The Black Boy in Oving has hit some hard times over the last 5 years, the pub has had no fewer than four different owners and some lengthy periods when it has been closed. New owner Paul reopened the Black Boy in October, good news because he is here to stay. Taking on struggling establishments giving them time to develop a new sense of purpose and identity is Paul’s forte. You only have to look at transformation of The Eight Bells in Long Crendon. Paul turned around its fortunes in the face of stiff competition and now it is positively thriving. Paul’s establishments are pubs not restaurants, each serving quality foods and drinks at affordable prices. Listening to customers, providing them with a service they want that is relaxed and welcoming is the plan for the Black Boy – somewhere that is a firm favourite with locals and visitors alike. The Black Boy is nestled by the church in the picturesque village, with its ancient beams, tiled floor, open fires, huge garden and stunning views over the Buckinghamshire countryside making it a perfect place for a relaxing bite to eat, lunch, dinner or simply to spend time with friends and family over a drink. The Black Boy is a freehouse which means Paul can work outside of the constraints of a larger brewery so he can be more adventurous and avoid the obvious so customers will find a variety of drinks, lager such as Cornish Korev, Czech Budvar, an ever changing choice of real ales the majority of which come from the local area, Pickrings Gin from Edinburgh, a superb cider and soft drinks from Ashridge in Devon, a fantastic wine choice plus ‘Daws Hill’ an English sparkling wine. The food menu is mouth-wateringly seasonal plus the usual classics any good pub should offer all complemented by daily specials. Customers can come in for nibbles, sharing plates or a full dining experience not forgetting the fantastic traditional Italian thin crust pizzas. Customer service is another important ingredient for Paul, he really does appreciate a smiling welcome at the table or behind the bar which is what awaits all his customers at The Black Boy. Topical advice from Buckingham Garden Centre’s, Chris Day
Warmer days gently diffused with late spring and early summer colour really cannot be beaten in the garden. You can almost ‘smell’ the plants growing at this time of the year, so that means there’s plenty to be getting on with. ROUTINE Prune many spring-flowering shrubs such as Forsythia, Kerria, Philadelphus, Ribes and Weigela after flowering. Stake tall or floppy plants such as developing Delphiniums and Paeonies. Cut lawns at least once a week. Collect rainwater and investigate ways to recycle water for irrigation. Keep the hoe moving through the borders to help control weeds. Remember the adage - one year’s seeds is seven years’ weeds. Catching weeds before they have a chance to flower and set seed is essential. You can always spot treat the likes of Dandelions and Hairy Bittercress with Roundup Weedkiller Gel. Application couldn’t be easier; simply touch the weed and the gel adheres to the leaf so is perfect to use on weeds in flower beds, vegetable plots and other awkward places. VEGGIES Harvest Lettuce, Radish, other salads and early Potatoes. Pinch out sideshoots on Tomatoes grown on the single cane cordon system. If you are growing bushy types then there is no need to de-side shoot your plants as the more shoots develop, the larger your crop will be! Plant seedlings or sow directly in the soil by the end of May for early autumn crops like Broccoli, Brussels sprouts, Cabbage, Carrots, Cauliflower, Endive and Radicchio, Kohlrabi, Swiss Chard and Turnips. Pick Peas to help encourage more pods. Plant out tender herbs like Basil, Coriander, Dill and Lemon Grass. Continue to establish Chives, Oregano, Parsley, Sage, Rosemary and Thyme where you have gaps in your herb patch. ALL CHANGE No sooner we were enjoying the delights of Tulips, Pansies, Wallflowers, Violas and Forget-Me-Nots and its all change as the summer seasonal plants keep up the gauntlet. Good reliable summer bedding plants include Cosmos, Begonias, French Marigolds, Nicotiana, Petunias and Zinnias. If you are revamping your pots and baskets remember to use new multi-purpose compost. One of the best on the market, J Arthur Bower’s Masterblend Compost, a peat-based media contains sufficient nutrients for up to six months (normally composts have sufficient nutrients for around 4-6 weeks. This compost also has some John Innes added so to improve the weight and a wetting agent to help moisture retention through the summer months. UNDER GLASS Open greenhouse vents and doors on warm days. Shade greenhouses to keep them cool and prevent scorch. Improving the humidity in the greenhouse by damping down should be carried out mid-morning and again in the early afternoon to add valuable humidity to the air. If not already done, position some Agralan Yellow Sticky Traps to help catch whitefly, aphids and other pesky sap-sucking pests. However, do position the trap well out of hairs (harms) way! HEDGES Check that there are no nesting birds before clipping hedges. Newly planted hedges need to be watered regularly to keep them growing well. Second and third year hedges would benefit from a feed to help stimulate some new growth and to promote more structure. Apply Vitax Q4 (non-organic) or Blood, Fish & Bone fertiliser if you garden organically. A good handful along each 1m run will be sufficient.

APRIL - MAY 2016 ROSES Preventatively spray all roses with Roseclear Ultra to help discourage blackspot, mildew and aphids from spoiling your display this year. Once the early flowering shrubs have finished flowering then is the time to trim these back to help maintain a good shape as well as encourage better flowering next year. It would be beneficial to feed around the base of these plants to help the process.
TROUBLE SHOOTING After the mild winter, slugs and snails look set to be a problem this year. Be prepared to protect your plants using copper tape (pictured around a barrel containing strawberry plants) around slug vulnerable plants especially Hostas, Strawberries and young vegetable plants. Alternatively pet-friendly slug pellets can be used or Ferrous sulphate based slug killer will help kill the slugs below the surface or maybe consider using nematodes to deliver a slug-lethal parasitic infection. Remember one of your greatest allies is birds – provide plenty of flat stones so they can practice their effective snail bashing techniques! Watch out for damaging Viburnum Beetle and Lily Beetle grubs. At first signs of attack apply Provado Ultimate Bug Killer to the foliage as this is a highly effective systemic insecticide. Always follow the instructions as directed on the packaging and always use chemicals wisely. LAWNS Remember to regularly mow lawns to keep them in shape - removing ‘little and often’ is the key to a good quality sward. Continue cutting lawn edges with a half-moon edging iron to ensure they are neat. Ensure new lawns (either from turf or seed) do not dry out during hot weather, as turves will shrink and fail to knit together causing cracks and gaps to appear. If persistent broad-leaved weeds, such as Dandelion, Plantain, Common Mouse-ear and White Clover are still proving a nuisance then control them with an application of Weedol Lawn Weedkiller. This highly effective lawn herbicide can be applied from April to September. Do follow the instructions carefully on the packaging for best results. BULBS Lift and divide overcrowded clumps of Daffodils and other spring-flowering bulbs. Summer bulbs such as Dahlias, Cannas, Freesia, Gladioli and Lilies can now go into their final planting locations. Make sure they are planted into some wellprepared soil embellished with a small quantity of Vitax Q4 fertiliser or try some Westland Gro-Sure 4-in-1 Planting Magic Mix.

£40K A new chapter... For the last 107 years East Claydon School has been at the heart of our beautiful rural community. Over this time the school has existed in various incarnations, from three classrooms and 120 children with an age range from 4 to 14, to the thriving Infant and Pre-school that it is today. But over the next two years East Claydon will be changing again, to secure its place in our community for the next 100 years. This is an exciting time in our history. East Claydon is known for its warm and caring environment with a focus on individualised learning. The excellent staff-to-pupil ratio and small school ethos mean that children leave East Claydon at the top of their game, confident in their abilities both academically and socially. Now we want East Claydon to offer these opportunities to all primary school-aged children in the local area by extending our age range from 2-7 to 2-11 years and becoming a Church of England Primary School. To enable us to accept our first Year 3s in September 2017, we need to raise £40,000 to fund a Key Stage 2 teacher for two terms and to make accommodation available for Years 5 and 6. Fundraising is starting in earnest and we are asking for the support of our community both in achieving our fundraising goal and in helping us to spread the word that East Claydon is changing. New York City New York is one of the most magical places on the planet. A complete concrete jungle but wonderful in every way! Neil and I recently visited New York, but it was on the coldest weekend since 1994. It reached zero degrees Fahrenheit! I have to say I don’t think I have ever been quite as cold as I was that weekend, however we still had the most wonderful time, because, well, we were in New York City! Famous for fashion, nightlife, art, food, and theater, New York is the heart of the world. Every culture is represented here, and there’s always something to do. You can spend a lifetime exploring and never really see it all.
Things to do whilst in Manhattan Take the Staten Island Ferry – The queue to see the Statue of Liberty can be anything up to 2 hours! Not appealing? Well, walk a few blocks to the Staten Island ferry. The free ferry will take you across the harbour and give you a good view of both the Statue of Liberty and the city skyline. The ride takes about 20 minutes. Walk the Brooklyn Bridge – Walk across the Brooklyn Bridge to experience an interesting view of the New York skyline and harbour. It’s a long walk but good food

and drinks (like the brewery) await you on the other side. Take a walk around Central Park – A great way to relax in the city and leave behind the crowds is to spend the day in Central Park. It’s free, there are lots of little paths to walk, and, since it covers over 40 blocks, it’s easy to spend hours upon hours wandering around. During the summer months, there are often free concerts and theatre productions in the park too.
Visit Radio City Music Hall – This timeless testament to entertainment has captivated visitors since the 1930s. See a show on Broadway! There are many great shows here from musicals to Shakespeare to offbeat shows. See the Empire State Building – Get a bird’s eye view of the city from the top one of the tallest buildings in the world. Walk the High Line – Made from a converted train track, the highline is a new

urban park on the west side of NYC. The area covers eight blocks and is extremely popular. Day or night, the park is filled with people hanging out, running, eating, walking and relaxing. Climb the Rockafella – want a view of the Manhattan skyline with the Empire State Building in it? Visit the famous Rockafella building.

The New World Trade Building – The One World Observatory. To me, this is by far the best view of Manhattan, Brooklyn and New Jersey. You can see for miles! The whole experience was wonderful and I would thoroughly recommend.

The Twyford Pantry Happy New Year and welcome to Spring! Hope you all had a great Easter and the Mothers and Grandmothers out there had a lovely day on March 6th and were spoiled with some little treats from your loved ones. I have started up a ‘Cook Book Supper Club’ this year with some friends to force me to use my brand new cookbooks that are sat on the shelf, often looked at but never used! Each couple takes it in turns to cook 3 course dinners from an unused book and everyone has to guess who the author is – it might be something

you want to try to use your books too. Anyway, on with the recipes.. Love Tina x Heat mushrooms in a frying pan with other butter until tender and liquid comes out. Drain them and season with salt. Put them together with chicken into the casserole dish and put on lid. Now for the fun and messy bit. Put flour in a bowl with little water to make a paste. Spread this around the edge of the casserole and over the edge of lid to create a seal. Bake in oven for 20 mins. Serve at the table – break open the lid, the smells will be amazing and service with fresh tagliatelle pasta with a little lemon zest over the top.
(just done this for my dinner party and it was YUMMY and so easy!)
Serves 4 - You’ll need a heavy lidded casserole dish Preheat oven to 180c/fan 160c/350f/Gas 4
Oven-roast Salmon with Mustard and Parsley Crust (serves 4) (from Lorraine Pascale’s ‘Home Cooking Made Easy’)
Ingredients
Plump free range chicken cut into 8 pieces (butcher will do this for you) 60g clarified butter (melted with milky deposits strained out) 16 baby onions or small shallots 300g chunky peeled carrot sticks 1 bottle Riesling (Aldi do a great one but you can get it anywhere) 80g of butter – yes more! 750g wild mushrooms cleaned 150g flour to seal the lid
Method
Season the chicken pieces. Heat clarified butter in casserole dish, put in chicken pieces and cook for few mins, turning occasionally until evenly coloured. Remove the breasts, add onions and cook with remaining chicken for 7 mins longer. Remove chicken, tip off most of the fat and add carrots and Riesling. Cook gently until reduced by ¾.

Preheat the oven to 200c/180c fan/390f/Gas 6
Ingredients
100g dried breadcrumbs (either make your own or you can buy them from supermarkets) 4 skinless salmon filets 1.5 tbsp soft brown sugar zest of 2-3 limes and juice 2 tbsp Dijon mustard knob of butter bunch fresh parsley chopped salt and freshly ground black pepper to taste

In a small bowl, mix the breadcrumbs, sugar, lime zest, butter, mustard and parsley together with the seasoning. Place the salmon fillets in an ovenproof dish. Divide the topping between the four salmon fillets and press well on top.
Ingredients
225g sweet shortcrust pastry 225g pecan nuts 4 eggs 175g caster sugar 300ml golden syrup Pinch of salt Bake for 10 to 15 minutes depending on the salmon Few drops vanilla essence or ½ tsp vanilla paste thickness and your doneness preference. You can squeeze lengthways over the lime juice if you wish at this point. Serve with seasonal roasted vegetables or new potatoes and broccoli – or whatever you wish!
Pecan Pie (serves 8) (from Gary Rhodes ‘Cooking for Friends’)
Method
Roll out the pastry and use it to line a loose bottomed 8” flan tin. Line the paper with greaseproof paper, fill with baking beans or uncooked rice and bake for 15-20 minutes. Remove the filling and paper and leave to cool. Increase oven temperature to 200c/180c fan/400f/Gas 6 Beat eggs lightly in a bowl, whisk in the sugar, syrup, salt and vanilla. Stir in the pecan nuts. Pour the mixture in the pastry case and cook for 10 minutes. Reduce the oven temp to 180c/160c fan/350f/Gas 4 and bake for further 35 minutes until set. Cover with foil if the edges start to scorch.
Preheat oven to 190c/170c fan/375f/Gas 5

Take out of oven and allow to cool before slicing. Serve warm with cream or crème fraiche as a pudding or with a cuppa for an afternoon treat.
Tips From The Jar
If you’ve forgotten to take butter out of the fridge for a recipe – grate it – it will cream a lot easier.
•
To peel a lot of garlic cloves at once put them under a plate or bowl and press down to split the skin and roll around a bit, put in a container with a lid, shake hard, open up and hey presto – pick out the peeled cloves
•
Heat pasta up more evenly in the microwave by leaving a gap in the middle of the plate
or bowl.
•
Put elastic bands around a chopping board to stop it sliding about to make it safer.
•
If you don’t have a cherry stoner – put the cherry on a neck of a bottle, stalk side up (stalk removed) push a chopstick through it, stones into the bottle and pitted cherry on top! Beware it might spray a bit!

All about May Day... Many folklore customs have their roots planted firmly back in the Dark Ages, when the ancient Celts had divided their year by four major festivals. Beltane or ‘the fire of Bel’, had particular significance to the Celts as it represented the first day of summer and was celebrated with bonfires to welcome in the new season. Still celebrated today, we perhaps know Beltane better as May 1st, or May Day. Down through the centuries May Day has been associated with fun, revelry and perhaps most important of all, fertility. The Day would be marked with village folk cavorting round the maypole, the selection of the May Queen and the dancing figure of the Jack-in-the-Green at the head of the procession. These pagan roots did little to endear these May Day festivities with the either the established Church or State. In the sixteenth century riots followed when May Day celebrations were banned. Fourteen rioters were hanged, and Henry VIII is said to have pardoned a further 400 who had been sentenced to death. The May Day festivities all but vanished following the Civil War when Oliver Cromwell and his Puritans took control of the country in 1645. Describing maypole dancing as ‘a heathenish vanity generally abused to superstition and wickedness’, legislation was passed which saw the end of

village maypoles throughout the country. Dancing did not return to the village greens until the restoration of Charles II. ‘The Merry Monarch’ helped ensure the support of his subjects with the erection of a massive 40 metre high maypole in London’s Strand. This pole signalled the return of the fun times, and remained standing for almost fifty years. Maypoles can still be seen on the village greens at Welford-on-Avon and at Dunchurch, Warwickshire, both of which stand all year round. Barwick in Yorkshire, claims the largest maypole in England, standing some 30 meters in height. May Day is still celebrated in many villages with the crowning of the May Queen. The gentlemen of the village may also been found celebrating with Jack-in-the-Green, otherwise found on the signs of pubs across the country called the Green Man. May Day traditions in southern England include the Hobby Horses that still rampage through the towns of Dunster and Minehead in Somerset, and Padstow in Cornwall. The horse or the Oss, as it is normally called is a local person dressed in flowing robes wearing a mask with a grotesque, but colourful, caricature of a horse. In Oxford, May Day morning is celebrated from the top of Magdalen College Tower by the singing of a Latin hymn, or carol, of thanksgiving. After this the college bells signal the start of the Morris Dancing in the streets below. Further north in Castleton, Derbyshire, Oak Apple Day takes place on 29th May, commemorating the restoration of Charles II to throne. Followers within the procession carry sprigs of oak, recalling the story that in exile King Charles hid in an oak tree to avoid capture by his enemies. It is important to remember that without ‘The Merry Monarch’ May Day celebrations might have come to a premature end in 1660.
