‘T is the Season

W

hether you were ready or not, it’s here, the season to be jolly, merry and full of love and compassion is in full swing! Black Friday and Cyber Monday are behind us – holiday parties, cooking, baking, wrapping, and more shopping are ahead of us – don’t let the hustle and bustle of the season wear you down, just remember you will survive the craziness, you have every year before. When I feel overwhelmed with social obligations, or the stress that the decorations on the outside of the house are not finished, I usually just take a deep breath and remind myself of the true meaning of the season, because it is a undoubtedly a special experience filled with tradition, family and friends.

And for the first time this year, my holiday card was actually done before Thanksgiving – probably because I had my two “furry” kids photographed for the greeting – rather a generic holiday photo. (And yes, their wearing green sweaters which I purchased at the MCSPCA Grateful Dog Walk in early October 2013)

New Jersey Lt. Governor Speaks To Business Owners in Matawan

L

t. Governor Kim Guadagno spoke to over 50 business owners and chamber members at a recent luncheon hosted by the Matawan Aberdeen Chamber of Commerce. The luncheon took place on October 24, 2013 at La Riviera Restaurant, located on Main Street in Matawan. The Lt. Governor was joined by over 50 business owners and chamber members as she discussed updates on the ongoing economic development efforts and progress regarding NJ Partnership for Action as well as the effect of Hurricane Sandy on the local community.

Watershed Moment for New Jersey Women:

The Signing of AJR-65

O

ctober 17 was a great day for Turner Syndrome in the state of New Jersey. After two years of advocacy efforts, Governor Chris Christie signed AJR-65 into law establishing the month of February as Turner Syndrome Awareness Month. Turner Syndrome affects 1 in 2000 live female births and 10% of all miscarriages can be attributed to complications from this condition. Only 1% of fetuses survive birth. The mission began when Laura Fasciano, executive director and president of the Turner Syndrome Foundation, and Caitlin Gong, then an intern from Monmouth University, traveled to Washington DC to spend the day on Capitol Hill advocating for Turner Syndrome in July 2011. Upon their return, Laura met with Assemblyman Sean T. Kean who was inspired to draft AJR-65, thus beginning a two year journey to have the bill passed. The bill was co-sponsored in the Assembly by Assemblywoman Mary Pat Angelini and Assemblywoman Caroline Casagrande—among others and passed unanimously through the Assembly on January 28, 2013. The bill in its Senate version, SJR 64, co-sponsored by Senators Jennifer Beck, Robert W. Singer, and Nellie Pou was introduced to the Health, Human Services, and Senior Citizens Committee last Octo-

6

ber and passed in its second reading on February 4, 2013. What became an issue was having the bill read at a general Senate meeting. Kym Hall, patient advocate for the foundation, was unrelenting in her efforts and was continually in contact with aides at Senate President Stephen Sweeney’s office, while also getting in touch with staff in Governor Christie’s office. It seemed like nothing could get through to Senator Sweeney’s office and one report revealed that he was in a dispute with Senate majority leader Tom Kean. Was this the reason why the bill wasn’t making it to the Senate general meeting? Political dispute certainly seemed to be hindering the posting of this bill. August 19 was a major day for Turner Syndrome in New Jersey as AJR65 passed unanimously through the state Senate. The foundation was very grateful to all of the legislators who helped make this day a watershed moment for girls and women affected by this complex condition and those who have not been diagnosed yet. To have the bill signed by Governor Christie was a major effort and there was a national call for advocacy in a letter to governors in every state. There were numerous requests for advocates to write,

visit, or call their local representatives and provide testimony about the importance of this bill. The mission of the Turner Syndrome Foundation is to support research initiatives and facilitate education programs that increase professional awareness and enhance medical care of those affected by Turner Syndrome. As an advocacy organization, the foundation provides resources to its constituents through its website, w w w.turnersyndromefoundation.org; newsletter; social media; and news articles. Hundreds of letters were mailed to assemblymen and senators appealing for their support in passing this important piece of legislation. As an advocacy group, it is a collective effort as one team, one voice, for the sole reason to improve the identification and treatment of babies who survive Turner Syndrome. If you would like to become an advocate, apply to join the National Council of State Leaders and act as a representative for your state. The foundation has been dedicated to advocacy since its inception and will provide tools, training, and tips for successful efforts across the United States. How to overcome THE BEAST

(i.e. holiday season!)

TIPS BY ALESHA LAZAN

If possible, eat a low glycemic diet before your “cheat” meal (if you know you will be eating potatoes, pasta, dessert, wine for dinner; make sure your day/days leading up to that is very low glycemic, meaning just vegetables, protein, fruits, salads—leave out the refined carbohydrates!)

Do not skip meals! This will cause a blood sugar crash, forcing you to eat everything and anything! Maintain your blood sugar through out the day, this will make you less likely to crave the higher glycemic foods

Make some healthier options to bring to people’s houses. Ever hear of cauliflowermashed potatoes?

Make most of your plate—salad and vegetables, some turkey or other protein, and dabs of the other goodies (cranberry sauce, potatoes, pasta)

People get so worked up over holiday season and weight gain. My philosophy is to enjoy, but don’t over indulge. You should never deprive yourself. Don’t get upset about the “cheating,” just understand how to fix. Some tips that • can help you enjoy holiday season:

HAZLET RESIDENT COMPETES IN KARATE WORLD CHAMPIONSHIP

H

azlet resident Michael Buttermark will be one of the representatives for the United States in a karate world championship to be held in December in Mumbai, India. Buttermark, 47, is a graduate of the College of Staten Island; served in the United States Air Force for six years, and was a Sergeant when he was honorably discharged. He holds a Certified Master License from International Karatedo Gojukai Association (IKGA) in Tokyo, Japan, where he lived from September 1987 to April 1991 while serving in the USAF. He has lived in Hazlet for 15 years. Buttermark started taking karate lessons at age 16 in House of Karate in Staten Island, New York. He has been taking lessons for 31 years and has never stopped training. He owns, as well as trains and teaches at Traditional Karate Center – Matawan Gojukan in the Town Square Shopping Center in Matawan for five years. “Originally, I opened in Staten Island and taught there in Traditional Karate Center from August 1994 to December 2010. I closed it to focus on the Matawan location and in preparation for two major hip reconstruction surgeries.” The belt level worn by Buttermark is Godan, a fifth degree Black Belt, with a Renshi Shihan, which is a Master Instructor license from IKGA headquarters in Tokyo. He has been a member of IKGA since moving to Japan in 1987. Buttermark explained his representation of the United States in the karate world championship. “From within our small association of IKGA dojo within the United States, I am active in competitive karate and volunteered to be one representative. Unfortunately, due to a number of other reasons, only two other individuals will join me in representing our country. Also from my dojo is Sensei Torsten Johnson of Staten Island who will be a judge/ referee. He holds a USA National Karate Federation (member of the United States Olympic Committee) license and has officiated at the 2005 IKGA World Championship in Rotterdam, Holland and the World University Games in New York City. The last team member, Anthony Palumbo, is originally from New

York and has been living in Japan and training at IKGA Headquarters like I did for these past five plus years. He will fly directly from Tokyo to Mumbai.” Buttermark has competed in the IKGA First (1993 in Chiba, Japan), Second (1997 in Sao Paulo, Brazil), and Third (2001 in Perth, Australia) World Championships. He noted, “My best placement was fifth place in Brazil. After my hips became too bad and painful to compete, I coached the 2005 USA Team in Rotterdam, Holland Michael Buttermark in IKGA and had 10 of my students official uniform taken in 2013. competing; one took the Bronze medal. Due to finances, we did not attend the 2009 IKGA World Championship in Cape Town, South Africa.” Other international and national accolades include the Bronze medal in the North American Cup in 1993; three consecutive Far East Armed Forces Champion titles – undefeated – from 1988 to 1990, competed in Japan, Okinawa, Guam, Philippines, and Korea; four-time Gold medalist/National Champion in 1993, 2005 and twice in 2013; and National Championship medals won by TKC staff and students in 2010. The site for the World Championship moves every four years to another continent and Asia was due to host. Mumbai, India won the selection process from IKGA headquarters. The championship dates are December 11 to December 14, 2013. “I will be competing in two divisions. They are Veteran (ages 45 plus); and Men’s Kata (forms) division, which is my specialty; as well as Kumite (fighting). Buttermark explained the impact karate has had on his life. “Karate truly changed my life by instilling more discipline and focus in my life. I grew up prior to being flagged as having A.D.D. and had to accommodate my entire life. Karate kept me on track and from age 16 through to the present, continued to make me a better person. From the point in my life that I trained in Japan, my karate life changed dramatically. I was meeting and learning from some of the world’s leading authorities on karate. My classmates were world champions and karate dignitaries from around the

world who came to IKGA Headquarters for meetings and to train. This is where I met and became friends with this year’s host Mr. Vispy Kapadia.” When asked who has influenced or encouraged him up to this point, Buttermark shared this. “Of the many karate personalities and champions I’ve met in the past 31 years, my instructor Saiko-Shihan (Grandmaster) Goshi Yamaguchi is THAT person. He comes from an incredible karate lineage and has excelled in forwarding the visions of his predecessors. He is an author of dozens of books and videos sharing his knowledge, runs the IKGA which is in 80 countries, inspires and manages the entire IKGA like an extended family. Finally, his visions for karate are likely not what you might think. He believes that karate offers something for everyone, that it is inclusive. And, through the proper instruction of the ideal of karatedo (the way of karate) and its practice, he wants to promote global peace especially from the children on up. Many people wrongly assume that karate is about fighting or combat; they’re wrong. Karatedo is about self-improvement of mind, body and one’s will or spirit. It has changed my life for the better and I try to pay it forward to the next karate generations.” Buttermark offers his own words of encouragement to young people. “As in all sports, everyone is a beginner at first and not an immediate or overnight champion. Getting involved by taking that first step into a karate school takes bravery; staying there takes commitment; excelling and becoming a champion takes something special that comes from ability, dreams, inspiration, and very hard work!”

Local Artist’s Murals Turn Heads at Homes, Restaurants, and Schools STORY SHANE COLMAN

The vibrant murals of Nussara Cregan continue to appear around the area as the local artist makes her mark on homes, restaurants, and, most recently, a school. The Thai artist started her company, Wondrous Walls, almost ten years ago, and since then has been busy creating personalized pieces for clients all over the New Jersey and New York area. Nussara says:

“I love the challenge of creating distinct and personalized pieces for everything from newborn’s bedrooms to restaurants.” As Nussara expands her portfolio, her pieces continue to get bigger and better with every project. Her recent work at The Goddard School in Hazlet stands as one of the artist’s proudest achievements to date.

Nussara created many pieces for the school, but two in particular show the artist’s incredible range and versatility. “The Goddard Carnival” mural includes sections made of chalkboard paint, creatively allowing teachers to write in students’ birthdays for any given month. Students and teachers are excited for the chance to add their own touch to the mural, making for a unique interactive artwork. “The Goddard Park” mural has a multi-cultural theme, including mariachi bands, the Eiffel Tower, and the pyramids of Giza. Students can explore the world by finding all the careful details included in the mural. Says Goddard owner Mrs. Vanderbilt, “It was great to have the children find the different countries in the mural and talk about the famous sites.” The biggest hit with the children has been trying to find the hidden leprechaun peeking out from behind a bush! Not only are Nussara’s pieces beautiful, Goddard is also finding them very educational. Nussara has been creating beautiful pieces since she was a child in Thailand and her murals show the years of study and practice she has completed. She studied art at Thailand’s Silpakorn University of Arts, and received a Master’s in Communication Arts from the New York Institute of Technology. After spending some time detailing restoration designs of historical buildings in New York City, Nussara started Wondrous Walls. “I always liked the idea of transforming everyday objects and walls into art,” says Nussara, “especially when the details of the piece work together to tell a story.” Nussara recently completed a piece at the Training Rim in Middletown, as well as an elaborate rendition of Giants Stadium that features the Boys in Blue completing a textbook pass (if only life could imitate art!) in a boy’s bedroom. Her art has a certain magic that is catching the attention of more and more local businesses and residents. After completion of the Goddard pieces, Mrs. Vanderbilt said, “I would highly recommend Wondrous Walls to everyone looking to have that special mural in their business or home.” If you haven’t been able to see her work in person yet, check out some of the fantastic pictures on Wondrous Walls’ Facebook page (www.facebook. com/wondrouswalls) and/or Wondrous Walls’ website (www.wondrouswalls.com), where you can also get in touch with Nussara to bring her elegant murals to your own home or business.

HBOA Raises Funds for High School Scholarship Program at Networking Event sure we bring in businesses that will enhance the community and compliment the other businesses and services in the community.” The HEDC members are a dedicated volunteer group, formed by the Hazlet Business Owners Association to help create opportunities for economic development through desirable business growth and expansion, retention and attraction, and to work as partners to develop a climate conducive of maintaining the quality of life in this great Township of Hazlet, Monmouth County.

O

n Tuesday, October 29, 2013, the Hazlet Business Owners Association held a networking event at the Shore Café in Hazlet to raise funds for the HBOA High School Scholarship Program; a program open to any Hazlet resident high school senior regardless of what high school they attend.

The networking event was not only a success as it generated funds for the scholarship program, but it was extremely informative as the HBOA Economic Development Committee (HEDC) was discussed. Ted Koczon, the owner of the Hazlet Perkins and President of the Hazlet Business Owners Association kicked off the discussion with a brief explanation of the HBOA Economic Development Committee, stating “The HBOA Economic Development Committee was formed a few months ago to focus on business development along the two highway corridors that run through the Township. Both highways have seen an increase in vacant buildings and storefronts over the past few years. We need to see a change.”

Moore explains, “Our partnership with the Township Committee and the Monmouth County Office of Economic Development is a great start. We are currently reviewing the Township ordinances to make recommendations to the Township Committee to reduce fees and make Hazlet a more business friendly community. There is a contest currently with the business and marketing students at the local high school to develop a tagline for Hazlet so we can start branding and creating marketing material for consumers for our current businesses and material with demographic information to market to potential tenants and developers.” •

This committee is dedicated to creating a more vibrant and cultivated community by:

Serving as a conduit between the commercial economic interests in Hazlet Township and the municipal government;

Encouraging the economic well-being and expansion of the existing commercial businesses located within the Township;

“Our mission is not just about filling real estate, we want to make sure we bring in businesses that will enhance the community and compliment the other businesses and services in the community.”

Koczon then introduced his business partner and largest business competitor for over 10 years, Cliff Moore, owner of the Keyport IHOP and Co-Chair of HEDC. Cliff Moore presented the steps the committee had already taken towards its goals stating, “Our mission is not just about filling real estate, we want to make

• Responsibly assisting in developing properties within Hazlet Township in an effort to improve the aesthetics of the township while providing additional revenue; and,
 • Reviewing Township ordinances, policies, and practices to determine their impact on existing and proposed commercial businesses.

The Hazlet Business Owners Association was founded on the basis for local businesses to gather and discuss matters to find a resolution that assisted in the growth of the local Hazlet Business Community. The HBOA Executive Board meetings are held at the Scudiery Enterprises Conference Room, located above Interstate Electronics at Airport Plaza the 2nd Wednesday of every month at 7:15 p.m. For further information on the Hazlet Business Owners Association visit http://hazletboa.org.

Polenta with Mushroom Sauce

Holiday Recipes These are a few of our family’s traditional holiday favorites! All the ingredients in these recipes can be purchased at Dearborn Market POLENTA WITH MUSHROOM SAUCE • • • • • • • • • • •

20

1 cup polenta 4 cups water 2 lbs. shitake, oyster and cremini mushrooms ¼ cup extra virgin olive oil ½ cup white wine 1 tbsp. chopped garlic 1 chopped onion 2 tsp. salt ½ tsp. black pepper 2 tbsp. fresh chopped parsley ¼ lb. sliced fontina cheese

CALAMARI SALAD • • • • • •

1 lb. fresh calamari ½ cup olive oil ¼ cup fresh lemon juice ½ tsp. salt & pepper 1 tsp. minced garlic 1 tsp. fresh chopped parsley

Prepare the Calamari: Wash and rinse the calamari thoroughly. Slice tube into 1” pieces. In boiling water with salt, cook the calamari for approx. 2 min. or until they begin to float to the top of the water. Remove and rinse with cold water. Dry with a paper towel and let sit.

Prepare the Polenta: Bring 4 cups of water to a boil. Add 1 tsp. salt. Slowly add 1 cup of polenta while whisking with a fork as it enters the water to prevent clumping. Reduce heat, and continue stirring for approx. 5 min., or until desired consistency. Spread polenta into a roasting pan.

Prepare the Dressing: Combine olive oil, fresh lemon juice, salt, pepper, minced garlic, and parsley into a bowl. Mix well to combine all the flavors. Add calamari to the bowl and toss to coat. Serve cold.

Prepare the Mushroom Sauce: In a skillet sauté onions and garlic until slightly brown in color. Add mushrooms, salt, pepper, and sauté until mushrooms have cooked. Add wine and simmer until wine is completely absorbed. Remove from heat and stir in fresh chopped parsley. Next pour over top of the polenta. Place the slices of fontina cheese over the mushrooms and bake at 300° for approx. 15 min. to melt cheese and heat polenta through. Cool and cut into squares and serve.

STUFFED ARTICHOKES

COMMUNITY MAGAZINE WWW.COMMUNITYMAGAZINENJ.COM

• • • • • • •

6 whole artichokes 4 cups seasoned bread crumbs 2 cups pecorino romano grated cheese 1 cup olive oil 2 cloves diced garlic ½ cup fresh lemon juice 3 tbsp. fresh chopped parsley

Prep the Artichokes: Trip the top of the artichokes and cut at the

bottom. Snip all leaves 1/4 in. Place artichoke upside down and press on the bottom to open up the leaves. Prepare the Stuffing: In a large bowl combine seasoned bread crumbs, pecorino romano cheese, olive oil, garlic, lemon juice, and parsley and mix together. Using the breadcrumb mixture stuff the artichoke getting filling in between the leaves until it is tightly full. To Cook: Place stuffed artichokes into a deep roasting pan. Add water ¾ of the way up the artichoke. Cover with foil and bring the water to a boil over medium high heat. Reduce heat to a simmer for 45 min. or until artichokes are soft in the middle – at this point, a toothpick should go easily into the artichoke. Platter and Serve.

BAKED BACCALA • • • • •

2 lbs. baccala fillets 5-6 potatoes, cut into wedges 2 fresh diced tomatoes 1 lg. onion, cut into wedges ¼ cup olive oil

Baked Baccala

Family

• • • •

Fresh ground black pepper 2 cloves of minced garlic 1 cup sliced kalamata olives ½ cup water

To Prepare the Baccala: Take baccala fillets and place in a large bowl. Cover them with cold water. Place the bowl of baccala in the refrigerator. Let it sit for 48 hours to soften and remove the salt. Be certain to change the water at least every 8-12 hours. To Assemble the Dish: After 48 hours, and you are ready to bake the baccala, preheat an oven to 350°. Lightly coat the bottom of an oven pan with olive oil. Place drained baccala fillets in the pan. Add the wedged onions and potatoes around the baccala. Add the water to the pan. Spread the tomatoes and garlic over top of the baccala. Next add the olives on top. Drizzle olive oil over the potatoes and onions. Bake, uncovered in the oven. The baccala and potatoes will absorb the water in the pan, so check periodically to add more water, if necessary. Generally when the potatoes are done, so is the baccala.

Phase II

t has been one year since the formation of Operation Provide Comfort (OPC) and together we have stood with and provided help to the people of Union Beach through the devastation, the despair, the hope and the hype of FEMA and insurance companies. We have listened to the stories and filmed first-hand accounts of the destruction and survival. We learned about resiliency and bravery from the residents of Union Beach, and we saw how many wonderful people truly care about their neighbors, be they next door, next town, or across the ocean. In truth, Operation Provide Comfort received much more than we could have ever given. As the year passed, the scope of OPC’s mission has expanded from supplying material comfort in the form of building supplies to supplying comfort in other ways. We must therefore increase our fundraising effort ten fold. To do that, OPC is forming committees that will concentrate on expanding our outreach efforts to different sectors of the larger community. If you would like to be part of Phase Two of this effort please join, bring a friend; together we can make it possible for the residents of Union Beach to move back to their homes and their beloved town. PHASE II OUTREACH COMMITTEES • Church & Religious Organizations – Pastor Chris Durkin, Chairman • College Community Service Groups – Dee Zander, Chairwoman • Consortium of Towns - Ernest Janssen, Chairman • Corporate Outreach – Lt.Col.Jim Sfayer, Ret., Chairman • Food for the Holiday Gift Cards – Cindy O’Brien, Chairwoman • Fundraising projects – Joanna Vroman, Chairwoman • Governmental Agencies - Lt.Col.Jim Sfayer Ret. & Glen Dalakian, Co- Chairs THE NEED IS STILL THERE To date, 400 Union Beach homes have been demolished, that means that 400 homes have to be built. Will all the residents come back to Union Beach? Do all of the residents have the financial ability to rebuild or repair according to governmental dictates? Will those residents without financial resources move out of the area? Or, will developers come to town preying on the most vulnerable residents, offering them a pittance for their property in the hope of flipping the property and raking in huge profits? OPERATION PROVIDE COMFORT NEEDS YOU! If you are interested in helping these committees succeed, contact the Diana Piotrowski, OPC Administrator at globalinfo1@verizon.net, or call 908.770.3673

Newly Built Freehold Office Building Adds Holiday Cheer to Main Street

T

he newly built office building, known as Fox Building, located at 42 East Main Street in Freehold, which opened earlier in the fall of 2013, held a holiday lighting ceremony on November 7, 2013 with local officials. Not your usual ceremony to hold, but Lou Leonardelli of RE/MAX Homeland REALTORS, a Fox Building tenant, came up with the idea to professionally decorate the entire front face of the building. The owners of Fox Building – Victor Scudiery and Edward Ketcham – couldn’t agree more with their tenants’ idea. The new building in town looks amazing all lit up at night, and it’s making the town of Freehold a little bit more festive for the holiday season. When Lou Leornardelli was asked why he wanted to do this, he responded, “I’m just an Old Saint Nick at heart.”

Baseball Coach Mr. Mike Morgan is very pleased about the signing, “I think it’s a great honor to have five players that are going to continue to play baseball in college and to be recognized for their talent on the field. I believe that when you work hard on and off the field it shows you that great rewards will come. These young men are great student athletes and represent SJV with pride. This is the first time that I can remember that there were 5 baseball players signing letters of intent at SJV. I am extremely proud of these players and of my team.” RIGHT: Standing, left to right: SJV Athletic Director Rich Lamberson, SJV Principal Steve Dimezza and SJV President Joe Deroba. SJV Students Evangelize Through Music On Sunday, October 27, 2013 the Saint John Vianney High School choir had the privilege of attending Mass at St. Clements Church in Matawan and leading the congregation in song. SJVHS is hoping to accomplish three things by having its choir sing at different congregations throughout the diocese. First, SJVHS is trying to help support and increase Sunday Mass attendance among our families. Second, we are hoping to establish a stronger connection with parishes our students come from. Third, the students want to introduce local church-goers to a different style of musical accompaniment for worship . SJVHS Campus Minister, Jeff Johnson, “I think the overall experience was extremely successful. Fr. John, the pastor, received glowing comments from nearly everyone as they left the church. He was extraordinarily impressed with the choir and loved sharing the celebration of Mass with the SJV community. The Mass attendance increased by around 150 for that particular Mass which means approximately 150 members of our community (not including the

choir) attended Mass. I’m still receiving positive feedback from parishioners, parents, and SJV staff.” Mr. Mark Lillis, father of SJVHS freshman Mackenzie Lillis said, “My daughter seemed to have more interest in the Sunday mass than usual. Nice to have upbeat music that the kids can relate to!” The SJVHS Choir will continue traveling around to numerous Churches throughout the school year to lead the Masses. Future dates will be announced soon.
