‘T is the Season

W

hether you were ready or not, it’s here, the season to be jolly, merry and full of love and compassion is in full swing! Black Friday and Cyber Monday are behind us – holiday parties, cooking, baking, wrapping, and more shopping are ahead of us – don’t let the hustle and bustle of the season wear you down, just remember you will survive the craziness, you have every year before. When I feel overwhelmed with social obligations, or the stress that the decorations on the outside of the house are not finished, I usually just take a deep breath and remind myself of the true meaning of the season, because it is a undoubtedly a special experience filled with tradition, family and friends.

And for the first time this year, my holiday card was actually done before Thanksgiving – probably because I had my two “furry” kids photographed for the greeting – rather a generic holiday photo. (And yes, their wearing green sweaters which I purchased at the MCSPCA Grateful Dog Walk in early October 2013)

(Serves 4) Freshen breath and the mood at any holiday party with this crowd-pleasing cocktail. Festive colors, refreshing mint, and a sweet candy cane finish?! Sign me up!

(Serves 4) This beautiful drink glitters like New York City at Christmas time, and is filled with the delicious holiday flavors of apple and cinnamon. Serve it cold with a cinnamon stick for garnish.

5 Ounces Vanilla Vodka 5 Ounces Crème de Cacao 3 Ounces Peppermint Schnapps Grenadine 4 Mini Candy Canes

Put a few drops of grenadine into the bottoms of four martini glasses, just enough to color. Unwrap mini candy canes and hook the rim of the glass, “tail” inside of the glass In a large martini shaker, filled with ice, add vanilla vodka, crème de cacao, and peppermint schnapps Replace lid and shake vigorously for 10-20seconds until well chilled Distribute the cocktail mixture equally among the four glassesunless one of them is yours ;)- and serve immediately

5 Ounces Good Quality Rum 1/3 Cup Cocoa Powder ¾ Cup White Sugar Pinch Salt 1/3 Cup Boiling Water 3 ½ Cups Milk ¾ Teaspoon Vanilla Extract ½ Cup Light Cream Whipped Cream

Bring 1/3 water to a boil and whisk in cocoa, sugar and pinch of salt. Reduce to low heat and simmer for about two minutes whisking constantly until sugar and cocoa are well dissolved Stir in 3 ½ cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla, rum, and cream. Pour into four mugs and top with whipped cream Dust with cocoa to garnish

18 YEAR TRADITION CELEBRATED WITH PANCAKE BREAKFAST Colts Neck Lions continue 18 year tradition with pancake breakfast STORY SUSAN MURPHY

W

hether it’s serving pancakes or serving those in need, Colts Neck Lions Club follows their motto “We Serve” in everything they do. Their annual Pancake Breakfast held on October 26 at the Colts Neck Reformed Church marked 18 years of serving up a delicious meal to residents and guests alike. Several hundred families enjoyed breakfast and the chance to socialize with friends during the four-hour event. “This is a nice community event and we always have a nice crowd,” said Event Chair David Heck. He noted that Dunkin’ Donuts, Saker Shop-Rite, Perkins, and Fireside Grill and Bar, donated the food. Due to the event being close to Halloween, children are always encouraged to wear their costumes. Colts Neck Leos, which consists of high school students following in the footsteps of the Lions Club, assisted in serving and clearing tables, and offered face painting for the little ones. A small silent auction was also a part of the event. Free blood pressure and glucose screenings were available for anyone who attended. Stewart W. Snyder III administered the screenings. “Everyone who came in is doing well in their screenings,” he said. Chairperson Anita Dedalis, who heads Colts Neck Alliance for the Prevention of Alcohol and Drug Abuse, was available to answer questions and offer pamphlets for families to read. All proceeds from the event will benefit local charities. Colts Neck Lions Club has about 50 members who meet every first Wednesday of the month. Anyone interested in joining can contact David Heck at 732.332.1206. Lions volunteer their time to assist with humanitarian causes locally and throughout the world. Through their service projects and fundraising efforts, Lions are able to help those in need. Colts Neck Lions Club was formed in 1969.

olmdel Township’s Veterans Day ceremony took place on November 2 at Veteran Memorial Park on Telegraph Hill. In attendance were about ten veterans and a small group of residents. Despite the small gathering, recognition was given to Holmdel veterans as well as veterans everywhere for their service and their sacrifice. Holmdel Recreation sponsored the ceremony and Commander Art Davey of the retired VFW Post 5918 served as the Master of Ceremonies. Although some of the program was modified due to the absence of several key participants who were unable to attend, the importance of Veterans Day was acknowledged and celebrated. VFW Post 5918 Chaplain Fred Balestracci read a Veterans Day Prayer as well as a special Pearl Harbor prayer. Balestracci, 93, a United States Army veteran, fought in the Battle of the Bulge. Commander Davey announced that it was the 75th Anniversary of the VFW and asked his granddaughter Deanna Vitoroulis to read a letter explaining the history of Veteran’s Day and what it has meant to countless veterans. Mayor Patrick Impreveduto then acknowledged and thanked those veterans in attendance. He reminded everyone of the millions of soldiers who have fought in past

wars, with so many losing their lives, and those in Iraq and Afghanistan who continue to protect our freedom today. “Here in Holmdel, we honor and thank all those who served. They have shown courage, service and sacrifice.” Commander Davey expressed his thanks to the Mayor and Township Committee for “the services you never said no to while I was Commander of the Post.” He presented Mayor Impreveduto with a pin making him an Honorary Member of the VFW. Township Committeemen Thomas Critelli, Gregory Buontempo, and Joseph Ponisi as well as Freehold Deputy Director Serena DiMaso also attended the Veterans Day ceremony. Memorial Wreaths were given by the Holmdel Veterans of Foreign Wars, the Holmdel Township Committee, Holmdel PBA#239, Holmdel First Aid Squad, Holmdel Half Century Club, Holmdel Kiwanis Club, Holmdel Girl Scouts, Holmdel Fire Company#1, Holmdel Republican Party, and Holmdel Democratic Alliance. Following the ceremony, Holmdel Recreation offered refreshments. Holmdel VFW Post 5918 had to close last year due to a declining membership.

Local Musicians Remain Grounded – Balancing High School, Friends & their Band

First To Friday F irst To Friday is a local band of five talented individuals that together make one incredible group. They have already performed at the Count Basie Theater in Red Bank, The Stone Pony in Asbury Park, The Bamboozle Music Festival in Asbury Park, and Six Flags Great Adventure. These are impressive venues, as is the fact that their fan base increases almost daily. The five members of the band are Dana Hembling of Freehold who does vocals; Mike Cappelluti of Marlboro who plays keyboard; Billy Nally of Lacy who plays drums; Ryan Schulte of Colts Neck who plays guitar; and Tom Sangiorgio also of Colts Neck who plays bass. It is important to note that all of the members are still high school students. Dana, 17, is in her senior year at Freehold Borough High School; Billy, 16, is a Junior at Lacey High School; and Mike, Tom, and Ryan, all 16, are in their Junior year at Colts Neck High School. Mike, Dana and Billy were the first to meet while attending a music program in Red Bank. They formed a band named Reality Check, which later became their present name First To Friday. Tom and Ryan joined the group about a year later, when Mike met them at Colts Neck High School. “The name of the band was formed in an intense anticipation for the weekend, and Friday,” explained Mike. The group’s musical and vocal training has given them a solid foundation from which to build their sound. Dana took five years of vocal lessons; Ryan taught himself to play the guitar and took one year of formal lessons; and Billy took four years of drum lessons. Tom took

four years of guitar lessons as well as taking bass lessons since age 13 upon joining School of Rock. Mike has had eight years of piano lessons that include seven years with Joe Febb and one year with David Rosenthal, who plays keyboards in Billy Joel’s band. Tom explained how the band’s songwriting process works. “Mike does an amazing job writing the lyrics and the chords in our songs. When he plays us a song that he wrote and we all agree that it’s the right song for us, we all pitch different ideas like guitar riffs, bass lines, lyric adjustments, and drum fills as we develop the simple song into a more developed, fullband version.” Mike shared what inspires their songwriting. “Our emotions and experiences definitely play a large role in the inspiration behind our music. Our most popular song, “Now It’s Gone”, was actually written in the perspective of a fictional person going through a break up, but we use our own experiences and emotions to make the song feel real.” Ryan added, “The curiosity in what potential the final product has and how a song can end up sounding really inspires me to work with everyone in our band to develop a small idea into something big. Each member of the band has their own personal favorite band or solo artist that has inspired them. For Tom its U2; for Ryan its Coldplay; for Mike it’s the Lumineers; for Billy its Lady Antebellum; and for Dana its Demi Lovato. The biggest key to their success as a band is balancing fun and work. They all agreed on the following response. “We want to enjoy our

Tom and Mike expressed why this might be. “I think that our songs are relatable to people of all ages and that we are able to tell these stories through music that, we hope, grabs our fans’ attention,” said Tom. “One thing that I pride myself most with is the ability to create music that touches people in some way. If someone could relate to the music we produce, I consider our music a success. The support we get from our fans is incredible and it’s a great feeling,” said Mike. Performing in order to help charities is important to the band. “There is nothing more rewarding to us than helping those who need it most. One specific time we will never forget is performing at a soup kitchen in Union Beach shortly after Hurricane Sandy devastated the area. When we were on our way to the performance, we couldn’t believe what we saw. People were living in tents with their houses destroyed, and the very least we could’ve done for those people was to perform some tunes to lift their spirits,” said Mike. “The band participates in many fundraisers including Restore the Shore,

Make a Wish, The Greame Preston Foundation for Life as well as many others. Mike and I also perform every Monday at an Assisted Living Facility,” shared Dana. Frank Cappelluti is the Manager of First To Friday. When asked to give one outstanding trait that each member has he did not hesitate. “Tom is enthusiastic; Ryan is determined; Mike is creative; Dana is motivated; and Billy is passionate,” he said. Putting all of these amazing traits into one incredible band is part of what makes First To Friday a success. “It truly is a great experience working with the band. Celebration of Life Cancer Support Community & The Diney Goldsmith Center Honor Dr. Beth Deutch. Celebration of Life event raises $100,000 to support complimentary support programs.

he Cancer Support Community, The Diney Goldsmith Center, hosted its 7th annual Celebration of Life event Thursday, October 17 at Eagle Oaks Country Club, Farmingdale, New Jersey. More than 300 people attended the event, which honored Dr. Beth Deutch, MD for her 20+ years of service and commitment to women’s health. Beth is Founder and Medical Director of HerSpace Breast Imaging and Biopsy.

The event included food tasting stations, open bar, silent auction and “fabulous fashions” modeled by men and women cancer survivors. Stacy Gemma, founder of Stacy Gemma Everywear Style Consultants and Glen Goldbaum of Glen Goldbaum 72 Salon, Red Bank provided the fashions and styling for the show. Peter Criss, rock legend and male breast cancer survivor, was the 2012-2013 Celebration of Life honoree and was in attendance again this year to award Dr. Deutch the title of Ambassador of Life for 2013-2014.

The Celebration of Life event raised $100,000 to help support the Center’s mission which is to help people affected by cancer, enhance their health and well-being through participation in professional programs of emotional support, education and hope. On average the Center, based in Eatontown, hosts up to 100 classes a month and provides more than 150 hours of in-person and phone counseling a month. All programs and counseling are provided free of charge. The Celebration of Life event is the principal fundraiser for the Cancer Support Community, The Diney Goldsmith Center and kicked-off the Center’s Thrive and Survive Campaign running through year’s end.

Local Artist’s Murals Turn Heads at Homes, Restaurants, and Schools STORY SHANE COLMAN

The vibrant murals of Nussara Cregan continue to appear around the area as the local artist makes her mark on homes, restaurants, and, most recently, a school. The Thai artist started her company, Wondrous Walls, almost ten years ago, and since then has been busy creating personalized pieces for clients all over the New Jersey and New York area. Nussara says:

“I love the challenge of creating distinct and personalized pieces for everything from newborn’s bedrooms to restaurants.” As Nussara expands her portfolio, her pieces continue to get bigger and better with every project. Her recent work at The Goddard School in Hazlet stands as one of the artist’s proudest achievements to date.

Nussara created many pieces for the school, but two in particular show the artist’s incredible range and versatility. “The Goddard Carnival” mural includes sections made of chalkboard paint, creatively allowing teachers to write in students’ birthdays for any given month. Students and teachers are excited for the chance to add their own touch to the mural, making for a unique interactive artwork. “The Goddard Park” mural has a multi-cultural theme, including mariachi bands, the Eiffel Tower, and the pyramids of Giza. Students can explore the world by finding all the careful details included in the mural. Says Goddard owner Mrs. Vanderbilt, “It was great to have the children find the different countries in the mural and talk about the famous sites.” The biggest hit with the children has been trying to find the hidden leprechaun peeking out from behind a bush! Not only are Nussara’s pieces beautiful, Goddard is also finding them very educational. Nussara has been creating beautiful pieces since she was a child in Thailand and her murals show the years of study and practice she has completed. She studied art at Thailand’s Silpakorn University of Arts, and received a Master’s in Communication Arts from the New York Institute of Technology. After spending some time detailing restoration designs of historical buildings in New York City, Nussara started Wondrous Walls. “I always liked the idea of transforming everyday objects and walls into art,” says Nussara, “especially when the details of the piece work together to tell a story.” Nussara recently completed a piece at the Training Rim in Middletown, as well as an elaborate rendition of Giants Stadium that features the Boys in Blue completing a textbook pass (if only life could imitate art!) in a boy’s bedroom. Her art has a certain magic that is catching the attention of more and more local businesses and residents. olmdel Girl Scouts recite the Girl Scout Promise at each meeting and learn the Girl Scout Law which they pledge to follow during their journey as scouts. A line in the Promise says “to help people at all times” and a line from the Girl Scout Law says “to make the world a better place.” On November 12, over 60 Holmdel Girl Scouts from eight troops attended the 2013 Girl Giving Event at Holmdel High School and fulfilled those pledges by giving back to their community in several ways. Under the direction of Anissa Quirk and Dina Hamwi, Holmdel Girl Scout Event Coordinators since August 2010, the scouts decorated cookies, donated coloring books and crayons, and made holiday cards for those in need. As members of the Girl Scout Leadership Experience (GSLE) Committee, both women are active Troop Leaders in their community.

“This is our fourth year planning events for Holmdel Girl Scouts,” said Mrs. Quirk. These events are open to each level of Girl Scouting which includes Daisies, Brownies, Junior, and Cadettes. For this event, each girl was asked to bring no more than a dozen cookies to decorate. Vanilla icing and toppings were provided. The cookies were donated to Saint Leo’s food pantry for the benefit of Lunch Break of Red Bank and local families in the Red Bank area. “Every weekend Saint Leo’s provides meals for 150 families. Your cookies will be their snack,” explained Mrs. Quirk to the scouts prior to the start of their decorating project. Each girl was also asked to bring coloring books and crayons which will be donated to Holiday Express. This non-profit organization delivers music, food, gifts, financial support, and friendship to those who truly need the gift of kindness during the holiday season and throughout the year. The

final portion of this Girl Giving Event was making holiday cards to accompany the cookies. Daisy Troop#862 shared their thoughts as a group. “We are helping to make the world a better place.” And, “Our favorite part was making people feel happy, fabulous, and making them smile.” Daisies are the youngest members in scouting and their participation in this event will earn them a petal for their uniform. Cadette Troop#903 said they enjoyed the fun of decorating the cookies, knowing they were giving back to their community, and sharing this experience with their friends. “Dina and I have enjoyed planning fun events for all Holmdel Girl Scouts. Many Leaders have planned their meetings around our events and have been very supportive,” said Mrs. Quirk. She added that the events are always well attended and the scouts have enjoyed making a difference by giving back to those in need.

Top Toxins of 2013?

T

he ASPCA Animal Poison Control Center (APCC) has reported that insecticide and laundry detergent have topped the list of the most commonly reported exposures which resulted in death this year. Laundry detergent is a household item to which pets may have ready access. New packaging of detergent in individual pods that are convenient to the consumer can be attractive to pets. Significant exposure to liquid laundry detergent or these new individual packets can cause gastro-intestinal distress in dogs and cats. Exposure through aspiration of these products is also dangerous. Death resulting from exposure is commonly due to the severity of the pet’s respiratory condition. Permethrin is a common synthetic chemical which is widely used as an insecticide or insect repellent. The ASPCA Poison Control Center did not receive reports of dog deaths attributable to permethrin, however, cat exposure to the chemical in canine products was associated with a number of fatalities. Another insecticide which resulted in deaths is carbamates, although aldicarb is illegal in the United States, it is sometimes illegally imported into the country and can lead to acute death after exposure. The ASPCA APCC has more information on their website about these toxins and others to which your pet may be exposed, http://www.aspca.org/pet-care/animal-poison-control. In an emergency situation, you can call them directly at 1-888-4264435, a fee will be charged to your credit card for the advice you will receive. The APCC can give you immediate advice (24/7/365) on how to manage your pet’s exposure to toxins and will advise you if it is necessary to bring your pet to your veterinarian or an emergency veterinary facility for follow up care. The APCC will work with your veterinarian to ensure the best possible outcome for your pet. You may also want to watch You Tube videos that the APCC has created on a variety of topics designed to instruct pet owners on how to protect pets from poisons at home. The APCC suggests that pet owners put together their own Safety Prevention Pack at home in case of an emergency. Benjamin Guaragno of Holmdel Troop 331 earns Eagle Rank

O

n September 5, 2013, Holmdel student Benjamin Guaragno achieved the rank of Eagle Scout. Ben started on the Scouting trail in 1st Grade as a Tiger Cub with many of his Stealth Patrol buddies. With his Dad as Den Leader, Ben enjoyed camping, hiking, museum sleepovers, and visiting water parks. The next year, as Ben became a Wolf Cub, Dad took over as Cubmaster, and Mom soon became Committee Chair. Ben didn’t know it yet, but the Eagle trail was beckoning. Being the Cubmaster’s son, Ben participated in each and every Pack activity. His favorites were snowboarding, Summer Camp at Quail Hill, hosting Donut Sundays at St. Catharine’s, and building and racing winning Pinewood Derby cars and Raingutter Regatta boats. In 5th grade, Ben earned the Arrow of Light, the highest award bestowed upon a Cub Scout, and he crossed over into Boy Scout Troop 331. Ben’s first year as a Boy Scout was filled with rank advancement, merit badges, and fun adventures. History has a way of repeating itself, and Dad became Scoutmaster, while Mom became the Charter Organization Representative. Now the Eagle trail was clear to Ben, and he set out on his journey in earnest. Ben served as Patrol Leader for Stealth and soon discovered leadership positions that tapped into his passion for technology – Announcemaster, then Webmaster! Three years later, he’s still at it. Ben earned 28 merit badges and participated in just about every Troop activity offered. He’s done countless hours of community service (really, we lost count!), enjoyed the BSA National Scout Jamboree in West Virginia where he discovered mountain boarding, and done tons of other cool stuff like climbing and zip lining at Adirondack Extreme, kayaking, white water rafting, and yes, more snowboarding. For his Eagle project, Ben led a group in designing, implementing, and testing a database search engine for the Holmdel Historical Society’s website, while updating its look and feel. Over the course of two meetings, Ben taught HTML and CSS to a group of Scouts and adults, and guided their efforts in choosing new color schemes and menu designs for the web pages. They then tackled the design and implementation of the database search engine, using Google search so as not to incur any cost to the Historical Society. Ben even added code to allow the future addition of photographs, so that when a record is returned, a photo of the gravestone can be displayed alongside the data. After much testing, and some tweaking, the website is up and running. Visitors can now visit www.holmdelhistory.org to search over 4,000 birth and death records for the historic cemeteries in Holmdel. Ben is a freshman in Holmdel High School and is a member of the Cross Country team. He loves volunteering as a Teacher’s Assistant in St. Catharine’s Summer CCD program. Ben’s a drummer and performed in the Concert and Jazz bands for several years. He’s an alumnus of the National Junior Honor Society, earned two trophies in the NJ State TSA Science competition, and earned a Cross Country medal with his team.

embers of the Ladies Auxiliary of the Lincroft Volunteer Fire Company sponsored a Hi-Lo Fall Fundraiser on November 15 at the firehouse on Newman Springs Road. Over 70 people attended the event which has been held twice a year for the past three years. Local businesses and individuals generously donated prizes for the gift auction.

Baskets for the auction included gift certificates, Barbie doll items, puzzles, holiday treasures, jewelry, lotions and body wash, tickets for Disney on Ice, and two separate baskets – one specifically for boys and one for girls. Guests brought their own beverages and snacks; dessert, coffee and tea were provided. President of the Ladies Auxiliary Bridget Matthews was the caller for Hi-Lo and explained to everyone how the game was played. Each player received playing cards and had to remove the card from their hand once it was called. Once a player had

no cards left, they would call out, “Hi-Lo.” Winners then selected their prize from a pile of more than 100 wrapped gifts. Each game had multiple winners. “On behalf of Lincroft Fire Company, Station 10 of the all-volunteer Middletown Fire Department, I want to thank all of you for attending this event. Without your donations we could not purchase gifts such as gloves or hoods for the firemen,” said Mrs. Matthews. She agreed that this particular Hi-Lo Fall Fundraiser was the biggest group ever. The Ladies Auxiliary supports the Lincroft Fire Company, providing assistance through various functions, coordinating fundraisers, as well as supplying food and beverages to the volunteer firefighters upon return from fire calls and to those who remain on call at the firehouse when there is a state of emergency. New members are always welcome in the auxiliary.

Polenta with Mushroom Sauce

Holiday Recipes These are a few of our family’s traditional holiday favorites! All the ingredients in these recipes can be purchased at Dearborn Market POLENTA WITH MUSHROOM SAUCE • • • • • • • • • • •

1 cup polenta 4 cups water 2 lbs. shitake, oyster and cremini mushrooms ¼ cup extra virgin olive oil ½ cup white wine 1 tbsp. chopped garlic 1 chopped onion 2 tsp. salt ½ tsp. black pepper 2 tbsp. fresh chopped parsley ¼ lb. sliced fontina cheese

CALAMARI SALAD • • • • • •

1 lb. fresh calamari ½ cup olive oil ¼ cup fresh lemon juice ½ tsp. salt & pepper 1 tsp. minced garlic 1 tsp. fresh chopped parsley

Prepare the Calamari: Wash and rinse the calamari thoroughly. Slice tube into 1” pieces. In boiling water with salt, cook the calamari for approx. 2 min. or until they begin to float to the top of the water. Remove and rinse with cold water. Dry with a paper towel and let sit.

Prepare the Polenta: Bring 4 cups of water to a boil. Add 1 tsp. salt. Slowly add 1 cup of polenta while whisking with a fork as it enters the water to prevent clumping. Reduce heat, and continue stirring for approx. 5 min., or until desired consistency. Spread polenta into a roasting pan.

Prepare the Dressing: Combine olive oil, fresh lemon juice, salt, pepper, minced garlic, and parsley into a bowl. Mix well to combine all the flavors. Add calamari to the bowl and toss to coat. Serve cold.

Prepare the Mushroom Sauce: In a skillet sauté onions and garlic until slightly brown in color. Add mushrooms, salt, pepper, and sauté until mushrooms have cooked. Add wine and simmer until wine is completely absorbed. Remove from heat and stir in fresh chopped parsley. Next pour over top of the polenta. Place the slices of fontina cheese over the mushrooms and bake at 300° for approx. 15 min. to melt cheese and heat polenta through. Cool and cut into squares and serve.

6 whole artichokes 4 cups seasoned bread crumbs 2 cups pecorino romano grated cheese 1 cup olive oil 2 cloves diced garlic ½ cup fresh lemon juice 3 tbsp. fresh chopped parsley

Prep the Artichokes: Trip the top of the artichokes and cut at the


bottom. Snip all leaves 1/4 in. Place artichoke upside down and press on the bottom to open up the leaves. Prepare the Stuffing: In a large bowl combine seasoned bread crumbs, pecorino romano cheese, olive oil, garlic, lemon juice, and parsley and mix together. Using the breadcrumb mixture stuff the artichoke getting filling in between the leaves until it is tightly full. To Cook: Place stuffed artichokes into a deep roasting pan. Add water ¾ of the way up the artichoke. Cover with foil and bring the water to a boil over medium high heat. Reduce heat to a simmer for 45 min. or until artichokes are soft in the middle – at this point, a toothpick should go easily into the artichoke. Platter and Serve.

2 lbs. baccala fillets 5-6 potatoes, cut into wedges 2 fresh diced tomatoes 1 lg. onion, cut into wedges ¼ cup olive oil

To Prepare the Baccala: Take baccala fillets and place in a large bowl. Cover them with cold water. Place the bowl of baccala in the refrigerator. Let it sit for 48 hours to soften and remove the salt. Be certain to change the water at least every 8-12 hours. To Assemble the Dish: After 48 hours, and you are ready to bake the baccala, preheat an oven to 350°. Lightly coat the bottom of an oven pan with olive oil. Place drained baccala fillets in the pan. Add the wedged onions and potatoes around the baccala. Add the water to the pan. Spread the tomatoes and garlic over top of the baccala. Next add the olives on top. Drizzle olive oil over the potatoes and onions. Bake, uncovered in the oven. The baccala and potatoes will absorb the water in the pan, so check periodically to add more water, if necessary. Generally when the potatoes are done, so is the baccala.

W. R. Satz Parent Support Group Raises Funds Through Clothing Drive STORY SUSAN MURPHY

uring the week of November 11 through 16, the Parents Support Group (PSG) of W. R. Satz School in Holmdel held a clothing drive. Bags of wearable and usable men, women, and children’s clothing, such as coats, shoes and bags, were dropped off at the back of the school. PSG VP’s of Fundraising Christina Pinnero and Robin Andersen explained further. “Every day, the maintenance staff at Satz assisted us by taking in all of the bags and storing them until the truck picked them up the following week. They also helped us load the truck on pickup day. We would not be able to do this without the help of Mr. Todd Dandorph and the rest of the maintenance staff at Satz.” Satz School has been running this clothing drive fundraiser for eight years. “Robin and I have been coordinating the drive for two years. It is held twice a year, typically in November and April, which we feel is the perfect time to clean out closets!” said Christina. In their April 2013 drive, through the generosity of school families, the PSG exceeded their goal and collected over 5,000 pounds of

donations of which they were paid per pound. They work directly with B&B Management in Freehold and their “Cash for Clothes” program. B&B Management owner Bob Bassi explained, “The clothing that is collected is distributed to local thrift shops and in areas in need of clothing in New Jersey, mostly in Monmouth and Ocean counties. We DO NOT shred the clothing for rags. All clean wearable clothing and shoes are reused by less fortunate people and families. The clothing does not end up in landfills.” Bob and Robert arrived to fill the truck on November 20, 2013. It was estimated that close to 4,000 pounds of items were collected. Christina and Robin appreciated everyone’s participation in the clothing drive and shared the following, “It gives us great pleasure to be able to raise funds for our children and their school, while helping local areas in need.” PSG’s next clothing drive fundraiser is tentatively scheduled for April 21, 2014 through April 26. During this week, at scheduled times, bags can be dropped off at door 26 located behind the W. R Satz School.

Newly Built Freehold Office Building Adds Holiday Cheer to Main Street

T

he newly built office building, known as Fox Building, located at 42 East Main Street in Freehold, which opened earlier in the fall of 2013, held a holiday lighting ceremony on November 7, 2013 with local officials. Not your usual ceremony to hold, but Lou Leonardelli of RE/MAX Homeland REALTORS, a Fox Building tenant, came up with the idea to professionally decorate the entire front face of the building. The owners of Fox Building – Victor Scudiery and Edward Ketcham – couldn’t agree more with their tenants’ idea. The new building in town looks amazing all lit up at night, and it’s making the town of Freehold a little bit more festive for the holiday season. When Lou Leornardelli was asked why he wanted to do this, he responded, “I’m just an Old Saint Nick at heart.”

s the holidays approach, most people’s stress levels increase. When you’re going through a divorce, the holidays add immeasurably to the nearly constant stress you’ve been experiencing. And, when you have children, stress can increase geometrically. This is the time when parents must summon every bit of self-control and rationality possible from deep within. Children look forward to holidays. They also love their parents. It is, therefore, essential that both parents put aside their anger and hurt so that the holidays will be as happy and fulfilling for the children as possible. Common sense should prevail. There are no set schedules or requirements for spending holidays with the children. Parents shouldn’t be afraid to adopt schedules that may seem unconventional if they fit with the children’s schedules and the parents’ new lives. What is required, however, is putting the children first. They didn’t ask for the divorce. Most likely they are upset by it. Using the holidays and the children for leverage or to exact revenge on a spouse is cruel. By putting aside your anger for your children’s sake, you will increase the chances that the holidays will provide them with a welcome respite from your divorce. You may even enjoy the holidays more yourself.

Upholding a 147-Year Old Tradition Colts Neck Election Day Feast & Bazaar

C

olts Neck Reformed Church welcomed hundreds of parishioners, family and friends to the Election Day Luncheon, Dinner and Bazaar on November 5. This 147-year old tradition never disappoints those who attend for it combines delicious food, shopping, and plenty of time for socializing! This full day event took place at the Education Building behind the church. Co-chairs Sherre MacClellan and Dawn Potter, who were in charge of the luncheon and dinner, noted that at least five 50 pound bags of potatoes were used, 50 turkeys were roasted and 10 turkey breasts cooked. Preparation for the meals began November 4 when over 60 volunteers arrived to peel potatoes and carrots and chop ingredients for the coleslaw. Help from the community came from Delicious Orchards, Saker ShopRite who donated the turkeys, and Tom Orgo who provided a refrigerated truck. Youth from the church assisted in serving guests and clearing the tables. “It is absolutely amazing how the people at this church care,� said Mrs. MacClellan of the volunteerism and support offered for this event.

The Craft Bazaar was held downstairs in the Community Center. The church’s Craft Group work all year long and enjoy wonderful fellowship time preparing for this particular day. The Christmas Room and Country Store featured hand-sewn items, crafts and holiday decorating items. The Village Bakery offered homemade jams and jellies, pies, breads and cakes. The Bargain Basement displayed everyday items at a great prices as well as many unique household 12/13 items. Displayed in the Quilts, Baskets and Beads Room was a quilt which was made from traditional African block print fabrics purchased in Kampala, Uganda. Jill Niehaus and Ginne Hooper purchased the fabrics during their trip in June 2013 while on a Mission Trip to Africa for the “Change A Life Uganda” program. With the support of the Colts Neck Reformed Church, these women helped to make a difference in promoting financial independence for women through their sewing. Ms. Nichaus machine-pieced the quilt top and Sherre MacClellan did the machine quilting. All proceeds from the luncheon, dinner and bazaar went to the ongoing Benevolence Program of the Church.

Saint Leo the Great School’s Principal Takes on

Read Your Heart Out Principal Challenge

O

n November 13, Principal Cornelius Begley joined hundreds of principals around the country in the Pizza Hut BOOK IT! Read Your Heart Out Principal Challenge. This challenge is designed to celebrate National Young Readers Week and promote reading. National Young Readers Week is an annual event that takes place on the second week of November, and is co-founded by Pizza Hut and the Center for the Book in the Library of Congress. As part of the challenge Principal Begley read all day to the students in Kindergarten to fourth grade from the first morning bell to last. He made the experience fun and unique by designating a western theme which included a “Begley’s Reading Round Up” station set up in the main entrance hall. He also dressed up in a sheriff costume to enhance the western theme and feel. He visited each classroom and read a book to each class. Principal Begley’s interaction with the students was filled with enthusiasm and attentiveness. The students were fully engaged and eagerly answered all questions he had for them pertaining to the story he read.

Principal Cornelius Begley stated, “As a role model to the students I wanted to participate in this challenge to set an example for them and demonstrate Prinicpal Cornelius Begley posed for-photo the importance of daily with second graders at the Begley Reading reading. In addition, the author of the series, Jeff Kinney, will personally autograph one of the books for the winner.

German School of Monmouth County Students Support Hope for Highlands & The Sandy Ground Project – Where Angels Play Daniel Barden Playground

S

tudents at the non-profit German School of Monmouth County presented a $600.00 check to The Sandy Ground Project – Where Angels Play and Hope for Highlands during the ribbon-cutting ceremony for the Daniel Barden playground on October 27, 2013 in Veteran’s Park in Highlands. “Although our families and staff were affected personally by Superstorm Sandy, there were so many families who have lost more. Usually our kids sell Advent Calendars to help us purchase library materials, but we decided to give the proceeds to Highlands who needed it far more,” says Principal Michaela Greco, who resides in Atlantic Highlands. “When we spoke to Hope for Highlands, they told us about the Where Angels Play playground and that perfect fits our mission to have our students

commit random acts of kindness and share what they have with others.”

The New Jersey Firefighters Mutual Benevolent Association continues “The Sandy Ground: Where Angels Play” project, which launched in Sea Bright, NJ March 1st, with a mission to build 26 playgrounds in Hurricane Sandy affected areas while honoring the lives of the 26 angels that were lost at Sandy Hook Elementary School. Eleven playgrounds have been completed throughout the tri-state area. This program was founded and created by the NJFMBA, and was inspired by playgrounds built by our organization after Hurricane Katrina in 2006.

Host the First Father & Daughter Dance

O

n November 4, 2013, Saint Leo the Great Father’s Club hosted the school’s first ever Father and Daughter Dance at Branches Catering in West Long Branch. The event was opened to fathers and daughters from Kindergarten through eighth grade at Saint Leo the Great School. Over 250 people attended the dance. Upon arrival, fathers and daughters lined up to take their keepsake photo with each other. The photos were provided by Memory Keepers. Afterwards fathers and daughters entered the main dining hall where they spent the remainder of the afternoon eating lunch and dancing together. A Touch of Class DJ enticed the crowd with popular music and also provided various types of father and daughter games, along with favors and activities. The afternoon was filled with merriment and laughter. Mr. Gary Krall, a father at Saint Leo the Great School stated,

Oak Hill Academy Earns First Place for Fifth Straight Year at CBA Math Contest

F

or the fifth year in a row, there was a familiar site under the maple tree on the campus of Oak Hill Academy on Monday morning, October 21, 2013 as students arrived to begin their week. It reads: “Congratulations! Oak Hill Academy 1st Place – CBA Math Contest.” The 2013 team, coached by Mrs. Palamara, came in 1st place on October 19! Twenty schools competed in the private/parochial division. Each school sent eight students with the five highest individual scores being counted for the team score. Eighth grader, Harry Jain, won the entire competition, coming in 1st place! It is quite an accomplishment! Also competing were eighth graders: John-Gabriel Bermudez, Luke DeCresce, Evan Semet and Maya Shah; and, seventh graders: Anna Effenberger, Elizabeth Hsu and Dylan Servilla. In a look back over our 33 years of existence, Oak Hill has been fortunate to have much success in this prestigious math contest. Only the top five schools are awarded a trophy.

If possible, eat a low glycemic diet before your “cheat” meal (if you know you will be eating potatoes, pasta, dessert, wine for dinner; make sure your day/days leading up to that is very low glycemic, meaning just vegetables, protein, fruits, salads—leave out the refined carbohydrates!)

Do not skip meals! This will cause a blood sugar crash, forcing you to eat everything and anything! Maintain your blood sugar through out the day, this will make you less likely to crave the higher glycemic foods

Make some healthier options to bring to people’s houses. Ever hear of cauliflowermashed potatoes?

Make most of your plate—salad and vegetables, some turkey or other protein, and dabs of the other goodies (cranberry sauce, potatoes, pasta)

People get so worked up over holiday season and weight gain. My philosophy is to enjoy, but don’t over indulge. You should never deprive yourself. Don’t get upset about the “cheating,” just understand how to fix. Some tips that • can help you enjoy holiday season:

Toyz 4 Kidz: Putting Smiles on Children’s Faces

O

n October 24, 2013, Toyz 4 Kidz changed the lives of over 50 children; patients in St Peters University Hospital. What is a better way to create a smile, than to pay a visit to a hospitalized child and bring hope, happiness and comfort to their hospital bed? Well that’s exactly what volunteers at Toyz 4 Kidz set out to do at Saint Peter’s University Hospital on an October afternoon. After a brief meeting and session of sensitivity training all volunteers began their visitations guided by pediatric nurses. While engaging in friendly conversations with patients, volunteers gave each child a special gift from Toyz 4 Kidz. From the colored ribbon to the individualized cards, all gifts were created with a personal touch and specifically chosen to suit the child’s age and interests. Children and teenage patients were overjoyed to see the group of friendly and happy faces come by and visit and especially to receive a brand new toy of their very own! Volunteers concluded the visitations feeling grateful for have been given the opportunity to bring, happiness and friendship to these delicate children. They left off wishing each infant and child, speedy recoveries and the best of health for the future. The experience at Toyz 4 Kidz is always rewarding for all involved. The children in need get to have what every child needs: a gift a friend, a dream and hope. The volunteers enjoy the priceless experience of contributing to someone’s life in a fun and playful way. Colts Neck PTO’s Holiday Bazaar Offers Something for Everyone – Kids & Adults!

T

he Colts Neck PTO is once again sponsoring its Annual Frosty’s Winter Wonderland Shopping Experience for Kids, along with its Holiday Bazaar on Saturday, December 7, from 9:00 a.m. to 12:00 noon at the Conover Road Primary School at 56 Conover Road in Colts Neck. While the children shop for gifts to give their loved ones outside of peeking adult eyes, moms and dads can shop for gifts of their own. At Frosty’s, middle school children from Cedar Drive Middle School will act as “elves” to assist our young shoppers. Also, Colts Neck Recreation will be on-hand to help our young friends with various holiday-related crafts. A scrumptious bake sale will benefit the Cedar Drive Band Program, and the Colts Neck PTO will have their cookbooks for sale. The PTO will also feature is annual Book Sale during Frosty’s.

Parents and children will have an opportunity to review a large selection of books for all ages that can be purchased as gifts. All proceeds from the Book Sale go directly back to the classrooms at Colts Neck schools. In addition, as of November 14, the following vendors will be on-hand: Pampered Chef, Tupperware, Lia Sophia, Holly Jolly Jams, Handmade Crocheted items, knitted scarves, Stella & Dot, Holly & Wendy Unique Boutique, Arbonne, unique men’s and women’s accessories including jewelry, belts and handbags, and Elite Martial Arts. OPERATION PROVIDE COMFORT – PHASE II It has been one year since the formation of Operation Provide Comfort (OPC) and together we have stood with and provided help to the people of Union Beach through the devastation, the despair, the hope and the hype of FEMA and insurance companies. We have listened to the stories and filmed first-hand accounts of the destruction and survival. We learned about resiliency and bravery from the residents of Union Beach, and we saw how many wonderful people truly care about their neighbors, be they next door, next town, or across the ocean. In truth, Operation Provide Comfort received much more than we could have ever given. As the year passed the scope of OPC’s mission has expanded from supplying material comfort in the form of building supplies to supplying comfort in other ways. We must therefore increase our fundraising effort ten fold. To do that, OPC is forming committees that will concentrate on expanding our outreach efforts to different sectors of the larger community. If you would like to be part of Phase Two of this effort please join, bring a friend; together we can make it possible for the residents of Union Beach to move back to their homes and their beloved town.

Join our campaign in New Jersey, To Help children in need in New Jersey When we look back on our childhood, it’s the simple things that warm our hearts the most. They include a soft kiss on the cheek from our Mother or Father. Hearing our favorite story read to us again and again; and of course hearing the words “I love you” each night while being tucked into bed.

Simple pleasures, but unfortunately not reality for many of the children we serve. Some have been abused or neglected. Others may live with their families in small apartments shared with others. Their bed could be a blanket on the floor. Since 2004 the NJ Chapter has distributed over 125,000 pairs of new pajamas and new books to children in all 21 counties throughout the state. Our goal in 2014 is to be able to reach out to 35,000 children as we celebrate our 10th anniversary. All of the money that we receive will benefit children in NJ. They will receive the gift of a new pair of pajamas, a new book and the knowledge that someone cares about them. NJX Sol scored early in the first half when Ashley Dietrich found the back of the net with a hustle goal, which would end up being the only goal in the match and was Dietrich’s second goal of the weekend. The NJX team held on to their lead for the remainder of the game with strong play from their defenders and midfielders. NJX Coach, Patricia Misciagna said “These two teams have had a great rivalry since U-8 so it seemed fitting that we were up against Jackson in the State Cup Finals. Whenever we play them, it is an exciting game that can go either way and we are thrilled to have gotten the win this time.”

To make it into the finals on Sunday, NJX Sol had to defeat a strong PDA Nova team in the semifinals on Saturday. Again, NJX’s Ashley Dietrich scored early in the game putting NJX up 1-0. The game remained fairly even thereafter with PDA scoring the equalizing goal in the second half to put the game into overtime. During overtime, NJX kept pressure on PDA’s defense when, with a little over 1 minute left in the second overtime, there was a scramble in front of the PDA goal and the ball popped out to Noelle Rustico who scored the game winner for NJX Sol. “All of the girls had a great weekend and a great tournament. They all work hard, hustle and support each other.” Misciagna said. “One of the things that I am most proud of is our defense. They only gave up one goal in the entire State Cup Tournament. Our defenders, led by Caitlyn Decker, Lauren Dunn and Sophia Romano and our goalie, Katelyn Reid, were difference makers for us this weekend.”

On Wednesday, December 11, the Co-Directors of Red Bank Birthright, JoAnne Mallon and Karen Fitzgerald are going to speak to members about how valuable these donations have been. They will give a presentation describing Birthright’s mission and services and display an example of a layette that is given to new mothers. They will also cite various “success stories” of anonymous clients. A question and answer period will follow. What a perfect connection for this particular meeting!
