¼ tsp nutmeg ½ tsp black pepper 3 egg yolks Salt

Using a piping bag with a large star point, pipe the potatoes onto a cookie sheet. Paint the potatoes with the melted butter. Bake in oven until nicely browned, about 20 minutes.

Place potatoes in a medium to large pot (3 qt) and cover with a couple inches of cold water. Add a couple teaspoons of salt to the water. Bring to a simmer and cook until the potatoes are tender (the tines of a fork easily pierce), about 20-25 minutes.

TO SERVE Remove the twine. Paint the plate with the glaze. Slice the roulade about ¾-1” thick and fan out atop the glaze. Use a spatula to transfer the potatoes to the plate.

DRY INGREDIENTS: 1½ cup all-purpose flour ½ cup granulated sugar 1½ tsp baking soda ¾ tsp salt 1½ tsp cinnamon ½ tsp nutmeg ¼ tsp ginger ½-¾ cup of oats (good quality)

WET INGREDIENTS: Eggs ⅔ cup vegetable oil 1½ cup buttermilk ⅓ cup white sugar ⅔ cup brown sugar ½ tsp lavender extract (if you’re also using fresh crushed lavender, only use ⅛ of a tsp)

INSTRUCTIONS: Combine dry ingredients and set aside. Preheat oven to 350°. Wash, quarter and core several pears, then finely dice them to make a generous 2 cups (I suggest dicing into a 2-cup Pyrex measuring pitcher). Pour the vegetable oil over them to keep them from turning brown. In a large bowl, beat 2 eggs, then add the pear mixture and remaining wet ingredients. Gently fold in the dry ingredients, leaving out the oats and toasted walnuts. Do not overmix! In the last several turns, lightly fold in the oats and walnuts.

INGREDIENTS: 1 cup walnuts, chopped and toasted Several pears, ripe and soft ½ cup vegetable oil 2 eggs, beaten, with 2 Tbsp milk ½ cup honey

Using a 2-oz ice cream scoop, or a ¼ cup measuring cup, portion the batter into cupcake pans with foil or paper liners. If not using liners, be sure to butter the cupcake pans very thoroughly. This should make about one dozen cupcakes or muffins. Bake at 350° until golden brown and the surface springs back when lightly touched, probably 18-22 minutes. “These will be delicious as a breakfast muffin or as a dessert, if frosted with buttercream or cream cheese frosting. INGREDIENTS: 4 cups all-purpose flour 2 Tbsp baking powder 2 pinches of salt 1¼ tsp pepper 2½ tsp cinnamon 1 tsp allspice (Optional: 1 tsp fresh-crushed culinary lavender, using a mortar and pestle)

OTHER INGREDIENTS: 3¼ cups strawberries, diced and cut on the smaller side

INSTRUCTIONS: Preheat oven to 350°. Add the dry ingredient mix together in a bowl. Add the wet ingredient mix together in a separate, larger bowl (dry ingredients and strawberries will ultimately be added to this bowl). Mix the wet ingredients with a hand whisk. Add the dry ingredients to the wet ingredients and mix together using the same whisk and a rubber spatula to scrape the sides. Do not overmix. Should be some lumpiness but no visible dry ingredients. Fold in the strawberries to the batter with a rubber baking spatula. Scoop mixture into jumbo- or regular-size muffin pans and sprinkle with coarse baking sugar or turbinado sugar. Should make approximately 24 regularsize muffins or 12 jumbo-size muffins. Muffins take between 25-30 minutes to bake. Jumbo muffins take longer to bake. They are ready when a toothpick comes out clean.

The Spice Of Life DOLCÉ BAKERY AND COFFEE SHOP CELEBRATES THE FLAVORS OF THE SEASON WITH ITS PUMPKIN SPICE CAKE INGREDIENTS: 4 cups flour ¼ cup pumpkin pie spice 1 Tbsp baking powder 1 tsp baking soda 1 tsp salt 2 sticks unsalted butter, softened 3 cups sugar 4 eggs 1 cup milk 2 cups pumpkin purée (we prefer Libby’s brand) INSTRUCTIONS: Combine dry ingredients in a bowl. Cream butter and sugar until light and fluffy. Gradually add eggs and pumpkin. Add dry ingredients and milk, alternating. Mix gently until incorporated (It’s important not to overmix once flour is added.). Portion into cupcake or cake pans. For cupcakes: Bake in preheated oven at 350° for 15-18 minutes. For cake: Bake preheated oven at 350° for 32-35 minutes or until toothpick inserted in center comes out clean. Baking times may vary — we suggest checking for doneness every couple of minutes near the end of the baking time.

FOR THE APRICOT GLAZE:

Whisk apricot jam with warm water to loosen

ASSEMBLING THE TARTS:

Spread ¼ cup frangipane on the bottom of each tart. Top each tart with one poached pear half; do not press into the frangipane; just let it sit on top. Bake for about 18 minutes at 325° until the frangipane is golden brown and a cake tester comes clean. Brush the entire surface of the tart with the apricot glaze as soon as they come out of the oven. Serve warm or at room temp, with or without whipped cream or ice cream.

Whip all ingredients together in a chilled bowl until thick.

PUMPKIN SPICE BUTTERCREAM 4 sticks unsalted butter 4 cups powdered sugar 2 tsp cinnamon 2 tsp pumpkin pie spice INSTRUCTIONS: Cream butter and add in remaining ingredients. Beat slowly at first to incorporate ingredients, then beat on high for 3-5 minutes or until buttercream is light and fluffy. Spread on pumpkin spice cake once cooled.

CHOCOLATE FROSTING:

Melt butter, stir in cocoa and cool. Add powdered sugar alternatively with heavy whipping cream, then vanilla. Beat until smooth, then spread evenly over cake, marking with tines of a fork to resemble the bark of a tree. Refrigerate until time to serve. cs
