This is true, of course, in that artists leave behind legacies lasting longer than they do, but it is also true in the experience of art. It invites us to reflect, step back and feel wonder, appreciate, and let our souls be lifted. This issue of Collect—its name especially suited to its content here—focuses mainly on the subject of art, particularly highlighting many of the collections major fine arts institutions hold or assemble across borders for special exhibitions. essert doyenne Jessica Préalpato is named World’s Best Pastry Chef 2019, the second consecutive head pastry chef at Dorchester Collection to earn the title, with Cédric Grolet of Le Meurice claiming 2018. Granted by the World’s 50 Best Restaurants Academy, the award is widely considered the “Oscars” of the restaurant world. Head pastry chef Préalpato is at the forefront of a new kind of pastry-making touching boundaries with classic cookery. “I never wanted to be number one,” the 33-year-old Préalpato recounts in an interview with Elle magazine. “My pastry is different. I cannot compare myself or my desserts and say it is better or not. It is just different.” What she is referring to is both her working philosophy, and her daring technique. In line with industry master Alain Ducasse and chef Romain Meder, her approach celebrates the natural at all levels, keeping food inextricably linked with the seasons and its producers, and sublimating the product in its preparation. “dessert” and “naturalness”; it is also the name of her book released last November by Alain Ducasse Editions. Shifting attitudes towards the use of sugar, for example, are in her hands. “If a fruit is quite sweet to start with, like pears can be, it’s not worth adding more sweetness to it. I aim to bring the sugar out of the fruit. Today, sugar is used as a seasoning.” The notion of using the word “seasoning” itself is an example of her free style. Working beyond convention, yet with total mastery of it at the same time, she integrates rare ingredients such as nettle, watercress and fir; alternating between using a barbecue, an oven or a frying pan; and, Jessica adds vinegar and alcohol to play with acidity and bitterness. “The goal is that the customer does not get ‘bored’ during the tasting, that each bite brings him or her new information, a new emotion.” Unchartered territory in pastry-making is on the horizon, and Jessica Préalpato is its principle pioneer with all options before her.

Beyond the World We Know The Norton Simon Museum in California assembles an intimate exhibition celebrating abstraction in image-making. he invention of photography sparked a veritable revolution in how we convey information to each other. At last—a medium that mirrored reality, untainted by the subjectivity of the human hand. But, is it? A treasure of an exhibition curated by Gloria Williams Sander, ‘Beyond the World We Know’, assembles silver gelatin prints created by some of the 20th century’s most innovative and experimental photographers pushing the medium’s pictorial pragmatism. Barbara Morgan, Frederick Sommer, Arthur Siegel, Aaron Siskind, Minor White and Edward Weston, amongst others, bend the expectations of a medium esteemed for its ability to record what the eye sees. From complex technical processes such as chemical toning and solarisation to tight cropping of otherwise recognisable, often banal, subjects these photographers have forged a nonrepresentational, visual language that can call to mind the gestural paintings of the Abstract Expressionists. An image target such as a tree, for example, is distanced from recognisable contexts when placed in extreme close-up. As a result, viewers are encouraged to take in the image and see beyond the ostensible subject. When composition, texture, tone and light are handled by artists of great imagination and virtuosity, the simplest subjects become evocative works of art. They worked in collaboration with Le Meurice’s long-time design reference, Charles Jouffre, who is the creator of the opulent drapes at the Opera Garnier. The standalone living space on the seventh-floor penthouse includes up to three connecting bedrooms. Altogether, across suite and garden, it covers an impressive 620 square metres, or 6,674 square feet. Inside, a vision of a modern-day Versailles prevails. Shades of bronze and gold, mixed with the subtle patina of lightly-aged oak compliment lavish furnishings hailing from prestigious houses such as Rubelli, Dedar and Toyine Sellers. Matisse Made Material _ The fourth generation of Henri Matisse’s descendants are spearheading a new venture in his name: a luxury brand named Maison Matisse that produces decorative objects in honour of the painter’s daring spirit. Timed with the 150th anniversary of Matisse’s birth, a limited-edition collection features pieces created in collaboration with three designers, given carte blanche: Ronan & Erwan Bouroullec, Jaime Hayon and Alessandro Mendini.

French brothers Ronan et Erwan Bouroullec created a series of vases: terracotta, anodised aluminum and glazed ceramics associated in three combinations to reference the image of a window through which one gazes onto a landscape. Spanish designer Jaime Hayon based his three vases on fantastical elements: forms, silhouettes and natural references that conflate and float in a sea of colours. The vases’ unique shapes are inspired by Mediterranean elements appearing in Matisse’s œuvre. And, renowned Milanese designer Alessandro Mendini—part of the Memphis Group and a master of colour—reveals a fascinating study of the complex chromatic system Matisse developed over time, in three vases created with Florentine master craftsman Alessio Sarri. A tribute to an ancestor, a tribute to an artist, Maison Matisse brings an iconic 20th-century painter to the table of our times.
