Welcome Welcome to the August and September issue of Community Contact magazine! We are very nearly hearing the patter of tiny feet here at Community Contact HQ! If you want to share any exciting news you have with the local community we will do our best to include it in our magazine or on our social media – simply email me laura@communitycontact.co.uk. COMMUNITY CONTACT MAGAZINE Open Air Foods was set up by the Holden & Trotter family in 2012 retailing artisan cheese and local produce in the Home Counties. Today, we are focused on retailing fantastic hand made cheese and artisan produce online, at local markets & in our shop; producing seasonal catering at weddings, private functions and parties and attending festivals with our fabulous outdoor street food. We have also recently launched our secret supper clubs in and around the Buckingham area. We decided to set up our own business after working in the hospitality industry for a number of years. We were tired of seeing overcooked burgers, soggy white bread and pig roasts at outdoor events & weddings. We became frustrated at the lack of food provenance in our local supermarket with not knowing where our food had been sourced and prepared. We therefore decided to set up Open Air Foods with the aim of serving exceptional hot food at events and retailing a unique range of produce online and at local markets. We believe that happiness is handmade. Wondering what to cook for a mid week suppers?
Middle Eastern Aubergine Serves 2
This recipe is adapted from Simplicious by Sarah Watson. I heard about Sarah when Daz and I were back in Oz this January catching up with friends and family. She is pioneering in trying to get Australians to reduce their food waste and use unloved produce and scraps. She has also removed any refined sugar from her diet too - what a woman. I have cooked this dish a couple of times now and tweaked it to make it more to our liking e.g a little more dairy and more robust flavours. It is utterly delicious and I have included some wine pairings too. Enjoy! 1 Large Aubergine / 3 Small Aubergine 2 tbsp of coconut oil (if you don’t have this in your cupboard, I urge you to go out and buy a jar now. It is very versatile, has a high smoking pot so great for frying, can be used for dry skin too!) 250g mince - lamb or mince works brillantly Spices - 1 tsp all spice, 2 tsp ground cinnamon, 2 tsps of cumin (I freshly grind the cumin and it makes such a big difference to the flavour) Herbs - 1/2 bunch of fresh mint & 1/2 bunch of parsley 4 tbsp pine nuts (I also use pistachios) Grated cheese - A good melting cheese is perfect here so Mayfield / Old Winchester / A strong rind of any hard cheddar

AUGUST - SEPTEMBER 2016 Pre heat the oven to 200C and pierce the aubergines with a fork and then cut in half length ways. Place them in a bowl and drizzle in oil, sprinkle with salt and pepper and massage gently so they are covered in the oil/salt combo. Place them face down onto the baking tray and pop in the oven for 20 minutes or so until they are tender and allow to cool so you can scoop out the flesh, leaving 1cm or so as a border. While the aubergines are cooking, open a bottle of wine. In my case either Rioja for a red or Riesling for a white and treat yourself to a delicious glass whilst you get the frying pan out and over a medium heat add the coconut oil. Allow the oil to dissolve and warm through and then add your onion and mince for 3-4 mins so it browns. Add the spices and cook for a further 1-2 minutes and enjoy the beautiful smells. Add the chopped aubergine flesh, heavily season and add the fresh herbs, yoghurt and pine nuts and take off the heat. Spoon this delicious mixture into the aubergine skins and add some grated cheese and any fresh herbs that you still have leftover. Wrap in tin foil and bake for 10 minutes and then remove the foil and cook for another 5 minutes. The top of the aubergines should be bubbling away and steaming hot! While the aubergines are in the oven, steam your beans until al dente and then plunge straight into cold water and add to your salad leaves. Put your halloumi onto a griddle pan and brush with oil and griddle over a high heat with additional pine nuts. The halloumi should be lovely and brown and crispy. Mix everything together and add in some Womersley Vinegar. I would recommend Raspberry Vinegar for this particular recipe. Serve the aubergines with any additional herbs and yoghurt and enjoy!

A Trip to Paris Everyone who visits Paris for the first time probably has the same list of popular attractions to visit: The Louvre, Notre Dame, The Eiffel Tower, etc. We have some tips here for things to see and do and places to eat at in Paris. Make sure you leave some time to wander the city’s grand boulevards and eat in as many cafes, bistros and brasseries as possible. There are a huge number of amazing buildings and museums to visit and don’t forget the shopping—whether your tastes run to Louis Vuitton or Les Puces (the flea market), you can find it in Paris.

The Louvre The Louvre Museum is the most iconic and recognised art gallery in Paris for its miles of priceless art and world-famous collections, including the enigmatic Mona Lisa and the Liberty Leading the People. Don’t miss its stunning 12th century architecture and the contemporary glass pyramid in the courtyard, either.

Paris Opera House The Paris Opera House is one of the best examples of Beaux Arts architecture in Paris. Its stunning façade, marble staircase and decadent décor make it one of the most impressive buildings in central Paris. It even inspired Gaston Leroux’s hit Phantom of the Opera.
Palace of Versailles Once the lavish home of Louis XVI and Marie Antoinette, the Palace of Versailles is one of the most beautiful historic buildings in the world. Its opulence is unmatched and the rococo and Renaissance styles throughout make it one of the most impressive Paris sights. Make a day of it and explore the vast gardens and estate, too.

Bouillon Racine Inconspicuously situated in a quiet street, this heritagelisted 1906 art nouveau ‘soup kitchen’, with mirrored walls, floral motifs and ceramic tiling, was built in 1906 to feed market workers. Bateaux River Cruise Experiencing Paris by river is a magical experience and a river cruise along the Seine will open your eyes to a side of Paris you won’t have seen. See the Notre Dame, pass under the love lock bridge and past the Orsay Museum clock.
Museum of Air and Space Want to see the prototype for the Concorde, rockets and air balloons? Well you can at the Museum of Air and Space in a hanger, outside Paris. A fascinating museum that displays everything aviation-related from the 16th century to today.

Paris Bus Tour See the Paris sights the easy way – a Paris Bus tour is a great way to experience Paris and familiarise yourself with the city. Sit on the top deck and pass the Louvre, the Eiffel Tower and the Arc de Triomphe and hop on and off as you choose.

Topical advice from Buckingham Garden Centre’s, Chris Day
It’s all about the late show as autumn beckons in our gardens; however that’s no reason to slow down in the garden! The cooler nights help home the scents and heavier dew fails heralds the third season. The mellow growing conditions are perfect for many plants to put on their final flurry of the season - so enjoy!
PLANTERS
and baskets will need changing over from summer to winter plantings shortly. Replace the used compost with a multi-purpose compost such as Levington’s MultiPurpose and add bulbs to pots in so-called lasagne planting layers starting with Tulips at the bottom followed by Daffodils and Narcissus and then finally Crocus and Muscari (Grape Hyacinths) nearest the top. Leave at least 7cm (3in) at the top clear of bulbs enabling you to plant the top of the pot with a selection from winter-flowering bedding plants such as hardy Violas and Pansies.
LAWNS
Time to get them back into shape after the comparatively dry and warm summer. Mow less frequently, and raise the height of cut as the growth rate of the grass slows down. This will help the lawn to withstand the last of the warm, dry weather, and also keep it resistant to treading as the wet weather arrives. You can harden your lawn up for winter by applying an autumn lawn feed, which is high in potassium. Do this after scarifying and aerating (pictured) but before applying a top dressing. Do not give summer feeds that are high in nitrogen as this will only result in weak, soft growth, which will be prone to disease in the autumn weather. This is also an ideal time to create a new lawn either from sowing grass seed or laying turf. Make sure the area is completely clear of annual and perennial weeds before preparing the soil for seeding and laying turf.
VEGGIES
Sow Broad Beans and hardy Peas for early crops next year – cloche cover may be required for protection. There is still time to sow Spring Cabbages, Japanese Onions, Turnips for green tops, winter Lettuces, Spinach, Endive, Corn Salad, Land Cress and baby salad leaves. Harvest Pumpkins and Squashes and leave them in a sunny but dry location to allow their skins to harden. Then store them in a cool, dry, dark place. Lift Potatoes, Carrots and Beetroot, but leave Parsnips until they have been frosted. Harvest Onions and bend over the leaves of others to help prevent seeding and help hasten ripening. Dig up remaining potatoes before slug damage potentially spoils them. Remove Tomato leaves to expose unripe fruit. Pick and store herbs, collect some seeds for next season where possible. Pot up some tubers of Christmas potatoes (early varieties) as soon as they’re available to a crop later in the year!
FRUITS
Pick Apples, Pears and Grapes when they are ripe. Store unblemished apples and pears and cook or eat the remaining. However, do keep an eye on your fruit trees and remove any rotting fruits/damaged fruits caused by increased wasp activity as these may spread disease. Keep Strawberry runners under control. If you have clay soil, now is the best time to improve it before it becomes too wet or frozen. Consider sowing some ‘green manure’ to help improve the fertility as well as the quality of the soil. Good ones to consider sowing include Alfalfa (to help fix nitrogen), Mustard (excellent fast growing manure), Fenugreek (great to

AUGUST - SEPTEMBER 2016 improve humus content) and Winter Tars. Tidy up around your strawberry plants, removing dead leaves and old straw. This improves air circulation and reduces the risk of pests and diseases building up.
QUICK TIPS
Make sure your later flowering Michaelmas Daisies, Heleniums and Rudbeckias are well staked before the early autumn gales potentially hits them. Collect and sow seeds from perennials and hardy annuals. Net ponds before leaf fall gets underway. Now is the perfect opportunity to autumn-sow hardy annuals such as Cornflowers, Poppies and Love-in-a-Mist for a bumper display early next summer. Incorporate organic matter such as well-rotted manure or compost to break up the soil and improve drainage. Prune your climbing roses and rambling roses once they have finished flowering and tie in any new growth. Re-use the compost from your annual container displays as a soil improver, or to mulch around your perennials plants, trees and shrubs. However, do check to see that’s there are no vine weevil grubs present in the compost as you don’t want to be moving these around the rest of your garden! Consider using biological control for Vine Weevil grubs in pots which may contain vulnerable plants such as Fuchsia, Primula and Heuchera. Alternatively, you can drench the compost of pots containing susceptible plants with Bug Clear Ultra Vine Weevil Control.

Our Apple and Bee Weekend over Saturday 24th & Sunday 25th September goes from strength and this year the Honey Show now includes Beekeepers from the whole of Buckinghamshire! We’re also delighted to have Gerry Edwards (pictured), top RHS fruit expert and judge on hand over both days identifying your mystery apple varieties over both days. The Bee & Honey Show will be on Sunday and there will be numerous classes for judging which you will be able to see, as well as live bees in an observation hive, a beekeeping information desk and samples of hive products to enjoy. Also promised, there will be skep making, hive building and soap making amongst other activities. New this year there will be a couple of talks which will be open to all Garden Centre customers. The Talks will take place in our ‘Goods In’ Tunnel located close to our Poultry Centre. We’ll keep our website and Facebook pages updated with the latest information from mid July onwards.

HOW WILL HOUSE PRICES BE AFFECTED IN WINSLOW? With the media reporting uncertainty creeping into the market following BREXIT, what a perfect opportunity to inform everyone about our thoughts in the property market and how BREXIT may or may not affect us locally in and around Winslow. Do we see house prices dropping? No we do not. We expect prices to continue to increase, albeit at a slower rate than we have seen over recent years. In the market we are seeing ‘over valued’ or ‘over priced’ property stalling and becoming stagnant, needing to be reduced before eventually finding a buyer. This can give the appearance of prices dropping. The truth is, we are still seeing levels of demand outstripping supply and fundamentally the housing market in our area remains strong. We are however starting to see signs of an increase in supply, which in many respects makes for a more healthy market and we expect this to continue.
AUGUST - SEPTEMBER 2016 Winslow. This has undoubtedly already had a positive effect on house prices in Winslow, particularly with one and two bedroom houses and flats from investor buyers and first time buyers who we have seen taking advantage of low mortgage rates to get themselves on the property ladder. We are finding that there are a number of people thinking/wanting to sell but are keen to wait until the train station eventually opens. This is keeping stock levels low in Winslow giving people a real opportunity to sell now, for a strong price as competition is almost non-existent in the town. With this being said, if you are considering selling your home, we would love the opportunity to discuss and hopefully help. Why not pop in to our office in the Market Square to have a chat. The Twyford Pantry I’m pleased to see we have had more sunshine since the last issue, let’s hope by the time you receive this, the sunny weather is still with us! It’s been a busy couple of months for me with the (some secret) preparations for my partner Leo’s 40th celebrations, so much so my new Kmix Mixer is still brand new and untouched! As always, lots of food and drink have been enjoyed, so I have decided to share with you the recipes I used for his Birthday BBQ! We enjoyed everything from a mammoth roast gammon to fish finger sandwiches over the weekend, finishing with an 8 course taster menu at award winning (and kitchen home to Masterchef professional finalist Nick Bennett) Restaurant 56 at Sudbury House Hotel in Faringdon (something extra special) We are pictured here with the Head Chef Andrew Scott, who’s to be on the next Great
Insanity Burger
Method For the best burger, go to your butcher’s and ask them to mince 800g of chuck steak for you. This cut has a really good balance of fat and flavoursome meat. Divide it into 4 and, with wet hands, roll each piece into a ball, then press into flat patties roughly 12cm wide and about 2cm wider than your buns. Place on an oiled plate and chill in the fridge. Next, finely slice the red onion, then dress in a bowl with the vinegar and a pinch of sea salt. Slice the gherkins and halve the buns. Finely chop the lettuce and mix with the rest of the burger sauce ingredients in a bowl, then season to taste. I like to only cook 2 burgers at a time to achieve perfection, so get two

Ingredients 800 g minced chuck steak Olive oil 1 large red onion 1 splash of white wine vinegar 2 large gherkins 4 sesame-topped brioche burger buns 4-8 rashers of smoked streaky bacon 4 teaspoons American mustard Tabasco Chipotle sauce 4 thin slices of Red Leicester cheese

Moroccan-style Lamb Burgers
600 g quality lamb shoulder, minced Olive oil 6 soft rolls , halved 6 heaped tablespoons natural yoghurt 1 heaped tablespoon harissa paste 1 lemon , juice of Extra virgin olive oil 1 handful fresh mint leaves For the dry rub 1 teaspoon sea salt 1 teaspoon black pepper ½ teaspoon cumin seeds
Ingredients Method For the dry rub, pound all the ingredients in a pestle and mortar until combined. Divide the minced lamb into 6 pieces. Pat each piece into a ball then squash into a burger, about 1.5cm thick. Pat some of the rub all over the burgers then drizzle over a tiny bit of olive oil. Cook on your barbecue or in a griddle pan for 6 to 7 minutes each side, or until done to your liking. Don’t worry if you think they look burnt, that’s
just a combination of the spices, the caramelising lamb fat and the smoke. When the burgers are nearly ready, toast the buns on the side of the barbecue or griddle. Spoon the yoghurt into a bowl and dollop the harissa on top. Squeeze over a little lemon juice to loosen, then ripple the harissa through the yoghurt and drizzle with extra virgin olive oil. To serve, spread some harissa yoghurt

Add some more yoghurt, then squeeze the remaining lemon juice over a few mint leaves and place on top. For the salad, place the lettuce leaves, mint and edible flowers in a bowl, dress with the lemon juice and extra virgin olive oil and tap over the pomegranate seeds to add little capsules of sweetness. Keeping pets safe in autumn The arrival of autumn brings a new set of challenges to pet owners, especially when the clocks go back, so here are some tips for keeping you and your pet safe and well as the nights draw in.
The change in seasons can bring on skin conditions, breathing issues, aching joints and allergies, make sure you are carefully monitoring your pets health. If you notice any unusual changes seek veterinary advice. Slug pellets are poisonous to all pets so avoid using them in your flowerbeds and pots. If consumed by your pet it may cause twitching, fitting, diarrhoea, vomiting, excessive panting, uncoordinated walking, muscle tremors, hypothermia and many other symptoms. If your pet is showing any of these signs take your pet to the vet immediately. Similarly anti-freeze and screen-wash have the same
dangerous life threatening effect on pets as slug pellets do, so if you are getting your car ready for winter remember how deadly they are to animals. What’s worse is that there is a substance in anti-freeze and screen-wash that is highly palatable, so keep them away from your pets. This time of year encourages rodents to seek warmer shelter so do not leave any rodenticides down in garages or sheds where your pet could get at them as these can also be fatal if eaten. The Firework season seems to be getting longer each year and can be a stressful time for all pets in different ways. Please take a look at NAWT’s advice on Fireworks if you need further information. Problems with fleas and ticks both increase over the autumn period, with a peak when people start turning on their central heating. Make sure you use flea and tick control and check your pets coats often. If a tick is found make sure to use the correct tick removal kit. The A-Class certainly looks attractive, and it also features a classy looking interior, with loads of cutting edge technology and cars are powered by a range of efficient petrol and diesel engines. The model most recommended is the A180d diesel for most buyers, as it offers reasonable performance with low running costs. Buyers can choose from SE, Sport, AMG Line and AMG specifications, as well as the A45. The top-spec models get bigger wheels and stiffer suspension, so be aware of what you’re buying if you’re looking for a more comfortable ride.
