The Ugly Dog & The Dog House

T

he Ugly Dog Public House and Dog House are located on “the hill” at 294 S. Fourth St. in Highlands. We are a casual pub with a relaxed atmosphere in which people can come and enjoy craft beer selections on tap and by the bottle, well-designed cocktails, great wines and good friends. Our seasonal and specialty cocktails include lavender-blueberry mojitos, fresh margaritas, strawberry-basil caipirinhas and perfect Manhattans, just to name a few. Our extensive bourbon selection is the best in the area. This season we will offer a reserve wine list as well as Champagne and sparkling wine specials every Friday. Our outside seating at the Dog House is a great way to enjoy a relaxing libation on a cool evening in Highlands, especially to end a rigorous day of golfing, shopping or outdoor activities. If you are hungry, don’t miss our pub menu. We have great burgers that are hand pattied and cooked to order. Alongside our wonderful burgers, we serve premium hot dogs and naturally hickory smoked meats from Highlands Hickory Market. Lakeside Restaurant

L

akeside Restaurant overlooks charming Harris Lake one block from Main Street in Highlands. The restaurant has a small garden overlooking the lake with tables allowing guests to enjoy fine dining while mingling with nature. Lakeside is known for fresh seafood. Specialty dishes this season include pan-seared Alaskan Halibut finished with a mussel and herb pan jus, Seafood Risotto brimming with shrimp, scallops, mussels, spring peas, roasted leeks, carrots and kale. We also feature the Lakeside favorite, Grouper Maison sautéed with artichoke hearts and mushrooms finished with lemon and white wine. Lakeside has the best wait staff in all of Highlands. We truly care about our diners’ experience and we strive for excellence. While our menu is seafood-driven we also feature Double Cut Colorado Lamb Chops, 14 oz. Rib eye, 8 oz Filet, Chicken and Duck. Locals love our pan sautéed Rainbow Trout finished in lemon, white wine and butter. Our double-cut Colorado Lamb Chops with roasted garlic and herb chimichurri is a crowd pleaser as well. Chris Arnold, Lakeside’s chef, moved to Highlands from Nashville, Tennessee. Chris has been cooking in fine dining restaurants for 11 years. He most recently trained under Will Ulhorn and Kevin Ramquist of Wild Boar and F. Scotts in Nashville.

he Park on Main opened on July 1, 2014, after a yearlong renovation. It is the only pet-friendly hotel in Highlands and features upscale décor with a casual feel. Pebble Creek Village

P

ebble Creek Village offers reasonably-priced vacation rentals year-round. There are eight two-bedroom houses, four motel rooms and one townhouse chalet available to rent for short-term stays. Houses have a two-night minimum stay, and motel rooms can be rented nightly. Long-term stays of one to six weeks are also available, if booked well in advance. Pebble Creek Village has become a popular place to host destination wedding groups, family reunion groups, church retreats and business meetings. The two-bedroom houses are all fully furnished with queen beds, extra loft sleeping area with queen bed, kitchen, living room, dining rooms, outside decks, charcoal grills and flat

Fresh spring soups By Marilyn Underhill

T

he best spring soup recipes bridge the gap between the seasons. Goodbye to stick-to-your-ribs, full-bodied soups and hello to lighter spring soups. Chilled soups can be served in glass mugs, demitasse cups or regular soup bowls. Garnish can be anything from croutons to a hibiscus flower. The following recipes are meant to be served chilled, but some can be served hot. The important message is to welcome spring and say hello to the vibrant, delicate flavor of the season. Bon appétit!

Chilled Cucumber Soup (“Back Porch Cookbook”) Ingredients: 3 large cucumbers, approximately 3 pounds

1 cup coarsely chopped onion 2 tsp. fresh minced garlic 1/2 cup white wine 1 cup chicken broth 1 cup water 3/4 cup sour cream 1/2 cup heavy cream 1 tsp. fresh dill weed, minced fine Salt and pepper, to taste 1/4 cup fresh, minced parsley 2 cups small, tender shrimp 1/2 gallon lightly salted water 6 to 8 fresh dill sprigs, for garnish Directions: Peel the cucumbers with a vegetable peeler and halve them length-wise. Scoop out the seeds and discard. Cut the cucumbers roughly and puree in a food processor, along with onions and garlic. Pour puree into a heavy-bottomed soup pot with white wine, broth and water. Bring to a simmer and cook for 20-25 minutes. Remove from heat and

allow to cool. Stir in sour cream, cream, dill weed, salt and pepper, and parsley. Chill thoroughly. Bring salted water to a boil. Add shrimp and cook three or four minutes or until shrimp are pink throughout. Drain off water, allow shrimp to cool and peel and devein. Chill shrimp thoroughly. To serve, spoon approximately 4 to 6

Curried Avocado Soup (“Sundays at Moosewood Restaurant”)

Cold Tomato Soup with Lobster Ingredients: 2 medium-ripe Haas avocados 2 1/4 cups vegetable stock 1 tsp. curry powder, or more, to taste 3/4 tsp. salt 1/4 tsp. white pepper 1/2 cup heavy cream Directions: Split the avocados in half with a knife and remove the pits. Set aside one half. Scoop out the insides of the other three halves with a spoon and blend with 1 cup

(Pearl Restaurant Nantucket Cookbook) Ingredients: 3 large, ripe tomatoes, cored and quartered 2 Tbs. sherry vinegar 1/2 tsp. kosher salt, or to taste 1/4 tsp. freshly ground black pepper 1/4 cup extra-virgin olive oil 1 1/2 Tbs. white truffle oil 4 to 8 oz. cooked lobster meat, cubed 1/4 cup mayonnaise, crème fraîche or

mascarpone Strained lemon juice, to taste Directions: In a blender, puree the quartered tomatoes wit the vinegar, salt and pepper until they are completely smooth. Slowly add the olive and truffle oils and blend until the mixture is well combined. Strain the mixture through a fine sieve lined with cheesecloth, discarding the solids, and refrigerate for at least four hours before serving. In a bowl, combine the seafood and mayonnaise, crème fraîche or mascarpone. Season with a hint of lemon juice and adjust the salt and pepper. Chill until ready to serve. Spring Green Soup (“Julee Rosso Fresh Startâ€?) Ingredients: 5 cups low-fat, low-sodium chicken broth 10 scallions, halved lengthwise and cut into 2-inch pieces 1 large onion, halved and thinly sliced One 10-ounce package frozen peas 2 cups fresh spinach, cut in chionade 12 asparagus spears, cut into 2-inch pieces Salt and black pepper Directions: In a stockpot, bring the chicken broth to a boil over high heat, add the scallions and onion, reduce the heat and simmer, partially covered, for 20 minutes. Add the peas, spinach and asparagus and cook for ďŹ ve minutes longer, until the asparagus is fork-tender. Add the dill, season to taste with salt and pepper and serve immediately.
