STABILITY & ADVENTURE I was pleasantly surprised, over an early morning espresso, to find an article worth reading on Facebook! It explored the real meaning of the much bandied tag ‘Single Origin’. What was really interesting was how it effectively divided coffee-drinkers into two categories: one, the adventurous explorer of an ever changing flavour merry-go-round, and the other, the reliable, never-out-of-stock, unchanging type. For me, most coffee I encounter slots into one of these broad compartments. So, I’m making this something of a theme for my final catalogue at Cofi-Com. In these pages I hope you will find stock such as Nicaragua El Penon Natural and Ugandan African Moon infused with the spirit of an adventurous explorer whilst Costa Rican and Brazilian Dattera Vac packs invoke a more reassuring reliable presence. I’m off on my own adventure - a long trek back to Europe after a period of much rewarding stability here at Cofi-Com. So there is little bit of a theme here! It’s been a pleasure and privilege to work in the Australian coffee market, thank you all for your support over the past three years !

The Narino region is predominantly known for producing a sweeter tasting coffee with very high acidity. The region has quite a unique geography and climate. Warm winds and plenty of sunshine keep the temperatures at moderate levels throughout the year. At this dramatic elevation the air is ‘thinner’, having less oxygen which for coffee trees means that it takes more time to develop ripe cherries which results in more sophisticated acid structures which produce the sweeter flavours, characteristic of the region. The high acidity levels in the coffee are produced by the combination of volcanic soil and cold night temperatures.

What is Honey Process?

Why Honey Process?

It is a process that started in Costa Rica and has spread to other countries in Central America. In this process some or all of the mucilage of the coffee cherry – or simply coffee honey – that coats the parchment is left on during the drying stage, giving the coffee a sweeter taste close to natural processed coffee. From the tree to the Beneficios, the coffee is picked, depulped and moved to patios or african beds where it will stay at least one week drying until it has reached the desirable point according to temperature and humidity.

Some farmers choose this process because of the benefits it has in comparison with other drying processes. The water usage is lower than in other processes and due to a shorter fermentation period the coffee acquires an acidity halfway between natural and washed coffees. In other words, farmers can produce coffees with some of the unqiue characteristics of natural processed coffee in less time and with lower risks of unexpected effects such as over-fermentation.

This is one of the older and better known haciendas (farms) in Naranjo. The farm is Rainforest Alliance (RFA) Certified. The coffee is shade grown, with lots of native trees planted in the plantations. The farm provides free housing for its permanent employees. At Hacienda Miramonte they make a very big effort to farm coffee responsibly and sustainably. They work with RFA to reduce polution and encourgae biodiversity through growing ‘living fences’ that create wildlife corridors and provide natural defence for security and for a wind break, helping to prevent soil erosion and reducing run off. Other efforts are made to reduce polution by not fertilising within 10 metres of any water source to prevent contamination. The Tarrazú coffee region is located southeast of the capital, San José. Coffee production is the primary socio-economic activity for the region. This coffee is produced in small valleys and on the slopes of the country's highest mountains and is internationally renowned for its high quality. After the cherry has been fully washed the parchment is dried partly using mechanical dryers and partly sundried. We chose this micro-lot from San Pablo because it embodies the highest quality of coffee from the region. It was grown with the ideal conditions for cultivation, such as rich and fertile soil that has mostly sedimentary origins.

Tarrazú is located southeast of the capital, San José, the region cultivates Arabica coffee, mostly of the Caturra variety. The coffee produced here is internationally renowned, and is grown in small valleys and on the slopes of the country's highest mountains. Frailes is a sub region of the Tarrazú coffee growing areas in Costa Rica. The micro lot # 12 was taken from the peak of harvest received by volcafe in the region during the 14-15 crop. The coffee is processed at a central mill Beneficio San Diego (Volcafe). Volcafe has been working with C.A.F.E Practices from the harvest of 2005/2006. Specifically, Beneficio San Diego is approved until June 30, 2018. The region of Frailes includes coffee farms ranging from 1300-1400 meters above sea level.

The Tarrazú coffee region is located southeast of the capital, San José. Coffee production is the primary socio-economic activity for the region. This coffee is produced in small valleys and on the slopes of the country's highest mountains and is internationally renowned for its high quality. This micro-lot was grown in model soil and climatic conditions, producing a coffee that is rich in flavor and body. The coffee harvested for this micro-lot was hand picked during a very specific time of the year from the beginning of January to the end of February when the cherries are perfectly matured, further adding to the uniqueness of its cup profile.

This coffee comese from the micro region Guji in Sidamo. Legend has it that Kaldi, a humble goat herder, discovered the first coffee trees while walking through a forest in western Ethiopia. Kaldi’s goats did a funny dance after nibbling on some red berries. Coffee from Kaffa Forest is shade grown as the name would suggest. The small but well established region produces some great coffees, mostly grown on small farms with an emphasis on organic production and quality. Yields are generally quite low and farming is low intensity with not a huge amount of input from farmers. This is a natural process, sun-dried grade 3 coffee that we are pleased to offer alongside our more regular natural Ethiopians, such as Guji, Sidamo Gr4, Limu and Harrar Blue Key. Kaffa is located to on Ethiopia’s south-west side, sharing its border with South Sudan. Ethiopia is often known as the ‘Roof of Africa’ as very little of the land drops below 1500 masl , it is the largest expanse of continuous land at such a high altitude on the continent of Africa ! Honduras has shared some pretty bright, sharp and zesty numbers recently, so we are happy to present another to you - San Nicolas micro lot of 10 bags only. Honduras has an area of around 300,000 hectares of coffee planted, split between some 180,000 producers. Farms are small holdings, with on average only 1.6 hectares. There are just under 50 export companies. Honduras uses the South/Central American unit of Quintals to measure the coffee. One quintal is 46 kgs. However, they still use the international 69kgs bags for export. Yields on the farms reach around 800 kgs. We received this lot, along with the others from our sister company Molinos de Honduras which is one of the oldest export companies, established in 1960 ! The company, employing aroudn 120 workers during the season, puts an emphasis on quality and works together with other organisations to implement sustainable projects and certifications. The quality this season has been outstanding with really bright and sharp acidity in the cup.

This coffee is produced in the highland plateau of Onang Ganjang by small holding farmers. Fresh cherry is picked, pulped and fermented for 12 hours without water. Then the cherry is hulled and parchment washed and left to dry for two days. The parchment is then removed using the giling basa process of wet hulling, a process unique to Sumatra. The now green beans are allowed to dry for a further 5 days after which they are sorted and hand picked then left for a period of 30 days to rest before ready for shipping. Blue Bianca is prepared by a young local processor in Dolok Sangul.

This premium AA Kenya has been processed at the Mungaria wet mill. The mill is found on the Aberdare Ridge, in Nyeri, on the western slopes of Mount Kenya. The Aberdares are beautiful: densely forested and lush. The Tana river also flows throught the area, it is an important resource for hydroelectric power supply in Kenya. Much of the Aberdares are protected under the Aberdares National Park, home to a terrific array of wild animals, from colobus monkeys, elephants, rhinos to buffalo and many other wonderful species of flora and fauna. San Ignacio processes the farm’s micro lots and some Rainforest Alliance coffees produced on the family farms. This coffee is a real outstanding little number, a beautiful example of a fine, clean natural bursting with blueberry characteristics. El Peñón is a micro farm at the Hacienda La Bastilla. The plantation lies on a southeast facing steep slope. The soil is volcanic making it rich in nutrients - ideal for coffee cultivation.The area receives ample annual rainfall and maintains an average temperature of 21 degrees C. This is a micro lot from Hacienda La Bastilla to the north-west of Nicaragua. This lot was harvested early this year from the micro farm La Cocina. La Cocina was planted in 2010 with the Catuai variety so this is one of the first few serious crops from the young trees. The plantation lies on North facing steep slopes. The soil is volcanic making it rich in nutrients - ideal for coffee cultivation. The micro lot was honey processed at DARIUSZ@COFICOM.COM.AU ELIZABETH@COFICOM.COM.AU

the estate’s mill. It has been hulled, graded, bagged and stored at La Bastilla mill until shipment. It received a score of 86.5 points by SCAA. La Bastilla Estate covers 311 hectares in total, with 180 hectares planted with coffee and has been Rainforest Alliance certified for over 10 years (2003). The area receives ample annual rainfall and maintains an average temperature of 21 deg C.

Mondul Estate Mondul estate was selected as “Annual coffee quality award” by TCA in 1998/99 ”In the cup, medium acidity (malic) and a smooth body with promising flavor notes (honey and floral). Mondul Coffee Estate was established in 1931 by Count Vittorio Davico. His two sons are now running the Estate and pride themselves in producing the finest washed arabica coffee in Tanzania. Mondul Coffee Estate holds the Tanzania Coffee Assocation Quality Award for the 1998/99 and 2000/01 seasons. In March 2002 AFCA awarded the Estate the Certificate of Recognition for presenting “qualifying fine coffee” at the AFCA Cupping Competition 2002 held in Kampala. The coffee is kept on a capped multiple-stem system and is rain-fed. Years of dedicated management have achieved average productions of 1500kg per ha with the following average grade percentage: AA 30%, AB 60%, PB 5%. The availability of clean spring water abstracted from the Monduli Forest Reserve contributes to the excellent quality of the coffee.

Rwanda has really started to kick out some very fine micro lots from newly established farming cooperatives. Previously we had Ngoma, Gihombo and Ruli and Gitesi and are now pleased to present Karora and Nova. These coffees are all fully washed at the cooperatives’ own wet mills. Around 600 local farmers are able to bring their harvest of fresh cherry to the mills to sell for processing enabling the coops to process on a larger scale that is more cost efficient and produces good, consistent quality. Karora Coffee is owned by a cooperative of coffee farmers in the Western province of Rwanda. It was established in 2014 but operated for the first time this season. This is a region where each family takes a coffee farm with pride, 19 coffee farmers came together and realized an opportunity to invest in their community and process their coffee on their own. Karora processed 130 tons of coffee cherries this season. In the future, they hope to grow their operations and invest in non-member farmers with extension service.

station, previously run by a cooperative, was bought by the family of Felix Hitayezu after the cooperative had management issues and was running into financial hurdles in 2013. The station has been operating successfully since then, using a 3 disk pulper machine to process coffee from the area, which is then dried on raised beds. Nova coffee is at the altitude of around 2000m with volcanic soil, and it processed 300 tons of cherries this year.

Running along the Congolese-Ugandan border lie the Rwenzori Mountains. After being referred to by a Greek geographer as Selenes oros, translating to Latin as Lunae Montes they became known in English as the Mountains of the Moon. They are in a particularly humid part of Equatorial Africa meaning they often sport an impressive amount of cloud cover. This misty impression has a glow to it, similar to moon light giving further reason for them to be named the Mountains of the Moon! It is a very impressive mountain range that towers up out of the plains where African Moon coffee grows. There is ample rain fall and the land is lush. The high altitude provides a super climate of hot summer days with cold wintery nights allowing for stable growth and good cherry development. The region remains quite poor, despite the fertile land, furthermore coffee farming is low intensity. These days there is a lot more focus on the region and support for the local farmers. Yemen has one of the oldest relationships with coffee, like Ethiopia, with only a short stretch of water separating the two countries the terrain and varietals are very similar. Steep, arid mountainous land provides a breathtaking backdrop for Yemeni coffee farms. The farms are very basic and the coffee appears to be growing wild with absolute minimum input from man, this coffee, although not certified, can be considered to be grown organically. The harvest is gathered at peak ripeness to create this fine natural Yemen Mocha coffee.

Nestled in a valley about 25km before Chipinge town is the picturesque Tanganda Estate. The majestic mountain range surrounding Tanganda somehow lends a protective feeling to the estate which is known to have a special energy and sense of peace and tranquillity. It was first established in 1924. Early years concentrated mainly on tea cultivation with 80ha of coffee, SL28 and Caturra, following later. However, due to poor world prices and water shortages for irrigation these were stopped for a while. Today there are 66.5 ha of mature and 67.47ha immature coffee comprising of SL28, Catimor 129, Costa Rica and F6. An additional 40ha of coffee will be planted later this season. Mature Macadamia cover over 166 ha. The estate also holds a breeding herd of over 300 head of cattle as well as a small dairy. At an average altitude of 800m mean annual temperature is 20.5째C. Soils include loamy sand, sandy clay loams and sandy loam. Rainfall is below average at only 600mm though the surrounding hills receive an average of 1200mm per year. flavour

Tanganda Estate The meandering Tanganda River supplies the water for irrigation which is gravity fed via a concrete furrow system into an underground pipe network throughout the estate. To ensure adequate water supplies a 60 megalitre reservoir was constructed in 2013. The reservoir is again fed by the Tanganda River and when necessary water is gravity fed back into the irrigation system. Excess water flows back into the Tanganda River with a pipe outlet to the neighbouring settlers providing them with a vital water source. A smaller river, the Waterfalls River, runs along the south side of the estate adjacent to the main road though this is currently not utilised. The surrounding vegetation on the rough ground and on the hills is a tree savannah with a rich variety of tree and bush species. Our 1645 ha of bushland provides sanctuary for abundant birdlife, Vervet Monkeys, baboons, guinea fowl, hares and even Blue Duiker. Over the past year there has been the

occasional Leopard sighting. Many varieties of indigenous trees can be seen, with the most dominant being the Mnondo (Julbernardia globiflora ). Other trees include the famous Baobab (Adansonia), White Thorn (Acacia polyacantha), Velvet Bush Willow (Combretum molle), Dwarf

The estate has its own primary school with a small nursery school. Over 430 children are currently enrolled in the school. The children compete at district level and often at a regional level in Traditional Dancing, Singing, Percussion, Athletics and Chess. There is also a small library and books are made available not only to the children but to employees as well as the nearby cluster schools. A small clinic serves not only the labour force of 500+ and their families but is a central clinic for surrounding villages. The Nurse in Charge takes excellent care of the community but should any patient require critical care they are transported directly to Red Combretum (Compretum platypetalum), Chipinge Hospital.
