Welcome to InWicklow Magazine Even though most of us are worried senseless about the upcoming budget and how we’re all going to cope over the next few years – we’d do well to take some time out and invest our energies into spreading a little goodwill this December. Christmas is the season for spending time with loved ones and appreciating the blessings that we still have, whether they’re big or small. This Christmas, make sure you enjoy yourself, whether you invest in a little ‘me’ time or get out and about with the family in order to fully appreciate everything that Wicklow has to offer. Don’t forget to support your local restaurant, pub and business this winter by buying local – the benefits will effect us all. Most of all, have a very merry Christmas, from all the staff at In Wicklow magazine. yourtown Christmas at The Coach House 2010

that is good about locally produced food and crafts in County Wicklow.

ADMISSION IS FREE TO THE PUBLIC TO THIS EVENT!

Denis Fielding, Wicklow Town & District Chamber President adds “The Wicklow Town & District Chamber is delighted to welcome this fantastic opportunity to our town. This event can only enhance the reputation of the town and more importantly create much needed footfall.”

Following the success of Christmas at Clermont in 2009 which was organised by CFL Events in Clermont Campus in Rathnew, Co. Wicklow we are delighted to announce that this year the Christmas Fair will move into the heart of Wicklow Town and will be called Christmas at The Coach House. Where is The Coach House in Wicklow town you ask? Christmas at The Coach House will take place indoors in an area just off Fitzwilliam Square in Wicklow Town called Fitzwilliam Court. Located through an archway (beside EBS/ReMax) on the Main Street these two buildings were once used as Coach Houses in c1910 for a hotel on Main Street called The Green Tree Family & Commercial Hotel owned by a Mr Thomas Kavanagh. Visitors to the hotel would use these Coach Houses at the back of the hotel for their horses drawn coaches while passing through Wicklow Town from Dublin on their way to Wexford and beyond! These two Coach Houses along with a very safe Courtyard leading from the archway are perfect for a magical event like this Christmas Fair. To ensure shoppers and visitors to Wicklow Town and to Christmas at The Coach House get into the Christmas Spirit these buildings will be decorated with Christmas lights, there will be a Pig on a Spit and Fresh Hot Crepes outside in the Courtyard along with Christmas Plants & Holly Wreaths and indoors in two festively decorated Coach Houses there will be a local Artisan Crafts & Gift Fair and a local Artisan Food Hall. Christmas at The Coach House in association with Wicklow County Enterprise Board, Wicklow Town & District Chamber and Wicklow Town Council, will boast over 35 stalls of original Artisan Pottery, Seasonal Gifts and Crafts, Art, Jewellery, and Fashion – most of the artisan producers are from County Wicklow, with one or two hailing from a neighbouring County, each offering a wide variety of unique gift ideas for family and friends. The Artisan Food Hall includes Wicklow Farmhouse Cheeses, Mic’s Chilli Sauces, McCabe’s Roasted Coffee (the only one in Wicklow), Janet’s Country Fayre Chutney’s & Relishes, Christmas Cakes, Chocolate Plum Puddings, Spelt Cakes, Táin Handcrafted Chocolates, Wicklow Spit Roast, – all from County Wicklow! Sheelagh Daly CEO of the Wicklow County Enterprise Board is delighted to support the event - “We are committed to supporting local producers of artisan goods and Christmas at Clermont last year was such a success we are delighted to support Christmas at The Coach House this year. We feel it will help local producers achieve sales and profits in these turbulent times while bringing visitors and shoppers alike to Wicklow Town.” Wicklow Town Christmas shopping enthusiasts will have the option of exploring the bustling fair, roaming the courtyard or sampling delicious treats in the food hall before or after exploring the many delights of the vibrant Main Street shops. With so many Cafés to choose from in the town it looks like no Christmas Shopping Experience would be complete without a hot chocolate and treat afterwards or take a trip through the town for a visit to see Santa in Santa’s Kingdom in Wicklow Gaol and peep at the superb life-size crib with real animals. Santa’s Kingdom at Wicklow’s Historic Gaol will be open every Friday, Saturday and Sunday from Sunday 28th November right up to Christmas week. This year we are encouraging Wicklow Families to Shop Local to Save your Local ! Wicklow Town is really looking forward to this event and showcasing all

Wicklow County Council is the first County Council in Ireland to make its monthly meetings accessible to deaf and hard of hearing viewers. For some time now Wicklow County Council meetings have been captioned within the Council Chambers on a dedicated plasma screen. Now they have gone a step further by offering transparency and accessibility to interested parties worldwide. Communication Access Realtime Translation (CART), simply put is a live conversion of speech to text. This is a high-value service to deaf and hard of hearing people, and can also be used by people with English as their second language. Wicklow County Council have joined together with Premier Captioning and Realtime (PCR), a Wicklow-based company to provide this service and it is hoped that it will ensure that Council meetings are accessible to all. All the Trimmings Make sure Christmas day goes off without any hitches or last minute panics by making a list, and checking it twice…

O

nce you know how many guests you have coming for Christmas lunch, it’s time to get started on the list. Believe it or not, Christmas day doesn’t have to be full of the headaches that most of us groan over, it isn’t only about the kids and their presents! With a little careful planning and preparation, you can make sure your Christmas Day is one to remember.

GETTING STARTED Regardless of your guest list, you’ll want your house looking its very best throughout the festive season. December is an ideal time to snap up some bargains for every room in your home, particularly when it comes to glass wear and dinner services. There’s nothing worse that setting the table onlythetoChristmas realise range at From someone will have to drink from one of the children’s plastic glasses! Christmas tree place settings From the Christmas range at Debenhams

LIGHT IT UP! We think the best thing about Christmas is the decorations…and the more, the merrier! Tree decorations have really come down in price in recent years and from 1st December on, it seems that practically every shop in town is stocking them. Our favourites can be found at Dunnes Stores, Heatons and Accessorize. If you’re planning on going all out this year, then why not consider lighting up your exterior? The house will look amazing and the kids will delighted with themselves! Littlewoods Ireland are hard to beat when it comes to outdoor decorations, check out their extensive range on www.littlewoodsireland.ie BUYING LOCAL Your local butcher will prove an invaluable friend at this time of year. Providing locally sourced, fully traceable meat and poultry, your local butcher is happy to dish up hints and tips about storing, preparing and cooking everything from the tastiest of sausages for Christmas morning to the actual main event itself, the turkey. Don’t forget your local farmers market too at this time of year, visit them for the freshest of vegetables as well as a wide array of jams, chutneys and sweet treats that will keep all the family satisfied throughout the Christmas season. Local farmers’ market can also be a great place for picking up eclectic, one-off gifts, visit them this weekend for a couple of handy hints! Don’t forget, once you have your food list made (and a timing plan laid out) pin it to the fridge where it will act as a reminder for you until everything is ready to be served. It can be hard to remember what time the carrots went on when you’ve had a glass of wine or two, so stick the list somewhere you’ll see it throughout the day. Keep a pen nearby and cross everything off as it gets organised. And don’t forget to enjoy yourself, Christmas is for grown-ups, too…

CentraRathnew

CENTRA Rathnew Welcomes Centra ‘Good Quality Convenience Store close to Home’. Mark Power is the owner/manager of the new family run Centra right in the heart of Rathnew’s new residential area. He comes to this popular garden county village with over twenty years’ experience in the grocery trade. He knows what his customers want. More importantly he gives them what they want. Although the mini-market opened its doors only a few short weeks ago business is already thriving. The outlet opens at 7 a.m. Monday to Saturday and 8 a.m. to 8 p.m. on Sundays. The locals are thoroughly delighted with the new facility right on their very doorstep. Centra is very sensibly located adjacent to the G.A.A. grounds and within a half a mile radius of all the residents. The outlet provides a great service. There are two qualified butchers on the staff who look after the fresh meat counter. Local produce is very much in evidence here with locally produced sausages made by Dunnes of Wicklow. The butchers enjoy engaging with their customers and are always eager to satisfy their wishes, giving you ideas for nutritious and reasonably priced meals. Then there’s the delicious aroma of fresh bread baked right in the store every day. The deli section offers hot and cold counters. The best of freshly made sandwiches – also toasted - pizzas, cooked meats, hot food wraps, paninis as well as tea and coffee are all part of Centra’s operation. There is also an extensive range of fresh fruit and vegetables including the day’s fresh produce.

Potatoes are supplied by local grower, William Doran, from our neighbouring county of Wexford. Mark stocks a wide selection of brands at his outlet. He also stocks a full range of Centra products like bread and milk which are, incidentally, 20% cheaper than their branded equivalents. There is also a full range of confectionery items. If customers are planning a little family gathering or celebration you need look no further. Tell Mark and he will take it from there with his new home catering service. You will be totally satisfied with your request. Now that we are in the throes of winter, shoppers will be pleased to know that Mark’s store has a full range of coal, briquettes and calor gas. All you have to do is call the outlet, place your order and Centra’s free home delivery service takes it from there. In fact, your groceries also come with a home delivery if you wish. And if you don’t need home delivery, then you will be delighted with the free and extensive car parking around the shop. The festive season is already with us. Centra has its own quality brand of xmas puddings and traditional turkeys and hams. Details about their Christmas extensive half price promotions will certainly please customers. If you like to keep up to date you will be delighted with the full range of newspapers and magazines on offer and if you’re feeling lucky, then why not pick up a lucky Lotto ticket while you shop. It wouldn’t be the first time that the county scooped a Jackpot. This is also the place to make paying your utility bills that bit easier. In Centra you can pay your ESB, telephone and gas accounts.

RathnewPharmacy

RATHNEW PHARMACY Rathnew Pharmacy is a family-run business headed up by Jonathan and Shirley Harty. This is the family’s second pharmacy in Wicklow. They opened their first in Roundwood just over 4 years ago. They hope that in time Rathnew Pharmacy will become an essential part of the local community. Jonathan has been a pharmacist for almost 20 years and feels passionately about serving the community. He understands that the pharmacist is often the first port of call for patients and customers and indeed believes the pharmacist has a crucial role to play as a primary healthcare provider. The pharmacist’s role is not just about dispensing prescriptions. The pharmacist is trained to offer professional advice on a wide range of medical conditions from everyday ailments such as the common cold to conditions such as asthma, diabetes and heart disease. The list is endless. The team at Rathnew Pharmacy understand the importance of their community’s health and well-being. For this reason, patients and customers are welcome to call in or to contact the pharmacy for any form of advice or support. The team believe in offering high levels of customer service at all times. Their ethos is all about going the extra mile for their patients and customers. There are many professional services available at Rathnew Pharmacy. These services include blood pressure monitoring, cholesterol checks, food allergy tests and smoking cessation

services. For anyone interested in giving up smoking why not come in to Rathnew Pharmacy for some free advice ? They have a handy piece of equipment called a Smokerlyzer which measures carbon monoxide levels in your body. This gives an extra incentive to quit the habit and can also be used to monitor and encourage your progress. This service is free of charge at Rathnew Pharmacy. The pharmacy has a purpose built private consultation room which further enhances the professional nature of the services provided. If you require passport photos or digital photo development there is a kiosk on site. Rathnew Pharmacy stocks a wide range of gifts all year round. Why not drop in to see their Christmas gift ideas including perfume, jewellery and glassware ? Many patients rely on others to collect medication for them whilst for some getting a prescription dispensed is another job in an already busy schedule. Rathnew Pharmacy offers a free prescription collection and delivery service. The pharmacy is located in The Merrymeeting Centre which has excellent parking facilities. Coming from Rathnew, take the first right at the traffic lights after the cemetery on the Main Road to Wicklow Town. Continue straight up the hill, through the roundabout to the T-junction at the top of the hill. The Merrymeeting Centre is to your right, in front of you. The Merrymeeting Centre is located adjacent to Rathnew GAA club.

oods Restaurant is situated picturesquely high in the Wicklow Mountains in Roundwood village. It is relatively new having only opened last March, however, this has not stood in the way of its owners – Marino Monterisi and Alvaro Herran – from quickly establishing a strong local trade. The two men have extensive experience in the industry, having worked with a variety of top-class establishments including their own Bates Restaurant in Rathdrum. This wealth of experience is clearly evident in the restaurant’s menus including one of which offers an entirely vegetarian selection . The ‘Value Menu’ that offers either two courses for €19.50 or three courses for €24.50 consists of a staple of many a fine diet with dishes such as Organic Salmon, Striploin Steak and Cornfed Chicken Breast. A full Sunday Lunch is also available from €18.50. Woods Restaurant is open from Tuesday to Friday from 6pm till late and on Saturday from 5:30pm – 6:30pm for ‘Early Bird’ diners and then from 6:30pm till late with an A La Carte menu. The restaurant is happy to take bookings for Christmas parties; the ‘Value Menu’ will be available as well as a broad choice of interesting seasonal dishes – not just the usual dull Christmas fayre! istorante Morsiani is a traditional Italian restaurant located just off Fitzwilliam Square in Wicklow Town and can be accessed from both Phil Healy’s Pub or through its own entrance on Bridge Street. Opened a year ago by Manuel Morsiani and his partner Kristina, Ristorante Morsiani has quickly become a firm favourite with the locals of Wicklow and further afield. Head Chef Manuel is the son of well-known chef Roberto Morsiani, who despite having reached the age of retirement is happy to help with food preparation and mentoring where necessary. The menu comprises a vast array of Italian dishes – many of them from the Morsiani’s home town of Bologna and the region of Emilia Romagna – and includes a delightful range of meat, fish and vegetarian choices. The pasta dishes are available either as starters – as is the tradition in Italy – or as main courses. As with most dishes there is a wide choice available, including Manuel’s grandmother’s “Rotolo di pasta” (A spinach and cheese filled pasta roll much appreciated by Paolo Tullio) and Tagliatelle alle Bolognese. Of the main courses the Wicklow lamb, prawns, beef and chicken dishes – all cooked using traditional Italian recipes – are particularly popular. Ristorante Morsiani is preparing for the festive season and can facilitate parties of all shapes and sizes. They will happily create bespoke menus to cater to various diners’ needs. Halpin’s Bridge Café wicklow

H

alpin’s Bridge Café is a charming ‘olde worlde’ establishment with a stunning original Georgian shopfront, warm inviting interior colours, bare brick and exposed stone walls. In addition, it is the only restaurant in Wicklow Town to be recommended in the 2010 Bridgstone Irish Food Guide where it was described as having “a great atmosphere, great food and offering great value”. Opened just over a year ago by locals Susanne O’Leary and Robert Doyle, Halpin’s has built a strong reputation by providing a fantastic array of homemade recipes, including pastries, scones, brown bread and a selection of daily hot specials.

The food is definitely of a very high standard and Robert and Susanne pride themselves on their coffee, which has been regularly described as “the best in town” in various reviews. The staff are very friendly and attentive and will make sure you feel welcome and have an enjoyable dining experience. For further information call 0404 32677 or visit www.halpinscafe.com

The selection at Halpin’s is extremely varied and they also offer paté, paninis, wraps, sandwiches, salads, lovely vegetarian options and two homemade soups daily. Halpin’s pride themselves on making everything from scratch as opposed to buying in readymade menus, putting them in an oven and marketing them as ‘homebaked’. Robert and Susanne are of the firm belief that as soon as you taste the food you can tell whether it is the real thing or not. Reviewers on the well-known menupages.ie website have described Halpin’s as an establishment where “the atmosphere is cosy and welcoming, the staff are friendly and attentive and the food is always superb.”

Sport November

December The sporting calendar is jam-packed full of mouth-watering events this festive period with major happenings taking place all across the world of sport. In football the race for the Premier League title is heating up, while on the European stage teams in both the Champions League and the extended Europa League are vying for position leading into the Christmas break. In golf the European Tour will come to a thrilling climax at the end of November with the season-ending Dubai World Championship with many of the world’s best golfers challenging for a share of the €10 million prize pool. There is also plenty happening on the domestic horse racing scene with the National Hunt season getting under way and the famous Christmas festival at Leopardstown in December. Football – Premier League The race for the Premier League title is turning into a fascinating affair even at this relatively early stage. Champions Chelsea are – unlike many of their rival – looking as solid as ever and through the first ten matches they are out in front. Predictably, Arsenal, Manchester United and Manchester City complete the top four. Manchester United will be relieved to have tied up the contract for their super star Wayne Rooney when there was much speculation regarding his future at the back end of October. Interestingly, United are the only unbeaten

team in the league so far this season and with matters off the pitch seemingly taken care of they can now turn their attention to trying to secure an unprecedented 12th Premier League title. Liverpool finally look to have turned a corner with new American owners, ‘New England Sports Ventures’, taking control of the club from hapless duo George Gillett and Tom Hicks. With the club on the verge of administration and potential bankruptcy less than a month ago both the boardroom and financial situations seem considerably more stable and with Liverpool picking up their second win of the season in their first home game under new ownership the future certainly looks a great deal brighter for the iconic Merseyside club. Newcastle United, West Brom and Blackpool have all – to the surprise of many pundits – adapted to life in the Premier League exceptionally well. Although they are yet to win a home game in the league Blackpool have already won three times on the road this season, including the high-profile scalp of Liverpool at Anfield, and they lie comfortably outside the relegation zone for now. Both Newcastle and West Brom are enjoying life in the top half of the table, with the latter currently experiencing the dizzy heights of 6th place! As is traditional in the Premier League, there will be a great deal of fixtures taking place over Christmas, with many of them being covered live on television. Here is a guide to who plays who and when 4

46 in inWICKLOW WICKLOW Nov/Dec October 2010 2010

wicklowsport Football – Champions League Europe’s premier football competition is in full flow with two match days remaining until the Christmas break. British sides are – for the most part – performing relatively well. Manchester United, Chelsea and Arsenal all top their groups, while Rangers have acquitted themselves well in the same Group C with Manchester United – even securing a 0-0 draw at Old Trafford. Tottenham are on course to qualify from Group A along with Inter Milan in their first ever Champions League campaign. They were impressive in victory at home to Dutch champions FC Twente earlier in the Group and were equally impressive in defeat away at Inter Milan where they lost 4-3, although at half-time the Londoners were 4-0 behind. Of the non-British sides in the competition, Inter Milan, Barcelona, Lyon, Bayern Munich and Real Madrid all look to be big threats this season. Jose Mourinho seems to have found the goalscoring touch with his Real Madrid side both domestically and in Europe and they look particularly menacing. Barcelona with Lionel Messi carrying through his exceptional form from last season appear to be in for the long haul also. With the final being staged at Wembley Stadium in London next May and with three London-based sides remaining in the competition it would be something special to see any one or more of them having the opportunity to exploit their home advantage. However, they will no doubt face extreme competition from Europe’s elite in their task to do so. Golf – Dubai World Championship With the Ryder Cup over and done with for another two years, the attention in the golfing world turns to Dubai and the climax of the 2010 European Tour, which will officially finish at the end of November with the final event, the Dubai World Championship. The event will be staged on the Earth Course at Jumeirah Golf Estates, Dubai, UAE from 25th – 28th November and is set to attract one of the finest fields in European and world golf for the second

straight year. The top 60-ranked players in the Race To Dubai (formerly the Order of Merit) will earn a place in the elite field and will have the opportunity to take home a share of the massive €10 million plus prize pool. The winner of the event will receive in excess of €1,000,000. Last year England’s Lee Westwood won the inaugural Race To Dubai when he captured the Dubai World Championship. This year though it is the German Martin Kaymer who leads the standings after a sensational run

of form that has seen him capture his first Major Championship (the US PGA Championship in August). Westwood has been plagued with a recurring calf injury during much of the second half of the season which has unfortunately limited his appearances, but nonetheless is still in contention to retain his title. He lies in third place in the Race To Dubai standings with just under €1,900,000 in season earnings. That is well over €1 million behind Kaymer in prize money, however, and it will take a spectacular finish to the season for

Other top players set to compete at The Dubai World Championship include Ernie Els, Paul Casey and our own Padraig Harrington and Rory McIlroy – although the Race To Dubai will most likely be between Kaymer, McDowell and Westwood. The winner of the Dubai World Championship will receive €900,000. In addition, the top 15 players on the final Race To Dubai standings will share a massive €5,400,000 prize pool. While the financial rewards for the Race To Dubai may seem excessive, the equivalent competition on the PGA Tour in America – The Fed Ex Cup – has a first prize of $10,000,000 (€7,200,000) and American golfer Jim Furyk was lucky enough to take that title in September. Cricket – The Ashes Series With Cricket in the spotlight for all of the wrong reasons in recent times, the advent of the Ashes Series gives the sport the opportunity to repair its tarnished public image. Allegations of match fixing following irregular betting patterns in a recent match between England and Pakistan have undermined the professionalism of cricket somewhat. However, one of international cricket’s most celebrated rivalries that dates back to 1882, The Ashes, will be the

The series is named after a satirical obituary published in a British newspaper in 1882 after a match at The Oval in which Australia beat England on an English ground for the first time. It stated that English cricket had died and the body would be cremated and the ashes taken to Australia. The English media dubbed the next English tour to Australia as the quest to regain The Ashes. England currently holds The Ashes, after defeating Australia 2–1 to regain them on home soil in 2009. Though, the omens are not good for England in Australia; they have not won a Test series down under since 1986-87 and they lost 5-0 on their most recent visit in 2006-07. Captain Andrew Strauss’s side arrive ranked fourth in the world, while Ricky Ponting’s Australia are fifth and have lost their last three Test matches. Strauss is seeking to become the first captain since

1977 and 1978-79 to lead England to successive Ashes triumphs. The first Test will take place in Brisbane on the 25th of November and the second Test in Adelaide on the 3rd of December. England travel to Perth for the third Test, which starts on the 16th of December, before going to Melbourne for the fourth Test on St. Stephen’s Day. They will conclude the series in Sydney, with the final Test taking place between the 3rd and 7th of January. Finally, an important statistic to bear in mind is that England have won only three of their last 26 Ashes Tests in Australia, with every one of them being when the outcome of the series had already been decided. Sport - In Brief Rugby Union – Heineken Cup Europe’s elite club rugby competition is well and truly underway with two of the scheduled six pool matches already played. Of the three Irish provinces competing Leinster are faring the best, with two victories from their first two matches. They are top of Pool 2 with 9 points. Munster are also top of their pool (Pool 3), despite having won just one of their two matches. An impressive opening day victory at home to Toulon was followed by a lack lustre defeat away to London Irish. Ulster lie third in Pool 4, also with one win from their opening matches. The next match day

wicklowsport

takes place on the weekend of the 11th of December with Leinster away to Clermont, Munster at home to the Ospreys and Ulster hosting Bath. Rugby Union – Autumn Internationals The Irish rugby team is finally getting some use out of the newly refurbished Aviva Stadium in Dublin with the advent of the traditional Autumn International matches. Every year the best international sides from the Southern Hemisphere travel north of the Equator to lock horns with their less successful competitors in the North. With matches already played against South Africa, Samoa and New Zealand the series concludes with the visit of Argentina on November 28th (2.30pm kick-off) and Argentina on November 28th (2:30pm kickoff). This will be head coach Declan Kidney’s final opportunity to use competitive matches to fine tune his squad for next year’s Six Nations Championship. League of Ireland Premier Division The 2010 Airtricity League Premier Division came to a gripping climax at the end of October. Shamrock Rovers (holding a two-point lead going into the last day) looked poised to pip defending champions Bohemians to the title and claim their first crown in 16 years. Bohemians’ dream of three league titles in succession finally ended following a night of high drama. Bohs needed a win against Dundalk to have any hope of catching Shamrock

Rovers and they duly obliged, winning 3-1. This left Rovers requiring just a point away to Bray to claim the title. Having been 2-1 in front for a long time a late Bray equaliser paved the way for an anxious final few minutes in front of a capacity crowd at the Carlisle Grounds. Meanwhile, at the other end of the table Bray Wanderers came through a tense two-legged play-off against Monaghan United to ensure their top-flight status for another season. After a scoreless 180 minutes over the two matches a further thirty minutes of extra time were required before Monaghan scored a dramatic late goal after Bray’s Chris Shields sliced a clearance past his own goalkeeper. That looked to be it but Bray remarkably went straight up the other end from tip-off and scored to send the tie to penalties and won the resulting shoot-out 7-6. It was fitting that the man to score the winning penalty for Bray was Chris Shields – the same man who had put through his own net for the Monaghan goal! Horse Racing The flat season has come to an end and has paved the way for the onset of the National Hunt or ‘jumps’ racing season. The season runs loosely from October until April with the highlight being the Cheltenham Festival in March. However, before then there are numerous highlights including the Christmas Festival at Leopardstown here in Ireland. The four-day extravaganza runs from St. Stephen’s Day through to the 29th of December

and many of the best thoroughbreds from both sides of the Irish Sea will be sure to be competing. The highlight of the Festival will be the Lexus Chase on Day 3 where the Paul Nicholls’ trained What A Friend will be looking to gain back-to-back successes.

Baking for CHRISTMAS The art of turning local produce into fine international dining Homemade gifts are one of the most special ones – why buy gifts when we all can bake, it just takes time and making sure that you have all the ingredients in your kitchen. There is nothing nicer than a few hours of festive baking! I recommend you take some time out, listen to your favourite CD and thoroughly enjoy the moment. I’ve chosen 3 of our favourite recipes for you to prepare as gifts this Christmas. You can wrap them up in pretty cellophane very easily with sparkling ribbons for a great gift to take to friends. My children and a few friends love to hang the stars up on a small branch which they plant in a flower pot and decorate with ribbon. This takes a good part of the afternoon to assemble and they are delighted with their achievements! They also help by designing labels for the biscotti packaging. As I walk up to the cookery school in

the mornings, I see the twinkle of frost on the rosemary in the herb garden, the sun catches the droplets like jewels on a Christmas tree. It really is a wonderful time of year - this is our time for research and testing new recipes for the next year (we like to call it teambuilding) and all that it brings.

Wishing you all a peaceful and joyful Christmas.

ballyknockenhouse Ginger Bread Stars

Lemon and Pine Nut Biscotti

Makes about 14

Makes 20

> 50g caster sugar

> 190g pine nuts

> 65g butter

> 110g butter

> 4 tbsp golden syrup

> 170g sugar

> 155g self-raising flour

> 2 eggs

> ½ tsp bread soda

> 2 tbsp lemon juice

> 1 tsp ground (powder) ginger

> 2 tbsp lemon zest

> Coloured sweets

> 475g plain flour

Preheat the oven to 180C/gas 4. Melt the sugar, butter and golden syrup together in a saucepan. Stir in the remaining flour, bread soda and ground ginger. Remove the pan from the heat and leave the mixture to cool. Roll the mixture out on a lightly floured work surface and stamp out stars using a biscuit cutter. Then with a smaller cutter, stamp a star in the centre of the biscuit. Make a hole in the top, so that ribbon can be threaded through later. Line the baking tray with baking parchment. Place the biscuits on the tray and bake for about 8 minutes, until lightly golden. Remove from the oven and place a small boiled sweet in the centre (we used Polo boiled sweets). Return to the oven and bake for a further 2 minutes until the sweet has melted and flooded the centre of the star.

> 1 ½ tsp baking powder

Allow to cool on the baking tray, until the melted sweet has hardened. Then move to a wire rack.

Bake in the middle of the oven for approximately 30–35 minutes, or until lightly browned and fairly firm to the touch. Remove from the oven, keeping the oven on for the next stage.

As an alternative to making holes to hang up the stars you could just arrange them in a pretty box. Line the box with parchment paper – leaving sufficient to flap over the top.

> 475g plain flour Preheat the oven to 180°C. Place the pine nuts on a baking tray and place in the oven for 6–8 minutes, until golden brown. Allow to cool and set aside. Reduce the oven temperature to 170°C. In a mixing bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs, lemon juice and zest. In a separate bowl, combine the flour, baking powder and salt. Add to the butter and sugar mixture, mixing just until blended. Fold in the toasted pine nuts. Butter and flour the baking tray. Place the dough on the tray and form into a long log about 2 1/2cm high.

Place the baking tray on a cooling rack to allow the log to cool. When cooled, using two spatulas or egg slices, carefully transfer the log to a cutting board. With a serrated knife, slice diagonally at a 45-degree angle into slices about 2cm thick. Lay the slices flat on the baking tray and return to the oven for 10–15 minutes longer. Turn over once to dry them out slightly. Biscotti make wonderful gifts! They’re easy to pack and they travel well.

Truffles Makes about 24 > 400g plain chocolate > 400ml double cream > 2 tbsp rum (optional) > Cocoa powder for dusting Melt the dark chocolate and rum in a bain marie with the cream. Allow to set in the fridge for a while. Form small balls and roll in the cocoa powder. Place on mini paper cases and into gift boxes. Store in a cool place. Try making white chocolate truffles and roll in toasted chopped hazelnuts for a lovely treat. These will look superb in a red box.

Christmas Book Ideas

As always, there’s a book for everyone at Christmas!

FOR TEENS

stocking fillers

For Him

Our pick of non-Fiction includes Callsign Hades, Irish man Patrick Bury’s first-hand account of joining the army and fighting in Afghanistan. Or Feckers – 50 people who Fecked up Ireland by John Waters is a light hearted but informative look at some of the people who turned Ireland into the country it is today. Life by Keith Richards is the perfect gift for any Rolling Stones fan, but you don’t have to be a fan to enjoy hair-raising stories of drugs and rock n roll! For a good novel, try Parrot and Olivier in America, by Peter Carey, recently shortlisted for the Booker Prize, which is a fantastic read –a twist on the life of Alexis de Tocqueville and his servant, a portrait of an unlikely friendship. Funny, clever, well written - utterly brilliant! Also worthy of a mention is John Irving’s Last Night in Twisted River, set in 1954, this is a big, old-fashioned novel in the best sense.

For HER

We loved Room by Emma Donoghue recently shortlisted for the Booker Prize - the story of Jack and his Ma in room, which has a locked door, a skylight and measures 11ft x 11ft. A big hit was also Started Early, Took my Dog, the new Kate Atkinson, which is well written but light and is full of Atkinson’s trademark wit. Freedom by Jonathan Franzen, the author of The Corrections, is a novel of contemporary love and marriage, and the disintegration of an American Family. Great news on the beauty front is Bobby Brown’s new Beauty Rules book - a bible on how to look good, all the time. 52

The Vanishing of Katharina Linden by Helen Grant was recently shortlisted for the Carnegie Medal. Set in a small town in Germany, where everyone knows everyone and people don’t lock doors, life changes when a little girl goes missing. Pia is determined to find out what happened to her. A cleverly written book, that keeps you guessing right to the end. New Town Soul by Irish writer Dermot Bolger is a fantastic book. Set in Blackrock and going back and forth between 2007 and 2009, Joey, Shane and Geraldine weave a web of mystery, adventure and intrigue in a world we can all recognise. Along the same lines, Carlos Ruiz Zafon’s new book for teens, The Prince of Mist is a ghost story set in 1943 and told by Max Carver. When Max and his family move to an old wooden house on the coast, strange things start to happen. Not too off-the-wall and very well written, this is a thoroughly enjoyable read. Finally, if you haven’t read The Hunger Games series by Suzanne Collins, do so this Christmas.

FOR KIDS PICTURE BOOKS

Morris the Mankiest Monster by Giles Andreae is sweet, charming and utterly disgusting – kids will love him! The Polar Express by Chris Van Allsburg – the timeless classic now comes with a CD read by Liam Neeson. Perfect for any Christmas Day car journey, or just to listen to anytime!

Ottoline is back in her third adventure in Ottoline At Sea which includes travel by silver seaplane, raft and submarine – all in the search to find Mr Munroe. Beautifully illustrated, it’s perfect to read out loud or for young readers gaining confidence - if you haven’t read Chris Riddell’s books yet, now is the time to start. In the same category is Roddy Doyle’s The Rover Adventures – funny, and so, so popular, it’s time he wrote more!

9+

The Silver Donkey is a beautiful book set in France during the war, when two sisters in the woods by their home discover a soldier. In return for their kindness, he tells them stories relating to the little silver donkey he keeps in his pocket. Sonya Hartnett cleverly weaves together a story with a Christmas theme, which can be read at any time of the year. Heroes of Olympus – the Lost Hero, by Rick Riordan, is also a must for all Percy Jackson fans.

For all the family

Our pick of the gorgeous cookery books out this year (and there are many) are Catherine’s Italian Kitchen by Wicklow’s own Catherine Fulvio. Jam-packed full of delicious recipes showcasing Catherine’s favourite foods from Italy – pizzas and pastas to stromboli and even limoncello, this is a must for any family kitchen. For very serious cooks, Nigel Slater’s Tender, Volume 2, is really beautiful. And then there are always the new contributions from Jamie, Nigella, Clodagh McKenna, Domini Kemp, Tessa Kiros, Rachel Allen and the list goes on! miss For pure entertainment, why not pick up Don’t use o M y The Big Book of Top Gear 2011 – the annual for young and old Mais ge t Brid a e r o n o s alike. Or Where’s Wally (recently published in paperback), the inst k t Boo th e e r t S ay 20 Where’s Wally Poster Book will keep kids entertained for hours. aturd S
