Lapland Travel Review Lapland is somewhere I have always wanted to travel to. Mostly because this is where Father Christmas lives, but I haven’t actually ever been to a snowy destination on holiday! I would love to try out snowmobiles, go tobogganing on thick snow and even go in a real sleigh! But one of my all time must sees is to see the Northern Lights – and apparently Lapland is one of the best places to see them.

Trying to find holiday in Lapland is a whole new story as there are so many tours to choose from. The trick is to examine every detail of the itinerary, from how long you spend with Santa, which activities are included and how the gifts are organised. Before unveiling the idea to your children, bear in mind that these holidays can be expensive. Expect to pay at least £2,000

for a family of four on a two- or threenight stay in a log cabin or hotel, including flights, transfers and meals. Specialist tour operators offering private meetings with Father Christmas and a more authentic experience generally base their itineraries in more remote parts of the region. Alongside the obligatory visit to Father Christmas, you can find Christmasthemed packages that usually include a variety of snow-based activities (sleigh rides, snowmobiling) either included in the price or as an extra. Inghams (inghams. co.uk) has four-night Father Christmas breaks to Levi or Yllas, while Santa’s Lapland (santaslapland.com) uses familyfriendly hotels or log cabins near Saariselkä (Europe’s northernmost holiday resort). Try also Nordic Experience (nordicexperience. co.uk), Transun (transun.co.uk) and Canterbury Travel (santa-holidays.com).

Remember that the climate can be harsh. Throughout the seven-month winter, you can expect little more than five hours of sunlight with temperatures dropping well below freezing and sometimes as low as -20 to -40C. But during daylight hours the sun often shines, the air is still and very dry, so as long as you dress properly, the cold is perfectly bearable.

• Lapland is the best place to view the Northern Lights. Abisko National Park is regarded as one of the best places in the world to see this natural light show due to its prevailing winds, which means that cloud rarely forms - and the skies are kept clear.

Topical advice from Buckingham Garden Centre’s, Chris Day

The changes in seasons are always memorable – especially when the leaves put on their annual firework display of colours! So, seize the opportunities the days bring at this time of the year – it’ll be well worth it!

T

IDY UP On a dry still day rake up fallen leaves as left on the lawn they’ll rot down encouraging the spread of moss. Don’t put them on the compost heap, as leaves break down by a cold process, whereas a traditional compost heap breaks down organic matter by a warm/hot process. Put them into a leaf composter, or make leafmould. Here’s how to make leafmould:- pile them into black bin liners, add some water and after tying the tops of the bags, poke some holes in the side with a garden fork and store them in a secluded part of your garden. By next summer, depending on the variety of leaf, you should have some nice leafmould, which makes a great soil conditioner.

S

EASONAL CHANGEOVER Empty hanging baskets that are past their best and replant with winter flowering Pansies, variegated Ivy, Primulas and Polyanthus, to create a winter show of blooms. Try to keep hanging basket chains as short as possible in the winter to prevent the basket being blown about so much. Older, rusty chains may need replacing so do this now before you forget! Elsewhere, replace summer bedding in borders with winter flowering Pansies, Polyanthus, Primroses, Wallflowers, Myosotis (Forget-me-nots), Violas together with Tulip, Muscari (Grape Hyacinths) and Daffodil bulbs.

AWNS If the weather is mild aerate, scarify and top dress lawns to remove moss, dead grass and encourage healthy grass next season. Cut lawns and trim edges for the last time of the growing season. Brush the lawnmower down after the final mowing, removing any grass. Remember to avoid walking across lawns on frosty mornings as you can easily damage the turf and be left with brown footprints later on!

LANT A HEDGEROW Well, now is a good a time as any, especially if you need to remove a tired, aged one, or a hedge that has failed from last winter, such as Leylandii. Remove as much of the old plants as you can, and you may need to use a stump grinder to deal with the roots. Improve the soil with some home-made compost or Tree, Shrub & Rose Planting Compost to help replenish the nutrients as well as improve the structure of the soil. For hedging suggestions, do come and have a chat with us or click on to our website, www.hedging.co.uk If you are in the process of moving into a new property, remember hedges, like trees, should be the first things you plant as they take the longest time to fully establish. Do chat with your neighbours if the hedges are going to be a shared feature between properties. It’s usually best to discuss the project in the early stage to in order to decide on the mutually agreeable variety of hedge.

HRISTMAS TREES Cut and potted trees arrive from mid November onwards. After you have bought your cut tree it should be kept outside in a cool shaded place, preferably with the cut trunk standing in water, until it is required indoors. Before bringing the tree indoors it is an advantage if about half an inch is cut off the trunk in order to open up the pores of the tree. Mount it in a water-holding stand and place it away from direct heat. Keep the container topped up with water every day; you will be surprised how much it needs! Potted trees need to be kept moist. These trees will last longer if they are kept away from direct heat when they are brought indoors – so well away from radiators. There is a slight chance that these trees will survive if planted out after Christmas, but they would need to be hardened off before planting then they should be watered regularly.

OUSEPLANTS Winter heating dries the air out in your home considerably. Help your houseplants survive by misting them regularly or placing the pots on a pebble filled tray of water to ensure adequate humidity and moisture. Plants that benefit from this include Croton, Calathea, Maidenhair fern and Peace lily, Spathiphyllum. If you can, group your foliage and flowerings plants together by sitting them in a larger tray for maximum effect and benefits (pictured). Continue to watch for insects, especially red spider mite and aphids, or disease damage and take the necessary steps to control the problem. Please ask in the Plant Info Office for necessary products to deal with the specific problem. It’s getting a bit late to re-pot foliage houseplants, so as a temporary measure you can top dress the pot with some multi-purpose compost to help it through the next few months. Remember to turn your plants regularly once a week to help encourage balanced growth, so avoiding the leaning Tower Pisa effect!

UST-DO’S Clear shed, greenhouse and house gutters and put chicken wire over the top of them to stop them getting clogged up with leaves. Cover ponds with netting to prevent leaves dropping or blowing into the water. Remove dead leaves from water-lilies and cut back dying pond marginals. Autumn damp can quickly cause moss growth over paths, so to avoid slippery and hazardous conditions, either power wash the surface and/or apply Jeyes Fluid Path, Patio and Drive Cleaner. Take hard wood cuttings of a wide range of plants including Cornus, Forsythia, Philadelphus, Ribes, Gooseberries, Red, Black and White Currants. Continue winter digging of borders and vegetable patches if the soil is still workable.

The White Hart, Preston Bissett The Pub Ambiance The White Hart at Preston Bissett has become one of the GO TO places in the area. A rare public house that is privately owned by someone who cares for the property and wants to make it a special destination for drinkers and dinners a like. It is a 500 year old thatched property that has under gone 18 months of refurbishments. The refurbishments, while opening out the old building to make it more practical have taken it back to its original core. All historic timbers have been retained and stripped. These timbers are believed to have been reclaimed when the building was originally built along with the exposed brick and stone work. In conducting the work many old fireplaces where discovered. The pub now has 3 fires which are burning away whenever the pub is open. All the tables are rustic, individual pieces from barn doors to oak tree trunks crafted from the same oak as the beautifully crafted bar. All tables are near fires and surrounded by natural features. The Restaurant and Dining Experience The dining experience is the brainchild of local head chef, James Beardsley who has vast Hotel and Corporate Entertaining experience. The menu is a fine balance of traditional English fair combined with a touch of world tastes. James is especially skilled in sauces which compliment most dishes along with French fine dining. Sunday lunches are second to none in terms of quality and value. Sirloin steak, rolled stuffed pork belly and half a chicken on the menu every Sunday. The menu includes a full list of starters and desserts. As you would expect each meal is accompanied by roast potatoes, homemade Yorkshires, fresh and roasted vegetables. But it is the gravy and presentation that finishes each meal off superbly. James brews the gravy fresh each week over many days to produce his signature finish to the best roast dinner in the area. Claydon Christmas Tree Farm is managed by husband and wife team, Joseph and Ingrid Hodges. Being a family business that is run from our home, we take a real pride in the service that we give our customers. We have a small team of dedicated staff who are always on hand to help you with absolutely anything that you may need! We are primarily a working arable farm but in 2008 decided to combine a farmer’s enthusiasm for growing things with his wife’s passion for Christmas. We aim to supply beautiful, freshly cut trees at sensible prices. We are only open for four weeks of the year, opening on Saturday 26th November 2016, 10am until 6pm during the week and 10am until 5pm at weekends. We planted our own trees in April 2010 and continue to plant Christmas trees every year. We began to sell some of our first crop of trees last year. Most of the trees that we currently sell have been carefully selected from a farm in the Welsh Mountains. We have a beautiful team of Father Christmas’ real reindeer, Dasher, Dancer, Comet, Cupid and Vixen for you to meet when you buy a Christmas tree. Festive delights like no other, in our Scandinavian log cabin Christmas shop, we have put together a stunning collection of decorations and ornaments. Sparkly Vanilla Christmas Cookies (Makes 20 biscuits)

Method

Ingredients • • • • •

140g icing sugar, sieved 1 tsp vanilla extract 1 egg yolk 250g butter, cut into small cubes 375g plain flour, sieved

To decorate

1. Tip the icing sugar, vanilla extract, egg yolk and butter into a mixing bowl, then stir together with a wooden spoon (or pulse in a food processor until well combined). Add the flour and mix to a firm dough. Shape the dough into two flat discs and wrap in clingfilm. Chill for 20-30 mins. Heat oven to 190C/fan 170C/ gas 5 and line two baking sheets with non-stick baking paper.

Sorghum Sweet Potatoes (Serves 8-10)

6 medium sweet potatoes 1¼ c. fresh apple cider ½ c. sorghum 3 tbsp. butter

2. Roll out the dough on a lightly floured surface to about the thickness of two £1 coins. Cut out Christmassy shapes (use a cutter if you like) and place on the baking sheets. Using the tip of a skewer, cut a small hole in the top of each cookie. Bake for 10-12 mins until lightly golden. 3. Lift the biscuits onto a wire rack to cool. Meanwhile, mix the icing sugar with a few drops of cold water to make a thick, but still runny icing. Colour with edible food colouring, if you like. Spread it over the cooled biscuits, decorate with edible balls and thread with ribbon when dry. Source: BBC Goodfood.com

or until fork-tender. Uncover and bake 5 more minutes or until glaze becomes syrupy.

Method

Arrange potatoes in a shallow serving dish. Sprinkle with pecans and drizzle with sorghum glaze.

Heat oven to 350 degrees F. Peel potatoes, and cut into 1-inch-thick slices; arrange in a single layer in 2 lightly greased 13- x 9-inch baking dishes. Stir together cider and next 6 ingredients; pour evenly over potatoes. Cover tightly with aluminum foil. Bake at 350 degrees F for 45 minutes

Store-bought candied or spiced pecans add crunch to this comfort food dish. To make ahead, cover and chill cooked potatoes in glaze in baking dishes the day before. Let stand at room temperature, then reheat covered at 350 degrees F for about 20 minutes or until thoroughly heated.

The Best Roast Turkey by Jamie Oliver

Ingredients • 1 sprig fresh sage , leaves picked • 12 strips higher-welfare pancetta or thinly sliced streaky bacon • 1 bulb garlic , broken into cloves • 4 medium red onions , peeled • 2 sticks celery , trimmed and chopped • 1 big handful breadcrumbs • 1 handful dried apricots • 300 g higher-welfare minced pork • 1 lemon , zest of • 1 pinch grated nutmeg • 1 large free-range egg • sea salt • freshly ground black pepper • 12 small sprigs of fresh rosemary , plus a few extra • 4-4.5 kg higher-welfare turkey , at room temperature • 2 carrots , peeled • 1 large orange • olive oil • 2 tablespoons plain flour • 1.1 litres organic chicken or vegetable stock

cooled down, add the pork, lemon zest, nutmeg, egg and lots of salt and pepper, and mix everything together well. Slice the remaining strips of pancetta or bacon in half and slice 1 peeled garlic clove into thin slivers. Place a rosemary sprig and a garlic sliver on one end of a halved strip of pancetta and roll it up tightly. Repeat with the other pieces of pancetta until you have 12 little rolls. Stab the thighs and drumsticks of the turkey in 6 places on each side. Push a little pancetta roll into each hole until it just peeps out. This’ll give your turkey thighs a fantastic flavour and will keep them moist while they cook. Chop the remaining onions in half and slice the carrots thickly. Give your turkey a good wipe, inside and out, with kitchen paper, and place it on a board, with the neck end towards you. Find the edge of the skin that’s covering the turkey’s breasts and gently peel it back. Work your fingers and then your hand under the skin, freeing it from the meat. If you’re careful you should be able to pull all the skin away from the meat, keeping it attached at the sides. Go slowly and try not to make any holes! Lift the loose skin at the neck end and spoon the stuffing between the skin and the breast, tucking the flap of skin underneath to stop anything leaking out. Pop the orange in the microwave for 30 seconds to warm it up and stuff it into the cavity. Weigh the stuffed turkey and calculate the cooking time (about 20 minutes per 500g/1lb 2oz).

Place the bird on a large roasting tray, rub it all over with olive oil and season well. Surround with the chopped carrots, onions, remaining garlic, cover with tinfoil and place in the preheated oven. Turn the heat down right away to 180°C/350°F/gas 4, and roast for the calculated time, or until the juices run clear from the thigh if you Method pierce with it a knife or a skewer. Take the pan off the heat, add the stock. Place the tray on the hob and bring to the boil on a breadcrumbs and, while the mix is cooling down, chop the high heat. When the gravy starts to thicken, strain it into a apricots roughly and stir them in. When the stuffing has bowl. Carve your turkey, serve with the gravy and dig in!

Dazzle at Waddesdon – for a sparkling Christmas 9 November-2 January 2017, Wednesday-Sunday, 11am-6pm

Christmas is always a special time at Waddesdon in Buckinghamshire, and 2016 is no exception. The theme for the decorations in the House this year is magical materials from the earth and sea, and has been inspired by the rare, exotic and beautiful materials which can be seen throughout Waddesdon’s collections. Once again, visitors can enjoy Waddesdon’s programme of winter light. Internationally recognised artist Bruce Munro is noted for immersive site-specific installations inspired by landscape that employ light to evoke an emotional response. Field of Light, returns in a new location, to celebrate 25 years since its conception. Munro will ‘plant’ 9,000 slender stems crowned with radiant frosted-glass spheres to populate the Aviary Glade. The spheres, illuminated by optical fibre, will ‘bloom’ as darkness falls taking visitors on a sensory journey through the gardens. For the second year a light and sound show will also animate the house from dusk each day. Dazzle@Waddesdon, created by Woodroffe Bassett Design, will bathe the ornate façade in a rainbow coloured light show every 15 minutes, while the two giant candlestick sculptures, Lafite, by artist Joana Vasconcelos featuring 574 bottles each, will also be illuminated. In the Coach House gallery at the Stables, visitors of all ages can marvel at the work of the extraordinary bakers, the Biscuiteers, who will make a dolls house model of Waddesdon constructed entirely from gingerbread. Over two meters in size, this will recreate the rich details of some of Waddesdon’s most beautiful rooms, including its paintings, furniture and ceramics, modelled in icing. Taking over 500 hours, 240 eggs and 216kg of icing, visitors will be able to learn more about the design and making processes of this extraordinary creation on a video. There will also be a biscuit-baubled tree in the house and hand-iced Biscuiteer bauble biscuits inspired by Waddesdon’s collections available in the gift shop. Festive shopping will once again feature this Christmas. From the well-stocked and beautifully decorated Manor Shop to the Wine Shop, the perfect place to pick up a special Rothschild wine. In addition there will be two seasonal popup shops at the stables, continuing the winter light theme with a neon shop we are calling Glow@Waddesdon, plus another shop offering more traditional gifts. The Christmas Fair overlooking the parterre and with the illuminated house as its backdrop, will this year feature 60 exhibitors across four weeks, 16 November-11 December. With local artisan producers alongside some of the best loved independent traders from around the country, the fair will offer visitors a great selection of unusual Christmas gifts and festive foods. Keep your dog warm - Advice from the Blue Cross Wintertime can be lots of fun for all the family but only if you’re prepared for the hazards that come with it. Read our advice to help keep your dog’s warm, happy and safe from danger during the cold spell… • When the thermometer dips don’t leave your dog outside unattended – most pet dogs spend a lot of time inside and aren’t used to the extreme cold so could develop hypothermia or frostbite. • Short-coated breeds, like greyhounds, Dobermans and Chihuahuas really struggle to cope with the cold so make sure they’ve got a cosy doggy jumper or coat on when they go outside. • If your dog starts lifting up their paws, whining or stopping while out on walks it could well be because their feet are too cold, so it’s a good idea to invest in some boots for them to wear. • Trim the hair around your dog’s feet to help prevent ice-balls – these form between the pads and toes of the feet and are really painful. • If you walk on salted pavements wash your dog’s paws after a walk because salt and grit can really irritate their footpads. • Stay away from frozen ponds or lakes and keep

your dog on a lead near frozen water. If they do run on to it, it’s tempting to go after them but it’s really important that you don’t. Most dogs are strong swimmers and are more likely to get themselves out of trouble than you are. Don’t be a fair-weather friend – take your dog out in all weathers where possible but be careful in slippery conditions. If you’re elderly, don’t put yourself at risk, keep your dog at home and spend time playing games indoors to stop them from getting too bored or frustrated. If your dog is less active during the winter months, don’t forget to cut back a bit on what you feed them. When you’re out walking wear bright/reflective clothing so you can be seen by motorists during the dark evenings. You can also get some great reflective gear for dogs too. It’s not just people who are tempted to overindulge over Christmas but eating human food can give your dog an upset tummy and turkey bones can choke them. Don’t forget to keep your choccies out of reach too because they’re toxic to dogs.

We all have within ourselves this need to please others (for more information google the PAC model Transactional Analysis. It really is fascinating) This desire often stems from our childhood. We would do our best to try and please our authoritive figures (think parents and teachers). As we grow into adults, this desire to please others often stays with us. If we are losing weight to try and please others, quite often or not, we will start to rebel against this as we feel we are being pressurised. Looking at why you want to lose weight is the best place to start. If you are losing weight because a partner wants you to, then look at why they want you to lose weight. Are they controlling? Why do they want to change you? More importantly. Do you want to change you?

In 1991, aged 17, in his time away from his main job as a BMW Technician, Kevin started ‘Kevs Car Cleaning’ offering customers a mobile service in his newly purchased metro van. Due to popular demand it was not long before he left to work for himself full time, trading in the Metro for a larger Escort van. Kevin soon grew the business with contracts from many large companies in Aylesbury, a number of car dealers and many satisfied private customers. In 1996 Kevins brother Gary joined, they purchased a second Escort van and became K&G Car Valeting. For a brief period in 1997 their Dad, Bob, joined the team becoming KGB and provided many valuable ideas. After trading in the Escorts they were able to purchase a more modern Escort van and a larger Transit Van which enabled them to carry 1000 litres of water to jobs and clean approx 30 cars in one go! In 2006, Kevin expanded the business to include cosmetic body repairs with a body repair workshop based in Waddesdon. Initially offering small cosmetic repairs the paint shop was a huge success and in 2013 relocated to larger premisses in Winslow, offering everything from stone chips, wheel refurbs and bumper scuff repairs to full classic restorations. After 25 years of trading Kevin is thrilled to have established a busy body repair shop that is growing from strength to strength every year due to the personnel touch and attention to detail. Gary continues to offer the mobile valeting service full time in Aylesbury offering a high quality detailed valeting service with 20 years experience in the valeting trade.
