The baby lambs are in the fields and the spring flowers and blossom are in full bloom, I do love this time of year! How many of you have given up chocolate for lent? We also have our very own baby due to be born on 7th April, on Neil’s dad’s birthday. Wouldn’t it be lovely if he or she made an appearance on their actual due date! We will have to update you all in our next edition! This issue also looks at local Easter Egg Hunts for the children, an update from the Buckingham Literary Festival and our regular Twyford Pantry Easter Special full of delicious recipes. HOW ONE LOCAL COUPLE IS POSITIVELY CHANGING THE LIVES OF THOUSANDS Across the world many charities try to make a difference but often fail to achieve more than a short term impact, leading many to question whether long-term sustainable change is actually achievable. However, at Ripple Africa we know that it is. Founded in 2003 by Buckingham couple Geoff and Liz Furber, Ripple Africa is improving education, healthcare and the environment in Malawi. With only three staff in the UK, the charity employs 150 Malawian staff and works with 8,000 local Malawian volunteers to help local communities find simple, low tech and innovative solutions to the problems they face. We work with them on a long term basis to achieve amazing results. We started with education and healthcare initiatives in the area near our headquarters in Nkhata Bay District. • We run eight pre-schools providing foundation education and a meal for 800 children per day • We support six local primary schools and we’ve built and support a secondary school which now has electricity, a girls’ dormitory and computer laboratory • We run adult literacy classes and a children’s reading club, and have built and fund a community library • We support 120 disabled children and their families • We run a sexual health and family planning initiative However, Ripple Africa’s biggest achievements are in environmental conservation. The ever-increasing population is having a devastating effect on Malawi’s natural resources. Overfishing in Lake Malawi has decimated fish stocks and forests are being cleared to make way for new families. Ripple Africa has been working in partnership with communities in four districts in Malawi to protect their remaining resources. Our achievements include: • Helping over 200 fishing communities protect their fish stocks along about 300km of Lake Malawi’s shoreline • Protecting 340km2 of Malawi’s remaining forests • Helping 43,000 households build fuel efficient cook stoves, each one saving two bundles of wood each week and costing the householders nothing • Planting over 10 million trees including pine, eucalyptus and fruit trees • Introducing new and more nutritious varieties of sweet potato to over 3,000 farmers Geoff said, “All of this has been achieved by working in partnership with local communities to support them in achieving long-term sustainable change for future generations. Nothing would have been possible without our amazing Malawian and UK team.”

Spring is finally in evidence as tulips and cherry trees start to bloom but expect the inevitable April showers and May frosts. It’s an exciting time, with indoor-sown seeds well into growth, and it’s also time to start sowing outdoors.

The three day event, which takes place from Thursday 13 June to Sunday 16 June 2019, will bring an exciting mix of talks, discussions and entertainment to the beautiful market town of Buckingham. We are delighted to welcome back Louis de Bernieres as one of our big name speakers. Since Captain Corelli his career as one of the nation’s great writers has blossomed. He will be talking about his latest book So much Life Leftover We also welcome Conn Iggulden, the preeminent historical fiction author whose Wars of the Roses series each of which have been bestselling. His latest book Falcon of Sparta takes us back to an earlier age. Just two highlights of a packed programme of events for all ages. There will be the opportunity for the audience to question the authors, meet them in person and get their books signed. Events will be held throughout the town at venues including the Villiers Hotel, the Radcliffe Centre and Buckingham Library. Christopher Woodhead, co-founder of Buckingham Literary Festival, said: ‘This is the fourth Buckingham Literary Festival and we are thrilled to have once again attracted such a high calibre of speakers. The Festival has been growing year on year and we’ve been delighted to see it become one of the highlights of the summer. With the opportunity to meet some of the UK’s most celebrated authors, well-known politicians and with topics ranging from politics and history and from crime fiction and popular science. The Twyford Pantry Hello and welcome to April and May, two of the prettiest months as Spring is in full flourish and we celebrate Easter, my favourite public

Baked Cheesecake – this is great as a dessert or to have with coffee if you have guests who

With the May bank holiday and Easter I’m sure many of you will be hosting get togethers or treating yourselves to something special so I have found a yummy easy Roast Chicken main course and a make-ahead Roast Potato and Parsnip cake – which can be served with either Salad and sunshine or steaming vegetables on a cooler day, lets face it, we never know what we’re going to get! Pudding is a combination of two favourites – Carrot Cake and

TOASTED COCONUT BUNNY TAILS (MAKES 36) Preparation and cooking time: 2 hours

Ingredients 293g plain flour 1 ½ tbsp cornflour ½ tsp salt 224g soft unsalted butter 86g and 230g icing sugar 1 tsp vanilla extract 1 tsp coconut extract 76g toasted coconut 5 tbsp sprinkles or finely crushed mini eggs Method... Preheat oven to 375°F/190°C and line baking sheet with parchment paper or a silicone baking mat.

Combine the flour, cornflour and salt in a medium bowl and set aside. In a large mixer bowl, beat the butter until smooth. Add 85g or icing sugar and mix until well combined and smooth. Add the vanilla and coconut extracts and mix until well combined. Add the dry ingredients and mix until the dough comes together. Stir in the toasted coconut. Scoop tablespoon sized balls of dough and shape into a ball. Place on the prepared baking sheet 1-2 inches apart. Bake for 7-10 minutes, or until the bottoms are just lightly brown. Remove from the oven and allow to cool until you can handle them. Add the remaining 145g icing sugar and sprinkles to a small bowl and roll each cookie in it until well coated. Allow the cookies to cool completely before serving. You may want to re-roll before serving if coating has melted slightly. Enjoy! Source: www.lifeloveandsugar.com

ROAST CHICKEN WITH HONEY, BUTTER AND CHORIZO STUFFING (SERVES 4)

POTATO AND PARSNIP CAKE (SERVES 4 WITH LEFTOVERS)

Preparation and cooking time: 2 hours

Ingredients 40g soft butter 110g chorizo, finely chopped 1 onion, peeled and chopped 1 clove of garlic, peeled and finely chopped 100g fresh white breadcrumbs 2 tbsp fresh thyme, chopped 1 tbsp clear honey 1 chicken (1.5 – 2.25kg) Sea salt and freshly ground black pepper

Ingredients 1kg new potatoes 400g parsnips, quartered 4 garlic cloves, skin on, plus 1/2 clove crushed ½ pack dried roasting herb mix plus extra to serve 2 ½ tbsp olive oil 1 tbsp lemon juice 1 tbsp fresh parsley, finely chopped

Method... Heat the oven to 200°C/390°F. Cook the potatoes in a pan of boiling water for 15 minutes, adding the Method... parsnips halfway through until just tender. If it begins to look quite dark the oven for 30 minutes. Meanwhile, mix the garlic, while cooking, cover with some foil. Cook until juices remaining oil, ½ tbsp cold water and lemon juice run clear when inserting skewer into thigh (not yours!). together, then stir in the parsley to make a dressing. CELEBRATE THE 10TH YEAR OF THE FLORENCE NIGHTINGALE HOSPICE MIDNIGHT WALK THIS YEAR Florence Nightingale Hospice Charity’s Midnight Walk began in 2010 with 550 ladies walking up to 12 miles and raised £65,000. By 2018 the event had opened up to include men and has become their largest fundraising event. Over the past nine years the walk has raised over £500,000 towards running Florence Nightingale Hospice – providing much needed support to patients and their families across Buckinghamshire, Oxfordshire and Bedfordshire This year, they are inviting everyone to join them for the 10th anniversary of the walk on Saturday 22nd June to celebrate the lives of loved ones and the work that the Hospice does to provide comfort to those in need. “The Midnight Walk is such an inspiring event to take part in and plays a huge role in our fundraising for the Hospice,” explains Lee Lloyd, Head of Fundraising at the charity. “We hope that this 10th Anniversary walk will be a record-breaker with the highest number of walkers ever.” Walkers can choose from the 5 mile or 10 miles circular routes – both starting from Aylesbury College at midnight with entertainment along the way. All walkers will receive a free souvenir Midnight Walk 2019 T-shirt, as well as a medal and complimentary breakfast at the end of the Walk.
