Wedding Feature WHILE MUCH IS MADE ABOUT CHOOSING THE ENGAGEMENT RING, THE WEDDING BANDS ARE OFTEN OVERLOOKED AND SOMETIMES EVEN LEFT TO THE LAST MOMENT, ALMOST AS AN AFTERTHOUGHT. NOT ONLY IS THE WEDDING BAND SYMBOLIC OF YOUR LOVE WHICH WILL LAST THROUGHOUT ETERNITY – THE CIRCLE THAT NEVER ENDS - YOU ALSO WANT IT TO STAND THE TEST OF TIME.

lways follow your instincts when looking at jewelry, whether it’s wedding bands, eternity rings or even a pair of earrings. Ask yourself, will the piece stand the test of time, will it be comfortable to wear, is it something you can envisage wearing every day, for the rest of your life? While the traditional gold band will no doubt stand the test of time it may not be to your personal taste, and don’t forget, it’s you that has to wear it! If you’re interested in something a little more modern and eye-catching, consider matching your band to the style of your engagement ring.

It’s expensive however but if you can afford it, will looking wonderful. anne Harris Jewellers Anne Harris Jewellers is a family run business which has been in existance for over 30 years, giving a very dependable service to Wicklow and surrounding areas.

White gold is very much in style right now for wedding bands, it coordinates with both platinum and silver jewelry, yet is actually cheaper than platinum, which will be of interest to anyone on a budget. If you’re more of a traditionalist, then you’re most likely considering yellow gold. For most of us, yellow gold symbolises the enduring warmth of the perfect marriage. Don’t be afraid to ask the jeweler about what you’re buying and discuss your budget – he’ll be happy to ensure you get the very best for your money, whether it’s 14k, 18k or 24k gold. Another option is of course platinum, which is an expensive purchase. Platinum isn’t mixed

TIPS FROM AN EXPERT

tHe GoDDess room THE GODDESS ROOM, Ireland’s only vintage and vintage bridal salon and atlier, brings back glamour for women of all ages, shapes and taste.. Fiona McCann, Irish Times, our first bride “Walk into the GODDESS ROOM and I dare you to come out feeling anything less than aphrodite”. We aso design and tailor for mother of the bride/groom. Iinspired by your own unique vision of yourself, every woman is aphrodite in THE GODDESS ROOM. Meridien Point, Greystones www.thegoddessroom.net tel: 01-2016591

When purchasing a wedding dress, try to allow 6 – 9 months in order to make your decision, all the while reading up on the very many different styles available, both in magazines and on the web. Always try to keep an open mind and don’t be afraid to ask the sales assistant for their advice.

Colour is really important – pale or blonde brides should wear warm shades such as ivory or champagne while darker brides can look stunning in white. Don’t bring too many people with you at the start as too many opinions will only add to the confusion! Try not to be too disheartened by the size of the dresses you try on as bridal sizes are usually two sizes smaller than those to be found on the high street. If you’re lucky enough to be having a custom made dress, the designer will insist on a toile fitting initially, the dress is made up in calico to check the style and size of the gown. Remember to buy your lingerie early so you can try it on when the fittings begin. Try to collect your dress 2 - 3 weeks before the big day along with all accessories. Most of all try to relax and enjoy you day as much as possible! Marie Mcelheron Bridal design, abbey lane, arklow • tel: 0402 32818 www.mariemcelheron.com

WHILE YOU’RE NO DOUBT MORE CONCERNED WITH HOW YOUR WEDDING DRESS LOOKS AND FITS AT THIS STAGE, THERE’S NO DENYING THAT INVESTING IN COMFORTABLE, SUPPORTIVE UNDERWEAR IS MONEY WELL SPENT. However, first things first. It’s not a good idea to head out and buy the frilliest, whitest pieces you can find once he pops the question. In fact, the place to start is with the dress. Only when you know the style, shape and look of the dress you’re going for will it be time to move onto the knickers.

Although only one other person – your new husband – will see it, the lingerie you wear underneath your dress will be the difference between looking good and looking absolutely perfect on your special day. Choosing the right shapewear, bra and or hose is an important point on the ‘to do’ list.

This doesn’t mean you have to forget about glamour and looking all round fabulous, however, as most shops stock extensive bridal ranges that include everything from the traditional bra, knickers and suspenders combo, to something slightly more detailed to mark your first night as a married couple. STRiPED BRA (€43) AND kNickERS (€47) from contour, QuinSBoro rd, BrAY & StillorgAn Sc

Get professionally fited for your bra – when you think of the various TV and media campaigns pushing this message in our faces on a daily basis it’s shocking to think there are still some women out there wearing the wrong bra size – and it shows. An illfitting bra will make your bust look heavier or even saggy which is never a good look.

When looking at bras take some time out to try on a couple of longline styles, these fasten at the small of your back and pull your body in similar to how a corset does – showing your body off to its absolute best advantage. Body slimmers and shapewear are a difficult decision when it comes to your wedding day. We all no doubt have one and we all swear by them, but are they appropriate wedding night attire? Shapewear can be uncomfortable and will become even more so on a day that starts bright and early and doesn’t finish till the early hours. Properly fitting underwear that doesn’t cut into the skin might be a far better option. Finally, don’t forget something to slip into for afterwards, whether it’s a corset, teddy or a frilly negligee you’ll be glad you bought it! And this time, it doesn’t have to be white, cream or ivory, go for whatever colour you feel sexiest in. RED BRA (€??) AND THoNG (€??) from contour, QuinSBoro rd, BrAY & StillorgAn Sc

W

edding bands can be a little tricky; one bad decision and you could end up with your entire guest list sitting it out, waiting for the music to ‘pick up’. Everyone has a wedding band story, if you’re lucky enough the guests might make the most of it and it’ll end up being a funny one to tell, but if you’re unlucky – and the band a real party killer - then you’ll be devastated and the day ruined. The number one thing to remember when choosing a band is research, ask around for recommendations, actually go see a couple of the bands beforehand to get first hand experience. Most wedding bands will have a set list of floor fillers and are happy to accomodate anyone with special requests. Be wary of making special requests however, just because Curiosity Killed the Cat bring back fantastic memories for you and your BFF, doesn’t mean they do it for everyone else... As with the band, finding the right photographer is one of the most important things you’ll do in your wedding prep. A photograph says a thousand words we’re told, so you want every single one of those to be a good one! Again, research photographers thoroughly, visit them in their studio and ask to see samples of weddings they’ve done previously. If you don’t like the work, the chances are that the photographer isn’t for you. Think hard about what type of ‘look’ you’re going for, set-ups such as both of you peeking around a tree might seem cute on the day, but will it last the test of time? Wedding

FINNEGANS BRAY «« COACH AND MINIBUS HIRE »»

photography is one of the big expenses of the day, so it’s really worth your while making sure you get what you pay for. Contrary to popular opinion, weddings aren’t all about the brides – the groom has to get a look in eventually! There are some really amazing deals on dress hire at the moment, if that’s the route you’re taking. Suit hire outlets are a great help, generally the staff know their business and are only too happy to help with ideas and suggestions if you’re finding yourself a little stuck. Really, the stand-out company has to be Black Tie. With branches throughout Ireland including Dun Laoghaire and Blackrock, Black Tie have a huge selection of suits, shirts, bowties, shoes and dress socks to choose from. Check them out at www.blacktie.ie. If you’re opting to buy, then late summer really is the time to do so with up to 70% off in many of the larger department stores right now. You might regret not making the investment in the long run. ‘Grand entrances’ are big business these days – arriving at the church in a stretch limo with the driver in full period dress is getting more and more popular. A quick scan online turned up some fairly hefty prices with many companies charging on a ‘per person’ basis, so think hard on who you’re bringing in the car. It’s worth trying to negotiate on the price, depending on whether it’s wedding season or not of course. It might seem like a lot of fuss and hoopla but if you’re aiming for the castle, you might as well get the matching car as well. And just think, after the ceremony and enroute to the party, you can treat yourself and your bethroded to a much needed glass of bubbles in the back – heaven!

Your Little Star And when you think of what your bridesmaid does during your wedding, she really is one! Between steadying your nerves before the ceremony itself and carrying your train throughout the day…your bridesmaid(s) definitely deserves a little extra special ‘something’ to say a great big thank you. We particularly love these Swarovski crystal earrings (€59) and will totally show how much you care. www. ebuni.com is a fantastic online boutique for hair accessories, costume jewelery and brooches. Beware however, this site is seriously addictive!

Candy Favours They might mean nothing to the men and let’s face it, by the end of the day most of them are to be found on the floor but does it matter? Table pearls, beautifully presented scented candles, candy favours, place markers and table center-pieces – which can be matched to the colour of the bridesmaids’ dresses – are all the range, and we love them! There’s a fantastic range available on www.confetti.co.uk right now who, we’re delighted to report, are currently holding their summer sale with some items up to 70% off. So, what are you waiting for – get shopping!

Beautiful Bouquets Between the bride and bridesmaids’ bouquets, button holes, flowers for the church, the reception and a bouquet for each of the mums and or grans, there are quite a lot of flowers involved when it comes to a wedding! Flowers can say so much and are a hugely personal choice, you should aim to reflect both yours and your partner’s personalities with your bouquet. Even though each flower has its own personal meaning (eg. roses indicate passion while carnations usually represent friendship) it really comes down to personal choice and the time of year. It can be a nice idea to have your bridal bouquet pressed after the event and will serve as a reminder forever; a smell can instantly transport you to a time and place like no other of our senses.

Cake and Glory

Amazing Cakes

Wedding traditions may come and go but we firmly believe the tradition of the cake will stand the test of time. Predominantly a Western tradition, the newly married couple standing together to cut the cake is symbolic of their unity and ultimate togetherness. And it looks great in the photos…If you’re struggling over choosing a cake - and we wouldn’t blame you, the choice out there is staggering - you might consider tying your overall theme colour into your decision, or the colour of your flowers.

Amazing Cakes is owned and run by Beverley and Brendan Murphy who together have over 40 years experience in the food industry. Beverley has won many awards for both her cake designs and also her cake flavours and is widely recognised as one of the top cake designers in Ireland and was also recently featured on wedding TV.

While tiered cakes are still hugely popular, individual cupcake cakes are really popular right now, with some brides really pushing the boat out and having several different cupcake flavours, so that everyone’s happy. Whichever you choose, we really hope you get to enjoy a slice!

Beverley with her flair for colour and design will work closely with the bride and groom to make their cake the centerpiece of the day and to ensure that the cake will be remembered forever. Demand for Beverley’s creations has become such that she has recently had to move to larger premises in Solus Tower estate in Bray. The new premises contains a state of the art bakery and large showroom where couples can view the very impressive collection of wedding cakes on display and also arrange to sample some of the many

cake flavours offered, from the award winning traditional fruit cake to the Belgian chocolate biscuit. Whether you’re after an elegant, funky or even novelty style personalised cake, don’t miss out on an opportunity to have the extremely talented Beverley Murphy look after the wedding cake on your special day. address: Unit 5 Solus Tower Estate Bray , Co Dublin Phone: (01) 2824507 email: Bev@AmazingCakes.ie www.amazingcakes.ie

Fine Food, Fine Wine One of the lovely thing about weddings is that they bring together people of all ages and tastes. And not just ‘people’ either, but ‘your’ people. Your friends, family, your nearest and dearest, your loved ones. If you’re a wine enthusiast, then matching the day to the food, and the food to the wine can be a particularly challenging task. You might want to begin with something light for the starter and move onto something a little richer for dinner – the wedding coordinator at your chosen venue should help with these descisions. It goes without saying that you should always make sure you sample the menu and wine list before you make up your mind! If you’re really into your wine you might consider buying the wine from your favourite shop and if you’re a really good customer they might go the extra mile and bring in the bottles you’re after at a discounted price. If this is the case, then

expect the venue to charge corkage – a charge applied by the venue if you wish to supply your own wine for a function. Corkage is usually negotiable – bring along someone with good haggling skills to get the absolutely best price. FooTBAll - ENGliSH PREMiERSHiP Football fans who have been struggling to fill the massive hole left by the conclusion of the World Cup will shortly be able to breathe a massive sigh of relief as the English Premier League season kicks off once more on the 14th of August. The Premier League is ranked the top domestic league in the world owing mainly to its clubs’ massive incomes and their relative successes on the pitch compared to their international counterparts.

2010/11 season promises to be one of the more exciting ones since the league’s inception in 1992. In the early days Manchester United were the dominant side, winning four of the first five titles with the only exception being in 1995 when an Alan Shearer inspired Blackburn Rovers pipped them to the trophy. Then Arsenal came along and broke that dominance under Arsene Wenger, taking the title in 1998. Incidentally, Wenger’s feat meant that he became the first non-British manager to win England’s top division. From that point on the two clubs remained the best in the country, that was until the emergence of Roman Abramovich and his chequebook at Chelsea as Jose

Mourinho turned the London club into viable contenders and, indeed, they won their first Premier League title in 2005. Since then Manchester United and Chelsea have shared the trophy between them. However, now it seems as though – for the first time in a long time – there are a least four sides who have a genuine opportunity of winning; defending champions Chelsea, the most successful club in the Premier League’s history Manchester United, ever consistent Arsenal who look like they will be holding on to their star man Cesc Fabregas despite strong speculation linking him with a move back to Barcelona and the new financial muscle on the scene - Manchester City who have made some interesting high-profile signings over the summer, bringing in – amongst others – David Silva from Valencia for a reported €29 million. To add to the excitement, the race for a Champions League spot looks like it could be as competitive as it has ever been. Up until last season the ‘Big Four’ (Manchester United, Chelsea, Arsenal and Liverpool) had dominated the first four positions for more than a decade. Tottenham Hotspur signalled an end to that domination last season by pushing Liverpool out and now

wicklowsport all of Arsenal, Aston Villa, Chelsea, Everton, Liverpool, Manchester City, Manchester United and Tottenham Hotspur will be realistically vying for these positions and Champions League qualification. At the other end of the table there will be another titanic battle taking place as the weaker teams in the league, together with the newly promoted sides, battle it out to avoid relegation. Newcastle United, West Brom and Blackpool were all promoted to the Premier League last season and traditionally, newly promoted clubs have a poor record as they struggle to adjust to life in the top flight. Blackpool and West Brom in particular will be expected to make a rapid return to The Championship. Newcastle, on the other hand, are likely to be better equipped to adapt to the challenge as they were not only comfortable winners of The Championship last season but the club also has fantastic facilities to rival any Premier League outfit and can draw on its massive support, which will not only be of major benefit to the players on the pitch but also to the finances of the club as they strive to attract new talent and keep a hold of their current stars. Wigan Athletic, Sunderland and Mick McCarthy’s Wolves also look to be strong candidates for relegation and are all set for difficult seasons.

GolF – JoHNNiE WAlkER cHAMPioNSHiP AT GlENEAGlES Come the end of September all eyes will be on Celtic Manor in Wales where Europe will once more take on the United States in The Ryder Cup. Before then though, the final pieces of the European Team jigsaw will have to fall into place. With the added incentive of Ryder Cup qualification points the tournament will also be sure to attract many of the top players in Europe who are still uncertain of their places at Celtic Manor. Surprisingly, there are many high-profile European players who are on the periphery of the team and who are not yet certain of their place and they will all be likely starters at Gleneagles. BETTiNG ADVicE PREMiER lEAGUE As discussed, the race for the Premier league (Pl) title looks like it will revolve around Chelsea, the two Manchester sides and possibly Arsenal – and the bookies tend to agree. Chelsea are a general 6/4 to retain their title, with Manchester united second favourites at 5/2 and the winner is likely to come from these two. layers aren’t taking any chances with Manchester City who – despite never finishing inside the top four in the Pl – are no bigger than 5/1, which doesn’t seem to offer much value given the level of the opposition. Conversely, the 7/1 odds offered about Arsenal seem about right given their record in the Pl and if i were to take a punt on either of the two it would definitely be arsenal. With regard to the relegation battle, Blackpool are an extremely short price to go straight back down (2/7), however, if one is looking for some value in this market then maybe it presents itself in the form of Sunderland. they finished 14th last season – looking like strong relegation candidates for much of the way – and from the way the preseason picture is developing it seems that many of the teams around them could be progressing at a much greater rate and 10/1 on Sunderland to be relegated looks to offer considerable value. Granted, there are more likely candidates on paper but at the likely odds and looking at the players manager Steve Bruce has bought (error-prone defender titus Bramble and a couple of relatively unknown South Americans) it would not take a massive swing to see them seriously struggle to remain in the Premier league.

Today Greystones Golf Club has a huge membership, somewhere in the region of 1,100 players according to Angus Murray, a 13 handicap golfer. He is the club’s manager. The 1,100 players are made up mainly of men and women with the remainder coming from the younger cohort of players. The club is particularly proud of the high number of single figure players. Pride of place in this group belongs to Irish International, Paul Dunne. He is a + 2.5 handicap. Given his talent he will inevitably come under the Walker Cup radar. The Walker Cup is the amateur equivalent to the Ryder Cup. Watch out for this unique talent.

THE clUB PRo Very recently I had the pleasure of playing a round of golf at this beautiful course with Karl Holmes, the professional there for the last ten years. He is endowed with a beautiful, graceful swing that would be the envy of any young aspiring golfer embarking on a career in this sport. Karl is a very likeable and friendly person – he has a great reputation at the club and is extremely popular with the members. He runs the pro shop, gives individual and group lessons to members of the club and is also involved at grass root level in organising and overseeing along with management a number of charity events at this venue. In addition to his club commitments Karl, along with his assistant

golfreview professional golfer, Marian Riordan, has just recently taken over the responsible mantle of running the very successful and revamped local driving range in Greystones. Part of Karl’s golf clinics incorporates learning the theory of this wonderful game that so many people play. He imparts the knowledge at lesson time and the enthusiasts carry this to the range under his guidance where they put all they learnt under his guidance into practice. It is rather unique having a female assistant at Greystones. Marion has her own professional pedigree. She took up golf at the age of 16 and went on to get a handicap of +1 over a short period. In 2007 she was number one amateur in Ireland and decided to turn pro at the end of that year. Her first tour event was the Ladies’ Irish Open at Portmarnock Links in 2008. She was the first lady to qualify for the Irish P.G.A. Championship at the European Club near Brittas Bay in 2009. The ladies at Greystones are particularly delighted with her at the club.

cHAllENGiNG HolES Greystones golf course opens with a testing par three 160 metres – about 170 yards in earlier golfing parlance. Karl’s tee shot veered a little left of target ending up in very tangly rough that exponents of the game don’t like to encounter. His skill showed when he played a superb flick of a wedge to within ‘gimmie’ distance of the hole. Yours truly hit the leaves of a nearby tree before coming to rest a long way from the target and in similar rough to the pro. I was more than fortunate to find the green with my explosion shot. A severe, downhill-putt was some fifteen feet away. Having read the contours and line as they do on the television I hit the putt a firm rap and watched anxiously as it hit the very centre of the cup popping upwards for seconds before deciding, fortunately, to drop vertically into the hole. Had it missed I would have faced a return effort of more than twenty feet uphill. Ecstatic at managing a par three score

and realised the route taken by the birds was not that to be taken by us mortals. I ended up with a cricket score. I should have listened to Karl’s advice from the start: course management is the key to success at Greystones.

I walked off the green nonchalantly as if this were my normal game but feeling really chuffed that I scored the same as the expert. It wasn’t long before Karl’s professionalism shone through leaving me in the halfpenny place. Although not a particularly long course the layout is very challenging. There are dog leg holes left and right together with some narrow meandering fairways flanked by tall trees that make huge demands on your short and long iron shots. The first nine holes on one side of the roadway adjacent to the course have a linksy feeling to it. The seventh is a case in point. We played the entire course from the blue tees which make every hole longer and more difficult. This motivates you to play your very best golf. As with a links course you may encounter some gorse – normally a nice sight in summertime - but when presented as a hazard like we discovered at the 7th golfers will very definitely shun and avoid it at all costs. Otherwise you pay the price by adding penalty strokes to your score. It is around here you approach the summit of the course with its breathtaking views in all directions and panorama of nature’s delights. The 9th hole is a relatively short par 5. However, do not be put off by the shortness of the hole. It is a very well designed one that incorporates a dog leg left to right route all uphill to the eventual green. The exceptionally good golfer can decide on a short cut, the aerial route to the right over tall beckoning trees. I was adventurous

Redemption was at hand at the 10th. This is a long 405 metres (445 yards). At your peril you must avoid the short cut left that offers a risk and reward result. Many players try this short route only to discover their drive is too short prompting the shot to visit the woods dark and deep. I was a good learner. I played the long conventional route that resulted in a very acceptable one over par 5 for me.

THE 17TH - A FEATURE HolE There are so many great holes here at Greystones. One that figures in my list is the tough 17th. This is a lengthy 350 metre one (380 yards). Again it is a slight dog leg left to a generously sized green that is seriously guarded by a threatening water hazard. Tee shots from both of us were negotiated successfully. I was easily tempted to get home in two and hit my favourite 4 iron with that in mind. I was greedy and paid the ultimate price by finding a watery grave. I ignored all the sound professional advice beforehand. There are many lessons about life to be learnt from this humbling game. Advice is one. Humility is another and foolhardiness is a third. If only I could play that same hole all over again! Some holes have been highlighted. There are many more. A round here is a must especially followed by a bite to eat in the restaurant that has been recommended by the many visitors who regularly return.

Visitors and societies welcome - membership open Mr Angus Murray, General Manager, Greystones Golf Club, Whitshed Road, Greystones, Co. Wicklow. Phone 01 287 4136.

BBQ Time! Barbecue season is well and truly upon us and thankfully the weather – for the most part – is doing its bit to ensure that we have ideal BBQ weather here in the Garden County! Not only is a barbecue an excellent excuse to spend some time outdoors with family and friends but it can also offer some much needed respite for your wallet. Cooking for large groups BBQ-style can be surprisingly economical when compared to going out for a meal. Firstly though, it is important to ensure that you have the correct kit to do things properly. Obviously, the most important piece of equipment is the barbecue itself. You might be lucky enough to already possess a functioning, hygienic outdoor barbecue and that’s great news if you do. But given the general wet, windy and overcast weather conditions that are – more often than not – prevalent on the Emerald Isle then there is a good chance that you haven’t bothered to invest in a proper barbecue (which can be far from cheap!) or, if you have, it is a decent bet that it is not in tip-top shape owing of course to lack of use and being subjected to the aforementioned adverse weather. So that leaves you with the choice of procuring a disposable barbecue, which, when everything is factored in can prove to be the far wiser and cheaper option. Once you have the equipment sorted it is time to worry about the food that you are going to prepare, in particular the meat. If you are looking to have that authentic barbecue experience than the best advice is to pay a visit to your local butcher who

36

inWICKLOW

can advise you about selecting the finest cuts of meat. Robert Cullen is a third-generation butcher from Wicklow town and owns Cullen Butchers, The Mall. He has some excellent tips when it comes to cooking meat on a barbecue this summer: cleAning the grill The first step is to clean the grill grate itself. Try using an onion cut in half to help with this. Turn on or light the BBQ and wait until it reaches cooking temperature. Then cut the onion in half and, using a fork, rub the onion up and down the rack. It removes all of the grease from your previous outing and adds a nice flavour when cooking meat.

eating&drinking Selecting the right cuts of meat Allow time for the barbecue to heat to maximum. The charcoal must be grey. It is very important to allow the proper time for the food to cook. To get the best results one should select highquality beef cuts; aged Sirloin, Striploin and Ribeye would be recommended in particular and aged beef ensures tenderness. Cooking procedure Marinating and seasoning will add a great flavour to your meat. Ensure that the grill grate is between three and six inches from the coals. Make sure that you have the right tools before you begin. Use a tongs, not a fork as this will put holes in the meat that allow juices to escape and dry the meat out. Turn the meat only once when cooking as it will lose juices each time you turn. Make sure the meat is cooked thoroughly and evenly. Finally, let your steak rest allowing the juices to settle for a tender result. Following in the spirit of the season Chef Sauce have launched an enticing summer promotion aimed specifically at barbecuers. Best known for their trademark ‘zingy’ Ketchup and Brown Sauce Chef are offering would-be

barbecuers the chance to win €10,000 cash through their ‘Eat is On’ campaign. Other prizes include an authentic Chef Barbecue experience in the winner’s home and 200 barbecue sets. If you’re thinking of having a barbecue then you should definitely enter. To enter simply text CHEF along with your name to 53150. To find out more and to enter online visit www.theeatison.ie. Last but certainly not least, a key consideration when deciding to fire up the barbecue is of course food safety and Robert Cullen also has some important advice with regard to food hygiene: • During preparation never allow raw meat to come into contact with any other foods. • Use separate cutting boards and wash them thoroughly in warm soapy water after use. • Always have a clean plate to put cooked foods on – never put them back on the raw meat plate. • Use separate utensils for raw and cooked meat. • Wash your hands and food preparation surfaces regularly. • Keep uncooked food in the fridge until you are ready to barbecue it.

Marinated Grilled Chicken Ingredients (serves 4): 4 boneless and skinless chicken breasts ¼ cup spicy mustard 2 tablespoons lemon juice 2 tablespoons Chef BBQ sauce 1 drop Tabasco sauce ½ teaspoon tarragon powder ¼ teaspoon cracked black pepper Preparation: Step 1: Combine all ingredients except the chicken and mix well. Step 2: Roll the chicken in the marinade and thoroughly coat all sides. Refrigerate in a resealable bag or covered glass dish for 15-20 minutes. Step 3: Grill on a low-to-medium heat for 15 minutes. Turn regularly when cooking and ensure that the meat is cooked thoroughly before serving.

Grilled Burger Ingredients (serves 4): 450 grams lean minced beef 4 slices Swiss cheese 1 tablespoon Chef BBQ sauce 4 burger buns 4 slices red onion 4 leaves curly lettuce 4 slices beef tomato ¼ teaspoon each of sea salt, fresh ground pepper and garlic powder Preparation: Step 1: Mix salt, pepper and garlic powder thoroughly together with beef. Add Chef BBQ sauce and mix once more. Step 2: Divide meat into 4 equal parts and use hands to gently form into patties. Step 3: Cook burgers for approximately 4 minutes PER SIDE for medium, checking that centres are a minimum of 71°C . Step 4: Add cheese to top of patties and place buns face down on grill and leave for 1-2 minutes to allow cheese to gently melt and buns to lightly toast. Step 5: Remove from grill, top with red onion and serve.

a taste of Wicklow The art of turning local produce into fine international dining

I

A Word from Catherine admit that I absolutely adore the peace and quiet of my organic vegetable and herb gardens. If I were to offer you one piece of advice it would be to grow your own and shop locally when possible. Not many shoppers get to speak with the farmer who grows the carrots they plan to cook or know where the ingredients are sourced when buying a loaf of bread. Keep a lookout for local markets, fish vans, delis and farm stalls. There are quite a few now in Wicklow and we could always welcome a few more! Don’t be shy to ask the owners about their products. I promise they’ll welcome your interest. Grow your own herbs even on the kitchen window ledge. Rosemary and thyme do very well in amongst the roses and daisies. Purchase the correct gardening equipment, remember it doesn’t have to be expensive, empty tins are great for planting herbs. Just remember to make holes in the bottom for drainage. Start with easy to grow plants and herbs, such as lettuce, chives, tomatoes and scallions all suit a window box. Select varieties that your family will enjoy for salads and cooking. Get the children to help you plant. Remember to water, especially in the warmer weather.

Place the cream and sugar in a saucepan over a medium heat. Using the point of a knife, scrape the vanilla bean seeds into the saucepan before adding the entire bean. Stir until the sugar is dissolved, then just bring to the boil before removing from the heat. Remove the vanilla bean.

Melt the butter in a frying pan and add the olive oil. Salt and pepper the lamb. Add the garlic and the rosemary to the frying pan to flavour the oil or butter. Then, pan-fry the lamb to brown on both sides. Transfer to a baking dish, adding the garlic halves.

Soak gelatine in cold water until soft. Squeeze out the excess water and drop the gelatine into the hot cream mixture and whisk until dissolved. Add the yoghurt and whisk until smooth. Strain the mixture through a fine sieve and divide between four 125ml ramekins. Cover with clingfilm and chill for at least three hours or until set. Serve with strawberries in balsamic.

Heat the wine and pour over the lamb. Cover with foil and place in the oven to slow cook for 45 minutes - 1hour or until the meat is meltingly tender.

tip: Try panna cotta infused with lemongrass served with an apricot compote or an espresso pannacotta with a chocolate drizzle.

Remove the meat from the oven and keep warm. Set the garlic halves aside also. Strain the wine and juices into a saucepan, squeezing the juices from the rosemary and garlic skins. Heat the juices and thicken with roux, to the desired consistency. Test for seasoning. Serve with mint and apple chutney, the roasted garlic and garnish with rosemary.

the StrAffAn ButterflY fArm The Butterfly Farm at Straffan is the brainchild of Des and Iris Fox and has been open to the public since 1986. The exhibition introduces visitors to the world of butterflies that they possibly weren’t aware of, beforehand. Des and Iris are keen to educate children (and adults) about not only the wonderful world of butterflies, but also the great loss we experience with the continued destruction of rain forests and indeed, our own countryside.

night-time paranormal investigations in the ancient prison twice a month. The tours kick off at 9pm and top Irish psychics Louise Kings and Mike Fallon (aka the Sandman) introduce guests to ghost hunting equipment and identify the high energy points in the gaol. The tour then splits into three groups, each of which goes to a different location in the gaol to communicate with the spirits. Resident spirits include the little boy in the Schoolroom; Jack the Jailer tends to surface in the ancient replica of the prison ship that once transported prisoners to Australia; the child Grace is particularly present in a cell on the ground floor, while the monk goes up and down the stairs between the cells. The different groups then return to the café in the gaol to share their experiences and enjoy refreshments. The tour finishes at about 2am and costs €50 per person.

Wicklow has become internationally renowned for strange and startling events ever since the ghostly presences at Wicklow’s Historic Gaol revealed themselves. Indeed Wicklow Town has now become a hotspot for paranormal tourism with psychic mediums leading

The next tours take place on the 27th and 28th of August and the 10th and 24th of September. Unsurprisingly, the spirits’ favourite time

of year is Halloween and the gaol has launched a Halloween Horror Week running from the 22nd to the 31st of October with a host of diverse and unusual events. The week kicks off with a screening of the Ghost Hunters International investigation in Wicklow Gaol and includes a special event with renowned psychic medium Angie Freeland – “An Audience with Angie” on Thursday, 28th October. Angie picks up on spirit energies connected with members of the audience in the style of John Edward’s TV show, Crossing Over. The paranormal is not for everyone, however. Indeed Wicklow’s Historic Gaol is a central hub for anyone with an interest in Irish history. The gaol’s history spans the 1798 rebellion, the famine years and the War of Independence and Civil War. The Gaol is open all year round, seven days a week from 10.30am (11am Sundays) to 4.30pm with tours led by actors throughout the day. Once a month, visitors have the opportunity to step back in time and take part in an interactive tour and Hog Roast Meal in a traditional setting. Actors in full regalia stay in character throughout and put on mini theatrical performances, telling the tales of former inmates such as notorious United Irishman Billy Byrne. The next interactive Hog Roast evening takes place on Saturday, September 25th.
