Christmas parade packs McCaysville, Copperhill

he Copperhill Kiwanis club will sponsor the 87th annual Christmas parade Saturday, Dec. 6, beginning at 2 p.m. in downtown McCaysville and Copperhill. 1 box 2-layer yellow cake mix 1¼ cup Miracle Whip 4 eggs, beaten 1/4 cup cold water 2 Tbsp. cinnamon 2 cups finely shredded carrots

1/2 cup (1 stick)+6 Tbsp. butter, softened 3/4 cup brown sugar (packed) 1/2 cup white sugar 2 eggs 1 tsp. vanilla

Mix first five ingredients then add carrots. Pour into greased 13x9 pan. Bake at 350 degrees for 35 minutes. Cool and frost with cream cheese icing.

1½ cups all purpose flour 1 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 3 cups quick-cooking oats 1 cup raisins

Beat butter and sugars until creamy. Add eggs and vanilla. Beat well. Mix flour, baking soda and salt. Add and mix well. Add oats and raisins. Mix well. Bake 360 degrees, 8 to 10 minutes. Cool completely.

Fannin schools plan White Christmas programs

annin County’s three elementary schools will present their 2014 White Christmas program Dec. 18 and 19, a the high school Performing Arts Center. Blue Ridge Elementary will begin the programs with their performance Thursday, Dec. 18, at 9 a.m. West Fannin will follow with their program the same day at 1 p.m. East By Dub Joiner The News Fannin Observer will present their White Christmas music Friday, Dec. 19, at 9 a.m. The programs will include a variety of holiday music from each school’s student body, from kindergarten through fifth grades.

White Christmas programs performed by students from each of Fannin County’s three elementary schools always feature musical entertainment with a Christmas theme.

Light Up kicks off holidays in Blue Ridge

owntown Blue Ridge will be filled with entertainment and the Christmas spirit the weekend of Nov. 28 and 29 for the 15th annual Light Up Blue Ridge festivities. The weekend event will begin By Dub Joiner F r i d a y, The News N o v . Observer 28, with “Blue Friday,” when local merchants will be offering discounts to begin the holiday shopping season. On Saturday, Nov. 29, the Light Up Blue Ridge event will begin with the arrival of Santa

and Mrs. Claus on their sleigh at 11:45 a.m. After Santa and Mrs. Claus’ arrival, they will be the grand marshals of the Christmas parade through downtown Blue Ridge. Santa and Mrs. Claus will also be available at the gazebo in the downtown city park for pictures with children. Downtown offers Christmas shopping, events

he Fannin County Chamber of Commerce is encouraging residents and visitors to shop local for Christmas gifts before going out of town. Merchants throughout the community are offering sales and decorating their shops in Christmas fashion for the holidays starting with Blue Friday, Nov. 28. Special music will begin with Light Up Blue Ridge Saturday, Nov. 29, and the downtown Blue Ridge business district takes on a Christmas village atmosphere during December with its many antique stores, art galleries, boutiques and restaurants decked out in holiday fashion. On East and West Main streets in downtown, Blue Ridge visitors can find shops

and restaurants offering Christmas sales and festive holiday food. The Great Tree in the downtown Blue Ridge city park will also remain lighted throughout

December. On weekends, the city of Blue Ridge operates a free shuttle from the north parking lot to the stores on East and West Main streets.

Merchants along East and West Main streets will offer Blue Friday holiday sales starting Nov. 28.

Ingredients

1 medium onion, chopped 2 garlic cloves, minced 2 Tbsp. olive oil 1 28-oz. can tomatoes with liquid (cut up) 1/2 tsp. oregano 1 tsp. dried basil 1/2 tsp. salt 1/8 tsp. pepper 8 oz. ziti, cooked and drained 2 cups (8 oz.) shredded mozzarella cheese 2 Tbsp. grated Parmesan cheese 1 tsp. sugar

3 cups (2 lbs.) yellow squash 1 cup sour cream 1 onion, chopped 2 cups carrots, grated 1 can condensed cream of chicken soup Salt and pepper to taste Fresh sage, torn (optional) 2 cups Pepperidge Farm herb stuffing Butter

Directions

In large skillet, sauté onion and garlic in oil until tender. Add tomatoes, oregano, basil, salt and pepper. Cover; simmer for 20 minutes. Place ziti in an ungreased 11x7x2-inch baking dish. Cover with sauce. Bake, uncovered, at 350 degrees for 20 minutes. Sprinkle with both cheeses. Bake 10 minutes longer or until cheese melts. Yield: 6 to 8 servings.

St. Luke’s plans two Christmas services

C

hristmas at St. Luke’s Episcopal Church (Anglican Communion) in Blue Ridge will celebrate two special holiday services, one on Christmas Eve and one on Christmas Day. The historic Book of Common Prayer will be used at both services. T h e ChristBy Dub Joiner The News mas Eve Observer service will begin at 5 p.m. and include a children’s Christmas pageant and Holy Communion with carols. The second service, a Festive Choral Eucharist, which is a traditional late-night candelight service, will begin at 10 p.m. Fellowship and food will

follow the service. On Christmas Day, Holy Communion will be celebrated at 9 a.m. and include the singing of carols. All persons who have been baptized and have confessed Jesus Christ as Lord and Savior are welcomed to receive communion. St. Luke’s Church is located at 7 Ewing St., across from the Kiwanis Club of Blue Ridge fairgrounds. The Rev. Victor H. he Fannin County middle and high school bands, the chorus and drama group will present their annual Christmas concerts and holiday production By Dub Joiner The News at the PerObserver forming Arts Center during December. The events begin with holiday music by the chorus on Thursday, Dec. 4, at 7 p.m.

The drama department will follow with its holiday production Saturday, Dec. 6, at 7 p.m. and Sunday, Dec. 7, at 3 p.m. The seventh and eighth grade bands will present their holiday concert Thursday, Dec. 11, at 7 p.m., followed by the sixth grade and high school bands’ concerts Sunday, Dec. 14, at 3 p.m. All concerts and the drama production will take place at the Performing Arts Center.

Miracle returns to Blue Ridge Community Theater

T

he Blue Ridge Community Theater will present “Miracle on 34th Street” on the main stage as its holiday production. The play is an adaptation of the Valentine Davies novel by the same name. Vi c k i e F o ntaine By Dub Joiner and Kathy The News Observer Simmons will direct the play, which opens Friday, Nov. 28, and continues through Dec. 14. The play involves Kris Kringle as an old man in a retirement home who gets a job working as a Santa for Macy’s. As Santa, he unleashes waves of good will with the store’s customers and the commercial

world of New York City by referring parents to other stores to find exactly the toy their child has requested. Kringle is seen as deluded and dangerous by Macy’s vocational c o u n s e l o r, who plots to have Kringle sent to Bellevue Psychiatric Hospital. As the play moves along, Kringle ends up in a court competency hearing. At stake is one little girl’s belief in Santa. In a dramatic decision, the court confirms Kringle as the true Santa, allowing the little girl and countless other children to experience the joy of Santa.

The play stars Mike Lacy as Kris Kringle and Natalie Herendon as the little girl, Susan Walker. Holidays bring Christmas Village to twin cities

isitors to McCaysville and Copperhill will be able to visit the Christmas Village throughout the holiday season this year, according to TriCities Business Association spokesman Dave Nelson. The village is located this y e a r By Dub Joiner in the The News Burger Observer Building parking lot on Bridge Street in McCaysville, Nelson said. It will be open each weekend through the holidays until approximately 8:30 p.m. The village consists of a half-dozen or more miniature buildings, all decorated in holiday fashion. Shoofly Pie Ingredients

Pastry for single crust pie 1½ cups all-purpose flour 1/2 cup packed brown sugar

Perhaps the most famous of Pennsylvania Dutch recipes is Shoofly Pie. While no one can say for certain how the pie got its name, it seems logical that the sweetness of the pie made flies a nuisance. Re-create the taste of Pennsylvania Dutch country-style cooking with this easy and tasty recipe.

6 Tbsp. butter 1/2 cup light molasses 1/2 cup hot water

1/2 tsp. baking soda

Directions

Preheat oven to 450 degrees. Prepare and roll out pastry. Line 9-inch pie plate with pastry. Trim to 1/2-inch beyond edge of pie plate. Flute edges; do not prick pastry. Bake in 450 degree oven for five minutes. Cool thoroughly on rack. Reduce oven temperature to 375 degrees. For filling, in mixing bowl stir together flour and brown sugar. Cut in butter until mixture resembles coarse crumbs. In another bowl combine molasses, hot water and baking soda. Pour 1/3 of the molasses mixture into bottom of partially baked pastry shell. Sprinkle 1/3 of the flour mixture atop molasses layer. Repeat layers, ending with flour mixture. To prevent over-browning, cover edge of pie with foil. Bake in 375 degree oven for 15 minutes. Remove foil; bake 15 to 20 minutes more or until filling is set. Serve warm. Makes 8 servings. Tip: Use only all-purpose flour. Lauren McMann

Ingredients

1½ cups walnuts 1 cup pitted dates 1/4 tsp. sea salt, divided in half 1 cup blueberries (fresh or frozen) + 16 reserved for garnish 8 raspberries (fresh or frozen), for garnish 1 cup raw cashews, soaked in water for at least 2 hours, drained 1/2 cup coconut oil 1/3 cup pure Vermont maple syrup

1. To make the bottom layer, or crust, place the walnuts, dates and 1/8 teaspoon sea salt in a high-speed blender or food processor and pulse to break the ingredients down until they’re crumbled. Run the motor and process until the mixture is ground up and sticking together when you squeeze a little in your hand. 2. Press the bottom layer into a small casserole, pie plate, or baking pan that has been lightly greased with olive or coconut oil. Set aside in the refrigerator while you make the top layer, or chill overnight. 3. To make the top layer, or filling, blend the soaked cashews, blueberries (minus the ones reserved for garnish), coconut oil, remaining 1/8 teaspoon sea salt, and pure Vermont maple syrup in a high-speed blender or food processor until they’re as smooth as possible. Pour this mixture over the bottom layer crust in the pan. Use a spatula or back of a spoon to spread the top layer over very evenly. 4. Garnish with the remaining blueberries and 8 raspberries. Transfer the “cheesecake” to refrigerator and chill for at least three hours. Cut into wedges or bar shapes.

Mountains arts group holding annual holiday sale

T

he Blue Ridge Mountains Arts Association’s annual Holiday Art Sale is underway and will continue through Jan. 6, 2015, at the Art Center, 420 W. Main St., in Blue Ridge. The sale includes a large variety of artwork, all of which could make great Christmas gifts, according to Art Center Marketing Director Jennifer Danner. Included are paintings in several media, woodwork, sculpture, pottery, photography and jewelry from local and area artists. By Dub Joiner Also The News during the Observer Holiday Show, the Southern Appalachian Artist Guild will host the second annual “Marvelous Miniatures” collection of artwork, all of which will be for sale. The Art Center will also have Open House Nov. 29 from 11 a.m. to 5 p.m. during the Light Up Blue Ridge event. During the Open House local artist Julie Burton will do live portraits from 1 p.m. to 5 p.m., and the Smokie Mountain Melodies, a Sweet Adelines group, will sing from 1 p.m. to 2 p.m. In addition, on Dec. 16, the Art Center will host the holiday edition of Business After Hours from 5:30 p.m. to 7 p.m. For information about any of these events, call the Art Center at 706-632-2144 from 10 a.m. to 6 p.m., Tuesday through Sunday. Divide the dough into six equal parts. Shape each part into a ball. Place on an ungreased cookie sheet; flatten slightly. Make an indentation, 1¾ inches in diameter and about 3/4 inch deep, in center of each flattened ball. Fill each indentation with about 2 tablespoons of pie filling. Bake until the edges begin to brown, 20 to 25 minutes. Makes 6.

1 package cocktail sausages 1/2 cup Jack Daniels Barbecue Sauce 1/4 cup grape jelly 1 cup KC Masterpiece Original BBQ Sauce

Directions

Mix first five ingredients then add carrots. Pour into greased 13x9 pan. Bake at 350 degrees for 35 minutes. Cool and frost with cream cheese icing.

Directions

Remove beans from string and break. Cover with water and let soak overnight. Pour out water and rinse beans. Beans will swell in the water so take this into consideration when deciding how many to cook. Put beans in pot with piece of fatback, cover with water and cook about 7-8 hours at a medium temperature, check often to see if more water is needed, but when beans are tender, you want to have cooked almost all the water out.

1 angel food cake pan 1 package each: sugar-free red, orange, green and lemon Jell-O 2 envelopes (1 box) Dream Whip 1 cup of cold milk (whole or 2 percent) 1 tsp. vanilla extract – use the real thing not imitation 2 packages of soft lady fingers

Directions

Make red, orange and green Jell-O using one cup of hot water and five to six ice cubes in shallow dishes or pie plates. Refrigerate to set. Make lemon Jell-O using one cup of hot water and five to six ice cubes. Let this one partially set. It should be soupy. Line the bottom and sides of the angel food cake pan with lady fingers. Cut red, orange and green Jell-O into squares. It is OK if they “break.” Whip up Dream Whip according to package directions. Fold in soupy lemon Jell-O. Using a spatula, scoop Jell-O cubes into Dream Whip mixture and fold in. Pour into cake pan lined with lady fingers. Chill overnight (this is best) or four to five hours. To serve, lift center of angel food cake pan and slice. Enjoy. For Weight Watchers this dessert is 27 points. It makes about 12 servings that equal 2.25 points/serving.
